Publisher’s Letter
Welcome!
JUNE 2015
H
ello, friends and neighbors! I’m thrilled to welcome you to the very first issue of Point & Plover Lifestyle. This publication is dedicated to our local community and will come to you each month full of stories and information about our neighbors, local businesses, events and activities. In planning for our first issue we had many local residents tell us how they have always wanted a publication for and about our community. Some have called this a year book for the community, others a monthly scrap book. All have called it a great idea and eagerly anticipated the arrival of the inaugural issue in their mailbox. Well, thank you for your patience! The first issue has arrived. My family has had the pleasure of living here for 25+ years. We have had the opportunity to see how special these communities are, and continually learn of residents with special stories worthy of sharing. My four daughters tell me daily about a student they know that stands out. And, our family makes it a fun task each month to visit a new area business or enjoy a local activity we haven't attended before. Each month we'll share the stories of those special residents, students and offerings right here in these pages. Our mission is to provide a quality local publication full of positive stories showing us how unique the Stevens Point and Plover communities are. We'll always include an event calendar, which everyone has asked for, to showcase options everyone can enjoy. No more saying, “There is nothing to do in town.” The “Good Times” and “Around Town” sections will have follow up pictures and quick stories about previous happenings. Be sure to check it out each month. You are bound to see or read about someone you know. That someone could even be you! Enjoy each issue and keep it at your ready reach for the entire month so you can see what is going on around town. We hope you learn a little more about your friends and neighbors, and that you have a great time at the local occasions. This magazine could not be possible without the support of its many sponsors. Be sure to show them how much you appreciate their support of your local publication by supporting them and their valued community businesses. Last but not least, if you know of a local resident or business that we should all know about, or if you have an event or activity you want to share with everyone in the Stevens Point and Plover communities, please let us know so we can share it with everyone. Thank you for being our neighbor and friend.

Around Town OAKRIDGE COMMUNITY TO EXPERIENCE FLIGHT OF LIFETIME On June 5, at the Stevens Point Municipal Airport, Emeritus in the Oakridge Community will experience a flight of a lifetime through the Ageless Aviation Dreams Foundation (AADF). AADF President Darryl Fisher restored the Foundation’s plane, a 1940s Boeing Stearman, with the goal of recognizing veterans living in long-term care communities through providing a memorable experience in flight. The “Dream Flights” are made possible through sponsors, such as sponsor Sport Clips Haircuts, a sports-themed salon franchise that specializes in hair care for men and boys and has more than 1,300 locations across the U.S. Through Sport Clips’ support as primary sponsor, AADF will be able to launch approximately 520 flights across the U.S. this year, up from 84 flights in 2014. The Ageless Aviation Dreams Foundation is a non-profit organization established and dedicated to honoring seniors and United States military veterans. For more information, email darrylf@agelessaviationdreams.org or call 775.737.8906.
UW-Stevens Point faculty and staff are fine-tuning building specifications and expect to receive final drawings for review in late June. Bids for construction are scheduled to be released in late August, and opened a month later. With successful bidding, a contract will be awarded in October. Ground breaking is scheduled for mid-October. Construction is expected to be completed in November 2017. The 176,500-square-foot building will contain educational labs, lecture halls and research facilities for biology and chemistry. Flexible room configurations combined with modern technology will support hands-on learning and student research, hallmarks of a UW-Stevens Point education.

