One of our better-kept secrets

O

ne of our better kept secrets is Midlands Middle College, a charter school that aims to prepare students for college. Courtney Mills is the new principal. Here she talks with Chronicle Editor Emeritus Jerry Bellune about the school and its purpose.

I came here as the assistant principal last year, and I moved into the role of principal on July 1. I am excited to continue the great work this school has done over the last several years.

Q. What do you see as the program’s best opportunities?

may be unfamiliar with Midlands Middle College. Can you give us a Cliff Notes version that explains what you do and for whom?

Midlands Middle College is a public charter school that serves students in the 11th and 12th grades who want to complete their high school experience in a college environment.

We are located on the Airport campus of Midlands Technical College, and we have developed a partnership with MTC to provide students with the opportunity to not only earn their diploma but also to begin taking college classes while still in high school.

Any 11th or 12th grade student in the Midlands area is eligible to enroll, and our school is tuition-free.

We help both students who just want to earn their last few high school credits as well as those who want to get a jump start on college classes.

A. I believe there are two.

Q. How did you become involved?

A. I have been involved

with charter schools for ten years now, beginning as a math teacher for one of the first virtual schools in the state.

Prior to that, I taught math in traditional classrooms, and I was looking for a way to do something differently and to work with students on a more individual basis.

Once I moved into district administration and began working with charter schools all over the state, I became familiar with Midlands Middle College and was intrigued by the nature of the school and its potential impact on students’ lives.

First, we offer students a small, incredibly personalized experience.

Our maximum capacity is 135 students, and because of that small number, we can give each student the individual attention they deserve.

Second, we offer students over 100 choices of dualenrollment courses where they can earn both high school and college credit at the same time.

Additionally, MMC will pay for up to two college classes each semester, so our students have the opportunity to graduate well ahead of their peers entering college for the first time.

Q. What do you see as its greatest challenges?

A. Our greatest challenge is

For example, we may only have one student who is interested in cosmetology as a career, but we still want to spend the time to help that student explore that interest.

This is why we welcome business leaders in our community to help us by serving as mentors to students, offering internships, or visiting the school to share information about their career and life experiences.

The more opportunities to which we expose our students, the more op-

tions they will have and the better prepared they will be when they leave high school.

Q. What are your top 3 goals for the next five years?

A. My top three goals are

graduation, career exploration, and college acceptance for our students.

First, we want to identify students in the Midlands area who could use individual assistance in earning their high school diploma and let them know we are here to help.

MMC’s graduation rate has steadily improved for

the last three years, and I want to see that trend continue.

Second, we want to expose our students to as many career options as we can and help them find a path that best fits their interests and life goals.

And finally, if college or additional training is part of that career path, then we want to make sure our students meet the requirements for entrance and understand how to enroll and finance their education.

A special server was required to show off luxury food

T

his small silver container is about the size of a small flower pot. It was made in France in the 1870s by the iconic firm of Odiot. This firm made silver for the most discerning of French society. The allure of pieces such as this remains timeless as their use implies civility; an all too rare occurance.

This piece has two beautifully rendered hawks for the handles – guards for the luxurious caviar held inside. This vessel is double walled so that water can be added and frozen within to provide the caviar a chilled environment.

A piece such as this was a signal of the wealth of the home. It was rare indeed to serve something so hard to come by as caviar when you were living in the French countryside. In times before refrigeration, the silver holder provided a safe and clean environment for serving this luxury.

As you may know, protein will stain soft, pure silver. In the case of this piece, the interior, where the caviar would have been placed, is far darker than the outer body.

This effect is visible on many pieces that were used to serve foods with a high protein content.

A few foods that will “stain” silver are shrimp. eggs, mustard and mayonaisse.

Food that will pit silver (pitting is defined by tiny holes that mar the surface of soft metal and must be profesionaly removed by a competent silversmith) are those listed above as well as salt.

