Dear Readers, The days are longer, crickets are humming in the night air and school will soon be over. We are on the heels of summer, which brings the age-old question back to the seasonal forefront once again. So I ask you, Charcoal or Gas? There are tightly-knit fans in both camps. On the propane side, you’ll find those who are looking for an easy light and tight control of flame distribution. Then, on the more campy side, the charcoal users don’t mind the work they have to put forth to give their food the smoky flavor that cannot be duplicated with a gas grill. Ultimately the decision is a matter of personal taste. I always considered myself a gas griller all the way. However, recently, I quickly found out that no mode of grilling quite matches up to roasting a weenie over an open fire. Over Memorial Day weekend, my family continued our 10-year tradition of meeting at my sister’s cabin for a few days of bonding and relaxation. We sat around the campfire telling stories and making new memories. At one point I thought a round of Kumbaya might even be in order. But when someone broke out the hot dogs it was game on! In a matter of minutes, everyone was in on the action… we immediately went back to our Stone Age roots and began connecting with our inner cavemen. Roasting hotdogs on the sticks we found – and whittled into a point – was definitely a highlight of the trip. Are you a charcoal griller? Perhaps you prefer propane? No matter your flair for fire cooking, I am sure you can attest to having grilled at least once in your life. In fact, according to a national study, 80 percent of American homes own an outdoor barbeque grill or smoker. Chances are you fall into this category so this is the perfect time of year to turn up the heat. Turn to page 46 for tips and recipes for the perfect burger. Get grilling and enjoy! Happy Summer,

CENTER VALLEY

Home to several higher education campuses, as well as some of the Lehigh Valley’s best shopping and dining locations, Center Valley offers an attractive combination of cultural hotspots, entertainment and commerce – all conveniently located in Upper Saucon Township. Since 1965, DeSales University has been a pillar of the Center Valley community. A private Catholic university, it was originally known as the Allentown College of St. Francis de Sales. This changed in 2001 when it expanded from college to university status. Today, DeSales offers more than fifty undergraduate major and minor courses of study, as well as twelve graduate programs in fields such as business, criminal justice, computer science, education and healthcare. Their renowned performing arts division includes “Act 1 Productions” – the university’s own highly-acclaimed performing arts company. Each year, Act 1 presents a variety of choral and dance concerts, plays, musicals and film festivals. This year, the spring season opened with the award-winning Irish drama “Dancing at Lughnasa”, which depicts the struggle of five unmarried Irish sisters living in County Donegal in the mid-1930s. In addition to the Act 1 productions and performances, DeSales also hosts the yearly Pennsylvania Shakespeare Festival. With more than 150 artists and performers, including winners and nominees of Tony, Obie, Emmy and other renowned awards, the festival features over 140 performances of seven productions every summer. These productions,

which attract more than 30,000 patrons from approximately twenty different states, include Shakespeare and other classics, a musical theatre and a children’s theatre. Besides DeSales University, Center Valley is also home to the Penn State Lehigh Valley campus. The oldest continuously operating Penn State campus outside of University Park, Penn State Lehigh Valley started in 1912 as a small technical center established in the attic of Allentown’s Stevens School. A partnership with Bethlehem Steel in the 1920s helped prompt a jump in enrollment by making classes available to all Steel employees. In the following decades, enrollment continued to grow, and the school was compelled to move to several different locations in Allentown, Fogelsville and Bethlehem. Finally, in the fall of 2009, Penn State Lehigh Valley moved to its current location in Center Valley. One of the Lehigh Valley’s largest and highest-rated employers, the Olympus Corporation of America is also headquartered in Center Valley. Founded in Japan in 1919, the global company is a worldwide leader in optical and digital equipment for both the consumer and healthcare sectors. According to a poll conducted by The Morning Call, the Center Valley corporation was recognized as one of the Lehigh Valley’s top workplaces of 2014.

Tom and I hadn’t been to Kingfish in a while so we were very happy to meet friends there for dinner recently. Mother and son co-owners Cheryl and Cale Beck (of Beck’s Land and Sea House fame) have made many changes in the last few months, which, in my opinion, have truly enhanced the ambience. We joined our friends and Kingfish “regulars” Nancy and Bob at the attractive square granite bar where Josalyn and Amber mixed up excellent cocktails for us. I immediately noticed the increased height of the etched glass panels upon the wooden room dividers between the bar and dining areas that serve to buffer the noise and make for more intimacy. I love the bar at Kingfish. It is usually comfortably crowded with friendly patrons enjoying a drink and appetizers or catching up with game scores on the widescreen. We were seated in the corner of the dining room and greeted by Raychel, our excellent attentive server. We immediately noticed the new deep red-orange walls and woodwork up-

It was wonderful and large enough to share among us but is more than enough to enjoy as a meal. The cheese selection was interesting and fresh and the Bratwurst was incredibly lean and delicious.

