STILL CRAZY (ABOUT EACH OTHER) AFTER ALL THESE YEARS My father was hospitalized this week for an acute allergic reaction to a medication. Once in the hospital, he had a very bad reaction to the drugs used to treat the first reaction. Going to the hospital and feeling worse—he was a hot mess. Thankfully, he was only in the hospital for two days—but it felt so much longer. The first night he stayed in the hospital, I slept over at my parent’s apartment to keep my mother company. She was very worried about him. And while my Dad was in the hospital, he was worried about my mom who has her own set of health challenges. It was obvious they hated being apart. My parents celebrated their 65th wedding anniversary last year. 65 years. That’s one hell of a marriage. A few weeks ago, I read an article in The New York Times entitled “To Fall in Love with Anyone, Do This.” The article refers to a study by researcher Arthur Aron of the Interpersonal Relationships Lab at Stony Brook University in New York, who published his results in “The Experimental Generation of Interpersonal Closeness” in Personality and Social Psychology. Aron wanted to see if it is possible to get two people to fall in love—so he experimented. Basically, he had a man and woman sit together in a lab and ask and answer 36 questions of each other. The questions start off pretty innocuously and get more personal towards the end. At the very end, they must stare into each others eyes for four minutes. Aron succeeded. Some subjects did fall in love and the lab researchers were even invited to weddings. I suppose the premise is that we can choose to fall in love—it’s not just something that happens to us. So that got me thinking as I sat in the hospital with my Dad. If you can choose to fall in love, it follows that you can choose to stay in love. Which brings me back to my parents. During those few days while my father was hospitalized, it was amazingly clear how committed my parents are to one another. Seeing them still in love and so concerned about each other’s welfare reminded me of that article. While my parents fell in love the old-fashioned way, they still choose each other every day. (Of course, my mother would tell you the secret to their marriage is separate checking accounts.) People say marriage is hard work and they’re right. For a marriage to succeed you need to make a monthly, daily even hourly choice to work with, understand, support and love your spouse. Getting to the gym can be a tough choice when you feel tired and worn out; but if you don’t go, you won’t see results. Choosing to love and honor your spouse each and every day for years and years may sound silly, but it seems to me, it’s well worth the effort. My dad is much better now—and still choosing my mother.

Stroke Evaluations BY GREG MOUSSE T TE USPTA, DIREC TOR OF TENNIS, CIT Y OF LIGHTHOUSE POINT We’ve all heard the expression “a picture is worth a thousand words.” The next time you take a lesson on that struggling backhand, ask your pro to take a video of your stroke. At the Lighthouse Point Tennis Center, we offer a video lesson. The ball machine feeds balls to my student while I record them on an iPad. I have an app on the iPad that shows the student hitting the ball in various slow motion speeds as well as being able to freeze the frame on impact. This tool is extremely beneficial for all players. I can tell them over and over again that they are not turning or hitting the ball too early or late, but when they actually see themselves making the error, they are able to correct it much more quickly. After reviewing the video with them, we repeat the process and the vast majority of the time, I see improvement. I can also set up the ball machine to hit various shot patterns so I can video my students playing out points which can be very helpful when coaching strategy, tactics and point playing situations. I
t seems last month's “Fish Tale” sparked some interest in both directions. It encouraged Lori Hatfield to send us her fantastic “Three Sailfish in Three Hours” as you see here. And it caused G. Thomas Breur to send us a letter to the editor that we should know better than to show sailfish out of the water since that is against federal law. First, a sincere apology to Lori for including her in this story this way. She, like almost everyone, was surely unaware of this quirky federal regulation. It is legal to harvest an Atlantic Sailfish at a rate of one per day per licensed angler. But anglers who chose not to keep their fish, must release it with the utmost care including not removing the fish from the water. The regulations (CFR 635.21) are a bit of a challenge to find but once I did, the rules are hypocritical. Yes, you can kill a sailfish to mount it or grind it into your favorite fish dip recipe—but if you intend to release it, the regulations state you must take care not to harm the fish which includes removing it from the water to remove the hook or to take a photograph of it.

