September 18, 2023 Dear Editor, When I started reading the September issue of Lighthouse Point, I came across a picture on page 36 that I found very upsetting. On that same page, Jon Piotrowski stated in his article, “The Ocean and the Environment” that those of us who live and enjoy our shorelines and surrounding waters need to speak up. I’m surprised he felt a photo of four men bringing in 50-60 fish was an accomplishment! Well, I am speaking up! As a resident of Lighthouse Point for almost 40 years and an avid scuba diver, my husband and I have seen a dramatic decrease in fish on the reefs. I believe our reefs are way overfished, and the photograph on page 36 reinforces my opinion. I’m tired of watching fishermen bring in really small fish and then say, “It’s a meal!” It’s like a broken record. Based on our experience living by the water and our familiarity with numerous fishermen, we’ve noticed that they frequently catch more than they actually require. As a result, they often 65,000+ Boat Stock: attempt to share theirParts surplusin catches with us. I sincerely hope this isn’t the situation here. Gray Matters BY SUSAN ROSSER

S

o, each month, as I put together this magazine, I see my photo on this Creatively Speaking page. And every time I look at it, I think, “Geez Louise, I really need to get a new portrait.” Since that photo was taken, I have stopped coloring my hair and dare I say, I look older — hopefully not that much. It was during lockdown when I first stopped dying my hair, so it wasn’t precisely deliberate. The pandemic kept many of us locked up in our homes, and my ever-growing roots served as a time stamp of my imprisonment. Finally, when I emerged from my cocoon and returned to my hairdresser for a cut and a blow dry, I told her I didn’t plan to color my hair —or at least for the foreseeable future. I wanted to see how I would look once the gray grew out. I suppose I found unexpected comfort by embracing my natural look during a time of such stress and uncertainty. Obviously, that was years ago. I still have the gray, but I’m not going to lie. I am not enamored with it. I had hoped that my hair would give me a silvery fox look. Instead, my locks are more of a steely, mousy gray. So, now and then, I consider coloring my hair or at least getting a few highlights. But then I remember what finally made my mom stop coloring her hair when she turned 50. My family had moved from Long Island to Manhattan, and my parents hired an interior designer, Caroline, to furnish our new apartment. Caroline had a small shop in Locust Valley, New York, which my parents had always admired. So, one day, they stopped in to inquire. Caroline was fun, friendly, extraordinarily talented and remarkably decisive. She never offered my parents more than two or three options when deciding about fabrics, colors or anything else. Once, my mother asked what would happen if my parents didn’t like any of the limited choices presented. She replied, “You should hire a different designer.” Still, my parents had tremendous respect and trust in Caroline, so they adhered to her “limited-choice-regiment.” As a 14-year-old, watching all of this unfold, I had come to one conclusion. Caroline was super cool.

Throughout my career as a graphic designer, Caroline’s influence has remained a constant presence. Over time, clients have made their fair share of misguided design requests. Caroline’s words of wisdom continue to resonate: “Perhaps it’s time to explore other designers.” Her unwavering confidence has equipped me to guide clients when they may unknowingly be jeopardizing the quality of their design projects. She was also the inspiration behind my mother’s choice to stop coloring her hair. I can hear my mom saying, “If Caroline has naturally gray hair, it must be in style.” The truth is, it takes a certain amount of conviction to walk around with gray hair. Sometimes, embracing my gray gives me a certain amount of assuredness. Other times, I question my choice. I was recently at an event with hundreds of women, and you could probably count the number of women with naturally gray hair on one hand. I felt a little awkward — like a middle school kid wandering through the cafeteria in search of a friendly face. I can’t say I blame anyone who colors their hair. It’s a personal choice, and we should all determine what makes us feel best. For anyone considering the transition to gray, trust me, there will be many times you won’t feel all that attractive. And occasionally, I consider returning to the world of monthly appointments with a colorist. And then I remember Caroline and her subtle confidence. And I want to be just like her. And my mom.

