Rationalization Nation

Iwas working on this column, and it wasn’t going well.

In frustration, I turned to my sister and moaned, “I guess it doesn’t have to be Pulitzer Prize-worthy.”

Now, how’s that for a rationalization?

As we head into a new year, creating a vision for the future is essential.

Clear goals help keep us on track. But life hardly ever goes as planned. And even the loftiest goals, coupled with discipline and determination, may not be enough. There are times when we are all bound to fail.

Life can be tricky, which is why we all need the ability to rationalize. And while some may see rationalizations as a weakness, I see this invaluable skill as a form of self-forgiveness.

And quite frankly, the world is full of rationalizations that we don’t even realize are rationalizations. So if you think you never rationalize anything or that you can’t — think again. You’re probably rationalizing something every single day.

For instance, maybe right now, as you read this column, you should be catching up on some paper work. Instead, you’re reading this column, telling yourself it’s OK because reading is a virtuous endeavor — it keeps your mind sharp.

Here are some classic rationalizations that perhaps haven’t been labeled as such.

Back in the thick of the pandemic days, I rarely wore anything besides leggings, sweatpants, tee-shirts and cut-offs. Now that I am back in the mainstream, I find donning real clothes to be burdensome, not to mention constricting.

Lucky for me, sweatpants are now called joggers.

Yes, those pants we slipped into as we stumbled to class during our college years. Yes, those pants one wears when zippers, belt loops and buttons are beyond one’s capabilities. And yes, the pants we often feel a twinge of guilt for wearing out in public — yup, now they’re called joggers.

The name suggests these are pants one wears while jogging — no need to feel guilty about that elastic waistband or stretchy material. You don’t look lazy and sloppy in joggers. You look smart, comfortable and, quite possibly, athletic.

Slide into your favorite pair and feel good about yourself.

I don’t know who was the first to re-brand sweatpants as joggers — but a Nobel prize for rationalization seems in order.

More good news — if you grill a large thick juicy New York strip steak and serve it on a bed of lettuce with an assortment of raw vegetables — now it’s a salad. Really, you can imbibe 16 ounces of juicy ribeye, but as long as it is served over leafy greens, you can declare you had a salad for lunch. Brilliant!

Perhaps the most common form of rationalization concerns unnecessary expenditures. If I had a nickel for every time I rationalized a visit to the Starbucks drivethru, I would be retired, living in the South of France with my own private barista. I never seem to have time to brew coffee, but I always manage to find time to pick up a cappuccino.

Perhaps my most frequently used rationalization these days is that I don’t have time to go to the grocery store. Of course, I always find plenty of time to shop online. The truth is I don’t want to change out of my sweatpants. Did I say sweatpants? I meant joggers. Y

Lighthouse Point Hires Lobbyist to Help Procure Funding for Major City Projects

The City of Lighthouse Point has hired the law firm Becker & Poliakoff to provide lobbyist consulting services at the federal, state and local levels. The goal is to procure funding for the city’s major infrastructure projects that are on the horizon, including several bridge replacements.

Becker & Poliakoff – which is headquartered in Fort Lauderdale and also has offices in Washington, D.C. and Tallahassee – works closely with municipalities to help them secure grants and appropriations.

Becker & Poliakoff will represent the City of Lighthouse Point before members of the state and federal legislatures, leaders of executive agencies and county government. The firm will represent the City at public meetings, committee hearings and conferences.

Becker & Poliakoff was chosen from among five companies that responded to a solicitation issued by the City last September. It is the first time the City has procured the services of a lobbyist.

Mayor Kyle Van Buskirk told the City Commission that Becker & Poliakoff’s ability to represent the City at the federal, state and local levels simultaneously sets it apart.

The mayor and City Commission had discussed at several meetings the need to actively pursue grant funding to help address the large expenditures the City is facing with its infrastructure issues. Last

August, it was the consensus of the City Commission for city administration to move forward with looking for a lobbyist.

“We’ve got to try at this point, given the dollar figures we’re talking about,” said Commission President Jason Joffe.

Van Buskirk said the City may not see a return on its investment in the lobbying services in the first year, and needs to commit to it for at least two years.

Per an agreement with Becker & Poliakoff approved by the City Commission in November, the City will pay the law firm a monthly fee of $5,000 for an initial term of 12 months. The monthly fee may be increased prior to the potential renewal period at the discretion of the mayor or city administrator.

on trying to procure funding for the city’s infrastructure improvements, including bridges, paving, stormwater drainage and resiliency (sea level rise) projects. In addition, the lobbying team will look out for the interests of Lighthouse Point in terms of legislation that is being proposed at the federal, state and local levels, such as legislation related to vacation rentals.

City Commission Approves New Regulations for Transient Rentals

The City Commission recently approved changes to the city’s code that will allow the City to better regulate and monitor transient and vacation rentals. The new regulations go into effect January 1, 2023.