I called the federal agency in Maryland that handles “highly migratory species” such as billfish and some sharks. Since these species move so much, the federal government regulates them as opposed to individual states where the fish may live for only certain times of the year. When asked about this hypocrisy, “This is the case for all Atlantic highly migratory species,” according to Karyl Brewster-Geisz who seemed to understand quite well that I was probing for a comment on the contradiction of the law but did not go off-the-record to agree with me. There is a disconnect between regulations protecting sailfish and the rules protecting other species that are under significantly more pressure from over-fishing. To be clear, I support strong regulations to keep fish stocks healthy. my life and talk frequently with true professionals. Sport fish such as tarpon and sailfish have healthy populations mostly because fisherman don’t harvest them. Some food fish like snook are well protected and the populations seem strong too. Snook is not sold commercially in restaurants or grocery stores. Fish allowed to be harvested and sold commercially such as grouper and snapper are where regulations fall short. “I can get 10 sails in a day but all last year, but I think I caught two legal-size grouper,” says Vinnie LaSorsa a local professional captain. Thanks to regulations such as CFR 635.21, the sailfish population is strong but the grouper population is being depleted. Maybe Vinnie just has bad luck at catching grouper but the point is the legal limits on prized food fish are clearly not getting the job done. Protecting all the fish in the sea is a daunting task. I know from personal experience that fisherman decades ago would bring everything to dock—dead of course—to get photographs

and show off their catches and these fish were rarely eaten. My message is definitely one of conservation: use heavy tackle to reduce fight times that can overly tire a sports fish, use circle hooks to reduce gut-hooking, release the fish with care and respect the size limits on any fish you harvest. We live in a different era and most fisherman I know understand the value of a vibrant fishery and aim to protect it. The occasional photograph doesn’t seem to be major problem.

That's Entertainment BY AMANDA JANE One of my goals for 2016 is to host more dinner parties. More specifically, I want to improve my entertaining skills. I was inspired by some of the holiday get-togethers I attended, one in particular which stands out. On a Sunday afternoon I was invited to my neighbor's home. We gathered along a barn style table set with a regal gold and red Christmas theme. Along the center ran a wintery wreath with delicate lights. We enjoyed crisp stone crabs, cheeses, sushi, salad and wine. The setting inspired toasts and sparked stories and laughter. When my boyfriend tapped me on the shoulder to tell me it was getting late, I didn’t want to leave. That is what entertaining is all about. This mushroom and red wine braised beef with horseradish cream recipe is one that I would serve to guests. It takes multiple hours to cook, but once you prep and sear the meat—the roasting process does all of the heavy lifting. The beef derives flavor from the fat so don't remove too much fat before cooking. I leave a good amount of fat and cut excess fat off after cooking. The horseradish cream is optional, but adds a great bite to the fall-apartyou-don’t-even-need-a-knife beef. And perhaps you too will find this one-pot meal a perfect menu item for your next dinner party.

Mushroom & Red Wine Braised Beef with Horseradish Cream COOK TIME: 3 ½ HOURS • MAKES 6 SERVINGS BEEF INGREDIENTS 2 tablespoon olive oil 4 pounds of beef chuck, butchered into 8-10 slabs Sea salt and pepper 1 cup dry red wine 3 cups of beef broth HORSERADISH CREAM INGREDIENTS ½ cup heavy cream ⅓ cup horseradish DIRECTIONS: Preheat oven to 300°F. Generously season the beef with salt and pepper. Add olive oil into a dutch oven over medium-high heat, and let the oil to warm up, about 30 seconds. Add the beef and cook, turning the meat occasionally until well-browned on all sides, 10-12 minutes. Add in the wine, broth, mushrooms, onion, garlic, thyme and butter. Bring the broth to a simmer. Cover the dutch oven and roast meat in the oven for 3 hours, tossing the meat halfway through. Uncover the pot for the final hour of cooking.

