Dates and Almond Pistachio Ladoos

Dates are a healthy sweetener and perfect for laddoos. My mother used to make them for me as a healthy snack during my childhood years.

— 40 peeled almonds — 100 pitted dates — 1 cup ground peeled almonds — 4 tbsp cow ghee (clarified butter) — Handful of pistachios, finely chopped — 1 cup desiccated coconut — 1 tbsp saffron (optional) — 1 cup almond milk — Cardamom powder

Method
1. In a non-stick pan, add 1 cup of desiccated coconut and 1 cup of thick almond milk. Stir the mixture together on a flame heat until the moisture is completely absorbed.
2. Allow the mixture to cool down, then add 1 cup of almond powder to the mixture and combine.
3. In a separate pan add ghee and the chopped dates. Set to medium heat and sauté for 1-2 minutes.
4. Mix the coconut and almond mixture with the dates and add the cardamon powder, saffron and chopped pistachios. While the mixture is still warm, mix well until it forms a dough-like consistency. 5. Grease your hands with some ghee and and roll the mixture into small balls. Keeping the mixture warm allows the balls to form neatly.
6. For garnishing, coat the laddoos in ghee and then roll them in the chopped pistachios.
7. These almond pistachio laddoos are great any time of the day when you are craving something sweet – enjoy.
