My time as your editor was exhilarating, educational, and even humbling. There were certainly more ups than there were downs, and I wouldn’t trade it for anything in the world. You may recognize her from her work as a contributing writer, and now we are lucky to have her on our team. She has a passion and zest for all things Lehigh Valley. 5 Fit Tips from Coach Joe

1. Keep a positive mindset. Distance yourself from negative people and information.

2. Get a good night’s sleep. The best recovery from your exercise takes place in the deepest stage of sleep. Things like drinking alcohol before bed harms deep, restorative sleep.

3. Manage stress daily. Stress takes a huge toll on your overall well-being. A smart exercise plan can be cathartic and will naturally help you de-stress.

4. Follow a portion controlled nutrition plan. Set yourself up for success by preparing your meals and snacks in advance so you won’t be tempted by unhealthy choices. At every meal, pile vegetables high on your plate and add a lean protein.

5. Train with purpose. In our coaching program, we lift weights and sprint after a dynamic warmup. Our system is based on the fundamental principles of progression (each workout builds on the next) and overload (challenging your muscles while keeping perfect form).

HomeBody Certified strength and conditioning specialist Joe Arangio—“Coach Joe” as he's known in the gym—and his wife Sharon, a health coach, have spent their careers battling “homebody” culture by teaching their clients how to get and stay active and healthy. Now, they’re redefining what it means to be a homebody entirely with their new reality show, HomeBody Challenge. The transformational show grants Lehigh Valley residents the opportunity to give their homes and their bodies a makeover with help from home renovation professionals and time in the gym with the Arangios. We sat down with the fit couple to get the scoop on HomeBody Challenge.

Tell us a little bit about yourselves. We own WorkoutEngine Allentown, a private gym where we work with clients to help them lose body fat and build muscle. We work with fewer than 100 clients at a time so that we can provide adequate individual attention to each of them as we help them reach their goals. Fitness isn’t just our livelihood—it’s also our lives. Everything we preach to our clients, we also practice.

What exactly is HomeBody Challenge? It’s a fun reality show that takes our passion for health and fitness one step further. It combines two popular formats: home renovation and body transformation. In addition to just home improvement, we also help the show’s participants change their bodies and implement healthy habits to carry with them for the rest of their lives. Success is about sustainability and longevity—you have to be able to follow your nutrition, training, and recovery plan for the next 20 to 60 years. There are some aggressive and popular body makeover television shows that offer dramatic results, but the participants are exercising for 6 hours a day, 7 days a week, and they’re on extreme diets. They can’t keep that up forever, which is why when you see an interview with them a year later, they’ve returned to their former selves.

What’s the link between your health and your home? There are obvious benefits of having a kitchen with ample

HomeBody pantry and counter space, as well as updated appliances, but other parts of the home also play a huge role in your health. Having a healthy space to recover from your workout and the stressful demands of day-to-day life is incredibly important and often forgotten. If you live in an environment that encourages healthy choices, it’s easier to make decisions that will result in your success. There’s also financial health to consider. Surveys repeatedly show that money is a leading cause of stress. Some renovations that we do, such as adding solar panels to offset expensive air conditioning units or using window film on windows to boost energy efficiency, help save people money.

What inspired the show?

America has a huge obesity problem. More than 35 percent of adults are obese, and another third or so of Americans are overweight. Prevention is the best solution, and we’re thrilled to have the opportunity to bring an entertaining and educational show to our community that offers actionable solutions to fight the obesity epidemic.

How do people get on the show?

Success is about sustainability and longevity—you have to be able to follow your plan for the next 20 to 60 years.

Any Lehigh Valley resident who has at least 10 pounds of body fat to shed can apply to be on the show to win home upgrades and training with us. We’re looking for people who are committed to changing their lives.

What’s the biggest mistake most people make when they decide to get healthy?


They don’t set a clear goal with a realistic deadline. Rather than saying “I want to get in shape” or “I want to feel better,” it’s important to focus on something that you can objectively monitor. Decide to lose a certain amount of body fat, run a certain distance, or lift a certain amount of weight by an achievable date—don’t set yourself up for failure by wanting to lose 10 pounds by Friday. Then track your progress accordingly. Setting short-term goals is great, but you also have to implement a long-term strategy. The reason why fad diets sell—and fail—is because they offer the hope of a quick fix to a systematic problem. The best plan is one that you can stick to.

