Growing fig trees in our area can be accomplished successfully, but requires a little care. When planting outdoors, place in a pot and bring them indoors for the first few winters. or almost 13 years, Elena Pascal has had a front row seat in Allentown’s West End Theatre District of Allentown.
“I always felt an affinity for this part of Allentown, a nice little area where small businesses have blossomed,” says Pascal, whose BoutiqueToGo at 522 N. 19th St., which sells women’s clothing and accessories, sits across from the Civic Theatre of Allentown, the nearly century-old art deco landmark that’s known as the crown jewel of west Allentown. “This entire neighborhood, it’s a microcosm of the ’60s, ’70s, and ’80s of the last century when people shopped and walked and knew store owners,” she says. “We have loyal customers who love shopping small, and they’re showing up. They’re helping us bridge this horrible pandemic.

“They feel safe here. It’s a nice area,” Pascal adds. “We get people from other parts of the Lehigh Valley. It’s not quite as artsy as New Hope, but it’s small, accessible, and welcoming.” Anchored by Civic, which celebrated the completion of major renovations two years ago, Allentown’s theater district encompasses a 30-block area from 17th to 22nd Streets and from Liberty to Washington Streets. Within it are boutiques and small independent businesses, from coffee shops to service stations, and about a dozen restaurants and pubs. “Our newest restaurant is Greenhouse Enoteca at Tilghman and 22nd Streets, and then we have restaurants that have been here for a long time, like Henry’s Salt of the Sea and the Fairgrounds Hotel,” says Stephen Rohrbach, president of the West End Alliance, a nonprofit, volunteer organization founded to make the West End Theatre District a more attractive place to live, visit, and do business.

because you live here The alliance also strives to create a sense of community among residents, Muhlenberg College students, entrepreneurs, artisans, and visitors within the West End. Its members also help preserve and enhance the neighborhood’s aesthetic charm by maintaining trees and planters, which receive new plants three times a year, and decorating 19th Street with seasonal lighting on rooflines, similar to what you might see at Philadelphia’s Boathouse Row.

Accessibility is another part of the theater district’s attraction, Rohrbach says, noting how residents who live in the West End and college students often bike or walk into the neighborhood to shop and eat. “One of the things that has made it successful is that it’s pedestrian friendly and approachable and gives you the feeling that you’ve entered a throwback era,” he says. Two of the West End Alliance’s signature events were canceled this year because of the pandemic, the annual West End St. Patrick’s 5k in March and the West End World of Food Festival, which would have been held Sept. 19. But the staying power of the events has not diminished, despite the health crisis; about a third of the 800 runners who would have participated in the event in March completed a virtual running of the race by logging their miles on a measured course or on a treadmill and eagerly supplied photos of their creative alternatives. Organizers are already working on next year’s food festival, which is set for Sept. 18, 2021, on 19th Street.

“The food festival draws 3,000 to 4,000 people, and we definitely try and put an emphasis on the international culture of Allentown,” Rohrbach says. “Both events bring out the spirit of the West End that everyone loves year round. We’re already at work planning for next year.”

CIVIC THEATRE OF ALLENTOWN TO HOLD VIRTUAL FUNDRAISER Civic Theatre of Allentown will present “No Tonys & No Tapas,” a virtual performance and online auction to replace its usual annual fundraiser of the year, “Tonys & Tapas,” which had to be canceled this past June due to COVID-19. You can experience the event virtually on the theatre’s YouTube channel at 7:30 p.m. on Sept. 17. “You’ll be entertained by members of the Civic Theatre Company and get to participate in an exciting online auction,” says Diane Donaher, managing director of Civic Theatre. Some of the auction items include: • Acting class and monologue coaching session with Civic actor Kathleen Oswalt and Will Morris, Civic’s associate artistic director and production manager • Zoom “cocktails” with William Sanders, Civic’s artistic director, and two time Tony winner Joe Montello, who’s directed several successful Broadway plays, including “Wicked,” “Take Me Out,” and “Assassins.” • “Ask Me Anything,” a 30-minute interaction with a theatrical professional from a Broadway show such as “Come From Away” or “The Lion King.”

