Chuck roast: An untraditional Father’s Day dinner

Father's Day is near, and that means we'll be feeding a crowd and firing up the grill!

My dad and my husband both love beef, so I've decided to do something different for their special day and create a delicious menu that will feed a crowd.

I discovered the versatility of using inexpensive and tough cuts of meat like chuck roast on the grill quite by accident.

I had a roast in the freezer that I needed to cook. I'd never thought about using a cut of meat like a chuck roast in the summer.

A chuck roast — seared in a skillet, placed in a sauce, and then cooked low and slow in an oven — usually was reserved for winter meals.

Chuck roasts come from the muscular shoulder of the cow.

It's the beef equivalent of the pork butt — tough, flavorful, easy to shred and perfect for a large group.

My secret summer weapons for grilling a chuck roast are using a flavorful marinade, and preparing it on the perfect grill.

Spiced Chuck Roast with a side of Grilled Smashed Rosemary Potatoes! It's an inexpensive and flavorful way to feed a crowd!

GRILLED SPICED CHUCK ROAST • 1 (3- to 4-pound, 2-inch thick) chuck roast • 3 tablespoons five-spice powder • ½ cup reduced sodium light soy sauce • ½ cup rice wine vinegar • ½ cup toasted sesame oil • 2 tablespoons fish sauce • 2 tablespoons agave syrup, honey or sugar • 1 tablespoon vegetable oil • 5 slices (nickel-sized), unpeeled ginger • 2 red Thai chilies, sliced, or 2 tablespoons Sriracha • 3 cloves garlic, smashed 1. Rinse meat and pat dry.

Season chuck roast with fivespice powder on both sides.

2. Combine the soy sauce, vinegar, sesame oil, fish sauce, syrup, honey or sugar and oil together in a ziplock plastic bag. Add the meat, ginger, chilies or Sriracha and garlic. Open the bag slightly and squeeze it to remove excess air and to combine the flavors and press them into the meat.

Close the bag and place on a plate or rimmed baking sheet. Let the meat marinade in the refrigerator for 30 minutes or up to 8 hours, turning frequently.

3. Heat gas or charcoal grill.

When grill is heated, remove roast from marinade; reserve and refrigerate marinade.

Place roast on gas grill over medium-low heat, or if using charcoal, place roast 4 to

6 inches away from mediumlow coals. Cover grill. Grill the roast over indirect heat (the cooler zone of the grill) at approximately 250 F for 2 hours.

4. Place two sheets of heavy foil inside of a disposable aluminum pan. Place the roast on the foil and pour the remainder of the marinade over the roast. Double wrap the roast and continue to cook for another two hours or until the core temperature reaches 195 F. 5. Allow the roast to rest for 20 minutes. Slice beef against the grain and serve it with Grilled Smashed Rosemary Potatoes (see recipe below) and any remaining meat juices. Serves 6 to 8.

GRILLED SMASHED ROSEMARY POTATOES • ½ cup olive oil • 2 tablespoons minced garlic • 1 ½ teaspoons chopped fresh rosemary • 2 pounds (1 to 2 inches each) baby Red Bliss potatoes, scrubbed • 1 teaspoon kosher salt ¼ teaspoon freshly ground coarse black pepper 1. Combine the olive oil, garlic and rosemary. Set aside at room temperature for at least 15 minutes to infuse flavors.

2. Place potatoes in microwave and cook on high to 7 to 8 minutes or until tender when pierced with the tip of a knife.

3. Using a towel wrapped around the palm of your hand or a wide spatula, gently smash each potato until the skin breaks, while trying to

keep the potato whole (leaving it about 1 inch thick).

4. Transfer potatoes to a baking sheet. Generously brush both sides of the potatoes with the olive oil mixture, and season both sides with the salt and pepper.

5. Place potatoes on the grill and cook until grill marks

appear and the potatoes are nicely caramelized, 3 to 4 minutes per side.

This guy needs a job and decides to apply at the zoo.

As it happened, their star attraction, a gorilla, had passed away the night before and they had carefully preserved his hide.

They tell this guy that they’ll pay him well if he would dress up in the gorilla’s skin and pretend to be the gorilla so people will keep coming to the zoo.

