On Sunday, March 20, half an hour past midnight EDT, the sun crossed the celestial equator moving north. This marked our first official day of spring. But we don’t need a date to tell us that spring is here. Taking advantage of the sunlight, people, plants, and animals are emerging from their winter modes to get outside, bloom, and otherwise welcome the sunshine. Trees are budding, peepers are singing, and geese are flying overhead. Joggers and cyclists are a plenty, neighbors are cleaning their yards, and you can hear the crack of the bat coming from local baseball diamonds. Perhaps the most telling signs of spring are the blooming flowers and plants peeking through the softened ground. Yes, that’s right, your garden is waking up, and you're in charge. It's time to plant, prune, prepare beds, and care for your lawn.

Coca-Cola Park WRITTEN BY CEZANNE COLVIN

You have the day off from work, it’s warm outside, into the bacon on a stick trend, there’s also Maple and your favorite minor league team – the IronPigs Candied Bacon, which is – much to our delight – exactly what it sounds like. – are winning. In your left hand, a Mac & Cheese Parfait – layers of tender pulled pork and creamy macaroni and cheese – awaits. In your right hand, Fried Funnel Cake Bacon, a thick slab of bacon on a stick breaded with funnel cake batter and sprinkled with powdered sugar promises a swirl of savory and sweet in every bite. You do, of course, what anyone else in such a magnificent dream sequence would do: you have both. Except this isn’t a dream – it’s an evening out at Coca-Cola Park.

Just in the mood for dessert? There’s a snack for that: the park’s signature Funnel Cake comes with gooey hot fudge, sweet strawberry topping, and whipped cream. And, yes, sugar aficionados rejoice: they have Deep-Fried Oreos.

If you’re into the bacon on a stick trend, there’s also Maple Candied Bacon, which is – much to our delight – exactly what it sounds like.

Peanuts and crackerjacks may have been acceptable bleacher munchies in days gone by, but the home to the Lehigh Valley IronPigs has transformed the all-American game into a dining experience in its own right. The 8,278-seat baseball park is also host to the largest and most delectable dinner table in town, so next time you visit the AlWhat About Hot Dogs? lentown stadium, don’t forget your appetite (and There are the type of hot dogs that your babysitextra napkins). ter boiled, diced up, and threw in your macaroni Wait, Tell Me More About and cheese. Porker Grande Sandwich Then there are the hot dogs at the Lunch Pail Grill at Coca Cola Park, which are, if you will, in a whole new league. Here, baseball’s signature food comes as the Chicago Style Dog, a 1/4 lb. Black Angus hot dog topped with tomato, chopped onions, relish, spicy mustard, and a pickle spear on a steak roll. There’s also the Trough Dog, which is wrapped in bacon and topped with pulled pork, chili, and cheese sauce.

Just Munchies If you’re in the mood for regional comfort food, you can’t go wrong with Pot Belly Pierogies, ten pockets stuffed with cheddar cheese and topped with pulled pork, cheddar-jack cheese, sour cream, and grilled onions. Not a pierogi person? Their Sweet Potato Fries are an especially sweet treat, seasoned with cinnamon, sugar, and served with a side of maple syrup for delightful dipping.

Sizable Sandwiches The home of the IronPigs lives up to its name with loaded handfuls like the Porker Grande Sandwich, barbecued pulled pork snugly nestled with a thick strip of bacon, fried onions, and cheese sauce on a warm roll. Still hungry? Try a kaiser roll stuffed with ham, pulled pork, and bacon — appropriately dubbed the Three Little Pigs sandwich.

Yes, They Have Cheesesteaks Too

The finger food doesn’t stop there — 2016 brings the new addition of a Loaded Nacho Bowl, a massive pile of tortilla chips topped with ground beef or pulled pork and customizable toppings ranging from guacamole to cheese sauce and sour cream to steak.

New this year are two fresh spins on the area’s famous food: cheesesteaks. The Chicken Cordon Bleu Cheesesteak is shaved chicken with ham and white cheese, while the Buffalo Chicken Cheesesteak is shaved buffalo chicken with blue cheese dressing.

For the fans with more traditional taste buds, you can also pick up plates of Onion Rings and Boneless Chicken Bites.

There are other ways to get your cheesesteak on – you can skip the

py Hour on Thursdays from 5 p.m. to 7 p.m., featuring $1 hot dogs and $2 domestic drafts. Also new this season is the Coney Island Hard Root Beer Float, with two creamy scoops of vanilla ice cream and a welcome kick of 5.8% ABV. Saving your calories for the DeepFried Oreos? There are over 113 beer taps within the ballpark, including a selection of craft beers at The Beer Garden, and a full-service bar with liquor and wine at The Club Bar.

Fried Funnel Cake Bacon bread and dig into a generous helping of Philly steak, sweet peppers, onions, and white cheddar cheese sauce on a bed of your choice of Waffle Fries or crispy Homemade Chips.

