West Columbia attracting lots of new businesses

“We try to be friendly to business,” said Mayor Bobby Horton.

Evidently that approach is working.

The number of business licenses issued by the city has increased every year for six years.

While the quantity of licenses issued indicates a surge in small business, Horton alluded to the Brookland project, a multi-million-dollar commercial, retail and residential complex.

Brookland is being built at State and Meeting Streets to offer a view of the Congaree

River and the Columbia skyline.

The nearby West Columbia Riverwalk has become one of the most popular areas for visitors in the metropolitan area.

Ground was broken on Brookland in January.

When completed, Brookland will include upper-scale dining, shops, boutiques and office space.

Smaller businesses are already pouring into the area, and more are interested in coming.

“Brookland is one of the most-significant developments ever undertaken in West Columbia,” Mayor Horton said.

He described the project as a catalyst for growth for the

Brookland is being built by Estates and Co. Inc. It required lots of detail and planning by West Columbia staff and officials.

But it was important to work through the project, Horton said, with the interests of other residents in mind.

“What we’re doing now in the City of West Columbia

will have an effect for generations,” he said.

“Our children, grandchildren and great-grandchildren will benefit from the progress we’re making now.”

Greater Cayce-West Columbia Chamber of Commerce President Gregg Pinner said its location is attracting new businesses.

City staff and its leaders are open to fresh ideas to spur economic growth, he said.

“On Highway 1 (Augusta Highway) at the Chick-fil-A, the site of Georgetown Plaza, there’s been a flurry of activity,” Pinner said. “There is a high traffic count there, and that brings business.”

Silver trophies can be more than just sports memorabilia

T

here are many ways to mark important events as they occur. Centuries ago many singular moments in history were marked with tangible objects,, many made of silver.

A very common example of this would be a silver trophy made for sporting events and given as a token of great appreciation for work well done.

I know many collectors who have many silver trophies from events long ago. Their value is now more aesthetic, but they still help us to recall time and place with but a glance. Just last week I noticed the large silver golf trophy held aloft on the front page of a national paper. Collectors love the idea of capturing time as much as they love the silver object that represents it.

It seems that silver brings with it a certain cache, a certain importance that even gold does not seem to employ.

How many of us have our own silver trophies? Think of silver baby cups, bowls, spoons and forks all engraved with the names and dates of those we love. The objects may be precious, but the thoughts of those we love that they bring to mind are even more so.

I have a collection of rare American silver

that dates to before 1800. These pieces were crafted as singular expressions of beauty combined with substance, the hopes and dreams of what was to follow in America played out on their silver surfaces.

One silver object in particular is of great interest this time of year. It is a very large, very fancy round tray that was the personal property of Francis Scott Key. How wonderful to own something that perpetuates the ideals of early America. Each July, I take the tray out and polish it. I place it on a 200-year-old wooden table and spend some time each day lost in the idea of its true value. It speaks to me of patriotism like few things do.

PerHaPs you wIll take out some of your silver pieces, polish them and allow their beauty to help ease the harshness we sometimes feel in the world today. It seems that looking back is sometimes more pleasant than looking forward.

That is how they get it to show as missed but not ring.

Now you call the number back.

Instead of the American number you thought you were calling, you have unknowingly dialed an international number and are now being charged by the minute – up to $20 a minute.

Essentially, don’t call back any numbers unless they left a message to call them back or you know the number.

IRS phone scam This one has been going on for years. It is still one of the biggest scams.

You receive a call or message saying that you owe back taxes. They threaten to take your wages or arrest you if you don’t pay immediately.

They are aggressive and sound convincing.

Don’t accept phone calls from the IRS as real unless you know you already owe back taxes. The real IRS will communicate with you via mail.

If you are ever in doubt about anything, hang up.

Call 800-829-1040, the IRS’ toll-free number, to report it.

Or call back the number they called from.

The IRS doesn’t have the staff to pick up on the first ring, but the scammers do.

Lottery/Sweepstakes You won! Everyone wants to hear it.

Getting a call saying that you won millions of dollars in a lottery or sweepstakes is great news – even if you don’t remember entering that lottery.

They require you to send them: • Your bank account number so they can wire you the money.

• Several hundreds to thousands of dollars in return for sending the millions.

There are many more scams that prey on our greatest desires and fears.

Confirm who they are before sending private information or paying a fee.

The Lake Murray Fishing Report Lake Murray water levels are at 357.99 (full pool is 360.00), and temperatures are in the lower 80s. Down the lake the water is very clear with more stain as you move up towards the rivers.