1 cup mascarpone, room temperature Sea salt and pepper While the meat cooks, make the horseradish cream: use a medium bowl and an electric mixer to combine the heavy cream, horseradish and mascarpone until blended. Season with salt and pepper. Add extra horseradish if you please. Transfer to a serving dish and store in a cool place but avoid the refrigerator if possible, the mixture tastes best when served at room temperature. To serve, remove meat and mushrooms from broth and top with horseradish cream, a sprig of thyme (if looks could kill), and a pinch of pepper. Tip: the rich beef broth can be strained and reserved in the refrigerator for future cooking.

ust what do you know about bees? I’ll bet you think there is only one kind of bee, the kind that make honey, right? But there are many native bees, throughout North America and Canada; every state has a dozen or so species. Many are solitary bees, whose main purpose is to collect pollen that is used to raise young. They do not form a hive, or make honey; however, they are quite simply some of the best pollinators on earth. It is a fact that every third mouthful of your food has a bee pollinator to thank. Without our pollinators, there would be no fruits and vegetables. Most of us never stop to think about these tiny creatures only ½ inch in length, going about their business and in the process providing us with nourishment.

HOW MUCH IS TOO MUCH?
T
he technological advances in the last few years have been amazing. These advances have provided us with unbelievable opportunities for ourselves and our children. However, now as parents we must answer the question, “How much is too much?” The term “screen time” was coined to describe any activity done in front of a screen; watching TV, working on a computer, playing video games. The American Association of Pediatrics (AAP) found that the average 8-year-old spends eight hours engaged with some type of media and teenagers frequently exceed 11 hours of media consumption daily. The AAP recommends that parents watch programs with their children so they know what they are viewing and also advises against children having televisions and Internet access in their bedrooms.
Too much screen time can: make falling asleep at night difficult, increase risk of attention problems, anxiety and depression and increase risk of gaining too much weight. When we are consumed with the screen it decreases our time for personal interactions, creativity and spontaneous thought and limits time for calming overactive minds. A study out of Oxford University found that children who play video or computer games for an hour or less per day tend to be more social and satisfied with life than kids who don’t play any video games at all. However, the study’s author, Andrew

Przybylski, found that after a child plays three hours the benefit diminishes. This is where screen time cuts into time spent engaging in other necessary activities. When the bulk of our kid’s interactions are through text messages, it limits their ability to see the effect they have on others through their words. They need to develop skills to transmit and decode nonverbal information. This contributes to difficulty learning the pragmatics of communication. It is possible that screen time can overstimulate the brain, as evidenced by Dr. Gary Small’s research out of University of California, Los Angeles. Our brains are equipped with the default mode network. This system functions when daydreaming, when one’s mind is wandering and during other non-task-oriented behaviors. Neuroscientists have found that this default mode network actually keeps your mind focused and plays a major role in experiencing “ah ha” moments. Activities that enable the default mode network include: looking at art, listening to or playing music, practicing a foreign language, exercising, meditating, taking a warm bath or shower, having a pleasant conversation with a friend face-to-face or on the phone. These activities have been found to calm the brain. Just like everything else in life, moderation is key and we need to strive for balance. Most experts agree that children under age 2 should have no screen time at all. Children over this age are recommended to be in front of a screen two hours per day. This may be near impossible to fathom as a parent. The bottom line is parents need to develop structure and rules about limiting screen time in their homes so that there is ample time to be creative, be active, engage in face to face social interactions and develop hobbies. Sit as a family and discuss the limits for screen time. Suggest limiting screen time by location, such as not at the table. This may be easier than keeping an eye on the clock to determine how many minutes. Parents need to model this behavior too. Research shows children will follow the actions of their parents and benefit from understanding the basis for limiting screen time. Children sleep better, achieve in school, behave better and see other health benefits when parents limit content and the amount of time their children spend on the computer or other electronic devices and watching TV, according to a study by Iowa State University published in JAMA Pediatrics. his is my favorite time of the year because we all get to start off fresh. A new year means a new beginning. We have our goals, our reasons why we want those goals, and we have our action plan. Everyone has resolutions and they have great intentions. They want to be healthier, have more energy, save more money, and a host of other very good goals. So why do most people start to fall off track by about the end of January? The main reason is they have not committed to being consistent with their plans. They get distracted, fall off track, don’t plan out their days and weeks out as well as they should. And once you miss one workout or make a few bad food choices it’s easy to do it again. The old saying holds true, “Discipline weighs ounces, and regret weighs tons.” So this year I am challenging everyone to commit to being consistent. This is not always the most exciting, but it always gets results. I heard a good friend of mine, Paul Garcia, say that successful people are great at the mundane. They are great at doing the same ordinary things day in and day out and they don’t get distracted by what other people are doing

