icolas Vivin a lancé sa marque il y deux ans et demi à Bangkok. Une entreprise familiale à laquelle sa charismatique épouse Samantha participe activement. Cette spécialiste de la communication, qui dirige par ailleurs sa propre agence, Extrovert Marketing, semble ne jamais s’arrêter et affiche une inoxydable bonne humeur. Nicolas, lui, est constamment de bon humour et semble cultiver le don d’ubiquité. Originaire de Roanne, dans la Loire, le trentenaire a débuté dans l’univers de la gastronomie à l’occasion d’un stage à la maison Troisgros. Il a ensuite intégré l’école hôtelière de Lausanne et effectué l’un de ses stages au fameux Mandarin Oriental de Bangkok. Séduit par la vie thaïlandaise, il décidera de revenir quelques années plus

tard pour s’y installer et rencontrer son épouse et partenaire. Chez Vivin, on aime à pratiquer le mélange des cultures culinaires. Pour Nicolas, l’avenir est dans le “glocal” : développer une stratégie mondiale tout en veillant à s’adapter aux conditions régionales. Il résume ce challenge d’une phrase, qui sonne comme une devise : « avoir le courage d’adapter ce qu’on pense être parfait ». Nicolas, vous avez commencé comme producteurs de terrine de foie gras, transformateur en somme...

je suis un fan de terrine de foie gras. Comme je n’en trouvais pas en Thaïlande, mis à part des produits industriels bien connus, je cuisinais la mienne à la maison à partir de foies locaux. On nous a alors offert l’opportunité d’avoir un booth au Bangkok Farmer’s market de K-Village, fin 2013. On a commencé à faire un packaging sympa, en s’inspirant des boîtes de cirage à chaussures, c’était sympa et original... Vous vous êtes fait remarquer grâce à un certain foie gras au rhum... J’étais en Thaïlande depuis dix ans et je venais juste d’arrêter mon travail dans l’événementiel, après un début de carrière en gastronomie et hôtellerie de luxe. A l’époque, j’avais une bouteille de rhum Chalong Bay qui traînait à la maison et on a fait un essai de foie gras avec, c’était bon et nous avons donc proposé un foie gras nature et un au rhum. Tout le stock est

parti en quatre heures ! Aujourd’hui, le rhum Chalong Bay est le seul produit que je porte qui n’est pas sous la marque Vivin... Après cela, nous avons cherché une shop house pour disposer d’un bureau pour nos différentes activités et d’une cuisine et c’était parti ! Nous avons donc monté notre labo, puis travaillé avec une agence-conseil pour nous permettre d’obtenir nos certifications et nous aider dans les rapports avec l’administration thaïe. A part votre site internet sur lequel on peut commander votre gamme et les restaurants qui servent vos produits, comme Cocotte par exemple, où vous trouve-t-on ? Nous sommes toujours bien sûr le weekend au Farmers’ market de K-Village, à côté du Big C Extra de Rama IV, où nous avons notre clientèle et qui constitue pour nous un moyen facile d’obtenir un feed-back sur nos produits. Mais globalement nous nous dirigeons plus vers les shopping malls. Outre les pop-up réguliers un peu partout, nous disposons d’un corner à Central Chitlom et nous allons ouvrir courant novembre un nouveau point de vente à EM Quartier. Votre offre s’enrichit sans cesse... Sur le foie gras, nous avons une ligne en perpétuelle évolution, les parfums mangue et tamarin sont intéressants, mais un peu plus difficiles à vendre. En revanche, nous allons continuer à faire des séries limitées.

Très populaire auprès des touristes thaïlandais de Bangkok qui désirent retrouver le parfum du bon vieux temps, le marché flottant d’Ampawa se réveille le week-end et accueille les visiteurs du vendredi au dimanche de 16 à 22 heures. Les embarcations des vendeurs y sont nettement moins nombreuses qu’au célèbre et très touristique marché de Damnoen Saduak, mais l’ambiance y est bien plus calme.

On retrouve dans votre approche et vos produits une indiscutable French Touch, mais est-ce là l’essentiel ? Nous nous positionnons comme une marque internationale, pas comme une marque française. Nos produits sont sourcés ici et ils exploitent des goûts différents, comme pour la fleur de sel ou le lait des chèvres thaïlandaises. Le terroir a moins d’importance, c’est notre marque qui compte. Nos fromages portent par exemple des noms exclusifs, pas des noms français...

Ces fromages sont un ajout récent à votre gamme, c’est un succès apparemment... Oui, grâce aux fromages nous avons triplé nos ventes à Central, par exemple. C’est un produit d’appel et nous avons mis encore plus d’énergie dans notre présentation, dans notre communication. Les fromages ont fait remonter la proportion d’expatriés occidentaux, mais notre

Ce marché flottant permet aux paysans de vendre leur récolte et les marchands cuisinent sur leur bateau toute sorte de nourritures, de plats traditionnels de la région, de fruits de mer, de coquillages cuits au barbecue, de poissons, de boissons, etc. Vous pouvez les déguster assis autour des petites tables installées

le long des berges, sur les escaliers qui descendent vers la rivière. Il est 17 h 30, le soleil descend lentement pour diffuser une lumière plus orangée, c’est l’heure où les Thaïlandais aiment commencer leur repas. Les petits restaurants qui se trouvent sur le quai supérieur sont pris d’assaut ! Sur le quai longeant le bras de rivière, on trouve bon nombre de boutiques avec des idées originales à chiner. Certains se font masser les jambes sur une barque, alors que d’autres préfèrent l’intérieur d’un salon, ouvert à la vue des passants. Contrairement aux Européens, les Asiatiques n’éprouvent aucune gêne à se faire masser en public... A Amphawa, les touristes étrangers sont plutôt des touristes isolés venant par leurs propres moyens et donc, moins nombreux. Vous pouvez loger sur place en bordure d’un khlong, par exemple dans une charmante maison d’hôtes. Profitez-en pour faire un tour en bateau à la nuit tombée afin de découvrir le spectacle féérique des milliers de lucioles qui viennent chercher l’âme sœur pour se reproduire dans les arbres le long des khlongs (fireflies en anglais, hing hoy en thaï).

The comfort and craftsmanship of the Bentayga cabin is worthy of the label luxurious. The dashboard breaks away from the usual Bentley craft with its asymmetrical shape, and it has doubleglazed windows. “Bentayga is leading the way in technological advances at Bentley,” Mustard said. “Our aim is to let you feel the effects of powerful technology, not be overwhelmed by it.” The instrument panel is centered with an eight-inch color LCD touchscreen display hooked up to a 60 GB hard drive; the screen will display GPS guidance, vehicle performance, and entertainment. The built-in computer also provides other options like voice control with text to speech, Wi-Fi and more.

The Bentayga (the name of a volcanic peak on the Gran Canaria Island) is a 2.4-tonne, four-wheeldrive Bentley SUV that’ll do 187 mph on the road and can take on some pretty heavy off-road challenges. The Bentayga was designed and put out by UK-based Bentley Motors.

“It is the perfect balance between sporting prowess and SUV presence,” said Sayer. “Innovative technology completes the

experience, connecting the driver and passengers with Bentley’s most advanced, intuitive infotainment and driver assistance technologies.” It has a split-folding three-seat rear bench. It can also be a four-seater, with a console set into the raised transmission tunnel and electrically reclining massager backseats. The four-seat layout includes a fixed-panel seal for the 431-liter boot compartment and a slightly quieter cabin but does not include the fold down back seats. “The intelligent functionality makes every journey more comfortable and satisfying,” according to Sayer, “whether you’re in the driving seat or relaxing as a passenger.” The Naim audio system provides a hi-fi system with a 2000-watt amplifier output, including bass speakers behind the driver’s seat. “Bentayga takes exquisite luxury into new territory, challenging preconceptions of what an SUV can be,” said Marc Mustard, News and Product Communications Manager. “It offers unrivalled comfort and refinement with complete control even in the harshest of conditions.” The Bentayga’s 2995 mm wheelbase can handle a 3.5-tonne towing capacity. The vehicle has six fuel-saving cylinders, a four-wheel drive transmission that employs a 40/60% front-to-rear power split.