Harmony Living Center will host a presentation to learn about an ongoing "Life Story Legacies" project in Portage County. UWSP students learn how to conduct oral history interviews to document the lives of residents at Harmony Living Center, in Stevens Point. A powerful connection evolves between the student and the elder, resulting in a permanent keepsake of a life that will always be remembered. Printed Life Story booklets are provided to the elder, student, Harmony Living Center, UWSP Archives, and the Portage County Library Archives. "Documenting Life Stories for Generations to Come" will be held at 5 p.m., Monday, June 22 and will be presented by Lynn Ludwig, Assistant Professor of English at UWSP. The presentation is to be held at 1801 Lilac Lane, Stevens Point. It is for Harmony residents,
their families, and the community. Dinner to precede the presentation. Please RSVP by June 19. For more information, contact Tammy Paige at 715.340.1830.
DEMENTIA-FRIENDLY COMMUNITY The Portage County Dementia-Friendly Communities Task Force is working towards Portage County becoming recognized as a dementia-friendly community with assistance from many community partners and the Aging and Disability Resource Center’s (ADRC) dementia care specialist, Barb Evans. “A dementia-friendly community is a place where people living with dementia are supported to live a high quality life with meaning, purpose, and value," says Kylie Watkins of Alzheimer's Australia. In 2013, an estimated 5.2 million Americans had Alzheimer’s disease or another form of dementia. Wisconsin is estimated to have approximately 120,000 people with Alzheimer’s disease or other dementia. Of that number, about 12,000 people are living in nursing homes and 18,000 in assisted living centers with remaining people living in private residences.
‘SIZZLE’ THIS SUMMER WITH UNITED WAY’S LEARN FOR LIFE United Way of Portage County’s Learn for Life plans to heat this summer up with its first-ever Summer Sizzle Children’s Reading Series. Twice a month on Thursdays at 10 a.m. beginning June 11, local “celebrities” will read to children attending the reading event, and the business sponsor will give books to people who attend. The first reading on June 11 will take place at KASH Park in Stevens Point and will feature an employee of Central City Credit Union, which is sponsoring the event. “Summer Sizzle reading events will show children and their parents the value of reading throughout the summer in an enjoyable way,” says Laura Pfeil, United Way Community Initiatives Associate who oversees the program. Program tutors recently had the opportunity to nominate their favorite teachers of the program for Learn for Life’s “Grow Your Library Fund” Award. This year’s recipients, Tori Suhs of McDill Elementary School and Carleen King of Rosholt Elementary School, each won $250 to use on books to grow their classroom libraries. Marten Machining co-sponsored the award with Learn for Life. Learn for Life will provide summer school tutoring again for students in the Stevens Point Area School District. More tutors are still needed for the six-week course that runs from June 15 through July 24. Tutors will receive training and will work with students one hour each week. In addition, Pfeil said more tutors will be needed for the 2015-16 school year. For more information, call 715.341.6740, email volunteer@unitedwaypoco.org, or visit UnitedWayPoco.org/learnforlife.

Tea, Oil and Vinegar DIVERSI-TEA SERVES AN “AROMATIC TWIST” TO DOWNTOWN STEVENS POINT ARTICLE AND PHOTOGRAPHY MATTHIEU VOLLMER
D
iversi-Tea is a new business located on Clark Street in Stevens Point where it now offers more than 100 teas, 14 different cooking oils, 20 types of vinegar, and other accessories. According to owners Doug and Judy Van Berkel, this is the only business of its kind within almost 100 miles. “It’s a nice addition to Stevens Point,” says Jean Banks, a Stevens Point resident. Banks sampled the Orange Vanilla White Chocolate tea while visiting. “So far so good. I like the atmosphere and I’m curious about the oils. It’s a beautiful place and is very nicely done." When asked how business has been, Judy commented, “Very good. It’s been very well received. It fits the demographics of Stevens Point.” Doug is a firefighter and paramedic. The Van Berkel’s are Wisconsin Rapids residents. Diversi-Tea, operated by Doug, Judy and two part-time employees, resides in a 111-yearold building located at 902 Clark Street. According to the Van Berkel’s, the building was once a mew in which horses and buggies were kept. Hay was stored in the attic of the building. The Van Berkel’s spent more than 100 hours, not including time spent on the rest of the remodel project, refinishing the brick wall that runs the length of the West side of the shop. Their daughter, an area teacher, plans to help over the summer. “We are not a tea house and don’t plan on being one,” says Judy. The Van Berkel’s attended a tea business boot camp series through the World Tea Expo to learn the ins-andouts of tea. They also visit and tour the oil and vinegar distributors in which they buy from. Items for sale include balsamic and cooking oils, loose leaf teas, packaged teas and other accessories. Oils and teas originate from around the globe. Oils available originate from Italy, Chile and Spain, to name a few. The teas come from Taiwan, Sri Lanka and Japan, to name a few. Best-selling vinegars include Garlic Cilantro and 25 Star. According to Judy, the Garlic and Tuscan oils are also top sellers. Her favorite vinegar is the 25 Star because of its versatility. They are also planning to serve scones, biscotti and salads in the future. Judy mentioned that they plan on offering tastings and other events as well. Grilling packages will be available for Father’s Day gifts. When asked what her favorite tea was, she replied, “I cannot pick one. It changes daily, but I like black teas. It really depends on the tea. I like dark teas that are more straight and less flavorful or fruity.” Judy said that top selling teas include Earl Grey, a tea most customers seem to be familiar with, Clouds and Mist, which is a green tea, and Mega Mint, an organic herbal tea. According to Doug, the flavor of the tea depends on the harvest, how the leaves are dried and processed, and where the leaves are grown. The scientific name for the tea tree or shrub is camellia sinensis. Judy says their customer service philosophy guides what they do. “Treat them like family. It's home. Welcome them in,” Judy says. “We want customers to come in and relax." When asked what she would recommend to someone who hasn’t visited before, she offers, “They should come in and try them all.” Oils range in price from $10 to $18.50 per 375 milliliter bottle. Tea ranges in price from $0.65 up to $15 per ounce. Accessories include tea pods for $19.95, teapots, hand crafted mugs, and oil and vinegar sprayers. Diversi-Tea, located at 902 Clark Street, Downtown Stevens Point, is open Monday through Friday from 10 a.m. to 6 p.m. and on Saturdays from 10 a.m. to 3 p.m. To learn more, find them on Facebook or visit Diversi-tea.com.

