My mother used to buy these to reward me for my good results at school. The best afternoon snack ever. I couldn't find them in Spain so I learnt to bake them.

— 250ml water — 150g flour — 1 tbsp sugar — ½ tsp salt — ½ tsp yeast — 1 packet vanilla sugar — 100g butter — 3 eggs — Pearl sugar

Method
1. In a pan, add the water and butter and bring to a boil.
2. Once the mixture comes to a boil, remove from the heat and gradually add the flour, salt and yeast and mix together using a wooden spoon until a dough forms. The dough should naturally separate from the edges of the pan. Allow to cool for one minute.
3. Add the sugar, then the first egg and beat vigorously until the dough fully absorbs it.
4. Repeat the process with the remaining two eggs (this can be done in a mixer if this is more convenient). 5. Preheat the oven to 210°C.
6. Line a baking tray with parchment paper (use 2 for this quantity) and divide the dough mixture using a teaspoon, forming smaller pieces (puffs).
7. Add some pearl sugar to each puff, pressing it in slightly.
8. Insert into the preheated oven and bake for 15-20 minutes.
9. Remove from the oven and enjoy.