In 2015, the City Commission adopted an ordinance establishing the City’s transient rental regulations, which also included vacation rentals. Since that time, the City has experienced issues implementing these regulations, as well as maintaining consistency with state statutes pertaining to these uses.

Last year, the City Commission, after discussing how other municipalities were updating their vacation rental regulations, asked the city attorney’s office to research the matter. The city attorney presented the City Commission with information regarding newly adopted changes by the City of Coral Springs. The city attorney then prepared a proposed code amendment, which was reviewed by the City Commission, as well as the Planning and Zoning Board.

When the ordinance was brought to the City Commission in October for a first reading, Mayor Kyle Van Buskirk emphasized the importance of home rule when it comes to transient rentals, with the understanding that the City will regulate them responsibly.

“We have to make sure that we can do the most for our residents,” said Van Buskirk.

According to the newly adopted changes to the city’s code, all transient rentals will be required to submit a property survey certified within 12 months of applying to the City for a certificate of compliance.

In addition, an inspection must be carried out and approved within 60 days of submitting an application for a certificate of compliance, or the application will be rejected.

All vehicles associated with the rental, including vehicles belonging to guests, must park on the property and not on the street. Information about vehicles authorized to remain at the property overnight must be provided to the City, including tag numbers.

All visitors within transient rentals must be informed of occupancy limits and the property address must be listed on information provided to occupants.

The code expressly prohibits commercial uses at transient rentals, including use as a venue for parties or receptions.

Certificate of compliance holders are required to update the City whenever any information on the application changes, and in some cases the changed information may require a new application within 30 days.

For all vacation rentals, the new regulations require a scaled floor plan. The City must also be provided a list of all venues on which the vacation rental is listed, and the entire unit must be rented, not just individual sleeping rooms or bedrooms.

The property owner must sign a trespass agreement with the Lighthouse Point Police Department, authorizing officers to issue trespass warnings on behalf of the property owner.

The total number of people that can gather at any given time on a property where legally permitted vacation rentals are located is limited to one-and-a-half times the combined maximum occupancy for all vacation rentals on the property, with a cap of 12 people at any single party or similar event on the property. In addition, no more than three unregistered guests can be on the property from 10pm to 6am, Sunday through Thursday, and from 11pm to 6am, Friday and Saturday.

The occupancy limits must be provided to the transient renter, including the total number of people that can gather at the property at any one time.

Under the new regulations, a property that violates the maximum occupancy limits multiple times in a 36-month period will have its transient rental certificate of compliance suspended for a longer period of time. The suspension period for three violations has increased from 30 days to 12 months; for four violations it has increased from two months to 18 months; and for each additional violation it has increased from 12 months to 24 months.

In addition, violations of the occupancy limits of vacation rentals and violations for unpermitted nonresidential and commercial uses of the property are considered irreparable and irreversible in nature, and will have a fine of up to $5,000 per violation. Y

Whit’s Frozen Custard Store Planned for Corner of U.S. 1 and NE 49th Street

Plans are in the works for the vacant building at the southeast corner of North Federal Highway and NE 49th Street in Lighthouse Point to become a Whit’s Frozen Custard store.

Whit’s Frozen Custard opened its first location in 2003 in Granville, Ohio, and now has over 70 stores in nine states across the U.S. There are 18 stores in Florida, but currently none in Broward County.

The man behind the Whit’s Frozen Custard franchise planned for Lighthouse Point is John Khoury, who resides in The Cove neighborhood in Deerfield Beach, just one mile from the future store’s location.

Khoury anticipates the store will open in late spring or early summer of 2023.

True to the brand’s tradition, the Whit’s Frozen Custard in Lighthouse Point will feature frozen custard made fresh daily on site. In addition to churning vanilla and chocolate flavors throughout the day, there will also be a rotating flavor of the week and a flavor of the day. The frozen custard can

be combined with a variety of toppings (over 30 to choose from) served in a cup, known as a Whitser, or in a sundae, milkshake, float or cone. The store will also serve the brand’s signature Whittie, which is frozen custard sandwiched between two freshly-baked cookies. There will even be a doggie sundae for patrons who come with their canine companions.

The store will offer vegan, no-sugar-added, gluten-free and nondairy options. There will also be a to-go freezer for custard cakes, pints and quarts, Whitties and other take-home items.

“I saw an opportunity to bring a great franchise into Broward County,” said Khoury. “I was really sold on the company’s focus on high-quality products made with the freshest ingredients, and creating a great customer experience.”

Khoury explained that frozen custard is a dessert similar to icecream, but is made with eggs in addition to cream and sugar, giving it a richer flavor. It is also served at a slightly warmer temperature than ice-cream, and has a denser texture because less air is incorporated in the final product.

