RAVIOLI TIROLESI GRADONNA MOUNTAIN RESORT The local german-speakers call it Schlipfkrapfen; their Italian neighbours affectionately refer to it as ravioli tirolesi. Each region has its own fillings for this pasta speciality. In East Tyrol, the king of pastas is filled with potato, and in South Tyrol with curds and spinach.

The regional delicacy is found in the Italian Alps and over into Switzerland and Tyrol, and is known under many names. Schlipfkrapfen, Schlutzkrapfen, KĂ¤rntner Nudeln, ravioli and cjalzons are just a few of its incarnations. Michael Karl, head chef at the Gradonna Mountain Resort, has put his own slant on the classic dish. The chef with four Gault-Millau

UNIQUE, HOT AND SLIGHTLY BITTER NOTE by hand. The key component apart from the egg dough itself is the filling. Ricotta, a little potato, salt, pepper and a selection of mountain herbs, and the most important ingredient: masterwort. Masterwort is only to be found on Alpine mountain pastures at altitudes of between 1400 and 2700 metres, growing in the rocky and limy soil. Quality criteria As we watch the award-winning chef at work between his steaming pots and pasta dough, we can see what is important to him. Produ-

Ravioli Tirolesi Recipe by Michael Karl, head chef at Gradonna Mountain Resort Ingredients for the egg dough: 300g pasta flour 150g egg yorke 100g whole egg 1 tbsp olive oil Pinch of salt Ingredients for the filling: 500g ricotta 2 tbsp masterwort pesto* 1 floury potato, boiled 1 tbsp mixed wild herbs 1 lemon (rind finely grated) Salt & pepper *masterwort, dried tomatoes, parsley, olive oil, parmesan, garlic, salt, pepper) Michael Karl, head chef

Preparation: Knead together the pasta flour, egg yolk, whole egg, olive oil and a pinch of salt to form a firm dough. Wrap the dough in cling film and leave to rest in the fridge for 12 hours. Roll out the dough as thinly as possible on a floured surface (c. 2-3 mm). Cut out c. 10 cm wide circles with a cutter and brush off the excess flour. For the filling: finely grate the boiled potato and mix with the ricotta, masterwort pesto, wild herbs and lemon zest. Season well. Pipe walnut-sized portions of filling onto the circles of dough. Brush one side of the dough with beaten egg. Fold over the dough and press together. Pinch together the ends so that it looks like large tortellini. Cook in salted boiling water for 6 minutes.

THE GRADONNA EFFECT GRADONNA MOUNTAIN RESORT An interview with Thomas Krobath, who manages the Gradonna Mountain Resort in Kals at the foot of the Grossglockner together with Brigitte Berger. The 39-year-old tells us why there are no fireworks at Christmas, how to promote sustainability in such a large hotel and he explains the Gradonna effect.

Mr. Krobath, how did you get into the hotel business and where does your passion for the profession come from? I grew up on the Turracher Höhe. But my parents ran the Glocknerhaus directly on the Hochalpenstraße for years. I spent a lot of time there and therefore feel strongly connected to the area. The fascination for international guests, different cultures and customs certainly comes from my family. It has always fascinated me to get to know this foreign world. I attended the tourism school in Bad Gleichenberg and then worked in Switzerland in Lucerne, on the Arlberg and in London. I also spent seven years on cruise ships, was deputy hotel manager there and travelled the whole world. The great thing about the job – the whole world can be your workplace. You’ve been running the four-star superior resort since autumn 2017 together with Brigitte Berger. What makes the Gradonna so special? When guests arrive, they immediately feel

the Gradonna effect. To build the hotel only regional materials of the highest quality have been used. Local spruce and pine wood, linen, loden and Kalser marble give the resort an exclusive and at the same time down-toearth touch. You immediately feel the lightheartedness and the relaxed atmosphere. Guests quickly feel relaxed. In addition here in Kals the nature is unbelievably untouched. There is absolute peace, there is no car traffic up here – we are at the entrance to the Hohe Tauern National Park. It is a real power place. The topic of sustainability is also of great concern to you. How is this implemented in the hotel? We are constantly improving ourselves in this area. We have just replaced the coffee machines in the rooms and chalets. Now we only use sustainable coffee pads. In our delicatessen shop in the hotel we are switching from PET bottles to glass bottles. We try to make as little rubbish as possible. In our kitchen, which has just conquered another

