Part Irish, part military, and oh-so-Coronado:

McP’s Irish Pub celebrates 30 years as the ‘home of the SEALs’ By Kris Grant

Greg McPartlin shakes his head and wonders, “Where did the time go?” This year marks the 30th anniversary of McP’s Irish Pub & Grill that McPartlin opened just five years after he served as president of the Coronado Chamber of Commerce. “I had absolutely no experience running a restaurant,” McPartlin readily admitted. “But I thought Coronado needed a pub. After all, Cheers was on TV, and the former Manhattan Room was available.” McPartlin quickly renovated the former Italian restaurant and bar, bidding adieu to its plastic furniture and ‘50s-style décor. “But it took me a good five years before I knew what I was doing,” he said. But McPartlin was guided by his instincts for what Coronado wanted: good wholesome “Mom’s” cooking with meatloaf, burgers, chicken fried steak and of course, excellent corned beef. “And our Reuben sandwiches are to die for,”

McPartlin testified. Now McPartlin realizes he is the senior restaurant owner/ operator in Coronado. He is proud to recognize that McP’s was the first Coronado establishment to offer outdoor dining, made possible when he acquired the land next door, where a gas station used to sit. “We couldn’t put in a building, because ARCO didn’t reclaim the soil, but San Diego County signed off on it for outdoor use,” he said. “Now I can build a building, but I don’t want to. After all, it’s a pretty location, you can see what’s happening on the streets, and it holds up well for parties. And on the ‘Paddy-O,’ dogs are welcomed; people are tolerated,” said the good-natured restaurateur whose own Golden Lab, Patrick, served as Coronado’s first “canine mayor.” McP’s, from its beginnings, offered entertainment nightly. Many bands, or members of the bands that are now familiar to Coronadans — the Mar Dels,

the Cat-illacs, the Stilettos — got their start at McP’s. But McP’s biggest claim to fame — just ask any network newsman — is that it is unofficially known as the “Home of the Navy SEALs.” McPartlin, who left the service in 1972, was a member of SEAL Team 1 which had three deployments to Vietnam; one became the subject of a book, “Combat Corpsman,” that McPartlin wrote in 2005 and has since been optioned as a possible TV movie.

completing Apache helicopter training at a Naval base near El Centro. “A couple of his SEAL buddies brought Harry over for beers and a burger. He sat in our celebrity booth,” McPartlin said, pointing to an outdoor booth with a frogman mural on the wall behind it. “But to me, our real celebrities are our men and women in uniform, especially those who are just returning from deployments in Iraq and Afghanistan.” Today, McPartlin is experiencing some medical challenges that date back to his

There have been plenty of change of command, military promotions, retirements and award celebrations at McP’s. And there has been an equally long list of military brass that have made a beeline to the pub, most recently Gen. Martin E. Dempsey, the Joint Chiefs of Staff chairman, who was pleased to present McPartlin with a commemorative coin. And then there was that recent royal visit by Prince Harry, who was

military service. He is a frequent visitor to the VA Hospital in La Jolla where he commiserates with a number of “Wounded Warriors.” Once a month, he treats those warriors to lunch at McP’s. “They love getting out, crossing the bridge on a high bus, which gives them a great view. They all file off the bus, with their attendants, onto the patio, and they’re in great spirits. And then I come wheeling out, and I bellow, ‘Hey, who said you guys could eat for free?’”

But for all the catering jobs that Spiro’s Gyros has handled, Chaconas said his favorite assignment is the San Diego Padre’s post-game meals, which the restaurant prepares three or four times per season. Not surprisingly, this is one job where Chaconas and his baseball-loving sons, Michael, 15, and Demetri, 14, personally deliver the meals. “We usually

Aegerter has catered many of the popular “Coronado Coffees,” a series of non-denominational inspirational talks for women. For a turnkey operation, the company will work with area party supply companies to supply tables and chairs, linens, china and glassware and all the equipment needed. For large events, Southern Hospitality will set up a “staging area,” either using the client’s kitchen or set up in a discreetly screened off venue. From there, food is prepared, assembled and delivered by uniformed staff, who are attired in white shirts and black pants for a sleek and easily recognizable look. (Clients can request other dress to tie in with themed events). Depending on the formality of the event, service can include seated dinners, buffet stations, tray-passed hors d’oeuvres or a combination.