With the lost revenue from the cancelation of the two events, the West End Alliance plans to start a giving campaign within the neighborhood to make up the $25,000 that would normally come from the 5k and the food festival, Rohrbach says. “We’ve done very well in the past, and I have a good balance to work with to get through this one year,” he adds. A project management consultant, Rohrbach appreciates all there is to hold on to and celebrate by living in the West End and its proximity to the theater district. “We’re very appreciative of older construction,” he says. “But we decided when we had our kids that we wanted a brand new house in the suburbs. Within three years, we knew that was not for us. So we came back to this type of neighborhood where houses are not all cut from the same cloth.” Pascal, too, has deep roots in the neighborhood, having grown up in the West End and participated in educational programs at the theater when she was a girl. It’s something worth protecting, she says, recalling how business owners and residents have fought to keep chain businesses out of their neighborhood. “We have a shoe store, a designer optical boutique, my store, several jewelry stores, restaurants, all centered around 19th Street and the theater and within close proximity of the Allentown Fairgrounds,” she says. “Live events at the theater have been suspended, but they will reopen and this little area will continue to thrive. We have loyal customers who love shopping small and they’re showing up.”

t’s hard to estimate just how many miles the skilled drivers of J&J Luxury Transportation have racked up since the company was incorporated 41 years ago, but consider this: Earth’s circumference is just about 25,000 miles. A single vehicle, driving under 600 miles each year, could match that in the same number of years. roundhog Day isn't as widely celebrated as other holidays, but that wouldn’t be the case if it were up to Terry Ellis, owner of The Sweet Spot in Allentown, who puts the holiday at the top of his list. Twenty years ago, Ellis began hosting a Groundhog Day neighborhood party where he served his homemade pulled pork recipe. As word spread, instead of heading to Punxsutawney on the special day, friends, family, and strangers came from all around to Ellis’ event, which eventually needed to be relocated from his house to a larger venue to accommodate the expanding guest list. Nowadays, you don’t have to wait until February 2 to enjoy this regional favorite. The pulled pork is offered exclusively at The Sweet Spot where you can order it any time of the year. Although he likes to keep some of the magic behind the taste under wraps, he reveals it’s a 48-hour process, marinating the pork for 24 hours in his own combination of dry-rubbed herbs and spices, and slow-cooking for another 24 hours. A sweetly-tart glaze scented with earthy spices makes this dish a suitable partner to grilled salmon, pork tenderloin medallions, roasted duck, and much more. Make a shallow X-shaped cut at the top of each fig. Starting from the bottom, gently squeeze each fig to distribute the pulp evenly, without forcing any fruit from the cut. Place in an oven preheated to 450°F and bake for about 12 minutes, until figs are softened but still hold their shape. At Whole Foods Market in Allentown, Elyse Suter, produce assistant team leader, notes that about 90% of their organic figs arrive from California. (In the mid-1700s, Franciscan monks from the Mediterranean region introduced Black Mission figs to this amenable clime.) Since the shelf life of figs at the store is only 1 to 1 1/2 days, consume them quickly to avoid vegetable drawer coma.

Growing figs successfully in the Northeast can be accomplished with a little extra care. Young trees grown outdoors in pots should be invited to live inside (or at least in the garage) during their first few winters. At Pharo Garden Centre in Bethlehem, owner Ray Steidinger stocks several types in spring, including Chicago Hardy, a cultivar noted for superior cold tolerance. When planting trees in-ground, look for a spot near a relatively warm cement house foundation—with plenty of sun. Trees can also be wrapped in burlap during winter. Tony Galanti and Marty Stillwell, avid amateur horticulturalists in East Greenville, have a large clan of indoor and outdoor Brown Turkey fig trees, all propagated from a “starter” tree. As a fifth-generation fig grower—traditional in many Italian-American families—Galanti reports they never tire of the fruits of their labor, especially prepared in his nonna’s preferred style: Sliced, drizzled with olive oil, and topped with ground pepper. FALL overhaul your seasonal home maintenance checklist BY ANDY COOK

utumn, with all the changing leaves and cooler temperatures, will soon be upon us. Personally I love this time of year—you may need a light jacket, but you can still drive a convertible with the top down. Here are some easy to-do items to get your place ready for the upcoming season, so it will be easy to break it down into weekend-sized chunks.
CHECK YOUR DETECTORS With furnaces starting to get turned on, the windows closed and portable heaters humming along, fall is a great time to make sure your smoke and carbon monoxide (CO) detectors are working. As annoying as those test beeps are, replacing those batteries will keep you and your family safe. GIVE THOSE WINDOWS A GOOD CLEANING Fall is a good time to wash the outside windows, because the summer’s direct sun can make windows dry streaky. Use a squeegee to get a professional result. If you have newer windows, you may be able to unlock and tip them inwards to clean them easily.

