Shake It Up BY SUSAN ROSSER

E

very so often, I come across an article worth saving for later. A few years ago, I stumbled upon a piece about a New Jersey high school that requires first-year students to hike along a 50-mile section of the Appalachian Trail at the end of the academic year. The headline caught my eye because, as a parent and just a plain old citizen, I think teaching, motivating, and inspiring youth is tantamount to a thriving society. But I suppose I am not alone — that’s pretty much the idea behind public education. A 50-mile hike is undeniably unconventional in the realm of high school education. Without delving into the details of the article, one can imagine the valuable lessons such a trek imparts. First and foremost, it must foster a sense of adventure and camaraderie. I could elaborate on the hike’s benefits, detailing what each student learned and how they bonded, but that ground has already been covered. The creative thinking of the educators who conceived this idea is what really caught my attention and got me thinking. I admire these teachers for thinking outside the box and injecting a bit of excitement into the school year. My school days are long gone, so the article led me to consider my professional world. Workplaces could benefit from a similar shake-up. Encouraging employees to step outside their comfort zones, explore new perspectives, and collaborate in unconventional ways might lead to innovative breakthroughs. The idea behind orchestrating this 50-mile hike by educators became a metaphor for me. I found inspiration in the creative thinking of these teachers, who ventured beyond traditional approaches. It prompted me to question established norms in my own life and motivated me to embrace a more open mindset.

It’s easy to stick to the same old routines, following the path of least resistance. And as a risk-averse person, that is the path I often choose. However, acknowledging that tried-and-true methods might not be the optimal way forward is half the battle. Unfortunately, when we change things up, we usually take a few swings and misses before we hit a grand slam. But the fear of failure shouldn’t stop us from looking for our pitch. As I examined at some of the challenges in my own life I am proud to say I asked myself a whole bunch of questions. What could I change? How can I be a better mother, wife, and friend? How can I enhance my productivity at work or improve my business? What should I start doing? What should I stop doing? To tell the truth, I have made several choices in the past year that I might not have made before my 50-mile-hike-epiphany. As we navigate life’s journey, both personally and professionally, let’s not shy away from the occasional detour or uncharted path. These deviations, whether minor adjustments or monumental shifts, can lead to a dynamic and fulfilling life where the end goal is not just success but a continuous evolution. The City of Lighthouse Point Has Hired a New City Engineer The City of Lighthouse Point’s longtime resident and City Engineer for more than 20 years, Cary Winningham, will retire at the end of the year. In his place, the Lighthouse Point City Commission has approved a five-year contract with Pompano Beach-based company KEITH and Associates, Inc. The contract includes two potential extension periods of three years each after the five-year agreement has concluded. The City Commission unanimously approved the contract to designate KEITH and Associates as the new Principal City Engineer at its Nov. 14 commission meeting. The commission also approved a cost cap of $100,000 for engineering projects for fiscal year 2024 unless the commission is presented with additional work orders for special projects, which would need to be approved. City Commissioner Michael S. Long spoke in favor of hiring KEITH, saying he had known the family for a long time and admired their involvement with the local community. “They have great connections in the county,” Commissioner Long said. As the new Principal City Engineer, KEITH will now be in charge of a wide range of city projects including condition assessments, construction cost estimations, engineer plan reviews for private developments, flood plan management, capital construction

projects and studies for storm water, infrastructure or sidewalk planning. The company has been very active in Pompano Beach. In 2023, KEITH won the Fort Lauderdale AIA Design Award for its development of a youth sports complex, which was part of the City of Pompano Beach’s G.O. Bond project. The complex included several multi-purpose pitches,

Topgolf Has Opened at The Pomp in Pompano Beach On Dec. 15 Topgolf held its grand opening for its ninth Florida location and 96th global location in Pompano Beach. The popular recreational sports venue will serve as one of the key attractions at The Pomp, a new development project adjacent to the newly remodeled Harrah’s (formerly Isle Casino Racing Park) at the intersection of Powerline Boulevard and Race Track Road. The Pomp is a 223-acre, mixeduse development project underway by The Cordish Companies and Caesars Entertainment that will include recreation, retail, dining, hotel, residential, office and lifestyle offerings once complete. Topgolf was one of the earliest confirmed attractions to join The Pomp development and was planned as one of the project’s cornerstone establishments. “Seeing this come to fruition means as much to me as it does the entire community,” said Pompano Beach City Manager Greg Harrison, who, in 2015, recommended the site as the ideal location for a Topgolf and pitched it to Cordish in 2020 when the company bought the land. Topgolf is a modern, multi-level, golf complex with climate-controlled hitting bays that makes golfing accessible to players of all levels and ages. Similar to an upscale bowling alley, guests at Topgolf can either reserve a golf bay in advance or walk-in to golf. A restaurant, bar and outdoor patio are available where guests can dine, drink and wait for their bay. Groups of up to six people can join in one bay. Golfers take turns driving balls toward digital targets based on virtual courses. Topgolf utilizes what they call “Toptracer