We also shared the Sicilian Clams with sweet Italian sausage, hot peppers, leeks and white wine broth. This appetizer was a very savory blend of flavors with a zippy sauce just perfect for dipping the crusty bread that surrounded the clams. We all loved this appetizer and Tom plans to visit again and have this appetizer for dinner. To round out our starters, we shared a Caprese Salad of heirloom tomatoes, fresh mozzarella, basil and a rich balsamic reduction. I loved this salad. The Sweet Balsamic reduction added a rich flavor to the fresh cheese. Wonderful.

Tom and I ordered the night’s special – roasted macadamia nut crusted Waimea Bay Halibut with lobster cognac sauce and grilled asparagus served atop a halved crispy red potato. This dish was very delicious and extremely rich with a portion so generous that more than half the meal went home with us. The halibut was extremely fresh which is the most important factor for any seafood house. Bob enjoyed the Seared Tuna which was beautifully presented. The sesameencrusted tuna was seared rare, thinly sliced and placed upon a ball of sticky rice. It looked beautiful and with the warm soy butter, pickled ginger and zesty wasabi, tasted even better! We all loved this entree. Nancy rounded out the table with her TNT Roll – a fried Tempura battered California Roll with crab, avocado, cucumber and spicy sauce. I loved this Asian selection. I must mention again that all the meals we ordered were more than generous so keep that in mind when ordering. Other seafood entree selections include Jail Island Salmon with ginger, chilies, sweet teriyaki and broccoli; Bronzed Chilean Sea Bass served Oscar Style with asparagus and hollandaise; and South African Lobster Tail.

COMMUNITY BIKE WORKS You never forget your first time on a bicycle. Not riding in circles on three wheels in the driveway or graduating to cul-de-sac loops on four, but the instant after a patient parent lets go and the moments that follow when you realize you’re on your own, balancing on two wheels, and you can go anywhere as quickly – or slowly – as you wish. For most of us, this was our first taste of freedom and independence, and after a few skinned knees and wobbly starts, we’d certainly earned it. (Of course, after a few years, four wheels started to look appealing again!)

The organization, which started in 1995, will celebrate its 20th anniversary this summer. Their mission is to provide “inner-city children living in at-risk situations with meaningful work ethic alternatives to gangs, drugs, and the streets. We use bicycles, peer role models, and adult mentors to develop and nurture relationships and to engage youth; and once engaged, influence their behavior and their outlook about school and life.”

BIKE WORKS their afternoons in small groups with three other students, youth volunteers or apprentices, and adult mentors tinkering away to make their toys as good as new. Three months later, both the bikes and the children find themselves transformed. “Not only are they learning how to fix their bike, but they’re learning work ethic skills, perseverance and communication,” Schaffer says. During the program, they learn bike mechanics and safety, but more than that, Schaffer notes, they learn the value of teamwork, the responsibility of showing up, and the reward of not giving up. As 17-year-old Earn-A-Bike program participant Kyle puts it, “Community Bike Works is more than learning how bikes work. It’s learning how life works.” Another benefit of the program is that it also emphasizes the value of health and fitness, an important interest for children to embrace in a world of convenience foods where more and more of our entertainment and employment options come from technology that encourages sedentary behavior. Once the bikes are safe to ride, the children are outfitted with a new helmet and together, they tackle the trails in Trexler Park. However, exercise is just one piece of the puzzle. “We also try to teach healthy eating skills,” Schaffer says. Every week, a volunteer comes to give an afternoon cooking demonstration, providing the children with healthy snacks and knowledge to make smarter choices in the kitchen.

After students have completed the EarnA-Bike program, they’re also eligible to participate in a host of other programs until they turn 18. Two of these programs are the Earn-ABook and Afternoon Drop-In programs. In the Earn-A-Book program, students receive one-on-one tutoring and participate in reading and writing projects designed to nourish enthusiasm and competence in reading. After clocking 18 hours, they earn a trip to the bookstore where they can pick out a book of their


choice. During the Afternoon Drop-In, students bond with their adult mentors in a less structured setting and participate in bike rides, field trips, visits from guest speakers, and arts and crafts. All of the programs are offered at no cost to the children’s families. Throughout all of the non-profit’s programs, the children and their development and potential remain the focus. “We’re not about the bikes as much as we are about the kids,” Schaffer says. She considers how often she hears from students that Community Bike Works is like a second family to be one of the organization’s biggest accomplishments. “Community Bike Works is all about the community,” says Michelle, a 12-year-old student who completed the Earn-A-Bike program. Now, she has returned as a veteran to take part in the Youth Leadership program. Once students earn their wheels, they’re eligible to return as youth volunteers, where they receive additional training on bike mechanics and leadership, as well as the chance to give back to the non-profit.