FERTILIZE IN THE FALL If you want the best lawn in town, they say you should fertilize four times a year. But you can keep it simple and still have a great lawn if you only fertilize once—in the fall. Ask an expert at your garden center for advice about the best fertilizer blend for your grass type and soil conditions. Apply the fertilizer about three weeks before the last mowing of the season. Fertilizing in the fall provides energy and nutrients for the grass roots as they multiply in cooler weather before the grass goes dormant. CUT GRASS SHORT Get out that rake and remove all of those dead leaves before winter comes. Remove any branches or other debris from around landscaping and house foundation. Dead wet leaves will decompose and become sodden mats in the spring and smother the sprouting grass below. Plus it’s a lot easier to rake dry leaves. As a bonus, this is a great family activity, too. Just this one time of the year, set your mower to cut 1-1/2” or 2” and mow your grass short. That’ll do a couple of things: first, it’ll lessen the chance of snow mold forming, and second, tall grass blades won’t lie down and smother the new grass next spring. DRAIN GARDEN HOSES Yes, I’ll own up to it: I sometimes neglect to drain garden hoses before putting them away for the winter. Usually it’s not a problem. But every once in a while, freezing water splits a hose open. I’ve lost a few cheap hoses this way and a super-expensive one (ouch!). It’s easy to avoid this headache because draining hoses is quick and easy: either blast out the water with an air compressor or stretch them out on a sloped yard or driveway so they can drain fully before coiling them and putting them away.

If your home has a wood burning fireplace, it’s important to have it inspected at least once a year by an expert. TRIM THE TREES Cut back dead branches, especially those hanging over your house. In stormy, windy, or icy weather, these could fall and potentially cause damage and injury. If you’re not sure what should be done, consult a professional arborist to do an annual review of your property.

THE BAKER INSTITUTE BY FRED JERANT

A
n old adage maintains that “If you build a better mousetrap, the world will beat a path to your door.” That may be true, but the path to innovation can be daunting. Fortunately, the Baker Institute for Entrepreneurship, Creativity and Innovation at Lehigh University provides students with many ways to encourage forward-thinking and problem solving. The center was endowed in 2010 by the late Dexter Baker, who had a 40-year career at Air Products and Chemicals. Baker wanted every student to experience themselves as creative innovators, then use that creativity to challenge the status quo– essentially to think outside the box, advice Baker had been given by a professor during his MBA studies. “It’s really a university-wide organization that helps students to develop an entrepreneurial mindset,” said Lisa Getzler, executive director of the institute. Its resources include mentoring, idea-stage funding, various spaces for working, meeting, and making; skill-building programs and much more. Nurturing creativity and innovation via the Institute can be like learning a sport, Getzler explained. Some participants are naturally gifted, while others may have had no prior experience at all. “But as you learn the game and its rules and practice, you get better at it. And you can gain lessons from losing that you’d never learn if you won all the time,” she said.
MUCH MORE THAN STARTING A BUSINESS And while we typically associate entrepreneurship with starting a business, Getzler said there’s more to it than that. “The definition of ‘entrepreneur’ has expanded over the last 20 years,” Getzler said. “Entrepreneurial thinkers see opportunities to solve problems and create value; they understand other people’s needs and work to develop solutions.”

FIVE KEY PROGRAMS “Design thinking” takes a human-centered approach to problem solving. It focuses on empathy (understanding the problems people face); define (reframing those insights as “how might we” questions); ideate (brainstorming for possible solutions); prototype (building out an idea); test (implementing a possible solution to see if it works). The Hatchery offers an immersive summertime learning experience in which students learn and practice the basic skills of entrepreneurship, regardless of where they are on their entrepreneurial journey. During EUREKA! Pitch Nights, student-anchored (faculty and staff may participate, too) teams present detailed pitches of their ideas—from simple sketches to actual prototypes–to a panel of expert judges. Winning teams are awarded funding, mentoring, or both. And unlike most competitions, it’s possible that every pitching team may earn some level of support. LehighSiliconValley is a 3-credit course in the San Francisco Bay area. Lehigh undergraduates, graduate students, and alumni immerse themselves in a week-long focus on actual new-venture creation. The Baker Institute even has international reach through its Global Entrepreneurial Fellowships, in partnership with the Nasdaq Center. It’s roughly similar to LSV, but places students in early- to midrange startups in various economic centers around the world.
In other words, they find ways to make things work better–and that skill applies to virtually any setting. For example, within the University, the Institute has presented workshops for library technology services

