letter from the editor Full disclosure: I haven’t been a fan of Valentine’s Day since I was the same age where all of my classmates were required by scholastic decree to bring candy and cards for all. What I am a fan of, however, is chocolate. I’m also a fan of holidays that encourage the idea of having a box full of it that you can reach at all times on your desk. If you’re in my camp, check out some of the chocolatiers in town (page 22) and load up. My personal favorites: champagne truffles or anything peanut butter. Of course, life is about balance. We know that healthy communities are happy ones, which is why we created this new section to share nourishing food, wellness tips, exercise picks, and inspirational stories. In this issue, you’ll also find a non-traditional story about love in the community. Stephen Flowers, owner of the salon Suddenly Samantha, is giving back to one of the Lehigh Valley’s most overlooked populations: our homeless community. Read his story on page 16. Happy 2018. R&H Simon Silk Mill BY KELLY ALDERFER

In the late 1800s and into the 1900s, the Lehigh Valley was a well-known home for two booming industries: silk and steel. This began during the end of the Industrial Revolution, and both industries were thriving, but one didn’t last as long as the other. The silk industry rapidly found itself unraveling. At its peak, Allentown was the number one silk city in America, but the industry began to slowly die with the Great Depression, in addition to the competition from the south where labor was cheaper. Plus, there was the appeal and popularity of synthetic fibers like nylon and rayon, which are less expensive and labor-intensive to manufacture. By 1953, the number of silk looms in the Lehigh Valley decreased 80 percent, leaving just six remaining. But one of those mills—Easton’s R&H Simon Silk Mill—has a long story. Brought to life by Robert and Herman Simon in 1883, the R&H Simon Silk Mill went from about 250 employees to some 2,000. Business was thriving, even after the death of the Simon brothers in 1901. The mill was managed

by other people and corporations before the silk market dwindled. The factory completely stopped running around the late 1960s. Fast-forward to decades later—2006— when a new hope came to the mill. The building was acquired by the Easton Redevelopment Authority with the intentions of turning it into a creative working space. In 2010, developers Mark Mulligan and William Vogt of VM Development took on the challenge to transform the mill. Construction finally began by mid-2015.

Right now, the mill is a thriving living and working space that includes highend apartments in addition to several small businesses, making it a unique and dynamic community. The shops are a diverse collection, including a café and soon-to-be wine bar, a gallery and design studio, hair and makeup artistry, breweries, and more. Here’s a quick look at just a few current businesses living in the mill.

Rather than using makeup as a transformative tool, makeup artist, founder, and co-owner Alisha Nycole believes that it’s more about enhancing an individual’s natural structure and complexion. She carries that mantra on to her talented team of hair and makeup artists, making Alisha Nycole & Co. a name to know. The group specializes in hair and makeup for brides and bridal parties plus photoshoots and TV prep, but they also offer teeth whitening, makeup lessons, and a whole array of other services (check out their Girls’ Night that includes wine/champagne, an artisan cheese platter, and a raffle to win a free makeover). It seems the possibilities are endless when it comes to what the women of Alisha Nycole & Co. can do to make you feel like a more beautiful you. If it isn’t on their website, simply reach out and ask them. While most of the time they will come to you for your services, the beautiful bi-level and bright studio that houses the business is worth the trip.

Boser Geist, which means “evil spirit,” is the latest brewery to join the Lehigh Valley beer scene. Partners Erik Thomasik and Mike Platt began home brewing 11 years ago. They’ve come a long way from a suburban set-up: Boser Geist boasts the second-longest bar in the Lehigh Valley, according to Erik. It measures 86 feet long. Rather than dictating what their flagship beers will be, the brewery will base that decision on the opinions of thirsty patrons. After all, “the people are really what it’s all about,” Erik says. Specializing in super-smooth brews that belie their ABV, this budding brewpub is certainly worth a visit if you’re in town.

One beer that’s definitely in the works is “The Answer to Everything.” It’s a smooth and dark beer with rich malty flavors—and a whopping 30 percent ABV. It takes two years to age, with a release date planned for summer 2020.