Southern Hospitality is a Coronadobased caterer that’s worked for over 25 years in nearly every possible venue in Coronado, from church reception halls to businesses opening on Orange Avenue to hundreds of private homes. A favorite pastime of Coronadans, young and old, male and female, is cooking. And baking, sautéing, picnicking, barbecuing, entertaining, potlucking… the Art of Food in all its splendid renditions comes alive in Coronado kitchens. With the printing of three new Coronado cookbooks, local gourmands have loads of inspiration and some of their neighbor’s favorite recipes to spur them on to epicurean delights. “Coronado Cooks,” a collection of recipes by Crown Garden Club of Coronado, features cover artwork by Sue Tushingham McNary. Club members have assembled the offerings into eight fun-filled chapters: Come For Cocktails, Bunches of Brunches, Potlucks, Summer in Coronado, At Home and Abroad, I’m Always Asked for This Recipe, Who Says Men Can’t Cook? and Sweet Endings. Crown Garden Club was founded in 1959 by a group of 11 women led by June Lenz who met regularly to share their knowledge of gardening and flower arranging. Throughout the years, club members have gathered for brunches, lunches, teas and dinners and many of the recipes inside the book will be familiar favorites to the group, and now the community. Also included are recipes from local restaurants that are now gone. Profits from the cookbook, ($25), will be utilized to sustain the projects that the club supports, including civic beautification, scholarships, Coronado memorial gardens, weekly floral arrangements at the Coronado Library and California reforestation efforts. Recipes from Coronado Cooks: Mimi’s Corn Casserole Submitted by Ann Goodfellow 1 (15-ounce) can creamed corn 1 (15-ounce) can corn, drained 2 eggs, beaten

1 (7-ounce) Jiffy corn muffin mix 1 stick butter, melted 1 cup sour cream

Cool melted butter. In a bowl, beat eggs and all remaining ingredients. Mix well. Place in a greased 8-by-8-inch baking dish and bake at 350 degrees for 30 minutes. To double, place in a 9-by-13-inch dish and bake for 10 more minutes. Make sure the center isn’t “wobbly.” Serves 6.

Vanilla Balsamic Chicken Submitted by Amy Haines (daughter of club member Jean Smith) ½ cup chicken broth ½ cup balsamic vinegar ¼ cup finely chopped shallots ¾ teaspoon salt, divided use ½ teaspoon freshly ground black pepper ¼ teaspoon grated orange rind ¼ cup fresh orange juice 1 (two-inch) vanilla bean 16 skinless, boneless chicken thighs Preheat oven to 450 degrees. Combine chicken broth, balsamic vinegar, shallots, salt, pepper and orange juice in saucepan. Split vanilla bean lengthwise and scrape seeds into broth mixture. Save bean husk for other use. Bring to a boil. Reduce heat and simmer until reduced to ½ cup, about 20 minutes. Stir in ¼ teaspoon salt. Arrange chicken in a single layer in the bottom of a roasting pan coated with cooking spray. Sprinkle chicken evenly with remaining ½ teaspoon salt and pepper. Bake at 450 degrees for 10 minutes. Brush half of broth mixture over chicken; bake 5 minutes. Brush remaining broth mixture over chicken. Bake 15 minutes more or until thermometer registers 180 degrees. Garnish with orange rind. Serves 6.

Slow Cooked Pulled Pork Submitted by Jody Mohr 1 (2-pound) pork tenderloin 1 (12-ounce) bottle of root beer 1 (8-ounce) bottle of your favorite barbecue sauce 8 English muffins, hamburger buns or rolls of your choice Place the pork tenderloin in a slow cooker. Pour the root beer over the meat. Cover and cook on low heat for 6 to 7 hours until well cooked and the pork shreds easily. (The actual time may vary according to individual cookers.) Drain well. Stir in barbecue sauce. Serve over buns. Serves 8. Note: Unbelievably easy and amazingly delicious. I usually triple the recipe and set it up to cook overnight. I shred and cool it in the morning and reheat the amount I need at mealtime, then freeze the rest for another dinner or lunch.

Note: Optional: One small can of diced chilies.