While the Fisher Family Pier will be closed for this event, everyone can gather on the south side of the Pier on the beach (the north side will be used for drone staging) for the best vantage point. According to the drone company, Firefly Drone Shows, the drone

show can be seen for up to five miles with unobstructed views and agreeable weather conditions. This year, there will be shuttle services from two convenient locations: Pompano Citi Centre and Pompano Beach Community Park, both located off of Federal Highway. These shuttles will provide hassle-free transportation to the Fisher Family Pier in coordination with our free Ride Circuit vehicles. Bridge closures, revamped traffic patterns, and flat fees for the Pier Parking Garage will also help accommodate the event’s incredible popularity. ne of the commonalities among successful people is their ability to work with others. They can see the good and the potential in someone, encourage them, train them, and guide them on the path to being a contributing member of the team. However, even the most successful leaders have been wronged and betrayed by others. Sometimes, their team members become competitors and steal clients or business strategies. The best option at this point is to think like Elsa from the Disney movie “Frozen” and let it go! I can hear some of you saying, yeah, but you don’t know what this person did to me and how they hurt me. They cost me hours of my time, hurt my feelings deeply, or cost me a lot of money. Let me ask you a question. Can you change the past? Can you travel back in time and fix the situation so it doesn’t happen? Of course not! So, the only other option is to learn from it and take precautions to prevent it from happening again. Letting go is easier said than done. People harbor that anger and resentment, and what they need to do is let it go. Forgiving the other person is the best response. Just know that you don’t forgive the person who wronged you for them. Forgive them for you — so you can release the negative energy and resentment. Then, you are free to use that emotional energy towards something positive and productive. In many parts of the world, leaves change color and fall off the trees in the fall, making this season a beautiful time of year. I have great memories of the leaves changing colors and falling off the trees in Upstate New York. It is beautiful! The reality is the trees push the leaves off when winter approaches. Leaves have a large surface area and require a lot of water to capture the sun and convert it to energy for the tree. During the winter, there isn’t any water. If the leaves remained on the tree, the tree would die. The tree gets rid of the leaves to conserve energy. How much negative energy are you putting into things and people? What if you redirected that energy to something positive and productive? If you hate your job, instead of complaining about it and being cynical, use that energy to look for a new one, instead of dwelling on how your spouse or significant other angered or mistreated you, forgive them and focus on their outstanding qualities. Remember, you forgive people for yourself, not them. Don’t let anger weigh you down and make you bitter. Instead, let it go! Forgive them, forget about it, and move on. Is this easy to do? Of course not; however, to have the dream life you want, you must grow and become the kind of person who attracts the right people, situations, and circumstances into your life. Ready, set, grow! Legal Checklist

Plan ahead to protect yourself

I

have touched on these subjects in many articles. Here is a condensed checklist.

1. Current Advanced Care Directives

A. DESIGNATION OF HEALTH CARE SURROGATE for someone

to make your medical decisions if you cannot communicate. Even if you are married, you must have this legal document, and it needs to be current and done by a Florida lawyer. Do not rely on generic forms or a document from your doctor, hospital or out-of-state documents. B. LIVING WILL Very specific Florida language regarding “pulling the plug.” Must be witnessed and notarized, and designate someone to make the final decision C. DURABLE POWER OF ATTORNEY Covers legal and financial matters while you are alive. Again, this needs to be done by a lawyer aware of current Florida law, including many specific powers that you must initial to be valid. Our current document is 26 pages. When you die, the advanced care directives die with you.

(t.o.d.) or in trust for (i.t.f.). Also designate contingent beneficiaries. Each institution has its own forms, but it should not cost you anything except some time.

5. Pre-Need Funeral Plans

If you are a Florida resident, you should have a Florida will, and your personal representative (executor) must be a Florida resident or a blood relative.

If you know you want to be cremated or buried, contact cremation societies or funeral homes to discuss pre-need plans. You will be signing a contract to pre-pay for your funeral, saving your loved ones stress, time and money. Give a copy of your contract to your primary and contingent representative so they will know who to call.