Australian native Jason Hoy and culinary wizard Erin Taylor bring an undeniably authentic Aussie flair to the mill. Tucker, Australian slang for “good food,” sources its products from local farms and producers, and are “sustainable and organic.” Nothing is frozen except for one thing—the organic ice cream used in the milkshakes. While the menu changes seasonally and is dependent on fresh product availability, you can count on a selection of “toasties,” like classic avocado toast, a “relatively, but not diligently healthy” Australian and Southern Californian snack. Also on the menu? Vegemite—an interesting spread that’s a byproduct of brewer’s yeast, which Foy describes as tasting like a “dark, rich, and malty porterstyle beer.” Might be an acquired taste. So why open a café in Easton, Pennsylvania, and why the Silk Mill? Jason’s wife’s work took them to New York, and later Pennsylvania. They found the mill to be “aesthetically fantastic” and were taken by how friendly the community is. Fun fact: Chaz and Tom from Brick and Mortar created Tucker’s signage, along with other aesthetics of their space. This spring, Tucker Silk Mill will start an exciting new endeavor, making it café by day, wine bar by evening. Jason says that the space will “transform completely,” and visitors “won’t recognize it from day to night.” But for now, during these cold winter days, a nice cup of soup or a hot latte will do.

Friends and fine artists Chaz Hampton and Tom D’Angelo have been putting their inventive minds together for about two and a half years. In that time, they had a studio and gallery in Easton’s Centre Square, but after their lease ran out this past April, they decided to move their business to the silk mill. The high ceilings and natural light of the spot Chaz and Tom chose makes for a “dream studio.” The 3,000 square foot space is part gallery, part workspace, and the artists encourage visitors to pop in any day (although they aren’t always there on Sundays) to check out what’s being showcased and see what they are working on at the moment. Chaz and Tom’s projects could be anything from furniture to signage, and all kinds of other commissioned pieces. Hampton describes Brick and Mortar’s work to have a “handmade, artisan grassroots feel,” which is certainly seen in their work. In the gallery, you can expect to find original pieces from local contemporary artists on display.

You can do both—and lots more—when you drop by the Gas House Dance Hall, one of the most hoppin’ joints in the Lehigh Valley. Swing dance enthusiasts Robynn and Keith Shannon founded the Gas House in 2013. “They took a run-

down former Texaco gas station on Front Street in Catasauqua and turned it into a real destination for the swing dance community,� says manager Vicki Bartholomew. After major renovations to the former Blocker’s Service and Hardware building, the duo offered classes in a variety of styles: vintage East Coast swing,

But when their day-job responsibilities took them to Europe, the Shannons sold their business to Vincent Smith, Catasauqua Borough Council President and Vicki’s brother, who already owned the physical property.

Swing fans need not fear: Vicki says they’ll stay true to the original Gas House vision.

The Lessons Whether you’re an aspiring dancer or one who wants to “level up,” the Gas House should be your destination. “Two nights a week, we offer beginner and advanced classes in vintage swing dancing, also called East Coast swing,” Vicki says. (That covers such classic dances as the Jitterbug, Charleston, Lindy Hop, Balboa, Collegiate Shag, and Jive, and is taught in six-week sessions.) After a one-week break, a new session starts. Wednesday nights are devoted to West Coast swing. What’s the difference? “West Coast is based on the same steps

and moves as East Coast, but adds little extras to give dancers more flexibility— it’s not as strict,” Vicki says.

While East Coast style pairs well with early jazz and rockabilly music, “West Coast lets you swing dance to any kind of music,” she says. “You just find the beat, and work with it.” Local dance instructor Eric Bass also teaches salsa and bachata on Tuesday nights. Mention belly dancing and many people think of women seductively twirling and spinning. But at the Gas House, belly dancing represents the expression of female empowerment through performance dance.

It’s also good exercise: non-impact, non-weight-bearing, and suitable for all ages. Sessions last six to eight weeks, and are taught in a very body-positive atmosphere.

The Hall The Gas House doesn’t hide its servicestation roots. “We have lots of stuff from the original building,” Vicki says. Vintage signs proclaim the availability of “Fire Chief” gasoline (one of Texaco’s now-defunct brands), and old motor oil bottles (yup, bottles!) complete with screw-on pouring spouts are scattered about. There’s a still-working illuminated gas pump globe, “and we have a Texaco hat that was a station giveaway in the 1940s,” she adds. But the oil-stained concrete floor is long gone. In its place is a custom-installed hardwood dance floor that Vicki describes as “the best swing-dance floor in the Lehigh Valley.” Ordinary flooring

Jami Derr is a member of Gas House Swing, one of several groups that call the venue “home.” “Other than the Gas House, there really aren’t a lot of venues that have good dance floors,” she says. “Many of them are covered with vinyl or even carpeting, and some outdoor floors are just plain concrete.” she says. “That’s hard on your joints. And club floors can become sticky from spilled drinks.”

