Women that wow us. While growing up, whenever I had to write an essay about the person I admired most, the choice was easy—my mom. I could wallpaper a room with the stories I have written about her. Mom showed me the value of hard work and sacrifice when she worked three jobs to keep us in our childhood home. She showed me that it's never too late to pursue your dreams when she enrolled in law school in her mid-40s. She showed me the depth of a mother’s love when she put her children’s happiness even before her own. My mom provided my greatest inspiration. What woman inspires you? 10th Annual Shamrock Shuffle
The rain didn’t dampen the spirits of the runners at the Shamrock Shuffle, hosted by The Community Foundation of West Chester/Liberty on March 19. M
ost of us remember what it was like in high school—crowded hallways, a ton of homework and extracurricular activities that kept us from finishing that homework until late at night. Erinn Aulfinger, a junior at Lakota East High School, has the best of both worlds; she loves learning and exceeding expectations in extracurriculars. For 11 years, Aulfinger has been a Girl Scout, and this year, she’s working on earning her Gold Award—the highest award within the organization. Award recipients must go through a seven-step project that focuses on a community problem and solve it for the long term. To obtain the Gold Award, Aulfinger chose to write, one of her many pastimes and passions. “That’s why I started my project for Girl Scouts, so I could kind of get back into creative writing and personal narratives and explaining myself through writing,” she says. Aulfinger noticed her friends struggling with self-esteem, depression, anxiety and other risky behaviors, she says. She wanted to help. Aulfinger is using her journalism skills, which she gained from being Package Editor at The Spark, the school newspaper at Lakota East High School. She does research, talks with experts, interviews psychologists and is putting together a book of all her findings, including stories, exercises and advice by women, for women. Using her journalism background to dig deeper into the story, Aulfinger says she feels the project is a good way to connect to girls experiencing low self-esteem or facing other challenging circumstances. “Not only do I love writing, but I feel like when I was little, writing really connected me to other people, and so one of the books that really gave me the basis and the idea for my book was the Chicken Soup for the Soul books. I could really connect to the ladies’ stories in those and I felt like I could do some of the same things,” she says. Aulfinger plans to distribute the books to 600 girls in sixth grade within the Lakota School district and it will be published as an e-book, so young women can view it for generations to come. Although Aulfinger continues to have success with the project, she did hit snags along the way that really tested her self-esteem, she says. “She reached out to an esteem expert after reading some content from that individual on the internet, and the person wrote her a scathingly-mean email back, telling her she was ‘too young, and too inexperienced’ to tackle this project and advising her to quit because she was ‘way out of her depth,’” explains Lori Aulfinger, Erinn’s mother. “But Erinn then handled that situation in a way that really impressed me,” Lori Aulfinger continues. “Most people would have gotten upset at the sender—maybe even thought about sending back an equally rude email, but not Erinn. She was able to shake off the negativity.” Erinn says she’s put in a total of 220 hours of work collecting data, conducting interviews, designing the layout for her book and of course, writing. The minimum work hour requirement for the award is 90. “Only six percent of Girl Scouts go on to earn their Girl Scout Gold Award and Erinn is a shining example of the outstanding young women who will be leading our communities in the near future. I can’t wait to see what the future holds for Erinn,” says Roni Luckenbill, CEO of Girl Scouts of Western Ohio. Erinn is active in her after-school activities, including being captain of the Mock Trial Team, editing on The Spark and volunteering at the animal shelter, but she’s putting 100 percent into her Gold Award project. “This feels good,” she says. “I wish that someone was there for me at that age. I hope that this [book] can be there for another girl.”

T
he spunky entrepreneur that created Putters Sports Grill and Cozy’s Cottage was once a nurse. Fortunately for us, it was her side job that really got her blood pumping. “I started working at a restaurant at nights to lighten things up and I loved it!” she explains. “Once it’s in your blood, it’s always in your blood. I’ve been doing it now for 40 years.” All of Collins’ experience, knowledge and hard work paid off in the creation of two of Liberty Township’s favorite eateries. Cozy’s Cottage is the kind of fairytale place you might stumble upon in the woods, and see a grown-up Little Red Riding Hood and her friends Hansel and Gretel unwinding with a glass of wine. With fresh flowers on every table, comfy cushions in every corner and a storybook outdoor porch, diners feel as if they’ve stepped away from it all when they step inside the well-named Hot Spot. It’s cozy. Cozy’s Cottage was not inspired by fairytales, but by a vacation across the pond. “In my travels, I was in London, in this little restaurant. I just loved this place. It had a beautiful outdoor area with rabbits running through the yard. It had many outdoor seating sections, in and around an old historical house. I wondered, ‘Why don’t we have anything like this in Cincinnati? I think I am going to do this…’” 14