Khoury will be the owner/general manager of the store. There will also be a part-time manager, and 10 to 20 part-time employees. The store’s hours of operation are currently expected to be Monday

through Thursday, 12pm to 9pm, and on Friday, Saturday and Sunday, 12pm to 10pm. The store’s address is 4850 N. Federal Highway.

A site plan for the project is scheduled to go before the Planning and Zoning Board this month.

According to the plans, there will be a patio with outdoor seating along the west side of the store, which is the front façade. There will also be approximately 10 indoor seats.

Khoury, who is leasing the property, said the building itself requires minimal exterior and interior renovations. Landscaping improvements will include two shade trees along Federal Highway and colorful plantings around a new monument sign with the Whit’s Frozen Custard logo.

“I’m excited and honored to be opening in this particular location,” said Khoury. “It’s a gateway to the wonderful neighborhoods of Lighthouse Point and The Cove area of Deerfield Beach.”

Khoury, who grew up in upstate New York, has 38 years of experience in the industrial baking industry. In tandem with his career in the baking business, Khoury had his own Italian ice and frozen custard business for 23 years.

Khoury said the Whit’s Frozen Custard in Lighthouse Point will fill a need, because there are no ice-cream stores immediately to the south, or heading north along Federal Highway between NE 49th Street and Boca Raton.

“I’m hoping the store becomes the community’s go-to place for tasty frozen treats,” said Khoury.

Dan Witt Park Parking Lot Is Getting a Makeover to Improve Traffic Flow

The Dan Witt Park parking lot is getting a much-needed makeover that will improve traffic flow, especially during peak activity periods such as games, practices and recreation programs.

The plans include demolishing the existing parking lot. A new entrance on Lighthouse Drive will be added at the northeast corner of the parking lot, and the current entrance at the southeast corner will become the new exit. There will be a new drop-off sidewalk on

the west side of the parking lot.

The 60 existing parking spaces will be reduced to 57 spaces, but extra handicap spots will be added. The east side of the parking lot will include an area dedicated to golf cart parking.

Lighthouse Point Library First-Floor Expansion Project Is Moving Ahead

The City Commission recently approved a contract with Vercetti Enterprises, LLC for construction of the first-floor expansion of the Lighthouse Point Library, which will serve as a children’s wing.

The project was put out to bid last August, and proposals were received from five contractors. Vercetti Enterprises, based in Miami, was the lowest qualified bidder.

In November, the City Commission authorized an expenditure of funds up to $1,217,158, which includes a 10% contingency. The project is being funded from the 2018 voter-approved municipal bond.

Construction of the first-floor addition will begin once the necessary permits are obtained from the City and County, according to city officials.

The children’s wing will extend into a portion of the parking lot to the north of the library. It will be a

one-story, 1,800-square-foot standalone building that connects back to the existing library building with an enclosed corridor.

The first-floor addition replaces the City’s original plan to build out the library’s second floor using bond proceeds. The initial budgeted project cost for the second-floor buildout was approximately $600,000, but it was later determined the cost would be much higher due to unanticipated challenges, and constructing an addition to the library would be more cost effective.

When Commission Vice President Sandy Johnson asked where the extra money for the library expansion project was coming from, the city’s finance director Cori Olympio explained that there was approximately $2.4 million remaining in bond funds, which is after all open purchase orders for the other bond projects are taken out. With the cost of the library expansion deducted,

Vercetti Enterprises will have 12 months to complete the first-floor library project, per the contract. If that time limit is not met, and after a 30-day grace period, the contractor will owe the City $500 per day until a certificate of occupancy is issued. Additionally, the contractor will earn an early completion bonus of $500 per day for each day under 12 months that the building receives a certificate of occupancy.

There are currently no plans to shut down the library during construction. However, the north parking lot will be out of use for a while. Alternative parking will be across the street in the old fire station’s parking lot.

City Adopts New Rules for Synthetic Turf

The City Commission, at its Nov. 30 meeting, approved a change to the section of the city’s code that regulates the allowable height of synthetic turf on residential and commercial properties.

The City Commission began a discussion about synthetic turf last May, after receiving inquiries from property owners in the city about decreasing the minimum pile height requirement. The main reason given was because shorter synthetic turf would make it easier to clean up after pets.

Before the code was changed, the required pile height of synthetic turf had to be a minimum of 1.75 inches and a maximum of 2.5 inches.

The newly adopted rules allow a minimum pile height of 1.25 inches, but only in the rear yard, between the back of the structure to the property line. In all other locations, a minimum of 1.75 inches and a maximum of 2.5 inches is required.

When synthetic turf with a pile height of 1.25 inches is used, a minimum weight of 45 ounces per square yard is allowed, instead of the minimum weight of 75 ounces per square yard required for longer pile heights.

