Back in the day, I used to help my parents with cooking. I learnt this recipe from a friend and remember preparing it for my family, who loved it. Since then, it has become my signature dish for special occasions. It is a layered tortilla dish with veggies, minced meat, crème fraiche and cheese. It is a very colourful pie and makes a great meal for any celebration.

Ingredients

— 6 large tortilla wraps — 450g minced meat — 3 bell peppers — 2 red onions — 200g canned sweetcorn — 4 celery sticks — 300g cheddar cheese — 1 tsp salt, 1 tsp pepper and 1 tsp chilli powder — 3 tbsp olive oil — 10 cherry tomatoes

Method

1. Preheat the oven to 220°C.

2. Clean and cut the bell peppers, celery and onions into small pieces. Keep the celery in a separate bowl and the rest of the vegetables in another bowl.

3. Add 2 tablespoons olive oil to a deep frying pan over medium-high heat. Add the minced meat and cook for 3-4 minutes, then add the teaspoon of salt, pepper and chilli powder and mix well with the meat.

4. Add celery to the mixture and stir for 2 minutes, allowing the celery to soften. Then add the remaining vegetables and sweetcorn and cook for a further 5 minutes, then turn off the heat.

5. Using a paper towel, grease the inside of a springform cake tin with 1 tablespoon of olive oil.

6. Add the first tortilla wrap into the springform cake tin, ensuring the bottom is completely covered. Then add 60g crème fraiche and spread this out over the tortilla using a spoon. 7. Add 1⁄5 of the meat and vegetable mixture and top with 40g of grated cheese.

8. Repeat step 6 another 4 times, which should leave you with one remaining tortilla wrap.

Spread the remaining 100g crème fraiche and sprinkle 100g of the grated cheese over the wrap.

9. Cut the cherry tomatoes into halves and spread over the last tortilla.

10. Bake the tortilla pie in the oven for 20 minutes at 220°C. After 15 minutes of cooking, turn on the oven grill function so that the cheese becomes a bit crunchy.

11. Allow the pie to cool for 5 minutes and remove from the springform cake tin.

12. Cut the pie into 8-10 slices, serve and enjoy.