The hall sports two full walls of floorto-ceiling mirrors, strings and strings of ambient lighting, about a dozen dimmable overhead lamps, and a floor-level space that’s reserved for the stripped-down, high-energy bands that perform at the regularly scheduled dance socials: Lara Hope and the ArkTones, the Rock-A-Sonics, Dibbs Preston and the Detonators, and the Crescent City Maulers, to name just a few.

A Sense of Community Swing dancing requires a partner. But when you’re single among many couples, it’s easy to feel awkward and intimidated. You can leave that baggage at the Gas House door. “Our classes and social events are open to everyone,” Vicki says. “The atmosphere is cozy and fun, and you’ll always find someone to dance with, no matter your skill level.”

Jami agrees. “Even our best dancers remember that they were once beginners themselves,” she says. “And we offer a free swing dance intro lesson before our monthly rockabilly shows. It’s a very friendly, all-inclusive environment. You can come alone, but you won’t be alone for long. People will make you feel welcome right away, because the more dancers we have, the better we like it!” “At the Gas House, it’s presumed that everybody will dance with everybody else,” Vicki adds. “No one gets hit on, and dancers cut in on each other all the time with no problems. Everyone’s here to have fun.” “I just can’t say enough about the Gas House,” Jami says. “I think the whole dance scene is good for your social, mental, and physical health. It’s like getting a ‘runner’s high,’ but without the running!” Blocker’s Coffeehouse opened in the same building last June, and has become a key part of the Gas House scene. “It’s open all night, with many kinds of fair-trade coffees, espresso, mixers, and snacks. Our swing dancers love the idea, because they can get a little energy boost from the caffeine,” Vicki says.

As reggae plays softly in the background of his Easton salon, Stephen Flowers settles into a chair, crosses his legs, and begins to talk about why it’s important for him to give back to those in need. “I have a young son, and I want to teach him to make the world a better place,” he says. “It seems like people are very angry at each other, and we’re so divided. stephen flowers For the owner of Suddenly Samantha, it started with a single haircut on Christmas Day in 2009. “My family celebrates on Christmas Eve, so that Christmas afternoon I was bored and recently divorced and made plans to hang out with friends later that night,” he recalls. “I decided to take my dog downtown for a walk, and a guy asked me for money for food. I offered but said there’s nothing open.” A little hungry himself, Stephen dropped his dog off and accompanied the man to a nearby WaWa for some food and came back to the salon to eat and watch Christmas movies. “The guy took off his hat, and his hair was just so dirty and greasy. It was clear he hadn’t had a haircut in a while,” Stephen says. “So, I offered to wash and cut his hair, and we continued to hang out.” A couple days later, the man returned to thank him, saying it was the best Christmas he had ever had. You treated me like a person, he remembers the man saying.

After that encounter, one of his employees suggested inviting people into the salon on New Year’s Day for a warm place to stay to start off the new year. After two years trying that, Stephen and his staff settled on Christmas for the outreach, mindful that so many people are alone that day and in need of some comfort. A new tradition started on Christmas Day 2011. Stephen and his son did their morning gift exchange and then started cutting up fruit, veggies, and cheese and laid out cookies to serve at the salon.


“I called all the local shelters and posted information on Facebook—anyone who’s alone, living on the streets, homeless and have nowhere to go, come on in for haircut or not. You’re more than welcome,” he recalls. “We had 19 people show up the first year, and it’s become our tradition every Christmas since.”

A devout non-traditionalist—he lives off the grid and in fair weather, kayaks to work down the Delaware River from his home in Lower Mount Bethel Township—Stephen and his wife, Dr. Tricia Kelly, a surgeon at St. Luke’s Hospital, keep separate homes so their children can finish school in their respective school districts.