Well, the guy has his doubts, but he needs the money, so he puts on the skin and goes out into the cage.

The people all cheer to see him. He plays up to the audience and they just eat it up.

This isn’t so bad, he thinks, and he starts really putting on a show, jumping around, beating his chest and roaring, swinging around.

During one acrobatic attempt, though, he loses his balance and crashes through some safety netting, landing square in the middle of the lion cage.

As he lies there stunned, the lion roars. He’s terrified and starts screaming, “Help!”

The lion races over to him, places his paws on his chest and hisses, “Shut up or we’ll both lose our jobs!”

An old dog’s wise advice 1. After your humans give you a bath, don’t let them towel-dry you!

Instead, run to their bed, jump up and dry yourself off on the sheets.

This is especially good if it’s right before your humans bedtime.

2. Act like a convicted

criminal. When the humans come home, put your ears back, tail between your legs, chin down and act as if you have done something really bad.

Then, watch as the humans frantically search the house for the damage they think you have caused.

(Note: This only works when you have done absolutely nothing wrong.)

3. Let the humans teach you a brand new trick. Learn it perfectly.

Then, when the humans try to demonstrate it to someone else, stare blankly back at the humans. Pretend you have no idea what they’re talking about.

4. Make your humans be patient. When you go outside to relieve yourself, sniff around the entire yard as your humans wait. Act as if the spot you choose will ultimately decide the fate of the earth.

5. Draw attention to the human. When out for a walk always pick the busiest, most visible spot to poop.

Take your time and make sure everyone watches.

This works particularly well if your humans have forgotten to bring a plastic bag.

6. When out for a walk, alternate between choking and coughing every time a strange human walks by.

7. Make your own rules.

Don’t always bring back the stick when playing fetch with the humans.

Make them go and chase it once in a while.

8. Hide from your humans.

When your humans come home, don’t greet them at the door.

Instead, hide from them, and make them think some-

thing terrible has happened to you. (Don’t reappear until one of your humans is panicstricken and close to tears).

9. When your human calls you to come back in, always take your time. Walk as slowly as possible back to the door.

10. Wake up 30 minutes before the alarm clock is set to go off and make the humans take you out for your morning pee.

As soon as you get back inside, fall asleep. (Humans can rarely fall back asleep after going outside, this will drive them nuts!)

(PG) — Kids and adults alike will find this to be a surprisingly heartwarming story about community, purpose and the family we choose.

And it’s wrapped up in an eminently kid-friendly LEGO movie.

An evil plot by the Joker ties up all the criminals in Gotham, and the Caped Crusader (voiced perfectly once again by Will Arnett) is forced to quit his terminal solitude, confront his (deeply buried) longing for family and team up with his adopted teenage son and would-be sidekick Robin (voiced in wide-eyed earnest by Michael Cera) to save the day.

in the brutal desert, a sniper (Armie Hammer) and his spotter (Tom Cullen) attempt to ID their target. When it’s clear that the would-be target is part of a wedding ceremony,

the attempt is botched, putting the two men on a path leading straight through a minefield.

While both men trigger mines, the sniper, Mike, is left a prisoner: One foot on the mine, and 52 hours to the earliest evac.

The Lake Murray Fishing Report Lake Murray water levels are at 358.02 (full pool is 360.00), and surface water temperatures are in the mid-70s over much of the lake.

The lake is fairly stained from recent rains.

At times it has been a trying spring for anglers targeting Lake Murray bass, and tournament angler Andy Wicker said that for much of the last month it has looked like the herring spawn might also be a bit of a disappointment for bass fishermen.

However, in the DOT tournament recently on Lake Murray Andy was pleasantly surprised by the bite

that he and his tournament partner found. Practicing “on the water” they caught 17 pounds for third place in the 20-boat event, while the winning team managed a little over 20 pounds.

Andy says that he saw some of the biggest groups of herring he has seen in a while, and on several occasions they saw schools of hundreds of herring swimming across shallow points.

The best action was on the main lake, and they were able to target the fish with typical topwater lures for this time of year as well as flukes.

They couldn’t catch a bass on

swimbaits but managed dozens of striper. In an encouraging sign they caught fish right through the day instead of having the bite die as soon as the sun got up.

