There are seven undefeated teams in the Midlands area.

Four of them reside in Lexington County.

Gilbert, Brookland-Cayce, Dutch Fork and W.W. King Academy own perfect records after four weeks.

The Indians are the lone 4-0 team and have a well-deserved ‘bye’ this week.

Meanwhile, the 3-0 Bearcats return to action after being idle to head to Cecil Woolbright Stadium to face a Chapin team looking to snap a 3-game home losing streak dating back to last season’s playoff loss.

The 3-0 Silver Foxes close out a 3-game road trip when they open Region 5-4A play against River Bluff. Lexington also opens region play on the road against Spring Valley.

The fourth undefeated team is the Thursday Morning Quarterback Team of the Week - W.W. King Academy.

Fall in Love With Brussels Sprouts

Brussels sprouts have gotten a bad name lately, but they were very popular during the 16th century in the southern Netherlands and Northern Europe. They may have been grown in Belgium as early as 1200, and are named for Brussels, the country's capital.

These tiny members of the cabbage and mustard family also have cancer-fighting phytochemicals, are high in vitamin C and are a good source of folate, vitamin A and potassium. Since Brussels sprouts are so good for you, why do so many people despise them?

In a poll by the Web site Slashfood.com, more than 78,000 readers weighed in on the foods they hate. Brussels sprouts finished No. 8 on the list of most hated foods. The comments section overflowed with horror stories about being forced to eat the vegetable as a child.

Something I noticed about the readers' comments was that they ate Brussels sprouts that were muddy colored, overcooked and smelled bad. When Brussels sprouts are properly selected, stored and cooked, they have a bright color, crisp texture and delicious flavor.

When selecting the vegetable, look for small, young, vibrant green, tightly compacted sprouts.

Brussels sprouts are delicious boiled or steamed until tender but still slightly crisp, or roasted to bring out their natural sugars. Use sprouts that are all about the same size to ensure they will cook quickly and evenly. As a rule, Brussels sprouts cook in about 6 to 7 minutes. Be careful not

to overcook Brussels sprouts because they will release sinigrin, a natural gas with a sulfur-like smell.

This recipe for Hashed Brussels Sprouts is flavorful and delicious. The quick cooking time and the addition of garlic, onion and mustard complement the sprouts and showcase its flavors in a unique way. Try it and you're sure to become a Brussels sprouts lover, too!

Hashed Brussels Sprouts 1 tablespoon freshly squeezed lemon juice, plus 1 tablespoon grated lemon zest 1 pound Brussels sprouts 1 tablespoon olive oil 2 tablespoons butter 1/2 medium purple onion, minced 1 garlic clove, minced 1 tablespoon Italian seasoning 1 teaspoon salt 1 teaspoon pepper 2 tablespoons vegetable broth or low-sodium chicken broth 1 teaspoon Dijon mustard 1/2 teaspoon honey or sugar 1. Using a large bowl, pour

in the lemon juice. Cut bottoms off the sprouts, and discard. Halve sprouts lengthwise. Thinly slice sprouts, cutting around and discarding the firm core. Immediately toss sprout slices with lemon juice to separate leaves and retain color.

2. Heat oil and butter over high heat in a skillet large enough to hold all the sprouts.

When oil mixture is hot, but not smoking, add the sprouts, onion, garlic, Italian seasoning and salt and pepper. Cook until sprouts begin to wilt, but leaves are still green and crisp, about 3 to 4 minutes. Some of the leaves might brown slightly.

3. Move the sprouts to one side of the pan and mix broth, mustard and honey or sugar together in the pan. Combine mixture with the sprouts and cook, stirring, 2 minutes more. Turn off heat, and stir in lemon zest, reserving a little to sprinkle on top of the dish. Transfer to serving bowl, sprinkle with remaining zest and serve. Serves 4. Š 2016 King Features Synd., Inc.

Joe & Peggy Pinner move back to Lexington County

T

hree decades ago, Mr. Knozit and his bride Peggy moved from their home in Cayce to the wilds of northern Richland County. It was not a baronial estate but for a boy from New Bern, N.C., Longcreek Plantation in Blythewood was heaven.

