ealthy living is the mantra for the millennium. We watch what we eat. We exercise. But do we look as young as we feel? A healthy appearance depends on how we take care of our body’s largest organ: our skin. Reducing stress, applying sunblock and getting proper nutrition are key. Vitamins A, B, C, E and K improve skin tone, texture, elasticity and thickness. Vitamin A is important in the maintenance and repair of skin tissue. New pharmaceutical-grade Retin-A is a common topical application of vitamin Al, promoting the exfoliation of the outer dead cells and thickening of the deeper dermal layer of skin and with less irritation. Vitamin B strengthens skin and can be found in oatmeal, rice, eggs and bananas. Hormone levels contribute to skin, health and maintenance. Estrogen thicken the skin, reducing wrinkle formation and also improving moisture retention. Thyroid hormones also increases skin’s moisture levels. nplug for some good, clean frenzy-filled fun during a live-action game. So-called “escape rooms” are the latest craze sweeping the world, and one called Escape on Palafox is expecting to open over Elebash’s Jewelers in downtown Pensacola this month. Here’s the premise: groups of three to eight guests are escorted to one of three rooms that has a theme: “haunted,” “secret agent” or “museum robbery” are the three at Escape. Guests are briefed about the game and then “locked” in the room. They can’t come out until they solve all the confusing clues and crack the codes by thinking outside the box. Deciding on strategies will likely leave guests scratching their heads and scrambling to beat the clock, which runs out in 60 minutes. The success rate is only about 50 percent, says Patrick Elebash, one of the four owners. “I’d describe it as a cross between ‘Mac-

Here is more information about the themes of each fully decorated room: 1) MUSEUM ROBBERY: A rare and priceless piece of art was recently stolen from one of America’s most prominent museums. Your team has infiltrated the residence of the alleged thief and now must quickly recover the stolen art. But be forewarned! The thief will be away from his home for one hour. Fail to recover the stolen art and exit the residence within 60 minutes, and there will be consequences! 2) THE SECRET AGENT: One of our agents has turned to the dark side and has been spying on fellow agents. Intelligence sources say the double agent is seeking to sell a list of our agents to an enemy country. Your mission – if you are willing to accept it – is to find the agent list and identify the double agent.
You find yourself in a room haunted by a woman who died many years ago. People hear strange things in this room. Some say that, if you stay in the room for more than 60 minutes, you will be cursed forever. To avoid the curse, and to get out of the room you must find out why the woman haunts the room. The guests lucky enough to escape should opt for a different room their next visit since they will know the secrets. The owners plan to change up the rooms down the road to keep people coming back. Elabash discovered escape rooms when he, his brother and a friend were visiting Las Vegas in the spring. When they were asking around for something new and fun to do, someone suggested it, and they ended up having a great time. Although these types of businesses have been touted in the national press as potentially lucrative, Elebash says he doesn't expect that will be the case for Escape because of the costs of locating it in a historic building with strict building codes. However, he says the joy of introducing this new pastime to the community will be worth the extra effort and financial sacrifices. “Our goal is to provide a really unique experience,” he says. "We think it will be a great activity for friends and families looking for another fun activity downtown." 3) HAUNTED:

“You can see those vectors that were drawn in the classroom and how they come to life with the movements of the boat,” says Tom Patterson, a retired engineer. “To expose the concept and the many sciences involved with sailing to those who might not otherwise get the chance, we want Satori to reach into the community to serve the Pensacola youths who might not otherwise get the chance.”
atori sliced through small swells on Pensacola Bay, gliding past channel markers on its way to Pensacola Pass. Since 2001, the 52-foot blue-water yacht had safely sailed its owners Tom and Carol Patterson across the Atlantic to Portugal and back, plowing through oceanic swells and storms as they traversed the open Atlantic and the Caribbean Islands. But on this day, Satori isn’t headed for the deep blue offshore water. She sails a new, uncharted course—led by a new crew, with new passengers and a new vision. Satori now is a gift—a living, learning platform to teach children of Northwest Florida. Virtually lifelong sailors, the Pattersons donated their cherished sailboat to the Satori Foundation, based at the Pensacola Yacht Club. Through the foundation, volunteers take school and youth groups on sailing encounters, offering sailing for children who might not otherwise get the opportunity. Sailing is exhilarating, but also provides handson experience, yet there are serious forces at work to make all this happen. Laws of aerodynamics, physics, meteorology, hydrodynamics—and tactics that have to shift with every breeze. Opening children’s eyes to science, technology, engineering and math. That is the vision for Satori, Tom and Carol Patterson say. CONTINUED >