All the Right Ingredients INTERNATIONALLY EXPERIENCED CHEF PROVIDES FOOD & SERVICE TO PERFEZIONE AT BISTRO 212 ARTICLE MATTHIEU VOLLMER | PHOTOGRAPHY PROVIDED
S
alvatore Friedel (aka Sal) is the a globally-experienced chef behind Bistro 212. His experience, personality, philosophy and talents shape and influence the experience offered at this local establishment, an extension of the Adventure 212 Fitness Center and Spa. “I go to Bistro 212 because of Sal and the service he provides,” says Josh Hasenohrl of Wisconsin Rapids. “The food is just different. It feels like home cooked meals.” Hasenohrl’s favorite dish is The Charlie, a barbecue pork sandwich. “It’s probably the best barbecue I’ve ever had." Friedel, a Neenah native, has 26 years of experience in the restaurant industry. He attended the New England Culinary Institute (NECI) in Vermont where the student-to-chef ratio was 7:1. As an example of the quality of chefs produced by the NECI, Alton Brown, host of Good Eats on the Food Network, is a graduate of the premier culinary institute. Friedel and two or three other employees are what make Bistro 212 happen. They are the team that creates the offering of a range of scratch-made food.
14
Point & Plover Lifestyle | June 2015
“Because it’s a smaller restaurant, I cook 90 percent of the food. It is chef-run and I’m cooking," says Friedel. "I think the food is spot on. If you eat it, and it doesn’t make you happy, it’s not worth serving." Friedel has worked in Chicago, Montana, North Carolina and Italy, to name a few. While in North Carolina, he cooked for NASCAR drivers including Jimmy Johnson and Tony Stewart (whose favorite dish was asparagus French fries, according to Friedel). His life as a chef has provided adventure, and one story reveals his amazing commitment. While in Italy, Friedel lived and worked in the castle where the 1985 movie Ladyhawke was filmed. During his time there in 2003, Europe endured the hottest summer in more than 400 years. Friedel experienced the heat first hand: He was working in a brick kitchen with a brick oven and the heat caused him to faint. His heart beat rapidly and irregularly (aka atrial fibrillation) for 18 hours, but he was back in the restaurant in just two days.
BISTRO 212
Located inside Adventure 212 3217 John Joanis Drive, Stevens Point Hours: Monday through Friday from 6:30 a.m. to 3:30 p.m., Friday evenings from 5 to 9 p.m., and Saturdays from 7:30 a.m. to 1:30 p.m. 715.343.0212 Adventure212.com
Bistro 212 is located inside Adventure 212, so the restaurant itself isn’t always easy to spot. “The biggest misconception is that you need to be a member to dine here,” says Friedel. In fact, both members and non-members can and do dine at Bistro 212. The bistro donated a seven-course dinner for eight to the Ministry St. Michael’s Foundation 2014 Gala for Giving. The donation raised $2,500 in support of the Greatest Need Fund, a fund which supports programs and services that improve the quality of life and care for the patients and families served by Saint Michael’s Hospital.
Best selling items at the bistro include the barbecue pork sandwich, spicy turkey avocado wrap, in-house granola bars, soups and salads. Friedel’s favorite menu item is the mushroom and Swiss black bean burger on brioche. Bistro 212 also offers impromptu Friday night dinners from 5 to 9 p.m., and locally roasted coffee by Ruby Coffee Roasters of Nelsonville. “I do whatever I can to take care of you and keep you as a customer,” says Friedel. The chef's suggestion for your first visit? “We do the best crab cakes you’ll ever have," he says. "I make killer tomato soup. We do a proper grilled cheese and tomato soup.”