Gone Gluten-Free? No problem! Dietary restrictions used to mean that fun foods were off-limits, but the stadium has a dedicated gluten-free stand so you can get your snack on without worry. After all, nothing’s worse than chowing down on a sad salad while everyone around you is Instagramming their towering plates. At the stand, you’ll find treats like baked potatoes with various toppings, as well as gluten-free cookies and brownies.

Justin Klement ENVIO U SAR T WRITTEN BY CEZANNE COLVIN

“People thought I was crazy,” recalls Justin Klement, but the Whitehall-based artist has never let people’s opinions dictate his life. When some people picture a college football player, they might imagine a genetically gifted young man more concerned with practice and afterparties than going to class. When they imagine a college art major, they might imagine someone dressed in acrylic-stained jeans with traces of charcoal perpetually lining his fingernails. When they think of a business major, perhaps they think of someone frequently praised for his logic or practicality. Klement isn’t interested in stereotypes or fitting neatly into boxes, though. While athleticism and artistic ability don’t typically go hand in hand, they have served as a complementary backdrop for his entire life. Like most creatives, the budding artist could frequently be spotted with a pencil in hand, drawing. As he progressed through high school with sketchfilled notebooks, many of them contained more drawings than actual notes. Despite his burgeoning hobby of doodling in the margins, he maintained straight As and, unsurprisingly, always looked forward to art class.

Although Klement studied design in school, it wasn’t until he left that he developed his own artistic voice. A friend introduced him to stenciling and spray painting, and, paired with his strong design foundation, it ultimately evolved into his signature style that he calls “graphic design meets street art.”

He combines design elements with street art techniques – primarily spray painting – by starting digitally. A typical project begins by opening Photoshop and experimenting with composition, typography, and color schemes long before any actual paint is mixed. After poring over the details on screen, he’ll ďŹ nally move to the canvas, beginning with the background. His backgrounds aren’t a simple color or something forgettable, however – they’re complex and texturized individual pieces in their own right, often taking several long nights of work to complete. Then, Klement moves on to the ďŹ gure. This is where he draws on his knowledge of street art, breaking the layout down into a series of hand-cut stenciled layers to control the spray paint. He says that while he relies on the principles of design in the foundation of his work, he uses shadows, splatters, and spray to create depth, attitude, and emotion in his dynamic paintings. “It’s quite the process,â€? he says. “The last thing you want to do is mess up on a background that took you a few days to ďŹ nish.â€?

While his work might be characterized as fan art, his brush strokes and spray cans are reserved for those who do more than just score a touchdown or write a hit song. One of his latest pieces features Saquon Barkley, a former Whitehall High School all-state running back and current Penn State University football star. Klement took note of the football player when Barkley selflessly gave his own gold medal to a track and field athlete who lost a race she had originally won after a timing malfunction required the race to be repeated. Klement’s scope isn’t just local, either. His artwork hangs in the homes of Drew Brees, a quarterback for the New Orleans Saints, and Reggie Bush, an NFL running back. Bob Saget of Full House fame once tweeted his work, and a social media post from DJ Tiesto sharing Klement’s work garnered a massive 30,000 likes.

“The best part of the finished product is seeing how the subjects react,” he says. “Mike Tyson was hesitant to sign a painting. ENTOWN'S

West Park WRITTEN BY LIZ REPH

20 APRIL 2016

A beautiful green space that boasts nearly 400 different varieties of trees and shrubs, Allentown’s historic West Park is located just east of William Allen High School, between West Linden and West Turner Streets. Established at the turn of the 20th Century, the park was created primarily through the efforts of Allentown business magnate Harry C. Trexler. Arguably the city’s most powerful and influential business owner, Trexler amassed a fortune in the timber industry before turning an eye towards Allentown real estate development.

After more than 100 years, West Park is still considered one of Allentown’s most precious gems.

Revitalize your smile. Rejuvenate your overall wellness.

Dr. Chuck Harding

Extraordinary Smiles Influenced by the principles of the “City Beautiful Movement”, which called for introducing “beautification” and “monumental grandeur” in urban areas, Trexler began planning for West Park in 1907. To assist him in the park’s design, he hired acclaimed landscape artist J. Franklin Meehan of Philadelphia to develop the planting plan. Meehan, who had previously helped design Philadelphia’s first golf course, modeled the park’s winding pathways after an idyllic English garden. To create the park’s band shell, which

would serve as a center of community events, Trexler hired another highly respected Philadelphian – architect Horace Trumbauer. Perhaps best know for designing opulent mansions for the era’s “robber barons”, Trumbauer also collaborated on the creation of the Philadelphia Museum of Art and designed much of Duke University’s campus. Finally, in an effort to pay tribute to local heroes, Trexler also sought the talents of renowned sculptor George Brewster. Revered for his war memorials, Brewster was commissioned to create the park’s First Defenders Monument, which honors members of the Allen Guard. One of the first militia groups to sustain casualties during the Civil War, the Allen Guard’s rich history includes being called to Washington DC to help protect the city from Confederate forces. For their heroics in defending the capital, Congress later honored the Guard, and President Lincoln personally met with them to thank them for their service.