“A Taste of Coronado,” is a cookbook from the Coronado Junior Woman’s Club. The cookbook ($24.95) includes recipes from its members, and recipes from Coronado and San Diego restaurants including Alexander’s Pizza, The Brigantine, Vigilucci’s Ristorante, Tartine, Primavera Ristorante, Rhinoceros Café and Grill, Morton’s Steakhouse, The Chart House, Hotel del Coronado, Leroy’s Kitchen and Lounge, Loews Coronado Bay Resort, and Miguel’s Cocina. It also has recipes from the former Coronado Bakery, Mexican Village and Free Brother’s Market. Coronado Junior Woman’s Club is an active member of the General Federation of Women’s Clubs, a worldwide organization. The purpose of the club is to unite women who are dedicated to enhancing the spirit of Coronado through educational, civic and philanthropic services. Cover art, entitled “Thanksgiving Del” is by Glenn McNary, using a process he terms “photo impressionism.” The photo was captured by McNary who was walking on Thanksgiving Day along the beach. Recipes from “A Taste of Coronado” Caramel Bars Easy Ambrosia Salad Submitted by Maria Hovland and Vera Rogers 1 pint sour cream 1 bag mini colored marshmellows 1 medium can pineapple chunks 1m edium can mandarin orange slices 1m edium can tropical fruit salad (Dole is ideal) 1 large jar maraschino cherries Cut maraschino cherries in half. Drain liquid from all the cans of fruit. Pour fruit, cherries and marshmellows into a large mixing bowl. Add sour cream and mix well. Refrigerate at least one hour.

Submitted by Pam Hammett 1 cup chocolate chips 32 squares of Kraft caramel 5 tablespoons cream ½ cup chopped nuts Crust 1 cup flour 1 cup oatmeal ¾ cup butter, melted ¾ cup brown sugar ½ teaspoon baking soda ¼ teaspoon salt Melt together caramel squares and cream. Mix together and pat ½ crust into 13-by-9-inch glass dish. Pour 1 cup chocolate chips and ½ cup nuts over crust. Pour melted caramel, then remaining crumbs, on top. Bake 15 to 20 minutes at 325 degrees.

Coronado Taste of Oils Cookbook will help “stir your cooking passions,” promise authors Roberta Korte, owner of Coronado Taste of Oils at 954 Orange Ave., and her co-authors and co-workers Catherine Wilson and Michelle Nichols. The book, just $12, is a must-have for locals who have sampled the many wonderful oils and vinegars at Coronado Taste of Oils, bought a bottle or two and wondered, “What the heck do I do now?” After all, it takes an experienced hand to know how to bring the flavors of cinnamon pear balsamic vinegar or chipotle extra virgin olive oil to life. But have no fear… 75 recipes are included in the cookbook under the headings of appetizers, soups and salads, side dishes, main dishes, bread and rolls, desserts and “this and that.” The book instructs in the art of making flavorful reductions and in ways to use oils and vinegars in place of butter and salt. Green salad with Strawberry Vinaigrette Submitted by Roberta Korte 2 teaspoons Coronado Taste of Oils: Strawberry Balsamic Jam 1 tablespoon Coronado Taste of Oils: Strawberry Balsamic Vinegar 3 tablespoons Coronado Taste of Oils: Meyer Lemon EVOO Salt and pepper to taste 1 pint fresh strawberries, rinsed and sliced 4 to 5 cups mixed greens Whisk first four ingredients in large salad bowl. Add strawberries and toss. Add greens, toss evenly and serve immediately.

Tuscan Herb Olive Bread Submitted by Roberta Korte 1 cup bread flour 4 eggs (or equivalent egg substitute) ½ cup Coronado Taste of Oils: Tuscan Herb EVOO ½ cup white wine 1 teaspoon baking powder 20 green olives (pitted) and 20 black olives (pitted); thinly sliced ½ cup Grueyere cheese, grated Preheat oven to 350 degrees. In mixing bowl, combine flour, eggs and half of the Tuscan herb olive oil (1/4 cup) and ½ cup wine. Whisk mixture until smooth. Add cheese and olives and gently fold into mixture. Generously spray a bread loaf pan with nonstick cooking spray. Pour batter into bread loaf pan and bake for 10 minutes at 350 degrees. Reduce oven temperature to 325 degrees and bake an additional 35 minutes or until loaf if firm to touch. Let cool and serve with hummus or lentil paté.