This vessel was rare when it was constructed, made more rare by its use. It is a marvel that it still functions as it has for nearly 150 years, years marked by war and hard times. Yet this piece remains as a portal into our storied past.

The Lake Murray Fishing Report Lake Murray water levels are at 357.16 (full pool is 360.00), and water temperatures have dropped into the lower to mid80s. Clarity is pretty good although the rain may reduce it.

Striped bass are doing what they usually do on Lake Murray in the summer, and Captain Brad Taylor (803-331-1354) reports that the fish are now 80-100 feet deep, with 80 feet being the magic depth most days.

They’re grouped up in the lower pool and being caught on down-lines, although there has also been some schooling activity in the same areas. Most of the schoolies are small.

The fishing has slowed a bit recently and anglers need to be more patient.

In catfish news, Captain William Attaway (803-924-0857) reports that with the catfish spawn almost completely finished, if not finished, you need to look a little deeper to catch fish and get further out in the creek channel.

Thirty feet is a good depth range to target during the day, while at night, 15-

25 feet is a good range.

Fish will be found off long points and humps, and fishing the deeper side of channel buoys on the lake is a good bet.

Dip baits are hard to beat, although the herring bite has also been picking up.

While there are other species in Lake Murray, much of the fishing world's attention has been focused on its largemouth bass.

In the lead-up to the Forrest Wood Cup Captain Doug Lown of Newberry and tournament angler Andy Wicker of Pomaria both report that they expected the suspended bite to play a part.

This isn't usually a pattern that gets strong until the early fall until the lake turns over, but this year some really nice sacks have been caught over mid-depth and deep water on topwater/barely subsurface lures. F ish are keying on bait schools, and there is also some schooling activity.

Andy expected most of the weight to be caught in deep water, with some big ones caught up shallow first thing.

Make sure those you donate to will send the money to relief help. Just because there is a button or just because you receive an email don’t click on it. Investigate who they are before sending money.

I’d advise the same at your local grocery, fast food, or convenience stores. You never know who gets that money.

The Federal Trade Commission has some tips. * Be wary of organizations that won’t provide proof that a contribution is tax deductible. * Watch out for those

Companies helping People need donations and also help right now.

Some companies are doing just that.

The Tide mobile laundry service is always there to help after a natural disaster.

During our own flood here in 2015, people used social media to direct the laundry service to the hardest hit places.

Cellphone drying companies are setting up shop around the areas flooded to help dry cellphones. Not exactly what you’d first think about, however, as most of us know. Once that cellphone is lost, you feel lost.

One firm, TekDry, drove over 1,000 miles to help out.

Many other companies around the area are offering free drying services as well.

One family’s fight for their daughter This month, Rachel Haynie, author of books on the Columbia Army Air Base and scientist Charles Townes, recommends “Saints at the River”

ecommending one Ron Rash novel is like choosing one grandchild over others.

Nevertheless, I’ll introduce the one that introduced me to Appalachia’s most resonate voice.

“Saints at the River,” released by Henry Holt & Company in 2004, has Rash’s pervasive environmental bent as undertow.

In this early novel, the fictional Tamassee Wild and Scenic River courses through the storyline as the protagonist.

I related to “Saints” as reader and as writer. The narrative, rooted in journalism, follows an unfolding news story about the fictional drowning of a 12-year old tourist who wandered away from her family’s river bluff picnic.

The child’s body, held captive by the Tamassee’s swiftness and crags, becomes a pawn in rescuing efforts shared and conflicted among tree huggers, river lovers and a portable dam company.

Flowing from Rash’s exemplary pen, nature is a capricious primary character which the author deftly pits against man.

Saints’ narrator is a female journalist, a news photographer. She brought built-in conflict to the assignment.

She grew up in the cohesive riverside community where the drowning happened, escaped the hardscrabble life through a college education and now has a job in the Fourth Estate (the press).

This assignment sends her back to what she’d escaped.