When guests no longer know which day of the week it is – they’re in true holiday mode and can really switch off. What is the best thing about nature for you, and how do you maintain your connection with the natural world? A passion for the mountains runs in the family – my great-grandfather used to make a living as a renowned mountain guide in the Tyrolean Alps. My soul lights up when I wake up in the morning, look out the window and can see the unparalleled mountain landscape and the Zillertal countryside right in front of me. What‘s particularly interesting about our location to those who don‘t enjoy the hot weather is that we border the forest. In the summer, this helps to maintain a comfortable temperature, to the point where we don’t need air conditioning in the rooms. That in turn makes a substantial contribution to our efforts to operate more sustainably. As a hotel owner and host, when do you get to go on holiday yourself ? I get asked this question a lot by our guests The answer is quite simple. Whenever I go on a hike in the Tyrolean mountains – either

The recreational value is huge and it allows me to really recharge my batteries for everyday life. People are often rather taken aback when I tell them during a mountain tour that it feels like I’m on holiday in that moment. What are your five favourite places in and around the hotel? It’s natural to have favourite places that you’re drawn to because they radiate some kind of special energy. But now that I’ve started thinking about it, I’m finding it hard to choose. As a mountain guide with many years of experience, I would say that there is a really special moment when you reach the top of a mountain – you see the cross at the summit, in varying shapes and conditions, marked by the weather and the climate. That never fails to be a defining experience. You take a moment to pause and be thankful.

THE “AUERSPERG STYLE“ Salzburg is well worth a visit at any time of year. The family-run city hotel bears the name of the beautiful mid-19th century villa in which it is housed. Bettina and Mark Wiesinger are the third generation of the family of owners, and their “Auersperg style” is already widely known and loved. From the fashion industry to interior design “Bettina and I met at a retreat. That was how it all began”, explains Mark Wiesinger. That was in 2001, when Mark was still living

in Vienna and had a successful career in the textile industry. „When Bettina became pregnant with the first of our three sons, I felt it was time to move to Salzburg. He had always had a passion for architecture, and had originally wanted to study architecture or production and set design. “Design has always been important to me. My mentor was my drawing teacher

Prof. Christian Perrelli, who taught at Vienna University of Applied Arts, and my role model was the production designer Ken Adam. From the textile industry, I gained a feel for colour combinations and materials.” Kubrick, Bond… Auersperg Bit by bit, Mark put his design stamp on the hotel: elegant and individual, classic and modern. Quality wood and natural stone, soft leather and wonderful fabrics are perfectly matched with selected wall paints – some daring, but all chosen with unerring taste. The overall combination of unusual light fittings, furnishings

and Mark’s own creations produces that very special Auersperg atmosphere. Her sweetheart is Maximilian Pinzger, the owner of the property. The 31-year-old Vinschgauer pulls the strings in the background. He’s responsible for the philosophy of the hotel and leaves the

stage for Michaela. Since she’s been 23 years old the Tyrolean has been holding managing positions in the hotel industry. “My heart beats for the art of hosting. That’s what I live for”, says Michaela. In 2016 she moved back to her home town – and became the director of NIDUM

STYLISH RETREAT Casual Luxury Hotel in the Olympiaregion of Seefeld. The South-Tyrolean Maximilian Pinzger had bought a hotel in Mösern, rebuilt it and came up with a completely new hotel concept in just two months. Maximilian Pinzger grew up in the hotel industry. His grandmother ran a pub in Schlanders. His his father, a former senator in Rome and the current president of the South Tyrolean Hotel and Restaurant Association, turned it into a hotel. Maximilian graduated from the prestigious hotel school in Merano, took up political science studies in Innsbruck and then switched back to the hotel industry.