The Bentayga’s twin-turbo 6.0-liter W-12 gives it 600 hp and 664 lb-ft of torque; an eight-speed automatic drives all four wheels. Bentley claims that his Bentayga is “the fastest SUV in the world”. “The all-new W12 engine is breathtakingly powerful with a top speed of 187 mph (301 km/h). But performance is not just about unadulterated speed,” boasts Mustard. Bentayga can tow up to 3,500 kg with consummate ease and takes all kinds of off-road conditions in its stride. The 48V resistive units are designed for a straight line or off-road travel and they stiffen to reduce roll and increase the dynamic. It has air suspension and an optional active anti-roll bar. The Bentayga has a strong hill-descent control system built into its low-speed cruise control.

A CITY CAR? “The City Safeguard and Pedestrian warning automatically detect potential collisions with other vehicles,” according to Marc Mustard, News and Product Communications Manager, “or if a person steps into the vehicle’s path, and applies emergency braking if necessary to help avoid collisions. Reversing Traffic Warning monitors blind spots to alert you to potential collisions with vehicles, motorcycles or cyclists when crossing behind.”

This model of SUV is designed to revolutionize the luxury and performance levels of the SUV. With its design driven by new innovations in SUVs, it displays unprecedented power, speed and efficiency, creating a new paradigm in SUV craftsmanship. The interior can seat up to four or five in grand seats covered in a supple leather interior wardrobe. Diesel and hybrid powertrains will be offered in future generations of the Bentayga. The Bentayga underwent a rigorous off-road test at the 50th annual Jeep Eagle Safari held March 19-April 6 of this year in Moab, Utah. Le centre a été créé le 26 mars 2016 par Nalinee et Olivier Brepson, deux jeunes Thaïlandais ayant vécu en Europe et en Thaïlande. C’est une structure privée et indépendante fondée avec la passion de la culture contemporaine thaïe.

our Philippe Tapp, « L’enseignement de bouddha est l’enseignement sur soi-même. » Directeur artistique de Montréal, ayant vécu 13 ans en Inde avant de s’installer en Thaïlande l’année dernière, Philippe Tapp a effectué une retraite Vipassana de 11 jours au temple bouddhiste Wat Ram Poeng (วัดร่�ำ เปิง) de Chiang Mai. Il partage cette première expérience toute fraîche avec nos lecteurs.

Tout d’abord, pourquoi avez-vous choisi ce temple ? Parce que les bonzes expliquent tout en anglais et que l’accueil pour les étrangers y est extraordinaire. Ils sont aussi très ouverts aux dialogues à tout moment de la retraite. C’est pour cela aussi que les personnes du monde entier viennent à Chiang Mai spécialement dans ce but ! J’ai de la chance, car de ma maison, je me

suis rendu au temple à pied ! Aussi, c’était surtout le bon moment pour moi. Dire que je me sens perdu ne serait pas très juste, mais il est vrai que je suis à un moment de la vie où j’ai l’impression d’être un peu dans un brouillard. Le Vipassana m’aide à me détacher du passé, et à clarifier des idées. Comment se déroule une journée de retraite ? Nous n’avons ni le téléphone ni l’accès à internet. Nous n’avons aucune référence moderne d’heure. Ainsi, nous sommes réveillés à 4 heures du matin par le son des gongs. Tout de suite, nous commençons notre méditation qui durera jusqu’à 6 heures 30. Cette méditation matinale est suivie par le petit-déjeuner. Puis nous méditons toute la journée. A Wat Ram Poeng, les bonzes nous conseillent d’alterner entre quinze minutes de méditation assise et quinze minutes de marche méditative, pendant laquelle les apprentis marchent extrêmement lentement, à savoir 15 mètres en trente minutes. Nous alternons donc ces deux techniques pendant jusqu’à 12 heures par jour, selon la capacité de chacun. Au début de la soirée, suite à la lecture de notre rapport journalier, les moines nous suggèrent sur quelle partie de notre corps nous devrons

nous focaliser le lendemain, cela peut être un point spécifique dans le dos, par exemple. Avez-vous des suggestions pour les personnes intéressées par cette retraite ? La moitié des apprentis partent après les deux premiers jours ! Ce sont les journées les plus difficiles. Les difficultés sont d’abord d’ordre physique, s’asseoir en posture méditative n’est pas simple pour tous. Moi, j’avais mal partout ! Appréhender ces douleurs physiques constituait d’ailleurs un pont pour aborder les douleurs émotionnelles. Après deux ou trois jours, j’ai commencé à comprendre pourquoi j’avais mal physiquement. Les difficultés émotionnelles relèvent, quant à elles, de notre propre réflexion. Comme nous ne pouvons pas parler (sauf avec les bonzes), nous avons vraiment beaucoup de temps pour réfléchir. C’est là où chacun « règle » énormément de choses. Personnellement, durant cette phase, je « respirais du positif » tout ce que je désire et j’« expirais » tout ce que je ne voulais plus dans ma vie. or Philippe Tapp, “Buddha’s teaching is teaching about oneself.” An Artistic Director from Montreal, having lived 13 years in India before settling in Thailand last year, Philippe Tapp made a Vipassana retreat of 11 days at the Buddhist temple Wat Ram Poeng in Chiang Mai. He shares this first fresh experience with our readers.

Retreat Plan

First of all, why did you choose this temple? Because the bonzes explain everything in English and hospitality for foreigners is extraordinary. They are also very open to dialogue at any time of the retreat. That’s another reason why the people of the whole world come to Chiang Mai especially for this purpose! I’m lucky because from my home, I can go walking to the temple! Also, it was especially a good time for me. To say that I feel lost would not be fair, but it is true that I was at a time in life where I felt a bit in a fog. Vipassana helped me to detach myself from the past, and clarify my ideas. How is a day of retreat? We have neither the telephone nor an internet access. We have no modern time reference. So we wake up at 4 am at the sound of gongs. At once, we begin our meditation until 6:30 am. This morning meditation is immediately followed by breakfast. Then we meditate all day long. At

Wat Ram Poeng, the monks advise us to alternate between fifteen minutes of sitting meditation and fifteen minutes of walking meditation, during which the apprentices walk extremely slowly, i.e. 15 meters in thirty minutes. We are alternating

these two techniques for up to 12 hours a day, depending on the capacity of each. In the early evening, after reading our daily report, the monks suggest to us where in our bodies we should focus on the next day, this can be a specific point, on the back, for example. Do you have suggestions for people interested in this retreat? Half of the apprentices leave after the first two days! These are the most difficult days. The difficulties are at first of physical order; sitting in meditative posture is not easy for all. I hurt all over! To apprehend this physical pain was also a bridge to understand the emotional pain. After two or three days, I began to understand why I felt hurt physically. Meanwhile, emotional difficulties fall within our own thinking. As we cannot speak (except with the monks) we really have much time to think. This is where each one of us “resolves” many issues. Personally, during this phase I “breathed positive” as much as I wanted and I “exhaled” all I did not want any longer in my life. It was a kind of ascent of the past of each one of us. ACK TO THE MOON est la première exposition solo de Sivadol Sitipol depuis celle qu’il donna à la National Gallery de Bangkok, en octobre 2006. Au cours des dix dernières années, le sculpteur thaïlandais, qui est diplômé de la plus prestigieuse université siamoise de beaux-arts, Silpakorn, s’est consacré à un projet à long terme en Inde. Mais il n’a jamais cessé de penser à son projet personnel à venir, créant continuellement de nouvelles œuvres dans son studio de Kanchanaburi. L’exposition présentera une quinzaine de ses sculptures, de tailles variées allant jusqu’à 5 mètres de haut et exécutées dans différents matériaux comme la pierre, le marbre, le bronze, le métal ou le cuivre... Les formes en sont à la fois abstraites et figuratives, reflets des interactions entre la sensibilité de l’artiste, son environnement et ses croyances, en particulier la force de sa culture bouddhiste. « A chaque fois qu’on pense à la lune, on se représente la pleine lune, » explique Sivadol, « La lumière représente la clarté. Sans lumière règne le côté sombre. Je cherche l’illumination dans chaque être vivant. Quand je crée mes sculptures, il s’agit d’un voyage en direction de cette lumière. Pour Back to the Moon, j’ai créé des formes et des dimensions destinées à aider l’esprit à s’engager sur le chemin qui mène à la lumière de la sagesse. Ces nouvelles formes, au carrefour entre abstraction et réalisme,