When West Park officially opened on September 17th, 1908, it became Allentown’s first public park. The occasion drew hundreds of people from the Lehigh Valley, and included a performance by the Allentown Band – the oldest civilian concert band in the United States. Founded in 1828, the Allentown Band was considered one of the premier bands of the era. Approximately twenty of its members were even recruited to play for celebrated conductor John Philip Sousa at the turn of the 20th Century.

After more than 100 years, West Park is still considered one of Allentown’s most precious gems. Over the decades the park’s natural beauty has grown to include additional plant species, while the 78 varieties of trees have all been mapped and labeled for visitors’ enjoyment and education. The area where the First Defenders Monument still stands has also evolved to include memorials for veterans of more recent wars, while additional bench seating has been added around the park’s centrally located fountain and along the walking paths. The current Allentown Band still holds regular performances in the park’s band shell. Today, the West Park Civic Association is primarily responsible for preserving, promoting, enhancing, and protecting the park and the surrounding neighborhood. Founded in 1976, the organization works in conjunction with Allentown city leaders and the Harry C. Trexler Trust to maintain the land and host family-friendly community events. In 2001, the group also succeeded in having a portion of the neighborhood surrounding the park designated the West Park Historical District. This area, which stretches from approximately West 14th Street to West 17th Street, between Chew

Car Care Aware Jack Dungan, Service Director of Brown-Daub Chevrolet of Nazareth has some valuable tips to share. “Frigid temperatures and harsh road conditions take a serious toll on our transportation. Taking care of some basic maintenance issues now can avoid them from turning into expensive and dangerous problems,” he says. Let’s run down a list of some car care basics. 1. Check your tire pressure, tread and alignment. Many new cars have TPMS (tire pressure monitoring systems), which signal you when you have low tire pressure. Don’t ignore those warning lights! “To check tread depth, simply place the edge of a penny into the tread of each tire, near the center. If the tread doesn't cover any portion of Honest Abe's head, you likely going to need new tires,” Dungan shared. Also – don’t forget about your spare tire! Get your tires balanced if you’re feeling anything but a smooth ride when you drive. Having your tires rotated is another good idea, as that helps your tires wear evenly. Potholes and other winter road hazards aren’t good for your car’s suspension. “If you notice your car constantly pulls to one side or doesn't drive straight ahead when your steering wheel is centered, get it checked,” he added.

2. See clearly. A change of seasons is a good time to check your windshield wiper blades. Have they been streaking or chattering? Most blades are good for six months, and some can go longer. Your visibility is important, so don’t shortchange yourself by trying to go another season without replacing them. This isn’t too hard to do yourself, and most auto parts stores have guides to ensure you’re buying the correct replacements. 3. Be seen by others. When was the last time you checked to see if all your bulbs were working properly? Turn on your lights and walk around your car. Be sure to check your marker lights and license plate lights, in addition to your headlights and taillights. Get a friend to put his foot on the brakes and be sure your brake lights (and the center high-mounted one, too) are all functioning properly. Check your high and low beams, and the turn signals. This includes back-up lights, too! 4. Check those fluids. Keep an eye on important fluid levels under the hood. These include your radiator system, oil, transmission, and windshield washer fluid. You’ve probably used a lot of washer fluid this past winter, so you may want to keep some on hand in your garage for an easy topping off

Fingerprint jewelry

by first impressions®

of the tank. Dungan shares this tip: “We want good [fresh, new] fluids conditioning your old parts, rather than old fluid trying to do the job. It has always been my personal simple philosophy to follow.” He also suggests you consult your owner's manual to find out how to check the levels on your particular model. 5. Give your baby a nice bath. After a long winter, your vehicle needs a good, thorough cleaning. Pull out that garden hose, and get a good quality car wash concentrate. It’s best to wash from the ‘top down’ – meaning you wet your car down, and then clean the roof, then the trunk and hood, and then the sides, and the wheels last. This method lets all the dirty water wash away from the car, and you’re not running dirty water over clean areas. Also, don’t forget the bottom of your doors – they can really get coated with grime. Road salt can really do damage to your car, so this may be when you go to a carwash for a thorough undercarriage cleaning. Finish things up with a good coat of quality car wax. 6. Clean the interior. Cold weather is the time when we don’t worry about extra stuff in the car, primarily because it’s too cold to clean it out. Take time to declutter and throw out garbage, and store the ice scraper until next season. Give those mats a good cleaning, and use a steam cleaner to really remove road salt from your interior carpets. Do you carry sandbags or other heavy items in the trunk to improve how your rear-wheel drive car handles? Taking extra weight out of your car can also increase your gas mileage. 7. Test your batteries, spark plugs and wires. These items work together to get your car running, and really work hard in the cold months. Frigid temperatures can compromise performance. Dungan adds that “if your battery is more than four years old and if it sometimes takes more than a few seconds to start your motor, have it checked.” 8. Change your oil. One of the cheapest ways to ensure your car will last it to change the oil and filter. Check your owner’s manual for the proper service interval. There are summerweight oils and winter-weight ones, too. This can add to a smoother running engine, and better gas mileage too. If you do your own oil changes, be sure to properly dispose of your used oil.