INNOVATING IN THE TIME OF COVID-19 And while the ongoing Covid-19 pandemic has upended practically every aspect of life, the Institute saw the restrictions as an opportunity to put its concepts into practice. Take the Hatchery program. “We decided in March to convert the program to a 100%-remote operation. We learned how to make an inviting and exciting remote interaction platform, and then followed up by sending each participant a ‘box of awesome’– everything needed to build prototypes.” Getzler also relied on MURAL, a digital workspace for visual collaboration. It provides an interactive virtual whiteboard, enabling remote students to interact and contribute in real time. “It’s been incredibly useful,” she added, “and the students have responded well to it.”

Getzler added that the Global Entrepreneurial Fellowship–originally intended to send students to London, Dortmund, and New Delhi–would follow a similar path. “We couldn’t just put students on a plane and drop them in Germany, India, and England,” Getzler said. “So we have arranged for them to engage in their global internships right from their living rooms.”
ACADEMIC COOPERATION Lehigh’s college of business offers a minor in entrepreneurship directed by Prof. Andreea Kiss. “It’s one of the most successful programs at Lehigh,” Kiss said. “Each year, 40 to 50 students declare it as their minor.” She added that it’s open to students in all majors who want to bring change to new fronts and to established ventures. They draw on their diverse backgrounds as they work together, through hands-on courses, on a single idea. “We might have a representative of an actual enterprise that has a problem introduce the situation to the class at the beginning of the semester, and then work with them to develop an innovative solution. The students love it, because they gain the advantage of the real-world experience,” rather than performing textbook exercises. “We frequently leverage the Baker Institute’s resources,” Kiss added, “to complement and extend what we offer in class.”

The late Dexter F. Baker is perhaps best known as the former chairman of the board and president of Air Products and Chemicals, where he worked from 1952 until his retirement in 1992. The impetus for founding the Baker Institute was straightforward: “Asa Packer [Lehigh’s founder] was an entrepreneur who conceived a new transportation service and moved products from the Lehigh Valley all over the world,” Baker once said. “I want Lehigh graduates to be vaccinated with the spirit of Asa Packer and chart their own course so they don’t have to doggedly follow in the footsteps of others, but can be the lead dog themselves. I believe in it. I am a product of it.” Baker, with his wife Dorothy (“Dottie”), was also a significant community benefactor; the couple co-chaired a major capital campaign for the Zoellner Arts Center and secured naming rights to Baker Hall and provided funding for the Dorothy and Dexter Baker Center for the Arts at Muhlenberg College. The Baker Foundation supports merit scholarships in the arts at Lehigh University; several other area schools and colleges; and numerous Lehigh Valley and national nonprofits in the arts, youth, social service initiatives and entrepreneurship. DIRECTIONS Working one at a time, soak rice paper wrapper in warm water for 5 seconds then lay flat on a plate or clean counter. Place lettuce and noodles along the length of the wrapper’s center, leaving about 1 inch at top and bottom. Arrange herbs, pork, and shrimp over top. hat started out as a hobby is now the second largest winery by volume in Pennsylvania.
Clover Hill Vineyards & Winery, with four retail locations in and around the Lehigh Valley, began as a hobby when founders John and Pat Skrip planted grapes at their home in Breinigsville in the 1970s. That hobby developed into a passion, and they began producing wines that they wanted to share with others. In 1985, they opened the doors of Clover Hill Vineyards & Winery, producing around 1,000 gallons of wine in their first year of operation. Growing up among the vines, two of the Skrip’s children have become an integral part of the family business. In the early 1990s, after studying marketing at Penn State and enology (winemaking) at Fresno State in California, John Skrip III joined Clover Hill as its chief winemaker. Daughter Kari Skrip, seven years her brother’s junior, joined the family business after studying wine marketing at the University of Adelaide in Australia.