It was the beginning of something big, but small. “People say that when they are at my cottage, they feel like they are on vacation,” Collins says. “It doesn’t seem like they are in Liberty Township. It’s like you are at someone else’s backyard, but with great garden-to-the-table food.” The great food at Cozy’s Cottage comes from Chef Gary Henz, a long-time friend of Collins’. When she invited Henz to consider partnering with her on a new concept, he was immediately in. Collins and Henz are a good team; she does the public relations, decorating and organization, and he loves to cook and create. Henz’ kitchen offers a feature every day for lunch and dinner, with soups made from scratch each morning. The food is fresh and tasty. Cozy’s even has its own herb and vegetable garden out back. “Because it is fresh, almost everything on the menu can be made gluten-free,” Collins adds. From the menu, Collins recommends the Cottage Burger— fresh, local beef, hand-pattied daily by Henz and his crew, topped with Cozy’s homemade jelly ($12). “We make our own jellies,” Collins explains. “The Cottage Burger is sweet and savory.” Another favorite entrée is the House Crab Cakes, served with housemade Dijon aioli and a choice of two sides ($28). “They are also hand-pattied,” Collins says. “Nothing is frozen. In fact, I bought a huge freezer for the kitchen and we don’t use it!” she laughs. “Gary turns it up to be a refrigerator instead.” Save room for Cozy’s Cottage’s signature dessert, Carrot Cake ($9). At four layers tall, it is a hunk of delight, topped with cream cheese frosting and a housemade caramel sauce. Behind every successful entrepreneur is a valuable team. Collins’ home team includes her General Manager Nicole Burr, Sous-Chef Justin Bedwell and son, Travis Breese. “My son oversees all my restaurants. He is the foodie in my life,” says Collins. Collins is proud of her team. “It is so nice to be in this atmosphere,” she shares. “I’ve got a good support staff. I have great servers—a great team that supports each other. It’s just fantastic! You are only as good as the people that work for you.” Collins, who is called the “ever-ready bunny” by her friends, has been busy preparing to open Cozy Café and Pub in the historical house next door to the Cottage. When it opens sometime this summer, the 1832 home will be the dinner restaurant, open every night of the week. Cozy’s Cottage will then become a breakfast and lunch spot, available for cooking classes, wine tastings and special events and parties after 4 p.m. every day. “Cozy Café and Pub will have an exquisite backyard, with lots of little dining areas,” she describes her newest venture. “We are adding an industrial edge to mix it up a little bit. It’s shabby chic, not pretentious at all, but a one-of-a-kind place.” No doubt it will be another one-of-a-kind place from a one-of-akind entrepreneur. “I don’t feel any different than when I first started in this business. I feel grateful to all of my friends and loyal customers. I feel very blessed.”

Robin Coffman Overcomes Tragedy With Humble Courage

R
obbin Coffman lets out a quiet, modest laugh when told she is going to be part of this month’s issue of inspirational women. She doesn’t see herself as an inspiration, nor does she acknowledge what she does is courageous. From any outsider’s perspective, Coffman is living proof that strength and bravery often appear during tragedies. From her own perspective, she’s “just doing what needs to be done.” When her husband, West Chester chiropractor Dr. Chris Coffman, died suddenly in a car accident on Lesourdsville West Chester Road last year, Coffman was stunned. The West Chester speech therapist was left with raising their four kids, a newly-earned real estate license, and a 25-year-old chiropractic business that was her husband’s passion. In shock, Coffman said the only thing she knew how to do was to keep going. “I’m more of a behind-the-scenes kind of person. I don’t like to be in the spotlight,” she says. “I just do what needs to be done.” It’s apparent that this has become her motto over the past year. In the face of heartbreak, Coffman has made it a priority to continue running her husband’s chiropractic office, West Chester Chiropractic Center on Cincinnati-Dayton Road, because she says helping people was his greatest passion in life. “He cared about each and every one of his patients, and he worked tirelessly to help them with whatever issues they were having,” Coffman says of her husband. “He lived and breathed chiropractic. Because of that, it has always been part of our family.” After moving to West Chester in 1988, Dr. Chris Coffman opened the very first chiropractic office in West Chester in 1989, and the young couple began to build their lives in the community. They enjoyed the suburban life that West Chester, largely farmland at the time, had to offer, and relished the safe community where their kids began to grow up.
A successful business and three kids later, Coffman found out she was pregnant with a fourth child in 2000. Blindsided, she and her husband struggled to see the reason for their surprise pregnancy. They had three kids, Taylor (now 25), Tanner (22), and Tucker (18), and hadn’t planned on growing their family any further. After finally finding peace and excitement about their news, Coffman had a miscarriage. Heartbroken, she remembers feeling great guilt for her initial reaction and wondered why they lost their baby, especially after reconciling with the new expectation. Fast forward several years, and the family welcomed their fourth child, Trevor, whom they adopted from Russia. “I really felt that God used [the miscarriage] to prepare our hearts for another child, because our hearts were closed,” Coffman recalls. “He used that to open us up to the idea of another child.” During the adoption search process, Coffman knew immediately that Trevor belonged in their family. His physical features surprisingly resembled those of her own biological children, and his birthday was in July, the same month as Chris, Tanner and Tucker. After two years of going through the adoption process, Chris brought Trevor home from Russia. Coffman remembers how he was immediately welcomed by the other kids. Coffman smiles as she ref lects on happier times, and it’s easy to see the closeness among their family. After a tumultuous year, she still struggles with the “why” of Chris’ death, as do her kids. “They miss him a lot. It has been really hard,” Coffman says, tearfully. Her kids still visit the office and often have appointments to get chiropractic adjustments. Coffman believes it’s a source of comfort for them, given that their dad’s business CONTINUED >