What’s one small thing everyone can do today to improve their health and their diet? Drink more water! Everyone should be drinking half of their bodyweight in ounces. A lot of times, hunger is just thirst in disguise.

How effective is WorkoutEngine Allentown’s training? We put our graphic designer Melissa through the exercise portion of the HomeBody Challenge to find out. For the past two weeks, she has been starting her morning at 6 a.m. to exercise with Coach Joe as well as following the Arangios’ healthy meal plan. HomeBody Why did you agree to this exercise challenge? I feel uncomfortable in my own skin. I knew I needed to make some kind of change when my pants started feeling too tight and my winter coat got harder to button up. I don’t own a scale, but I found out at the gym that I had gained 10 pounds in the past year. I didn’t want to find out where staying on that path led.

What kind of exercise were you doing before? I walked my dogs twice a day, and I’d get to the gym three or four times a month to do cardio for 45 minutes.

What are your workouts like now? They’re a lot more efficient and effective. We do circuits, which keeps my heart rate up and also keeps me from getting bored. Forty-five minutes of exercise four times a week is only three hours total every week, which is totally doable—I used to spend three hours a day watching television.

Have you seen any changes after two weeks? I lost six pounds, and I already feel stronger. I feel like my posture has improved from lifting weights. 410 N. What is your favorite workout song? My power song is “Whip My Hair” by Willow Smith. It definitely makes me work harder.

What has been the most eye-opening thing about this experience? I learned how much I overate. Seeing what proper serving sizes are and how quickly calories add up was a huge realization for me. For my activity level, size, and goals, I only need to be consuming around 1500 calories per day.

Has your diet changed? Drastically! I never used to measure anything and I didn’t bother with nutrition labels. I used to eat pretty healthy for breakfast and lunch, but it all fell apart at night. I’d often go home and treat myself with a huge serving of pasta. I also used to eat really quickly, but I’ve been trying to slow down and savor my meals.

Now I eat five or six small meals throughout the day, like a turkey wrap, cottage cheese, or an apple. On Saturdays, though, I let loose because it’s my “cheat day”! Last Saturday, I had the Brewers’ Grain-Fed Burger from Fegley’s Brew Works—it was heaven.

Wealthy people stockpiled it before the 18th Amendment was ratified. “Bathtub gin” and other homemade potables sated the public’s thirst. Liquor was commonly smuggled into the country, and gangsters such as Al Capone made fortunes from the practice. And, if you knew a guy who knew a guy, you could probably find a “speakeasy”: a secret club where liquor was dispensed illegally. Sometimes just cramped rooms, they operated below the radar and were actually quite profitable.

at 336 Adams Street in Bethlehem. Walk past the bookcases, go through the black velvet drapes, and you’ll find yourself in 1929. The decor is eclectic, to say the least: mismatched furniture, quaintly varied cocktail glasses, and shelves crammed with old books (some of which are used for discreet menu presentation). Odd pieces of old crystal mingle with the candles and oil lamps that replace the usual electrical overhead lights. The Bookstore offers small plates like Oysters Rockefeller, Octopus Panzanella Salad, and Duck Confit Salad Sandwiches; the large plate menu spans everything from beef to vegetarian dishes. In the mood for something lighter? Perhaps Black Truffle Fries, Chickpea Popcorn, or a serving of the popular “Amy’s House Made Pickles” will strike your fancy. The club’s cocktail menu is unusual as well. Many drinks are pleasantly tweaked versions of old favorites: the classic Manhattan morphs into the “Upper Manhattan”—a mix of bourbon, Luxardo maraschino liqueur, sweet vermouth, orange bitters, plus an orange twist and a brandied cherry. Others are completely new creations, such as “Death in a Bookstore,” concocted from Old Tom gin, Tito’s Vodka, absinthe verte, lemon juice, Angostura bitters, and Prosecco. They’re crafted by the Bookstore’s trio of bartenders, three professionals that have raised mixology to an art form. Lead bartender Neil Heimsoth is the go-to guy for finalizing measurements and flavor profiles as well as balancing the proportions of ingredients. Neil likes to start with classic cock-

tails made from various whiskies and gin, and then play with them, using his expertise to improve on the originals. Fellow bartender Ryan Snyder’s forte is fun and fruity drinks, such as rumbased “tiki” cocktails, while Gabriel Manansala is the high-energy personality behind the bar. The Prohibition vibe gets even stronger, thanks to rotating groups of musicians that perform several nights a week. Some play authentic jazz from the ’20s and ’30s with traditional instruments like trumpet, tuba, and accordion. Others perform current music, but with throwback arrangements and styles, à la Postmodern Jukebox.

