“HEY, NIEMEYER'S! You barbecuing?” A neighbor calls to us as he walks by. Sheri, communications director, wife, and mother of the majority of the Sundae Wines production team, explains to us that their family BBQ’s are infamous. They gather at least twice a week to share food and wine. Sheri never cooks for less than 40. While speaking to the Niemeyers, Boulder natives and owners of Sundae Wines, it was clear that their entire operation is rooted in family and community. They invited us into their home and what was intended to be a 15-minute photo shoot, turned into 2 hours of conversation, wine tastings and a peek into the world of the family at the heart of Sundae Wines. So where did it all start? What drives a Boulder business guy (Rob Niemeyer, CEO, and founder) to open a world-class wine company? Rob and a friend, upon graduating from business school, could not continue into the business world lacking critical knowledge of fine wine. Together, they bought a case of wines ranging from cheap to not-so-cheap and began to take notes. For Rob, the note-taking never stopped. He has since traveled the world in search of the finest wine. Sundae Wines was merely the next step. The product had to emulate what Rob and Sheri had tasted in all their years of travel. They could only proceed with renowned vintner and family friend Lars Bjorkman, out of Napa, California. They also knew they couldn’t sacrifice quality. Cutting costs by using modern methods to speed up a process established in tradition and time wouldn’t do. It worked. The Chardonnay tastes of French oak and apple pie, rich, and creamy. The Pinot Noir has a hint of baked berries and chocolate mousse. Much like an ice cream sundae (Queue ah-ha moment) these wines have achieved a layered complexity unrivaled at their price point (never more than $25 a bottle). After all of the tastings and research, what was the one takeaway lesson for Rob and Sheri? Their answer: you don’t have to go to the other side of the globe to achieve something world class. For the Niemeyers, Boulder represents home. It was clear they needed not look further. Sheri’s daughters all graduated from the University of Colorado and became an integral part of the production team. Molly tells the stories of her family through the copy she writes for the company. Katie is the in-house designer responsible for the brand design, down to the cherry on top. Yes, you will have to uncork a bottle of Sundae Wines yourself to understand that reference. Their investors, also Colorado-based, have grown to become close friends. The Boulder community has embraced the wine and shown dedicated support. It is clear their theory holds true; the success of this company is unequivocally a family affair. As I left Rob and Sheri’s home, I felt like I was saying goodbye to dear friends. They asked which wine was my favorite. “I can’t believe I’m saying this, but the Chardonnay was exceptional." I am an exclusive red drinker. Within the second I had a bottle to take home. I was asked about the Pinot as well. “Of course!!” The joy of wine and the thrill of the adventure this Boulder family has taken head-on is infectious.

BRAMBLE AND HARE Bramble and Hare opened their doors in 2012 as an extension of their neighbor and sister restaurant, The Black Cat, as a place to have farm-to-table dishes and craft cocktails in a late-night, but casual setting. The restaurant is rustic and hip, with acoustic, folky music playing and their servers don white shirts and vests. We started our meal with two custom cocktails. A bartender’s choice with carrot and celery leaf, rum, and honey juice; and a drink fondly named “I Thought You’d Be Taller” with mezcal, dolin dry, falernum, and fennel. Both cocktails were strong, clean, and fresh. First out was a beet salad with blue cheese, radishes and an apple cider vinaigrette and seared farm carrots with a pistachio tarator. Both vegetable dishes tasted as if they were freshly picked that day, and the sauces helped to enhance their hearty flavors. A beer-braised beef ragu with carrots, spinach, and cheddar polenta was served as the main entree. This dish hit the spot with the right amount of flavor, texture, and comfort. Lastly, dessert was a lemon bar that perfectly combined sweet and sour. Bramble and Hare use ingredients from the owner’s 1925 farmstead, Bramble Hill to provide fresh and flavor-packed dishes that leave you feeling satisfied, and contently full.