NO PRESSURE Organizers for Bethlehem’s renowned music festival came knocking on the band’s door after the group took the “Outstanding Child Performers Award” at the Lehigh Valley Music Awards this March. “That was a big step for them,” manager/dad Sedlock said. “They got to meet [60s rock and roller] Chubby Checker and, since then, the phone hasn’t stopped ringing.” Gloria Domina, co-director of the music awards, said “No Pressure” took the prize by popular vote after performing with Community Youth Award winner Wyatt Newhard, a 10-year-old Lynn Township boy with cancer who wanted to learn to play the drums. “Everyone loved their performance,” Domina said.

Although Grant Sedlock, the band leader, is only 12 and his brother Bryant, the youngest member, only 9, the act of taking the stage and making music came naturally. That’s because their father and grandfather have been in bands for some 20 years and taught the kids to play instruments as soon as they were able. The elder Sedlock is lead horn player for the horn and funk band “Lucky 7” that has opened for such stars as Frankie Valli & The Four Seasons, Bill Haley’s Comets, and The Drifters. The younger is a pharmaceutical representative who travels the world and started playing with “Lucky 7” the past two years. “My father plays and teaches trumpet and I play a bunch of instruments (trumpet, guitar and piano) and my basement is set up for a full band,” said Grant and Bryant’s dad. All of “No Pressure’s” rehearsals occur in his Hanover Township basement.

back. “The kids wanted to learn pop music so they are easy to teach,” he said. Grant, who sings and plays piano and trumpet for the group, started taking lessons at age 2. Bryant, who plays drums, began at 4. When guitar player/vocalist Drew, now 12, joined his pals to form a group, the threesome performed at their school talent show at Asa Packer Elementary School in Bethlehem, at open mic nights in the Lehigh Valley, local Boy Scout events and parties.

Growing in size and popularity each year, the band boasts a current complement of eight members – all aged 12 or younger – and an exciting new gig: Musikfest. The boys sounded good, Sedlock said, but needed a bass player. So, they asked Carly Schwenger of Palmerton, who happens to be the daughter of “Lucky 7’s” sound engineer. Carly, 12, plays bass guitar and flute. She also sings. As a foursome, “No Pressure” added charity events to its gigs, especially at pediatric cancer centers. Next, Drew’s younger sister wanted in, Sedlock said. A year older than Bryant, Ella Cirillo is 10 and offers back-up keyboards and vocals. Apparently, word spread that the kids were having fun while learning to play and entertaining others, so the group continued to grow. They added, in this order: Elijah Sivick, 12, on piano, clarinet and soon-to-be bagpipes; Alexa Lagree, 12, lead vocals and violin; and Chris Secula, 11, baritone and vocals, all of Hanover Township. The group rehearses a week before each gig and has been performing a dozen times or more a year. Music from the

classic rock bands “Journey,” “Survivor” and pop rock band “Maroon 5” are among the 30 songs in their repertoire. “Eye of the Tiger” is one of Grant’s favorite songs to perform, in part because he sings it.

STEP #1 Prepare your grill for cooking over direct heat at 450-650°F (high heat). You’ll be grilling your burgers at high heat right above the coals or gas burner.

STEP #4 Sprinkle a bit of kosher salt on your burgers before putting them on the grill. Contrary to popular belief, seasoning your patties with a light pinch of salt will NOT dry out your burgers, there simply isn’t enough salt, or time, for it to draw out any moisture. What it WILL do is wake up and intensify the flavors.

Flip your burgers then grill to an internal temperature..of..135-150°F..–..about another 5 minutes. This will give you nice, juicy, medium-cooked hamburgers with just a hint of pink in the middle. If you experience flare-ups, follow the suggestions in step 5.

STEP #7 Take your burgers off the grill, cover with foil and let them rest for 5 minutes, then serve. Skipping this step is one of the most common mistakes grillers make. Heat from cooking causes pressure in the burger which forces its juices to concentrate in its center. Bite into a burger just a minute or two after it comes off the grill and those pooled juices will immediately gush out on to your fingers and plate. The words “Let’s go to the dungeon,” are sometimes all they need to hear. But, I digress. Let me start at the beginning. We recently braved the Northeast Extension and made our way to spend the day in Jim Thorpe. As you come down mountain, you see this cute little town tucked in the valley. But you’ll soon find out, it is a lot more than a cute town. It is layered in history, and it abounds with outdoor activity. The day we went to Jim Thorpe, it was buzzing. There were school buses scooting around transporting rafters here and there to points on the Lehigh River. The ticket lines for the Lehigh Gorge Scenic Railway were long. Blue Mountain Sports was doing quite the business with bike rentals, and the vendors in Josiah White Park were selling hot dogs as fast as they could bun them. I was excited. But, minutes later, I found out the rest of my carload was not. We parked and off we went. About 50 feet into our day I heard it… the mumbling from an unhappy little person. “My feet hurt.” This coming from my daughter who, almost daily, rams her feet

into plastic Cinderella heels that she got 4 years ago and teetertotters around for hours. That was quickly followed by the grumbling from the unhappy 11-year-old. “I’m too hot.” This coming from my son who plays three-hour football ball games with his neighborhood posse at high noon in mid-July.