Lake Murray bass are getting into a summer pattern, and veteran tournament angler Captain Doug Lown reports that the bait spawns are winding down if not completed.

In early June, there can still be a few threadfin spawning in the mid- to upper lake, but very soon it should be over.

First thing in the morning there can be some fish shallow, and some of the better fish will be caught throwing a buzzbait, PopR, or some other topwater.

After that, fish head to deeper points closer to the channels in 10-14 feet.

The best action right now is from the mid-lake on up, and fish will be near places with some deepwater access nearby.

Worms presented on a drop shot or shakey head are good options, and rock is always good to have nearby.

In this period when fish first head offshore it can be a good time to target deeper brush, particularly brush in 15-20 feet of

water that rises at least 6-8 feet off the bottom. Texas-rigged worms are the best option around this stuff.

Up the river, fish can also be caught shallow flipping jigs in stained water around docks.

For the next few months, getting a bite after 10 or 11 a.m. might be tough.

More proof that fish are getting into a summer pattern comes from the striped bass, which Captain Brad Taylor (803-3311354) reports are getting into a summer pattern.

Fish are scattered out about 50-60 feet deep on the main lake, and anglers need to be willing to spend some time searching to find them.

Almost all of the catches are coming on down-lines with herring.

There has been a little bit of schooling action but it is winding down.

Crappie fishing has been a little slow, and Brad reports that the few fish that are being

caught are around brush in 15-20 feet in the middle part of the lake.

However, since the recent rains the action has slowed for crappie.

On the catfish front, Captain William Attaway (803-9240857) reports that it can be a tough time to catch bigger channel catfish on Lake Murray as in many parts of the lake the fish are in the midst of the spawn.

While the catch is smaller, the basic pattern remains the same in the daytime and at night, with fish around secondary points, humps and back in coves.

The best depth range during the day is 25-35 feet.

At night fish, will be in 1-15 feet of water around fallen timber and riprap.

While you can catch probably catch bigger fish on cut bait, you have to deal with the gar and turtles and so William’s preferred bait right now is dip bait. Sonny’s Super Sticky is his personal favorite.

Bed and bath were well beyond the reaches of our grandparents and their grandparents.

Shopping malls were far into the future.

When our ancestors pulled up the covers on cold winter nights, the warmth they clutched came from colorful cotton quilts.

Quilts still are — as they were then — two layered coverlets. The top was patterned, hand-sewn (no sewing machines in those early days) from scraps of fabric.

The shapes that made up the intricate patterns in those days often were carefully salvaged from whatever remained of worn out garments.

The bottom layer usually was plain, often white.

The warmth came from whatever filling was layered in the middle.

The softness may have been wool or down. In the South it was more likely cotton, fluffed and stuffed called batting.

Hand-stitching the layers together formed a tufting which prevented the filling from shifting or wadding up.

Storytelling time Providing nightly comfort is only one layer of a quilt’s function.

Quilts also add vibrant color to domestic life.

While ol’ folks worked on quilts, often sitting and stitching together, they were likely to tell stories.

Some quilters sewed lore into their handiwork, as the quilts told stories in geometric symbols.

Without neighborhood grocery stores (they weren’t invented yet), the closest place for food was the pantry.

Bumper crops of tomatoes, beans, squash, figs and berries were “put up” in clean, glass jars made by companies like Bell and Kerr.

Jars filled with produce were cooked in a hot water bath, their ringed lids sealed tightly before being set on a shelf to keep the family fed through winter.

Barbara Strickland set aside freshly-canned jars of chow chow to cool.

She said she is always looking for extra hands for the Hen House kitchen.

“You don’t have to know how to can – we can teach you. But anyone can help peel tomatoes, and when produce comes in, we have to work fast.

“Everything we can at Hen House was donated,” Strickland said.

“We often show up on Wednesday mornings and find that neighbors have left on the front porch whatever they have more of than they can use.”

Strickland said that determines what they are going to can that day.

Canned produce is for sale on Wednesdays at 1556 Whetstone Road, Swansea.

Hen House Ministry President Sue Dittmar said, “On a case by case basis, Hen House Ministry provides assistance to individuals or organizations in times of need.

“We also accept applications from students entering their freshman year of college or technical school. We award two $2,000 scholarships; the money goes directly to their schools.”

The three-sport senior at River Bluff High School batted .340 with 36 hits, 29 runs scored and 21 RBI. He had a walkoff RBI single in Game One of the Clsas 5A final agaisnt Northwestern.