If you own real estate in Florida or elsewhere, you need one of these to avoid probate when you die. A. DEED AS JOINT TENANTS with right of survivorship; B. LIFE ESTATE DEED: You own property for the rest of your life, and you designate someone on the deed as having the remainder interest to inherit it without probate when you die. Be sure it is an “enhanced” (also known as “Lady Bird”) to allow you to sell it without consent or joinder of the person you name. C. TRUST AND DEED transferring property to you (and your spouse) as Trustee(s) of your Trust. This allows you to name contingent beneficiaries in case your first choice dies before you or with you in a common accident. The revocable living trust also allows you to buy future properties as trustee and to amend the trust at any time while you are alive. The deed to your home should have language confirming that it remains your homestead. The above documents should be done with the assistance of an Estate Planning Attorney. The following need to be done by you personally:

4. Beneficiaries

Designate beneficiaries on ALL of your accounts to avoid probate. This is also known as payable on death (p.o.d.), transfer on death

If you qualify based on age and health, consider long-term home health care plans. You will be entering into a contract providing for a specified term of years that you are eligible for home health care if incapacitated. These contracts vary greatly, so shop around and consult an impartial expert before signing.

7. Car Insurance

Have car insurance that includes at least $100,000 of bodily injury liability (b.i.) and uninsured motorist (u.m.). Do not have any deductible on your P.I.P. (no fault). If you own more than one car, consider “stacking”, which allows you to double (two cars) or triple (three cars) your uninsured motorist coverage for a small additional premium. Uninsured motorist is the most important insurance you can have, since Florida does not require bodily injury coverage. If you do all the homework on this list, you are well on your way to getting an “A” in Legalities of Life 101. Times Are Changing – Are Fishing Seasons Changing? BY JOHN PIOTROWSKI

M

any old salts rely more heavily on the changing fishing seasons than the calendar seasons. For years, veteran captains could set their clocks by fish migrations. Is there a change in the tides, I wonder? We know where the sailfish and wahoo are headed in January, February and March. We know where to look for dolphin and tuna in April, May and June. July, August and September, we can find swords and snappers. October, November and December are festive, but we can follow the bugs and bait to find everything from snook to Marlin. Or can we? Are the tried and true fish seasons as reliable as the calendar, or is something changing? For many of us who live or spend time on the water, it’s hard not to notice the crazy high tides this time of year. Is it just me, or is the water getting higher every year? I’m pretty sure the fish are supposed to swim under the dock and not over it. You can’t help but start thinking about what is happening with our oceans. I watched a

news report that said water temperatures near the keys hit a record 101 degrees. I wondered if that could be true. Someone told me that a body of sargassum wider than some of our states was headed our way. That is a lot of seaweed! A few weeks ago, I was reading reports of Orcas off the keys and in the Gulf. Huh? Since when does that happen? Does anyone else watch those cool shark shows where they tag and monitor great white sharks? What the

heck is a great white shark doing in Palm Beach? The darn shark might as well have been sunning himself on the beach he was so close to shore. I thought they liked cold water. I hear stories of spinning baits in Miami and whales near rivers. I’m pretty sure someone posted a crocodile swimming through the canals of Pompano Beach. I don’t know what those of you reading this article think, but that sure seems nuts to me. I was stoked to see that we’re getting some decent catches of dolphin and even a few chunky yellowfin tuna this October. But hold up a sec – aren’t we usually yakking about dolphin more in April and May, not October and November? And get this, you don’t have to haul it to the Bahamas for yellowfin anymore! I guess it keeps things exciting. Just go out there and wet a line, hang on and be prepared for anything. You might just snag a bluefin tuna while your fishing for sailfish. Hitting up those monthly fishing club meetings has its perks, like getting the lowdown from some top-notch captains. I think they’ve been noticing a few changes, too. Maybe it’s time for all of us to start paying closer attention, not just to the fish but also to our local waters. It’d be a bummer to be caught off guard with iguanas riding coconuts in your backyard or having your 9th-floor beach condo turn into the ultimate windmill lookout. I’ve been chasing fish around these parts for nearly two decades, and just when I thought I had them all figured out, they flip the script. state planning — the process of transferring your wealth to heirs and others—can be very important for anyone who wants to be certain that their loved ones are adequately provided for and taken care of. When done well, estate planning aims both to allow you to pass on your assets as you see fit, and to minimize the state and federal tax bite that often accompanies the transfer of significant wealth. Even if you are not subject to estate taxes or don’t have family, estate planning can potentially enable you to decide which people and charitable organizations will receive your wealth at your death. Failing to plan can mean that you will let the government make those decisions—and we find that few people are fond of that choice! Here’s why your estate plan may need to be refreshed:

Most Estate Plans Are Old—And Potentially Outdated.

