This month’s tasty treat, created by Clarissa Robinson, pastry chef of Hotel Vally Ho, is an ode to October. “October is the month of everything pumpkin spice and candy, and I wanted to combine the two into a delightfully over-the-top treat,” she says. Named the Pumpkin Smash “Show Stopper” Shake, the creation includes both chocolate and vanilla ice cream, salted caramel, peanut butter, pumpkin spice mix, pumpkin purée, Reese’s Peanut Butter Cups, Reese’s Pieces, peanut butter chocolate drops and a chocolate candy pumpkin on top.
“I love that it’s super fun and festive!” Clarissa says. “It’s entertaining to smash the little pumpkin open and watch the candy spill out.” ZuZu recently underwent a complete revamp and is celebrating its grand reopening this month. The restaurant is a modern take on the classic all-American restaurant of the 1950s. IT ALL STARTED WITH A RARE DATE NIGHT AT A COCKTAIL BAR. Lauren and John Maggio were in the throes of the early years with their four children and had the opportunity to be spelled by a sitter for the evening. And they were able to do just that—trips to three different liquor stores and $103 in receipts later. With her stash of ingredients, Lauren replicated that recipe a few times at home. But by the end of the season, she had moved on to another cocktail of choice. She thought there had to be an easier—and more economical way—to enjoy a bar-quality drink at home. The Maggios may have come up with a new kid on the cocktail block, but they are no strangers to the food and beverage market and what makes a successful business in this space tick. John is the co-founder of Boulder Canyon Chips. Lauren has a background in investment banking and interior design. The combination of an elevated cocktail in an easily portable vehicle makes these beverages ideal companions on quests where their glass counterparts cannot venture. “We are the solution for modern luxury in today’s cocktail industry,” Lauren says. “Consumers today want to experience life and adventures. EXECUTIVE CHEF JEFFREY (JEFF) PILDITCH HELPED ROLL OUT LINCOLN STEAKHOUSE IN 2017. He shares a long list of things that make this place special: the creative menu, the Josper charcoal oven, the ambiance, and especially, their welcoming arms open to the local community. “We have a lot of pride in our restaurants, and we really want the locals to come in to experience what we have to offer,” Jeff says. Even though he describes the restaurant, which is located at JW Marriott Scottsdale Camelback Inn Resort and Spa, as a higher-end steakhouse, he assures that they’re family-friendly and casual, too. “We have a simple approach, but refined techniques. vision—sprinkle a little talent in there, and that’s about it,” he says.
Their Josper charcoal oven is a bit of a star in the kitchen and the secret ingredient to their flavorful steaks. There are only a few of these ovens in the state of Arizona. All of their meats are cooked with a mixture of two specialty charcoals in the Josper. One is made with mesquite wood, giving the meat a smoky, regional flavor, and the other charcoal comes from an Argentinian tree called quebracho. It burns very hot and adds a clean flavor to their steaks. “You can have a 40-pound bag of quebracho charcoal burn down into a pile of ash that fits in the palm of your hand,” Jeff explains. They also offer seafood and vegan options. In fact, one of the vegetarian plates, the charred cauliflower steak with pine nuts, golden raisins, preserved lemon and Sicilian peppers, is on Jeff’s long list of favorites. He also recommends the short rib rigatoni, the Dover sole with caper brown butter, and of course, all of the steaks. “We have a proper Dover sole,” he explains. “You don’t typically come across that unless you’re at a fancy French restaurant.” They work with several local farms for fresh produce and dairy, such as Ramona Farms, which provides its Pima corn and tepary beans native to the Sonoran Desert. Crows Dairy provides them with goat cheese. THREE-TIME EMMY AWARD-WINNING STORYTELLER KAREN SCHALER SAYS THAT HER HEART IS HERE IN ARIZONA, AND BECAUSE OF THAT, SHE’S EXCLUSIVELY TRUSTING THE PHOENICIAN WITH HER PRIDE AND JOY—THE CHRISTMAS CAMP EXPERIENCE. The experience, which takes place in December, brings to life her Christmas Camp Hallmark movie, and the novels Christmas Camp and sequel Christmas Camp Wedding, published by HarperCollins. “Without doing a spoiler alert, there’s a scene in the Christmas Camp movie I was writing that I wanted to make sure would actually be realistic for a resort property to do. I was already thinking about places I would want to bring Christmas Camp to life, and The Phoenician was top on my list because it’s a property I knew and loved and had featured in my Travel Therapy TV segments over the years,” Karen explains. “I called my contact there, Denise Seomin, and first asked about my movie scene and then asked what she thought of the overall idea of a Christmas Camp like I was writing about. Denise told me she thought the idea of what I was creating in the movie was really special and if I really wanted to bring the movie to life, sometime down the road, that we should talk.” “That talk happened a lot quicker than either of us thought,” she continues. “Once the movie was done and I also decided to write the novels, I wanted to have the first Christmas Camp come out with the movie and novels. So, using a little Christmas magic, we made it happen last year.” “It is truly a wonderful time of year to be partnering with Karen, sharing the joy from her Christmas Camp Hallmark movie and books with our guests, while showcasing our premier resort and talented staff,” says Denise Seomin, The Phoenician’s director of public relations. “Karen’s passion for Christmas is truly inspiring, and we are thrilled that she will be hosting all of our Christmas Camp events. We look forward to bringing her Christmas Camp to life as a one-of-a-kind Phoenician holiday tradition.” The Christmas Camp experiences are Dec. 5-9 and Dec. 12-16. This is an adults-only camp that features Christmas Camp-themed events, including chats with Karen and holiday hosting classes. Some examples include Christmas Camp baking and culinary classes with award-winning chefs; Christmas Camp mixology, wine and cocktail tasting classes; Christmas Camp decorating, floral and craft classes; and more. The experience also includes specially priced rooms, breakfast, champagne and other special touches. “I created Christmas Camp to help share with people the power of taking a break, going somewhere special, relaxing, rebooting and disconnecting to reconnect with what matters most at Christmas,” Karen says. “In the movie and novel, one of my favorite lines I wrote is when Haley’s boss tells her she needs a ‘holiday attitude adjustment’ and to find her Christmas spirit, and that’s why she’s sent to Christmas Camp.” “I think we can all get up in the hectic holiday season and lose sight of what matters most, and that’s why I’ve created a real-life Christmas Camp so people can come to The Phoenician and take part in the holiday activities we’ve created that they’re inspired by, and hopefully return home more relaxed and a better version of themselves,” she adds.
