s your new publisher, I would like to sincerely thank the many people who have welcomed me into the community. I look forward to meeting many more of you. As males, we all possess different qualities and traits that define our individuality. Yet at the same time there are vast commonalities that characterize us as men. In this issue, we highlight just a handful of local, man-friendly places where we can experience some of the “guy” things that we inherently enjoy. The opportunity for manly endeavors are abundant and endless in our great community, whether actively playing a round of golf at one of the many magnificent courses in the area, reminiscing at a car show amidst hundreds of classic automobiles and motorcycles, hiking on one of the nearby trails, enjoying succulent, lip smackin’ barbecue or kicking back at a local sports bar or brewery with a cold beverage while watching the game and engaging in camaraderie. Derrick Hall, president and CEO of the Arizona Diamondbacks, also opens up about his battle with cancer and the foundation, Pro-State, that was founded through his beating it. He is an inspiration to not only just men but also to all people who have ever gone through a battle and come through victorious. With Father’s Day being celebrated this month, I would like to salute all dads who unselfishly commit themselves to raising a family by giving their unconditional love, devotion and most importantly, the priceless gift of time. To me, that’s being a great man! Looking back, it was the love, support, knowledge, kindness, patience and life lessons my father gave me that allowed me to grow into the person I have become today. For this and many other reasons, I am dedicating this issue to the greatest man in my life, my father. Dad, I love you and am grateful for everything you have done for me.

Scottsdale Firefighters Charities FIREFIGHTERS MAKING A DIFFERENCE IN PEOPLE’S LIVES AFTER THE FLAMES ARE OUT ARTICLE MICHELLE GUERRERO | PHOTOGRAPHY PROVIDED

I

believe that giving and kindness are both contagious and prolific. And once you give back, it’s difficult to stop. To prove my point, I present the Scottsdale Firefighters Charities (SFC), a charity run by people who already give, risk and sacrifice on a daily basis. “It’s really a fantastic extension of who our people are as firefighters. They are incredibly wonderful and generous people who take every opportunity to give back,” says Captain Sasha Weller of the Scottsdale Fire Department and president of the Scottsdale Firefighters Association (SFA).

in need and has also supported other programs like Foothills Animal Rescue through fundraising efforts. “One of our firefighters is cooking at a house in North Scottsdale for someone who won a dinner at a Boys & Girls Club event,” says Weller. “Another guy runs a charity dinner that is raising money for Partners for Piute and Scottsdale Prevention Institute. Some people volunteer for habitat humanity and Scottsdale Gateway Alliance.” The Scottsdale fire fighters are busy bees and work hard to help the community. They've fund-raised for Concerned Citizens for

The SFC is a subsidy of the SFA, founded in 1998 as a labor organization. Weller is one of the founding members. Originally there were around 160 charter members and today those numbers have grown to 215. “The charity is purely volunteer run and all members are involved in one way or the other. Some are very involved, raising money for causes like muscular dystrophy, while other have an interest and find a way to help,” says Weller. While they run some elaborate events, Weller says that the charity is grass roots. Occasionally people petition the SFC for support, but most of the time the firefighters see a cup that needs filled and figure out how to fill it. They have one gentleman who loves animals and has found different ways to help them. He runs a program to help provide pet food to people

Change, collect food for Vista del Camino’s food bank and supported Soles for Souls by collecting 10,000 shoes. Recently, they participated in a firefighters verses police officers chicken wing eating competition to raise money for the Boys & Girls Club. In the spring, you can find them collecting donations for their Fill the Boot campaign at the Scottsdale Stadium, when the San Francisco Giants are in town for training. In the fall they are collecting for Toys for Tots, and run their own drive to raise thousands of dollars to give toys to teens, who are often except from toy drives. The SFC kicks this fundraiser off with a big pancake breakfast. “Something charitable is going on at least every two weeks,” says Weller. “The community treats us well and we love living and working in Scottsdale.”

Weller appreciates both the firefighter support of the SFC, but also the generosity of the Scottsdale community and feels very protective of their donors. “If you donate to the Scottsdale Fire Department, you know who you are donating to,” says Weller. “If you are getting a phone call asking for money, you are being scammed. We will not do that. We are choosy how we raise our money. We want to keep the public’s trust. There is no confusion or mistake that it’s us you are donating too. We don’t mail solicitations and if you get something in the mail asking for money, it’s a scam.” You may, however, receive public safety information via mail, without a donation request. To help with my agenda to prove that giving and kindness are both contagious and prolific, I asked Weller a crucial question. I asked why he thinks people who give as a profession, would spend hours volunteering and fundraising for a community they already serve. His answer is telling. “I think it’s a part of the personality of a firefighter. A firefighter is a giver by the nature of what they have chosen as a profession. They are truly giving people who are in an incredibly rewarding job. It’s a reward to give back. I don’t know that there is a better reward than that. Those are the kind of people we like to work with and around.” I think I prove my point. I tip my hat to Captain Sasha Weller, because although he refers to these generous firefighters as “they,” sneaky me realizes that he, too, is one of “them” who choose to give unconditionally. When next you see a firefighter out in the community with a boot in hand or collecting toys or canned foods, please help so that they can continue to help those and need and do amazing work in your community.