When you identify what went wrong, you can self-correct and make better decisions for the new year. You know the definition of insanity, “Doing the same thing over and over again, expecting a different result.” I don’t think you would describe yourself as insane, would you? So challenge yourself to be more consistent than ever. Be more consistent with your workouts, nutrition habits, study habits, bedtime, wake up time, etc. Believe that you are destined for greatness. Believe in yourself and your potential. When you talk to yourself (and we all do), say… • I am lean and fit! • I am focused and disciplined. • I am destined for greatness and nothing is impossible! When you remind yourself of your potential, and you are committed to taking consistent action, you become the person that attracts success and great results. Good luck. A Durable Power of Attorney BY MARTIN ZEVIN, AT TORNEY
IF YOUR POWER OF ATTORNEY IS OVER FIVE YEARS OLD, CONSIDER A NEW ONE
A
durable power of attorney is an extremely important document that every adult in Florida should have. You appoint one or more agents to act on your behalf for virtually all legal and financial matters. The durable power of attorney is most often utilized if you become incapacitated; however, I have many clients who choose to allow someone trustworthy to act on their behalf just to make life less complicated. The durable power of attorney can be used for such diverse jobs as paying bills, signing contracts, buying and selling real estate, making investments, collecting monies owed and most other matters of a legal or financial nature. It does not cover any medical decisions, for which Florida law requires a designation of health care surrogate. It also does not cover “pulling the plug,” for which a written declaration, otherwise known as a living will, is required. If you have never done a durable power of attorney, it is extremely important to contact a lawyer to prepare the document as soon as possible. However, if you have a durable power of attorney and it is over five years old, it is strongly advisable to prepare a new one. A comprehensive law regarding the durable power of attorney became effective on October 1, 2011. The law does provide that any durable power of attorney executed under Florida law before October 1, 2011 will remain valid. However, in the last year, many financial institutions are refusing to honor old durable power of attorneys, particularly more than five years old. There can also be substantial delays involved if your agent attempts to use an old durable power of attorney, since they are being reviewed by the legal departments of the institutions prior to being allowed. The older your durable power of attorney is, the more likely it will undergo scrutiny and may be rejected. The new law requires that you specifically initial many different types of powers in order for your agent to be able to perform that duty. The banks, brokers, life insurance companies and other institutions are much more comfortable with this detailed durable power of attorney, since it is clear what you want your agent to do.

Under the new law, you can choose to name two people to act as co-agents. You then designate whether you allow them to act independently (only one signature necessary) or require that they act together (two signatures necessary). Your designated agents will also need to sign an acceptance agreeing to act. The new format of the durable power of attorney is much more extensive and complicated (ours is 26 pages); therefore, if you did a power of attorney years ago, expect to pay more for the new one. This article summarizes a few of the basic aspects of the durable power of attorney. It is recommended that you contact an attorney for review of any documents that you currently have. THE NEW ARC FAULT RECEPTACLE HELPS REDUCE THE NUMBER OF HOUSE FIRES IN THE UNITED STATES
T
he conventional circuit breaker became popular in the early fifties when they began to replace the fuse box. The advantage of a circuit breaker is that they are resettable when an overload or short circuit occurs. I believe the ground fault circuit interrupter (GFCI) circuit breaker and receptacle were developed in the seventies to protect us from ground faults that usually occur around water. They are now required in kitchens, bathrooms, laundry rooms, garages and outside of homes. The arc-fault circuit interrupter (AFCI) circuit breakers were first required in the bedrooms on new homes about 15 years ago. The reason is there were incidents of arching occurring between the bed and the outlet behind the bed which was setting beds on fire. In 2014 these devices were then required for outlets in most of the house not protected by a GFCI. An arc-fault device will detect an arc in the circuit that is in excess of normal arcs

