The human body can make most of the types of fats it needs. However, this isn’t the case for omega-3 fats. Also known as essential fatty acids, omega-3 fats are needed to stay healthy but the human body can’t produce them on its own - so we have to get them from food. Foods high in Omega-3 include fish, vegetable oils, nuts and seeds. Research has shown several benefits of increasing omega-3 fats in your diet. Some include: • Lower triglycerides (TG) in the blood. High TGs increase the risk of heart disease • Reduced risk of developing an arrhythmia (irregular heartbeat) • Lower blood pressure • Reduced inflammation in the body • Increased levels of high-density lipoprotein (HDL aka “good” cholesterol) • Slower rate of plaque buildup in your arteries • Reduced joint tenderness and stiffness associated with Rheumatoid Arthritis • Improvements in brain health and function

You’ll be able to snap pictures of the recipe pages with your phone or request to make copies of recipes as you choose…you just won’t be able to take any book home with you. The American Heart Association recommends eating 2 servings (3.5 ounces) of fatty fish per week. Sources include salmon, mackerel, herring, lake trout, sardines and albacore tuna. Fatty fish is the best source of omega-3 fatty acids. However, if you’re not a fan of seafood, omega-3 fats can be also be found in plant-based foods and oils such as flaxseeds, flaxseed oil, walnuts, chia seeds, hemp seeds, pumpkin seeds and seaweed. There are many ways to include omega-3 fats in your diet. Remember that the quality of your foods are important for your health. And now that you’re eating less after bariatric surgery, it’s even more important to consume nutrient rich, whole foods.

Tuscan Garlic Salmon

Ingredients Needed: • 1lb salmon fillets • 2 tablespoons olive oil • 1/4 teaspoon red pepper flakes • 1 teaspoon smoked paprika or more, to taste • Salt and pepper, to taste • 1 teaspoon Italian seasoning • 1 medium onion, chopped • 4 cloves garlic, minced • 4 Roma tomatoes, chopped • 6 oz fresh spinach • 1/4 cup fresh basil leaves, chopped • 1/2 cup low-sodium vegetable or chicken stock

Instructions: 1. Add 1 tablespoon of olive oil to a large skillet, on medium-low heat. Add the salmon fillets, red pepper flakes, paprika, Italian seasoning and salt in the skillet and cook salmon on medium heat on both sides, until salmon is cooked through – about 5 minutes. Remove salmon fillets from the skillet and set aside. 2. In the same skillet over medium heat, add the last tablespoon of olive oil. Add garlic and chopped onion and cook gently until fragrant and translucent. Add chopped tomatoes, chopped fresh basil leaves, fresh spinach, and vegetable or chicken stock. Cook on medium heat about 3 – 5 minutes until spinach wilts just a little and tomatoes release some of their juice. Adjust seasoning, if needed. ••• •• 3. Add cooked salmon back to the skillet to reheat quickly (2-3 minutes). Serve hot.
