More memories to come. With Qatar being the host of the FIFA World Cup in 2022, this soccer sushi is a delicious themed snack to impress your friends and family while watching the games. This version is vegetarian but you can improvise with the ingredients.

— 500g sushi rice — 10 tbsp rice vinegar — 2 tsp salt — ½ cucumber — 1 avocado — 3 tbsp sesame seeds — 5 tbsp mayonnaise — 5 nori sheets

Method

1. Cook the sushi rice as per the instructions on the package.

2. Add the rice vinegar and salt to the sushi rice, mix well and allow to cool.

3. Cut little pentagon shapes out of the nori sheets, making around 150 shapes. It is best to fold the nori sheets a couple of times when cutting the shapes to save some time.

4. Cut ½ the cucumber and one avocado into small pieces and add it to a bowl with 3 tablespoons of sesame seeds and 5 tablespoons of mayonnaise and mix.

5. Take one small cup and cover the inside with cling film. You will need excess cling film for easy removal of the sushi mixture later.

6. Start to add some sushi rice inside the small cup and press, ensuring the sides of the cup are covered with rice. It is important that your hands are wet to avoid the rice sticking to your hands. 7. Add 1 teaspoon of the avocado and cucumber mixture to the cup of sushi rice and press lightly, then cover with more sushi rice.

8. Remove the mixture from the cup using the excess cling film.

9. Close the cling film wrap by twisting and mould the sushi rice into round shapes.

10. Repeat steps 4-6 until there is no more sushi rice. This should give you around 20 soccer sushi balls, depending on the size of balls you form. You can reuse the cling film for all of the soccer sushi balls.

11. Now it is time to add the pentagon shapes onto the sushi ball. Lightly wet your hands and the nori pentagon shapes and stick them to the sushi balls. Approximately 8 nori shapes should fit onto one sushi ball and ensure they are equally distributed.

12. Your soccer sushi is ready. Serve with some wasabi and soy sauce and enjoy.