Even if you have an estate plan, you may not be nearly as well prepared as you think you are for transferring wealth according to your wishes. That’s because more than half of the estate plans these affluent individuals have in place are more than three years old (Source: AES Nation, LLC, 2018). Does Expressing Gratitude Make a Difference? BY MICHELLE HAYS

G

etting caught up in everything we aren’t getting from our partners is so easy. I have spoken to countless couples about their relationships, and spouses always share one common gripe: “I don’t feel loved.” Isn’t one of the main reasons for getting married to feel loved by our partner? The problem is that we are so focused on ourselves and our feelings that we rarely consider if our partner feels loved. Have you considered if your spouse feels loved lately? I have. Nowadays, I regularly check in with my husband, Brian, because I know the consequences of not feeling loved in a marriage. Now, I ask Brian straight out. Do you feel loved? However, that wasn’t always the case.

When I married my first husband, Scott, I had a bit of (I am ashamed to admit) a superiority complex. As far as I was concerned, I did everything expected of a good wife and mother, and I did it well! I lost myself in making my family happy. Yet, I did not feel loved. The thought that Scott might not feel loved never even crossed my mind. In my mind, I thought, of course, he is happy and feels loved. I am confident that Scott never considered whether I was feeling loved or not either. I can also say that neither one of

us expressed much gratitude for each other during our marriage. I wish that we had. Things may have turned out differently for us. So, what about you? Do you believe that you are doing everything right in your relationship? Do you regularly show gratitude for your spouse, or are you primarily focused on their imperfections? We all know that no one is perfect, but in our minds, we don’t see ourselves as being imperfect. We don’t consider ourselves annoying, frustrating, or acting self-centered. We are simply being ourselves. Guess what? So is your spouse! Marriage is a commitment between two imperfect people. Ahhh, but this is where gratitude makes its grand entrance! Ta-da! Allow me to introduce you to GRATITUDE, the healer of hearts! The great master of love! Did you know that research shows that expressing gratitude releases oxytocin, which connects and strengthens the bond between two people? Did you know that showing gratitude is one of the simplest ways to increase happiness in your marriage? Expressing gratitude is the act of celebrating the positive in our relationships! We can create a significantly more profound and meaningful connection when grateful. Isn’t that what we all want and deserve? Remember, we can’t “will” ourselves a happy marriage. We must be “willing” to express gratitude to our spouse. It makes all the difference in the world! Did you know that saying a meaningful “thank you” can improve your spouse’s perception of you and your relationship? It’s a fact! So, let your partner know they are cherished, appreciated, and valued. Thank them often. Be curious. Ask them what makes them feel loved. You are not a mind reader. What makes them feel loved may differ significantly from what makes you feel loved. Make showing gratitude to your spouse a daily occurrence. Doing so makes the danger of your marriage becoming all about you impossible. Love expands when your spouse’s happiness becomes equally important as your own. It’s not complicated. Words and actions are far more valuable than things. Think of gratitude as the gift to your spouse that keeps giving all year long! Happy Thanksgiving to you and your family. o matter how many people my family has at our Thanksgiving table, we always indulge in a minimum of three pies. And most of the time, that number is four. Even one year, when it was only four of us, we had four pies. My family can never agree on what one pie to make and my daughter loves to bake — so why not four pies? A few years ago, we introduced a new pie into our repertoire, and it quickly became the favorite — Claire Saffitz’s cranberry-pomegranate mousse pie from her book Dessert Person. We all knew we had landed on a new family tradition as soon as we tasted it. After a heavy, rich Thanksgiving meal, this pie is cool, sweet and super tart — perfect for a Floridian Thanksgiving. And for those with limited oven space, it has a no-bake filling.