Buzas' G RE E N HO U S E AN D FAR M WRITTEN BY KATHRYN D’IMPERIO

The Lehigh Valley is home to a diverse community with many hardworking business owners in all lines of work. Like the interwoven fibers in a colorful quilt, the people and businesses of a region grow to become a part of its composition. This meaningful symphony of people and places reminds us to keep a local focus whenever possible. In particular, the Valley offers rich farmland to cultivate crops as well as a great place to build a family legacy that continues to dig its roots deeper into the community’s soil. Buzas’ Greenhouse and Farm first took root in the Lehigh Valley back in 1938, started by Arthur and Mary Buzas, the grandparents of Beverly Hoyer, who now owns the business with her husband Bob and their two daughters, Nicole and Julia. The early days saw the family selling produce at the Easton Circle market in Center Square, and eventually at Nazareth’s market as well. The first of the greenhouses came to life in 1961, with four buildings made mainly of glass and wood boasting 64 feet in length apiece. Since then, the farm has expanded with more greenhouses and now the fourth generation is getting ready to take over the family business. shrubbery, and produce, the Hoyers happily help people plan their gardens or answer questions about growing and planting as related to their customers’ own unique yards and growing spaces.

They are working to carry a “greener” theme throughout their business, reducing their carbon footprint and keeping plants and produce healthier for their customers and their families. “We’re involved in the retail end of things and one of the advantages is we start the product from a tiny seed and grow it on and sell the finished product off or halfway through for our customers to finish off,” says Bob Hoyer. “We meet a lot of interesting people and are able to help a lot of people. You have that one-on-one contact and that really means something. No day is ever the same; you have your issues but if I didn’t like it, I would have left a long time ago.”

At Buzas’, the Hoyers grow and sell plants in their greenhouses year-round, ranging from Easter offerings and spring bedding to fresh summer produce, falls mums and pumpkins, and Christmas decorations, door wreaths, poinsettias, and cemetery blankets. In addition to providing high quality plants, Buzas’ Greenhouse and Farm offers a wide spread

of fresh produce and plants, including some that can go out in early April like cabbage, broccoli, and kale. Others should wait until mid-May to avoid the threat of frost. The Hoyers grow a variety of tomatoes ranging from early girls to the large big beef varieties, not to mention hot peppers, sweet peppers, and a good selection of herbs. During the summer months, they offer fruit like cantaloupes, peaches, apples, pears, and fresh-picked strawberries. Buzas’ also grows a lot of sweet corn. As far as flowers go, the farm raises a large selection of Easter flowers, including Tulips, Daffodils, Lilies, Hyacinths, Hydrangeas, Azaleas, Pansies, to name a few. They also offer annual flowers like impatiens and begonias, among others. “The greenhouses are one acre under cover,” Hoyer says. “That allows us to grow a lot of different varieties throughout the year. Our greenhouses aren’t always full but we’re starting to fill them now. We just started various bedding plants and flowers, and we’re growing produce inside the greenhouses.” “The area of the LV that we’re in, south of the slate belt and that area, has been proven to have the best farmland in the entire county,” he adds. “All these warehouses are scoffing up that good land. The prime agricultural farmland down here helps us to grow a good product, but by same token, we’re in an area where everybody wants to buy the land up and put their warehouses up.” Embracing advances in the science of the growing and farming industry, Buzas’ Greenhouse and Farm has taken steps to become more involved with integrated pest management where they use very few chemicals and only

when necessary. Instead of sprays to control the bugs and pests, the farm brings in beneďŹ cial insects, which are essentially good bugs introduced to kill the bad bugs. Rather than relying on chemical pest control, the farm is turning more in the direction of biological controls as much as possible. Additionally, in one of greenhouses, the Hoyers are able to recapture and reuse irrigation water. They are working to carry a “greenerâ€? theme throughout their business, reducing their carbon footprint and keeping plants and produce healthier for their customers and their families. Buzas’ Greenhouse and Farm will be introducing a couple of new varieties of plants and vegetables this spring. A quick glance at their Facebook page will show some of the exciting plants in bloom, from oranges and grapefruits to owers as far as the eye can see. “The Lehigh Valley is a good place to live and work, there’s no doubt about that,â€? says Bob Hoyer. “Although, it’s undergoing several changes, like it or not, just because of geography. We’ve been here 75 years almost, and we’ve had the opportunity to sell the place many times. We are committed to the area. I have an old saying, ‘Buy Local or Bye-Bye Local’ on a sign we put out. If the farmer can make a living, he’s not going to sell his land.â€?

I couldn’t walk more than one block without leaning against a building and trying to catch my breath. But over 122,000 people nationwide (and many in the Lehigh Valley) aren’t so lucky. Their survival depends on receiving a desperately needed organ transplant. Unfortunately, the demand far outstrips the supply; that’s why 22 of them die each day.

Organ Donation The Lehigh Valley Coalition for Organ and Tissue Donation (LVC), an all-volunteer group affiliated with Philadelphia’s Gift of Life Donor Program, is dedicated to improving that situation through its programs of outreach and education. “There are nearly 11 million people in our coverage area [of eastern Pennsylvania, southern New Jersey and Delaware] and, our staff can’t reach everyone. That’s why we began organizing coalitions about 20 years ago,” said Howard M. Nathan, president and CEO of Gift of Life. “They help us to educate communities about the need for organ and tissue donation and to persuade people to register as potential donors.”