On the mound, Kight had a 2.90 ERA with 29 strikeouts and a team-high four complete games.

It’s a Dog’s Life Custody hearing A 7-year-old boy was at the center of Chicago courtroom drama this week when he challenged a court ruling over who should have custody of him.

The boy has a history of being beaten by his parents, and the judge initially awarded custody to his aunt, in keeping with the child custody law and regulations requiring that family unity be maintained to the degree possible.

The boy surprised the court when he proclaimed that his aunt beat him more than his parents, and he adamantly refused to live with her.

When the judge suggested that he live with his grandparents, the boy cried out that they also beat him.

After considering the remainder of the immediate family and learning that domestic violence was apparently a way of life among them, the judge took the unprecedented step of allowing the boy to propose who should have custody of him.

After two recesses to check legal references and confer with child welfare officials, the judge granted temporary custody to the Chicago Cubs, whom the boy firmly believes are not capable of beating anyone.

My morning breath is so bad, I’m afraid that my new husband will not want to sleep in the same room with me.”

Her mother said simply, “Try this. In the morning, get straight out of bed, and head for the bathroom and brush your teeth. The key is, not to say a word until you’ve brushed your teeth. Not a word,” her mother affirmed.

She thought it was certainly worth a try.

The loving couple were finally married in a beautiful ceremony. Not forgetting the advice each had received, he with his perpetual socks and she with her morning silence, they managed quite well, until about six months later.

Shortly before dawn, the husband awoke with a start to find that one of his socks had come off.

Fearful of the consequences, he frantically searched the bed.

This, of course, woke his bride who without thinking, immediately asked, “What on earth are you doing?”

Majority vote The pastor of a church decided that God was calling his church to do something different than it had done before.

So at the elders meeting, he presented the new vision with as much energy, conviction and passion as he could muster.

Lost in Transit: The pictures that never made it home alone.

Many wrote letters home. And the folks wrote back, meaning thousands of pieces moved through the mail every day.

But there were problems.

Some soldiers were barely literate. Others had sloppy handwriting, didn’t use proper postage.

Many letters were improperly addressed.

Whenever one couldn't be delivered, it wound up in the DLO in Washington.

so skilled, more than 40% of DLO letters were eventually delivered.

When external examination failed, clerks had authority under a law passed by Congress to open an envelope to see if the letter contained hints about the recipient’s identity.

Soldiers’ letters sometimes contained photos meant for mothers, wives, sweethearts and friends.

All those letters were saved and the pictures added to the

DLO's mini-museum.

Each soldier’s photo was numbered and clipped to a cardboard display panel. It’s estimated there were 7,500 images in all.

Visitors scanned the pages. If they came upon someone they knew, they got the letter.

The display proved so popular, a special wooden case was built to hold the photo panels. Emotions often bubbled to the surface during the view-

ing; women frequently sobbed while looking for a lost loved one’s face.

The photos were even taken to world fairs where tens of thousands of attendees saw them.

Consider the 1898 Trans-Mississippi and International Exhibition in Omaha, Nebraska, where a woman spotted an image of her father taken 35 years earlier.

A newspaper article said some 2,000 letters were eventually delivered thanks to the photos.

But thousands more went unclaimed. When the post office moved into its new Washington building in 1911, the DLO went with it. But its little museum didn’t.

With the Civil War becoming a distant memory, fewer people asked to see the pictures.

Nobody knows what happened to the DLO photos.

One group of 300 images wound up in a collector’s hands; they were later sold to the George Eastman House museum.

A second batch was acquired by a Sons of Union Veterans commander.

Those pictures were eventually auctioned off in the 1980s.

Where did the DLO photo in my collection come from? We’ll never know the answer, nor who the young man was or who he intended to receive his photograph.

In its own small way, his picture was also a casualty of that saddest of all wars.

Zucchini season: A look at one of the healthiest, most abundant summertime vegetables

call summertime zucchini season because it is so abundant in farmers markets and backyard gardens.

Anyone who has grown zucchini knows that a little planting goes a long way.

Nothing inspires a gardener to be generous to friends and neighbors like an abundant crop of zucchini!

Zucchini is the most popular squash in the U.S. It can be eaten raw with dip or added to salad, stir-fry, soups, casseroles and mixed vegetables.

It also can be served as a side dish — freshly sautéed by itself or with other summer squash.

As long as it's not fried, zucchini is a very low-calorie vegetable — ½ cup of cooked zucchini is just 18 calories and has 1 gram of protein. Zucchini is 94% water.

There is no recommenda-

tion for canning zucchini because of its high water content, which causes zucchini to get soft and tightly packed during the canning process.

