Flood waters and food safety

The news has been dominated with reports on hurricanes and floods and disturbing images of the destruction left in their wake.

There are many problems to handle after a flood has devastated your home, one of which is food safety due to the contaminants in floodwaters.

If you are not sure if your food was directly exposed to floodwaters, it is safer to heed the saying, "If in doubt, throw it out."

Don't be tempted to try to salvage damaged food, including cans or sealed pouches, as it is hard to tell if they are contaminated.

Remember to check with insurers before disposal because your food may be insured.

Take photos of the damaged goods for use as part of your insurance claim.

Put flood-damaged food in black plastic garbage bags, double bagged if possible; seal the bags and place them in your designated collection area.

It's important to follow good food hygiene to stop the spread of any harmful germs that might be present in your home.

Here are some basic tips for keeping food safe in times of floods: • Don't eat any food that has been covered or even touched by floodwater or sewage.

• Always wash your hands before preparing food.

• Clean and disinfect work surfaces, plates, pans, cutlery, plastic or ceramic chopping boards, etc. before using them with food. If you have a working dishwasher, this is a more efficient way to clean and sanitize smaller items.

• Discard wooden chopping boards and wooden spoons if contaminated by floodwater.

• Clean and disinfect the inside of your fridge and food cupboards.

• Don't use work surfaces, plates, etc. if they are badly chipped or damaged. * If your power has been cut off and your fridge has not been working for more than four hours, throw away the food inside.

• If your freezer has not been working, throw away any meat, fish or dairy products, or foods containing these, if they have started to get soft. Also throw away any food you would eat frozen, for example, ice cream.

• Depending upon how full the freezer is, produce

can remain frozen for 24 hours or more. The fuller the freezer, the longer the contents will remain frozen.

Many areas hit by hurricanes or floods also are without basic public utility systems.

Keep in mind that fully cooked foods or Meals Ready to Eat will be much easier to "heat and eat" than whole, non-cooked foods. Using a portable generator to power stoves and microwaves is inefficient.

Here are a few options for portable emergency heat sources that can be used for cooking: Mini Camp Stove — These tiny stoves fold flat for storage, and provide a larger surface to cook on.

They fit over the top of a small, round canned fuel container (Sterno or liquid canned fuel).

They work best for warming or reheating. Safe inside or out, as long as there is some ventilation.

Canned foods are typically higher in salt, so you won't need much to season the soup.

The Lake Murray Fishing Report Lake Murray water levels are at 356.57 (full pool is 360.00), and water temperatures have dropped into the lower 80s. Clarity is still good.

After an extremely successful Forrest Wood Cup on Lake Murray, a parade of anglers rotated through offshore spots, often loaded up with cane piles, and throwing topwater baits including pencil poppers, Spooks, flukes and more to draw up suspended bass or target actively busting fish.

Anglers new to this technique who followed the action online, or who followed in a boat and were actually able to mark waypoints, thought they would also be able to match the 20-pound sacks caught during the event.

In the weeks following the tournament it has become apparent that, while the offshore suspended pattern has now gone mainstream, Lake Murray in late summer is

still tough.

The FLW anglers (and locals fishing around the same time) hit a really good week for a variety of reasons, but weights have dropped significantly since then.

Some of the best anglers on the lake fished a roughly 50-boat benefit tournament recently, and only about 20 anglers weighed in.

The winning anglers were Andrew Allen and Chris Vickery from Greenwood, and they won the event with a weight in the 17s.

They caught five fish all day on three cane piles, showing that the pattern is certainly still there, but don't expect to catch 20 pounds every time you do it.

One other pattern is about to come online.

The shallow bite is still off, but as the fall progresses expect more fish to be caught on buzzbaits around the bank.

In the Oakley Big Bass

Tournament on Sept. 2324, expect some of the better fish to be caught this way.

In striped bass news, Captain Brad Taylor (803-331-1354) reports that with cooling water temperatures the pattern has started to change a little.

The bulk of the fish are still being caught on down rods fishing live herring, but the depth range is now 40-80 feet.

The shallower end of that range has more small fish.

There is also some schooling on the lower end, and locating these fish is simply a matter of keeping your eyes open.

These same fish are also being caught on freelines fished out over open water when they are not busting on the surface.

Right now, the bulk of the better fish are in the main water between Shull Island and the dam, and as you start to go back in the creeks

you can locate plenty of smaller ones.

Before long, bigger fish will start to go into the creeks following threadfin shad schools.

On the crappie front, Brad reports that with cooling temperatures fish should be starting to turn back on.

Like the striper, they will be pushing back into creeks to eat small threadfin shad, and that means right now you should look in the mouths of creeks up the lake around brush.

Ten feet down over about 15-20 feet is a good place to start. Fish will also be found around deeper docks in the 15-foot range.

In catfish news, Captain William Attaway (803-924-0857) reports that 30 feet continues to be a good depth range to target during the day, while at night 15-25 feet is a good range.

Fish will be found off long points and humps,

and fishing the deeper side of channel buoys on the lake is a good bet.