Hush: The Other Side of Roar Local restaurant legend Don Saylor had been scouting locations for what would become Roar Social House, but stopped when he checked out 732 Hamilton Street in Allentown. “I liked the location because it’s near the PPL Center,” he said. “And when I saw that the building’s back door opened onto Maple Street, I realized it would make a great entrance for a speakeasy. That’s more or less what gave me the idea for a Prohibition theme.” (Ironically, neighborhood construction issues have prevented using the back entrance so far.) Stroll through the long narrow restaurant of Roar, make your way past the open kitchen, and you’ll find a little back room called Hush. “Many people don’t even know it’s there,” says lead bartender Scott Wertz. “It’s dark and cozy, and seats about 30 people.” Although you don’t actually need a password to get in, he

Saylor sent his bartenders on a research mission to learn what drinks were popular during the ’20s and ’30s, “and they came up with a long list of ingredients and recipes—stuff I’d never heard of, even after 50 years in this business," he says.

Wentz and his crew are like alchemists—they mix a few drops of this and a splash of that with various liquors and exotic spirits (Frenet Branca, Chartreuse, a variety of absinthes, house made bitters), along with accoutrements such as fresh basil, mint, thyme, egg whites, and cucumbers. (Of course, the less adventurous can always order a Bee’s Knees, made from gin, fresh lemon juice, and honey, or Hush’s variations on the Old-Fashioned, Manhattan, and other classic tipples.) Food choices emphasize appetizers— flatbreads, pierogies, and spring rolls—but entrées from Roar’s menu are also available. Wentz said the club mixes old-school ambience (bartenders wear suspenders, ties and long bar aprons) with the 21st century. That’s evidenced by the diverse styles of music Hush offers—guitarists, reggae, and even a ’90s-hits DJ. Although he believes the speakeasy trend has peaked, Wentz is confident that its influence will remain. “The style of cocktail production and the drinks themselves and their recipes are here to stay for a good long time. They’ve become part of America’s cocktail lexicon,” he says.

The Hava Java coffee shop on North 19th Street in Allentown has a secret beneath its floorboards— the remains of an authentic Prohibition-era speakeasy! Ron Devlin, a former Morning Call reporter, knew the shop’s founder Harriet Crouthamel. She took him to a hidden space in the basement, where he found a bar built from glass blocks, a handful of tables for patrons’ use, and some smaller alcoves near the bar. According to Devlin, the club’s entrance was located in the alley directly behind the building. Adding to the mystique is a story that Devlin has heard, but was unable to confirm—so let’s call it a “neighborhood legend.” It’s said that, many years ago, that stretch of 19th Street had been torn up to permit underground work. The street crew reportedly found the remains of a tunnel that stretched from the hooch hut into the basement of the 19th Street Theater. If true, it would have been a perfect escape route during a raid—hustle through the tunnel, and then casually stroll out of the theater (“Whatever do you mean, officer? We were just enjoying the moving picture show!”)

Roadside I fall into the first group—I still have vivid memories of visiting when I was young and being utterly amazed. It was like entering another world. Featured in well-known guidebooks such as Weird Pennsylvania and the amusingly named 1,000 Places to See in the USA and Canada Before You Die, Roadside America provides an impressive landscape of life in the United States from the earliest settlers up through the mid-20th century. It features working model railroads and trolleys, buildings with lights and sounds, and even moving waterways. Displays bring these to life through meticulous installations, all of which were part of the creative vision of the founder, Laurence Gieringer. Roadside America, which opened in 1935 and has been at its current location off Route 78 in Shartlesville since 1953, is and continues to be a familyrun affair. Gieringer’s granddaughter, Dolores Heinsohn, is the current owner, and she runs it with her husband and her two children (Laurence’s great-grandchildren). Brian Hilbert, husband of one of Laurence’s great-granddaughters, is the manager. “We have a small and great group of people committed to keeping the displays running and covering the expenses. One of our longtime employees has been with us for decades and remembers when Laurence was here,” Hilbert says. Roadside America, now in its 82nd year, continues to please customers

