For bariatric patients, the holiday season can be one of the most challenging times of the year. Being mindful of your diet during the holidays shouldn’t leave you feeling deprived. Follow these tips to recreate some of your favorite Thanksgiving foods: • Turkey is a lean protein with no saturated fat. However, the calories quickly add up during preparation. Avoid adding butter or oil for basting. Instead use a low-fat, lowsodium broth, herbs and citrus to add flavor and moisture without the added fat. • Gravy—Traditional gravies can add a ton of calories to the lean turkey. Either skip it all together or use low-fat broth based gravy for moisture. • Stuffing increases in calories when prepared with white bread crumbs, butter and high fat meats. Switch to 100 percent whole-wheat bread (if tolerated) or quinoa for extra fiber and protein. Skip the butter and add flavor with fresh herbs, such as rosemary and thyme, and fruit, such as apples or cranberries. To enhance the flavor, add carrots, onions and celery. • Mashed Potatoes traditionally have high amounts of butter, salt, and cream. This Thanksgiving make a healthy upgrade to mashed sweet potatoes with roasted garlic. Add in other colorful veggies for eye appeal and extra nutrients. You can also try roasting root vegetables like beets, sweet potato, and parsnips with olive oil and rosemary—it’s a colorful dish and tastes delicious! • Green Beans—Traditional green bean casserole contains added calories and fat from cream of mushroom soup and fried onions. This year, try a simple green bean sauté with sesame oil and a drizzle of sesame seeds. You can also try roasting other nutritious green vegetables in the oven, such as Brussels sprouts, asparagus or broccoli, and add lemon zest and garlic for flavor.

Ingredients Needed: • 2 tablespoons avocado oil • 3 cups onion, diced • 2 cups celery, diced • 1 cup mushrooms, diced • 1 cup apple, cored and diced • ¼ cup dried cranberries or dates, chopped • ¼ cup flat-leaf parsley, chopped • 4 teaspoons poultry seasoning • ½ teaspoon salt • ½ teaspoon black pepper • 2 cups almond flour • 3 eggs, whisked

Instructions: 1. Preheat oven to 350º F. 2. Heat avocado oil in a large cast-iron or oven-proof skillet over medium heat. Add onion, celery, apple, mushrooms, cranberries or dates, parsley, poultry seasoning, salt, and pepper. Sauté until very soft, about 7 minutes. 3. Remove from heat. Keep in an oven-proof skillet or transfer to 9x9" baking dish. Stir in almond flour and mix well. Add the whisked eggs and stir well. Bake for 45 minutes to 1 hour, or until browned on top.