technology,” which traces each golf ball’s flight path, distance and other metrics to track the ball in the virtual game. There are also themed games, like Topgolf’s signature Angry Birds game, which sets golfers up to aim their balls – their “birds” – to virtually smash down structures, defeat pigs and cause mayhem in the Angry Birds universe. Players can choose beginner, intermediate or advanced levels to match their skill set. The new Pompano Beach location features 102 bays spanning three levels. recently read Arnold Schwarzenegger’s new book, “Be Useful,” and I thought it was excellent. It was well written, easy to understand, and, more importantly, simple to implement. Now, I say “simple” because it is easy to understand what he suggests doing, however, that does not make it easy! We all know that changing long-term bad habits and implementing new, healthier habits can be challenging. As Jim Rohn says, “The simple things that lead to success are all easy to do, but they are also just as easy not to do.” Bad habits are easy to form but hard to live with. Good habits are hard to form but easy to live with. I wanted to share a few ideas and strategies that greatly impacted me.

are creating your goals. Make your goals positive, present, and personal. A better way to express the goal of losing weight is to say, “I weigh 185 pounds by March 31, 2023.” It is personal (I), positive because you are using truth in advance, and it is present tense. Your subconscious mind does not know the difference between what is actually happening and what you program into it. Use the truth in advance philosophy when you are creating your vision. Say, “I earn $250,000 annually by December 31, 2024.” That is positive, personal, and present tense. Arnold also recommends taking long walks like Beethoven, Aristotle, and Albert Einstein did when thinking about what you want for the future. Friedrich Nietzsche said “It is only ideas gained from walking that have any worth.” Take your dog for a walk and think about your ideal future and goals. What do you want to achieve? What do you want your life to look like in five years, 10 years, and 20 years? Think big! Many times, achieving a significant goal that impacts many people is not much more work than setting a smaller, more modest goal. But you make a much more significant impact on those around you!

Clarity is power! Many times, people don’t make progress in life and achieve their goals because they are not crystal clear about what they want. We have all heard people say, “I need to lose some weight” or “I want to make more money.” Those are vague statements that will not inspire you into action. When creating a new goal and vision for the future, take Brian Tracey’s advice. Use the 3 Ps when you

It is great to have goals, however, if you don’t do the hard work to make them happen, it is all for nothing! When Arnold was a competitive and very successful bodybuilder (seven-time Mr. Olympia), he always worked his muscles to failure. You will never reach your potential if you don’t push yourself out of your comfort zone. Arnold always did every exercise and every set in the gym to failure. Why? Because that is what stimulates the muscle to grow. We need to get comfortable with being uncomfortable! As Jimmy Dean says, “Do what you say you’re going to do, and try to do it a little better than you said you would.” My original martial arts instructor used to say massive action leads to massive results. I couldn’t agree more!

PERSONAL DEVELOPMENT Strategy #3: Sell, Sell, Sell

There is a famous quote in the classic movie, “Field of Dreams,” where they say, “If you build it, he will come.” That is an excellent quote for a movie, but not factual at all! Simply opening a business, writing a book, or deciding to run for a political position will not make those ventures successful. You have to sell your vision, ideas, and methods so others believe in you and your capabilities. Arnold has this advice — “One of the easiest, more authentic ways to start selling it is to speak your inner voice out loud so others can hear it. All those things you tell yourself about what you are going to achieve, you should start saying to other people.” There is a motivational saying: “See it. Believe it. Achieve it.” I think there is a step missing, though. Before you achieve your goals, you have to share them with others. Get people excited about your vision, and your passion will give them confidence that you can and will make it happen. Did you know that 90% of all books in Barnes & Noble have sold less than 500 copies? That is unbelievable when you think about it. These smart and talented people took the time to share their life stories, methods to reach success, and philosophies, yet most of the world will never benefit from them. Why? Because they did not focus on selling! The authors we look up to are called “best-selling” authors. It doesn’t mean they are the best writer. It means they sold the most books! If they don’t invest the time, effort, and energy in selling their book, then hardly anyone can benefit from them. That means people cannot get in better shape, make more money, invest it successfully, or improve their relationships. The word selling has a negative connotation in many people’s minds because we have all dealt with the pushy, arrogant car salesperson. No one wants to be that person, and no one wants to be sold to that way. The root meaning of the word “sell” is “sellan” in the old English language. It means to give. When you are selling, you are giving advice, giving encouragement, giving hope to others. If you are still uncomfortable thinking of yourself as a salesperson, think of yourself as a helper. In your mind, change the word sell to the word help. Great salespeople help others reach their goals, better their lives, and inspire others to show them what is possible. What Legal Documents Are Most Important Now? Certain Legal Documents Are More Important than Ever BY MARTIN ZEVIN, ATTORNEY