“On Thursdays, she has a long day at work, so I go up and take care of her dogs,” Stephen says. “One day, I had my hair-cutting supplies with me and decided to cut hair in the streets of Allentown. It was cold, and the wind started to pick up and I asked about nearby shelters and was directed to St. Paul’s.” He introduced himself, set up for the next week on a trial basis and has been doing haircuts there ever since. Jennifer Matos, the secretary at St. Paul’s who manages the church’s Crossroads day shelter, says her clients love Stephen. “They always ask when he’s coming back,” she says. “They love it when he shows them before and after photos. He just does a complete transformation for my clients. It’s such a morale booster. A clean cut or a new hairstyle goes a long way. He just does this out of the kindness of his heart.”

full of school supplies to needy children in Easton and the surrounding area. This past school year, Stephen and his crew did 169 haircuts and filled more than 300 backpacks. He and his wife have started supporting the Brem Foundation’s Re-Bra initiative where breast cancer survivors donate old bras and help raise awareness for breast cancer. His wife also teaches self-care and provides information about early detection to women who may not otherwise be able to access that kind of medical information. And if that wasn’t enough, Suddenly Samantha for the past five years has hosted a silent art auction called Deck the Walls to support Safe Harbor. About $3,000 is raised annually at the auction, held on Thanksgiving weekend at the Easton Public Market.

Boxes of chocolates for Valentine’s Day might strike you as a cliche, but one thing is certain: It’s still a good idea. Light, dark, or white; cream-filled, caramelly, or coconutty; smooth, chewy, or crunchy—it’s a gift that will delight practically any recipient. And while it’s easy to grab a pre-selected box or two off the shelf, it’s nearly as easy to put your personal spin on it by visiting one of the Lehigh Valley’s chocolatiers. Each treat maker offers a little pizzazz that sets it apart from the rest.

Now in its fifth generation of family ownership, the company is still committed to doing things the old-fashioned way.

This charming little shop, open only between October and Easter, is in a building that’s over a century old.

Originally selling just fine chocolate, it’s really become a must-try for lovers of all sweet treats.

“All of our candy is handmade,” co-owner Barry Dobil says. “That gives it a look and texture that you can’t duplicate in a mass-production setting.” He adds that the company once invested in what was supposed to be some labor-saving machinery, “but it didn’t work the way we’d expected. The rep told us that we simply needed to change our old family recipes to accommodate the machine. “No way were we going to do that. We went back to hand-production right away.”

“It’s been some sort of candy store since it was founded in the early 1900s by a local Greek family, supposedly with a loan from Whitman Chocolates and Milton Hershey,” says co-owner Christal Bussenger.

Premise Maid produces milk and dark chocolates, brittles, nuts and chews; nonpareils and many other candies; mouthwatering baked goods; and over 40 flavors of ice cream—all of which are, well, made on the premises.

Of course, it wouldn’t be Valentine’s Day without chocolate-covered strawberries. “Our strawberries have no shelf life,” he says. “We make them fresh daily, and they sell out the day we make them.” Josh Early’s flexibility can be a boon to procrastinating shoppers who nevertheless don’t want the same old thing. “Guys often wait until the last minute,” Barry says, “and then they want to dash in and dash out. But we can still make it special. Just pick out a box that you like, and we’ll fill it any way you want it.”

Inside, you’ll find the original tin ceiling, stained glass windows, glazed tile walls, and marble counters. Many of the store’s candy recipes are of the same vintage, Christal says. “They are written on little pieces of paper and kept in files, almost like an old family recipe book.” Among the house specialties are Jordan crackers and crushed peanut clusters. Christal explains that the rather plain cigar-shaped nibblers are utterly transformed when dipped in the shop’s own light or dark chocolate. And the clusters contain carefully ground peanuts that are evenly distributed throughout the binding chocolate, resulting in a distinctive texture.