Designed and built for the Pattersons by Shannon Boat Company in Rhode Island and christened in 2001, Satori was built to sail long voyages over the open ocean. Her main mast stands six stories tall. The onboard systems are designed for reliability and safety, with wide walkways, high railings and handholds throughout the vessel. The centerboard hull allows anchorage in shallow Caribbean and Gulf ports. Now Satori—a name the Pattersons chose from its meaning of enlightenment, or an “aha moment”—will serve as the flagship for a growing, community-geared sailing academy as part of the Satori Foundation. The Pensacola Yacht Club has held a summer bay sailing camp for more than 15 years, but the foundation can expand on that with a higher level of training while offering sailing experiences for community youth groups. The long-range vision is an expanded academy that blends participants with scholarships in the same manner that the YMCA offers summer camps. The community—and the sailing community—have responded with help. A New Orleans physician donated his 20-foot sailboat, Victoria, to the foundation. Designed by respected yacht architect Robert Perry, she resembles a 1900’s sailboat but has a carbon fiber heart, and she’s a purebred bay and ocean racer. “It started with the Pattersons, and now it really has picked up momentum. We’ve been going full speed for the past six months,” says Denis McKinnon, president of the Satori Foundation. “We can see how much these kids are enjoying it. It will take some time, but there’s a great vision for this foundation to help expand the next sailing generation.” The Satori Foundation volunteers from PYC took the flagship through its paces recently in Pensacola Bay on trips for children from the Boys and Girls Clubs in Pensacola and Big Brothers and Big Sisters. Sailmaster Tim Burr gave the children a safety briefing and a quick lesson on the science and strategy involved in the day’s sailing. Pensacola Yacht Club volunteers prepare lunches for the children, and Satori was prepped for a safe day’s sail. 20

Sailing looks peaceful from the outside. Onboard, it’s a carefully orchestrated frenzy. Burr noses Satori on her course, and the crew raises the sails. Motors and bare hands crank winches to tighten loops of line. Burr watches the angle of the sail as ruffling canvas turns into a singular thump when wind fills the sails. The massive boat heels to the wind and surges forward. It’s a rush.
The Satori Foundation trustees include McKinnon, McMillan, Burr, George Gamble and Bruce Partington. The Pattersons praised the work of the Satori Foundation and Cathy Laird with the Community Foundation of Northwest Florida, who guided Satori to its 501(c) status. “That’s what is so exciting about Pensacola. They’re open and want to get things done to help strengthen the community,” Carol Patterson says. “Everyone understood the vision and the gift of this boat. It’s not about the gift from the Pattersons. Satori is such a gift. She is such an awesome boat.”

ass the umpteenth cotton field, veer into the thicket and follow the winding white gravel road that appears to lead to another humble farm, hunting camp or rustic residence in Milton. Some foodies may be familiar with Coldwater Garden’s vibrant vegetables and other mouthwatering wares at Palafox Market. But few have caught a glimpse of the “glamping” (“glamorous camping”) tents and the brand-new contemporary-chic buildings, from the lodge to the five cottages and even a bathhouse that won a prestigious state award for design this year. A collaborative design studio at Pensacola’s Dalrymple | Sallis Architecture worked to create the unique seven structures. “The straight Cypress siding on spacers over a liquid-vapor barrier creates a more contemporary look than lap siding,” says Scott Sallis, a principal at the full-service architectural firm. Rusty Erdman, the owner of Coldwater Gardens, describes how he and the architectural firm decided on the look: “When I saw what the collaborative studio came up with for the terrace (lodge), I was enthusiastic and supportive, and I worked with them to come up 22

with the final design. As for the cabins, we tried to come up with the same design ideas: high beams, a cypress interior and exterior, and plenty of comforts. The simple square shape was chosen out of economics, trying to keep the price down.” If the 360-acre property’s upscale organic architecture and outdoor lifestyle evoke Frank Lloyd Wright, there is an explanation: America’s most famous architect was a close colleague and friend of Erdman’s father. Marshall Erdman built several Wright-designed houses and was a renowned and prolific producer of prefabricated structures. Rusty recounted growing up on 80 acres of rolling hills in his hometown, Madison, Wis. Made from local materials, the rustic yet elegant house there resembled Wright’s. “I remember collecting butterflies and hatching monarch caterpillars during my childhood summers,” he says. “My mom had a large garden, from which we feasted frequently, even into the winter with all her frozen and canned fruits and veggies. I remember clearly all the asparagus, rhubarb, beans, corn, tomatoes, eggplant, berries and fruit trees.”

A majority of the property is dotted with longleaf pines that have been planted as part of a restoration project. “Our goal is to educate people on the environment and how to enjoy everything the land has to offer responsibly,” says Nick Phoenix, Coldwater’s operations manager.