Cranberry-Pomegranate Mousse Pie Ingredients 2 wide strips orange zest, (use a vegetable peeler) 1 cinnamon stick or ¼ teaspoon ground cinnamon Kosher salt (just a pinch) 10 ounces (283g) fresh cranberries (about 2½ cups), plus about 20 for garnish

Preparation

Save the plastic wrap you use to cover the cranberries and use it later to cover the pie while it chills in the fridge.

The Crust

To make a Graham Cracker crust, mix 1 ½ cups Graham cracker crumbs, 6 tablespoons melted unsalted butter, 1/4 cup sugar, a pinch of salt and 1 egg yolk. Press into a pie plate and bake in a pre-heated oven at 350 degrees until it is lightly browned, 12-15 minutes. ABOVE The cranberry compote — it should be thick and jammy!

1 cups granulated sugar (300g), plus more for garnish 4 tablespoons pomegranate molasses, divided (100g)* 2 cups heavy cream (453g), chilled and divided 1½ teaspoons unflavored gelatin powder 2 tablespoons powdered sugar 1 Graham Cracker crust (store bought or see note below.)

1. First, make the cranberry compote. Add the orange zest, cinnamon, salt, cranberries, 1 cup of granulated sugar (7 oz / 200g), 3 tablespoons of the pomegranate molasses (2.5 oz / 72g), and 1 cup water (8 oz / 227g) to a small saucepan. Bring to a boil and stir often with a heatproof spatula. Cook until the cranberries burst and the mixture gets very thick like jam. (See photo.) The original recipe says 10 to 15 minutes, but it took me closer to 30 minutes. When you scrape the bottom of the pan with the spatula, the mixture should hold the line for a second. Remove from the heat. Using a fine mesh strainer, strain the cranberry mixture into a medium bowl. You will have to use the spatula to push the mixture thought the strainer. Throw away the solids. Whisk 1/3 cup of the heavy cream into the cranberry mixture until it is totally combined. Cover with plastic wrap and refrigerate until it has cooled, about 30 minutes. 2. Add 3 tablespoons cold water to a saucepan (you can rinse and dry the same one used to make the cranberries) and sprinkle the gelatin over it. Do not stir the gelatin. Set aside for 10 minutes until the gelatin has softened. 3. While the gelatin is doing its thing, add 1 cup of the heavy cream to the bowl a stand mixer fitted with the whisk attachment or use a hand mixer and a large bowl. Start the mixer on low and increase the speed to medium-high as the cream thickens. Whip until you have firm peaks. Refrigerate the whipped cream. 4. Remove the cooled cranberry compote from refrigerator and whisk it to loosen it and make it smooth. Heat the saucepan with the gelatin over low heat. Swirl the pan as it heats. Cook until the gelatin is clear liquid and doesn’t have any more granules. The gelatin must be melted in order for the mousse

to set. Now whisk the gelatin into the cranberry mixture. 5. Take the whipped cream out of the refrigerator and add only half of it to the cranberry mixture. Fold the whipped cream into the cranberries until there are only a few streaks. Avoid over-mixing. The goal is to keep the mixture as light and fluffy as you can. Add the rest of the whipped cream and and fold it into the mousse, again, using a light touch to keep it fluffy. Fold until the color is uniform. 6. Add the mouse to the graham cracker crust and smooth out the top. After one hour, cover the pie with plastic wrap. Otherwise an icky skin will form on the top. Refrigerate the pie for at least 4 hours, until it is set. I recommend making the pie a day before you want to serve so you don’t have to worry about it being set. 7. This part is totally optional, but it is pretty. Combine 1/2 cup sugar, 1 tablespoon pomegranate molasses and 1/3 cup water in a small saucepan. Bring the mixture to a low simmer to dissolve the sugar. Add the reserved 20 cranberries and cook until they are softened. A few might break or collapse which is OK. This should take about 3 minutes. Remove the cranberry from the mixture and place them on a wire rack. Let them dry for about an hour until they are just a bit sticky but not totally wet. Toss the cranberries in granulated sugar and place them back on the rack to dry. 8. When you are ready to serve the pie, with the remaining 2/3 cup of heavy cream, whip the cream until you have soft peaks. Add in the powdered sugar and whip to combine. Dollop the whipped cream on top of the pie and arrange the sugared cranberries on top. Y * Pomegranate molasses is available in well-stocked grocery stores or online. Yup, I got it at amazon.com.