We started walking up Broadway Street and passed numerous sweet little boutiques. I peeked in longingly; however, as we all know, the sweet little boutique is the nemesis of any 11-year-old boy so I continued on.

The restaurants – oh man – all sorts of fun and interesting eateries were scattered about. The one that peaked my interest was Moya on Race Street. I stood in the doorway of Moya salivating, and then I heard it over my shoulder, “Do you think they have pizza?” Oy. What I wouldn’t give to have one meal

We tucked into a book sale at the Dimmick Library. Whine, whine, whine. We paused and sniffed the coffee smells at Strange Brew. Gripe, gripe, gripe. We passed the Opera House. Complain, complain, complain.

And then I saw it… like a beacon standing tall at the top of the hill. The beacon that would lead me out of the quagmire I was currently in. The beacon that would guide me toward the possibility of regaining my sanity. That beacon – The Old Jail. “Well children, guess what we ARE doing… we are touring the jail.” Crickets. I marched us in, plunked down our admission money, and we took the tour. We learned about the Molly Maguires, who turned out NOT to be female. We heard the history of the jail, and how the warden and his family used to live there. Oh, and lived with a guard stationed in their bathroom 24 hours a day. What? We saw the gallows, the mysterious “hand print” on the wall, and cells, the oh-sosmall cells. Then our guide said the words I longed to hear and to use for my benefit, “Let’s go down to the dungeon.”

Hehehehe. Jackpot. She explained how when the prisoners were BAD (and I made eye contact with my kids) that they were LOCKED (I enthusiastically nodded my head) in the dark cell, (“So scary,” I whispered) shackled to the wall with no human contact for the duration of their dungeon sentence (“Oh My!” I gasped putting my hand over my mouth).


Scared straight. Mission accomplished. I left the jail with two different kids. No more complaints of feet hurting; no more every-10-second-heat-index weather updates. The rest of our day in Jim Thorpe was great. With renewed enthusiasm, we explored some shops including The Country Cottage, which has shelves and shelves of pickles. Probably not super exciting to the average reader, but the Di Cesare family are Pickle People so we were thrilled. We also visited art galleries, had ice cream, toured the train station, and threw rocks in the river.

Then our guide said the words I longed to hear and to use for my benefit, “Let’s go down to the dungeon.” The final stop of our Jim Thorpe day was a hike at Glen Onoko Falls in the Lehigh Gorge State Park. The hike was a little challenging, a lot rocky, a tad slippery, and very beautiful. Take your time, be careful, but get to the waterfalls and then take a few minutes and watch your kids watch the waterfall. Look at their faces. Doing that, you just might forget how they drive you crazy from time to time. You just might dismiss the groaning, moaning, whining, and whimpering. And you might, like I did, realize that one day they won’t be hanging out with you on a random Saturday so you better take it while you can and enjoy every minute of it. Take some pictures, give them a hug, tell them you love them, and head down the trail. “My feet are starting to hurt again,” she whimpers. “I’m getting so hot,” he proclaims. Yeah… and welcome back to reality.

fireworks Getting great pictures of fireworks is easier than you might think. Here’s how to get some spectacular snapshots.

ARRIVE EARLY Arrive early so you can find the best location to shoot from. You'll also be able to make sure you have enough room to set up your tripod. Choose a dark area, away from streetlights or other lights that may affect your photos. Try to pick a spot where you can include some of the ground (trees, people, etc.) in the lower part of the frame. They'll add realism & perspective to the photographs.

SET YOUR CAMERA Set the camera to landscape or fireworks mode and use a tripod to avoid blurry images. Also, turn your flash off. Use the lowest ISO setting. It may be dark out, but fireworks are bright. If your camera has a noise reduction setting, use it to reduce any "grainy" appearance in the dark areas of your image. Shoot at the highest image quality setting and use the wide-angle setting. For an extra punch of color, set your camera to vivid mode.

TAKING THE PICTURES Take the picture as soon as a rocket goes off, and try to time it so that several bursts go off during the exposure. Take a few practice shots to get the hang of it, so you can be sure the shutter is open while fireworks are going off. Digital cameras are great for this kind of experimenting! Use your LCD screen to review your pictures and make adjustments as you go. Play with different techniques until you get the best results from your camera.