In the Moon for Sivadol “BACK TO THE MOON” is the first solo exhibition of Sivadol Sitipol after the one he had at the National Gallery in Bangkok, in October 2006. But he never stopped bearing in mind his next personal project, creating new artworks continuously that he

The exhibition will present 15 of Sivadol Sitipol’s sculptures, from various sizes, up to 5 meters high, and from various materials: stone, marble, bronze, brass, metal, etc. The shapes are in the same time abstract and figurative, featuring the interactions between the artist’s sensibility, his environment and his beliefs, especially his strong Buddhist culture. “Whenever we think of the moon, we always think of the full moon,” says Sivadol, “Light represents brightness. Without light there is darkness. I want to discover the light that is illuminating the life of the human being. When I create my sculptures it is the journey on the path towards that light. In Back to the Moon, I have created shapes and dimensions for helping the mind to open the door and follow the path towards the light of wisdom. These new shapes, in between figurative and abstract, are connected with the history, with the society, with the environment, but especially with the most personal elements like our mind. The sculptures are reflecting how the human being I searching for the answers within his mind and body to encounter new condition and feeling in the endless path of life.”

a Ratchaprasong Art Maze est un événement annuel, organisé par la Ratchaprasong Square Association et soutenu par la TAT, Tourism Authority of Thailand, à travers le projet Thailand Art Walk. L’édition 2016, Urban by Nature, a été conçue et sourcée par Myrtille Tibayrenc, la directrice de la galerie Toot Yung et co-directrice du festival d’art urbain Bukruk. C’est la nature qui se répandra à travers la conscience de quelques-uns des meilleurs artistes thaïs contemporains et s’exprimera dans la création d’installations innovantes adaptées au site où on pourra les admirer pendant un mois le long d’une passerelle au cœur de Bangkok, suspendue audessus des mouvements incessants du trafic. FRANCE : DES RENDEMENTS QUI S’ÉCROULENT Le rendement des placements favoris des Français continue de reculer : le taux du livret A a été divisé par quatre depuis 2008 et ne dépassait guère 0,75 % le 1er août 2015. Et l’assurance-vie n’est pas dans une meilleure position. Les contrats qui dégageaient environ 5,8 % en 2000, ne rapportaient plus que 2,3 % en 2015. Dans ces conditions, difficile de faire fructifier son épargne. De plus, la loi Sapin II inquiète les épargnants : le texte prévoit de restreindre les possibilités de rachats par les épargnants en cas de menace majeure sur le système financier. Dans son article, Les Echos précise aussi que « les retraits des épargnants pourraient être limités, pour une durée maximale de trois mois renouvelable. Une telle mesure vise a éviter que les épargnants ne retirent massivement l’argent placé sur leurs contrats d’assurance-vie pour la réinvestir sur des placements mieux rémunérés, au risque de mettre en péril le système ».

tête de l’eau. ntre les sables blancs, les ondes bleues, le ciel azur et les îles au loin ombrées de jade, elle a bien fière allure sur son caillou de soleil. Toute d’argent et de grâces, elle lisse lentement sa longue chevelure dans un geste qui pourrait être un reste d’éternité. La première fois qu’on la voit, si l’on vient d’Occident, on croit qu’elle est propre à évoquer la petite sirène d’Andersen, égarée en ces parages exotiques. Mais que seraient venus donc faire en ces lieux, je vous le demande, ces bons Danois du Nord ?

La voici. Un ancêtre pêcheur, dit-on, avait trouvé un peigne d’ivoire ouvragé sur le rocher où il venait journellement s’asseoir à la tombée du jour. A l’instant où il s’enchantait de cet étrange hochet, il vit se défiler à travers flots, à la vitesse d’une anguille affolée, un torse rosé flanqué de mamelles et de deux fuseaux agités, s’achevant par une traîne à nageoires. La légende veut que cette fée des flots, venue sans doute des lointaines Sargasses, eût ainsi vu pour la première fois un être humain, qu’elle en fût saisie de peur et se soit enfin enfuie, abandonnant son peigne sur la pierre marine. Personne, depuis, ne revit une telle illusion.

Il aura fallu des jours, des jours et des détours pour arracher aux natifs du rivage le secret de cette merveilleuse histoire.

Mais le bon pêcheur, n’ayant jamais rien vu de si nouveau ni de si beau, au lieu de détaler, resta figé sur place, le peigne

à la main. Et c’est ainsi que toute sa vie, qui fut longue, il revint chaque soir à la même heure s’asseoir sur cette pierre, non plus tant pour contempler la mer comme il le faisait autrefois que pour assouvir son espoir de voir réapparaître l’enchanteresse et de lui remettre son peigne ouvragé… Il approchait de son centenaire quand un soir, à travers les rayons déclinant du soleil, il crut apercevoir, à l’horizon des vagues, un être tout de féérie qui lui tendait les bras. Il avança les siens pour lui rendre le peigne, s’effondra sur-le-champ, exhalant d’emblée son dernier souffle, qui fut son dernier sourire. Les villageois éberlués incinérèrent son corps là où on l’avait trouvé, là où pendant tant de jours et tant de nuits il avait espéré le retour de sa vision. De ce petit pâté de cendres on fit un socle et sur ce socle on éleva l’effigie d’argent, de grâces et de rêve telle qu’on peut encore la voir aujourd’hui sur les grèves de Songkhla.

k Si les investisseurs étrangers continuent de bouder un peu le Siam, l’économie thaïlandaise donne des signes d’amélioration avec un redémarrage de la croissance au deuxième trimestre et les raisons d’y investir sont nombreuses, en particulier dans le tourisme et surtout l’immobilier.

Retour vers le futur

e Bureau des Investissements de Thaïlande (BOI) a récemment élargi son objectif de valeur des investissements étrangers (FDI) à 550 milliards de bahts ($ 16 Mds) pour 2016, soit une augmentation d’environ 20 % par rapport à l’objectif précédent de 450 milliards de bahts. Une légère augmentation par rapport aux performances antérieures annoncées par le BOI, mais surtout une chute libre par rapport aux chiffres des années précédentes. L’investissement étranger a brutalement décroché depuis la prise de contrôle des militaires en 2014, et les derniers chiffres du BOI ne laissent espérer qu’une faible amélioration d’ici la fin de 2016. Les demandes d’investissements étrangers déposées auprès du BOI ont d’ailleurs plongé dans la première moitié de l’année 2016.

Les investissements du Japon, le principal investisseur étranger en Thaïlande, ont chuté de 2,7 milliards de dollars à $ 810 millions. Ceux des États-Unis ont plongé de 90 % de 660 millions de dollars à 67 millions de $, tandis que l’Union européenne est passée de 1 milliard $ à 260 millions $.

Les généraux thaïlandais se sont emparés du pouvoir en 2014 en promettant pourtant de mettre un terme à des années d’instabilité politique et de remettre en marche une économie stagnante. Mais plus de deux après le coup d’État, la situation du pays est encore loin de s’approcher des résultats promis par l’armée et le général Prayuth.

Constitution, qui sera la 20ème que connaît le pays. Le régime militaire assure que cette nouvelle Constitution apportera une certaine stabilité au pays et mettra fin à la corruption dans la classe politique. Les troubles politiques ne sont cependant pas la seule explication plausible pour justifier la chute de l’investissement étranger.

L’EXCEPTION CHINOISE

La Thaïlande est en effet confrontée à un vieillissement rapide de sa population et à une concurrence accrue de la part de ses voisins, comme le Vietnam et le Cambodge, des pays aux populations plus jeunes, où la qualité de l’éducation s’améliore et où les salaires sont encore très bas.

La Chine est l’un des rares pays à avoir augmenté son engagement en Thaïlande sur cette période, puisque les 159 millions de la première moitié de 2015 se sont transformés en 723 millions cette année. Lors d’un briefing avec des journalistes le 18 août, le ministre des Finances, Somkid Jatusripitak, a cependant assuré être serein face à cette baisse historique : « Je pense que nous ne devrions pas regarder en arrière, il y a de l’espoir devant », a-t-il assuré. L’espoir vient en effet d’un retour à la stabilité après des années d’agitation et d’instabilité qui ont contribué à la défiance des investisseurs.