Uncork the Joy Thanksgiving Wines — Something for Everyone BY DAVID EHRENFRIED

I

f you’re tasked with picking wine for Thanksgiving, you may be wondering what wines to serve. There are many possibilities, as you might guess. Ultimately, if the company and setting are right and the food is tasty, most people will probably enjoy whatever wine or other beverage is served. And if they don’t, it hopefully won’t matter. Everyone will probably have a great time either way. Let’s talk wine logistics first. Specifically, how much wine will you need? A regular bottle of wine is .75 liter—a little over 25 ounces. That’s roughly six four-ounce servings or two glasses each for three adults. Using that measure, two to three bottles should be enough for six adults, or maybe four if wine is served before or after the meal. If there are only two or three adults, one bottle shouldn’t be too much. If any wine remains, close the bottle and put it in a cool place. It should keep for three or four days and still drink nicely with leftovers. Also, make sure there’s a working corkscrew. Alternatively, you can buy sparkling wine or wine with metal screwcaps. (Don’t let anyone tell you that screwcaps are just for cheap wine. That’s just not so.)

Sensible Thanksgiving Choices

You may have tried and true favorites, but picking wine for a Thanksgiving meal can be confusing. There are many different dishes, so figuring out what wines pair best can be tricky. I suggest picking wines based on the assumption that roasted turkey is probably the main dish and that some people like red wine while others prefer white. You’ll get extra points for pleasing the host and being celebrated as a wine whiz. There are various thoughts about what wines to serve with a traditional Thanksgiving meal of turkey and all the traditional sides and desserts. One theory is to serve bold, festive wines like full-bodied cabernet sauvignon or oaky, buttery chardonnay. These weighty wines accent the greatness of Thanksgiving dishes with robust tastes, including abundant fruit, smoky oak and other flavors. Such wines can be impressive in their own right and drink nicely with rich dishes prepared with generous amounts of butter. But

keep in mind what helps to make these wines powerful and filling is their high alcohol content, often over 15% alcohol by volume (ABV), relatively high compared to lighter red and white wines. Also, cabernet sauvignon and other powerful red wines are typically quite tannic, particularly when young. That mouth-drying astringency may not be the best match for roasted turkey. Another approach is to serve lighter, brighter, more refreshing wines, such as pinot noir, a nimble red, or pinot grigio, an easy-going white. These and other lighter wines can complement most Thanksgiving dishes while helping to make the entire meal seem a little less filling. An in-between approach is to serve medium-bodied

wines, like merlot and sauvignon blanc. Yet another alternative is to offer guests several kinds of wines, including lighter and heavier varietals or blends, letting guests taste each one and drink whatever they prefer. I like serving both lighter and heavier wines when there are many guests. It can add to the fun and conversation. When picking wine for Thanksgiving, go for quality. That doesn’t mean you need to spend more than $50 for each bottle, although you can buy superb wine with that kind of budget. My suggestion, particularly for a large gathering, is to consider spending $10-$30 a bottle, which includes hundreds of wonderful wines. Spending more, of course, will expand your choices.