that occur in switches, receptacles, and motors. These arc fault devices will detect a loose connection. It could be a broken conductor in a cord, a defective lamp, a bad switch, a receptacle or a bad splice in a junction box. Today these devices are basically required everywhere unless it is GFCI protected because each year in the United States, there are 40,000 house fires attributed to faulty wiring which have caused over 350 deaths and over 1,400 injuries. The new arc-fault receptacles are now in production and are required as replacements for most outlets. Florida vs. Jersey H
aving lived permanently in Florida for 11 years, I now feel qualified to compare it to my former home state—Jersey. For the edification of non-Jerseyans, residents of the “Garden State” don’t use “New.” It’s just Jersey.
Here’s how the two states stack up
CLOUDS An old friend, Tony Amabile (he paid handsomely for the mention) once remarked that Florida has the best clouds. I concur, having viewed clouds in every state except Idaho, which doesn’t exist. When you get to where it shows Idaho on the map, there is nothing there. It is a fraud perpetrated by Rand McNally. Think about it. Have you ever met someone from Idaho or seen an Idaho license plate? I rest my case. But, I digress. Florida’s clouds are billowy and wispy, tinged with orange, pink and gray near sunset. Jersey’s clouds are battleship gray, except at sunset, when they are battleship gray. Advantage: Florida. INSECTS Jersey is infamous for its mosquitoes and biting green-head flies, but it boasts magnificent dragonflies, which come in metallic colors of orange, blue, green, purple, etc. Beautiful. Radioactive, but beautiful. Florida’s dragonflies are drab, but the rest of the insect population puts Jersey to shame. West of I-95, the flying bugs are so big that the FAA requires them to be equipped with transponders. Jersey has the German cockroach. Florida has the politely-named Palmetto bug, a giant, armor-plated, flying cockroach, which can only be killed by a rocket-propelled grenade. Advantage: Florida. OCEANS It’s the same Atlantic Ocean, but in Florida it is a pretty blue or green. The ocean in Jersey is casket gray. The surf in Jersey is rougher and more fun, but this is tempered by having to avoid dead

bodies popping up as you swim. Advantage: Florida. FLOWERS/PLANTS The Florida climate is favorable to all types of flora. Stick it in the ground and it will grow. The Jersey climate is favorable to dandelions and poison ivy. Advantage: Florida. BREAD Finding good Italian bread in Florida is like searching for the Holy Grail. Floridians think crunchy Italian bread is stale. Jerseyans regard eating soft Italian bread as a mortal sin, or, at least, heresy. Advantage: Jersey. STREETS/ROADS I am convinced that the Marquis De Sade named the roadways in Florida. How else to explain that Lighthouse Point, for example, has a 27th Street, 27th Avenue, 27th Terrace and 27th Way? Or why some roadways each have three or four different names/numbers combination? Doesn’t the post office have enough trouble delivering snail mail? The good news is that Florida roads have u-turn lanes at regular intervals. If you’re driving south on the NJ Turnpike, you can’t make a u-turn until you reach Philadelphia. If traveling north, you must circumnavigate the world to get back home. In Jersey they put salt on the roads. In Florida they put salt on Margaritas. Big Advantage: Florida. QUALITY OF LIFE In Florida, you can sit on the banks of the Intracoastal Waterway and watch the boats go by. In Jersey, you can sit on the banks of the Hudson and watch the elected officials go up the river. Advantage: If you like boats—Florida. If you like to see politicians go to jail—Jersey. I prefer living in Florida rather than Jersey, but I think I will move to Idaho. Since there is no one there, I will elect myself governor, thus qualifying as a presidential candidate. My campaign slogan will be: “Crunchy Italian bread for all!"