RETOUR À LA STABILITÉ Le 7 août, la majorité des Thaïlandais a largement approuvé (59 %) une nouvelle

L’immobilier à l’étranger a la cote et la Thaïlande dispose de nombreux atouts dans ce domaine.

EXCELLENT RAPPORT QUALITÉ-PRIX DE L’IMMOBILIER

La première des choses à considérer, avant toute chose, lorsqu’on investit dans un pays étranger, est sa monnaie. Est-elle stable ? A-t-elle gagné ou perdu en valeur au cours des années écoulées ? La monnaie est dans une large mesure le reflet d’une économie et l’évolution de la monnaie thaïlandaise par rapport à d’autres monnaies de référence a de quoi surprendre agréablement : on constate en effet une forte appréciation du baht face à l’euro ou à la Livre sterling depuis 10 ans. Sur cette décennie, le baht s’est par exemple apprécié d’environ 50 % par rapport à la livre sterling. Ainsi, un Britannique ayant acheté un appartement 7 000 000 de bahts il y a 10 ans (100 000 livres sterling à l’époque) et le revendant aujourd’hui, admettons même, sans plus-value (en THB)… le produit de sa revente en bahts (7 000 000, donc) vaudrait aujourd’hui… 155 500 livres sterling, soit un gain de 55 % !

DETTE ET INFLATION MAÎTRISÉES Avec une dette publique et une inflation maîtrisées, une croissance constante (même si moins forte que dans les années 80 ou 90), un chômage quasi inexistant et des politiques stables vis-à-vis des investisseurs étrangers (malgré des troubles politiques internes

liés à des luttes de pouvoir qui ne remettent pas en cause l’ouverture de l’économie), l’économie thaïlandaise a un horizon plutôt dégagé. Tout laisse à penser que le baht va, au minimum, se stabiliser, sinon continuer à s’apprécier sur le long terme face aux devises occidentales. Quant à l’idée reçue que le baht est arrimé au dollar, elle est tout à fait erronée et il suffit de constater les variations significatives du baht sur les dix dernières années (entre 29 et 37 THB pour un dollar) pour s’en convaincre. Le baht est une monnaie indépendante, qui représente la 27ème économie mondiale, et un pays de plus de 60 millions d’habitants.

Dans le même genre d’environnements (station balnéaire, à quelques minutes de la plage et de nombreuses infrastructures modernes), vous pourrez acheter une villa en Thaïlande avec 2 chambres, une piscine et un agréable jardin tropical, dans un lotissement moderne et sécurisé et avec services, pour 150 000 € environ et des villas avec 3 chambres pour environ 200 000 €. Naturellement, vous pouvez aussi trouver moins cher… une maison en dur « basique », construite dans la campagne, éloignée des centres de vie, peut être réalisée pour 50 000 €, voire moins… mais dans un environnement dans lequel un occidental se sentira plus difficilement à l’aise si il ne parle pas thaï couramment et ne s’adapte pas complètement au mode de vie local.

DES INFRASTRUCTURES MODERNES ET DE TRÈS BON NIVEAU

TOURISME : DE RECORD EN RECORD

La Thaïlande, est avant tout un pays qui a su accueillir la modernité tout en conservant ses valeurs, ses traditions et donc, sa cohésion nationale. La modernité, ce sont des aéroports internationaux, des hôpitaux de classe internationale, des centres commerciaux ultramodernes, des infrastructures de loisirs très développées, un réseau routier de très bon niveau, des projets de train à grande vitesse… Or, des infrastructures de qualité sont un gage de pérennité et de valorisation d’un investissement immobilier.

Enfin, le secteur touristique est en incessante progression. Élément non négligeable pour les investisseurs misant sur la demande touristique pour louer leur logement et générer des revenus locatifs importants, la fréquentation touristique de la Thaïlande est en progression constante et forte. Malgré les troubles politiques évoqués plus haut, l’attrait du pays du sourire pour les vacanciers du monde entier ne faiblit pas et 2015 a constitué une nouvelle année record, avec près de 30 millions d’arrivées !

LE BAHT : UNE MONNAIE REFLET D’UNE ÉCONOMIE SOLIDE

Lorsqu’on parle d’appartements « entre 2 000 et 3 000 €/m2 », certaines personnes vont répondent « C’est cher pour la Thaïlande ! ». En effet, on pourra trouver ce niveau de prix dans certaines villes de province en France. Mais en Thaïlande, à ce prix, vous aurez accès à des appartements neufs, dans des immeubles avec réception, piscine, salle de sport, ascenseurs, et de belles prestations intérieures (cuisines, salles de bains), parfois avec de magnifiques vues mer. Le tout dans des stations balnéaires cotées comme Pattaya ou Phuket par exemple, à quelques centaines de mètres de la plage et à quelques minutes de très nombreux restaurants, commerces, activités, etc.

Investment in Thailand: back If foreign investors continue to shun Siam a bit, the Thai economy is showing signs of improvement with a return to growth in the second quarter and profuse investment opportunities, especially in the tourism sector and real estate.

he Board of Investment of Thailand (BOI) recently expanded its foreign direct investment (FDI) objective to 550 billion baht ($16 billion) for 2016, an increase of approximately 20% compared to the previous target of 450 billion baht. A slight increase compared to previous performances announced by the BOI, and above all a free fall compared to previous years’ figures. Foreign investment has dramatically fallen since the military takeover in 2014, and the latest figures from BOI only leave hope for a weak improvement by the end of 2016. Requests for foreign investments registered with the BOI have also plunged in the first half of 2016. Japan’s investments, Thailand’s foremost foreign investor, fell from $2.7 billion to $810 million. Those of the United States plunged by 90% from $660 million to $67 million, while the European Union has reduced its investments from $1 billion to $260 million. Thai generals seized power in 2014 with the promise to put an end to years of political instability and restart a stagnant economy. However, more than two years after the coup, the situation of the country is still far from the results promised by the military and General Prayuth.

THE CHINESE EXCEPTION China is one of the few countries to have increased its engagements in Thailand over this period, its $159 million in the first half of 2015 turned into $723 million this year. However, during a briefing with reporters on August 18th, the Finance Minister Somkid Jatusripitak, assured to be serene before this historical decline: “I think we should not look back, there is hope ahead,” he assured. Hope comes indeed from a return to stability after years of political and social unrest and instability that contributed to investor wariness.

THE RETURN TO STABILITY On August 7th, the majority of Thais broadly approved (59%) a new Constitution, which will be the 20th that the country faces. The military regime claims that the new Constitution will bring some stability to the country and will end the corruption in the political class. Political unrest is not, however, the only plausible explanation for the drop in foreign investment. Thailand is indeed facing a fast aging of its population and an increasing competition from its neighbors such as Vietnam and Cambodia, countries with younger populations, where the quality of the education is improving and where wages are still very low.

THAILAND: A CREDIBLE REAL ESTATE INVESTMENT DESTINATION? Facing the reality of traditional investments (bank deposits, life insurance, ownership saving schemes…) that currently have the lowest rate

returns, and while the French property market also loses attractiveness, the quest of alternative investments more interesting, but also secure, has become a fundamental trend. Abroad Real estate has the ratings and Thailand has many strong points in this area.

BAHT: A CURRENCY THAT REFLECTS A STRONG ECONOMY The first thing to consider, above all, when investing in foreign country is its currency. Is it stable? Did it win or lose value over the years? The currency is to some significant degree a reflection of an economy and the evolution of Thai currency compared to other currencies pleasantly surprises: a sharp appreciation of the baht against the euro or the pound sterling can be observed over the last 10 years. In this decade, the baht has appreciated by about 50% compared to the pound. Thus, a Briton who bought a 7,000,000 baht apartment 10 years ago (£100,000 at the time) and decides to sell it today, even without capital gain (in THB) … the product of resale in baht (7 million, so) would be today … 155,500 pounds, a gain of 55%!

DEBT AND INFLATION UNDER CONTROL With public debt and the inflation under control, steady growth (even if less strong than in the 80s or 90s), virtually no unemployment and stable policies vis-à-vis foreign investors (despite internal political disorders linked to power struggles that don’t call into question the openness of the economy), the Thai economy has a clear horizon. Everything suggests that the baht will at least stabilize, if not continue to appreciate over the long term with Western currencies.

to the future As for the myth that the baht is tied up to the dollar, it is quite wrong and it suffices to note the significant variations of the baht over the past ten years (between 29 and 37 THB for a dollar) to be convinced. The baht is an independent currency that represents the 27th world economy and a country of more than 60 million people.