He was responsible for the rebuilding and reorientation of the family business before he realized his dream with the NIDUM Casual Luxury Hotel. “I have always missed the ease, the fun factor and the freedom in the upscale hotel industry. At NIDUM we offer our guests ‘Casual Luxury‘ – the highest quality without being stiff“, says Maximilian Pinzger.

WORLD CHAMPION HOST BERGLAND DESIGN- AND WELLNESSHOTEL SÖLDEN “The ski lift was our nanny. Our mother sent us out in the morning and we returned home for lunch”, recalls Sigi Grüner, host at the Bergland Design- and Wellnesshotel Sölden. When it comes to skiing the five-time deep snow world champion and three-time synchronous ski world champion is the right contact to talk to. The snowy wintertime is still a distant dream. At the glacier skiing area in Sölden however all the lifts are already in operation. “Here’s a great tip: On the glacier you can test the latest products – all the skiing companies are on site. At the same time you can get some

useful tips from the skiing instructors to get in good shape for the winter season”, says the 50-year-old. Sölden is a relatively large skiing area and it is not all that easy to find your way around. On request Sigi Grüner offers exclusive skiing days.

EXCLUSIVE SKIING DAYS Since the modern lifts result in less waiting time, skiers spend more time on their skis than a few years ago. Consequently it is important to find the right pace and to use your strength optimally. The skiing day with the hotel owner is planned through to the last detail. It should be the perfect day. Of course the culinary breaks are very important – Sigi Grüner chooses the huts wisely. When Sigi Grüner was 20 years old, he was the youngest skiing instructor in Austria. “Due to my height and my skiing skills I was ideally suited to the Japanese market. I went to Nagano for Salomon in 1990 and trained

the Japanese skiing instructors“, recalls the Söldener. For years he travelled the world for the sake of deep powder snow – from New Zealand to South America to Canada. As a result the many world championship titles followed. Return to Sölden In 1998, after ten adventurous years abroad, he returned to Sölden for a BMW commercial. As one of four skiers he swept synchronously down the glacier, a BMW with the then new xDrive made the spectacular escort. A friend of Sigi married and at the wedding he met Elisabeth Falkner.

She is one of the four children of the leading hotelier family that made Sölden in Tyrol an up-and-coming winter sports metropolis. It was love at first sight. “Somehow we have not seen each other for 30 years. It’s funny – when you travel around the world, you do not expect to marry your neighbour“, says the father of two with a smile. In 1999 the two take over the Bergland Hotel from Elisabeth’s parents. In 2010 they take a bold step: The old hotel is torn down and completely reinvented in a seven-month record-breaking construction period. As the first design hotel in the Ötztal the hotel

is a harmonious combination of nature and architecture. Regional materials such as wood, stone and the wool from their own sheep farm are responsible for the charm of the house. They live the idea of hospitality of the founding family with their heart and soul. The two daughters of the family, Sara and Anna, will probably continue in this grand tradition. They are good for tips on skiing too. No wonder: Per season both easily make 3,000 trips up and down the skiing slopes in Sölden. One can guess that a nanny was probably not necessary.

COVERED IN LODEN Only the cellar remained from the forme Café Bergland of the post-war period, when the hoteliers Elisabeth and Sigi Grüner started the redesign into the design hotel in 2010 with the help of the Wimreiter architects. The host Sigi could bring his expertise as a trained carpenter, while host Elisabeth is responsible for the stylish interior. “With this new building, we wanted to consciously take a great step forward into the future. The old building had always gradually been expanded, so it was very contorted, and the rooms were too small for our plans“, so Elisabeth Grüner. But this is no longer the case: Even the Junior Suite has an area of 38 sqm; the exclusive top suite covers 212 sqm – together with a fireplace room with walls completely covered in loden. They emit a cosy warmth

and discreetly absorb noise. Emotionally attached The Grüners also have an emotional attachment to loden, as they went into sheep breeding themselves, which was even awarded an innovation prize. Their closeness to nature was also ultimately what provided inspiration for the style of the entire hotel design. Even the architecture competition for the new building had the motto “Bringing nature into the home”. The Hotel, located in the center of Sölden, is snugly nestled into the mountainside lying behind it. The view to the east impresses guests of the hotel both in the summer and in the winter, and the rooms nearest the mountainside to the west are also reached by daylight. The Bergland Sölden was one of the first hotels to place the spa area on the