All other requirements of the city’s code regarding synthetic turf remain unchanged.

The parking lot improvements are part of the recent upgrades to Dan Witt Park, which include the newly constructed John Trudel Community Center, the soonto-be completed basketball and pickleball courts, and the aboutto-be-installed new fencing.

Parks and Recreation Director Becky Word said the reconfigured parking lot has long been part of

her vision for the park, and “this is the time to do it.”

The new drop-off sidewalk on the west side of the parking lot has already been installed as part of the construction of the new basketball and pickleball courts. The parking lot improvements project includes the installation of a 6-foot-high black vinyl chain link fence with a pedestrian gate for the new drop-off area. This area will also serve as a pick-up point.

In November, the City Commission approved a contract with CSR Heavy Construction, Inc. in an

Former Old Town Pompano Laundromat to Become Steak and Seafood Restaurant

The Pompano Beach Community Redevelopment Agency (CRA) has plans to transform a former laundromat in Old Town into a steak and seafood restaurant with rooftop seating and an indoor/ outdoor bar.

The CRA recently accepted a proposal from Palm 78 LLC to design, fund, maintain and operate the restaurant on a site located at 11 NE First Street (the corner of North Flagler Avenue and NE First Street). The site, owned by the CRA, is currently occupied by a 6,000-square-foot vacant building dubbed the “Wash House.”

Negotiations between the CRA and Palm 78 restaurant group are underway, with the objective of turning the site into an anchor for the Old Town Arts and Entertainment District.

“The team from Palm 78 has crafted an exciting proposal for the space, one that will support our goal of creating a thriving dining destination,” said CRA Director Nguyen Tran.

Palm 78 is headed by Lino Joseph, who is the concept creator and owner of five restaurants in the Atlanta metropolitan area – four upscale Caribbean restaurants, named Spice House, and Palm 78, Joseph’s newest restaurant, which opened in July 2022. The Palm 78 concept – a steak and seafood restaurant featuring tropical-infused cuisine and craft cocktails – is the same concept Joseph is proposing for Pompano Beach.

The plans for the Pompano location include demolishing the

former laundromat building and constructing a new building similar in size. The new building would be set back a little further from the street than the existing structure to provide more outdoor seating.

Joseph currently estimates the buildout of the restaurant would take 270 days after the issuance of permits, and would cost $5.1 million.

Joseph, who lives in Atlanta, said he chose Pompano as the location for his next restaurant because he’s originally from Miami and plans to return to South Florida in the next few years. He saw the location in Old Town as an opportunity to bring

something positive to the area.

Joseph said Palm 78 will be invested in the community and will partner with culinary schools and workforce development programs to hire and train people who want careers in the restaurant industry.

The CRA’s redevelopment of Old Town as an arts and entertainment district has attracted other restaurants, including South PMP Bar & Kitchen, which is about to open, and soon-to-be-constructed Papamigos.

“It’s an exciting time,” said Joseph. “We’re excited about coming to this area and making an impact.” Y

History has taught us that successful people have had to act courageously at times. Sometimes that means taking risks to start or turn around a business, seek a new job, or attempt a career in show business.

Dealing with the unknown is scary. We all want to be in control and predetermine outcomes. Unfortunately, life does not always allow us to do that.

One of my best friends, Bill Storm, was working for a company with a boss that was arrogant, rude, and had unrealistic expectations. After a disagreement, Bill quit his job only to find out his wife was pregnant with their first child.

He came from a rough Brooklyn neighborhood and dreamed of making it big as a rapper.

Unfortunately, the rest of the world didn’t agree with him. Not one record label would sign him. That didn’t stop him from creating his own music label, which would eventually turn into the lucrative Roc-A-Fella Records.

Strategy #2: Share Your Truth and Ambitions

High performers know that the main motivation of humankind is to be free, to express our true selves and pursue our dreams without restriction – to experience personal freedom.

Follow this impulse by consistently sharing your thoughts, feelings, needs, and dreams with others.

McDonald’s founder, Ray Kroc, used this strategy after meeting the McDonald brothers in California. He had a grandiose vision of what the business could become – a worldwide powerhouse that would serve millions daily and make everyone hundreds of millions of dollars.

If you are a pedestrian or a bicyclist and you are injured by a car, there is important information you need to know. If you own a car, your car insurance PIP (no fault) coverage will be your primary medical insurance for hospital and doctor bills. Just as you would do if you were injured driving your car, you should contact your car insurance immediately to report the accident and get a claim number for your PIP coverage. You should also obtain the driver exchange information to get the information on the driver of the vehicle that hit you, including their insurance company. Any injury claim that you have will first be against that driver’s bodily injury liability coverage. If you do not own a car, the driver’s PIP will be primary for your medical bills.