Après cela, nous avons cherché une shop house pour disposer d’un bureau pour nos différentes activités et d’une cuisine et c’était parti ! Nous avons donc monté notre labo, puis travaillé avec une agence-conseil pour nous permettre d’obtenir nos certifications et nous aider dans les rapports avec l’administration thaïe. A part votre site internet sur lequel on peut commander votre gamme et les restaurants qui servent vos produits, comme Cocotte par exemple, où vous trouve-t-on ? Nous sommes toujours bien sûr le weekend au Farmers’ market de K-Village, à côté du Big C Extra de Rama IV, où nous avons notre clientèle et qui constitue pour nous un moyen facile d’obtenir un feed-back sur nos produits. Mais globalement nous nous dirigeons plus vers les shopping malls. Outre les pop-up réguliers un peu partout, nous disposons d’un corner à Central Chitlom et nous allons ouvrir courant novembre un nouveau point de vente à EM Quartier. Votre offre s’enrichit sans cesse... Sur le foie gras, nous avons une ligne en perpétuelle évolution, les parfums mangue et tamarin sont intéressants, mais un peu plus difficiles à vendre. En revanche, nous allons continuer à faire des séries limitées.

Cette année nous proposons pour Noël du foie gras au chocolat ! Du chocolat noir Marou, un excellent producteur français basé au Vietnam. C’est un chocolat exclusivement vietnamien qui a gagné pas mal de concours. Pour la Saint Valentin, a priori ce sera un “cherry foie gras”, à la cerise... On retrouve dans votre approche et vos produits une indiscutable French Touch, mais est-ce là l’essentiel ? Nous nous positionnons comme une marque internationale, pas comme une marque française. Nos produits sont sourcés ici et ils exploitent des goûts différents, comme pour la fleur de sel ou le lait des chèvres thaïlandaises. Le terroir a moins d’importance, c’est notre marque qui compte. Nos fromages portent par exemple des noms exclusifs, pas des noms français... Ces fromages sont un ajout récent à votre gamme, c’est un succès apparemment... Oui, grâce aux fromages nous avons triplé nos ventes à Central, par exemple. C’est un produit d’appel et nous avons mis encore plus d’énergie dans notre présentation, dans notre communication. Les fromages ont fait remonter la proportion d’expatriés occidentaux, mais notre

Nous allons avoir enfin une gamme d’une douzaine de vins très choisis, essentiellement français et italiens, du champagne Perrier-Jouet (à 2500 bahts en exclusivité sur notre website), du Chablis bio, du Santenay premier cru AOC, du Chinon...

clientèle reste essentiellement locale et le Garlic & Herbs par exemple, un fromage frais pas trop puissant, est très apprécié des Thaïlandais. J’ai été surpris de voir aussi pas mal de Japonais, qui aiment beaucoup les fromages. Nous préparons d’ailleurs un fromage de chèvre frais au wasabi... Toujours cette recherche d’originalité... Oui, nous faisons tout pour ça. Courant octobre nous allons recevoir des saucisses sèches avec des parfums exclusifs : des recettes uniques, au poivre rouge de Kampot, aux noix de cajou de Phuket, aux épices, nous faisons des essais de saucisson au chocolat, à la mûre... Nous avons d’ailleurs en projet pour l’année prochaine de commercialiser des

pâtes de fruits, un peu de sucré qui s’associe avec les fromages et avec le foie gras et pour les clients qui souhaitent une douceur, un petit cadeau, avec des fruits d’ici et 100 % naturels, comme tous nos produits. Pour l’instant nous communiquons essentiellement sur la qualité gustative des produits et le luxe du packaging, mais l’année prochaine nous allons sans doute également mettre plus l’accent là-dessus, sur le 100 % naturel.

Vivinfying delicatessen With creativity as mastered as it’s wild, combined with an energy as serene as it’s determined, Nicolas and Samantha Vivin are gradually etching their mark on the gastronomic Bangkok scene

icolas Vivin launched his own brand in Bangkok two and a half years ago. A family business, in which his charismatic spouse Samantha is actively participating. This communication specialist, who also manages her own agency, Extrovert Marketing, seems to never stop and displays an unbendable good mood. Nicolas, on his side, is constantly playful and seems to cultivate a ubiquity gift. Originally from Roanne, Loire, the thirtysomething started in the gastronomy field on the occasion of a training at maison Troisgros. He then integrated the prestigious Ecole hôtelière de Lausanne and became a trainee at famous Mandarin Oriental, Bangkok. Seduced by life in Thailand, he eventually decided to come back years later and settle down. That’s where he met his wife and partner. At Vivin, they like to practice culinary cultures blending. For Nicolas, the future

lies in on “glocal”: to develop a global strategy while taking care of adapting to local conditions. He sums it up with a catchphrase sounding like a motto: “Having the courage to adapt what you think is perfect”.

We were then offered the opportunity to have a booth in Bangkok Farmer’s market at K-Village, it was the end of 2013. We started to create a good-looking packaging, inspired by shoe cream boxes, that was nice and original.

Nicolas, you have started as a terrine de foie gras producer, a converter of sorts… I am a fan of foie gras terrine. As I didn’t find any in Thailand, apart some of wellknow industrial products, I use to cook my own at home with local leavers.

You got noticed with a rum-flavored foie gras… I had been in Thailand for ten years and had just stopped working in the event business, after a career in gastronomy and luxury hospitality. At the time, I had a bottle of Chalong Bay rum somewhere in the house and we had a try with foie gras. That tasted good and we then offered a straight foie gras and a rumflavored one. All the stock disappeared in four hours! Today, Chalong Bay is the sole product we sell which is not under Vivin brand… After that, we looked for a shop house to home our different activities, with a big kitchen and let’s go! We set up our lab and worked with a

of competitions. For Valentine’s Day, we will offer “cherry foie gras” …

consulting agency to help us get all the certificates and deal with the Thai administration. Apart from your website where one can order, or restaurants serving your products, such as Cocotte, where can you be found? We, of course, are still present every weekend at Farmers’ market in K-Village, just beside Big C Extra on Rama IV, where we have our customer base and get an easy feedback on our products. But basically we are more and more targeting shopping-malls. In addition to our regular pop-ups, we have a corner in Central Chitlom and are about to open a point of sale at EM Quartier. Your offer is ever growing… Regarding the foie gras, we have a constantly evolving and interesting line comprising mango perfumes and tamarinds, but they are a little more difficult to sell. However, we will continue to make limited series. This year we propose for Christmas foie gras with chocolate! Dark Marou chocolate from an excellent French producer based in Vietnam. This is an exclusively Vietnamese chocolate that has won a lot

We can find in your approach and products a perfect French touch, but is it so important? We stand out as an international brand, not a French brand. Our products are sourced here and they have different tastes, like sea salt or milk Thai goats. The soil does not really matter, but the brand does. Our cheeses have exclusive brand names, not French names… These cheeses are recent additions to your range, it’s seemingly successful… Yes, thanks to the cheese we were able to triple our sales at central, for example. It is a customer product and we put more effort into our presentation and communication. Cheeses have caused an increase in the proportion of Western expatriates, but our customers are still mainly local and Garlic & Herbs for example a not too powerful cream cheese, is very popular among Thais. I was surprised to see a lot of Japanese who like cheese as well. We also prepare goat cheese with wasabi… This constant search for originality… Yes, we are doing everything to achieve that. By October we will receive dry sausages with exclusive flavors: unique recipes, with red Kampot pepper, Phuket cashews and spices, we are making sausage trials with chocolate, blackberry… We are also planning to market fruit paste next year adding a little sugar with cheeses and foie gras for customers who want gentleness, a small gift, with fruits from here and 100 % natural, like all our products. For now we mainly communicate on the quality taste of products and luxury packaging, but next year we will probably also put more emphasis on this aspect: 100 % natural products! We will finally have a range of a dozen carefully chosen wines, mostly French and Italian, Perrier-Jouet champagne (2500

baht exclusively on our website), organic Chablis, Santenay Premier Cru, AOC of Chinon… You show a clear will to keep the control on your development… It’s a family project, the project of a lifetime. Le marché flottant d’Amphawa Très populaire auprès des touristes thaïlandais de Bangkok qui désirent retrouver le parfum du bon vieux temps, le marché flottant d’Amphawa se réveille le week-end et accueille les visiteurs du vendredi au dimanche de 16 à 22 heures. Les embarcations des vendeurs y sont nettement moins nombreuses qu’au célèbre et très touristique marché de Damnoen Saduak, mais l’ambiance y est bien plus calme.

e marché flottant d’Amphawa se situe dans la province de Samut Songkhram, à environ 80 kilomètres au sud-ouest de Bangkok, sur la route en direction du sud (Hua Hin, Surat Thani, Phuket).

