HIGH FAT DIETS & PROCESSED MEATS WORSEN SLEEP APNEA A recent study published in the American Journal of Lifestyle Medicine tracked dietary intake patterns and symptom severity of 104 overweight and obese patients with obstructive sleep apnea (OSA). The researchers found that those who ate a diet high in fat (defined as >35% of total daily calories from fat) had twice the severity of OSA symptoms. Furthermore, there was a strong trend between OSA severity and those eating processed meats “often” as opposed to those eating processed meats “rarely/never”. Eating more than 2 servings of cow’s milk dairy products daily was also associated with increased OSA severity. As more studies continue to showcase the inflammatory affects that processed and animal-based foods have on human health, make efforts to incorporate more antiinflammatory & nutrient-rich foods such as fruits, vegetables, whole grains & legumes in your diet to optimize your health. Ingredients & Materials Needed: • Medium/large salad bowl • Cutting board with knife • 1 cucumber, diced • 4 Roma tomatoes, diced • 3 ripe avocados, diced (sliced avocado and carefully remove stone & then scoop out the inside and dice) • ½ red onion, diced • ¼ cup fresh cilantro, chopped • 1 lemon, juiced • 2 Tbsp. olive oil • Salt, to taste • Pepper, to taste Instructions: 1) Place all diced/chopped cucumber, tomatoes, avocados, red onion and cilantro in bowl. 2) Add in the olive oil, lemon juice and salt and pepper and gently toss until fully coated. 3) Enjoy alongside tortilla chips as an appetizer or as a side with a meal.