has always been a part of their lives. It’s a familiar place within a year that feels so harshly unfamiliar. “I never thought about this before, but maybe it was too much to lose [Chris] and the office at the same time,” Coffman says, as she reflects on the challenges of running the business herself. She believes she chose to continue running the chiropractic business on her own because it’s what Chris would have wanted. “A lot of people have said that he’s the reason that they’re living a healthful life. He was an inspiration to a lot of patients because he was so passionate about what he did,” Coffman remembers, fondly. “He just really, really cared about each and every one of them.” Additionally, Coffman says she considered the fact that they had a staff of employees who relied on their income from the business. This sense of responsibility defines Coffman's humble persona, always putting others before herself. Shortly before Chris’ accident last year, Coffman had earned her real estate license, at Chris’ prodding, after years of putting it off to raise the kids. She now balances showing houses with running the company, supporting the kids and being a part-time speech therapist for preschoolers. It’s easy to see the quiet strength that exudes out of this inspirational West Chester woman as she balances her daily obligations with supporting four kids and grieving the loss of her partner and friend. She wipes tears away as she smiles and says, “I want to keep doing this for my husband. We have been in business for 20

more than 25 years, and we want to continue meeting the needs of all of our patients.” As she continues waking up each day with the mission to “keep doing what needs to be done,” Coffman has a very simple message to share. “I learned that your life can change in a heartbeat,” she says, quietly. “Keep your priorities straight. Just try to focus on what’s really important. Don’t take life for granted, that’s for sure.”

f you’re keeping an eye out for this “Woman to Watch,” you’re most likely to spot Abbey Cramer poolside donning a whistle or stopwatch around her neck. She is no stranger to water or tough competition, and spends much of her time on a pool deck, motivating the young, promising swimmers of our community. Assistant Coach of the Lakota East/West swim teams, Cramer trains and inspires Lakota’s competitive high school swimmers. In a rather unique arrangement, the two Lakota high school swim teams compete independently, but practice together every weekday, often twice daily. Cramer is the youngest of the four coaches and is nearest the glory days of high school competition. She definitely sees this as an advantage, as she must relate to the nearly 100 competitive male and female swimmers. Cramer’s high school resume includes four State appearances for Lakota East High School. Highly competitive by nature, Cramer
was often chosen to be the anchor in the 200 freestyle relay, demonstrating the energy and vigor required to bring in a win. This past September, Cramer stepped way out of her comfort zone, and faced a starting block of a different sort: the Alcatraz Invitational. Inspired by family members who had completed the swim, and another who was set to make an attempt, she put aside her apprehension about the extreme event. Cramer embraced the one-and-a-quarter-mile open water swim across San Francisco Bay. It was an ambitious move, and a finish of which to be proud. Not even convicted felons who escaped the walls of Alcatraz managed to successfully make the swim across the Bay. Nearly 600 swimmers take up the challenge annually, sponsored by a long-standing swim club in San Francisco. Far from the safe confines of a natatorium, Alcatraz swimmers face temperatures in the 40-60 degree range, and typically opt to wear wetsuits. The current is swift, even on a calm day. It’s not easy. Cramer is typically a sprinter, and not necessarily an endurance swimmer. “The distance wasn’t as intimidating as not being able to see through the open water,” she says. CONTINUED >