elatively new to the Scottsdale burger scene, Hopdoddy Burger Bar has definitely shown they know what it takes to make a great burger. They’re the proud recipients of the 2014 and 2015 Best Burger award given at the Scottsdale Culinary Burger Battle. The executive management partners know a lot about what is needed to create a successful restaurant, thanks to legendary Guy and Larry, the restaurant duo Guy Villavaso and Larry Foles, with partners Chuck Smith and Larry Perdido. The Guy and Larry Restaurants LLC have under their belt Effie V’s, Whitefish, Z’Tejas, Roaring Fork and Salty Sow.

AN UNUSUAL NAME

The first question I asked was about the restaurant name. I learned that “hop” is named after the handcrafted beer. And “little doddy” is a nickname for the native cow in Aberdeen, Scotland. It’s a perfect choice to describe the union between burgers and beer. The first Hopdoddy opened in Austin, Texas, on October 20, 2010, and the Scottsdale location opened on October 20, 2013. This fast, casual restaurant was formed with quality as one of the key ingredients. They continually look for fresh, all-natural ingredients and have partnered with local farmers and ranchers. “We pay close attention to detail bringing in the best products we use. The hand-cut fries are made from Kennebec potatoes brought in from Washington State because when fried they become more crisp and flavorful,” states Charles Craig, director of Culinary Development & Standards. “Our goal is to create a great quality burger at a great price.” The restaurant is fast casual with a full service mentality. I started my sampling with a juicy Classic Burger, which has red leaf lettuce, white onion, tomato and a sassy sauce, classic cheese, bacon cheese and it was very good. I also thoroughly enjoyed the Ahi Tuna Burger made with sushi-grade tuna, sprouts, teriyaki sauce, honey wasabi, nori chips, pickled ginger and mayo. It was like eating sushi on a bun. And, I sampled 14

the Buffalo Bill burger made with bison meat which was very tender and melted in my mouth. Other items on the menu include a Greek burger that’s made with lamb, feta cheese, arugula, onions, tomato, cucumber and a Tzatziki sauce. The Thunderbird is a chicken burger made with Tillamook pepper jack cheese, apple-smoked bacon, avocado, seared poblanos, pico-de-gallo and a chipotle mayo. The Continental Club is made with turkey, provolone, apple-smoked bacon, arugula, mayo and a basil pesto. The La Bandito is a veggie burger made with black bean-corn patty, goat cheese, arugula, cilantro pesto and mayo. The salads are made with fresh organic greens and the selection changes with the season. There’s a Hail Caesar Salad with Romaine hearts and leaves, tomato, carrots, fried chickpeas, shaved parmesan, potato hay and Caesar dressing. The Spinach Arugula Salad is made with fresh beets, Texas goat cheese, toasted pecans, sugar snap peas, gala apples and sherry cane vinaigrette. And the Baby Kale Salad is has arugula, feta cheese, roasted butternut squash, roasted corn, onions, pepitas, dates and pomegranate vinaigrette. A “Pro-State” of Mind Taking a Stand Against Prostate Cancer AUTHOR DANIELLE ACCOVELLI | PHOTOGRAPHY JENNIFER STEWART

P

resident and CEO of the Arizona Diamondbacks Derrick Hall made a name for himself in baseball for his pioneering spirit, driving determination and always-positive attitude. However, on the morning of September 17, 2011, Hall received the devastating news that he had prostate cancer. After a long and tearful conversation with his wife, Hall made the bold decision to go public with the news. A naturally positive person, Hall was determined that he could and would beat prostate cancer, and with the help and support of his family, he endured surgery and treatment all with unwavering positivity. Along

the way, Hall openly shared his journey and the challenges that he faced, encouraging all men to get tested for prostate cancer and viewing his battle as an opportunity to be a resource for men. With this in mind, the Derrick Hall Pro-State Foundation was founded as an open platform where men could go to and get the tough questions answered. Today, the Foundation offers a vast array of resources and support for both men and their families with the vision of driving awareness, educating men and encouraging them to get tested. Here, Derrick Hall shares his inspirations and plans for the Pro-State Foundation.