Since Florida does not require bodily injury liability coverage, it is possible that the driver will only have the basic PIP, which will not help you. Therefore, it is very important that you also have unin-

It is possible that the other insurance company may find you at least partially at fault if you disobeyed the rules of the road. For example, while you have the right of way as a pedestrian on a marked crosswalk, you must yield the right of way to all vehicles if you are not using a marked crosswalk. If there is a sidewalk on the street, you have to use it. If there is no sidewalk, you have to walk on the road facing traffic. If you are a bicyclist, however, you need to be going in the direction of traffic, in a bike lane if available. Even if you are disobeying the rules of the road, you may still be successful in getting at least some settlement for your pain and suffering, over and above the medical bills. Florida has the law of comparative negligence. If a jury were to decide the case, your total damages would be reduced by the percentage that you were found to be at fault. For example, if the jury finds that your total damages are $100,000, but you were 70% at fault, then you would still receive a net verdict of $30,000.

Three Key Elements of Smart Estate Planning

THE ALL-IMPORTANT WILL

A will should be the basic foundation of every estate plan—the starting point for a well-conceived strategy to transfer assets at death. A will identifies precisely what you want to have happen to your assets and estate. Dying without a will means you have decided that the state knows what’s best for you and your family. Having no will also can make the settling of your estate difficult, costly and highly publicized.

Advantages:

• You decide on the disposition of your hard-earned wealth.

• Estate taxes may be mitigated—especially when the will is part of a broader estate plan.

• You specify who the fiduciaries will be.

Disadvantages:

• You have to accept that one day—far in the future—you might die.

• There is a legal cost associated with writing a will and with estate planning.

TRUSTS

A typical second component of a smart estate plan is a trust. A trust lets you transfer title of your assets to trustees for the benefit of the people you want to take care of—your selected beneficiaries, such as family members. The trustee will carry out your wishes on behalf of those beneficiaries.

Broadly speaking, there are two types of trusts: living (established while you are alive) and testamentary (created by your will after you’ve passed). Additionally, there are two fundamental trust structures.

• A revocable trust allows you to retain full control over the assets in the trust. You can add or take out money as well as change the terms of the trust.

• An irrevocable trust is one to which you cannot make any changes.

SELECTING THE RIGHT HELP

The third area is fiduciaries. A fiduciary is a person or organization that is ethically and legally bound to act in the best interests of another person and to oversee that person’s finances.

1. EXECUTORS AND TRUSTEES. An executor of your will has a number of responsibilities, including:

• Collecting and organizing your assets

• Paying debts you owe

• Acting as a collection agency for money due to you

• Handling all necessary tax matters

• Ensuring that assets are distributed to beneficiaries

When you set up a trust, you are specifying how you want a situation managed in the future. It is the responsibility of the trustee to make sure that your wishes are carried out. The explicit responsibilities of the trustee vary depending on the nature of the trust you have set up, but may include the following:

• Ensuring the proper tax forms are filed correctly and on time

• Making investment decisions

• Working with beneficiaries

2. GUARDIANS. There are three key criteria that you need to consider in making this decision:

• Will the guardian(s) love your children?

• Are the guardian(s) capable of doing a good job raising your children?

• Do you think the guardian(s) are going to raise your children with the same morals and values that you have?

Magnificent Magdalena Bay Mexico

Only a few undeveloped super sportfishing communities left anywhere in the world give anglers and outdoor enthusiasts as much to experience as Mag Bay, Mexico. This past November, the Lighthouse Point Saltwater Sportsman’s Association (LHPSSA) held its first trip to Mag Bay, Mexico and stayed at the Mag Bay Lodge in hopes of an opportunity to chase striped marlin and experience what this destination has to offer. The Mag Bay Lodge Fishing Team released over 1,600 Marlin in 2021! Mag Bay, Mexico is located on the Pacific Ocean side of the Baja Peninsula, Bahía Magdalena. This bay, just about 30 miles across, is one of the most legendary fisheries in North America. Mag Bay is known for being a home for gray whales during their southern migrations — a whale watcher’s dream.

You won’t find a direct flight anywhere within a few hours’ drive of this hidden wonder, which goes a long way in keeping this area pristine. Although the area is remote, you can still find on-shore excursions like zip lines, hiking, four-wheel ATV tours and more. The real draw,

though, is the abundance of marine life. On any given day on the water, you can see whales, sealions, dolphins, sharks, marlin, tuna, wahoo, and so much more.

