Lemon Meringue Cupcakes

Creating memories! These are a favourite of my son and his friends. I love seeing how fast they disappear. I've never had any complaints.

Ingredients
Cupcakes — 230g butter, room temperature — 300g sugar — 310g flour — 4 tbsp cow ghee (clarified butter) — 2 teaspoons baking powder — 1 tsp salt — 2 tsp vanilla extract — 120ml milk — 120ml lemon juice
Lemon curd — 125g sugar — 1 pack vanilla sugar — 1 egg — 1 lemon — 1 glass of water — 2 tbsp cornflour
Meringue — 3 small eggs, whites — 75g sugar — ½ tsp cream of tartar

Method
1. Preheat the oven to 170°C.
2. In a medium bowl, cream the butter and slowly add the sugar, beating until light and fluffy.
3. Gradually add the eggs, one at a time, mixing well until fully incorporated.
4. Sift the flour and baking powder into the sugar mixture, add some salt and combine well.
5. Add the vanilla, milk and lemon juice and mix well. Then scoop the mixture into a lined cupcake tin until about ¾ full.
6. Bake for 12-15 minutes. Place a toothpick into the centre of the cupcakes and if it comes out clean then your cupcakes are ready. Allow to cool.
7. To prepare the lemon curd in a pan, mix the sugar, vanilla sugar packet, cornflour and the egg, then add the lemon juice and glass of water, cooking on low heat and stirring continuously, bringing it to a boil. 8. Remove from the heat and add a knob of butter to the mixture.
9. To prepare the meringue icing, whisk the egg whites and sugar in a heatproof bowl over simmering water until a thick consistency forms and the sugar dissolves. Tempering the eggs will ensure the icing is safe without being baked.
10. Remove from the heat, add the cream of tartar and beat for 10 minutes until soft peaks form.
11. Using a piping tip or a knife, cut a hole into the top of the cupcakes and press down to make a well for the curd to be inserted.
12. Add the lemon curd into the centre of the cupcakes and ice with the meringue. Enjoy.