I

f you need to be hospitalized in Florida, it is imperative that you have a designation of health care surrogate and living will with proper wording so there will be no problems. Do not rely on generic forms obtained online. Florida hospitals are requiring specific HIPAA compliant language not found on generic forms. Your surrogate will be able to make medical decisions for you if you are unable to communicate. Even if the hospital does not allow any visitors, your surrogate will be able to talk to the doctors and make decisions on the phone or e-mail. Your surrogate does not need to be present in the hospital. All your surrogate needs to do is e-mail or fax a copy of your document to the hospital. If there is no hope to save you, that surrogate would be authorized to “pull the plug” based on the living will. The durable power of attorney is also important to allow someone to take over your legal and financial affairs. The Florida law changed in 2011. If you have an old, durable power of attorney, it should be redone. Again, do not rely on generic forms. Our current power of attorney is 26 pages to conform to Florida law. If you should die, your will or revocable living trust will determine who inherits your assets. The trust is important to consider if you own your home or other real estate, because it avoids probate. Probate can tie up your property for many months and prevent your heirs from selling without a court order. They would have to continue to pay taxes, maintenance, mortgage, utilities etc. in addition

to thousands of dollars in attorney fees and court costs. A life estate deed is another option to consider to avoid probate. The good news: We can look to the strategies used by today’s ultra-wealthy families to avoid or mitigate such negative outcomes— and find ways to adopt similar strategies in our own families. he Lighthouse Point Saltwater Sportsman Association (LHPSSA) trip to Mag Bay last year was such an overwhelming success that the club arranged a trip again this year with over twice the participants. Only a few undeveloped super sportfishing communities left anywhere in the world give anglers and outdoor enthusiasts as much to experience as Mag Bay Mexico. This past November, the LHPSSA held its second annual trip to Mag Bay, Mexico. The stories of swimming with striped marlin amongst the bait balls and catching fish by the boatload enticed more than 20 members of the LHPSSA to embark on another adventure. The Mag Bay Lodge Captains routinely release over 1,500 Marlin a year. Mag Bay, Mexico, is located on the Pacific Ocean side of

was unusually warm. Probably 15 degrees warmer than last year. The weather patterns seemed to affect the fish. Fewer bait balls were likely due to fields of hungry mahi, making it harder to pitch baits to the marlin. Several of the boats could land nice striped marlin and a few wahoo. This year, there were more mahi mahi than any captains could remember seeing. Some of the members said there must have been several thousand mahi as far as the eye could see, and they seemed to average 25 – 40 lbs. Can you imagine? You could barely keep any baits in the water without getting eaten by what would typically be a tournament-winning mahi on our coast. Some of the boats had to go 20 – 30 miles out of the way to get away from the dolphin schools. Several nice yellowfin tuna were caught on jigs over sea-

the Baja Peninsula, Bahía Magdalena. This bay, just about 30 miles across, is one of the most legendary fisheries in North America. Mag Bay is known for being a home for gray whales during their southern migrations, which makes this area a whale watcher’s dream. You won’t find a direct flight anywhere within a few hour’s drive of this hidden wonder, which goes a long way in keeping this area pristine. Although the area is remote, you can still find on-shore excursions like zip lines, hiking, four-wheel ATV tours and more. The real draw, though, is the abundance of marine life. On any given day on the water, you can see whales, sealions, dolphin, sharks, marlin, tuna, wahoo, turtles and so much more. This year, most of the members found connecting flights into Loreto, Mexico. From there, they took a several-hour bus ride across the peninsula to a beach landing, where they loaded up in Pangas and crossed the bay to the lodging area. There aren’t any docks in this area, so you wade out into the waters and climb ladders into the bows of your fishing boats. Many of the boats will go 30 – 50 miles out each day. This year

It’s trips like this that make joining a top-notch fishing club worth it. The economy of scale, help in planning and comradery that comes from a trip like this will stay with you for a lifetime. One of the coolest things that happened by accident on this trip was when the guys were heading back to the airport, and they ended up driving through the Baha 1000 Race. This is a 1000-mile dune buggy race, which is kind of like a Super F1 race on the sand. Y

Besides the flux of “love hormones” we all experience while courting, what would you say made your relationship so fantastic? Need help remembering? Let me refresh your memory……. You were willing to do everything possible to please each other! And the challenge we all face is that loving like that is simply not sustainable. Life happens, and everything else slowly becomes more of a priority than our relationships. Inevitably, we begin drifting apart and become disillusioned. The good news is that it doesn’t have to be that way. Whether you are blissfully in love, feeling disconnected, or perhaps even thinking of giving up on each other, there is always something you can do to improve your relationship. Don’t know where to begin? Well, that’s okay because I have tried and true ways to get you started, and I will share them with you in a moment. But first, I want to ask you something important…. Do you wholeheartedly desire a better relationship? Because if you aren’t willing to change your habits and behaviors, I assure you nothing will change. If you’re not interested, that’s okay, too. Ultimately, the choice is yours. Perhaps you are just not ready to make changes. However, for those of you who long for a more fulfilling, loving marriage and are willing to commit to making small changes with tremendous results, please continue reading. First, consider adopting this mantra this year: Out with the old and in with the new! Undoubtedly, there have been hurts, pain, and disappointments in your marriage. Welcome to reality. You and your spouse will always be imperfect. Learning to forgive each other is essential, my friend. Holding grudges will continuously eat away at your foundation of love. It is like a smokestack constantly polluting the air between you! Please consider focusing on learning to forgive, letting go, and moving forward. Cleaning the atmosphere between you is a must. (Please seek professional help if necessary.) Another key to improving your marriage is elevating your communication skills. Yup. I know. You’ve heard it a million times. Yet, have you made it a point to learn how to speak to your partner like someone you love? There is no getting around it. If you want your marriage to be better, you have no choice. Communication

