Good Taste I
became a food snob at a young age. Growing up in a large family (of 12), food was a big part of our household. I remember accompanying my mom to the grocery store. The normal week would be her buying 10 gallons of milk, and filling two grocery carts. I feel very fortunate for her dedication to cooking for my nine siblings and me. Almost every meal, seven nights a week, was homemade. It wasn’t until I grew up, and now have a family of my own, that I truly comprehend all the work (and money!) that went into feeding all of us.
My mom would say I was a very picky eater growing up, but I am quick to respond that I just had a refined palate from a young age. I was not the typical Midwestern steak and potatoes eater. You see, as soon as I could get a job and make my own money, my first priority was to buy good food. I liked to pick out my own Granny Smith apples, as opposed to buying the value bag. I also bought fresh carved meant and artisan cheese. I was obsessed. I would label every item I bought, “DO NOT TOUCH! KATIE’S FOOD.” My siblings knew to stay away, or be victim of my wrath. The obsessions of buying good food became ordering good food, and then led to an attempt at cooking good food. What a fantastic hobby. I have found myself lost for hours in food blog world, where I pick up most of my inspirations and recipes. In this “FOOD” issue, we will explore three local bloggers that are dialed in to Denver’s food scene and whose popularity extends much further than our little bubble. Their food photography is so decadent; it makes me want to reach through the screen and sample just a bite. Coincidentally, I happened to end up in one of the foodiest towns in America. I do not take this for granted. Although I still enjoy the comfort food I was raised on, I have a deep appreciation for the culinary knowledge and talent here. Having direct access to fresh, locally sourced, organically grown fare is something we can all be thankful for here in Denver.

Around Town DENVER #5 HEALTHIEST CITY The Denver-Aurora-Broomfield metro area placed No. 5 on NerdWallet’s list of the nation’s healthiest metropolitan areas. The survey looked at fitness levels using the American Fitness Index and health care accessibility, including the percentage of residents who have health insurance and number of physicians and surgeons per 100,000 residents. “The Denver metro area’s fitness index and the percentage of residents who do some kind of physical activity are among the highest of all places we analyzed,” says NerdWallet’s Sreeker Jasthi. In the Denver metro area, 83.8 percent of residents engage in regular physical activity, according to the study. Denver finished behind Boston, San Francisco, Portland and Seattle.
ST. BALDRICK’S DAY EVENTS Every year in March, thousands of people shave their heads, going bald to stand in solidarity with kids with cancer and to raise money to support lifesaving childhood cancer research. In 2014, more than 57,000 volunteers–including more than 9,000 women–shaved their heads in St. Baldrick’s Day events around the world. The foundation hopes to break that record in 2015 and contribute even more to the $222 million already raised since 2000. The St. Baldrick’s Foundation is a volunteer-driven charity committed to funding the most promising research to find cures for childhood cancers and

CU DENVER ONLINE GRAD PROGRAMS RANKED NATIONALLY Two University of Colorado Denver | Anschutz Medical Campus online graduate programs were ranked in the top 10 of online programs nationally, in a report released by U.S. News & World Report. The CU College of Nursing at the Anschutz Medical Campus was ranked fifth in the report’s Best Online Graduate Nursing Programs category, and the CU Denver School of Public Affair’s Online Master of Criminal Justice Program was ranked ninth in the online Criminal Justice Programs category. The CU Denver | Anschutz programs were the only two graduate programs in Colorado to make the top 10 list. This is the first year the award has been given. The award recognizes Cherry Creek Schools for offering evidence-based English Language Proficiency programs that achieve the highest English language and academic growth among English learners and the highest academic achievement for English learners who transition out of the English language proficiency program. In addition, Cherry Creek Academy received the ELPA Excellence Charter

Grow Local Colorado WORKING TO CREATE RESILIENT, VIBRANT AND SUSTAINABLE COMMUNITIES ARTICLE ANGELA BROOCKERD

row Local Colorado is a non-profit that is dedicated to promoting local food, local economy and local community and is 100 percent powered by volunteers. What started out as one garden in Denver’s Civic Center Park in May of 2009 has turned in to 11 gardens throughout the city, providing fresh, organic produce to many who might not have access otherwise. Some of the organizations that benefit from this fresh produce include women’s and youth shelters, several food pantries, soup kitchens, a facility assisting homeless men with AIDS, and a rehabilitation facility for women with young children. These organizations serve our neighbors that generally can’t afford and/or don’t have access to fresh produce. At the start of each grow season, Grow Local Colorado asks their partnering organizations which vegetables their clients prefer, which then allows the gardens to be tailored to that community’s preferences and needs and in turn makes the produce all the more desirable. Co-founder, Barbara Masoner, explains that the original group, SPROUTs (Sustainable People Reaching Out for Urban Transition), was looking for a project that would promote sustainability while sharing the benefits with communities in need. “We felt a vegetable garden in a public space would be a wonderful way to demonstrate: how beautiful vegetable gardens are, how bountiful they can be, and how produce from our gardens can be shared with those that seldom have access to fresh vegetables. A public setting is also a perfect location to introduce children to vegetable gardening.” The key to their success is volunteers. “They help with all stages of the gardens including starting more than 5,000 seedlings in the spring, preparing the gardens, planting, weeding and harvesting,” says Masoner. “Thanks to the weather and our incredible volunteers, last year we shared more than 5,000 20