Dip baits are hard to

beat although the herring bite has also been picking up.

Construction of Dreher Shoals Dam began just more than 90 years ago

The dam known today as Lake Murray Dam turns 90 this week.

Before that massive project was completed three years later in 1930, there would have been no way to adjust for the volume of rainfall dumped by storms like Hurricane Irma.

Jim Landreth, SCE&G vice president of fossil hydro operations, announced the lowering of water levels at Lake Murray on Sept. 6, several days before Hurricane Irma made landfall at the first of two Florida sites.

He explained what protective measures were being taken.

“In anticipation of Hurricane Irma’s potential impact on South Carolina, SCE&G has begun taking steps to manage Lake Murray water levels,” he said.

“We have begun operating the Saluda Hydroelectric generating plant which releases waters from the lake into the Lower Saluda River.”

Before the Lake Murray Dam was completed, that precaution would not have been possible.

One of the advantages promoted by early 20thcentury dam developers was that the area could be

spared flooding from spring rains or other extreme weather conditions.

The key purpose for building the dam, though, was to harness water power for hydroelectric purposes.

A notable first advocate

Nearly a century before William S. Murray saw the topographic potential for creating a dam in the Saluda River Valley, another astute observer had taken note.

Robert E. Lee, second in his West Point graduating class, joined the U.S. Corps of Engineers in 1829 for service that continued through 1855.

Civil engineer Lee was one of the first to recognize the potential of the Saluda River Valley.

At that point in societal and industrial development, Lee envisioned, by way of maps and charts, the dam harnessing power to grind corn and wheat and for powering grist mills.

Goods produced in this way could then be transported by water to the Lowcountry.

Quarterback Gilbert now only undefeated team in county

The only undefeated football team left in Lexington County resides in Gilbert.

For the second straight year, the Gilbert Indians are off to a 5-0 start.

With three more wins, they can equal last year’s school record for consecutive wins overall and to start a season.

Last week the Indians had their biggest challenge of the season.

Facing a Dreher team celebrating “Homecoming,” Gilbert answered a Blue Devils’ rally from 14 points down to pull away for the 48-34 win.

According to head coach Chad Leaphart, the team’s resiliency was an outgrowth of the confidence gained from last year’s success.

“Our kids right now, we go into every game feeling like we’re gong to win and whatever it takes its to get it done, that’s kind of our attitude,” said Leaphart, whose teams are 15-2 in two seasons at his alma mater.

“I was proud to see our kids fight back from the momentum (Dreher) had and get it done.”

A prime example was in the third quarter. Facing a 2nd and 35 and Dreher closing the gap, quarterback Josh Strickland threw a slant pass to wide receiver Manny Bright who raced into the end zone for a 65-yard touchdown.

“You’ve just got to get to a manageable thirddown situation,” Strickland said. “That’s all we were trying to with that play and it worked for us earlier and relied on it to get a better situation and the score.”

The Indians expect more pressure cooker games with the start of Region 5-3A play.

After travelling to Swansea Friday, they will play two home games against defending region champion BrooklandCayce and Strom Thurmond.

“We’re definitely going to have to (battle back) if we are going to accomplish all our goals...like win a region championship, win a state championship,” Strickland said.

“There’s going to be a lot of tough games.”

Brookland-Cayce got off to a slow start in a penalty-marred football game versus Gray Collegiate Academy Friday night at Spirit Communications Park in Columbia.

The Bearcats won the game 28-12 in a contest in which they were assessed eight personal fouls and had three players ejected in the second half.

It was the second contest without quarterback Reed Charpia who hurt his shoulder against Lexington on Sept. 1.

After a lopsided loss the week before to Chapin, the Bearcats ran the ball more with sophomore quarterback Malachi Brown calling the signals versus Gray.

And it worked.

Joe Pradubsri scored on a 15-yard rush midway through the second quarter for Brookland-Cayce’s

first touchdown.

Jamir Robinson score two minutes later in quarter two on a 65-yard run.

Rasheed Taylor, BC’s top rusher plunged in from the 3-yard line for the Bearcats third rushing touchdown of the second quarter with :55 seconds left.

Francis Scott Key’s lost legacy: His remarkable life after the song

Y

ou heard the story so many times growing up, you can recite it by memory.

How Francis Scott Key was detained on a boat by the British as they attacked Fort McHenry outside Baltimore.

How he couldn’t tell during the dark night whether the Americans inside the fort had given up.

How when dawn revealed the American flag still flying, he was so inspired he wrote a poem whose words became The Star Spangled Banner, our national anthem.

And it’s all true.

But then, as soon as Key’s poem was published, he vanished from history as abruptly as he appeared.

Which is a shame, according to Key scholar and filmmaker Philip Marshall, who said, “Americans need to know that Key made a huge contribution to the American story, that he was also flawed and a real person, just like anyone else.”

Since September marks the 203rd anniversary of the attack on Fort McHenry and the penning of what became our national tune it’s a great time to look at the rest of Key’s life.

Here’s something you probably didn’t know: his friends and family called him Frank, which was big improvement over Francis.