he newly opened Mr. Brews Taphouse serves an array of craft beer and stellar burgers in a clean, social and family friendly atmosphere. Plainfield resident Ambert Dunn enjoyed her experience there. “I think it’s great. I like the atmosphere. The burger was really good; unique,” says Dunn. She tried the Peanut Buster burger while her lunch acquaintance Jill Gies of Wisconsin Rapids ordered the Rajun’ Cajun burger. “It was really good. It had a good kick to it," says Gies. "Our waitress was awesome. I just like it. It’s a cute little environment." 16
Point & Plover Lifestyle | June 2015
Long time Stevens Point resident, Danial Johnson, co-owns the Plover location with Steve Day, the franchise owner. The Mr. Brews Taphouse franchise began in Weston, Wisconsin, at the mother location known as Brews Brothers. The establishment is a past recipient of the “Best Burger in Wausau” award and runner-up for the “Best Burger in Madison” award. The business employs 19 to 22 individuals and serves nearly 400 burgers per day, per location. According to Day, business at the Plover location has been very good. Johnson is a member of the Tavern
League of Wisconsin and is sponsoring a volleyball team that will play on Thursday nights at the Jordan Bar and Grill. Mr. Brews has some distinctive differences from other restaurants. “We consider ourselves an upscale craft beer pub," says Day. "We believe in local.” Mr. Brews regularly brings in new specialty beer, and the burgers are gourmet quality with fresh protein delivered daily from Country Fresh Meats. “Most people think a burger place is fast food. We are not that. We are a gathering place for families and business people.” Johnson worked at Verona and Madison locations before becoming a franchisee. When he left work he said to himself, “Wow, that was fun.” Burgers comprise of 90 percent of sales but overall, they have a 50-50 beer to food sales ratio.

Globally Sourced, Locally Roasted Ruby Coffee Roasters puts Portage County on the “Coffee Map.”
R
uby Coffee Roasters opened in March 2014 and has since been ranked as one of the top 15 new roasters in the United States by Thrillist.com, an online food, drink and travel outlet. Its new Nelsonville location is slated to open in July 2015. “Our guests are just loving, loving his coffee. It’s been a huge success,” says Liz Stuck, owner of All Seasons Coffeehouse in Appleton. “They sent us some and it was amazing. We love it. We have another roaster and Jared’s coffee sells a lot more. He’s been awesome.” Ruby Coffee Roasters has two full-time employees, and is owned and operated by Jared and DeAnna Linzmeier. The business is named after their grandma, Ruby, who does in fact drink coffee. They have donated coffee to the Family Crisis Center, The Energy Fair and the Prairie Chicken Festival. “I love working with Jared and wish him the best of luck. I hope we are partners for a very long time,” says Stuck. According to Jared, business has been good. They are selling nationwide with buyers in New York City, Philadelphia, Florida, Texas, California, Oregon, Minnesota and Chicago, to name a few. Buyers include but are not limited to cafes, restaurants, shops and grocery stores. “It’ll be fun having people tasting coffee here in the Midwest on the banks of the Tomorrow River,” says Jared. Their new location in Nelsonville houses a 25 kilogram roaster with a 50 pound max 18

batch size. The 1979 Probat roaster can do four batchers per hour. In 2006, he started his first job in the coffee industry and has been in coffee ever since. Jared has worked in Los Angeles and Seattle for major coffee businesses. Ruby sources all of its coffee very carefully from around the globe. Countries from which coffee is sourced include El Salvador, Kenya, Ethiopia and Rowanda, to name a few. According to Jared, the top two percent
of coffees are from Ethiopia. He recently made a trip to Guatemala where he personally met with farmers to taste the coffee, build relationships and work toward common goals. He focuses on quality not contingent upon industry certifications. “It’s such an inspiring thing to meet with farmers and see the impact in their community,” says Jared. Most of the coffee is sourced from farms run by one or two families on two acres of land or less, all of which are cooperatives. On average, he pays one dol-