pounds of fresh, organic produce with our partnering organizations.” Volunteers also deliver the fresh produce to the recipients. “There is no better feeling than bringing in bags of fresh produce to a soup kitchen and being greeted by the clients,” Masoner explains. “Many express their gratitude for this delicious bounty.” Some of the gardens are tended by the individuals who will enjoy the food grown there; that also cultivates a vested interest in the garden. Grow Local Colorado welcomes new volunteers during the growing season, from May through October. To volunteer send an e-mail to GrowLocalColorado@gmail.org. Other ways to get involved: Produce for Pantry (ProduceForPantries.com), an organization that partners with several local organizations, including Grow Local Colorado, to encourage home, school and community gardeners to share their bounty with their local food pantry.

To enjoy a Long I Pie, you don’t even need to be in a restaurant. The company isn’t in a fixed location; it’s a mobile vendor in a 1966 Airstream trailer named Stella. The Long I Pie believes its pies are an art that you can consume and uses classic recipes as well as ones developed in its own kitchen such as The Honey Flower. Pies change often, but all are baked in cast iron skillets, which makes the crust extra buttery, flaky, and delicious. Pies are also available on Fridays at Huckleberry Roasters, weekends at The Universal and Saturdays at Sweet Bloom Coffee. “Making pie is a mix of art and science all wrapped up in the feeling of family and home. At The Long I Pie Shop, we believe that our pies are an art that you can consume,” says owner Shauna Lott.

3 ounces silver tequila (preferably organic) 1 1/2 ounces freshly squeezed lime juice 1 ounce light agave nectar Juice of 2 blood oranges (approximately 2 ounces) 1/2 teaspoon fresh ginger root; sliced or diced DIRECTIONS:
In a glass or jar, combine the blood orange juice and ginger. Muddle the ginger. Allow the mixture to sit for 20 minutes. Taste and if the flavor is desirable, strain retaining the liquid (or allow to sit longer before straining). Combine the blood orange-ginger juice, tequila, lime juice and agave in a shaker with ice. Shake and strain into 2 Old Fashioned glasses full of fresh ice. 28

oni Dash of Boulder Locavore, started her blog in 2010 as an offshoot of a personal experiment. She was trying to live through a Colorado winter sourcing only protein and produce grown or produced within a 100 miles radius of Boulder. Toni was constantly sending friends emails with details and links to the local gems she found, and new recipes that were born out of her creativity. She decided to create a repository for her discoveries on a blog. It was then that Boulder Locavore was born. Before she knew it, Toni had a following a little bigger than the “local” Boulder bubble. The blog spread internationally, and the content focus also migrated. She now features seasonal recipes for food and cocktails which can be enjoyed anywhere in the world. As well as Dash’s DIY projects and travel tips, Boulder Locavore brings joy to thousands globally. Dash divulges two mouth watering original recipes, for us. Gluten free pancakes, bursting with textures and flavors, and a natural, refreshing cocktail.
FOR BANANA MACADAMIA NUT PANCAKES:
½ cup coconut flour 1 cup oat flour 1 ½ tablespoon granulated sugar 1 tablespoon baking powder ¼ teaspoon kosher salt ½ teaspoon baking soda 3 eggs 2 cups milk (I used unsweetened soy milk) 2 medium-large ripe bananas 1 teaspoon vanilla extract ½ cup chopped macadamia nuts (preferably roasted and salted) DIRECTIONS:
FOR THE COCONUT SYRUP:
Pour coconut milk into a medium saucepan, reserving ¼ cup. Combine the ¼ cup coconut milk and the cornstarch, stirring to allow the cornstarch to fully dissolve. Add mixture to the saucepan. Also add the brown rice syrup. Bring mixture to a low boil over medium heat stirring often. Lower heat to low and continue to stir as the mixture simmers for 10 minutes. Remove from heat and allow to cool to room temperature (note: it will thicken as it cools). Store, sealed, in the refrigerator for use. FOR THE BANANA MACADAMIA NUT PANCAKES:
In a large mixing bowl sift together the flours, sugar, baking powder, salt, and baking soda. Discard any hard bits of coconut flour that may be left in the sifter. Place the wet ingredients in a blender (eggs, milk, bananas and vanilla extract). Process on the lowest speed just until the mixture is fully combines and no large banana chunks are present. Add the wet ingredients to the flour mixture and stir by hand to full combine. Stir in macadamia nuts. On a hot griddle or large frying pan, drop batter in ¼ cup amounts to form pancakes. Cook until done and golden brown on each side.

