When the furniture sale circular arrived in the mail I’d pick the collection I liked the most and began drawing out floor plans. One day one of my sisters said to me in passing, “You should become an architect.” I couldn’t walk down the main shopping thoroughfare in Queens with my mom without stopping to gaze through the furniture store windows dreaming of doing something with furniture. I was a furniture connoisseur in the making. At home, a Magnolia Stellata tree bloomed against our grey brick pre-war home. The palette foreshadows today’s trend of gray neutrals. Toile wallpaper meets you in the front vestibule and it is still a love of mine today. Someone once said to me of my mom, “Women from Virginia have to have everything just so,” and they weren’t far from wrong. My mother made every Christmas special, she liked unique things including furniture and fashion. Every year during the Christmas holidays, white brocade draperies hung as a backdrop behind the aluminum Christmas tree and polished parquet floors were fun to her and we enjoyed helping her. It was relentless and after thousands of dollars and years of suffering and time poorly spent, a friend said to see Mostafa Salama. I was hesitant to say the least.

After the first visit, I liked him as a person, but was skeptical. It did not seem like we accomplished much. He listened to all my concerns but was quick to suggest what he felt the issues were. All the pain on my left side he felt was due to my right side. I went home unsure. I misjudged. After the second visit my piriformis pain vanished! In just a few weeks I was able to bike and run without serious pain. The pain that did come after he addressed and after each visit, I have been able to do more. I have been running 6 miles every other day this past week, which I thought would be impossible again. Every visit he spent even more time with me than allotted and texted me on days off to check up. I love that I can call or text and ask for help or advice any time. He makes the healthcare industry look foolish and they should be ashamed of the way they do business. I would suggest anyone with muscle skeletal, joint or nerve pain give him a try first before considering medication or shots or PT anywhere else. Thanks Master Mostafa.

Pineapple Upside Down Pancakes with Coconut Syrup

INGREDIENTS PANCAKES + 3 cups all-purpose flour + 1 ½ teaspoon salt + ½ cup sugar + 1 ½ teaspoon baking soda + 1 tablespoon baking powder + 1 ½ cups milk + 1 ½ cups buttermilk + ¼ cup melted butter SYRUP + 1 14-ounce can coconut milk + 2 cups granulated sugar PINEAPPLE TOPPING + ½ cup butter + ¾ cup brown sugar + 4 pineapple rings DIRECTIONS PANCKES 1. Combine all the dry ingredients in a bowl and whisk until thoroughly incorporated. 2. Combine all the wet ingredients in separate bowl and whisk until thoroughly incorporated. 3. Slowly fold the wet ingredients into the dry ingredients until slightly lumpy. 4. Let the mix rest for 15 minutes. SYRUP 1. Heat coconut milk and sugar in a small sauce pot and bring to a simmer. 2. Reduce the coconut milk mixture by half and keep warm. PINEAPPLE TOPPING AND ASSEMBLY 1. Pre-heat oven 400 degrees. 2. Heat an 8 inch nonstick oven safe pan over medium heat then add ¼ of the butter, ¼ of the brown sugar and one pineapple ring. 3. Brown the pineapple in the butter and brown sugar then pour ¾ of a cup of pancake batter over the pineapple ring and place in the oven and bake until pancakes are set.

4. Turn the pancake upside down (pineapple side up) on a plate and serve with warm coconut syrup. 5. Repeat process or use a 12-14 inch skillet for one large pancake and cut into wedges.