Start saying honey, “would” you instead of “could” or “can you,” (do you hear how differently those phrases sound?) Oh, and one more tip: watch your tone of voice. You will be pleasantly surprised at how your partner will respond. Lastly, let’s talk about Self-Awareness. Becoming self-aware is undoubtedly not easy. Here’s a little tough love. I’d like you to challenge yourself to go one whole day without complaining. Do you think you can do it? Have you seen the movie Liar Liar? In the movie, Flecther’s son, Max, makes a wish that his father, (played by Jim Carrey) couldn’t tell a lie for one whole day, and Max’s wish comes true! Fletcher didn’t realize how often he lied until he was forced to tell the truth for one whole day. It’s hysterical and eye-opening! I know lying is not the same as complaining, but it can

be just as detrimental to our relationships. We don’t realize how much we complain each day. Complaining is a natural human response to communicate dissatisfaction. However, minimizing daily complaints can improve your relationship very quickly. When we complain, it sounds a lot like criticism to our spouses, and it sucks the fun out of our relationships. Here is a little secret: when you feel the need to complain arise, stop and think about your blessings! “Wink!” Obviously, there are countless ways you can improve your relationship. Choose wisely. Choose love. May your heart and mind be open to something more in 2024. Happy New Year! Y

Hot and Sour Soup with Dumplings INGREDIENTS 3 tablespoons vegetable oil 8 ounces cremini mushrooms, sliced 1-inch piece of ginger, grated 3 garlic cloves, grated Kosher salt and freshly ground black pepper to taste 1/2 teaspoon white pepper or ground 2 quarts low-sodium chicken or vegetable broth 1/3 cup low-sodium soy sauce 1 8-ounce can bamboo shoots, cut into matchsticks 7 ounces tofu cut into rectangular bite-size pieces 12-15 frozen dumplings or gyoza 3 eggs scrambled 1/4 cup cornstarch 3 tablespoons distilled white vinegar 1 bunch scallions, thinly sliced, divided Hot peppers, thinly sliced for garnish PREPARATION Heat 2 – 3 tablespoons of vegetable oil in a large pot over medium heat. Add the sliced mushrooms and sauté until t golden brown. Add half the scallions, ginger and garlic and sauté until fragrant — about 1 minute. Pour in 2 quarts of lowsodium chicken broth into the pot. Stir well and bring the mixture to a gentle boil. Stir in 1/3 cup of lowsodium soy sauce. Add the bamboo shoots to the pot. Let the soup simmer for about 10 minutes to allow the flavors to meld. Slowly drizzle in the beaten egg while continuously stirring the soup in a circular motion. Add the tofu pieces to the simmering soup. In a small bowl, mix 1/4 cup of cornstarch with 1/4 cup of water to create a slurry. Slowly pour the slurry and the white vinegar into the soup while stirring continuously. Depending on how thick you like it, you might not want to add all of the slurry. Allow the soup to simmer to reach the desired consistency. Carefully place the frozen dumplings into the soup. Cook until the dumplings are heated through and cooked according to package instructions. Serve in bowls and top with remaining scallions and sliced hot peppers. Y

Why Call Wines Dry When They’re Obviously Wet? BY DAVID EHRENFRIED

I

t’s more than just a curiosity that wine drinkers refer to many wines as “dry.” Obviously, all wines are wet. So, why when asked if they’d like a glass of wine, do some people insist that it be “dry.” Why is that? This isn’t just a quirk of the English language. The French, who make the world’s most famous and iconic wines, refer to most still or non-sparkling wines the same way, saying sec, French for dry. So do people in other major wine-producing countries. Italians say secco or asciutta, Germans trocken, and the Spanish seco. As for describing most sparkling wines, especially Champagne, the term used almost

universally is the French word brut (pronounced “brute”), which means raw or very dry. In fact, the French have seven levels of dryness and sweetness for Champagne, three for brut alone and three more for less dry sec Champagnes. Clearly, referring to a wine as “dry” means something other than an absence of liquid. Generally, dry wines are wines that aren’t perceptibly sweet — at least not the kind of sweetness that is the first thing you notice when taking a sip of apple or grape juice or biting into your favorite candy bar. A curious thing about using “dry” in this context is that if you bit into an apple or a pear that