Activities of each coalition depend upon the group itself – one may regularly address high school students; another might run a support group for recipients. “But what’s cool about the Lehigh Valley Coalition is that they’ve taken the initiative to do just about everything!” he added.

Bethlehem resident Sue Seidel’s son Brian was just 22 years old, engaged, and ready to graduate from EmbryRiddle Aeronautical University. “He belonged to a motorcycle club at school,” she recalled. “On the night of September 29, 2002, he and his friends were riding on highway I-4. An electrical contractor ahead of them had a 20foot extension ladder attached to the bed of his pickup with nothing but a wire coat hanger. “When the ladder slipped off the truck, Brian was the only rider to hit it. He was thrown from his bike, and slid head-first into the truck. Even though he was protected by a helmet, his brain stem snapped.” At the hospital in Orlando, Sue agreed to donate his organs. “Brian was able to help nine people that night,” she said. “He donated his heart, both lungs, liver, pancreas, both kidneys and both corneas.” Since then, Sue has spoken to thousands of people at service clubs, in middle- and high schools, and in Philadelphia’s “Donation Champion” learning sessions for critical care staff. She’s also had repeated contact with Carol Straley, a Floridian who received one of Brian’s kidneys. Now 65, she’s doing extremely well, Sue reported.

The receiving A common myth is that a new organ doesn’t really improve your health, but just maintains the status quo. Macungie resident – and heart recipient – Todd Stickel belies that idea. Thanks to a congenital heart defect, Todd had valve replacements at the ages of 21 and 48. Six months after the second replacement, his condition declined. “My wife, Bonnie, and I were in New York, walking to see the “Dr. Oz” show,” he said. “It was only four blocks from our hotel, but I couldn’t walk more than one block without leaning against a building and trying to catch my breath. “I knew something was wrong.” He entered the transplant waiting list in April 2012, and underwent surgery on July 7, 2013 – after spending the previous four months at the Hospital of the University of Pennsylvania, as his condition continued to deteriorate. After just six months of intensive rehab and exercise, he returned to his job as an outside sales rep for ductile iron pipe. “I have a big territory,” he said, “and I’m constantly on the road, visiting engineers, distributors, contractors – wherever I have to go to promote my products.” He also braved heat and humidity during the 2014 Transplant Games in Houston – running in a 5K, and competing in singles and doubles tennis, singles table tennis, basketball, and

Donation volleyball. (Bonnie and their daughters Morgan and Kendyl ran with him, and he sliced 10 minutes off his 5K time from that year’s Donor Dash.) His most memorable experience of the games was the person who presented him with his silver medal for volleyball – a donor mother whose son had died 18 years before. “That was very special,” he said. Todd will meet his donor family for the first time in June, when they all attend the Transplant Games in Cleveland.

Leading the way “Our service region is the ‘most-giving’ in the U. S.,” Nathan said. The organization coordinated 1,291 organ transplants from 483 local organ donors, and 352 more from other areas of the country, in 2015. That made Gift of Life the leading organ procurement organization in the U. S. for the eighth consecutive year! “Historically, the Lehigh Valley has really been a leader in donation,” he concluded. “Typically, between 67% - 75% of the residents here say ‘yes’ to donation.” Want to know more about organ and tissue donation? A recent study of parents by the Centers for Disease Control and Prevention (CDC) suggests that 1 in 45 children, ages 3 through 17, have been diagnosed with autism spectrum disorder (ASD). This is much higher than the previous CDC ďŹ nding of 1 in 68 American children with autism. Behind these epidemic numbers are families struggling with autism. During the month of April, National Autism Awareness Month, it is a time to promote autism awareness, accept autism, and think of the many facing a new autism diagnosis. As a parent

Saranda’s on Broadway is located in one of Bethlehem’s oldest buildings. Dating back to 1745, this marvelous building has been completely restored keeping much of the original structure intact to maintain the ambiance. Original beams and stone walls are exposed in the bar area accented by Thomas Edison lighting. There were renovations around 1860 when much of the dining area was updated. The end result is that Saranda’s presents a very attractive setting in which to enjoy delicious, classically prepared French cuisine. The friendly atmosphere of Saranda’s is welcoming. We chatted with Dana who was mixing drinks when we visited. Soft blue lights under the bar add a glow to the glassware and accent the entire bar area that seats about 12. There are six high tops adjacent to the bar which are in demand on weekends for enjoying live jazz music. The cutout of the Hill-to-Hill Bridge separating the bar from the back dining room is unique and created solely for this space. Owner/Chef Andy Brovina and his business partner Josh Pudleiner have taken great pains to preserve the originality of the structure not only in its present state but also with ongoing renovations, both upstairs to house a future piano bar and additional outdoor dining space. After enjoying wine at the bar we were seated at our table. I admired the white linen-topped tables, finely upholstered chairs, shiny wide plank floors and attractive artwork dotting the walls. The dining room is classy yet understated and the owners again took steps necessary to maintain the differences between the original and newer sections of the building.

