— 150g biscuits — 60g butter — Gelatine sheets — 500g Greek yogurt — 250g cream cheese — 50g sugar — 1 lemon — Konnyaku jelly — Strawberries

Method

1. For the cheesecake base, begin to crush the biscuits into a fine texture.

2. Melt the butter in a pan/microwave then add to the crushed biscuits mixture and mix well.

3. Line the base of a baking tin with the biscuits mixture and place in the refrigerator to set.

4. For the filling, mix the gelatine leaves, yogurt, cream cheese, sugar, lemon zest and add to the biscuits base then place back in the refrigerator overnight. 5. Prepare the konnyaku jelly by following the instructions on the packet, ensuring the mixture has cooled before pouring it on top of the cheesecake to avoid the cheesecake melting.

6. Lay the strawberries onto the cheesecake and pour the jelly on top.

7. Place the cheesecake back into the refrigerator to allow it to set before serving. Enjoy