In a small saucepan, combine sugar, water and cherries. Bring to a slight simmer, and stir until the sugar has dissolved. Remove saucepan from heat and let it cool completely. Once cooled, pour the cherry simple syrup through a strainer and into a bowl. Discard whole cherries, and save the simple syrup to make the spritzer. FOR ONE CHERRY CREEK SPRITZER:
Fill a glass with ice. Pour the cherry simple syrup and cherry soda into the glass. Fill the remaining glass with sparkling water. Garnish with mint and Maraschino cherries.
A word of advice from Grier: “Keep simple syrup on hand. You can make a large batch of any infused simple syrup at the beginning of the week, store it in the fridge, and it will last up to almost two weeks.”

Place sliced onions in the bottom of the slow cooker. Place ribs on top. Pour beef stock into slow cooker. Cook on low for 7 to 8 hours. Remove ribs from slow cooker and separate meat from the bone with a fork. Take a tostada; spread some of the avocado on the bottom. Top with meat, corn relish, tomatoes, and crema. FOR THE CORN RELISH:
In a skillet preheated to medium-high heat, melt butter. Add the corn, red onion, lime, garlic powder, paprika, tabasco, and salt and pepper. Sauté until the corn has softened and slightly golden brown. Remove from heat and stir in cream cheese.

Combine everything but the quinoa in a large bowl and mix well. Fold in the cooked quinoa until it’s fully incorporated and the mixture is even. Heat a large frying pan, with a drizzle of oil to coat, to medium high. Using a spoon & your hands, form appox 2” patties with the quinoa mix and plop them into the hot frying pan. Cook each side for approx 3 minutes, or until golden brown. Don’t disturb them for the first minute or two to prevent them from falling apart. Flip, and cook the other side for an additional 3-ish minutes, or until both sides are golden brown. Serve with more freshly grated cheese on top.

Once they discovered their mutual interest, they launched their business, Colorado Crafted, which specializes in modern gift baskets with local gourmet foods, and started their popular blog Two-Tarts. Two-Tarts was created to share their photography and provide simple, yet delicious recipes using whole foods and seasonal ingredients. “We especially love things that look impressive but are actually quite simple to pull off,” says Welle. The two friends enjoy making homemade almond paste, ketchup, ricotta and butter. eople came out of hibernation to enjoy the annual Denver Restaurant Week from February 20th-March 1st. Food lovers crawled out of their dens to enjoy some of Denver’s finest dining for the 11th year in a row. Denver has become a wellknown foodopolis and hosts the largest restaurant week in the country. That’s right, the largest. During the 9th annual Denver Restaurant Week, a record-breaking 351 restaurants participated. Visit Denver started Denver Restaurant Week in 2005 to present the local cuisine to the masses. It didn’t take long for out-oftowners to recognize that the Mile-High City has a serious appetite for fine dining. Denverites are well aware of the great dining options in Denver and Boulder, but Restaurant Week is always the perfect opportunity to try something new or to enjoy some of the renowned local eateries for a great price. Who doesn’t love finding their new favorite restaurant to enjoy the rest of the year? Stoic and Genuine was a notable, new Denver restaurant that participated in Denver Restaurant Week. Nestled in historic Union Station, it’s a fresh seafood lover’s paradise. Another new restaurant that partook in this year’s event is Dorchester Social Eatery in LoDo. Defined as modern European food, there

are authentic dishes from all over the world. The menu includes cuisine from Korea, Italy, Morocco, Belgian, and France-to name a few. Of course, there’s always Mediterranean inspired Rioja where Chef Jennifer Jasinski has won the hearts of locals. You can find Colorado lamb or grilled Spanish octopus puttanesca on the same menu and enjoy Rioja’s great food even though restaurant week is over. Another hotspot is Bramble and Hare in Boulder. Their farm dinner menu relies on each season and includes tasty microbrews that makes any Coloradan proud. This year’s Denver Restaurant Week was not surprisingly another hit for locals and visitors. Food and drink is the perfect way to celebrate springtime starting to blossom right around the corner.