Everything is based on old family recipes, and CEO Joe Damiano is especially proud of their peanut butter meltaway candy. “It’s our best seller, and the recipe hasn’t changed since my dad developed it about 40 years ago,” he says. But those luscious tastes aren’t limited to candies. “We took many of our candy flavors and turned them into cakes and ice creams,” Joe says. And that presents loads of options for Valentine’s Day gifts, far beyond the usual box of chocolates—think ice cream cake that tastes like your loved one’s favorite candy or a sundae with a wonderful mix of flavors. Chocolatiers Chocolate Works Step into the Chocolate Works facility and you’ll get up close and personal with the candy-making process. Much of the production machinery is right out front, and each visitor gets a free sample. It’s a wonderful introduction to the store’s assorted truffles, barks, caramels, cordial cherries, dipped cookies, pretzels, fruits, and so much more. If you’re looking for a unique Valentine’s Day gift, Pat and his crew can create chocolate-dipped wine bottles. “It’s a multi-step process,” he explains. “First, we shrink-wrap the bottle to create a smooth, uncontaminated surface. Next, we dip and re-dip the bottle into light or dark chocolate in order to build up a shell.” (And not just a thin coating, either. Pat boasts that about a full pound of chocolate is layered onto each bottle.) Afterward, the shell can be hand-decorated. You can also order long-stem dipped strawberries, “which we can customize to various levels. For example, we can drizzle them with certain colors—such as red or pink—or we can write messages on the berries, provided that we have enough lead time. The 34-year-old lost 331 lbs. thanks to bariatric surgery and credits St. Luke’s University Health Network’s Weight Management Center with giving him his life back. Christopher’s turning point came two years ago on Thanksgiving Day. While hosting the holiday dinner, a small ice storm prompted him to go outside and salt the sidewalk.

“I slipped and fell and couldn’t get up on my own,” he says. “Not because of the ice, but because of my weight. If someone had not seen me, I could’ve been stuck out there in the freezing cold. It was embarrassing, frustrating, and scary.” He knew he needed to make a change, but he was afraid.

“My biggest fear was my food addiction,” Christopher says. After his first meeting with a dietitian, he went home and cried, afraid that one of the only joys he had left in life—food— would be gone. The distant promise of weight loss success, however, inspired him to stay the course. Christopher finally chose St. Luke’s program because it provided the support he needed. “St. Luke’s put an emphasis on changing your way of thinking about food before changing your body,” he says. “I knew I had issues with food that needed to be addressed [before jumping into surgery] and I felt like St. Luke’s was my best opportunity to do that.” Dr. Maher El Chaar, co-medical director of Bariatric Surgery, performed the weight-loss operation, a procedure commonly known as gastric bypass surgery. When Dr. El Chaar first met Christopher in 2015, at a weight of 550 lbs. and BMI of 72, Ellis was medically classified as “mega-obese”—a step beyond the morbidly obese category typically referenced by mainstream news media.

Christopher was only in the hospital overnight. He followed a liquid diet for one week, followed by a week of pureed foods, and soft foods for the next eight weeks. After that, he was able to consume regular foods—albeit smaller portions than he was used to. Christopher has been able to say goodbye to more than just oversized meals and clothing sizes—he has left sleep apnea, several blood pressure medications, plantar fasciitis, joint pain, and pre-diabetes in the past. He’s also been able to say hello to countless new experiences.

“I still consider myself to be rather shy,” he says. “I used to avoid things like concerts, where I was concerned about fitting into seats, but now I go to anything I can afford.” Christopher also now volunteers to represent his company at meetings and strikes up conversations with people he would have been too intimidated to speak to in the past.

Darin Carlton made a very important wish when he blew out the candles on his 50th birthday: He wished to reach his 60th.

Dr. El Chaar continues to see Christopher as a patient—and will do so for the rest of his life.

Darin knew from his family history that he wouldn’t live to see his 60th cake unless he made a drastic change. Always a self-described “big guy,” Darin says, “I always made excuses … so what’s a few extra pounds?”

“The goal is to maintain the weight loss,” he says, noting that St. Luke’s is special because it is a weight management center. “Obesity is a chronic disease, and the surgery is not a magic bullet—you have to be willing to put in the effort to make the change in lifestyle and be committed, and the doctor needs to provide support and education.” Struggling with weight and thinking about bariatric surgery? “Do it!” Christopher encourages. “This is the best decision you will make for yourself. You will actually get to experience life instead of watching it slip by.”

But on that birthday, he decided to lose the weight.