Bill and Morgan were our servers for the night. A very entertaining Bill presented our menus and specials for the evening. I ordered the Duck Napoleon as a starter. The warm duck confit was layered with goat cheese between crispy wontons and served on baby greens drizzled with a blueberry truffle vinaigrette. I loved the taste and many textures of this appetizer. Tom, of course, ordered the seared Hudson Valley Foie Gras served on toasted brioche with apple and pear coulis and a balsamic reduction. He raved about his appetizer. Having tasted both, I simply cannot choose a favorite but will say that the presentation on both plates was lovely. Other appetizers on the menu include Smoked Tuna Tartare – seasoned yellow fin tuna, quail egg yolk, tobiko (flying fish) caviar, apple and garlic crostini; Steamed Mussels; Escargot en croute and Oysters Rockefeller. In addition, there were two soups – Crab Bisque and French Onion as well as three salads: Roasted Beet Carpaccio with baby arugula, goat cheese, oyster mushrooms; a Salad Nicoise with seared tuna, red onion, Kalamata Olives, capers, egg and anchovy and a Caesar all with classic dressings.

The food was delicious, ambiance charming and the service was wonderfully entertaining and friendly.

Making our dinner selections presented a more difficult challenge. There were many interesting entrees from which to choose but I selected the Shrimp and Crab Empinards. This scrumptious tower of jumbo lump crab and shrimp sat atop wonderful mushroom-truffle risotto and sautéed spinach. I absolutely loved this meal. It was uniquely prepared and I savored every mouthful. Tom decided on the Osso Bucco which was a special that night. Now, anyone who orders Osso

Bucco knows how hit or miss this meal can be. The Osso Bucco at Saranda’s this night was perfect. The very lean Veal Shank was classically prepared in a delicious broth rich with vegetables and just the right hints of orange and lemon making this dish a savory delight. Tom has already decided to order Bouillabaisse when we next visit. However, I will be hard pressed to decide between the Veal Chop au poivre with sautéed wild mushrooms or the Crispy Seared Scottish Salmon over marinated lentils, roasted beets topped with a strawberry fennel slaw. Owner and Chef de Cuisine Andy Brovina was born in Albania and emigrated to the U.S. when he was 12. He

went on to serve in the Army after high school and after his discharge, traveled throughout Europe visiting his family who owned restaurants in many countries. He went “cousin to cousin” learning cooking techniques and the tricks of the trade. He returned home with this knowledge and Saranda’s is the result. Together with Executive Chef Craig Butler who brings CIA training and many years of experience to Sarandas, they use only the freshest and finest ingredients while sticking to the basics creating classical dishes with a contemporary touch. The owners are excited about the on-going renovations which will not only increase the dining capacity but will allow for expansion of the kitchen facilities which is every chefs dream. For dessert we shared a Caramel Pecan Tart in a delicious buttery crust. Together with coffee in huge coffee mugs, this was a delicious ending to a lovely evening. The food was delicious, ambiance charming and the service was wonderfully entertaining and friendly. We will not hesitate to visit again soon for some lively jazz on the weekend. Saranda’s on Broadway is located at 1828 Broadway in Bethlehem’s Fountain Hill Section. Hours are Tuesday to Thursday 4 - 9 p.m., Friday and Saturday 4 - 10 p.m. and Sunday Brunch 11 a.m. – 3 p.m.. Call 610.861.8181 or log onto sarandasonbroadway.com for reservations, complete menu or other information on upcoming events or planning a private party. There is both on-street parking as well as a parking lot in the rear of the building.

Popcorn RECI P ES T O G I VE T H E S M AL L KE RN EL B IG FL AVO R

Americans consume 13 billion quarts of popped popcorn annually… that’s 41 quarts per man, woman and child each year! According to The Popcorn Institute, approximately 70 percent is eaten at home (home popped and pre-popped) and about 30 percent is eaten at theaters, stadiums, schools, and other outside venues.

The world’s largest popcorn ball, according to Guinness World Records 2015, weighed in at 6,510-pounds, 8 feet in diameter. At the heart of this endearing little kernel is a healthful whole-grain. Popcorn adds fiber to the diet, is naturally low in fat and calories, gluten-free, and non-GMO. Standard salt and butter is a classic topping, but if you want to get creative when it comes to flavoring your popcorn, the sky's the limit. Once the popcorn finishes popping, dump it into a big bowl. Pour, drizzle, or sprinkle on the topping, and then toss it all together until the popcorn is well-coated. The most important tip for flavoring your popcorn, no matter what kind of topping you use, is to flavor it when it's still warm from the stove or microwave. Whether you're dressing it with butter, oil, melted chocolate, or spices, they'll adhere and absorb best when the popcorn is still warm.

Crab Boil Melt 4 tablespoons butter with 2 tablespoons Old Bay Seasoning in a small skillet over medium heat; drizzle over 12 cups hot popcorn and toss with 4 cups oyster crackers.