WHAT WAS YOUR BIGGEST INFLUENCE IN STARTING THE DERRICK HALL PRO-STATE FOUNDATION?

My motivation was really just to help others and to let them know my story, let them know that they should not be embarrassed or scared, that there are men out there to help them through it. Ultimately, I would love to know that there’s a cure for it other than just surgery or these other methods, but until then I want to make sure that I can walk people through all the different options, make sure they can put their minds at ease as they are going through it, and put their families’ minds at ease, too. It’s not just


a website for men, but a website that women and family members and friends can go on as well to know what their husband, what their father, their uncle, whoever, may be going through, and to be there to help them and support them as well. YOUR MOTTO IS “A PRO-STATE OF MIND IS A POWERFUL MEDICINE.” WHAT DOES THAT PERSONALLY MEAN TO YOU?

Just the name in itself -- rather than "prostate" to change it to “pro-state” with a hyphen, and to make it a “pro-state of mind,” -- because I think every patient, every victim needs to make sure he, or she, when it comes to cancer, is as positive as possible to get through it. It’s amazing the recovery time, the ability for the body to recover when the mind is going through positive thoughts, and so I’m just trying to remind men, especially those going through prostate cancer, to have a very “pro-state of mind,” and that was really the vision behind the name. HOW IS MAINTAINING A “PRO-STATE OF MIND” ESSENTIAL WHEN BATTLING PROSTATE, OR ANY OTHER CANCER?

Personally, that’s just who I am. I’m a very positive person. I love life, I live life to the fullest; I think everybody needs to, and cancer can create such a dark cloud over our heads that we have to find a way to turn it into a positive. It’s all about over-

coming diversity and getting through it knowing that there are others with you and that you’re not alone, so naturally you want to stay as positive as can be for them as well. I admire those who fight any disease, and in particular cancer, with a strong attitude and a positive mindset and tend to believe that survival is a little longer, and in some cases completely defeated, because of that positive will and that positive attitude. I highly encourage people to stay as positive as can be and if our name and if our foundation provides just a glimmer of that, and a bit of hope and light, then its extremely rewarding for me.

WHAT ADVICE WOULD YOU GIVE TO MEN BATTLING PROSTATE CANCER?

I would say, as I say to all of them, “You’re going to be okay, your life is going to change a little bit, but you’re going to be okay.” For me, I believe that everything happens for a reason, and I believe that I got cancer so I could share it with others; share my story and hopefully be encouraging and motivational for them to battle it, and use my national platform and stage here with a major league baseball team to spread the word. I always tell people that there were some dark days, but for the most part it’s okay and you’re not alone.

HOW HAS SURVIVING PROSTATE CANCER IMPACTED YOUR OUTLOOK?

WHAT ARE YOUR FUTURE GOALS FOR

It definitely changed it. I think at first there was definite depression and fear, you start thinking about your own mortality, but then you quickly turn it around. There’s something extremely powerful in saying that you’re a cancer survivor, and so that’s the way I was looking at it. I’m always going to have it in the back of my mind, there’s always going to be that anxiety because I still need to be tested and there’s always that fear that it could come back again. But then you can’t control that, and things that you can’t control you shouldn’t let lead your life, so I just keep thinking about all the positives—having beat it—and I continue to believe, and I always will.

The vision is to one dat make sure that we have a surplus of individuals that have gone through cancer who are willing to volunteer their time, their voice and their experiences. Then, taking it a step further where I can partner with some of the other foundations that are currently providing testing and see if we can’t either reduce dramatically the cost of testing or provide free testing and screening throughout our state and eventually go nationwide. T

he German sausage kitchens of Central Minnesota are certainly a long way from the Valley of the Sun, but after years of cutting meat in shops in and around the Twin Cities area, Dick Liddy had a hunch nearly 40 years ago that the skills he had honed, coupled with a strong Midwestern work ethic, could translate to success in the heart of the desert. The story of Scottsdale’s French’s Meat Shoppe actually goes back to 1969 as a small shop opened by Don and Darlene French located at Granite Reef and McDowell Roads. After establishing themselves as a premier butcher in the area, Don sadly passed away while playing golf, and shortly after his wife was looking to sell the shop. As luck would have it, Dick had just relocated his family to the area and was ready to buy, and in January of 1977, he took over ownership of the shop. “I inherited it with one employee and had to lay them off within the first six months,” recounts Dick as he reflects back on the struggles of those early days trying to navigate running his first butcher shop. “After letting him go and having to do everything myself, I realized that I had a real interest in the wholesale business, and was able to start securing some accounts which are still with us today.” Mainly through word-of-mouth and fostering good relationships with local restaurants, Dick was able to get things going in the right direction to the point where shortly after a decade of owning French's, he had outgrown the original space. Eventually the shop relocated near Eldorado Park, where it remains today. Though the majority of French’s Meat Shoppe’s business still resides on the wholesale side, they have never given up on a desire to offer an amazing product at a fair price directly to the public. All of their sausages are made to order, and they grind their beef fresh every night. They never use fillers or by-products, and the quality speaks for itself, as a recent poll of