MOVING FORWARD In addition to rejuvenating our soils and conserving our water, carbon farming in Colorado is an achievable climate change solution by applying compost and carbon farming practices such as keylining. And it’s not limited to large farms. Dan Matsch, director of Eco-Cycle’s compost department, promised event attendees that a fun and educational “Citizen Science” project would be coming soon in which non-farmers can participate to learn about the soil around them and generating data about the potential for urban and suburban land to sequester carbon. “This is obviously a giant undertaking requiring collaboration worldwide, so it’s imperative that we educate, inspire and enlist people from all walks of life,” Matsch told event participants. If you want to take action, consider donating financially to Eco-Cycle, becoming a Citizen Scientist by participating in an urban carbon sequestration program, or by volunteering as an Eco-Leader to advance sustainability throughout the state. FARM-TO-TABLE ISN’T EXACTLY A NEW CONCEPT TO THE FRONT RANGE, WITH COLORADO A LEADING INFLUENCE WITHIN THE MOVEMENT OVER THE PAST SEVERAL DECADES. Nor is it a rare one, thanks to our enviable combination of top-notch culinary talent and local abundance. So what sets Arcana, a relatively new arrival to the Boulder food scene, apart from the rest? For Co-owner Elliott Toan, it’s all about viewing seasonal and regional eating practices as part of a larger story, one that is both ambitious and romantic as it journeys towards uncovering true American cuisine.
“THE FOUNDATION OF THE CONCEPT IS THAT THERE IS AN UNDERLYING AMERICAN CUISINE AND HERITAGE THAT WE HAVE NOT YET FULLY REALIZED,” SAYS TOAN. He explains that the seismic changes within the food industry over the last hundred years, while valuable in many ways, were also inherently damaging to the culinary traditions of our young country. “While technological advancements are an important part of the story, they don't capture the heart and soul that has been here all along. We wanted to set out to celebrate what American cuisine can be and is deep down,” says Toan. It all starts with a deep dedication to locally sourced products. For their menu, they’ve worked with “just about every farm on the Front Range,” according to Toan, including Boulder’s own Toohey & Sons. You can see that commitment reflected in the fall menu, which features dishes like Twice-baked Squash, brought to life with chilis from the restaurant’s larder and masa dumplings made with masa from local taqueria T/aco. There’s even a fresh take on pumpkin pie: pumpkin pie fluff served with Carolina gold rice donuts and Loyal Coffee sugar, topped with a housemade rye whiskey infused vanilla ice cream. However, Arcana’s practice of sourcing locally isn’t just limited to what’s on your plate— it even extends to the plate itself. The restaurant works with local ceramic artist Curtis Rindels to supply many of their dishes and service-ware, as well as Arvada-based Black Hound Design Company for their tables and wooden chairs. “As time has passed, we have often found that one of the quickest ways to touch what we feel is authentically American has a lot to do with geography. What grows here? What used to grow here that someone is bringing back? What were people eating here before preservatives were the norm, and what techniques were they using to make it work in the harsh climate?” explains Toan. 68

Looking to the past serves as inspiration in more ways than one: The team has also combed old restaurant menus and cookbooks to find inspiration for Executive Chef Kyle Mendenhall. Mendenhall, a longtime presence on the Colorado culinary scene, came to Arcana as they were still figuring out what it truly means to embody authentic American cuisine, and helped the restaurant to clarify further and build their vision around relationships, heritage, and seasonality/regionality. At the heart of all of these concepts, he says, is preservation. Mendenhall’s considerable contributions to the restaurant are all a part of Arcana’s journey toward that end. “We are on a journey. We aren't necessarily much closer to the destination than when we started, but it has been one hell of a ride.” 70

WHAT ALL LED UP TO THIS PROJECT? It’s actually been almost a decade in the making. I did my first year of college at CU, took a year off, and ended up going to Nepal through a program called “Where There Be Dragons.” I flew back to the States after spending a semester there and immediately turned around and got back on a plane. It just totally stole my heart. WHAT ABOUT NEPAL DO YOU FEEL SO CONNECTED TO? It’s the people that keeping bringing me back. The spirit of the people was something that I hadn’t really found before in my life, and it amazed me–that way of life, that way of being a human–it’s just so vastly different there, and it shocked me and made me think about the way I live my life. IT’S CLEARLY A VERY PERSONAL PLACE TO YOU. FOR THOSE WHO HAVEN’T EXPERIENCED IT IN THE WAY YOU HAVE, WHAT DO YOU HOPE THEY CAN TAKE AWAY FROM YOUR PHOTOS? I almost always pair my photography with writing, my other great passion...I think that it helps take the viewer on a deeper journey. Maybe that photo is just a picture of a man, but when you read the story behind it, you come to learn that it was the first photograph ever taken of this man and that he’d never seen a camera before. Whatever people want to take from it, I’m happy…This show is my ode to Nepal—it’s my reverence of that culture and those people. LET’S TALK ABOUT YOUR PROCESS. YOU MENTIONED THERE WAS A MAN WHO HAD NEVER SEEN A CAMERA BEFORE. HOW DO YOU OVERCOME THOSE SOCIAL BARRIERS? I always ask before I take a photo...I generally connect with the person before I take their picture, and I navigate it all by feeling. Some people I choose to just have that experience with them and walk away without a photo of them, and other times, we get into this beautiful thing of me taking their picture and then showing them. It just depends. One thing that is really important to me is to bring the photos back to these people, which can be really difficult in one of the most remote countries in the world. I’ve gone to multiple villages and walked back in with just a plastic bag of printed photos, hoping to find that person—sometimes even five years later. CONTINUED >