Critics and readers worldwide responded to this novel as Southern fiction.

I smile in noting I have never, ever heard of Northern fiction. Can any other region boast its own identifiable literary genre, much less voice?

Speaking of voice, Rash quickly earned literature’s distinction as the voice of Appalachia.

road-wide, hundred-yard mudslide. Foot traffic made it worse, as people slipped and slid down the ridge, grabbing onto scrub oaks and mountain laurel to keep from tumbling into the river.”

Many of Rash’s settings have speaking voices. His beautifully descriptive and fierce protection of his native neck of the woods reminds me of a long marriage. Love and respect abide, sometimes burrowed deeply in familiar, although unattractive, crevices.

His characters speak authentic dialect and exemplify local color personally collected by the author, amplifying Southern literature’s undisputed claim on a Sense

of Place.

His human characters in “Saints…” embody flaws and frailties, strengths and surprises that make them timeless and universal.

Their grudge-holding proves them Southern. Long held grudges sometimes outlast reliable memory of what the original grudge was about.

A good grudge can sustain a Southern author - and readers - for chapters.

After “Saints….” I read everything I could find by Ron Rash.

Pokeberry Ink Recipe

Crush berries with a pestle through a non-metal fine mesh strainer. Collect the juice, including the foam, in a glass bowl. The foam will go down overnight. Discard the seeds.

2. Add the alum and stir well. Add the gum Arabic and stir well. The gum Arabic will take time to dissolve, even overnight. Add vodka, stir well and allow to sit overnight.

3. Stir well again, then make a writing sample with a glass pen to check ink flow.

Yields 4 ounces of ink.

$5 million more granted for Lexington County flood relief

Lexington County will gain an additional $5 million in federal flood relief money.

The U.S. Department of Housing and Urban Development money will be used in the county's REBOUND (REBuilding Our Neighborhoods After Disaster) program.

REBOUND is designed to meet the needs of people whose property sustained significant damage during the October 2015 flood.

Community Development Director Charles Garren said the recent allocation brings recovery funds to just more

than $21 million.

The county has received 122 applications that meet the basic eligibility requirements including: · 57 applications for home buyouts · 30 applications for home rehabilitation projects · 35 applications which are undecided whether buyouts or for rehabilitation Through partnerships with third-party agencies, the county plans to begin work on home buyout and rehabilitation projects in the near future.

The additional $5 million allows for more incentives for applicants to consider a home buyout over their desire to rehabilitate floodprone homes.

Those incentives include: · $5,000 incidental incentive · $10,000 incentive to buy a home in Lexington County · An incentive of 10% of the pre-flood value of a home "Portions of CDBG-DR Funds can also improve storm water management

infrastructure in some areas of the county," a news release states. "Funds may also be used to improve other eligible public infrastructure and public facilities in some situations."

W

hen you hear the name Napoleon Bonaparte, what comes to mind?

French guy. Funny hat.

Josephine. Short. Hand-incoat.

Napoleon is one of the most iconic figures in the world, right up there with Ronald McDonald and that annoying 1970s Smile face.

He was a personality so large, he’s known by one name, like Cher and Madonna.

Yet despite his continued superstar status almost 200 years after his death, nearly everything we associate with him is wrong.

Ok, he did wear the funny hat.

But he wasn’t French; he was Corsican and named Napoleone di Buonaparte at birth; he changed it in his 20s to sound French.

Yes, Josephine was his great love; but when he died he was married to Marie Louise of Austria, Duchess of Parma.

And no, he wasn’t short; he stood just shy of 5’7’’ — average height for the time.

(The French measurement system used in those days was smaller than the British system; hence the discrepancy. Plus, Napoleon was always surrounded by his Imperial Guard, who were gigantic, making him look like a shrimp.)

Then there was the famous pose.

Ask any school child to imitate Napoleon, and the kid will stand tall and thrust a hand into his shirt.

