LOW CARBOHYDRATE DIET WARNINGS A large study conducted by the Medical University of Lodz in Poland and presented at the European Society of Cardiology Congress in August 2018 has found that low carbohydrate diets increase risks for premature death. The study consisted of 24,825 survey participants and examined the relationship between low carbohydrate diets and all-cause deaths, including deaths from coronary artery disease, stroke, & cancer between the years 1999-2010. Those with the lowest carbohydrate intake had a 32% increased risk for all-cause death. Low carbohydrate diets may be useful in the short-term for losing weight and improving blood pressure or blood sugar, but a reduction in carbohydrate intake can also mean a reduction in eating healthy, fiber-rich foods such as vegetables, fruits and whole grains. Diets rich in saturated fat and cholesterol from animal meats, particularly red and processed meats, and low in fiber are known to have increased cancer risks. Making efforts to incorporate more fiber-rich foods into the diet, while limiting red and processed meats, should be one of the more optimal approaches for long-term health.

FEATURED RECIPE OF THE MONTH Turkey Meatloaf Muffins from www.zuzkalight.com Ingredients & Materials Needed: • 1 Tbsp. olive oil • 12 cup muffin tin • 1 lb. lean ground turkey • ½ medium onion, chopped • 4 garlic cloves, minced • 1 large sweet potato, cut into small cubes • 1 cup frozen peas and carrots, thawed • 2 eggs • Salt and pepper, to taste • Food processor or blender Instructions: 1) Preheat oven to 400º F. Heat olive oil in a skillet’ pan over medium heat. Add the ground turkey, onions and garlic. Cook, stirring frequently until the turkey is brown and cooked through. 2) While the turkey is cooking, bring a medium pot filled with water to boil. Place the sweet potato cubes into the boiling water and cook until easily pierced with a fork. 3) When the turkey mixture and sweet potato is done cooking, drain any fat and put the turkey mixture and sweet potato into a food processor / blender and pulse until thoroughly combined. 4) Then add all ingredients into a mixing bowl and add the 2 eggs, thawed peas and carrots and salt and pepper to taste and mix thoroughly. Form into muffin sized balls. 5) Grease the muffin tin thoroughly and add the balls to each muffin cup. 6) Bake in oven until browned on top- about 30-40 minutes.