THAT’S A BIG DIFFERENCE FROM OUR CULTURE, WHICH HAS SMARTPHONES AND SOCIAL MEDIA FILLED WITH PICTURES OF THEMSELVES. WHAT WAS IT LIKE TO SEE SOMEONE HAVE SUCH AN EMOTIONAL REACTION TO YOUR PHOTO? You realize how quickly everything happens here. Things are so instantaneous, we don’t even think about it. I remember one time I went back to a village in Nepal that I had stayed in five years prior. I arrived at the house I had stayed in to find that it had been demolished by an earthquake. Not only that, but the mother I stayed with hadn’t seen her husband in two years because he was working in Dubai. And she just burst into tears seeing the photos I took of her and her husband in a house that was now gone. In that moment, you can really see the power of photography…Here, in the Instagram world, you can so easily miss it. WHAT IS YOUR FAVORITE PHOTO IN THIS EXHIBIT? There’s one from last summer that I took of all the shamans. They are all dancing at a spot that we arrived at during our pilgrimage to take rest. It’s a black-and-white image, and it’s going to be one of the biggest images of the show–it’s over five feet wide. There’s so much emotion in their faces, their robes, the bells–I really can’t wait to show that one. WHAT ELSE SHOULD BOULDER KNOW ABOUT YOU? This is home now, and I’m hungry to step into the art scene here, meet other artists, and share my work, my art, and my love— whatever I can—with the community. BOULDER LOCALS HAVE LONG KNOWN OF SPRUCE CONFECTIONS AS A MEETING PLACE FOR EARLY MORNING COFFEES, INCREDIBLE SCONES, LIVELY MUSIC DURING THE SUMMER, AND INCREDIBLE VIEWS OF THE FLATIRONS FROM THE FLAGSTONE PATIO AT THE PEARL STREET LOCATION. But few know how their favorite morning hang got its start. David Cohen, the mind behind Spruces’ three locations and wholesale business, began the business much by happenstance and a habit of saying yes. In college, Cohen was at Oberlin Conservatory studying music composition (look closely at Spruces’ logo, and you’ll notice music notes floating close to the baker) when he joined a food co-op called Old Barrows during his senior year. Along with a friend, he ran for dessert chair, and lucky for those of us who love Spruce, they won. 94

“I just became obsessed with dessert!” David says. “I would drive to Cleveland and go to bookstores and sit in the aisles and memorize recipes and just study them.” All his studying paid off, and quickly his co-op had to keep his bi-weekly dessert days a secret— or members of other co-ops would flood Old Barrows after Cohen’s cheesecakes, truffles, and gourmet dessert options. And the rest, as they say, is history. Well, the rest was actually a few more coincidences and a little bit of fate. After graduation, Cohen moved out to Boulder where he worked at a sandwich shop while trying to get a music career going. One day, a woman came in to inquire about local coffee shops. She sold a brownie, she explained, and suddenly a light bulb went off in Cohen’s mind. “And that day I wrote in my journal, if she can do it, I can do it,” Cohen says. “I had a hundred books on my name, and so I went to Walgreens and bought a metal bowl a wooden spoon, and I made my Old B Cookie, which was named after the co-op, Old Barrows.” The Old B. Cookie quickly became a favorite in local coffee stores and institutions like The Trident. A few weeks after he started selling his cookie Spruces’ famous layered scones
to The Trident, the manager there asked him if he delivered on Thanksgiving—and if so, could he bring in some morning options that day, say, scones? “They were really simple lemon currant scones,” Cohen says, but people loved them. To take his scones to the next level, Cohen stared adding it different flavors and textures by way of fruit. "One day I made the dough and then realized I forgot to add the berries. And I really didn’t want to throw all this dough out, so I started cutting the dough into pieces and smashing the berries into the middle.” From that accident, Spruces’ famous layered scones were born, and those were really what put Cohen, and Spruce on the map. For now, Cohen seems to be pretty satisfied with his three locations and his burgeoning wholesale business, but the options at Spruce will keep on growing.