Andy suspects that the full moon is accounting for a very strong herring spawn.

In addition to catching striped bass shallow around herring points, Captain Brad Taylor (803-3311354) reports that a bunch of striper are starting to set up in the main lake about 40-50 feet down where they can be caught on down-lined herring.

These fish could be close to the

bottom or at that depth over much deeper water. Early in the morning he is pulling free-lines and planers boards, and there is also some cut bait fishing around main lake humps.

The best pattern is to move baits from the shallower to deeper parts of the humps as the sun gets up.

Crappie are biting pretty well, and Brad reports that they are having the best success fishing in main lake pockets 10-12 feet down over brush in 15-20 feet of water.

On the catfish front, Captain William Attaway (803-924-0857) reports that it’s a good time to fish for channel catfish on Lake Murray.

Right now the best action is around secondary points, humps, and back in coves, with the best depth range 25-35 feet during the day and 1-15 feet at night.

In large part because of boat traffic night fishing is usually better. At night fish will be exploring fallen timber and riprap – the same types of places they will spawn very soon.

While you can catch probably catch bigger fish on cut bait, you have to deal with the gar and turtles and so William’s preferred bait right now is dip bait.

If you remember Lum & Abner’s comic antics on radio, congratulations.

You’ve lived longer than most of your friends.

Lum & Abner weren’t their real names, and their radio show had a longer than 20-year run.

Their real names were Chester Lauck and Norris “Tuffy” Goff, and they entertained millions of Americans with their homespun country humor.

Rather than feeling offended by these two hicks who may have made radio fans think local folks were not quite bright, the natives regarded them highly.

Chet and Tuffy were diligent in saving the recordings of their 5,000 broadcasts. Now, 70 years later, many remain in circulation.

Unlike the topical humor of today’s comedians, the Lum and Abner shows hold up well. They are funny because their humor comes from the foibles of unchanging human nature.

They are similar to the Andy Griffith Mayberry shows which are timeless.

The train depot MacLeod did a little research online from our motel room and found that Lum & Abner are featured in another museum in the train station at Mena.

We easily found it right beside the tracks that run through town. It was built during the passenger train era and is rich in history.

It is home to the Mena Chamber of Commerce, a travel agency and a museum with much of the area’s local history inside. One room showcases Lum & Abner memorabilia.

Mena residents are proud of the depot. It was completely restored in 1987 from donations and many volunteer hours.

Lum & Abner were popular radio humorists portrayed by real folks from Arkansas, Chester Lauck and Norris ‘Tuffy’ Goff.

Castle in the sky As it was near lunch time and the Bellunes aren’t used to missing meals, we asked the volunteer docent at the train depot where he would recommend we eat.

“Are you game for a little adventure?” he asked.

Sure, we were and are.

He gave us directions up the mountain to the Queen Wilhelmina State Park, also known to the local folks as “The Castle in the Sky.” “Now, you might run into a little fog going up the mountain,” he said, “but don’t let that discourage you. Besides, there really is no place to turn

around.”

Outside the depot, we could see fog on the mountain but that wasn’t going to stop us. We have been all over the world, and a little fog is no challenge.

Or so we thought.

Like all mountain roads, this one twisted and turned as we drove through fog so thick at times it was hard to see the road ahead. But we finally made it to the lodge.

Queen Wilhelmina, we learned, is Mena’s crown jewel only 13 miles northwest of town on the Talimena National Scenic Byway.

The lodge was built in 1898

and named in honor of the Queen of the Netherlands, Queen Wilhelmina Helena Pauline Maria because the local railroad was financed by Dutch interests.

The lodge was built of native stone and timber at a cost of $100,000. That would be more than $2.6 million in today’s dollars.

The lodge fell on hard times and its owners abandoned and left it to rot.

In 1963, it was rebuilt, but 10 years later a fire started in the kitchen and destroyed the lodge.

Enter the taxpayers, America’s most reliable source of money.

Arkansas State Parks officials convinced state lawmakers to give them the money, and they rebuilt the lodge.

We went inside and found the place crowded with bikers.

These weren’t the hairy, dirty beer-drinking outlaws you see in movies.