wasn’t sweet, you wouldn’t call it dry. You might call it tart, sour, bitter, or simply bad or tasteless. If either were dried, you’d likely describe each as sweet. Dry plainly has a unique meaning when describing wine, although no generally accepted explanation exists for how or why this came to be. An explanation that makes partial sense is that “dry” describes the sensation many people experience on the palette when tasting very tannic red wines, such as cabernet sauvignon or barolo. Tannins are astringent or bitter substances (polyphenols) that occur naturally in grape skins, seeds, and stems, as well as the parts of many other plants. They get absorbed into red wine in varying amounts during the winemaking process, which requires lengthy exposure to red grape skins to give red wines their many shades of ruby, garnet, purple, and tawny colors. Tannins are not bad, however. In the right amounts, they are vital to the taste, texture, balance, and aging potential of red wines. Still, wines with lots of tannins, such as cabernet sauvignon and Bordeaux blends, can make mouths pucker, taste a bit chalky or gritty, or feel dryly coated. loaded with tannins — or munching on unsweetened dark chocolate, walnuts, or peeled grape skins. Interestingly, as tannic wines age, the tannins gradually break down, softening the wines, though not making them less dry. This explanation, unfortunately, doesn’t explain why most white wines are considered dry, or why Port, which is both sweet and tannic, is not. White wines generally have little tannic taste, since winemakers usually separate grape skins,

stems, or seeds from crushed grape pulp early in the white winemaking process. Like other dry wines, most white wines are considered dry, because they’re not sweet. Port, on the other hand, which is tannic because of its long contact with grape skins during the winemaking process, is not considered dry because it’s sweet. When it comes to wine, dry and sweet are opposites.

Dry Wines Defined

Technically speaking, wine is considered dry when it contains little or no residual sugar. Residual sugar is the sugar that’s left over after the yeast used to ferment wine has turned all the other sugar into alcohol. The amount of sugar left in any single wine varies, depending on the type and style of wine being made and how winemakers control and manage the winemaking process. That’s not much, though, for many dry wines. Some wines have no or barely a trace of residual sugar, but many have more. Practically speaking, the

amount of sugar in very dry wines is less than .5 to 1 grams of sugar per 5-ounce serving. That’s barely more than a teaspoon (the equivalent of 4.2 grams) or less of sugar in a standard .75-liter wine bottle. By comparison, a liter of regular Coca-Cola has a bit more than 20 teaspoons of sugar in it or a bit more than 6.5 teaspoons in a 5-ounce serving. Unfortunately, winemakers are not required to indicate residual sugar content on their labels, although it

is sometimes available on the winemaker’s or distributor’s website. The system for categorizing the dryness (and sweetness) of Champagne illustrates how much residual sugar varies in wine. The driest Champagnes are brut nature (bone dry), extra brut (really, really dry), and brut (plain old very dry). Respectively, the amounts of sugar in 5-ounce servings of these are zero to 3 grams of sugar, zero to 6 grams, and zero to 12 grams. The three sec categories, extra sec, sec, and demi-sec, contain 12 to 17 grams, 17 to 32 grams, and 32 to 50 grams per serving, respectively. Demi-sec means “half-dry,” but most people probably taste it as sweet. The seventh category, clocking in with over 50 grams of sugar per bottle, is doux, meaning mildly or softly sweet. Yet, that characterization barely begins to capture the unmistakable, and sometimes sublime, viscous sugariness of many still dessert wines, such French sauternes, Hungarian tokaji aszú, and late-harvest German riesling. A serving of these wines can have 100 or more grams of sugar in them — very sweet and definitely not dry. Examples of popular red wines that often have less than a gram of sugar per serving include: barolo and barbaresco, Bordeaux blends, cabernet franc, California, Chilean, and Australian cabernet sauvignon, chianti, rioja, priorat, and douro blends. Similarly, dry white wines include sauvignon blanc, albariño, pinot blanc, Spanish verdejo, French muscadet and picpoul, Greek assyrtiko, and Italian soave, vermentino, and verdicchio. Examples of dry wines with between 1 and 5 grams per serving include the reds Rhone blends, malbec, merlot, pinot noir, syrah, zinfandel, and monastrell as well as the whites char-