This makes it hard for zucchini to reach the required temperatures it needs to assure safety for low-acid foods.

Maybe you've run out of ways to prepare zucchini, and friends and neighbors are no longer returning your phone calls.

Here are some recipes to transform your abundant crop into tasty snacks, plus tips for preserving your bumper crop for future dishes. And remember, with zucchini recipes, you're only limited by your imagination!

SUMMERTIME ZUCCHINI PASTA 2 tablespoons extra-virgin olive oil 1 small onion, finely diced 2 pounds zucchini, sliced into

¼-inch-thick pieces (cut larger zucchini in half lengthwise before slicing) 1 teaspoon salt 1 teaspoon ground black pepper 2 garlic cloves, minced 1 ounce basil, about 2 cups loose leaves 1 pound ziti or other dry pasta 8 ounces ricotta, about 1 cup 1/8 teaspoon crushed red pepper Zest of 1 lemon 2 ounces grated Parmesan, pecorino or a mixture, about 1 cup, plus more for serving 1. Put a pot of water on to boil. In a large skillet over medium-high heat, cook onions in 3 tablespoons olive oil until softened, 5 to 8 minutes.

Reduce heat as necessary to keep onions from browning.

Add zucchini, season generously with salt and pepper, and continue cooking, stirring occasionally until rather soft, about 10 minutes. Turn off heat.

2. Meanwhile, use a mortar

and pestle to pound garlic, basil and a little salt into a rough paste (or use a mini food processor). Stir in 3 tablespoons olive oil.

3. Salt the pasta water well and put in the pasta, stirring.

Boil per package instructions but make sure to keep pasta quite al dente. Drain pasta, reserving 1 cup of cooking water.

4. Add cooked pasta to zucchini in skillet and turn heat to medium-high. Add 1/2 cup cooking water, then the ricotta, crushed red pepper and lemon zest, stirring to distribute.

5. Check seasoning and adjust. Cook 1 minute more.

Mixture should look creamy.

Add a little more pasta water if necessary. Add the basil paste and half the grated cheese and quickly stir to incorporate. Spoon pasta into warm soup plates and sprinkle with additional cheese. Serve immediately.

To freeze slices:

Choose young, tender zucchini. Wash and cut it into 1/2-inch slices. Blanch in boiling water for 3 minutes. Cool promptly in ice-cold water.

Drain and package in freezer bags or containers, leaving 1/2-inch head space. Seal and freeze.

To freeze grated zucchini:

Choose young, tender zucchini. Wash and grate zucchini, then water blanch it for 1 to 2 minutes or until it is translucent. Put the zucchini in freezer containers and place the containers in cold water to cool it off.

Seal and freeze. Pour off excess water when the zucchini thaws.

Freezing tip: Divide zucchini into portions so each container has just the amount needed for one recipe or meal. This way you won't have to thaw more

weeklong summer camp offered to students in grades 7 through 12. The course

offers a firsthand education of how state and local governments operate.

Students tackle politics, go to trial at LexOne State

Civic-minded students formed a new government and participated in a trial in a week-long camp, LexOne State, this summer.

Propelled by big ideas and a fresh perspective, rising seventh- through ninth-grade Lexington County School District 1 students divided into three city groups and learned firsthand how local and state governments operate and affect their daily lives.

After creating a location and motto for their cities, named after present and past superin-

tendents, LexOne State campers campaigned for office.

Some even ran for governor of LexOne State during a mock election.

“I want to know how our country is supposed to function according to law,” said Austin W. Burow, a rising seventh-grader at Gilbert Middle.

Students also put their persuasive speaking skills to the test during a mock trial.

Portraying witnesses, members of the defense team and the prosecuting attorney, they argued both sides of a case involving a student found with illegal narcotics in her book bag.

Whether interested in the

law or how to create positive change as a local politician, students enjoyed putting civics into action. “We learned things we wouldn’t normally learn about until high school,” Burow reflected.

Students left LexOne State camp, one of four summer camps hosted June 5–8 at Lexington Technology Center, confident, knowledgeable and ready to impact their community with unique leadership abilities gained through participation in a mock trial, as well as visits to the three divisions of government, the state Supreme Court and the Governor’s Mansion.

Lexington County School District 3 Food Service Director, Deidre Yonce is pleased to announce that Batesburg-Leesville Elementary and Middle Schools had a surprise Department of Health and Environmental Control (DHEC) Retail Food Establishment Inspection visit in May and both schools received an Overall Score of 100%.