It’s cemented to his identity as strongly as Marilyn Monroe’s skirt blown upward by the subway grate draft, or Washington standing in the boat as it crossed the Delaware River.

Keeping money, health in mind with Meatless Mondays

I

enjoy creating and preparing meatless meals. We started adding a meatless menu to our regular meal plans years ago when we were trying to save money.

We didn't realize it then, but we were also saving our lives.

Going meatless once a week may reduce your risk of preventable chronic conditions like cancer, cardiovascular disease, diabetes and obesity.

A meatless meal also can help reduce our carbon footprint and save precious resources like fossil fuels and fresh water.

Though it can be challenging to serve healthy meals on a budget, going meatless can help conserve money for more fruits, vegetables and grains.

Meat tends to be more expensive, in part because producing meat requires extra expenses like feed and transportation.

With the average American eating as much as 75 more pounds of meat each year, one day a week, cut out meat" is a way for us to do something good both for ourselves and for our planet.

Meatless Monday has grown into a global movement. Research shows that Monday is the day people commit to all kinds of healthy behaviors.

It's the perfect day to make small, positive changes, like going meatless.

This week, put a Mexican twist on your Meatless Monday menu with this delicious, family-friendly recipe for Black Bean Wraps With Jicama Grilled Salsa.

BLACK BEAN WRAPS with Jicama-Grilled Salsa • 1 cup dried black beans • 1 tablespoon olive oil • ½ medium onion, diced • 1 medium carrot, diced • 1/8 cup diced celery • 3 cloves garlic • 3 cups water • ½ cup cooked quinoa • 1 ½ teaspoons salt • 2 teaspoons freshly ground black pepper • ¼ teaspoon cayenne pepper

Jicama-Grilled Salsa: • 1 cup diced jicama • 1 green bell pepper, seeded and diced • 1 red bell pepper, seeded and diced • 1 jalapeno, seeded and minced • 1 cup grilled or boiled corn kernels • ½ medium red onion, diced, optional • ¼ cup red wine vinegar • 2 tablespoons freshly squeezed lime juice • 2 cloves garlic, minced • 1 tablespoon Dijon mustard • 1 teaspoon salt • ½ teaspoon freshly ground black pepper • ½ cup olive oil • 1/8 teaspoon cayenne pepper • 16 (8-inch) tortillas • 1 ½ cups baby spinach • 2 large Haas avocados • ¼ cup fresh, minced cilantro

Toppings, optional: • 1 cup shredded Monterey Jack cheese • ½ cup plain, Greek yogurt 1. Soak the black beans overnight in cold water in the refrigerator. Drain and rinse the soaked beans.

2. In a medium saucepan over moderate heat, warm the olive oil. Add the onion, carrot, celery and garlic; saute, stirring occasionally, until soft and translucent, about 3 minutes. Add the beans and 3 cups water and bring to a boil. Lower the heat and simmer, stirring occasionally, for

30 minutes. Remove beans from the heat and cool.

3. Transfer the beans to a food processor and puree until smooth. Transfer to a large bowl, add the cooked quinoa, and stir to combine.

Season with salt, pepper and cayenne.

To make the Jicama grilled corn salsa:

1. In a medium bowl, toss together the jicama, green and red bell peppers, jalapeno, corn and red onion, if using. In a blender, combine the vinegar, lime juice, garlic, mustard, salt and pepper. Blend well, then slowly add olive oil. Drizzle the vinaigrette over the salsa and stir to combine.

2. Wrap tortillas in aluminum foil and warm in 350 F oven, or wrap in damp foodsafe paper towels and microwave on HIGH for 30 to 45 seconds until warmed through.

3. Spread 1 tablespoon of the black-bean puree down the middle of each tortilla, then top with spinach, avocado, salsa and cilantro, and a sprinkle of cheese and a dollop of yogurt, if desired.

Roll up and serve. Serves 8 (2 tortillas each).
