As I contemplate what 2017 will mean for me and my family my oldest daughter going to college (sniff, sniff ), my middle one prepping for college exams, and my youngest getting her drivers license - I am more acutely aware than ever of how quickly time passes. New Years resolutions I’ve made over the years suddenly seem trivial. Sure, I’m always going to need to get in better shape, eat more organic, and be more organized with the finances. But none of this feels new. Each of these goals should be an ongoing endeavor year-round, not just a random fit of discipline that possesses me because the calendar rolled over to a new year. What does feel new is an awareness that the only constant is change. And sometimes you have to paint the room to match the new furniture, so to speak. This can mean reaching out more to my community, those in need, and those who have different points of view. Putting aside old ways of seeing the world and striving for greater understanding, participation and improvement within my own community. After all, we’re all just humans, and we’re all in this together. As author Wayne Dyer famously said, “Change the way you look at things, and the things you look at change.” And while you’re pondering all the profundity of a fresh year, don’t forget to eat! Our theme this month is “Food & Wine,” and you’ll find plenty of epicurean delights close to home in the ‘burbs. Gone are the days of heading to downtown Denver for a good meal with fine wine; stay close in, reduce your carbon footprint, and spend less time driving. Here’s wishing you and yours a Happy New Year, filled with love, peace and an embrace of the wonderful and endless possibilities 2017 can bring.

SUPREMELY MOIST CARROT CAKE

• 1 cup granulated sugar
• 2 cups unbleached all-purpose flour
• 1 cup brown sugar
• ¾ tsp salt
• ½ cup vegetable oil
• 1½ tsp baking powder
• ½ cup unsweetened applesauce
• 1½ tsp baking soda
• ¼ cup whole milk plain yogurt
• 2 tsp ground cinnamon
(I use Greek, but any plain

CREAM CHEESE ICING: • 1 stick salted butter, at room temperature • 8 oz. cream cheese • 3 cups powdered sugar • ⅛ tsp salt • 3 tsp pure vanilla extract

INSTRUCTIONS 1. Preheat the oven to 350 degrees. Grease and flour a 9 inch Bundt pan. 2. In the bowl of a standing mixer fitted with the wire whisk (or a large mixing bowl and a hand whisk), mix together the sugars, vegetable oil and applesauce until well combined. Add the yogurt, vanilla, eggs and egg yolk and mix until slightly lightened – about 1 minute on medium speed. 3. In a separate bowl, blend the flour, salt, baking powder, baking soda, cinnamon and nutmeg with a wire whisk until combined. If using a standing mixer, switch to the paddle attachment and blend the flour mixture into the wet ingredients on medium-low, just until combined and smooth – about 1 minute. If mixing by hand, use a wooden spoon. Stir in the grated carrots. 4. Pour the batter into the prepared pan and bake for about 50 minutes. When done, the

cake will be pulling away from the sides of the pan slightly, and if you insert a toothpick in the center, it will have some cake crumbs stuck to it, but not batter. Let cool in the pan for 5 minutes and then invert onto a wire rack to cool completely. 5. When the cake is completely cool, mix all the frosting ingredients together in a bowl with an electric mixer for 2-3 minutes, until light and fluffy. Spread icing on cooled cake. Serve immediately with generous amounts of Caramel Rum Sauce, or store in the refrigerator for up to 4 days.
CARAMEL RUM SAUCE • 2 cups granulated sugar • ¾ cup butter (salted or unsalted) • 2 cups heavy whipping cream • 1 cup light corn syrup • 3 tsp sea salt • 2 tsp pure vanilla extract • 2/3 cup light or dark rum
INSTRUCTIONS 1. Put all the ingredients except the vanilla and rum in a large heavy sauce pan or Dutch oven over medium heat and bring to a boil. *The sauce bubbles up quite high in the pan, so use a large pan.

2. Reduce heat slightly and cook for about 30 min., stirring frequently, until the sauce is a gorgeous caramel color and registers between 230-240 degrees on a candy thermometer. 3. ince 2012 Carlin Karr has been working with Master Sommelier and Frasca Food and Wine Owner Bobby Stuckey as an advanced sommelier. Her career began while attending culinary school at the California Culinary Academy when Karr realized that her true passion was for wine. Karr has been recognized by multiple national publications and awards, including Forbes “30 under 30” in 2011, Wine & Spirits Magazine “Best New Sommeliers,” Eater “Young Guns,” The Wall Street Journal, The Denver Post, and Zagat’s “30 under 30.” Currently, Karr oversees the beverage programs at both Frasca Food and Wine, Pizzeria Locale and will be the Wine Director of the company’s new restaurant opening outside of Denver’s Union Station in December 2016. She took some time to fill us in on the wine basics everyone should know.

TASTING ETIQUETTE
With tasting wine, it is hard to go wrong. The most important thing is to be open-minded! Not all Riesling is sweet. Not all chardonnay is buttery or oaky. There is a big difference between Syrah from the Northern Rhone Valley and Shiraz (syrah) from Australia. I taste wine every day and am constantly surprised by having my mind blown by a new exciting wine from a region I thought I was not into. The world of wine (and beer, whiskey, tequila, gin, etc.) are evolving so quickly. Brands that you might have loved five years ago might have been bought and sold and could be producing completely different wine than they used to. The overall point here is to stay open minded and find a great sommelier or wine store that you know and trust to turn you on to new things. Don't think you know everything, because you don't. Nobody does. There is always something great to discover. TASTING REDS VS. WHITES
The primary difference between red wine and white wine is that red wine production involves a period of skin maceration, the skins are left with the juice while the wine ferments, while in white wine production, the juice is pressed off the skins prior to fermentation. This results in the tannic nature of red wine. The tannins of red wine come from the skin - you can feel the tannins on the top of your tongue, and on your gums - this is why tannic red wine, like sangiovese or cabernet is so great with a fatty steak - the tannins help cut through the fat.

serves 2 ¼ pound Italian sausage 1 tsp minced garlic 1 tbsp minced shallot 1 or 2 pinches of crushed red pepper ½ cup dry vermouth 1 cup clam broth 1 tbsp chopped fresh oregano 2 tbsp butter Approx. 16 Manila clams Cooked linguine In medium to large sauté pan, cook the sausage, breaking it up with a spoon as you go. Add garlic, shallot and red pepper and cook until garlic and shallots are browned. Add vermouth and clam broth. Bring to a simmer and add clams, butter and oregano. Cover pan and simmer until clams have opened. Add salt and black pepper to taste and toss with cooked linguine.

Toss in about 1 cup of white sugar and add 1-3 tablespoons of apricot oil (depending on how wet vs. dry you would like the scrub to be). Blend on medium or high until you have the consistency you’re looking for; I think I blended ours for about 45 seconds in our Vitamix.