White Wines

Among my favorite white wines for Thanksgiving are sparkling wines. They’re festive and refreshing and go well with almost everything served in a traditional Thanksgiving meal, including dessert. French Champagne is ideal, but you’ll need to spend $40 and up. Some of the Champagne wineries I like are Billicart-Salmon, Pol Roger, PiperHeidsieck, and Nicolas Feuillatte. There are many other less costly fine sparkling wines. Italian proAmong my secco and Spanish cava are also personal favorites festive, with good ones costing for Thanksgiving $15-$30 a bottle. California is riesling wine, produces loads of sparkling especially from wine. California sparkling wine Germany, the producers include Schramsberg, French Alsace, Gloria Ferrer, and “J.” Outside and the New York California, consider Gruet from Finger Lakes New Mexico, terrific values at region. Riesling under $20. If you’re partial to is extraordinarily French sparkling wine but don’t food-friendly. want to pay Champagne prices, consider buying crémant, the name for French sparkling wines made outside the Champagne region in places like Alsace and Burgundy. For still white wines, great Thanksgiving choices are French chablis, a dry, typically unoaked chardonnay made in Burgundy, and dryer chardonnays from the Sonoma and Santa Barbara county coasts. They’re lighter, brighter, and more minerally than oaky, buttery chardonnay and wonderfully fragrant, fruity, and refreshing. However, if you prefer fuller, creamier chardonnay with lots of toasty oak and vanilla flavors, plenty of that is available as well. Lighter choices are dry pinot grigio (a.k.a. pinot gris) or pinot blanc, which often have lovely apple, peach, pear, and nectarine flavors. Look for pinot grigio wines made in the Alto-Adige, Friuli, or Collio regions of northeastern Italy, or pinot gris from the French Alsace or Oregon Willamette Valley regions. For aromatic midweight whites with tart citrus and grassy notes, try Sauvignon Blanc. Sancerre from France is a classic choice, while New Zealand, South Africa, and Bordeaux (often blended with roussanne and marsanne for a sweeter, heavier taste) also offer great options. Alternatively, consider Albariño from Spain or Alvarinho from Portugal for wines with fresh acidity that pair well with roast turkey

Among my personal favorites for Thanksgiving is riesling wine, especially from Germany, the French Alsace, and the New York Finger Lakes region. Riesling is extraordinarily food-friendly. Good riesling has abundant fruit and floral aromas and mouthwatering freshness along with citrus, apple, pear, as well as apricot and other stone fruit flavors. German riesling labeled kabinett or trocken (dry) are perfect, with just the right amount of sweetness to handle pepper and other pungent Thanksgiving spices. They also complement sweet dishes like yams, carrot soufflé, and dessert. Avoid the sweeter versions unless you plan to sip them with dessert.

Red Wines

Many red wines pair deliciously with traditional Thanksgiving meals. I prefer either lighter or medium-bodied easy drinking reds. They should have nice red or dark fruit flavors, like cherry, raspberry, or blackberry, plus some spice and earthiness. They also should have smooth texture and mild tannins. Here are some of my recommendations. If you prefer lighter reds with your Thanksgiving feast, pinot noir wines are lovely, and there are dozens of nice ones to choose from in every good wine shop. You can buy pinot noir made in Burgundy, France, but sadly, they’ve gotten comparatively expensive. Even hum-drum bottles now sell for $25 or more. Generally, much better pinot noir values are available from Oregon’s Willamette Valley and California’s Sonoma County and central coast between Santa Cruz and Santa Barbara. I prefer wines made by smaller producers to those made by the bigger names. Quality is high. A bolder but still lighter red to consider is French côtes du rhone (usually a blend of grenache, syrah, mourvèdre, and sometimes other grape varietals) or similar blends from Australia or California’s central coast regions. If you prefer an Italian red in this weight class, consider dolcetto d’Alba or barbera d’alba. For medium-bodied wines, look for merlot or merlot-based blends from Washington State or from the French Bourdeaux’s Right Bank districts, like St.-Émilion, côtes de bourg, fronsac, blaye and castillon. Other red medium-bodied wines with a bit more oak and earthiness are Spanish Rioja and Ribera del Duero, made principally from tempranillo grapes, and delightful, easy-drinking bierzo made from Mencia. If you prefer a bold and silky red wine, consider getting a velvety syrah. The eternal home of syrah wine is France’s Northern Rhone region. The most affordable are Croze-Hermitage and Saint Joseph. Others get very pricy fast. California also produces excellent syrah, but you’ll likely need to spend $25 or more. Australia makes more syrah (a.k.a. Shiraz) than any other country at all price levels. Good ones are silky with dark fruit and peppery spice — hallmarks of good syrah. Those from Australia’s southern coast tend to be bolder than those from the eastern coast. Another of my favorites is California Zinfandel. A crowd pleaser, it also has plenty of body and bursts with red and dark fruit and spice flavors. It’s great with many kinds of dishes, tends to have a smooth, firm texture, and is easy to drink. Look for wines made by zinfandel specialists like Bedrock, Cline, Hartford, Limerick Lane, Ridge, Carol Shelton, Seghesio, and Turley. Have a safe and wonderful Thanksgiving! Y