The amount of sugar in most dry wines is so small that its effects are very subtle. And that’s just what winemakers want. Winemakers typically balance many things when making well-crafted wines besides the levels of residual sugar that can affect how dry or sweet wines taste as well as how they taste in other respects. These factors include wine alcohol content, acidity, tannins, fruitiness, and texture, among other factors. As consumers, we also influence how wines taste by how long and carefully we store them, by the temperatures we serve them at, and by the foods we eat with them. In particular, higher alcohol content can make some dry wines taste sweeter, and higher acidity can help make higher sugar content wines taste drier or less sweet, as well as fresh and lively. Lower acidity also can make dry wines taste sweeter, fuller, and bolder. Bold or more pronounced fruit flavors, which should not be confused with sweetness, are another attribute that can make dry wines taste sweeter. All these things are reasons for drinking wines at recommended temperatures, since higher alcohol wines can taste hot when too warm, most wines will lose their fruit and other tastes when too cold. Finally, if you’re concerned about calories in dry wines, it’s best to focus more on alcohol content than residual sugar. Most dry wines have relatively little, if any, sugar in them compared to other alcoholic beverages, as well as non-diet sodas and sports drinks. Alcohol usually accounts for 95% or more of the calories in dry wines. Dry wine alcohol content, listed on the front or back label of every bottle of wine, ranges from around 10-16% ABV (alcohol by volume). A 5-ounce serving with 10% ABV has about 60-80 calories. That rises gradually to 120-160 or more calories for 16% ABV. Fortified wines like Port and sherry that have 18-20% ABV, can have over 200 calories per 5-ounce serving. If calories are a concern, it’s important to remember that a sweet wine with low alcohol content can have as many calories as a dry, high-alcohol wine with almost no residual sugar. The lowest calorie wines are typically bone-dry white wines with 10-12% ABV. Understanding the characteristics of dry or sweet wines enhances our appreciation of wine, allowing us to discern our preferences with greater clarity. After four decades in the international spotlight, the achievements of saxophonist Branford Marsalis continue to grow, and at Jazz Fest, the visionary musician will perform Saturday night, closing out the event. Crossing stylistic boundaries while maintaining an unwavering creative integrity, Marsalis has become a multi award-winning artist with three Grammys, a citation by the National Endowment for the Arts as a Jazz Master and an avatar of contemporary artistic excellence. “Having Branford perform at Jazz Fest is truly an honor,” stated Tabing. “Not only is he an incomparable musician, he is an extraordinary educator and humanitarian.” Growing up in the rich environment of New Orleans as the oldest son of pianist and educator, the late Ellis Marsalis, Branford was drawn to music along with siblings Wynton, Delfeayo, and Jason. The Branford Marsalis Quartet, formed in 1986, remains his primary means of expression. In its virtually uninterrupted three-plus decades of existence, the Quartet has established a rare breadth of stylistic range as demonstrated on the band’s release: The Secret Between the Shadow and the Soul. But Branford has not confined his music to the jazz quartet context. A frequent soloist with classical ensembles, Branford has become increasingly sought after as a featured soloist with acclaimed orchestras around the world, performing works by composers such as Copeland, Debussy, Glazunov, Ibert, Mahler, Milhaud, Rorem, Vaughan Williams and Villa-Lobos. And his legendary guest performances with the Grateful Dead and collaborations with Sting have made him a fan favorite in the pop arena. His work on Broadway has garnered a Drama Desk Award and Tony nominations for the acclaimed revivals of Children of a Lesser God, Fences, and A Raisin in the Sun. His screen credits include original music composed for: Spike Lee’s Mo’ Better Blues, The Immortal Life of Henrietta Lacks starring Oprah Winfrey and Ma Rainey’s Black Bottom starring Viola Davis and Chadwick Boseman. Ma Rainey is the Netflix film adaptation of two-time Pulitzer Prize winner August Wilson’s play, produced by Denzel Washington and released in December 2020. Branford has also shared his knowledge as an educator, forming extended teaching relationships at Michigan State, San Francisco State and North Carolina Central Universities and conducting workshops at sites throughout the United States and the world. After the devastation wrought by Hurricane Katrina, Branford, along with friend Harry Connick, Jr., conceived of “Musicians’ Village,” a residential community in the Upper Ninth Ward of New Orleans. The centerpiece of the Village is the Ellis Marsalis Center for Music, honoring Branford’s father. The Center uses music as the focal point of a holistic strategy to build a healthy community and to deliver a broad range of services to underserved children, youth and musicians from neighborhoods battling poverty and social injustice. The Latin Grammy Award winner has been hailed as “the most profound young tenor saxophonist working today. He will be performing on Friday night at Jazz Fest, treating listeners to a compelling mix of mainstream jazz with a rich array of Latin and Afro-Caribbean influences. “Sánchez has garnered tremendous acclaim from critics and audiences alike,” said Tabing. “His ability to expand the borders of mainstream jazz is truly exciting.” Born in Guaynabo, Puerto Rico, David began playing percussion and drums at age 8 before migrating to tenor saxophone four years later. While a student at the prestigious La Escuela Libre de Música in San Juan, he also took up soprano and alto saxophones as well as flute and clarinet. The bomba and plena rhythms of Puerto Rico, along with Cuban and Brazilian traditions, were among the biggest influences on his early taste in music, with Sonny Rollins, Dexter Gordon and John Coltrane having the greatest impact on his playing. In 1986 David enrolled at the Universidad de Puerto Rico in Rio Pedras, but the pull of New York was irresistible. By 1988 he had auditioned for and won a music scholarship at Rutgers University in New Jersey. With such close proximity to New York City, David quickly became a member of its swirling jazz scene. He gigged with piano giant Eddie Palmieri and trumpeter Claudio Roditi who, along with master saxophonist Paquito D’Rivera, who brought David to the attention of Jazz legend Dizzy Gillespie. In 1991, Gillespie invited the young saxophonist to join his “Live the Future” tour with Miriam Makeba. From the beginning, David’s recordings have garnered national recognition. Produced by Branford Marsalis, Obsesión would provide the saxophonist with his first Grammy nomination, with many more nominations and major awards to follow for his next releases. Whether touring with his legendary jazz mentors, or under his own name, David continues to bring his unique sound to delighted audiences throughout the globe from France, Spain and Italy, to Japan, South Korea and now Pompano Beach!