"I SHOULD HAVE DONE THIS A LONG TIME AGO." After investigating weight loss programs—and even considering surgery like Christopher at one point—Darin wanted to see if he could do it without the surgery. On March 2, 2016, Darin began his medical weight loss journey, with the help of St. Luke’s University Health Network’s Weight Management Center. Eighteen months later, Darin is about 95 lbs. lighter. Thanks to his weight loss, he achieved the personal milestone of running his first 10K race last October. “The goal was to finish it with no walking,” he explains. Before the St. Luke’s program, he couldn’t run three feet, let alone three miles, Darin quips. Today, he typically runs 5 miles at a stretch. He has also changed his diet: “One of the things I find myself doing is reading every food label before I buy something,” Darin says, which he had never done in the past.

ful seeing the expressions of people who I have not seen in a while,” he says. “Their positive comments reinforce my desire to maintain and stay on track in the future.” Just like training for his 10K, Darin knows that there are struggles to be overcome. “I had to realize that this journey is a marathon and not a sprint,” she says. “I did not get this heavy overnight and I wasn’t going to lose the weight overnight either, but as I passed the 50 lb. mark and continued losing weight to where I am today, I realized I should have done this a long time ago.”

Annual Wellness visit An ounce of prevention is worth a pound of cure, as the saying goes, and this old adage is especially true when it comes to an Annual Wellness Visit. During this appointment, you and your doctor will talk about a plan for preventive care in the coming year, according to Lauren E. HERE’S WHAT TO DO:

1. Find a chair in which your feet comfortably touch the ground. Sit up tall, straighten your spine, relax your shoulders, and allow your eyes to close. 2. Pause and become aware of sensations in your body with a sense of curiosity and acceptance. 3. Now relax your belly, noticing it rise and fall as the breath naturally comes and goes. When your mind wanders (which happens to everyone), notice where your mind was (planning, remembering, judging) and simply return your attention—with kindness for yourself—to the breath and begin again. If you need to bring your attention back fifty times, that is perfectly fine. Let go of expectations and simply observe what arises. 4. Congratulate yourself on being more mindful and kind to you.

Mindfulness meditation builds increased awareness, calm, and an overall sense of well-being. For me, it’s the difference between having day that is frantic versus peaceful and energized. All it takes is five minutes.

This Valentine’s Day, there’s even more reason to celebrate being in a loving relationship. A new study confirms that men in happier marriages have lower cardiovascular risk factors than men whose relationships are struggling. The same is true for women: A study in 2014 showed that women’s heart health reflects the positive (or negative) state of their marriage. No need to race to wedding chapel if you haven’t met your special someone. There are plenty of things that married—and unmarried—men and women can do to improve their cardiovascular health, according to Dwithiya K. Thomas, MD, FACC, and Medical Director of St. Luke’s Women’s Heart Center.

Q: WHAT DO YOU MEAN BY “HEART HEALTH”? IS THAT MAINLY PREVENTING HEART ATTACKS? A: Heart health, or heart disease, is an all-encompassing term that is used to describe many different heart problems. It can be used to describe blockages in the arteries that supply the heart—the plaque that puts someone at risk for heart attacks. In addition, it can also be used to describe structural heart problems that people are either born with or develop later on in life. Heart disease can also be used to describe electrical problems of the heart—leading to arrhythmias, or heart rhythm problems. Although some of these problems are not necessarily avoidable, the development of blockages to some degree is preventable. We, as cardiologists, focus a lot of our time and effort with patients to help avoid heart attacks.

A: The more we learn about exercise and its benefits to the body, the more we realize that the “hour at the


gym” mentality is not always the best option. Apart from the time commitment, the repetitive stress on your joints from activities like the treadmill, elliptical, and stepper machines may have some adverse effects in the future for joint health. If you look at the exercise regimens of current athletes, fitness trainers, and fitness enthusiasts, more of them partake in shorter workouts with a combination of interval training and muscle stretching and strengthening activities. Many of these experts report a leaner body physique along with improved health numbers like blood pressure, glucose levels, and cholesterol levels. (See page 36 for an interval workout you can do at home.)

Q: MY FAMILY HISTORY IS TERRIBLE. AM I DOOMED?

For instance, a healthy amount of sleep, keeping your mind active, and lessening stress in your life can also be very beneficial for not only your heart, but your overall body health. Practices like meditation and yoga can also help a person become more in tune with their bodies, improve the detection of early symptoms, and improve mind and body health.

