No relief in sight as flu kills 106

It’s not a pandemic yet, but 106 South Carolinians died this year from the flu.

The Department of Health and Environmental Control said 22 deaths this month shows a decline, but they

think the flu is far from subsiding this year.

Although vaccine supplies are reportedly running low, they advise the public to get a flu shot if they have not.

DHEC reported 81,071 cases of the flu in South Carolina so far.

The hardest hit was Greenville County with

more than 3,000 cases.

Influenza A was the most common strain.

The Centers for Disease Control and Prevention reported 53 children have died from influenza.

DHEC reported a Midlands child died from flu complications but did not say in which community.

Lake Murray Fishing Report Lake Murray water levels are at 353.88 (full pool is 360.00), and water temperatures range from 49 at the dam to the mid-40s around Buffalo Creek to the low 40s in the river.

Most of the lake has pretty good visibility.

There have been some pretty good bags of bass weighed in recent tournaments, but veteran tournament angler Captain Doug Lown reports that with very low temperatures fish will be caught in some particular patterns.

Jerkbaits and Alabama rigs are good options with water temperatures in the 40s, and you can also catch some fish on the bottom with a shakey head.

However, these are likely to be smaller keepers.

Jigging spoons are also in play right now, particularly in areas where you find bait balls in about 25-30 feet of water.

45-degree banks are good places to look, as these steep banks allow fish deep water access without having to go too far.

It’s worth noting that winter fish on Murray are

as likely to pull out to deeper water and suspend as to get on the bottom.

In some years there is a window early in the morning in the winter when fish will still come shallow to feed, which usually lasts for about two hours.

This seems to be because at night bait will pull up shallow to feed, but once the sun comes up it will head out to deeper water.

When this takes place a crankbait can be a good option.

There are also reports that some good fish have been caught on Rattle Traps.

On the striped bass front, Captain Ron Davis Jr. (843-513-0143) reports that schooling activity has dropped off with a high percentage of the very small shad that gulls feed on dead after the very cold weather in the last few weeks.

Hearty gizzard shad are resilient, though, and anglers can troll umbrella rigs with baits in the 3-4 inch range that imitate smaller gizzard shad to catch numbers of fish.

Winter Sports Corner Gray Collegiate, Swansea players receive high honors for 2nd consecutive year

Gray Collegiate Academy guard Juwan Gary, Swansea guard Danae McNeal were repeat recipients of the S.C. Basketball Coaches Association’s Player of the Year Awards.

Meanwhile, Batesburg-Leesville’s Mylaysia Gates was a first-time recipient of the Class 2A Girls’ Player of the Year.

She shared the honor with Saluda’s Star Ergle.

Gary earned Class 2A Boys’ Player of the Year and he, BrooklandCayce’s Dominique Perry and Swansea’s Effix Miller were the lone Lexington County players selected to the All-State teams. Perry and Miller made the Class 3A team.

McNeal was named the Class 3A Girls’ Player of the Year for the second straight year.

In Class 5A girls, Lexington’s Olivia Thompson and White Knoll’s Yamia Johnson were named to the All-State team.

Local teacher leads pack for cure

Holocaust survivor shares her story with GMS

A historic visitor to Gilbert Middle School shared her deeply personal story with students and staff. In return, they showed their appreciation with original writings and music.

Marion Blumenthal Lazan, author of “Four Perfect Pebbles: A Holocaust Story,” visited GMS in January, speaking about the importance of hope, courage and compassion. Students and staff sat in rapt attention as they heard firsthand from a woman who was witness to and a survivor of events during the Holocaust.

Inspired by losing a student to cancer, Blackwell became a volunteer coach for CureSearch’s Ultimate Hike.

This spring, he will train a team to trek 28.3 miles of the beautiful, but challenging Foothills Trail in one day to raise money to end children’s cancer.

Like most people, Blackwell has personally felt the impact of cancer, having lost both his father and brother. Unfortunately, he’s seen children’s cancer and how it can change a family as well.

A few months before his first Ultimate Hike, a former student lost her battle.

Inspired by his student and the challenge of a long trek and raising funds, Blackwell signed up for his first Hike in 2013 at age 58.

He quickly discovered that the miles and the fundraising were not a problem, raising more than any other Hiker that year. CureSearch staff took note of his calm demeanor and ease on the trail as well.

Blackwell has a natural ability to identify people who might be struggling and help reach their goals. Based on those qualities, CureSearch staff asked Blackwell to become Columbia’s coach.

Since 2013, Blackwell has traveled across the country to assist CureSearch with hikes. The Foothills Trail Hike will be his 10th Ultimate Hike and he’s not showing any signs of stopping.

Hearty, wholesome, healthy: A bowlful of comfort on a chilly day

M

any kids dislike soft vegetables, the kind usually found in stew.

If you're having trouble getting your children to eat stew, try this saucy beef recipe — adapted from the wonderful cookbook "Real Food for Healthy Kids: 200-Plus Easy, Wholesome Recipes" by Tracey Seaman and Tanya Wenman Steel.

Tracey's teenage daughter said, "This is the only stew I really like, because it doesn't have any mushy vegetables. I like my carrots crisp."