from generation to generation. Even to this day, with competition from a multitude of places, thousands of people visit every year and are wowed by the amazing landscapes that include many local landmarks. “We had 36,000 visitors in 2015 and about 38,000 in 2016, so our numbers are growing. What’s really neat is that our customers tell us that they make the trip here because their parents came here—it really is a generational thing,” Hilbert says. A fan favorite is the patriotic Night Pageant, where people can experience overhead twinkling stars and view the multimedia show, which runs twice hourly. They also have up to eight trains running, with three you can operate yourself with push-button controls, as well as a new audio tour.

One of the remarkable aspects of Roadside America is that is truly preserves the vision of its creator. While Hilbert said they get offers of train displays and other Americana-related items, they really don’t change anything. That’s because the installations are all original per the initial design. All of Laurence’s work, dating back to the turn of the 20th century, enables Roadside America to be a time capsule, more than anything else.“In many ways, it’s like stepping back in time,” he says. “The only updates that we do are because of necessity. Electrical upgrades, for example, are done for safety reasons, and we’ve had to update some of the trains due to parts availability.” That doesn’t mean Roadside America doesn’t connect with the present day. Bethlehem native Daniel Roebuck, best known for his television roles in “Matlock” and “Lost” as well as the

Roadside movies “The Fugitive” and “U.S. Marshals,” is currently producing the independent feature film “Getting Grace.” Roebuck is filming parts of the movie in the Lehigh Valley and remembered Roadside America because his character in the film is a train lover. Maintaining and servicing over 6,000 square feet of displays is an ongoing job, done in support of and appreciating the dream Laurence Gieringer had since he was a child. Many of us believe that our soul will continue to exist long after our earthly body perishes—that it will have a future that extends beyond our death. But what if our soul also had a past? What if, prior to our birth, our soul already had a “life” in which it was free to make choices and decisions that directly impact our current selves? This is the fascinating, thought-provoking question that Bethlehem based author John Consalvo explores in his fantasy book series Earth & Evermore. “Do you ever wonder how it is that you can meet someone, and after 5 minutes, feel like you’ve known them forever?” Consalvo says. Earth & Evermore explores that very concept. Fantasy might not be everyone’s cup of tea, but Earth & Evermore transcends genres. “It's more than just fantasy. It deals with spirituality, theology, mythology, true love, psychology, and the power we all have in our choices. At the end of the day, many of our favorite bedtime stories and fairy tales are beholden to such elements,” he says. The inspiration for this soul-searching journey came several years ago, when Consalvo was confronted with the death of his grandparents. As he struggled to cope with his grief, he found himself at a crossroad. “I was looking at what the purpose in life was,” Consalvo says. “And I said to myself, ‘It’s not like I had a choice to be born.’ But when I said that, I felt a small voice within my heart say, ‘Are you sure?’”

That small voice sparked a revelation. Immediately, Consalvo was flooded with thoughts that changed the way he viewed not only his own life, but all life in the universe. “I began to ask myself, ‘What causes déjà vu? What if life is much bigger than we think?’” Consalvo explains. “I started to think that maybe we’ve been around for a long time and maybe we make choices to go through this. And so I built on those thoughts.” Consalvo’s work resulted in the book Earth & Evermore: The Lighted Blade, which he began in 2012. The first volume in a planned seven part series, The Lighted Blade introduces readers to a fantastic universe known as the “Galaxy of Souls.” Comprised of ten great worlds, it is inhabited by thousand-year-old human souls, enchanted owls, beautiful seraphs, and other magical beings. Following the story of three souls named Jovan, Bethany, and Queen Amana, the book takes readers on an emotional journey to discover how the choices we make are important not only to our future, but to the future of the entire cosmos. Through richly detailed imagery, Consalvo paints a vivid picture of life in the universe and the ways in which it is interconnected. His descriptions of the different planets—like Gardenia, which is known for its beautiful, rich flora, or Fricto, which is characterized by vast, sparkling ice caverns—help readers easily visualize the reality he has created. His characters, likewise, come to life through