roof, offering heavenly views of the Nederkogel and its rocky brothers from the pool and the glazed sauna. At the top, you can also find one of the finest places of strength of Bergland Sölden: the room of tranquillity. “We took down an old barn for this and rebuilt it indoors.“ The quiet area is fitted with hay beds, conjuring a summer feeling in your soul with their incomparable smell. The mattresses are filled with the same hay the Grüners reaped

from their pastures and dried in the sun following the old tradition. Not even music distracts you from the essence of life in this oasis of relaxation. A culinary adventure The vibrant life in the fireplace bar and the restaurant “Black sheep”, in which the interiors are entirely matched with the Grüners’ favourite animal, offer a successful contrast to this. The fine dining restaurant offers an exquisite cuisine and a great wines selection.

Peter E. Büsser has been successfully running the Hotel des Balances in picturesque Lucerne for over thirty years. And who can blame him for not wanting to leave when the city is so rich in culture, including his own historic building? It’s not just the Hotel des Balances that’s steeped in history – the city of Lucerne simply oozes tradition. What are your own cultural and historical highlights? The Hotel des Balances has a truly rich heritage stretching all the way back to 1199. At that time, an inn stood on this spot, then later the nobility would meet here for tea, and

in the 1960s renowned Swiss cabaret artist Emil Steinberger began his stage career here. Bridge and the mountains in the background. Why would you even need to leave the hotel? The location in the centre of Lucerne’s old town, right on the Reuss, is certainly unique. From the rooms and suites or from the restaurant terrace, you can enjoy a simply breathtaking view of the mountain landscape, the Chapel Bridge – the landmark of the city – and the Jesuit Church. But ultimately it is the whole package that sets our hotel apart from the rest: the stylish décor, the charm of the building, the cosy atmosphere, the creative culinary offering and particularly our personal service. All of Lucerne’s most famous sights are within a short walk of the hotel. A stroll through the quaint old town is always worth it, as is a visit to the weekly market on the edge of the Reuss. Or why not head to the theatre, out on a boat or take a trip up Pilatus or Rigi? It’s all on our doorstep.

Which moment will always stay with you? There are two: first of all, the fire on the Chapel Bridge in 1993. We could see the flames from up close in the hotel – that was a tragic moment. Then in 2005 we spent over a million francs on renovating our restaurant. Just two months later, there was a flood and we were knee-deep in water. We had to start the renovations all over again.

You yourself have been at the Hotel des Balances for many years. What have you always placed the most emphasis on? The details and the quality of service. I want to offer our guests an enjoyable and decadent experience that they won’t forget in a hurry. That includes creating a pleasant atmosphere in which both guests and employees feel comfortable, an atmosphere where you can meet and chat with people informally. I attach great importance to employees who love their job and who love people. I have run the hotel with a high degree of trust and respect for over thirty years now, and it’s thanks to my incredible team that I can hand over authority and responsibility without reservation – it’s a method that’s proved itself successful for many years.

What will be important in the future? An undamaged environment – we do our bit to take care of it, and we also try to encourage our guests to be more aware of how they use resources. In addition to that, I want to increase the use of the Hotel des Balances as a venue for meetings and other events. Our stunning rooms are perfect for this purpose.

The design is straight and timeless, the well-known artist and architect Heinz Julen is responsible for this. Pieces of

furniture and accessories designed by the artist provide the exclusive and yet very homelike atmosphere. Chandeliers with pearl necklaces set in glass cases meet polished wooden tables in the modern breakfast room. In the lounge area photographs and accessories from the alpine world pay tribute to the impressive mountains of Valais. The crackling log fire invites you to linger. Maybe with a cocktail from the hotel bar. Even the spa leaves nothing to be desired with an indoor pool and outdoor whirlpool, Finnish sauna, caldarium and brine bath. The