This rendition is made without carrots or potatoes so you can serve it — with its thick, rich gravy — over a mash of potatoes and parsnips, or a mound of fluffy rice.

Add a side dish of crisp vegetables, or a salad, and serve it with some hot, crusty French bread, and you've got a meal that will please the pickiest eater.

If you're fortunate enough to have leftovers, you can stretch out the servings and transform your stew into French Dip sandwiches.

Shred any remaining cubes of stew beef and re-heat the meat and any leftover sauce in the microwave for 2 to 3 minutes until warm.

Pour the sauce into a separate serving dish.

Sprinkle some shredded Parmesan cheese on a whole-wheat hamburger bun or hot-dog bun, or a sliced hoagie roll.

Place the bread on a cookie sheet under a broiler or in a toaster oven until the cheese starts to melt.

Pile the shredded beef on the bread and add a few dill pickles or slices of purple onion, if desired. You can serve the remaining sauce on the side for dipping, "au jus" style.

This recipe is perfect for a crockpot or for slow-cooking in a roasting pan in the oven. It also freezes well and can last for up to six months.

This saucy beef stew is a bowlful of comfort on a cold day, or it makes a hearty sandwich for supper on a warm one.

Saucy beef stew

• ½ cup unbleached all-purpose flour • 1 quart low-sodium beef broth • 2 cups filtered water • 2 tablespoons red wine vinegar • 1 tablespoon tomato paste • 2 sprigs each fresh rosemary and thyme (or 1 teaspoon each dried)

If you're planning to prepare this stew in a slow cooker, follow steps one and two and then place the meat and the sauce in a crockpot, add the fresh or dried rosemary and thyme, cover and cook on low for 7 hours or until tender. Remove the sprigs of fresh herbs (if used), and season to taste before serving.

• ¼ cup extra-virgin olive oil • 5 pounds lean beef chuck, cut into 1to 2-inch cubes • Kosher salt and freshly ground black pepper • 3 extra-large onions, finely diced • 5 garlic cloves, smashed and peeled

1. Heat 1 tablespoon of the oil in a 6-to 8-quart heavy Dutch oven over medium heat. Add a third of the beef, season lightly with salt and pepper, and cook, turning infrequently, until browned, about 8 minutes.

Transfer to a plate and repeat with oil and the remaining beef and more salt in two batches.

2. Add the last tablespoon of oil, and the onions and garlic to

the pot; cook, stirring occasionally, until softened, about 6 minutes. Sprinkle the flour on top and cook, stirring constantly until thick and lightly browned, about 2 minutes. Whisk in the broth, water, vinegar and tomato paste.

Bring mixture to a boil.

3. Return meat to the pan, add rosemary and thyme, and return to a boil, stirring occasionally. Reduce heat to medium-low, cover and simmer gently, stirring occasionally, for 1 1/2 hours.

4. Uncover pot and continue simmering for up to 30 minutes more, until the meat is nicely tender but still holds its shape. Remove the sprigs and season to taste before serving. Makes about 3 quarts.

Wartime rations and culinary creativity in the good ole days

W

artime bread, Victory flour, vegetable turnovers, eggless Christmas cake, trench stew, and sugarless sweets are a part of the culinary history of our nation during World Wars I & II. War affected how civilians lived and ate.

The conservation and distribution of food supplies was managed in a whole different way during war times so soldiers could be fed.

In the Revolutionary and Civil Wars, citizens donated food, clothing and other supplies to the army.

Since the nation was mostly farmers, they grew, raised and produced their own food.

Not much changed unless you were in the unfortunate path of Sherman’s army, which burned your house, stole your money and food, took farm animals and left the family with almost nothing.

Rationing what food the Union soldiers left behind was a matter of survival until springtime gardens could be planted.

During World War I, the U.S. Food Administration encouraged patriotism and sacrifice on the home front.

Rationing became a national duty and patriotic obligation so they could have an active roll in attaining victory, and feed hungry soldiers oversees. Americans were told to limit portions, and have meatless and wheat-less meals.

“Victory Gardens” were planted all across the nation to add to local supplies of food for those on the home front.

It was estimated that “soldiers of the soil” planted around 5.25 million gardens in the U.S. Ration stamps from World War II are now found in a few museums or in grandma’s old papers.

ookbooks were written with wartime rationing in mind. Here are a few of the recipes:

ECONOMY LOAF (from the Modern Hostess Cookbook) • 6 tablespoons butter • ½ cup dry bread crumbs • 1 cup cooked fresh or canned peas • 1 cup mashed potatoes • ¼ teaspoon salt • 1/8 teaspoon pepper • 1/8 teaspoon nutmeg • 2 tablespoons flour • ½ cup milk • 2 hard-cooked eggs • 1 can condensed tomato soup

During World War I & II, Americans were asked to help their soldiers by rationing

During the 1940’s, ration stamps issued to families included sugar, coffee, meat, cheese, fats, canned fish, canned milk and gas. Creative mothers had to reinvent and tweak recipes to feed their hungry families.