Consalvo’s skill in crafting this imaginary reality comes in part from his career as a musician and songwriter. Having spent several decades writing original material, he is no stranger to the creative process. “There is definitely an influence,” he admits. “My first album, called ‘Choose This Day,’ is comprised of thirteen songs. If you were to listen to it cover to cover, you’d find a common thread. So I’ve always loved the idea of story albums or concept albums.”

For Consalvo, much of the process of writing involves allowing the characters and story to develop naturally. “Even though I created the characters, they kind of have a life of their own,” he says. “I spend a lot of my time getting to know them, whether it’s during a workout or a meal or just taking a walk.”

To help build the Earth & Evermore brand, Consalvo plans to draw heavily on his musical talents by creating an epic, full-length soundtrack for the book. This album will include a main theme and approximately thirteen additional songs that will each be based upon a specific chapter. The idea is to capture the book’s atmosphere, moods, and emotions in music. “I try to see how each specific chapter feels to me,” Consalvo explains. “But with art it’s also in the eye of the beholder. So the listener can see for themselves however they want to see it.” After writing the songs on his guitar, Con-


salvo works with an arranger, Victoria Beits, to create a final orchestral version. These tracks will be available on the book’s website and social media along with original artwork. By creating music and artwork to support the book series, Consalvo hopes to develop Earth & Evermore into a fantasy brand that is different from anything currently on the market. “I want to pique people’s curiosity, and also have people identify with it,” he says. “Music is a big part of that because we always remember what we hear musically.”

This novel follows the journey that souls take before birth on earth, and how the choices they make will frame who they ultimately become.

Currently, Consalvo is writing the second book in the series. Tentatively entitled Courting Dreams, it picks up on the more intricate details of soul mates and the potential for destiny. These themes occur in The Lighted Blade, but the sequel promises to delve a bit deeper.

It’s after hours at the Peaceable Kingdom Animal Shelter and Clinic as Kathy Tomecek quietly approaches and opens the door to the cat room. “I’m waking you all up. I’m sorry,” she announces as the light reveals a room full of yawning, stretching calicos, tabbies, and other felines of every shape and size, each holding court and regally staring down from their perches or curled contently in some fluffy bedding. “Aren’t they beautiful?” says Tomecek, who chairs the board of the nonprofit, all-volunteer, no-kill shelter. “The cats are free roaming, and you have a sense of their contentment whenever you come in here.” After another visit through the dog and rabbit rooms with Tomocek, past a commercial-sized washer and dryer filled with towels and linens for bedding and bins stocked with pet food and chew toys, it becomes apparent that the unassuming, spotless cinder block building at 1049 MacArthur Road in Whitehall Township is more than a way station for pets whose lives have been disrupted.

Last year, Peaceable Kingdom placed 423 kittens, 90 cats, 150 dogs, and 40 rabbits with adoptive families.

“It’s a loving, temporary home while we work to ďŹ nd new homes and new lives for pets left by owners who could no longer care for them or, sadly, by people who discard unwanted animals at the shelter’s door—some were found in boxes sealed with duct tape or tied to the door,â€? Tomecek says. Peaceable Kingdom has been taking in and caring for stray pets since 1998. Last year, it placed 423 kittens, 90 cats, 150 dogs, and 40 rabbits with adoptive families across the Lehigh Valley. Since January 2016, its on-site veterinary clinic, in operation for more than 10 years, has performed low-cost spay and neutering services on 114 rabbits, 394 dogs, and 1,252 cats. Peaceable Kingdom began in 1998 as a network of volunteers who offered their homes to provide foster care for abandoned and stray cats and kittens until permanent homes could be found. Expansion of services started in 2002, when an opportunity presented itself to rent a small building in Whitehall Township. Then in 2004, another opportunity arose to lease the upper oor at the former Zimmerman’s Market on MacArthur Road, and the shelter opened its ďŹ rst permanent home. In 2012, the building’s owners, Becky Krisko and her mother Mary Hilbert, both supporters of Peaceable Kingdom, listed the property for sale and gave the shelter ďŹ rst option to purchase it. “We were growing and had to buy it or leave—there was nowhere else to go,â€? Tomecek says, recalling the difficulty in ďŹ nding properties zoned to allow an animal shelter. Today, the shelter is staffed by 170

