There is nothing better than looking forward to a coffee-flavoured dessert after a meal. This one is a childhood favourite of mine.

Ingredients

— 300ml double cream — 150g dark chocolate serving (70% cocoa) plus extra for serving — 150g sponge fingers — 300ml hot strong, sweetened coffee — 100ml sherry — 750g ricotta cheese — 375g mascarpone cheese — 1 tsp vanilla essence — 4 ½ tbsp runny honey — A pinch of sea salt

Method

1. To make the ganache, pour the cream into a pan and gently bring to a simmer over medium heat.

2. Add a pinch of sea salt, break up the chocolate and stir until it has melted and thickened, forming a smooth consistency, and then remove from the heat.

3. Line a dish (30cm x 20cm) with sponge fingers.

Carefully pour over the hot, sweetened coffee and drizzle over the sherry.

4. Spread the melted chocolate ganache over the top, ensuring an even distribution is achieved. 5. Using a food processor, blend the ricotta cheese, mascarpone cheese, vanilla essence and honey to a smooth texture.

6. Spoon the mixture on top of the chocolate layer, again ensuring an even distribution is achieved.

7. Place the dish in the fridge for 2 hours and allow to set.

8. Remove from the fridge, grate some dark chocolate on top and serve. Enjoy.