Q: WHAT SORTS OF TESTS OR CHECK-UPS SHOULD PEOPLE GET FOR THEIR HEART? A: Heart disease is the number one killer of men and women in the United States, affecting one out of every three women. Annual check-ups with a primary care doctor to detect risk factors like high blood pressure are a good idea. The age at which to get a cholesterol level, blood glucose level, and a baseline EKG is going to vary based on your individual risk factors. If you have not had this testing done before the age of 35, it is definitely time to get that information to optimize your cardiac risk. On the other hand, if you are having symptoms in the chest that are concerning, like chest pains, shortness of breath, or palpitations, it might be worthwhile to also consult with a cardiologist. At St. Luke’s, we also offer the Women’s Heart Center, where we screen for heart disease in women.

A: It is true that family history is a very important risk factor when it comes to heart disease and heart attack risk. It is one risk factor that is not modifiable. But that does not mean that you need to “give up” and accept your fate. By living a healthy, active lifestyle with good control over blood pressure, diabetes, cholesterol, weight—and by not smoking—you can slow the rate of progression of the build-up of atherosclerotic plaque. A cardiac event that was supposed to affect you in your 40s-50s may be delayed to your 70s-80s with good control of your modifiable risk factors.

If you don’t have at least half an hour to devote to exercise, should you just skip the gym and make up for it later with an extra-long session on the treadmill? The answer is no, according to John Graham, Senior Network Administrator for Fitness and Sports Performance, St. Luke’s University Health Network. “The bottom line is that it’s better to exercise more frequently for a short period of time than it is to exercise just once or twice per week for a longer period of time,” he says. “Regular exercise will increase your metabolic rate and enhance your overall fitness.”

Place garlic, lime juice, olive oil, habanero, and honey in a food processor bowl and puree until smooth. Add chickpeas, 1 to 2 tablespoons of the reserved liquid, tahini, salt, black pepper, and white pepper and pulse to combine. Scrape down sides as needed and continue to process until desired consistency is achieved. (For softer hummus, add additional tahini.) If possible, refrigerate overnight for flavors to meld. Seated along Hellertown’s main drag is 1774 Grille & Tap, a lively haven for foodies that offers fresh, local sourcing and casual fine dining. Purchased in 1747 by Frederick Scholl, the historic spot was owned by the Heller family from 1774 until 1821, later becoming the Pennsylvania Hotel in 1872. Today, the landmark has a new focus—foodies—and it certainly doesn’t disappoint.

While 1774 Grille & Tap isn’t a seafood restaurant—meat lovers will find plates like Beef Stew, Beef Short Rib Flatbread, and Molasses Brined Pork Chop—my dining companion and I decided to treat the evening like dinner at the shore because there were so many tempting menu items from the sea.

With a menu boasting a plethora of appetizers and small plates to kickstart the evening, we opted to order “a little bit of everything” and share it all. As a hummus aficionado, I couldn’t turn down the Toasted Pine Nut Hummus, and as an occasional hedonist, I also couldn’t leave without ordering the Pomme Frites. Both were solid choices: the hummus was smooth and garlicky and would’ve paired with just about anything, while the Pomme Frites were crispy, salty, and moderately to severely addictive. tuna and butternut squash atop a bed of crispy kale. Do you remember when kale chips weren’t a “thing” and when rare kale sightings only took place at fancy salad bars, where it would serve as decor instead of the magnificent edible treasure that it is? I’m really glad we don’t live in that world anymore. The tuna was good, but the crispy kale at the bottom of the dish was actually amazing. I could have (and currently would) eat a bowl of it.

It was earthy and savory–the kind of broth that made me want to get a job in the restaurant’s kitchen for a weekend so that I could steal the recipe. A simple but memorable dish was the Shrimp Flatbread, with fresh arugula pesto and tomato. It was the perfect thing to share, and a wonderful prelude to the entree that followed, the Striped Sea Bass. It was served with shallot-barley risotto, and a hot porcini mushroom broth was poured over the entire dish at the table. It was earthy

® and savory—the kind of broth that made me want to get a job in the restaurant’s kitchen for a weekend so that I could steal the recipe. The fish itself had perfectly crispy—almost crunchy in the best possible way—skin. Meanwhile, the shallot-barley risotto became little pearls of heaven as each piece soaked up the broth. You know all of the bottom pan drippings on Thanksgiving that someone’s culinarily-gifted grandmother would weave into the gravy? It somehow tasted like it was laced with that, but it wasn’t. It was refreshing to find a place that knows how to handle and celebrate vegetables so beautifully. The Sea Bass dish was definitely the star of the evening, and a plate I would recommend to anyone who likes mushrooms and fish.