faithful volunteers, a limited paid part-time staff, and Drs. Kerri Nigito and Amber Bauer, who provide veterinary services at the clinic, which is open three to four days a week. Peaceable Kingdom open its doors every Saturday for adoption. “It’s insane here on a Saturday. We open to the public at 10 and the staff shows off the dogs, cats, and bunnies,” Tomecek says. “Peaceable Kingdom volunteers staff kitten adoptions at the PetSmart store on MacArthur Road, which donates $10 to us for each adoption.” Peaceable Kingdom accepts donations of food, bedding, pet toys— “almost anything that we can use,” she says. Nothing goes to waste: any surplus food is donated to the Animal Food Bank of the Lehigh Valley. Tomecek says it takes $30,000 a month, not including food and supplies, to operate Peaceable Kingdom. The shelter has a list of goals that include renovating the interior and moving the clinic to a separate part of the building to avoid the inevitable barking when someone brings an ailing pet in for care. “It’s a tough world out there, and so many worthy charities to support,” Tomecek says. “We want to give our veterinarians the tools so they can do more to help the animals that come here.”

It’s the many success stories that provide the motivation and inspiration for those who support Peaceable Kingdom. Angela Passamonte and her husband, Nick Koch, had been discussing getting a dog and decided to visit area shelters just to get more information about the process. A post about available Chow Chow puppies, led them to Peaceable Kingdom, where an adoption volunteer helped the Upper Macungie Township couple take a close look at their lifestyles and offered advice that Chow Chows may not be the best breed for ďŹ rst-time dog owners. “We appreciated her expertise in adoptions, and we took her advice,â€? Passamonte says. “She then showed us Clover, an English setter/spaniel mix. She was about 9 years old and very sweet. Even just walking toward her, she smushed her face through the bars of her cage to get petted.â€?

The couple learned that the dog, while friendly, needed to be the only one in the home and had health issues. “The Peaceable Kingdom team was raising funds for her care, and the clinic staff performed her mammary tumor surgery,â€? Passamonte recalls. “We met in a socialization area and just fell in love with Clover, and the application process was easy. We ďŹ lled out the paperwork and were contacted, as were our references, within the week. They made it easy to arrange a pickup and have her foster family bring her to the shelter for us.â€?


Clover came with instructions and tips from her foster family, which smoothed the way for her transition into her new home. “Peaceable Kingdom’s dog team also reached out to us after some time to make sure we were doing okay and to offer any help if we needed it,” Passamonte says.

“We brought Clover home in February of 2015, and she has fit in so well in our lives that it’s like she was meant to be,” she says. “Adopting an older dog is such a rewarding experience because they have so much love to give, and as a bonus, they already know many basic dog commands.” Passamonte’s experience with Peaceable Kingdom was so positive that she is now a volunteer. “I hope to show people that every pet in the shelter, regardless of age, deserves a loving home,” she says. Successful adoptions require hard work that never ends, Tomecek says, who began her relationship with Peaceable Kingdom in 2000 by providing foster care for cats and kittens. “When we find homes, there’s always another animal arriving here in desperate need,” she says. “But the reward comes when we take homeless and abandoned animals and make them whole again. We heal wounded bodies and hearts. They say necessity is the mother of invention, and for Lehigh University graduate student Gina Gullo, that’s pretty much how her passion for cooking began. When she moved off campus in college, she no longer had a meal plan and had to start cooking for herself. It didn’t take her long to get started on a fruitful path. “I got spoiled on meal plan food and wanted nicer things, so I started watching a lot of Food Network and experimenting,” says Gullo. “I eventually got my hands on family recipes. I wanted to be that grandma that made the yummy stuff, and I kept going.” Trying out for Chopped seemed like a natural progression for the passionate home chef with a penchant for medieval re-enactment. Gullo is currently finishing up her doctorate in Educational Leadership at Lehigh University with sights set on finishing in May. Student government and diversity studies keep her busy in addition to being a mom and wife.