As LHPSSA member Steve Siegel wrote in a recent post, “this was a trip of a lifetime.” Steve went on to say that every day was epic. Each day his boat caught as many 125 -200 lb. striped Marlin as they could take. His group caught marlin on relatively light tackle, and they were often hooked up to doubles and triples simultaneously. Steve is well known in Lighthouse Point as one of the most determined fishermen and divers. His boat name says it all – “Relentless.” So when Steve says these fish are brutal fighters, you best believe him. On this trip which consisted of three days of fishing, Steve and others also caught yellowfin, mahi, pacific sailfish and halibut. Steve, an avid diver, couldn’t resist the urge to get in the water and swim right up to the bait balls to film the striped marlin and sea lions that came within inches of him as they devoured their meal. Below the bait balls were hundreds of small yellowfin tuna, and below them were porpoises.

It’s trips like this that make joining a top-notch fishing club worth it. The economy of scale and camaraderie from a trip like this stay with you for a lifetime. Y

Do you want to be happier in 2023? Think about that for a moment. What New Year’s resolution will you choose that will positively impact the quality of your life this upcoming year? Yes, I know that you would likely like to lose a little weight and save some money, and yes, the feeling of an organized garage would be nice. Yes, they are some of the most common “go-to” New Year’s resolutions. However, would achieving any of those things nourish your soul? Sure.

We can all agree that being thinner would feel fantastic; having savings for a rainy day can relieve stress, and an organized garage would feel good but would any of them increase happiness in your day-today life? Come on, what would genuinely fill your heart with joy? It’s a new year, and you can make different choices with a new start. Better

play video games, and find time to scroll on social media. Yet, at the end of the day, how much time have you spent connecting with your spouse? Do the days and nights become one big blur? Are you feeling exhausted? Do you complain that there is not enough time in a day?

I am no stranger to those feelings. That was me. Endlessly busy. Then several years ago, my daughter, Rachel, and I were chatting on the phone, and I found myself ranting to her about not having enough time to relax or spend some quality time with my husband, Brian. When Rachel said “Mom, you have to make time,” I got a little defensive and started listing all the things I needed to do! Rachel listened, paused, and then said something I will never forget. She said, “Mom, you will never have the time to do the things you don’t really want to do.” “If you want to spend quality time together, you will make time.”  I thought about what she said a lot, and I started “making time” and that changed everything! My husband Brian and I are both happier, and we still consistently make time for each other.

Are you making time for your spouse? Is your marriage or relationship a priority right now? Was your answer a resounding yes!? It’s a normal response. However, did you mean it? Or do you spend more time looking at your phone rather than into the eyes of your spouse at dinner? Is work your number one priority? It is easy to take each other for granted with all the multitasking we do these days. Don’t let that be you.

To be more fulfilled, you must “make time” for those most important in your life. Can you imagine what would happen if you decided that your 2023 New Year’s resolution would be to intentionally “make time” for the people you love? I can tell you. You will undoubtedly be happier! Time flies don’t waste another minute.

That classic combination of parsley, sage, rosemary and thyme mixed with a little Dijon mustard and garlic takes this pork tenderloin to the next level. And while the Port wine reduction isn’t essential (and perhaps a little fussy for a weeknight), it does elevate the dish to dinner party status.

SCARBOROUGH FAIR PORK TENDERLOIN

Ingredients

1 1/2 teaspoons fresh sage, chopped 2 teaspoons fresh rosemary, chopped 1 tablespoon fresh thyme chopped 1 tablespoon fresh parsley, chopped 2-3 garlic cloves, grated Salt and pepper to taste

1/4 cup Dijon mustard 8 tablespoons olive oil, divided 2 1-pound pork tenderloins 6 shallots, peeled and halved through root

1/2 pound red seedless grapes cut into small bundles 1 1/3 pounds fingerling potatoes, halved lengthwise 3 tablespoons unsalted butter

For the Port wine reduction (optional)

1/2 cup Port wine 1/2 cup chicken stock 3 tablespoons unsalted butter

Preparation

In a small bowl, combine the sage, rosemary, thyme, garlic, mustard salt, pepper and 2 tablespoons of olive oil.

Place the tenderloins in a shallow bowl large enough to hold them, and rub the mustard mixture all over the pork. Or you can place the pork and marinade in a resealable plastic bag. Refrigerate for at least 2 hours.

Preheat the oven to 425.

Combine the potatoes and shallots with 4 tablespoons of olive oil, and add salt and pepper to taste. Place the potatoes and shallots cut side down in a single layer on a rimmed sheet-pan. Roast for 30 minutes.

Meanwhile, heat a large saute pan over medium-high heat. Add about 2 tablespoons of olive oil and sear the tenderloins in the pan until they are brown on all sides. Remove from the pan.

After 30 minutes, reduce the oven to 325.

Remove the sheet-pan from the oven and scoot the potatoes and shallots to make room for the pork. Place the seared tenderloins on the rimmed sheet pan and arrange the grapes on top of the potatoes and shallots.

Place dabs of butter on top of the pork tenderloins. Return to the oven and roast until the pork has reached an internal temperature of 145, about 20-30 minutes.