“The distance wasn’t as intimidating as not being able to see through the open water.” Customary for Cramer, she pushed herself beyond her personal doubts and anxiety, up to the very minute she jumped into the water. Head Coach for Lakota Swimming Dennis Beck knows Cramer well. When asked about Cramer’s successful swim at Alcatraz, Beck explains, “She has natural athletic talent, and is a goal-setter in her athletic life, applying hard work to meet her goals.” In addition to raw determination, Cramer admits the encouragement from people who believed in her also played a valuable role as the event loomed. Her parents had accompanied her to California, offering moral support from shore. She even acknowledges a man at the beginning of the race who helped launch the swimmers from the boat at “The Rock.” His tough words gave her the last piece of encouragement she needed as she jumped into the chilly waters of the Bay. Looking back fondly at her accomplishment, Cramer recalls the surreal site of the Golden Gate Bridge on one side, the Bay Bridge on the other and the San Francisco skyline in between. She had been advised to take the time to enjoy this spectacular perspective, a unique gift to those who take this crazy leap of faith. Cramer suspects she may take on Alcatraz again one day. In the meantime, she will continue as a high school swim coach,

and spend her summers at Windwood Pool, serving as Assistant Manager and swimming instructor. In the fall she will continue her college studies at Miami University, Oxford, and soon realize her dream of becoming an elementary school teacher. Cramer is adamant that through her experiences in her early years as a swim team coach, she eventually recognized her affinity for working with young children. “I found fulfillment and success by assisting with the smaller things, like coaching the six-and-unders at Lakota Hills pool,” explains Cramer. She recalls fondly the excitement on the faces of new swimmers she instructed as they make it across the pool. Cramer is known as a dynamic athlete and coach, one who can be influential with swimmers of any age. She is most certainly a powerful anchor in our community, paying forward to local athletes her enthusiasm for hard work and determination. Coach Beck explains, “Abbey provides leadership as a swim coach, and as a swimmer. She has an impact doing what she’s doing.” He adds, “Through coaching, she has found her ideal role as teacher, leader and motivator.”

ithin moments of connecting with Erin Clemons, President and CEO of The Community Foundation of West Chester/Liberty, you can’t help but feel she is a person that you would like to get to know. She is personable and gracious, humbly pointing the spotlight away from herself and onto others. Her leadership style fits like hand-in-glove to an organization that strives to support and improve the quality of life in the community. Clemons has a clear vision. She believes in this community and its growth and success are very important to her. “I have lived in West Chester, Ohio nearly all my life. I have watched the communities of West Chester and Liberty Township grow and blossom over the years,” she says. Clemons believes in The Community Foundation of West Chester/Liberty. A community foundation typically provides services to donors, nonprofits and the community. It provides ways for donors to improve the community immediately through specific programming. It also plays a significant role in building the framework for a future through the development of a community vision and investing in the skills and growth of the next generation. The Community Foundation of West Chester/Liberty was founded about sixteen years ago under the leadership of Patti Alderson. The Foundation holds assets of over $12 million dollars. It serves more than 175 community funds, has started several programs for children in the community like the Community Cares Program and the Youth in Philanthropy program, and has awarded more than $6.5 million dollars to the community. “The Community Foundation of West Chester/Liberty is here to provide leadership and knowledge in the community on philanthropic needs,” Clemons says. “We are able to provide leadership in many aspects of community life.” One of the Foundation’s premier events is a fundraiser, The Shamrock Shuffle. Clemons says, “Last year at the event, we raised almost $70,000 and had about 4,500 participants.”
Nearly 50 charity teams registered through the Shuffle GivesBack program, a program that allows a team’s charity to receive grants from the foundation. “Through this program, the charity teams received more than $30,000 in grants,” Clemons explains. “Participants who select a charity team to run/walk for make up 50% of our registrations. This is a great way to get the community behind many different worthy causes.” She believes in the incredible role that women play in their careers, the community and within the home. Clemons is a new mother and admits to having “new mommy moments,” but stays impassioned and dedicated to the needs that are in front of her. While there is no doubt that being a working mother can at times “be challenging,” Clemons confesses that it is really a balancing act. “We work hard in our careers, providing for and spending time with our families, and keeping a household.” Does she have any advice to the woman trying to juggle a career and a home? “Prioritize your life, enjoy your children, and stick to a schedule as much as possible. And if you manage to find free time for mom in the schedule, go for a run, ride or whatever you may enjoy doing to relax.” Clemons shares her ambition to stir the passion in others. With experience as a staff member and field representative for Congressman John Boehner’s office from 2007 to 2014, Clemons learned the skills of motivating and communicating with the community. She served first with the Foundation as Vice President of Development and Donor Relations. She speaks about the Foundation with pride; her eyes view the community with compassion. Clemons leads West Chester and Liberty Township with a clear vision and contagious passion. Clemons reflects, “As a young professional, I am able to incorporate new trends in giving and reach out to a new generation of philanthropists. The Community Foundation is dedicated to helping people on their path to philanthropy.”