An international team of engineers and technicians from Goodyear and Germany’s ZLT Zeppelin Luftschifftechnik worked side by side to complete the project. Parts such as the tail fins and gondola were built in Germany and shipped to the U.S. for assembly. The balloon-like body of the airship – the “envelope” – is made of polyester with an innovative film from DuPont™ called Tedlar®, surrounding a semi-rigid internal structure, which differentiates this airship from previous Goodyear blimps.

How Does It Stay Up There?

MOVEMENT AND STEERING ENGINES Three four-cylinder, 200-horsepower engines are located on either side of the envelope and at the tail and can propel the airship at speeds of up to 73 miles per hour. TAIL WHEEL The new airship’s lower profile brings the tail section closer to the ground and is designed to allow the rear section of the craft to rest on its absorber and tire. TAIL FINS The new blimp has an “inverted Y” configuration at the tail, and the fin control surfaces operate in tandem as “ruddervators” for directional navigation using fly-by-wire electrical control. SIDE STICK CONTROLS Located next to both left and right seats, these electrical controls are used to steer the blimp left and right, up and down, using the main three tail fin control surfaces. OVERHEAD PANEL Individual circuit breakers allow pilots or mechanics to isolate and control any piece of equipment, including the engine, fuel system, air and helium, radio, exterior lighting and more.

It’s the time of year when we gather around the table with family and close friends to enjoy a large, scrumptious meal and think about what we are grateful for in our lives. Thanksgiving is a celebration of the harvest and different people coming together to share a joyful moment. Yet, Thanksgiving can also get a bit out of control with all the decorations and trimmings. Food Choose organic and locally grown foods when you can. It’s pretty easy to find organic turkeys this time of year.

There’s no doubt that Thanksgiving is heavily focused on food. Here are some ways to create a feast while still being kind to the planet:

Skip the meat — there are so many options now to create a vegetarian or vegan holiday meal. Consider fish for a pescatarian meal, tofurky or just going with lots of side dishes.

Many families tend to create a formal Thanksgiving dinner, bringing out good china, silverware and elegant linens. This is a great way to reduce waste. However, some families opt for plates and utensils that they can easily discard after the meal to reduce clean-up time. Fortunately, you can still choose more sustainable options. First of all, avoid using plastic plates and utensils; instead, choose paper (recycled is best), bamboo or even those made from palm leaves. Next, be sure to use real wine glasses — not plastic ones — and don’t serve your drinks with plastic straws or stirrers. If possible, use real cloth tablecloths instead of the plastic throwaway ones.

Storage Everyone loves Thanksgiving leftovers. The way you choose to store all of that extra food after the big meal can have a real impact on the environment. Here are some great alternatives to plastic storage containers that are healthier for both you and the planet.

Reduce waste by donating leftovers to those in need or creatively reusing the food to make soups, stews, salads and sandwiches. Compost what you don’t use.

Consider buying extra food when you are shopping for your holiday meal and donate it to a local shelter or food bank. Look for special volunteer opportunities in your community during the week of Thanksgiving that help to provide a holiday meal to those in need. Finally, consider donating to an environmental organization on Giving Tuesday, a global day for sending charitable donations to organizations of your choice that always takes place the Tuesday right after Thanksgiving to kick off the season of giving.

The veal is butterflied, pounded thin, stuffed with prosciutto, gorgonzola, and wild mushrooms and topped with a brandy Marsala sauce. If you want something a touch lighter, the grilled salmon was delicate and fresh and prepared with garlic, fresh herbs and a touch of lemon.