Pendant la période d’Ayutthaya, Samut Songkhran était une importante ville de négoce et la communauté d’Amphawa était célèbre pour ses produits agricoles et son commerce fluvial. Au début du XXème siècle, les marchés terrestres puis les centres commerciaux en ville ont remplacé progressivement les marchés flottants. Aujourd’hui, les habitants de la commune et la mairie ont décidé de mettre en valeur le patrimoine culturel de la région et de sa population pour le bonheur des Thaïlandais et des quelques Occidentaux présents. Ce marché flottant permet aux paysans de vendre leur récolte et les marchands cuisinent sur leur bateau toute sorte de nourritures, de plats traditionnels de la région, de fruits de mer, de coquillages cuits au barbecue, de poissons, de boissons, etc. Vous pouvez les déguster assis autour des petites tables installées

le long des berges, sur les escaliers qui descendent vers la rivière. Il est 17h30, le soleil descend lentement pour diffuser une lumière plus orangée, c’est l’heure où les Thaïlandais aiment commencer leur repas. Les petits restaurants qui se trouvent sur le quai supérieur sont pris d’assaut ! Sur le quai longeant le bras de rivière, on trouve bon nombre de boutiques avec des idées originales à chiner. Certains se font masser les jambes sur une barque, alors que d’autres préfèrent l’intérieur d’un salon, ouvert à la vue des passants. Contrairement aux Européens, les Asiatiques n’éprouvent aucune gêne à se faire masser en public... A Amphawa, les touristes étrangers sont plutôt des touristes isolés venant par leurs propres moyens et donc, moins nombreux. Vous pouvez loger sur place en bordure d’un khlong, par exemple dans une charmante maison d’hôtes. Profitez-en pour faire un tour en bateau à la nuit tombée afin de découvrir le spectacle féérique des milliers de lucioles qui viennent chercher l’âme sœur pour se reproduire dans les arbres le long des khlongs (fireflies en anglais, hing hoy en thaï).

Amphawa Floating Market Very popular with Thai tourists from Bangkok wishing to find the scent of old times, the Amphawa floating market wakes up during the weekend and welcomes visitors from Friday to Sunday from 4 pm to 10 pm. The floating vendors are considerably fewer than in the famous and touristic Damnoen Saduak market, but the atmosphere is much quieter.

he Amphawa Floating Market is located in the province of Samut Songkhram, about 80 kilometers southwest of Bangkok on the southbound road (Hua Hin, Surat Thani, Phuket). During Ayutthaya Era, Samut Songkhran was an important trading city and the Amphawa community was famous for its agricultural products and its river trade. In the early twentieth century, land markets and shopping malls in the city have gradually replaced the floating markets. Nowadays, the City hall has decided to showcase the cultural heritage of the region and its people for the happiness of Thai and a few Westerners present. This floating market allows farmers to sell their harvest and the merchants cook directly on their boats all kinds of food, traditional regional dishes, seafood, BBQ shells, fish, drinks, etc. You can eat them seated around small tables set along the

banks, on the stairs leading down to the river. It is 5:30 pm, the sun goes down slowly and spreads an orange light. It is the perfect time for Thais to start their meal. The small restaurants on the banks are overrun! On the quay along the river, there are many shops with original ideas to hunt. Some prefer to indulge in foot massage on a boat, while others choose a salon, open to the view of passersby. Unlike Europeans, Asians feel no discomfort at being massaged in public… At Amphawa, foreigners are rather isolated tourists coming by themselves and thus fewer. You can stay on site in a charming guesthouse along the khlong for example. Take the opportunity to make a boat trip at night to discover the magical show offered by thousands of fireflies seeking a soul mate to breed in trees along khlongs (hing hoy in Thai).

Des visites guidées de plusieurs jours peuvent être réservé pour partir à la découverte de ce lac préservé et aussi jusqu’au sommet. Senaru est le point de départ pour grimper le volcan. Des chemins plus courts passent par Sembalun Bumbung & Sembalun Lawang.

De nombreux hôtels de luxe et hébergements de moyenne gamme s’y trouvent, ce qui en fait un bon endroit pour séjourner, manger, sortir le soir et explorer le reste de l’île. Les gens sont extrêmement amicaux, la nourriture est délicieuse et le meilleur : les vendeurs de plages ne sont pas du tout insistants. En fait ils offrent surtout l’occasion d’une intéressante papote. Senggigi a un rythme tranquille, détendu. Des excursions quotidiennes s’organisent facilement vers les centres d’intérêt situés à quelques heures de route du village principal. Les activités sont également centrées autour des plages.

Les plages de Malimbu & Nipah Malimbu et Nipah sont deux baies situées à moins d’une demi-heure de l’attractive Senggigi. Voilà deux excellents sites pour trouver la tranquillité et faire du snorkeling. En chemin, Malimbu Hill 1 & 2 offrent une vue magnifique sur les deux plages et sur les trois Gili Islands. Elles sont définitivement à voir.

Two bays located almost less than half an hour from the attractive Senggigi are Malimbu and Nipah. These are excellent peace spots and also best options for snorkeling. On the way, Malimbu Hill 1 & 2 offer a great view over the two beaches and the three Gilli Islands. These are definitely worth-seeing!

Kuta Située sur la côte sud-est, Kuta est réputée pour ses plages et son surf, spécialement pour les voyageurs qui veulent bronzer. C’est le site touristique numéro deux après Senggigi avec de nombreuses options d’hébergements et de restaurants. Elle est située à une heure et demie de route de Senggigi. Kuta beach vaut le détour. Sa magnifique plage de sable blanc est un trésor si vous êtes un explorateur de la mer. De plus, à partir de là vous pouvez aussi explorer les plages de Tanjung Aan, Selong Belanak et Mawun qui sont très proches de Kuta. Allons-y ! Located on the south-coast, Kuta is famous for beaches and surfing especially for travelers looking for getting tanned. You can call it the second-best tourist spot after Senggigi with a lot of accommodation options and eat-out places. It is located at one and a half hour’s drive from Senggigi. Mosquées Lombok est essentiellement musulmane et on peut y voir partout des mosquées. Si vous êtes musulman et que vous cherchez à vous loger, vous pouvez facilement trouver près d’une mosquée. Elles sont une vision merveilleuse, avec leur belle architecture. N’oubliez pas d’en visiter une même si vous êtes un touriste non-musulman ! Lombok is mainly Muslim intense and therefore mosques can be seen everywhere. If you are a Muslim and looking for an accommodation, you can easily find one near a Mosque. They are a marvelous sight with wonderful architecture. Don’t forget to visit one even if you’re a non-Muslim tourist!

A Lombok, vous trouverez d’innombrables chutes d’eau. La plupart sont situées dans la partie nord de Lombok. Parmi les plus populaires sont Tiu Kelep et Tiu Teja. Temples Hindous

La plupart des temples sont situés dans la partie ouest de Lombok autour de Senggigi ou Cakranegara. Les plus populaires sont Pura Meru, Pura Mayara et Pura Jagatnatha. Pour les Balinais, Pura Meru est un temple important. Son festival annuel “Pujawali” qui se tient en septembre/octobre pendant une pleine lune marque son importance et est le plus gros événement de l’île. Pura Mayura est situé près de Pura Meru, de l’autre côté de la rue. C’est un temple intéressant situé à l’arrière du lac sous d’énormes arbres centenaires. C’est un endroit paisible, idéal pour s’échapper des frénésies de la ville proche.