Chart-topping contemporary Jazz pioneer Najee, is a Grammy and NAACP award-winning musician who will be gracing the Champion Porsche Stage on Friday night. “Najee is a genre-bending saxophonist who has collaborated with an array of luminaries including Prince, Quincy Jones, Stevie Wonder, Chaka Khan and many more,” stated Tabing. When Najee was just a kid in New York, he had the great fortune of meeting two iconic jazzmen: Sonny Rollins and Charles Mingus. The introductions, which left lasting impressions, further led him down his musical path. As he developed on the sax, John Coltrane, Charlie Parker, Yusef Lateef, and Hubert Laws became influences. Constantly honing his skills, Najee had the blessing of being mentored by iconic saxmen Jimmy Heath and Frank Foster and flutist Harold Jones. As an industrious and hungry young musician, Najee had the good fortune of coming through Dr. Billy Taylor’s now legendary Jazzmobile program. While a student at the New England Conservatory, (where both he and his brother attended) he studied Jazz with luminaries George Russell and Jaki Byard. In the late 80s when Najee finished school and returned to New York, he landed a gig with Chaka Khan along with his brother, guitarist Fareed (who is his long-time manager). An illustrious career ensued with album after album fusing R&B and jazz into a unique and captivating sound has resulted in six #1 albums on the Billboard charts!

SINCE IT WAS FOUNDED IN 1802, THE U.S. ARMY CORPS OF ENGINEERS HAS TAKEN ON SOME OF THE NATION’S MOST AMBITIOUS ATTEMPTS TO MANIPULATE NATURE FOR THE BENEFIT OF HUMAN BEINGS. THE AGENCY’S MOTTO — “ESSAYONS!” — TRANSLATES FROM FRENCH TO “LET US TRY!” AND TRY IT DOES. The Corps has plunged ahead time and again with billion-dollar construction projects based on assumptions that don’t exactly pan out. In some cases, the agency goes on to spend billions more restoring the natural environment it manipulated. Oregon Public Broadcasting reported in late October on the Corps’ $1.9 billion proposal to remedy the fact that its 13 dams on the Willamette River in Oregon have helped drive iconic salmon to the brink of extinction. Trouble is, that recovery plan is also based on assumptions that might not match reality. Central to what the Corps proposes is a pair of fish collectors, which the agency describes as essentially giant fish vacuums. Salmon the size of baby carrots would be whooshed into it, trapped in tanks and trucked around dams on their migration to the sea. The devices are to be built on a massive scale never before tested, and the Corps estimates a single collector could cost up to $450 million. A recent scientific review concluded that the kind of approach the Corps is pitching in Oregon won’t save salmon but “only prolong their decline to extinction.” The Corps says it’s the best option for helping salmon while keeping dams operational for hydropower customers, boaters

and other users of the Willamette systems — although many of those users say they would be fine with lowering reservoirs and curtailing hydropower if it helped fish. The Oregon story is one example in a long line of Corps projects that have drawn criticism over the years. In 1971, the New York Times editorial board declared “the American people are becoming increasingly fed up with the expensive, boondoggling, make‐work, environmentally destructive projects that to a large degree characterize the civilian activities of the Army’s Corps of Engineers.” Three decades later, a Washington Post investigation found the Corps pursued “billions of dollars’ worth of taxpayer-funded water projects, many with significant environmental costs and minimal economic benefits.” The Government Accountability Office concluded in 2006 that the Corps’ work was “fraught with errors, mistakes, and miscalculations, and used invalid assumptions and outdated data.” ProPublica, with its partner Reveal from the Center for Investigative Reporting, has reported that the Corps knew since 1852 that levees force rivers to run higher and faster and yet persisted in using them for flood control. When asked for a response to

critics, the Corps this week issued a statement in which it acknowledged that over its long history, “there have been challenges associated with some of our projects. As an organization, we are always striving to be better.” The agency said lessons learned from past projects have prompted changes to planning processes and the incorporation of “independent peer review.” The Corps said it’s working to modernize business methods, materials and designs while evolving in its approach to environmental and social concerns. Corps leaders are committed, the statement said, “to safely deliver projects, on time and within budget.” Here are some examples of Corps projects that didn’t go as expected.

NEW ORLEANS LEVEE SYSTEM

YEAR BEGUN: 1965 LOCATION: New Orleans THE PLAN: Prevent flooding

during coastal storms by building a series of levees around Greater New Orleans. WHAT ACTUALLY HAPPENED:

In 2005, design flaws allowed a storm surge from Hurricane Katrina to breach the walls of the $738 million levee system that the Corps had built over the

preceding four decades. The storm and flooding killed 1,392 people and caused damage totaling an inflation-adjusted $190 billion. The American Society of Civil Engineers called the levee failures “the worst engineering catastrophe in US History,” and the Corps later acknowledged its levees were “a system in name only.”

