Welcome HELLO, DEAR FRIENDS, AND WELCOME TO THE PREMIERE ISSUE OF AUSTIN LIFE! Here we are truly and completely inspired by community, and we hope this publication inspires you too. We’re thrilled to be your source for all things local here in the Austin community. As you flip through these pages, you’ll be drawn into the incredible stories behind the people and places that call Austin home, which my editorial coordinator, Roslyn Bond, and I passionately deliver to you now. LOCAL BUSINESSES ARE WHAT MAKES A CITY UNIQUE, GIVES IT CHARACTER AND MAKES LOYAL SUPPORTERS OVER THE YEARS. So when the opportunity to step into one of Austin's independently owned jewelry stores presented itself, Larry and Kat Stokes were honored and thrilled. Keeping the name and the legacy were of utmost importance to them when they purchased Russell Korman in November 2018, rebranded as Korman Fine Jewelry. “Of the watch brands that we carry, we are the only Omega dealer in Austin and the only independently owned Rolex jeweler, with a fully trained and Rolex-certified watchmaker on-site," Larry says. "Our passion for watches will be evident as we continue to add more Swiss timepieces to our showroom." Trey Gebhardt, the watchmaker, has been providing his services to Korman for four years now and is WOSTEP (Watchmaker of Switzerland Training and Education Program) certified in addition to completing three weeks of extensive Rolex training in Pennsylvania. “Rolex came in and inspected our entire shop with all the proper machinery to include everything he needs in the store. Our customers can bring their pieces that are new and vintage to authenticate, appraise and service." Their added value to their customers includes a broader selection of unique fine jewelry offerings from local and international designers as well as a large selection of competitively priced diamonds. Some of the designer jewelry lines offered are the same brands you would find at any big-box store, however, Korman's selection is hand-picked and tailored for the Austin market as opposed to national buyers." In addition to eclectic, Austin-centric selection, Larry noted that what they offer, compared to other jewelry stores, is behind-the-scenes services including three full-time master jewelers. "The world is your oyster when it comes to custom design. Between our in-house design team to our experts in L.A. and New York, we can build your dream ring or put a fresh design on family heirlooms," Larry says. When asked what she thought Korman brings to its customers, Brooke Winfrey, a loyal employee of Korman for the 34 years, replied, “A unique experience, expertise and genuine care. We want to sell our customers the right piece, not the most expensive one. We listen; that is the most important thing we do here.” “We are happy to serve the Austin community and carry on the charitable legacy that Korman is known for." Kat says. "We love getting to be a small but integral part of our friends' and clients' celebrations. Every piece tells a story. What's your next piece going to be?” The new energy Larry and Kat bring to Korman makes for a fun, unique experience. Sip a chilled Topo Chico, make a wishlist and get lost in the treasure box one afternoon. You are sure to leave with a special token in celebration. "Celebrate Every Day." 12

TOKYO-INSPIRED MODERN ASIAN COMFORT FOOD ELOTES: BRINGING JAPANESE INGREDIENTS TO THE FAMILIAR STREET CORN DISH
Japanese Street Corn
22
Austin Life | June 2019
OWNER AND CHEF ERIC SILVERSTEIN IS PROUD TO ANNOUNCE HIS DEBUT COOKBOOK, THE PEACHED TORTILLA: MODERN ASIAN COMFORT FOOD FROM TOKYO TO TEXAS, WHICH WAS RELEASED MAY 7, 2019. Featured is one of his recipes, elotes, grilled Mexican street corn, which is wildly popular in certain parts of the United States (and, of course, in Mexico itself).
JAPANESE STREET CORN INGREDIENTS
Serves 4
+ 1/4 cup cotija cheese, grated + 4 large ears yellow or white corn, husks removed and cleaned + 1 tablespoon vegetable oil + 1/4 cup Kewpie mayo + 1 1/2 teaspoons aonori
COTIJA CHEESE
+ 1 1/2 teaspoons Togarashi + 1 cup bonito flakes
INSTRUCTIONS TOGARASHI
1. Spread the cotija over a large plate. 2. Heat a grill pan over medium heat. Brush the corn with the oil. Note: If you don’t have a grill pan, you can always cook the corn in the oven at 350 F. Just set the corn cobs, with the husks
VEGETABLE OIL
on, directly on an oven rack and bake them for 25–30 minutes. 3. When the pan is hot, place the ears of corn in the pan and give the corn nice grill marks. 4. After 2–3 minutes, when you start to see dark grill marks appear on the corn, rotate the corn. Continue to rotate the corn until grill marks appear on every side. The corn should
AONORI
take about 8–10 minutes to cook. Once the corn is done, remove the ears from the pan. 5. Using an offset spatula or a knife, coat the exterior of each piece of corn with the Kewpie mayo. BONITO FLAKES
6. Once each ear of corn is coated with mayo, roll it in the cotija. 7. To finish garnishing the corn, sprinkle the aonori, togarashi and bonito flakes on top.
A lot of Japanese chefs shave their own bonito, right before service, KEWPIE MAYO
with a bonito box. These little wooden boxes can be purchased online and are imported directly from Japan. They function like a mandoline, except there is only one blade, and the bonito shavings are caught in a drawer that pulls out of the box. Freshly shaved bonito has a pronounced, fishy flavor that adds an extra layer of umami to dishes. You can also purchase whole dried bonito online through Amazon or at specialty Asian retailers. Allergies | Asthma | Bronchitis COPD | Cystic Fibrosis | Eczema Smoker's Cough | Psoriasis among other respiratory and skin issues. H O W I T W O R K S : During 45 minute sessions in our salt room, we turn down the lights to a dim glow, play tranquil music, and actively pump salt into the air via a machine called a Halogenerator. Not only are you surrounded by more salt than you've ever seen in one place, but you are both breathing in micronized salt particles as well as being coated by these fine granules. The mechanism behind everything we do is an osmotic transfer, salt pulling water to it. This process can help to alleviate the symptoms of many respiratory issues along with a few skin conditions. Not only that, but the salt cave is surprisingly relaxing! Many visitors describe having the same euphoric sense they experience after leaving a massage.