Sriracha-Lime Whisk 5 tablespoons melted butter with 1/4 cup Sriracha, 1 1/2 teaspoons grated lime zest and 1 tablespoon lime juice; drizzle over 16 cups hot popcorn and toss. Season with salt.

Open Heart SURGERY

There’s good news for individuals looking for alternatives to open heart surgery. Recent advances in surgical technique and equipment allow surgeons to perform some heart procedures in a less traumatic way. For individuals who are not candidates for open-heart surgery, there are now minimally invasive procedures to remedy aortic valve stenosis and degenerative mitral valve regurgitation. Using new technology, these procedures replace or repair the malfunctioning valves, resulting in improved quality of life, fewer hospitalizations, and symptomatic relief.

“One of our commitments at St. Luke’s University Health Network (SLUHN) is that if we feel new technology is game-changing, we go out of our way to get access to the technology so that we can offer it to our patients as soon as possible,” says Darren Traub, DO, SLUHN’s Medical Director of Cardiac Electrophysiology. “These are gamechanging technologies and they’re available right here in our region.” St. Luke’s Heart & Vascular Center is on the leading edge of minimally invasive procedures with shorter procedure and recovery times, and present different options for patients who are not candidates for traditional open-heart surgeries. “These procedures and devices broaden the pools of patients who now have better solutions to their medical problem and enables them to receive better care in the future,” adds Christopher Sarnoski, DO, Medical Director of SLUHN’s Structural Heart Disease Program. The Transcatheter Aortic Valve Replacement (TAVR) and MitraClip valve-repair procedures offer patients who suffer from progressive diseases and may not be healthy enough for open heart surgeries a solution to life-threatening cardiac illness. Additionally, the highly specialized technology of the Evera MRI defibrillator allows patients to undergo MRIs, an option unavailable to patients with traditional defibrillators

as severe aortic stenosis, a narrowing of the arteries surrounding the heart, which Dr. Sarnoski explains as being similar to a great deal of rust forming on a gate.

“In this case,” he notes, “the wear and tear on the valve doesn’t allow it to open. Essentially, the heart is pumping blood through a pinhole. That’s a mechanical problem that requires a fix.” In the TAVR procedure, the Sapien 3 valve – manufactured by Edwards Lifesciences and released last summer – Is carried via catheter through the femoral artery using imaging to guide cardiologists as they position the valve.

Open Heart doctor needs to implant the valve. That rapid pace results in little movement of the heart when the doctor implants the Sapien 3. The doctor uses a wire to guide the balloon-expandable replacement valve, which is on a stent, into the heart and across the aortic valve. The balloon is inflated and, as it expands, it moves the old valve out of the way and the new valve into place. St. Luke’s cardiologists have done nearly 200 TAVR procedures to date, with outstanding results. “We look at success, mortality both in-hospital and at 30 days, and if the patient had a stroke or major vascular injuries,” notes Raymond A. Durkin, MD, Chairman of Cardiovascular Medicine at SLUHN. “We are superior to the national averages in all of these areas.”

MitraClip The MitraClip repairs a leaky mitral valve in patients who are too high risk for surgery. To implant the MitraClip, the surgeon guides the device through the common femoral vein.

“We go in the right atrium, do a septal puncture and enter into the left atrium above the valve,” explains Stephen Olenchock, DO, SLUHN’s Chief of Cardiovascular Surgery, who traveled with Dr. Sarnoski to Cedars-Sinai Medical Center last July for highly specialized MitraClip training. The surgeon then uses imaging to place the clip in the area where the

damage is or in the area where the leak is occurring. The MitraClip is repositionable and attaches the mitral valve’s front and back leaflets together to help prevent blood leaking back into the heart. “The MitraClip procedure can take anywhere from 45 minutes to two hours depending on how many clips we need to place, how many times we need to reposition the clip and how easy it is to grab the leaflets with the clip,” Dr. Olenchock points out. “At other sites, the average time is about two hours. Ours is about 45 minutes. This speaks to the outstanding work of our heart valve team and the quality of imaging we get.”

Evera MRI In the past, having a pacemaker or an implantable cardioverter defibrillator (ICD) meant patients could not undergo an Magnetic Resonance Imaging (MRI) exam, which uses a magnetic field and radio waves to take highly detailed images of organs and structures inside the body. Not any more, thanks to devices such as the Advisa MRI pacemaker and Evera MRI ICD manufactured by Medtronic.

“Around 2010, Medtronic released an entirely new pacemaker platform (Advisa MRI) with leads that disperse heat and filtering that would prevent the device from malfunctioning from the electrical field that’s created by the MRI magnet,” Dr. Traub explains. “In September of 2015, the first MRI-

“There is no substitute for an MRI for imaging of the spine or soft tissue of the brain,” Dr. Traub says. The implant technique is exactly the same as the standard pacemaker and ICD. Eight weeks after the implant, patients can undergo MRIs. “We place MRI pacemakers and ICDs in all of our patients unless there is a compelling clinical or patient related reason to use a different device technology.” St. Luke’s has placed hundreds of MRI compatible pacemakers and ICDs and performed dozens of MRIs on patients to-date. “Our structural heart program in which cardiologists and heart surgeons work together to do less-invasive and highly specialized procedures is on the forefront of that. Every specialized cardiac procedure performed at any major university hospital in the country is available right here at St. Luke’s,” Dr. Durkin says.