and cosplayer. It seemed perfect, so I applied.” All of Gullo’s dressing up paid off. She received a call 24 hours after she applied to the casting call asking her to come for an on-screen interview. That same week she traveled to New York and talked about herself for an hour. “I'm not sure if it was carrying a selfmade helmet and sword through the subway or just being friendly, but I made it!” she says. The Lehigh Valley local was wellprepared to star on Chopped, thanks to her culinary skills. While she loves tacos, bacon, dates, cheese, and ice cream, she especially enjoys making complicated dishes—things like pan caramels, custards, French meringues, marshmallows, and sauces—because it’s “almost like a puzzle.” “I love playing with spices,” she says. “We can't just have a spice rack in our home. We have a spice cabinet. I also love using acids like citrus or vinegars to deglaze pans. It still seems like magic when the pan goo becomes a yummy sauce.” Once the surreal experience of being able to star on her favorite show was in motion, it was only a matter of time until the filming. While Chopped didn’t ask for anything in advance, Gullo decided to do some preparation of her own. Her husband brought home mystery baskets at random and timed her in the kitchen as she prepared different kinds of food. She also hosted an open house one week before taping where her friends could bring baskets, giving her a round and judging her creations. That day she prepared eight rounds of food!

For preliminary details, the film crew met at Gullo’s home from 9 a.m. until 5 p.m. to gather background footage for the program. When the day of the show arrived, the contestants headed to Chopped’s studio, the Chelsea Market in New York City—the very same space that has seen the likes of Emeril and Iron Chef America. Gullo arrived that day at 4:30 a.m. for filming and didn’t leave until 10 p.m. “The set was all decorated, so there was an extra challenge of avoiding the decorations,” Gullo says. “The coolest part of the Halloween angle, other than costumes, was probably the lighting they used for lightning. They had three kinds of lightning lamps!” During the show, Gullo dazzled the judges with her appetizer, a Zombie Hand Face-Melting Taco. For the entrée, she creatively presented a pork loin seasoned with coffee and cocoa. Gullo made it through the round neck and neck with drag queen Schwa De Vivre, with both hearing from the judges that they’d had a little trouble keeping the pork from drying out. Still, they were happy to move on to the next and final round. The judging portion between each round typically took the judges about 15 minutes. For the final round as the two remaining contestants waited, nearly an hour and a half passed before they learned of their fates. Gullo ended up coming in a very close second place when her Goat Cheese Spider Ice Cream got “chopped” due to the horned melon’s flavor getting lost in the dish. Gullo cited the horned melon as the most challenging aspect of the day. “It had almost no flavor and was full

of seeds,” Gullo explains. “It was more like a cucumber filled with watered down honey. I tried to use it as a sweetener, but it wasn't strong enough. Other challenges were my height (I had to keep moving the one step stool they had everywhere), forgetting to double check my cooking temps the morning of the show, and my contacts, which were starting to dry out by the dessert round.” Despite those challenges, though, she put up a valiant fight and got to live out something that, for most people, is something only from their wildest dreams. “At one point in the judging, Scott said that I could cook for him anytime,” Gullo says. “It was such a flattering compliment. If Scott judged the show alone, I'd be $10,000 richer!”

Let me just say two things: I am not a pedantic grammarian, nor am I infallible. In fact, people who correct other people’s grammar in casual conversation are more of a personal pet peeve than people who can’t remember the difference between “your” and “you’re.” There is no reason for everything to read and sound like a terms of use agreement. I believe in liberally exercising your poetic license—as well as considering both your audience and the evolution of language—when writing and speaking. Let your freak flag fly and prepositions dangle, I say! (It should perhaps be noted that I also believe that a carefully curated cheese plate is a well-rounded dinner.) Still, in honor of National Grammar Day—it falls on March 4 for those of you who would like to begin an annual observance—it seems appropriate to address a few lingering nuances of language and punctuation that still seem to nonplus us.