the top 20 burger’s served at Choice New York's metro area restaurants reveals that four of them use French’s ground beef. Shortly after relocating French’s also started to play around with a seasoning blend that they have perfected over the years in both their signature Fiesta Seasoning as well as a spicy version with Jalapenos. This year they have also started to dry-age Prime New York Striploins as well as Prime 109 Beef Ribs. Both take upwards of about six weeks but the result is a cut of meat that will stand up against any other in the Phoenix area. One of the best aspects of French’s Meat Shop is that Dick has been able to keep it a true family business. Each of his four kids have worked there at one time or another over what is now almost four decades, and most continue to play an active role in the business today. “One of my daughters has taken over most of the office while one of my sons works nights taking care of that shift by grounding beef and making patties,” says Dick. “My other daughter helps out with the telephones and that kind of stuff and it has all just been a really great experience.” Dick has also had a passion to keep his company involved with the community. From that very first year they started donating hot dogs to the Scottsdale Little League, which is something they have continued doing ever since. French’s also donates hot dogs to the city for special events throughout the year, as well as chicken to some of the food missions throughout town. ecently, a jury awarded Julie Miller $18.6 million from a credit reporting agency for failing to correct inaccurate information on her credit report. According to the findings, the lack of action by the agency resulted in missed credit opportunities for Miller, a damaged reputation and the inability to obtain credit to help her disabled brother—a very costly mistake. “Today, information on credit reports is tied not only to the ability to access credit and better interest rates, but also to the amount you pay for insurance, deposits on services and even employment,” states Jana Castanon spokesperson for Apprisen. The Federal Trade Commission says that one in five people have an error on at least one of their credit reports which could mean money coming out of consumers’ pockets that doesn’t need to be. In order to ensure that credit report errors are not costing you, Apprisen offers these tips to help:

You are entitled to one free copy of your credit report once a year from each of the three credit agencies through AnnualCreditReport.com. A good practice would be to check one of the reports today, another four months from now and then again four months thereafter. Parting Thoughts

A Tribute To Dad WORDS MARK RUSSELL

M

y father, Lawrence Gibbilini, was born on the north side of Chicago in 1918. When the crash of '29 sent the country spiraling into the great depression, Dad, along with his six younger brothers and sisters, helped make ends meet by selling their mother's pizza door-to-door; some say the first pizza delivery ever. Despite the tough times, the pizza business took off. Dad was in charge of the distribution department but quickly tired of organizing his siblings and requested a transfer into production (the start of his cooking career). His mother, a great traditional cook, taught him the secrets of her pizza and many other family recipes. My dad, on the other hand, liked to experiment and actually started using fresh vegetables and whole wheat in his recipes (to the horror of his mother) before it was in vogue. When my dad was eighteen, his mother sold her pizza business and decided that Lawrence should go into the bricklaying business with his father. But Dad had a passion for cooking and refused to give it up completely. On weekends he would throw a large checkered tablecloth over the dining room table, drag up every chair in the apartment and invite all his friends, family and acquaintances over for dinner. He would serve them his variations of time-hon-

ored Gibbilini dishes as well as recipes he was developing. Most received outstanding reviews and earned him the title of “Lawrence of Oregano.” Dad’s pasta and sandwiches were great but his pizza, stuffed and thin crust, were his crowning achievements. Over the years, it seemed we always had family and friends over, eating, drinking, talking and listening to old Frank Sinatra and big band records. My dad truly practiced his philosophy about life: the key to happiness is friends, good food and music. My dad died at the age of 72 while cutting the rug to Frank Sinatra with my mother. Years later, I cleaned out his garage and found close to a thousand assorted plates, glasses and silverware (none of which matched) that made me think he’d been collecting them for years in hopes of opening his own restaurant. I wish I had known. All in all, I’d have to say that was probably Dad’s only regret in life. He was well-loved and thought of by his family and friends and lived life with a zest that I can only envy. We miss him greatly. Founded by Mark Russell in 1993, today Oregano’s Pizza Bistro has 15 locations across the state of Arizona.