lar more per unit of coffee than fair trade standards require. Jared’s favorite coffee varies by season. This spring, his favorite coffee was from Rowanda; coffee from El Salvador, Ethiopia and Kenya will soon follow as they come into season and make their way to Ruby Coffee Roasters. The Creamery Blend has been popular among customers. “We just try to support our customers however we can," Jared says. "We try to supply our customers with the knowledge they
need. It all comes back to the customer." Ruby Coffee offers, almost exclusively, light roast coffee. The beans are such high quality that they require less roasting. Jared explains that the quality and taste of the coffee depends on the quality of the land, plant health, the season, elevation, and how the beans are picked. Ruby does not add any flavorings to the coffee but roasts it to bring out the natural flavors of the beans, and encourages customers to try it if they haven't before. "Try light roasted coffee because there is a whole world of coffee out there that you’re not experiencing,” he says. Ruby Coffee Roasters is currently located at 10263 County Road Z in Amherst Junction but will soon be moving to its new location at 9515 Water Street in Nelsonville. The Ultimate Gift COOPER FAMILY GIVES BACK BY SERVING AS UNITED WAY’S 2015 CAMPAIGN DRIVE CHAIRS ARTICLE MATTHIEU VOLLMER | PHOTOGRAPHY PROVIDED
T
he Cooper Family, of Cooper Dental in Stevens Point, is proudly serving as campaign drive chairs for United Way of Portage County’s annual fundraising campaign. “If you could see what’s going on in this community and be part of it; it’s contagious. It’s empowering to give. There is more going on in this community than anyone knows about,” says London Cooper, D.D.S. Tim and London Cooper, along with their children Phin, Eloise and Lucy, are serving as campaign drive chairs in 2015 with grandparents Bob and Nancy Cooper. “We are so excited to have an inter-generational family be our drive chairs. They have a great commitment to the community and to United Way. They are very fun and kind people, and have the passion and the compassion for the work,” says Sue Wilcox, United Way’s executive director. Bob served as board president in 1979 when United Way ran its first campaign which raised $300,000 for community initiatives. He has also been a member of Kiwanis for 35 years. “It’s not just the money, it’s the time,” says Bob. Tim is in his second term as a board member and also serves on the health investment committee. “It’s such a good community and it’s great to give back,” says Tim. “This community is so good at giving that people don’t notice how much work still needs to be done. We have homeless people and people going hungry.”

London serves on the board of directors for St. Michael’s Foundation and on the dental center advisory board. “Giving has to be taught,” says London. Tim and London began actively showing their children how to give at an early age. The Cooper family has experienced firsthand the direct impact that programs supported by United Way have in the community. Their daughter, Eloise, who is 9 years old, is dyslexic. She receives tutoring services through United Way’s Learn for Life Reading Initiative. “Learn for Life works to increase reading achievement in our community so that children in Portage County are proficient in reading by the time they finish 3rd grade,” reads United Way’s website. According to London, Eliose has a very big heart. She stopped to help a little boy fix the chain on his bike during the 2014 Run, Bike, Unite Duathlon. “We look forward to working with the kids and having them involved with the activities,” says Wilcox. As drive chairs, the family will serve as the official spokespeople throughout the campaign. They will help facilitate giving by meeting with CEO’s at local businesses, promoting United Way’s Project Fresh Start program and will participate in a series of events throughout the summer leading up to the campaign’s official launch. The family currently has a public service announcement playing on 1010 AM and 97.9 FM.

According to United Way’s website, Project Fresh Start's purpose is, “to provide necessary school supplies to students in Portage County who qualify for the free or reduced price meal program.” According to Scott Steuck, marketing and communications coordinator for the United Way, the campaign this year is focused on literacy and education for infants and children up to five years of age. “The main point of the kick off is to focus on giving and our youth. We are getting kids ready to go back to school,” says Steuck. For more information about United Way or its many community initiatives, call 715.341.6740 or visit UnitedWayPoco.org.