Semicolons Are Tired of Being Misunderstood I often read e-mails and forum posts in which the author decides to use a semicolon. It seems that whenever an author feels like their sentence is starting to get wordy, he or she remedies verbosity by adding a semicolon. When two thoughts are independent clauses (complete sentences) and follow the same thought or topic, use a semicolon. You do not need a semicolon if you’re connecting the clauses with a conjunction

The Lay/Lie Struggle This one is like a phone number in 1999 in the sense that you just have to memorize it. If you assume a supine position somewhere, you lie down. If you set a book down, you lay it down. If it’s not already, here’s where it gets tricky: if you assumed a supine position in the past, you lay down. If you set your book down in the past, you laid it down.

Owner Mitzi Cullen celebrated the eatery’s second anniversary in November. She and Executive Chef Christopher Goodwin have created a farm-to-table menu utilizing local purveyors to ensure freshness. Chef Christopher practices sous-vide cooking for many of his ingredients, which is a method of slow cooking meats and vegetables in a vacuum-sealed, temperature-controlled steam environment. This interesting cooking practice aids in retaining moisture and preserving natural flavors in foods, all while preventing overcooking. We were seated at a comfortable banquette in the main dining area by Brandon. The other server that night was Alex, and together, the two provided professional yet friendly service. Wednesday is half-price wine night (both glass or bottle) and we sipped a glass of 2013 Joseph Drouhin Chardonnay while we enjoyed a tasty amuse-bouche of a mini buckwheat pancake with quince and admired the decor. The red bar stools complement the attractive marble bar and wall of liquors. Red is carried throughout onto the comfortable leather-covered dining chairs and banquettes. The lighting is perfect for the muted colors that accent the attractive artwork and clean wooden floors. A rear dining area is similarly decorated and increases the total indoor seating capacity to about 55. There are fabulous still life photographs in this room, which were taken by Mitzi’s son. During warmer months, al fresco seating allows diners to enjoy the sights of downtown Emmaus.


The dinner menu is small but mighty. In addition to three salads and a daily soup, appetizers include a Cheese Plate with a selection of four fromages with grape compote and three textures of honey; Beef Tartare with accompaniments; Torchon of Foie Gras with apple and pear chutney, Pain Perdu (bread similar to French Toast); as well as Scallops Served Three Ways—pan seared, tartare, or crème fraîche. There are also three selections on the small plate menu— Duck Carpaccio with charred onion, grapefruit, and peach foam; Scallop Carpaccio with orange, apple sticks, and beet caviar; and a Lump Crabmeat Salad.

My tower of roasted golden and red beets wrapped in a thin carrot slice with delicate cheese over a fennel puree was very unique. It was an interesting blend of tastes and very different from anything I’ve had in a long while.

For dinner, I chose the Duck Breast with cajun spices, ten stewed local vegetables with Pistou (a French version of pesto sauce), carrot-anise glaze, and a Meyer lemon marmalade. The duck was very lean, as it should be, yet crispy on the outside. The veggies were fantastic—a unique blend stewed and accented with the savory glaze. I loved this dish. Tom ordered the Coq au Vin, a 187 Rue Principale favorite. The leg and breast of chicken in wine sauce was served with pearl onions and pancetta with a red wine glaze and a crispy sourdough baguette. Tom enjoyed this traditional French dish. Both portions were beautifully presented. We also tasted a side dish of Wild Mushroom Pancakes, which were yummy. Other sides include Collard Greens, French Lentil Ragout, and Yukon Gold Mash Puree, while additional entrÊe selections include Halibut with Horseradish Panko Crust, Mushroom Duxelles, Ginger Glazed

I had a glass of Louis Latour Pinot Noir while Tom tried the Raymond Red Blend from Napa with our meals. We appreciated that Brandon served our wine (both red and white) in proper stemware, which so often is overlooked in many restaurants today. Later, we enjoyed excellent coffee, fresh from the French press, with dessert. I ordered the Apple Crêpe with cinnamon and fresh cream; Tom finished with the Poached Pear Crêpe with caramel sauce and sea salt. Both were to die for and a wonderful way to end the meal. Executive Chef Christopher Goodwin graduated in 1990 from New York Food and Hotel Management Culinary Academy and brings 25 years of experience to 187 Rue Principale including stints in New York at Aquavit, Picholine, and Tavern on the Green as well as tenure at Glasbern Inn, Hotel Bethlehem, and Hook.