After a bad experience in the great outdoors on an Outward Bound, Laura Russell vowed never to go camping again. But she realized she wasn’t out of her comfort zone on a recent visit to Coldwater Gardens with family and friends. She found out about the place from her husband, owner of Kevin Russell Builders, who is friends with Dean Dalrymple and Scott Sallis, the principals at the architectural firm that built Coldwater. “It has a hipster-vegan vibe, and even the beds are very comfortable,” she says. Though he enjoyed fishing and camping in his youth, he was never a hardcore camper. “I wasn’t a good Boy Scout, and I did not consider myself a competent outdoors person,” he says. But, after decades in the tech industry, first as computer programmer for his father’s business and then as owner of Erdman Video Systems in Miami, he traded tall buildings for tall pines. For the past four years, he has been experimenting as a consultant for his company, which sells and rents turn-key, high-definition, time-lapse construction webcams. “I kind of withdrew from the tech world and started experimenting with hydroponics,” he says. “During the last 18 months, I’ve focused almost entirely on Coldwater Gardens, and here we are.” “Glampers” are only steps away from this swanky bathhouse, which earned Dalrymple | Sallis Architecture a prestigious state award: The American Institute of Architects Florida/ Caribbean’s Merit Award of Excellence for New Work.

CAJUN KALE CHIPS INGREDIENTS:
• ½ cup olive oil • 4 cups chopped Coldwater Gardens mixed baby kale • Sea salt, to taste • Cajun seasoning, to taste • Cayenne pepper (optional) DIRECTIONS:
1. Heat the oven to 350 degrees. 2. Drizzle olive oil over a roughly chopped bag of Coldwater Gardens mixed baby kale and spread onto a sheet pan. 3. Sprinkle generously with sea salt and Cajun seasoning. For an extra kick, add a dash of cayenne pepper. 4. Bake for 20 to 30 minutes, turning at least twice.

THE GARDEN AND FARM:
Of the 360 acres, five are production acres filled with sprawling gardens. Two greenhouses, two high tunnels, vegetables, fruit, livestock, honey-bee hives, herbs, ornamentals and edible flowers are some of the fun finds. The year-round gourmet produce is Certified Nationally Grown, which is essentially the same as organic but is a simpler, less expensive designation. The staff experiments with cutting-edge growth techniques, including the implementation of vertical hydroponics gardening systems that allow faster growth in a smaller space, with less water and without the use of soil. At Coldwater, owner Rusty Erdman came up with the idea to use sewage pipes to grow broccoli and other vegetables quickly and inexpensively. Also, an aquaponics system on site cleans the waste of koi, a type of fish, to fertilize the gardens and then recycles the water back, minimizing wasted water.

W
ith a family the size of a small compact car, I often use the term "family" to describe my friends. My lineage is a long thin vine, rather than a large leafy tree, due to circumstances and odds that would win the lottery, if played. My mom was an only child. My dad was an only. Both of my paternal grandparents were only children. My husband is an only child. And, of course, I round out the roulette wheel as an only. Norbert and I had two kids so fast, it made the four grandparents’ heads spin. As soon as our children could talk and watch Mr. Rogers, they wanted to know where all the cousins were. “Is this a cousin?” they’d ask as the babysitter walked in the door. I had learned from my own childhood that “aunts” and “uncles” could be created; so, as an adult, I figured I must be able to conjure up some cousins for my kids. It wasn’t as easy as I’d thought. As I contemplated my friends in terms of being family members, it occurred to me that they had plenty of relatives, and might not be so thrilled to have to take on mine as a hobby. But finally, after reaching my half-century mark, I have come to realize that many folks in many places have reasons to create extended families. We are only a drastic case due to our very small numbers—there are just four of us in total, that is until we get to the branch of third cousins twice removed, whatever that means. We 34

could bulk up the numbers with the multiple-removed people, but we don't really know them well. Who we do know and want to spend time with are the friends now designated as family. Every Christmas night when I was growing up, we had an open house for anyone who needed someplace to go on a dark holiday night. My parents were inviting their “family” into our home for a holiday. (At the time, I thought it was just a ploy to delay my union with my newly opened gifts!) It was always a wonderful experience where people literally came in out of the cold to celebrate the season and the fellowship. Thanks to some wonderful friends, of multiple generations, we have recently spent some very rewarding time with our "family." Our inclusion in a rehearsal dinner, wedding, and surrounding festivities; our invitation from a dear friend to celebrate her mother’s birthday; and our crazy holidays spent with anyone who will have us, all add up to family. Lest you think I’m getting carried away anticipating the holidays this year, it does translate to our daily lives. As you read this magazine, think about the families who are being helped, often by people they’ve never met in soup kitchens and food pantries. Think about the families to whom you’ve become attached through work, play or philanthropy. It’s powerful stuff.
