EWG’s 2018 DIRTY DOZEN LIST

CENTER FOR BARIATRIC SURGERY BOOK SHARE!

Each year the Environmental Working Group (EWG), a nonprofit, non-partisan environmental organization, tests and ranks the level of pesticide contamination in 47 popular fruits and vegetables and releases its “Dirty Dozen” list that contain the highest amounts of pesticide residues. Despite the results of the EWG’s test, the United States Department of Agriculture and the U.S. Food and Drug Administration continue to claim that 99% of pesticide residues found on produce are “well below safe levels”. Choosing USDA Organic labeled products means that the ingredients list and the contents should be 95% or more certified organic and free of synthetic additives like pesticides, chemical fertilizers, and dyes. You’ll be able to snap pictures of the recipe pages with your phone or request to make copies of recipes as you choose…you just won’t be able to take any book home with you. FEATURED RECIPE OF THE MONTH Chilled Cucumber, Tahini & Herb Soup Author: Andrea Bemis from http://dishingupthedirt.com Ingredients & Materials Needed: • High speed blender & spatula • 2 medium cucumbers, peeled and chopped into 1/2 inch chunks • 1/4 cup tahini • 2 Tbsp. extra virgin olive oil • 3 ½ Tbsp. fresh lemon juice • 3 cloves of garlic, minced • 1/4 cup fresh dill +more for garnish • 1/4 cup fresh basil + more for garnish • 1/4 cup parsley + more for garnish • 1/2 tsp. crushed red pepper flakes • 1/8 tsp. cayenne pepper • 1/2 tsp. fine sea salt + more to taste • Sprinkle of black pepper • 4-6 ice cubes • 1/4 cup water to thin if necessary Instructions: 1) Place all the ingredients for the soup (except water) in a high speed blender and whirl away until smooth. Stop to scrape down the sides. If necessary add a little water to help get things moving. Taste test and adjust seasonings as needed. 2) Serve chilled soup by topping with fresh herbs, roasted chickpeas or croutons.