Laura Kelble Surpasses Expectations PACELLI HIGH SCHOOL STUDENT MAKES SERVICE A PRIORITY ARTICLE MATTHIEU VOLLMER | PHOTOGRAPHY PROVIDED
L
aura Kelble, a graduating senior at Pacelli High School, has gone beyond the call of duty both in and outside the classroom. “She’s one of the most outstanding students that I’ve ever had,” says Guy Gehrman, Kelble’s English teacher. “She’s able to get to a deeper level of thinking. She’s a good person, too. She has an excellent sense of humor, creativity and humility. She’s the real deal.” Mr. Gehrman has been teaching for about 26 years. “All of the teachers have been really good. Mr. Gehrman has really pushed me to be a better writer,” says Kelble. Kelble will be embarking on her third mission trip to Peru this summer. She will spend time with orphans and participate in other service projects while there. During previous visits, she helped plant gardens and build fences. “I love service and the idea of it,” says Kelble. “I think it’s a beautiful and important thing for people to do.” Kelble is a member of the National Honor Society and is a National Merit Scholar. Her GPA is an astonishing 4.6, partly attributed to the number of advanced placement (AP) credits she has amassed. Kelble, a Plover resident and area native, has served as the captain for Math League and the Curling Team. She has participated in Destination Imagination and Service Club, and has volunteered for Make a Difference Day.
“Of the 1.5 million students who enter the competition in the fall of their sophomore year, only 7,600 students earn the title of National Merit Scholar. That places Laura in the top .5% of all the graduating seniors nationally,” says Principal Larry Theiss. Kelble offers insight for other students. “They shouldn’t focus on getting good grades," she says. "They should focus on the material because they want to learn it, not to pass a test.” Kelble says that her sister, who is studying wildlife ecology at UW-Stevens Point, has been a true role model. “She is four years older than me. She’s always been very compassionate and hard working. I’ve always admired her and all the things she’s accomplished,” Kelble says. She attributes her passion for service to the culture her parents created at home. “I was raised to ask questions and I’ve always volunteered with my family,” she says. Kelble will be attending Marquette University next fall where she will study biomedical sciences as a pre-medical school track. She plans to attend medical school and incorporate her education with service if possible. Locally owned and proud to be a supporter of the Stevens Point community

Birds on a Wire WORDS KENDRA MATHEWSON
O
ne of my dear friends is a painter who sees the world through her amazing artist eyes. When she was the newbie in our neighborhood, her heart was sensitive to how to integrate her family into the community. Driving one day she noticed how birds perched on a wire seemed to choose when to gather, and who to pause with. As she watched the birds sit, and then come and go, those birds spoke to her of how we create community, who we keep counsel with, and even the dynamic nature of the process. She had moved in down the street, and it was my love of her work that initially drew us together. We shared a moment of connection on my front porch steps, and lingered like the birds chatting on the telephone wire, before we flew off back to our hectic lives. Over the years, through working on house projects, painting together, building a club, learning new skills together, cooking meals at each other's homes, playing cards as couples, we’d pause from the “flights” our lives demanded (me flying around in my minivan and she in her miniCooper) to sit like those birds on a wire and talk over tea. This is how we became friends.
That is community. That is how community begins and how it grows. These one-on-one connections expand and extend and become a beautiful web of interconnectedness. Through words, stories, shared experiences and common interests, we find inspiration to create our communities, which is where we call, "home." My friend’s keen observations became the main theme of a series that has become her signature. The beauty of her Birds on a Wire series, and her ref lections on community, have inspired me to embrace and celebrate more the important place it has in our lives. We live in such an individualistic society that our personal empowerment sometimes overshadows the significance of our need for each other. Like the ingredients of an exceptional recipe, or the materials used to construct a quality home, a community is only as good as the people who comprise it. Because the people are who ignite an idea, imagine a future, share an event, take the bull by the horns, see a need a fill it, spread the word about a new business, open their home to new families, bring a meal when there’s an illness, invest in a neighbor

or believe in a student, give witness to struggles and celebrate successes. This magazine is your “wire.” Let us pause to read the stories that have been inspired by our home, our community, to drink in the beautiful photographs that paint the story of us. Email your editor and publisher, or better yet reach out and enjoy a cup of coffee together. Let us stop here in the pages of our publication each month and celebrate like birds on a wire, before we fly off back to our busy lives. You inspire us.