Cocotte a la cote

ien plus qu’une simple rôtisserie, Cocotte est la rencontre de produits fermiers organiques soigneusement sélectionnés avec une atmosphère “rurale chic” que l’on qualifierait aisément de “bobo” en France. Sophistiqué, mais sans chichi, chic, mais décontracté, tendance, mais sans en rajouter, Cocotte pourrait bien constituer le nouvel avatar du French paradox en plein cœur de Bangkok. Amicalement guidés par le Chef Jeriko, nous avons pu goûter quelques-uns des plats offerts par un menu limité, mais néanmoins riche : Mushroom lovers (740 bahts : Porcini espuma, champignons braisés, foie gras poêlé), Rouleaux de printemps au fromage (240 bahts avec confiture de fruits artisanale), organic vegetables (360 bahts : légumes de la Royal farm cuisinés avec amour, ricotta et vinaigrette à la truffe), le fameux

truffle cocotte camembert (560 bahts un camembert français traditionnel à la truffe rôti au Kamado Joe BBQ, servi avec pain grillé et salade verte du Royal Farm Project, également à la truffe) ainsi que l’emblématique demi-poulet fermier de 350 grammes, mariné selon la recette spéciale du chef, servi avec un choix de sauces (490 bahts). Tout était absolument délicieux, avec une touche de subtilité sublimant la simplicité.

Le chef, primé et talentueux, dirige avec habileté cette expérience culinaire, insufflant une audacieuse créativité dans les saveurs traditionnelles des produits fermiers locaux. Jeriko Van Der Wolf a rejoint le cercle des plus grands chefs bangkokiens depuis son arrivée en Thaïlande en 2015. Elu “Best French Apprentice” en 2011, il a récemment participé à Iron Chef Thailand contre rien moins que Chef Ian. Jeriko, qui a désormais 23 ans, a commencé sa carrière très jeune : à 18 ans il travaillait déjà avec des chefs de renom dans des

restaurants étoilés Michelin. De l’Atelier de Joël Robuchon au trois étoiles Régis et Jacques Marcon, Jeriko y a acquis un véritable bagage gastronomique dont on ressent les traces chez Cocotte. Son talent s’exprime notamment à travers le choix des meilleurs ingrédients et une savante sélection des meilleurs produits locaux, dans une combinaison harmonieuse de classique et de modernité. La simplicité constitue l’un des fondamentaux de son approche de la cuisine et Jeriko aime à citer le grand Curnonsky “En cuisine, comme dans tous les arts, la simplicité est la marque de la perfection”. Considéré comme l’un des jeunes chefs les plus doués de Thaïlande, il s’efforce chaque jour d’être fidèle à sa réputation, sans cesse à la recherche des meilleurs produits, que ça soit dans sa cuisine de Bangkok ou au plus profond des campagnes de Chiang Mai. Perfectionniste autant que passionné, Jeriko propose un style de cuisine offrant

un judicieux retour aux fondamentaux de la cuisine qu’il apprécie lui-même : « Vous savez, depuis ma plus tendre enfance, j’ai toujours été un fan de poulet rôti. A tel point que j’ai failli m’en faire tatouer un sur le bras ! » Et pour les végés, t’as rien ? Si Cocotte met surtout en avant son demi-poulet fermier, le restaurant est également “vegetarian friendly” avec d’un côté un large assortiment de fromages, dont le camembert fondu au barbecue et fourré à la truffe qui est une merveille, ou encore les spring-rolls au fromage. De la truffe que l’on retrouve aussi dans les salades de légumes pour une saveur originale. VEGAN FRIENDLY If Cocotte is putting the emphasis on its half farmer chicken, the restaurant can also be considered “veggie friendly” with for example a large assortment of cheeses, among which the delicious

Cheese Spring Rolls or the Traditional French Camembert cooked in Kamado Joe BBQ with truffle, which is a marvel. The same truffle can be found in the vegetables salad giving an original flavor. NAUTISME

hilippe Joubin est venu à Phuket en déplacement professionnel. Il avait groupé plusieurs reportages en Thaïlande : un à Koh Samui, puis deux à Phuket, un reportage découvertecroisière de la zone de navigation à la voile pour les lecteurs de Voiles et Voiliers et un autre à la recherche d’un voilier de légende, le Phocéa, ancien bateau de Bernard Tapie et du navigateur mythique Alain Colas. Est-ce votre première fois à Phuket ? En Thaïlande ? Non, ça n’était pas ma première visite en Thaïlande, j’étais déjà venu à Bangkok au gré de reportages précédents, mais la première fois à Phuket, en effet. Quels étaient vos a priori avant de venir ? Forcément il y a tellement d’images liées à Phuket qu’on a des a priori. Le cadre d’abord qu’on imagine idyllique ; on l’idéalise un peu comme une carte postale absolue des mers du sud et des îles. Les images moins drôles ensuite, liées au tourisme sexuel et à ses dérives. Le développement anarchique du tourisme qui fait un peu peur. Enfin, bien sûr, les traces du tsunami et la gestion des suites de celui-ci. Vos premières impressions ? Excellentes. D’abord comme tout le monde je suis sous le charme de la gentillesse et de l’accueil des Thaïlandais. Quel plaisir de voir des gens souriants en permanence. Ensuite le cadre est superbe en effet même si je ne suis pas venu à la meilleure saison... Et puis il faut savoir où on va. Bien choisir en fonction de son programme et de ses centres d’intérêt. Il y a du tri à faire. Enfin, je ne me lasse pas de la cuisine thaïlandaise… Mais je n’ai pas eu assez de temps sur Phuket elle-même pour aller au-delà des premières impressions. J’aime visiter, prendre le temps, arpenter, me balader, découvrir. Je n’ai pas eu assez de temps à moi pour cela. Vous avez fait une croisière. Raconteznous un peu (quel bateau, quel itinéraire, combien de temps…) Grâce à Sunsail, j’ai pu disposer d’un

Regard voilier catamaran de 44 pieds en parfait état et superbement équipé et entretenu. Nous avons fait un très grand tour avec mes équipiers en montant au nord dans la baie de Phang Nga jusqu’à James Bond Island – sans grand intérêt – puis en descendant jusqu’au sud à Koh Lanta et la sublime Koh Rock. Les conditions étaient très diversifiées : grand soleil et peu de vent ou de la brise – jusqu’à 25 nœuds - avec un ciel gris et plombé. Ce plan d’eau est superbe : beaucoup d’escales possibles ; plein de belles rencontres et une mer toujours chaude, limoneuse et peu claire au nord, de bleus et de verts superbes au sud. Enfin il y a les orages nocturnes lorsqu’on est à l’ancre : mieux vaut les supporter ! Quels ont été les points forts ? Des déceptions ? Les points forts : des décors somptueux, une mer chaude, une zone de navigation très facile (peu de courants de marée contrairement à ma chère Bretagne) qui permet d’envisager de faire beaucoup de mer comme nous avons fait, de belles rencontres, des restaurants et des bars de plages

géniaux, des balades idéales quand on arrive dans les îles… tôt ou tard soit hors de l’afflux. Les points faibles : la pollution. La mer est sale, très sale. Les plages sont à l’avenant : on arrive sur une plage paradisiaque, cocotiers, sables fins, mer turquoise et on tombe sur des déchets en pagaille... à côté de panneaux détruits qui demandent d’y faire attention. Quel dommage qu’il n’y ait pas de respect. Je pense que les Thaïlandais doivent y veiller grandement : les touristes occidentaux y sont très sensibles. Un vrai point noir. Et puis des zones surfréquentées comme Maya Bay sur Koh Phi Phi Ley. C’est absolument ridicule de voir ces milliers de touristes charriés par des speed boats venir tout juste fouler le sable et repartir après avoir jeté leurs déchets ! Il y a un vrai travail de préservation de l’environnement, d’éducation et de gestion du tourisme de masse à faire. Et je suis mitigé sur le snorkeling : pas mal, mais pas aussi beau que je l’espérais… Qu’avez-vous pensé de la zone de navigation ? Superbe, facile. Idéale ! Aventurier, le mot est fort, car ce n’est pas l’aventure… Pas plus qu’aux îles Vierges, aux Grenadines ou aux Seychelles. Is it your first visit in Phuket? In Thailand? No, it was not my first visit to Thailand. I had stayed in Bangkok during my previous journalistic trips, but it’s my first time in Phuket, indeed. What were your a priori impressions before coming? Inevitably, there are so many images related to Phuket that we have a priori. First, there are the idyllic images; we idealize a bit, like an absolute postcard, the South Sea and islands. The least funny pictures were linked to sex tourism and its excesses. charmed by the kindness and hospitality of people in Thailand. What a pleasure to see people always smiling! The setting is indeed superb, even if I didn’t come during the best time of the year. And then, we must know where we are going. Choose according to your schedule and interests. There are many choices to make. Finally, I can’t ever get tired of Thai food… But I did not have enough time in Phuket itself to go beyond first impressions. When I visit a place, I like to take my time, at a slow pace, wandering, discovering. I have not had enough time for myself to do that this time. You made a cruise. Tell us a bit (which boat, which route, how long…) Using Sunsail services, I could have a 44-foot catamaran in perfect condition and superbly equipped and maintained. We made a great tour with my teammates riding North in Phang Nga Bay to James Bond Island (wasn’t very interesting), then down South to Koh Lanta and the sublime Koh Rock. The weather conditions were diverse: bright sunshine and little wind or breeze – up to 25 knots – with a grey, leaden sky. This water area is superb: many possible stops, full of beautiful encounters and always warm sea, muddy and unclear North, great blue and green South. Finally, there are the nocturnal storms when you have to anchor - better withstand them!