Now the Pinners have moved back to Lexington County while Joe continues his TV career at WIS. In the following, he tells why and answers questions from Chronicle Editor Emeritus Jerry Bellune.

Q. Why did you and Peggy decide to make a major change in your lives?

A. After 30 years of enjoying living in Longcreek Plantation, Peggy and I decided the time had arrived when it would be judicious — even wise — to downsize and go to a place with an easier lifestyle, be nearer our son Gregg, who is CEO of the Cayce-West Columbia Chamber of Commerce, plus be closer to Columbia, WIS, the Koger Center and all the many places and events of which we love to be a part.

Actually, Peggy said “I’ve cooked and cleaned for you for 59 years and I think I need a break today and tomorrow and the day after!”

We looked at several retirement communities and decided Laural Crest in West Columbia would be the finest choice. It’s on not one but three rivers, has a lovely, calming environment, comfortable, private living conditions, excellent amenities and a dining room with an unbelievable menu.

We’re having to watch our weight. It’s like being on a cruise ship. In fact, I’ve named it the USS Laurel Crest in port on the Saluda River. I know, this might just sound like a commercial for Laurel Crest but it’s just the tender way we feel.

people Peggy and I have known for years. This has brought us together as one wonderful, close extended family.

I recall with pleasure many radio broadcasts from Laurel Crest with Gene McKay, Bill and Charlie Benton, Doug Enlow and Dave Wright and my visits out here to see them and residents like broadcast guru Frank Harden and other notables.

I was impressed with its beauty then.

Q. How did you feel about giving up your home in Blythewood?

A. There were some emotions we had to deal with. Not being near our good neighbors and friends and places we shopped. Leaving the home we built 30 years ago on Lake Windermere across from the 18th hole with the incredible sunrises that Peggy saw and the sunsets we both enjoyed and downsizing by half was with some sadness.

It was a place that created many pleasant memories. We know the new owner will build her own treasure of good times.

A. I am grateful for good health and legs that still work. I plan to answer most calls that involve being with people, to continue with WIS for special events and represent such clients as Bath Fitter. Who wouldn’t want to ride in their conver-tub-le?

Peggy has settled in and continues to put up with me.

events, playing golf at Windermere, pitching in softball games that Bill Shanahan’s Blowfish team might offer and what I’ve been blessed to do for 81 years.

I met and married a younger woman who actually was appearing and singing on television in Jacksonville, Fla. We will have more time to do some traveling and go on a

W.W. King Academy off to 3-0 start Answering your tech questions

Batesburg-Leesville, S.C.The W.W. King Academy Knights had little trouble on Sept. 9 taking a 58-14 victory over the Curtis Baptist Crusaders.

With the win, the Knights are now 3-0 on the season.

The first Knight scoring drive was a quickthree play 56 yard drive. On the third play, Hunter DuBose took a 44-yard pass from Jackson Parrish for the touchdown. Lane Bedenbaugh followed with the 2-point conversion run.

Curtis Baptist answered with their own 3-play drive of 62 yards.

Their touchdown came on a 47 yard romp by quarterback Calvin Moore.

Moore then ran in the two point conversion to knot the scoreat 8-8.

After the Crusader touchdown, the Knights took complete control of the game.

The Crusaders would only have one first down the entire game. The Knights scored seven more touchdowns on short-lived drives .Bedenbaugh scored his first of three touchdowns on a 50-yard run in the first quarter.

In the second quarter, he had a 56-yard reception touchdown followed later by a 44- yard scoring run.

Bedenbaugh had seven carries for 127 yards along with the reception. He also had two punt returns of 20 and

How do I make my laptop battery last longer?

Laptop batteries are known for being short-lived.

I’m sure you’ve heard the advice to drain a battery before charging it again, that it will help your battery last longer.

This isn’t true of the newer model lithium ion batteries.