TENNESSEE-TOMBIGBEE WATERWAY YEAR BEGUN: 1971 LOCATION: Tennessee,

WHAT ACTUALLY HAPPENED:

Mississippi, Alabama THE PLAN: Build a 234-mile artificial waterway connecting the Tennessee River to the Tombigbee River in Alabama, creating a new channel to the Gulf of Mexico and an estimated 208,000 new jobs in economically depressed areas of Alabama, Mississippi and Tennessee.

The Associated Press reported in 2019 that the Tenn-Tom, as it’s known, “has never come close to traffic projections used to sell it to the public, and poverty rates have increased in most of the counties it flows through in Mississippi and Alabama.” New jobs totaled 29,000, a study by Troy University found — or 179,000 less than early projections. The project cost $2 billion.

in southeast Missouri with a construction project that would include levees and two giant rainwater pumps and cost $165 million. WHAT ACTUALLY HAPPENED:

The project was never completed. The Corps’ own lobbyist described the idea as an “economic dud with huge environmental consequences,” The Washington Post reported in 2006. According to earlier reporting by the Post, the Corps’ efforts were expected to drain 36,000 acres of wetlands and deliver virtually no actual flood protection.

OLMSTED LOCKS AND DAM YEAR BEGUN: 1988 LOCATION: Olmsted, Illinois THE PLAN: Build a lock and

dam system on the Ohio River to reduce delays on one of the most commercially trafficked water routes in the country, near the meeting of the Mississippi, Ohio, Tennessee and Cumberland rivers. The project was scheduled to be finished in 1998 at a cost of $700 million. The Corps projected the locks and dam would generate $920 million in economic benefits annually. WHAT ACTUALLY HAPPENED:

The project wasn’t completed until 2018 — 20 years later than expected. The cost, $3 billion, was four times what the Corps said it would be, and the economic benefits were $236 million, or about one-fourth the original estimate. In 2021, a collection of farmers along the river sued the federal government, claiming the project had increased the frequency and severity of flooding. The Corps sought to dismiss the suit, arguing the river’s flood pattern had not been severely

altered. The case is pending.

Columbia River, OregonWashington border THE PLAN: A colony of doublecrested cormorants had settled on a set of islands that the Corps built up with soil it dredged from the riverbed, and the birds were feasting on endangered juvenile salmon as they tried to make their way to the ocean. To save endangered fish, the Corps decided to shoot the birds and put oil on their eggs to prevent them from hatching.

The Corps was sued by environmental groups and state environmental regulators in South Carolina, where Corps officials were planning to dump potentially toxic dredge spoils. The Corps tried to get the lawsuit dismissed but eventually reached a settlement that included additional pollution controls. The effort took two decades thanks to repeated delays. Meanwhile, the cost more than doubled, to $973 million.

YEAR BEGUN: 2000 LOCATION: Florida Everglades THE PLAN: Undo the damage

done by engineering projects that degraded the famed ecosystem to half its original size. This damage occurred decades earlier, when the Corps was authorized to build levees around the Everglades and drain the wetlands. Key components of the restoration effort were to include building a massive reservoir the size of Manhattan and a series of artificial marshes meant to funnel clean water into the Everglades. The work would cost $8 billion and take 30 years to complete. WHAT ACTUALLY HAPPENED:

The Corps’ subsequent estimates put the project at $23 billion and 50 years to complete. Two decades passed before the Corps and state officials finally broke ground on the reservoir. According to the Miami Herald: “Even the Army Corps, which is building the

Margate residents had resisted the project, arguing that an existing retaining wall was sufficient and that dune construction would cause drainage problems for the seaside town. Their fears bore

out in 2017, when water pooled behind newly constructed dunes. The town sued. During the trial, according to The Philadelphia Inquirer, a Corps official acknowledged the standing water had surpassed agency predictions and that the agency wanted to continue building, despite being at a loss for solutions. Margate Mayor Michael Becker told the Inquirer the emotional toll of the beach construction was “worse than Hurricane Sandy.” After finding that the town’s concerns were “understandable and cry out for help,” a judge ruled construction could continue if the Corps fenced off ponds and built raised walkways for residents.

After the $250 million dredging was completed in 2022, saltwater from the Gulf of Mexico started entering the river. The Corps had known for decades that its continued efforts to deepen the river channel would trigger an intrusion of saltwater, according to The New Orleans Advocate. The agency predicted an underwater dam could contain the invading saltwater, but, according to Bloomberg, this year it failed to do so. Rocca Trattoria ITALIAN Rocco is a small and intimate neighbor-

hood place serving classic Italian fare. The shrimp tempura appetizer, while not classically Italian, was light, crispy and a great starter to share. We were suitably impressed with the flavor bomb that is the veal chop valdostano. The veal is butterflied, pounded thin, stuffed with prosciutto, gorgonzola, and wild mushrooms and topped with a brandy Marsala sauce. If you want something a touch lighter, the grilled salmon was delicate and fresh and prepared with garlic, fresh herbs and a touch of lemon.