While the pork is roasting, make the Port reduction. In the same pan you used to sear the pork, wipe any excess oil out of the pan. Add the Port to the pan and cook for 2-3 minutes until it is reduced by half. Add the stock and again reduce it by half. Whisk in the butter, 1 tablespoon at a time. Taste and add salt and pepper if needed.

Allow the pork to rest on a cutting board for 5-10 minutes. Slice the meat and arrange it on a platter with the potatoes, shallots and grapes. Drizzle the Port reduction over the pork or serve on the side. Y

Hands down, chardonnay is America’s most popular white wine. It accounts for roughly a quarter or more of all white wine sales in the United States, followed by sauvignon blanc and pinot grigio. Other whites, like riesling and chenin blanc, are far behind. Go into any store with a good international wine selection, and you’ll likely see shelves, racks, and often chardonnay displays. If you shop for wine online, dozens, even hundreds, of labels may appear when you search under chardonnay.

Many Ways to Chardonnay

For many people, chardonnay epitomizes common preferences in white wine. It should be fresh, tasty, easy-drinking, and not too dry, acidic, or alcoholic (generally, less than 14% alcohol by volume). It should be pleasantly fruity — perhaps with a mix of pear, peach or apricot, citrus, and perhaps some nuttiness or other flavors. It might be rich, full-bodied, and perhaps a bit oaky as white wines go. Some people favor noticeably lush, toasty, buttery, or honeyed chardonnay, even though crisper, lighter, and more refreshing styles seem

As I mentioned, the wines I tried ranged from $15-45. There are many alternatives to these wines; of course, you can spend much more on some exceptional and distinctive wines. You can spend less, too, but chardonnay wines costing more than $15 are more likely to be made from higher quality grapes than those used to make less expensive chardonnay. The cheapest chardonnays also are more likely to have been mass-produced using industrial winemaking processes. They may taste okay but often lack the character, robust aromas, and flavors in wines produced with better grapes and more hands-on craftsmanship. I think those attributes help make wine more fun and interesting to drink.

increasingly preferred. This all sounds pretty good to me, especially if aromas, flavors, texture, acidity, and alcohol all balance nicely.

However, what’s most fascinating to me about chardonnay wines, and wines in general, are their differences — how a single common grape produces so many different profiles, with aromas, flavors, textures, and other attributes varying depending on where and how the grapes are grown and how they’re made into wine. The more chardonnay wines we try, the more we realize they have no single or standard profile or set of characteristics. There are endless

combinations of familiar fruit flavors thrown in with exotic tropical fruits, nuts, toasted oak, and spices like vanilla, cardamon, and ginger. Textures can range from creamy or nectar-like to light and crisp.

Even in France’s Burgundy region, chardonnay’s ancestral home, styles vary. Chardonnay is likely an 800plus year offshoot of pinot noir, the famous red wine grape that’s also indigenous to France. Not surprisingly, Burgundy, home to many of the world’s most famous and expensive pinot noir wines, also produces many of the world’s finest chardonnay. Like their red counterparts, Burgundy’s chardonnay wines are seldom labeled as chardonnay. Instead, they’re named after the vineyards, villages, towns, or subregions where each wine’s grapes were grown. The best village whites, such as Meursault or Puligny Montrachet, are from central Burgundy’s Côte d’Or area. These spend time in oak barrels and tend to be bold, rich, and creamy with complex, wide-ranging tastes and aromas. The chardonnay wines from the area to north known as chablis, are typically made in a crisp, dry, steely, and minerally style where they’re seldom exposed to oak. They’re no less delicious, however, and have become a favored model for many popular chardonnay wines around the world. I tasted a 2018 Chablis Champ Royaux, a modestly priced but very enjoyable, traditional chablis made by William Févre, a leading area winemaker. Chardonnay wines from the southern Burgundy areas, such as Montagny in the Côte Chalonnaise and St.-Véran, Macon-Village, and Pouilly-Fuissé in Mâconnais, are richer and rounder, though generally not as complex or as pricey as wines from Côte d’Or. I tasted a delicious 2020 Pouilly Fuisse Marie Antoinette made at the Vincent Family’s notable Chateau Fuisse.

Fortunately, chardonnay vines are exceedingly adaptable and have been planted, and now thrive in a wide range of soils, elevations, and climates around the world. The largest area outside France is California, where the best chardonnay wines are made in selected coastal mountain and valley regions stretching from Mendocino County south to Santa Barbara. But I want to draw attention to Oregon, Washington, Western Australia, Chile and Argentina, and South Africa, where many excellent chardonnay wines are made.