Studies have shown that they last longer by keeping them cool and not leaving them on charge when 100% charged.

All batteries have a finite life and will eventually die. Use the battery as your needs fit and just know you will buy a new one in a few years.

Yes and no. When something is saved to one of the drives the computer can wait until the device is removed before actually handling the project. This saves in computer resources.

By clicking eject, you are telling the computer to finish up what it has left to do with the drive.

Generally, Windows doesn’t work this way, choosing instead to do the project as soon as it is requested. And if the USB drive is just removed and not ejected nothing is forgotten or lost.

It is a smart practice as it lets the computer to close out anything it has left open.

Why do I need to reset my router?

Have you ever noticed your internet is mind-numbingly slow? You sit and wait and wait for something to happen.

By restarting your router, you can actually cause the internet to work better.

There are several reasons for this. The biggest is that it is over heating, getting over worked or needs a new connection.

By reseting the router, you give it a chance to cool off.

This allows it to work more efficiently. That means it doesn’t keep overheating.

If the router is bogged down with traffic, it will start to slow down. Restarting it allows the traffic to drop and then reset once started back up. Also, it could just be that there is a bad connection to

the provider. The reset allows it to reconnect and gain a better connection.

What is pirating and why is it illegal?

Many people use these programs for music, tv shows, movies or programs. They share it free online through one of these pirated sites.

It’s illegal because you are stealing from the artists or designers by not paying for the content.

Fines are not as strict as they once were. Mainly you will be watched by internet service providers/ They will send you a letter the first time and can go up to sending information to the authorities.

Why does this matter to you?

If someone is using your open, free wifi to download to their computers, you will be the one paying any and all fines.

Make sure all wifi is secured with a reasonable password.

Each year thousands of Purple Martins return to this island to roost for the summer.

There’s no evidence of that ever happening.

Famous things they didn’t say

Samuel Clemens, more commonly known as author Mark Twain, is one of the most quote — and misquoted — American icons in history.

T

hey are so famous, a school child can recite them from memory.

They’re repeated so often, they’ve become part of our cultural currency.

And they are flat wrong, too.

Dozens of legendary quotes from our past were actually misunderstood, taken out of context or, (the worst offense of the bunch) never uttered at all.

What historical heresy is this, you ask? Consider the evidence and decide for yourself.

“Leo the Lip” wasn’t making a sweeping generalization about Nice Guys (which I have been accused of being myself from time to time, incidentally). He was commenting on a specific group of guys who happened to be nice. And doomed to fail, too.

And history somehow got it wrong.

A whole lot of something.

But that’s another story for another time.

Anyway, Victoria explained the backstory behind her fa“The British are mous misquote to a grandcoming!” daughter shortly before she — Paul Revere died in 1901.

A very dramatic line from a very brave man. The only problem is, he didn’t say it.

What Revere actually cried out that fateful April night in 1775 was, “The Regulars are coming!”

Historian aren’t sure how “Regulars” turned into “British” in our collective memory.

It didn’t come from Longfellow’s famous poem Paul Revere’s Ride, (“Listen my children and you shall hear …”) It seems to have happened on its own. But it’s still wrong.

Americans out west, with similar results.

There’s a strong case that Sheridan actually said, “The only good Indians I ever saw were dead.” Which isn’t a whole lot better than his famous quote.

Either way, Sheridan denied both versions when he was an old man. (If I were clearing the decks in preparation for meeting my Maker, I’d try to put as much distance between myself and those harsh words as I possibly could, too.)

So where did “a sucker born every minute” come from? It originated with a rival showman, who was jealous of Barnum’s financial success. While the original line described Barnum’s customers, it morphed into an (erroneous) expression of Barnum’s contemptuous opinion of them.

Nothing like that ever came from Twain’s mouth or pen.

Christopher Bullock claimed in 1716, “Tis impossible to be sure of anything but Death and Taxes.”

Edward Ward echoed that in 1724: “Death and Taxes, they are certain.” The line sounded like something Twain would say, and to many folks in his time, that was good enough.
