Holiday Season Ideas As we come to the end of 2021, many families may have to get creative to adapt their celebrations this holiday season. This is a time to fill with memories, joy, and happiness. As you continue to social distance, there are some great ways to stay connected to your friends and family and celebrate a wonderful holiday season! Start planning your shopping now! Almost all your shopping for gifts can be done on-line and shipped directly to your friends and family! Some companies like Amazon even offer gift wrapping services. Start planning your virtual gatherings and utilize platforms like Zoom to stay connected to friends and family! Create a fun theme to dress up to like Ugly Sweater, Winter Wonderland, or Your Favorite Holiday Characters. Create some fun games that are easy to do virtually: l l l l l
Holiday Themed Charades Holiday Movie Trivia Holiday Pictionary Relay Holiday Scavenger Hunt Have everyone make their favorite holiday drink and snacks and exchange the recipes l Build a playlist and host a singalong to your favorite holiday songs l Enjoy time as a family with baking and cooking that involves the kids. You can even create a new recipe as a family to enjoy years to come. l Enjoy your community by driving around at night to take in the holiday lights! Living Green During the Holidays l Use real dishes and flatware instead of serving food on paper or styrofoam at holiday parties. If there aren’t enough to go around, use recycled paper products or use plastic plates and cups, which can be washed and used many times. l Send an e-card with a photo of your family and a holiday wish, or e-vite if you’re hosting a party (this saves paper and postage). l Reduce wrapping by making it a part of the gift. Put presents in baskets, terra cotta garden pots or a reusable shopping bag. l Use LED lights instead of conventional lights. l Look for gifts with an environmental message: refillable thermos, a nature book, items made from recycled materials or products with rechargeable batteries.

Holidays The Perfect Pie For The Holidays
Perfect Holiday Pie Recipes & 13 Top Tips For Success -Imperial Sugar-
Whether you’re planning a small, informal gathering or a large and fancy Holiday soirée, you’ll want to end the event with something sweet. Homemade pies are a treat and often easier to make than you think. We have the perfect holiday pie recipes and professional tips and tricks for success. l Start with the right pan. Use a metal/aluminum pan like the professionals do. They may not be the prettiest pie plates in the bunch, but they conduct heat faster and better than anything else and will ensure the best baked-through bottom. l Want a flaky pie crust? Use cold butter in your crust recipe. As the butter melts while baking, pockets of steam are created in the flour. Steam releases and a flaky crust is created. l Sift your dry ingredients. This breaks up clumps and adds volume for a lighter crust. Use the “spoon and sweep” method: gently spoon the flour into a measuring cup and level off the top instead of dipping the measuring cup into the flour package. If your recipe calls for 1 cup sifted flour, make sure you sift the flour before measuring. If the recipe calls for 1 cup flour, sifted – this means you sift the flour after measuring. l Go slow. Lower the pie crust dough into the pan carefully without forcing it into the corners. l Finish your crust. To create a pretty edge to your pie crust, you can press along the rim with a fork or use your finger and thumb to create a scalloped edge. l Pre-bake the crust when necessary. Pre-baking is baking your pie dough prior to adding the filling. This is important for moist cream pie recipes and cooked fruit recipes like apple pie. However, when you use raw fruit mixed with sugar, there’s no need to pre-bake. For more information about pre-baking pie crust, check out this blog post. l Use pie weights (small ceramic balls) when pre-baking. Pie weights are used to help the dough hold its shape, allowing it to stay firmly against the pie plate. l Gloss it up to prevent sogginess. Once the pie weights have been removed, brush the top of unbaked crusts with beaten egg, which creates a shiny gloss. Proteins in the egg forms a shield on the crust so the wet filling doesn’t get the crust soggy. l All fruits contain a different amount of water and natural sugars. To thicken pies, each particular fruit will need a certain amount of thickening agent (flour, cornstarch, tapioca). Substituting is not recommended as the baked filling may become too runny or too gelatinous. l Placing is everything. If baking in a conventional oven, place pies slightly below the middle rack so crust will bake better. Placing it too high will burn the crust before the filling is done.

Holidays Continued l Mind your pecans. Pecan pies are essentially custards and should be baked in a low-temperature oven. The ratio of eggs to sugars and/or corn syrup to butter determines moisture and chewiness. Crunchiness is obtained by using an abundance of pecans so some of them will peak out of the custard and bake to a crisp state. l Pay close attention to baking times. Your pie filling should bubble slightly and the center of your pie should no longer tremble when you move your pie plate back and forth. l Stay cool. Heed the cooling time indicated in your specific recipe. You can serve an apple pie soon after it’s baked, but pumpkin or pecan pies must be cooled.

Seasonal Reminders Holiday Decorations Friendly reminders of important tips and dates:
After the holidays when its time to take down the family Christmas tree, LeMay offers free Christmas tree removal. Here are important tips for tree pick up and disposal. Christmas tree pickup will occur: Dec 27th - Dec 31st If you choose to leave your tree up after the 4th of January, JBLM recycle centers located on Lewis and McChord will accept your tree. You will see two trucks in the communities on your schedule trash day. One truck will be performing normal trash removal, the second will be picking up any trees left on the curb. Please follow these guidelines to have your tree removed by LeMay. l Only real trees will be removed by LeMay tree removal. l Trees need to be unflocked. l Trees must be cut down to 4ft sections and no bigger than 4” in diameter. l Trees must be free of tinsel, ornaments and decorations.
During the holidays LeMay will be closed on Thanksgiving and Christmas. All trash service will be pushed one day to accommodate their holiday schedule.

Greening your Holidays –Single Use Coffee Cups are not Recyclable By Erika Larson, DPW Environmental Outreach
Now that it is getting close to the holidays, coffee shops, and fast food restaurants are updating their menus to include holiday specials and cold weather drinks. It’s confusing to determine if the drink cups should be recycled or tossed in the garbage. Single-use cups may look like they are made out of recyclable materials, but most single-use cups contain petroleum based products such as Styrofoam or polyethylene (plastic) coated paper. Even, the plastic cold drink cup is trash, and is not recyclable. After finishing your drink, your cup is a soiled item, and cannot be recycled since it can contaminate other recyclable items with the left over liquid residue in the cups. While some of these cups indicate they are recyclable, they still need to go through an intensive and complex treatment process to remove the thin plastic coating. This coating serves two purposes. It allows the cups to be waterproof and it helps protect your hands from hot or cold liquids. So what should you do with single use cups? Toss in the trash! According to the Pierce County and Joint Base Lewis-McChord recycling guidelines, these cups should be disposed of in the garbage. These petroleum based single-use cups can take around 450 years to degrade (if they are identified as biodegradable), and plastic lined cups can take around 30 years to decompose. Not only do they take a long time to break down, as they degrade, they release carbon dioxide and methane, which are the two most abundant greenhouse gas emissions. Next time bring a reusable cup or mug when you visit your favorite coffee shop or fast food places. You may even get a discount for bringing in a reusable coffee cup.