What were the highlights? Disappointments? Highlights: lavish landscapes, warm sea, a very easy navigation area (few tidal currents, unlike my dear Britain) which allows us to consider doing a lot of sailing, as we did; beautiful encounters, restaurants and awesome beach bars, ideal rides when you arrive in the islands… sooner or later the influx will be over. Weaknesses: pollution. The sea is dirty, very dirty. The beaches are inviting: you arrive on an idyllic beach, with coconut trees, fine sand, turquoise sea and you fall on waste galore… next to destroyed signs asking to pay attention to it. What a pity that there is no respect for the environment. I think Thais should pay more attention to this: Western tourists are very sensitive to such issues, a true black point. And there’s the highly congested areas like Maya Bay on Koh Phi Phi Le. It is absolutely ridiculous to see thousands of tourists carried by the speed boats who come just to walk on the sand and leave after throwing their waste! There is real work to do in regards to environmental preservation, education and advising the large number of tourists about how to behave. I have mixed feelings about snorkelling: it’s not bad, but not as nice as I expected… What did you think of the navigation area?

Beautiful, easy. Perfect! I advise to all those who want to sail in a paradise surrounded by such charming people to experience it… But again, we must also choose the route according to their interests; it must not be spoiled by the pollution. And this could go very fast. Phuket is playing with fire; in Koh Samui and the surrounding area, it was much better in this regard. Will you come back? Oh yes, of course. First during another season to explore areas inaccessible during the summer weather. I want to return soon, I admit. The golf courses of the island called my name, as I love to play golf… I really want to discover and enrol in a Thai cooking course! Why not, maybe become a journalist for Paris Phuket or Paris Bangkok? (Laughs) Do you have any advice for future adventurers? “Adventurer”; the word is strong, because it is not an adventure… not more than the Virgin Islands, the Grenadines or the Seychelles. I would say to be careful when to come, especially on many still developing its routes, and visit according to your interests. THE STORY OF SCOMADI The very first model that was put into mass production was a 50 cc; this was then swiftly superseded by the 125 cc. Cela s’explique par une composition chimique différente, les pleurs d’émotion contenant plus de protéines, d’hormones et d’autres molécules ayant un effet sur le corps.

LARMES BIENFAISANTES ET LARMES AMÈRES Les pleurs d’émotion sont en général bienfaisants : ils contiennent alors de la leucine encéphalique, une hormone qui agit sur la douleur, ainsi que les molécules et les toxines du stress, qui sont ainsi évacuées du corps. Par ailleurs, le message nerveux qui provoque les larmes entraîne la

production d’antalgiques (antidouleurs) naturels. Une étude a calculé que pleurer diminuait la tristesse ou la colère de 40 % environ.

Cela explique beaucoup de choses... Une amoureuse éperdue qui fond en larme dans les bras d’un homme va déclencher chez lui de la tendresse bien sûr, l’envie de la protéger et de la réconforter sans doute, mais ces larmes vont aussi le détourner pour un temps de ses idées sexuelles s’il en avait (et c’est presque toujours le cas).

Personne ne sait vraiment pourquoi nous pleurons, mais une hypothèse intéressante, avancée par le psychologue hollandais Ad Vingerhoets, est que, en nous brouillant la vue, nos larmes signalent que nous sommes provisoirement impuissants et donc vulnérables. Elles indiquent que nous ne pouvons plus causer de mal. Elles peuvent ainsi faire tomber l’agressivité des autres, devenue inutile. Et c’est ce que l’on constate souvent, les pleurs provoquant sur l’entourage un sentiment de gêne et d’impuissance. Les larmes sont aussi un des moyens de communication non verbale dont dispose l’Homme quand il n’est pas en état de parler, notamment quand il est enfant ou vieillard, mais aussi en cas de paralysie. Toujours selon Vingerhoets, dans l’état primitif de l’homme, alors qu’il devait se préserver des prédateurs, les larmes permettaient aux bébés de signaler leurs besoins en silence (mais en ce qui me concerne, j’ai rarement vu un bébé pleurer en silence !).

LARMES DE CROCODILE

Pleurer est normalement un acte réflexe, mais il existe deux catégories de personnes capables de pleurer à la demande :  Certains comédiens : la technique consiste à penser volontairement à des choses tristes pour se donner envie de pleurer. Le psychiatre John Bowlby a souligné que les larmes ont un rôle capital pour développer l’attachement d’une mère pour son enfant. Elles favorisent la naissance, et la croissance, de l’amour maternel.

Il arrive aussi que les femmes pleurent après une intense étreinte. Ces larmes envoient un signal chimique à l’homme pour faire retomber son énergie, autrement dit lui dire : « c’est bon maintenant, tu peux me laisser tranquille ! », en coupant sa production de testostérone. La nature est d’ailleurs bien faite puisque, loin de se vexer, l’homme se sent en général tout guilleret et flatté par ce qu’il interprète, bien naïvement, comme des larmes de reconnaissance...

THE ORIGIN OF TEARS

After delivery, prolactin rate still rises, which explains that new mothers can easily fall down in tears. However, the prolactin decreases after 40 and women then stop crying more than men.

No one really knows why we cry, but an interesting hypothesis, proposed by Dutch psychologist Ad Vingerhoets, is that, by blurring our sight, our tears signal that we are temporarily helpless and hence vulnerable. They indicate that we can no longer cause harm and then drop others’ aggressivity, becoming useless. That is what we often observe: tears provoking within the entourage a feeling of unease and helplessness.

BENEFICIAL OR BITTER TEARS Emotional tears are generally beneficial: they contain Leu-enkephalins, a hormone which has an effect on pain, as well as stress molecules and toxins, thus expelled from the body. Moreover, the nerve messages provoking tears also trigger natural pain killers production. A recent study has concluded that crying decreases sadness or anger by around 40 %. Every emotional tears don’t bring solace though. A study conducted on 200 women in the Netherlands has shown that people suffering from depression or anxiety feel even worse after crying.

This is explained by a different chemical composition, emotional tears containing more proteins, hormones and other molecules showing an effect on body.

Tears are also non-verbal means of communication that can be used when not in shape to talk, more so when a child or an old man or when paralysed. According to Vingerhoets, in the primitive state of mankind, when humans had to protect themselves from predators, tears would allow babies to signal their needs in silence (although, as for me, I have never seen a baby crying in silence!).

Nevertheless, tears from a woman also have the particularity to catch men in their momentum. It has been scientifically proved: researchers has asked men to smell women’s tears. They have then showed them arousing pictures. They figured out that they were less stimulated than other men. Actually, women’s tears decrease men’s testosterone rates.

Crying is usually a reflex action, but there are two categories of people able to cry on demand:  Actors: the trick consists in voluntarily thinking about sad things in order to cry. These are then real emotional tears coming from their eyes, together with deep feelings of sorrow.  Children: a lot of kids are able to start crying in the sole order to obtain some favour from their parents, like one more merry-go-round, barbapapa, or else to avoid a punishment after a perfectly conscious and willing bad behavior. This interesting phenomenon can be seen among teenagers who are not keen on doing homework or dress the table. They are able to break into an unbelievable flow of tears to obtain that their father does the math problem. To your health!