They were somebody’s moms and dads and grandmoms and granddads. They were headed for a bike rally in New Mexico and we stopped and chatted.

Coming to terms with the end of my high school and soccer careers

On May 8, after over 100 minutes of play in the Class 5A girls' soccer Lower State Championship, Wando scored against Lexington in the first golden goal period.

Lexington had been playing a man down for close to 30 minutes after a red card was issued with three minutes left in regulation play. To six of the team’s 23 players, the sound of the ball hitting the back of Lexington’s net in sudden death signified much more than simply the end of another season.

This moment signified the end of a chapter in each of their lives.

I began my career as a varsity soccer player at Lexington High School as a freshman, stepping in as a backup goalkeeper. At that point, there were 12 seniors on the team of 24 players, with only a few fresham.

My three teammates and four-year varsity players graduating this year are Madison Carrier, Gabrielle Carter and Callaway Grady. We all bonded over being the youngest on the team and were joined the next year by Maggie Schopp and Maggie Mahoney.

Over the past four years, these girls have all become more like sisters to me than just teammates. After going through three region championships, 16 playoff appearances, three Lower State Championships and winning a state championship together in 2016, the end of our four years with Lexington Soccer hit us the hardest out of any of our teammates.

Gone were the team bonding trips, pasta parties, latenight bus rides and afternoons spent practicing on the “goat field” that we all called home during the spring. This ended

afternoons of connecting tables at Groucho’s before home games just so we could all sit together as a team.

This was the end of always being able to see the people who had become our family both on and off the field.

What many do not realize about playing a high school sport is that by joining a team, a teenager is not just committing to play a sport.

This teenager is agreeing to represent and embody the ideals of a program both on and off the field.

I kept this in mind throughout all four years as a member of this team and so did my fellow teammates.

Three out of the six seniors on the team this year ranked within the top five of the senior class and all six are pursuing post-secondary studies.

By working hard in the classroom, reaching out within the community and excelling on the soccer field, we built up a positive reputation for the program as a whole.

In the end, there were no games that truly defined my

life as a high school athlete.

Of course, there were the low points, like losing to Wando in the Lower State Championship two years ago in penalty kicks. There were the high points, like the moment the “golden goal” was scored in last year’s state championship and the amazing opportunity we all had to win Lexington’s first state title in soccer.

However, what truly defined my experience as a high school athlete was the group of people that were there throughout the journey. To Coach(Chris) Fryland, Coach Kelley (Maupin) and Coach Alli (Edens), thank you for always motivating me to work beyond my limits and pushing us all to be better, both as players and people.

To my teammates who are not graduating this year, thank you for being some of the best friends a girl could ask for. As somebody who has played her last soccer game, I want you to know that you need to keep working to be the best role models for oth-

ers that you can possibly be.

Little girls come to your games in their soccer uniforms and they think the world of you.

Give them the right kind of person and player to emulate, because one day they could be doing the same thing you are doing now.

Finally, to my fellow seniors, thank you for being an amazing support system over the past four years. Leaving

high school soccer behind is giving us opportunities to branch out, but I know we will cherish all the memories that we have made together.

Lexington Soccer has given us so many reasons to be appreciative of not just our talents, but also the people who have put their heart and soul into coaching us, our fellow teammates, and our wonderful parents who have come to games in the rain and snow

just to support us in our endeavors.

We have not only been left with fond memories, but our experiences through Lexington Soccer have also helped shape us into the strong, hardworking young women we are.

As this chapter in our lives comes to an end, I wish you all the best and know you will accomplish amazing things in the years ahead.

Grocer offers unique shopping experience The Chronicle gives you the low-down on Lowes Foods

Nearly every trip to the grocery store is boring.

You walk in, veer towards the produce and then slowly traipse up and and down the 20-some-odd aisles, crossing items off your list as you drop them into the shopping cart.

Not at Lowes Foods. This ain't your normal grocer.

It's a different experience from the moment the doors opened on U.S. 1 across from Lexington High last week.

Locally grown As Lowe's representative Kelly Davis explained, nearly everything in the produce section comes from local farms.

Fruits, veggies and herbs in the produce section are largely — if not entirely — from hometown farms such as Amick and Walter P. Rawl & Sons. Even local products such as Heidi Black's Faithful Foods are available.