Creative cooks crafted recipes and made sweets without sugar, meals without meat, and bread and pancakes without wheat. Phrases were coined to promote, “meatless Tuesdays” and “Wheat-free Wednesdays.”

Of course, if you had a farm, you made your own

certain foods. During that time, cooks got a bit creative in the kitchen.

There is something to be said for being self sufficient, and growing your own food, and how to grow a garden.

Today houses on postage stamp lots do not allow room to garden, much less a yard to enjoy.

Oh, what skills we have lost in this day and age!

Our ancestors would cringe at the thought of what we cannot do.

Margaret Jayroe, 91 years old, said, “We had

enough food. We grew our own sorghum and sugar cane for syrup, and planted our own wheat and ground it in in our mills.

“We had everything we needed, but money.”

Top with slices of hardcooked egg; add remaining potato mixture.

Bake in moderate oven (350°F) 25 minutes or until set.

Unmold, garnish with additional egg slices, or with broiled bacon, if desired.

Serve with tomato sauce made by heating the soup with the remaining 2 tablespoons margarine, adding a pinch of herbs and a little Worchestershire, to taste.

ONE-EGG VICTORY CAKE (from the Royal Baking Powder cookbook)

• 1/3 cup shortening • 2/3 cup sugar • 1 egg, well beaten • ½ teaspoon vanilla extract • 1/3 cup honey Additional seasonings • 1 cup milk Melt 2 tablespoons of butter, • 2 cups cake flower add crumbs, brown slightly, stir• 2 ½ teaspoons Royal Baking ring constantly.

Takeaway Ministries to host women’s event at West Side Baptist

akeaway Ministries is hosting a Women’s event at West Side Baptist Church in West Columbia on Saturday, Feb. 24, from 10 a.m.–1 p.m.

The event will provide a venue for English-speaking women and Spanish-speaking women to come together for worship and the study of God’s word.

Janey Colmorgan, founder of Takeaway Ministries, believes that every woman needs to hear the message of hope from the Scripture.

This is not the first time Takeaway Ministries has teamed with others in ministry.

In 2016 and 2017, along with Pineview Baptist and Rachel Church, Takeaway hosted an “end of school” bash and “back to school” outreaches where they distributed backpacks with necessary school supplies, per grade level.

It’s a Dog’s Life Goldfish Burial Little Tim was in the garden filling in a hole when his neighbor peered over the fence.

Interested in what the cheeky-faced youngster was up to, he politely asked, “What are you up to there, Tim?” “My goldfish died,” replied Tim tearfully, without looking up, “and I’ve just buried him.”

The neighbor was concerned, “That’s an awfully big hole for a goldfish, isn’t it?”

Tim patted down the last heap of earth then replied, “That’s because he’s still inside your cat!”

Ring Bell Passing an office building late one night, a young boy saw a sign that said, “Press bell for night watchman.”

He did so, and after several minutes he heard the watchman clomping down the stairs.

The old, uniformed man proceeded to unlock first one gate, then another, shut down the alarm system, and finally made his way through the revolving door.

Football Confession Years ago, the chaplain of the Notre Dame football team was a beloved old Irish priest.

At confession one day, a football player told the priest that he had acted in an unsportsmanship manner at a recent football game.

“I lost my temper and said some bad words to one of my opponents.”

“Ahhh, that’s a terrible thing for a Notre Dame lad to be doin’,” the priest said.

West Columbia’s ‘Taste on the River’ is Feb. 27

“Taste on the River” is the West Columbia Beautification Foundation’s signature event. This year it is from 6 p.m. until 9 p.m. on Tuesday, Feb. 27, at Stone River in West Columbia.

Melissa Sprouse Browne leads the WCBF and she said “Taste on the River” is one of the most-anticipated events of the year.

“We’re very excited. It was so

much fun last year,” said Sprouse Browne. “We can’t wait for it this year.”

Taste on the River includes a host of local restaurants – presenting the dishes they choose to offerat more than a dozen tasting stations.

“Last year’s Taste on the River was a huge success,” said Kelli Ricard, special events planner for the City of West Columbia. “Great food, great view, and great people, equals great fun.”

And she’s not the only one who says that.

“The food is delicious,” said Bill Mooneyhan, one of the key organizers- with Steve Cohen- of the first Taste on the River, a year ago.

“But it’s more than just food. It’s a chance to come out and spend time with the people of the community that you love to see.

There’s a spirit there that shows who, and what, we are in West Columbia.”

Spouse Browne echoed Mooney-

han’s sentiment.

“We have some very good people in our community,” she said.

“Taste on the River is an opportunity to showcase West Columbia, and show what we’re all about.

“We have 13 restaurants. More than we had last year. And we have room for a couple more,” said Sprouse Browne.

“And we’ll open the pavilion at Stone River this year. It was not open last year during the event.

All proceeds benefit the West

Columbia Beautification Foundation’s efforts.

Tickets are $50, and that includes two drink tickets and event admission. There is a cash bar.

Despite this, the children manage to fill their summer days with enchanting experiences — ice cream-cone money pawned off tourists, a cow pasture presented as an animal exhibit, an abandoned field’s view of the theme park fireworks — fueled by imagination.