All Aboard! EXPERIENCE DENVER’S UNION STATION ARTICLE AND PHOTOGRAPHY ERICA BONIFACE
Y
ou’d be hard-pressed to find a better destination in downtown Denver than Union Station. We recently went on an overnight trip to experience everything it has to offer travelers and locals alike. Yes, it was a tough job, but we’re doing it for the sake of you, readers. When we first walked into Union Station’s Great Hall, we stepped into a time warp to the 1880s. First opened in 1881, Union Station once saw as many as 80 trains a day. (On our visit, we didn’t see one.) But the old train station was recently revamped, bringing in new life to its ancient Denver bones. Greeted by the extensive 65-foot ceilings and stylish chandeliers overhead, black-and-white signage calls out the wares and fares of 13 different Colorado restaurants and retailers inside the historic structure. Today, there’s a train terminal, bookstore, quaint flower shop, bars, eateries, a coffee shop, even an old-timey ice cream parlor serving up some of Denver’s finest. With its historic architecture, antique furniture and its recent dose of TLC, it seems the Great Hall was made for Instagram. Despite the remodel, the hustle and bustle remains. There was an eclectic mix of travelers hurrying to catch their bus or train, families milling around the lobby, business executives sitting and socializing over coffee, and an abundance of urban hipsters. You know, doing their urban hipster thing. Our trip included a luxurious stay in the Crawford Hotel -opened in July 2014 -- dinner reservations at Mercantile Dining & Provision, and an early breakfast at Snooze, an A.M. Eatery. We used the valet to unload our luggage (let’s just say we’re not light packers, even for a one-night stay). When we arrived in our room, a crib was already set up for our 2-year-old travel companion. Nice move, Crawford. The hotel boasts 600 pieces of varied Western art throughout the hallways and in guests’ rooms. Our room featured vaulted ceilings, gorgeous floor-to-ceiling windows and truly one-of-a-kind interior design that didn’t make you feel like you were staying in a hotel, and a sprawling bed with an orange headboard. It took no time for our 2-year-old to test the jumpability of the mattress. Just so you know, it passed his requirements. The bathroom also featured a stand-up shower with two showerheads for a pure luxurious bathing experience. DINNER
The excitement or our trip surrounded the anticipation to dine at Chef Alex Seidel’s latest and newest restaurant, Mercantile. An elevator trip, a quick jaunt through the Great Hall and we were at the 5,000-square-foot, European-inspired restaurant and market. Chef Alex Seidel is best known locally for the award-winning Fruition Restaurant in downtown Denver. At Mercantile, he
doesn’t disappoint his faithful foodie followers. He swaps out the menu about 10-12 times a year. Appetizers range from ancient Ciabbata to the latest in food trends, bone marrow broth. We ordered cauliflower bisque ($20) with foraged chanterelles, fontina arancini, sherry mushroom duxelle with a careful placement of black burgundian truffles. It was delightful with an excellent mix of cream and spices that made the bisque one you’ll crave for days to come. For entrees, we ordered the Spanish octopus with fingerling potato bravas, garlic aioli, saffron tomato broth ($26). If you’re like us and a little hesitant to order octopus in landlocked Colorado, Chef Alex Seidel will put your fears to rest. The octopus is pulled from Spanish waters, tenderized on the boat and immediately flash frozen to keep its freshness. The flavor complemented the texture of the octopus to perfection. We also sampled the Acquerello Risotta with a truffled brined egg yolk and shaved black burgundian truffles ($21). It was a meal that was rich in flavor and left you fulfilled but not to the brink of popping a button. You can’t dine at Mercantile without trying one of their carefully crafted cocktails. We ordered the Ward Cleaver that was made with George Dickel No. 12 whiskey, apricot, cherry, pine and chestnut. We also ordered the Barbary Coast Swizzle, which has Ocho Plata tequila, ancho reyes, mint, lime, rekorderlig pear cider and peychauds. Both cocktails were a clever mix of ingredients and truly unique to the whole dining experience at Mercantile. Each specialty cocktail is $11. NOTE: Our 2-year-old approved of the chocolate milk the bar director carefully crafted for him. That’s all that mattered. BREAKFAST TIME
If you’re new to Denver or just aren’t a “morning person” then that’s the only way you haven’t heard of Snooze, An A.M. Eatery. Breakfast at Snooze was a great way to end our Union Station vacation. We were greeted by the most cheerful bunch of servers you could imagine, who quickly whipped us up some specialty lattes…and another chocolate milk for the toddler. We felt the need to indulge, so our meals included the popular OMG! French Toast and Ham Benedict III. The French toast was made specially gluten-free for us (almost all of Snooze’s menu can be made gluten-free) and came stuffed with mascarpone then griddled and topped with vanilla crème, salted caramel, fresh strawberries and toasted coconut. The Benedict was the classic breakfast staple with Snooze’s signature English muffin topped with shaved hickory smoked ham and a perfectly poached cage-free eggs and smoked cheddar hollandaise. All in all, in one night, we managed to take in all Union Station has to offer. It was truly amazing to see how the redeveloped Union Station has reclaimed a part of the city that was once so vital to Denver’s past.