In addition to support for local businesses, Lowes brings in the exotic for area residents to experience, such as star fruit, dragon fruit, passion fruit and numerous other items you don't normally find in neighborhood markets.

There's even a station where you can clip your own herbs and spices from plants growing in the store.

Meats and cheese Just beyond produce is a kiosk dedicated entirely to cheese — several hundred varieties of cheese, that is.

Whether you want good ol' American cheese or a highend wheel of imported French brie, the mountains of options should easily accommodate an evening with wine.

Rounding the cheese station, a divine scent from the far-right corner of the store wafts beneath your nose.

After a few steps, you're in front of the Sausage Works, where customers can choose from 50 kinds of sausage.

These include exotic flavors like whiskey and sweet teainfused links and the New Orleans favorite, Andouille, to the fresh-ground patty sausage we grew up loving.

To the immediate left is the Beef Shoppe, where choice cuts of bovine bliss are delicately sliced into the perfect cuts. Filet mignon, porterhouse, New York strip and ribeyes are just the beginning.

There's also an in-store smoker for the flavors enthusiasts crave with a rotation of beef, pork and poultry,

From the oven On the opposite end of the store, customers can find a bevvy of baked blessings.

The walls surrounding the Breadcrumb bakery kiosk are literally composed of shelves stocked from top to bottom with items baked in the store. These include marbled rye loaves, French baguettes, ciabatta rolls, pretzels and bagels.

Normally, it's not hard to tell if a cake has been purchased at a grocery store, but Lowes goes above and beyond with The Cakery, which features top-notch cakes and pastries that belong on the cover of magazines.

Ready to go Rounding your way back toward the storefront, you'll find many options for quick meals and on-the-go options.

First is the Chicken Kitchen, which has two rotisseries — with a dozen or so spindles each — rotating beautifully seasoned and caramelized chickens, ready to pick up and take home.

The station also features other chicken products, such as chicken pot pies, tenders, fried chicken and chicken salads.

The local store has partnered with Amick Farms as the primary chicken provider.

Perhaps the most entertaining feature of the Chicken Kitchen is a fixture that,

less documents would be lost as the nation’s capitol went up in flames. Thanks to

the cool thinking of State Department clerk Stephen Pleasanton, however, many items

were saved, including the original Declaration of Independence.

The hero bureaucrat: An obscure clerk saved our history

F

ace it: bureaucrats, those unelected holders of colorless government jobs, are among the least popular Americans.

They rate at the bottom of the list, right alongside used car salesmen and sewer cleaners.

Yet we owe a huge debt to one such drone who, when crisis came, acted calmly, cooly and saved the greatest documents in our history. This is his story.

Secretary of State James Monroe stood on a Maryland bluff one Saturday morning in August 1814.

Through shimmering heat, he watched America’s night-

mare come to life as British warships sailed up the Patuxent River and unloaded hundreds of the despised Redcoats.

On Monday, he sent an urgent message to President James Madison: “…the enemy are in full march on Washington.”

Monroe dashed off a second dispatch to State Department clerk Stephen Pleasanton, instructing him to take “the best care of the books and papers in the office.”

Pleasanton knew exactly what his boss meant. The State Department held the country’s most precious documents.

The original U.S. Constitution, George Washington’s personal letters, journals of the young Congress and much more.

Pleasanton was 38 at the time, a native of Delaware, slow and methodical and plodding – the ideal government bureaucrat. Yet when faced with the challenge of a lifetime, he was up to the task.

All too soon, the worst was confirmed.

The White House, the Capitol and even the War Department building that Pleasanton had just evacuated were now smoldering ruins.

He had saved our priceless heritage in the nick of time.

Although much of the capital was gone, thanks to Pleasanton’s quick actions America’s founding

Then it was back to the bureaucratic salt mines.

In 1820, Pleasanton was appointed head of the government’s Lighthouse Establishment.

For decades, he pushed paperwork regulating the beacons that guided international trade safely into America’s ports and harbors.

Stephen Pleasanton died at age 78 in 1855.

He rests today in Washington’s old Congressional Cemetery, where the modest bleached headstone atop his grave says nothing about his remarkable heroism in 1814.