“The idea was for me to come back and do the marketing, but when I went to Fresno State I kind of fell in love with the process of making wine,” explained John Skrip III. “When we first started, everybody thought we were nuts making wine in Pennsylvania. In the ’80s, it was an uphill battle. People thought if it wasn’t French or from California it wasn’t good. It was like pushing water uphill.” Now, with four retail shops including wine tasting, six vineyards encompassing 80 acres across the Lehigh Valley, an annual output of 80,000 gallons and capacity to produce 125,000 gallons, it's safe to say that water has been turned into wine. “My parents purchased the property in Breinigsville in 1976 to build a house there and also wanted to do something agriculturally with the land,” Kari Skrip said. “Dad was in construction and my mom had been a schoolteacher. In 1985, they decided to sell the construction company, go fullthrottle and open up a winery. They didn’t have a lot of experience or background.”

local color Kari Skrip followed in her big brother’s footsteps, both in terms of joining the family business and with regard to her formal training. Before studying wine marketing and viticulture in Australia, she attended business school at Frostburg State University in Maryland. The two siblings now run most of the day-to-day operations with mom handling the books and dad helping to make big-picture decisions. A tight-knit family business offers its challenges, John Skrip III said. “With a family business everything is intensified. When we have fights, they can turn out to be doozies…but when everything clicks, it’s just rewarding. It’s nice to have those days where we’re getting along and making forward progress.” “It’s interesting how my brother was so immersed in California wine culture and I was immersed in Australian wine culture and we both really wanted to come back to the family business in Pennsylvania,” Kari Skrip said. “We’re proud of the fact that when you are seeing farms chewed up left and right by development that we can be part of a farming business that can be profitable, arguably. It’s a really exciting business no matter where you are.” Pennsylvania wines don’t taste like California wines, but they’re not supposed to, Kari Skrip said. It’s all about the “terroir.” “That term really touches on the fact that everything that’s involved in a bottle of wine —growing conditions, the soil, the climate, the landscape—really gives that wine a sense of place, and I love that about wine. Wine from Washington state is uniquely different than anywhere else in the world, and I love that about Pennsylvania wine, too.” Where Good Things Grow

“Probably the biggest factor that hinders us is that grapevines only need 12 inches of rain a year, and the Lehigh Valley averages 42 inches,” he said, adding that the extra moisture leads to disease pressures such as mold and mildew and fungi. “Spraying isn’t our favorite thing to do but it’s a necessary evil, and we try to utilize it as
respectfully as possible. If you’re going to grow grapes on the East Coast, there is really no way of getting around it.� A more recent challenge, he said, has been the spotted lantern fly, a voracious pest believed to have been imported on granite shipped from South Korea. “Unfortunately, the insect seems to like our area,� John Skrip III said. The pest bores into the grapevines and sucks the sap out, he said, leaving behind a telltale glistening honeydew coating on the ground. “It kind of bleeds the plant to death. It’s a tough pill to swallow when you’ve worked the soil with your hands, set up the grapes on trellises and pruned the vines—it’s a lot of work— and then this shows up at the 11th hour two weeks before harvest starts.� The Skrip siblings said wine sales have been brisk during these challenging COVID-19 times, both with curbside sales at four retail locations and sales through grocery outlets.

For instance, the OraQuick in-home HIV test is an over-the-counter product, according to Mell. It is available online and via retailers such as Target and Walgreens. “We also have a version of the test that is made available through healthcare professionals,” she said. Depending on regulatory approvals, like our HIV products, the COVID-19 product could be sold through public health distribution, online sales, and/or in retail pharmacies. We also expect interest from employers and other large-volume purchasers, who want to ensure the health of their workforces. And like our HIV self-tests, this rapid test for COVID-19 would allow for in-home self-testing by lay users (like you and me) as well as by medical professionals. No instrumentation or trained personnel would be needed to administer the test or to read the results," adds Mell.
Most current coronavirus tests require a nasopharyngeal or oropharyngeal sample, which can be painful to collect and difficult to attain through self-sampling. Or, for instance, the company, Abbott Laboratories is currently easing the burden of COVID-19 testing with a new pain-free test; however, the Abbott machine requires a health care provider, a clinical setting, and can only test a maximum of four patients per hour per device.