1774 Grille & Tap makes all of its desserts, so of course, we couldn’t leave without a bite. We decided to get the S’moreo Ganache Tart, with an Oreo crust, chocolate ganache, and marshmallow brûlée. Between the rich and silky ganache, the fun marshmallow topping, and the crumbly Oreo crust, it was hard to put my fork down. Hurry and try these menu items now, because they might not be there next month. As 1774 Grille & Tap sources seasonally and locally, the menu changes with the season. The spring menu will roll out on Wednesday, March 7, with a sneak peak dinner event that includes a 5-course tapas-style dining experience and wine pairing that evening.


While eating in the dining room is always an option, the bar is another choice for both socializing and enjoying the full menu. The crowd is fun and lively, and Maria Lopiccolo, the head bartender, is always experimenting with a fresh fruit puree or housemade syrup—think ďŹ g and Madagascar vanilla bean syrup or spiced pear puree. She is a true expert at pairing avor preferences with drinks. (I had formally all but renounced whiskey in its entirety, and on an earlier visit, she convinced me to try a drink that she had just come up with that happened to have whiskey in it. “If you like red wine, you’ll like this,â€? she had assured me as I eyed the glass suspiciously. She was, of course, correct.) If you’re in the mood for a fun cocktail, deďŹ nitely ask for her advice. If not, the bar also has an impressive wine selection and nearly a dozen craft beers on tap. 1774 Grille & Tap has truly managed to bring an upscale dining experience to Hellertown without any of the pretense. It is local, fresh, and a much-needed addition to the Lehigh Valley’s budding culinary scene.

While that may sound like career foreshadowing for the future doyen of fine farms and country estates, Carol started her professional life working in advertising and marketing in New York City. Upon moving to Pennsylvania, she became the publicity director of the trade book division at Rodale Press—an ideal job Carol was determined not to give up with the arrival of her first child in 1977. The new mother made a valiant effort, even taking the 7-day-old baby along to the office as she returned to work part-time. Fast-forward two months and the need to resume full-time hours at Rodale took

Carol’s career in a different direction. “My husband had just opened a real estate office and I was helping out there a couple days a week—and I could have the baby there with me—so that’s when I got my real estate license,” she says. The skills Carol acquired in previous positions were put to good use. At a time when real estate ads appeared only in column form in newspapers, the agency was producing printed handcrafted brochures with color photography and typewritten copy pasted on 11x17-inch paper. “Those were the earliest brochures that I remember seeing in the area,” she says. Growing sophistication brought the addition of individual marketing brochures for every property—along with the realization that “we couldn’t do the level of marketing and advertising I wanted to do in the lower-price property range.”

On Wednesday mornings, the entire staff goes out to look at new listings. “Then we come back and have a lunch meeting, with everyone involved in the pricing process. The listing price is not finalized until all of the agents have put in their recommendations,” she says. The close-knit office provides an unusually supportive environment. “We really care about one another and work together and help one another. It’s a lot of fun to be there,” Carol says. “A number of agents over the years have said, ‘I would never be in real estate if I wasn’t doing it here.’”

Prior to photographs being taken, a professional stager, Jill Kratzer, creates a 20- to 30-page consultation for each new listing. “She goes room by room making recommendations—of course, taking magnets off the fridge. And she’ll suggest moving pieces of furniture to make sure rooms feel spacious and note


any paint colors that should be updated,” Carol says. “That makes a tremendous difference.” While an updated kitchen is always a plus, simple fix-ups can improve any property’s appeal. “If there’s a fascia gutter hanging down, replace it. If there are little things that look bad, buyers wonder, ‘What else is bad that I’m not seeing?’” Carol says. This broker adds, however, that many of her firm’s buyers and sellers are discretionary. “They don’t need to do it next month or even next year,” Carol explains. “What I love for us to do is listen to what people are really wanting and help them achieve that.” For example, when people are waffling about selling, she tells them, “When you’re ready, you’ll know. Enjoy your house and stop losing sleep over it.” Carol and John Berseth, her partner of 20 years, certainly enjoy their historic stone farmhouse, set on 110 idyllic acres, where numerous community fundraisers have been hosted over the years. “It takes me 3 minutes to get from my garage to the road, and another 2 minutes to get to the office,” she says. “I’m very spoiled by the commute.”