The ‘office’ can be something as mobile as wherever you place your laptop (e.g. the kitchen counter, the dining room table), a speciďŹ c space (the corner of a room, a converted closet), or a dedicated room (which may also serve double-duty as the guest room or exercise space). If you answered “yesâ€? to the above question, when you picture that space in your mind, does it bring a sense of peace and calm, or does it bring on stress and a need to run the other way? Here are some suggestions for organizing your existing space or setting up a new home office space for efďŹ ciency and effectiveness.

PAA #2 #2772 27720 27

1. Hide the cords when you can. Visual clutter can impact your ability to start or continue working. Buy a wireless (wiďŹ ) printer. What’s great is that it is across the room, because it doesn’t have to be tethered to the computer. You can also print to it when you're on your laptop elsewhere in the house. 2. Create a ďŹ ling system that works for you. If you need to keep things (whether digitally or physically), use a system that makes sense for you. If it makes sense in your brain to ďŹ le “household itemsâ€? under “Hâ€? then go for it! If you prefer a more detailed system (e.g. utilities, insurance, mortgage, taxes), then use those categories. Make a system that conforms to you, vs. trying to conform to a storebought system. 3. Have a place for everything and put things back! The tape dispenser

should always go back on your desk, even if you’ve used it in the dining room to wrap presents. Ink and paper always goes underneath the printer. Reference books are always returned to the same shelf. You get the idea. And please, throw out anything that doesn’t work (like those pens you brought home from that conference you went to).

If you’re going to be spending significant time in your home office, that folding chair from the garage, or that side chair from the dining set you no longer have isn’t going to cut it. 4. Location, location, location. You'll likely spend many hours in your home office, so don't stiff yourself on space (e.g. squishing a tiny desk into a windowless closet to preserve the rarely-used guest room). Also consider traffic flow and your ability to

withstand distractions. Do you work best in the thick of activity, or should your office be tucked away in a quiet space? If clients will be stopping by, a private space with ample seating is a must. Are you sharing your office with other family members? Consider what makes sense for all involved. 5. Invest in a good chair. If you’re going to be spending significant time in your home office, that folding chair from the garage, or that side chair from the dining set you no longer have isn’t going to cut it. More likely, you’re going to do yourself more harm than good. Go and find something that is suitably sized, adjustable for height, and comfortable. 6. Think vertically. If space is at a premium in your office, don’t forget about the vertical space. Open shelving, tall bookcases, or even cabinetry can enable you to be organized and also have additional storage for the items you’ll need to have on hand. Whether you need space for client files, school projects, reference materials or office supplies, remember to look up. Look to the internet for a host of ideas and suggestions for maximizing space in this as well as other places in your home. 7. Don’t forget about lighting! cessful home office is appropriate and sufficient lighting. Overhead lighting is good to get the space bright in a general way, however task lighting is where it’s at. Focused, bright light can make a difference not just in how the space feels, but also in your ability to get work done. Dimmable lighting is even better. And if your space has a window, thing about where you’re placing your computer so you’re minimizing glare.

8. Have a clear space to work. Always leave your home office with a clean workspace. Stack up current work in nice, organized stacks on the corner of a desk or adjacent table. The space may be chaotic while you’re working but always leave it inviting for the next work day. One final tip: Surround yourself with things that make you feel good. Framed photographs of family, friends or that great vacation you went on, or a memento from college or childhood are great ideas. Scented candles, or a vase with fresh flowers, can put you in a “happy place.” Implementing even a few of these ideas will put you on the path to success!

PHOTOGRAPHY TIPS PHOTO

Do you love taking pictures of your child on the sports filed? Maybe you love to watch your nephew wrestle or your niece play volleyball. Or, perhaps it’s your first time at a professional sporting event and you want to preserve those memories forever. Try these things to help you take the best sports pictures.

USE A FAST AUTO-FOCUS & BURST MODE

TAKE A LOT OF PHOTOS

In order for the camera to keep up with the fast movements, set it to continually focus on your athlete rather than lock on to one spot. Also set your camera to “burst mode” and take multiple images in a split second.

Whether it be a soccer player kicking the ball or a tennis player serving, once you have your subject fire away and capture as many photos per second as you can. There is absolutely no harm in finishing a sporting event with 2000 pictures on your camera!

POSITION IS KEY

THINK OUTSIDE THE ACTION

Think about where most of the action occurs and position yourself correctly. Catch the action coming at you, or climb to the top of the bleachers to look down on the court. Move around and try different spots; leave the stands and go to the sidelines. Also, make sure the sun is behind your back so a lot of light hits your subject out on the field of play.

Other great images can be made of the gear on the field, such as a pile of hockey pucks or baseball bats leaning against a fence. And, remember that just because the action is over, the emotion isn't. Those moments can be just as important as the action shots.