The sample of wines I tasted from these areas varied quite a lot. My favorite was an absolutely stunning chardonnay from Western Australia’s Margaret River region made by Leewin Estates, one of that country’s best white winemakers. My second favorite was a South African chardonnay made Hamilton Russell Vineyards. From Chile, I tried chardonnay made by a winery founded by and still named after notable French winemaker William Fèvre. Not surprisingly, it was made in an unoaked chablis style.

An Interview with David Sanborn

Iwanted to interview David Sanborn after reading his Wikipedia page. His discography starts with a list of his 22 albums — certainly prolific but not newsworthy.

Then begins his resume of work as “sideman,” a new term for me that refers to someone who works with another musician or group but not as a regular member. Sanborn has worked with some of the most celebrated musicians, including David Bowie, The Eagles, The Rolling Stones, James Taylor, Sting, Carly Simon, Eric Clapton, and the list goes on.

Bruce Springsteen’s “Born to Run” — that thunderous sax on that iconic rock song — oh yeah, that was David Sanborn.

Six Grammy Awards, eight gold and one platinum albums, and he’s recorded many television show theme songs, most notably the one for “L. A. Law.”

You can tell I was impressed at this point. Then the movie soundtracks like the “Lethal Weapon” films and television performances like “Saturday Night Live” as a regular band member and many years as a regular guest member of Paul Shafer’s band on “The

I said yes and set up my laptop and recorder in my car, and he called several minutes later and greeted me with his soft, low-toned voice.

First, he did not display one ounce of attitude or ego. For all his fame, experience and success, he was a genuinely lovely person to get to know.

I started with the fundamental question of how he became so successful with so many collaborations withso many legendary musicians. “I make a point of picking great musicians that are at the top of their game,” was his simple answer.

“After I did that a few times, I kept getting calls for more work, and that has been my career for a long time, I guess.”

“They heard something in my playing that they thought would work well with what they were doing at the time,” summarized Sanborn about many of the small and big-name acts he played with over five decades.

I think he was being very modest with that answer. When great musicians feel the need for a saxophone in their music, they can call a lot of talented players. Sanborn is at the top of a short list of the best sax players ever.

This guy sounded like someone worth speaking with. So I accepted the offer from the publicist to chat on the phone.

Several days later, I received a text message

Born in Tampa, he was raised in St. Louis, where he suffered from polio for eight years. His doctor recommended the saxophone because it would exercise his lungs. We didn’t discuss much about his personal life, but he spent a lot of time living in New York City, where he still has an apartment, but his wife and two chihuahuas live in the countryside more these days.

We discussed his upcoming show in Pompano Beach. “I try to pick music to play that is appropriate for the audience and

I pushed a little for him to explain why my readers who are unfamiliar with him, should consider attending his show on the beach in January.

“My wish is that they would be pleasantly surprised. When I see a performance, I want to be surprised. I like to hear something new or in a new way. I would hope they will hear the passion in how I and the band I’ve assembled play for audiences.”

I had time for one last question, so I went for the “Surely you must have a good story to share after so many years performing with literally some of the biggest names in music, television and movies.

He did not disappoint me with his answer,

but I can only share a quick overview.

I do not think his performance in Pompano Beach in January will be quite the same as a Stones concert. Still, I think I will appreciate listening to and watching his performance, knowing that I am watching one of our country’s finest artists of his kind. Y

MEET THE Corinthians

There’s a chance you’ve heard of the Corinthians but weren’t quite sure who they were. Is it a club? Are they associated with the Lighthouse Point Yacht Club? Were they featured in the movie “Caddy Shack?” Are sailor outfits involved?

I spoke with Leslie Baron, who recently completed her term as the club’s commodore. She enlightened me on all things Corinthian.

55 years ago, the club did indeed germinate as a social offshoot of the Lighthouse Point Yacht Club. A small group of Yacht Club members recognized the need for a stronger sense of community and camaraderie. They envisioned group travel and smaller, more intimate get-togethers than club-wide events. Hence, the Corinthians were born.

Eventually, the Corinthians split off from the Yacht Club. In fact, many current members don’t even own a boat. However, Leslie added that when the club gets together for a day on the water, the boat owners invite the non-boaters along.

Nowadays, according to Leslie, most Corinthians are newly retired business owners and professionals looking for a way to meet new people and have some fun in the process. The commodore plans an annual trip, and they’ve often taken cruises. Last year, due to Covid concerns about cruise ships, about twenty members traveled together to Memphis. They also host many dinners and happy hours at local restaurants from Pompano to Boca Raton. Additionally, the group also gets together at members’ homes. Last year, they celebrated Valentine’s Day, St. Patricks Day and Cinco De Mayo in members’ homes.

The club currently boasts 55 members, and Baron is quick to add that the membership is skewing a bit younger these days.

Old Montreal Hotel Nelligan

Winter is gorgeous in South Florida. Summer — not so much. Now is the time to plan your escape from the heat.