In addition, Andy takes special pride in his beef Wellington. Why is it so special? “Because I make it,” he says with a grin. He keeps it simple with only three ingredients—filet mignon, mushrooms and pastry. The success, Andy says, is in the timing. “It’s a timing thing.” The restaurant is small, homey, comfortable and intimate, with fresh flowers and candles on the tables. A glance at the menu shows $12 appetizers including the bee pollen crusted cheese and escargot. entrees include veal scalloppini Diane, $25, and the grass fed rack of lamb, $36. Since the restaurant is open six nights a week, Andy’s in the kitchen 42 hours a week. Then, there are the countless management responsibilities: planning, shopping locally for fresh fish and produce, controlling costs, maintaining the property, managing other people. “You’ve gotta be clean, organized, professional and able to manage people around you,” Andy says. This business is not for the faint of heart or anyone unwilling to dedicate such time to details. But it takes such dedication to keep a small restaurant going like this for 15 years, since Andy and Elin bought Le Bistro and kept the name. [CONTINUED ON PAGE 64]

Their path to running a restaurant together is an interesting one. Andy’s heart was in the kitchen back in high school in Chester, England, where he attended a culinary arts school. He then went on to become a chef in high-end restaurants in Germany, France, Holland, Brazil and the Virgin Islands, among other locations, as well as on mega-million dollar yachts. Andy first saw Fort Lauderdale from the galley of a yacht and ended up staying to work as a chef and later to teach culinary arts at the Art Institute. Along the way he met Elin while they worked together at a restaurant in St. Thomas, a meeting that led to marriage and a dedicated partnership in the restaurant business. Her education in hotel and restaurant management compliments Andy’s skills and experience. You’ll usually meet her when you enter Le Bistro. She’s “at the front of the house,” is how she puts it. Asked if Andy will share any cooking tips for folks who cook at home, he advises you to go online to do some research about what you’re cooking, buy locally and keep it simple. “The simplest you can do it, the better off you’ll be.” If you’re cooking steak in a pan, make sure the pan is hot, he says. If you’re in Le Bistro for an evening out, Andy and Elin are clear about their goal. “Our goal is to make you feel comfortable, present well-balanced, tasteful, colorful food, and an enjoyable dining experience.” They know that word of mouth is good advertising. “So we want people to be happy and say good things about us,” Andy says. Enough people say good things about Le Bistro that TripAdvisor awarded the Certificate of Excellence and the restaurant was named an Open Table Diners’ Choice Winner in the last three years.

You’re Messing up My Hair! AND OTHER AMUSING PRIORITIES BY WENDELL ABERN
Dear Readers, If I’ve learned nothing else over the past 82 years, it’s that everyone has his or her own idea of what matters, what really matters, what is critical, and what is a genuine, Number One priority. I often find the latter quite humorous.
1 – Hair This incident actually happened to the mother of one of my bridge opponents. “My dad took my mom to Las Vegas for their 25th Anniversary,” she told my partner and me before we started playing. “They weren’t big gamblers, but they loved to play the slot machines. “My mom was at one machine, my dad at one right next to her when my mom hit a jackpot. A really big jackpot ... $650,000! They were whooping and hollering and others were joining in and bells were ringing and sirens were howling when my dad reached over to give my mom a big hug and she said, ‘Stop! You’re messing up my hair!’” If it had been my wife, she would have let me dye her hair green.
2 – Bagels When I lived in Chicago, I played tennis every Sunday morning with a bunch of old friends. We played at a big indoor tennis club about 20 minutes from home. One of my pals, Jerry, had just bought a new Cadillac. (Jerry lived in the northern suburbs of Chicago and his combination wholesale-retail operation in the southern suburbs represented a 120-mile round trip drive ... which he made every day, six days a week, for more than 50 years. “When you spend two to three hours a day in your car,” he used to say, “you don’t drive a pick-up truck.”) Anyway, we all spent about five minutes admiring Jerry’s

new Caddy before going in to play tennis. When we came out an hour later, his car was gone. The empty space next to my car stunned us. “Jer,” I said, “it’s gone! Someone stole your new car!” “Damn!” he said. “And I had just bought two dozen fresh bagels at Max and Bennie’s!” A new Coupe de Ville, and yet he worries about the bagels. The happy ending: the police found his car about ten miles away. Some kids had stolen it, apparently just for the joyriding kicks of it. And as for the bagels, they had been devoured.
3 – Bedrooms, living rooms and lawn mowers My brother and I spent the entire summer of 1948 with our grandmother in Los Angeles. A great treat for us. We’d never been to California. While there, we went to meet our Aunt Bertha (our father’s sister) for the first time. A widow, Aunt [CONTINUED ON PAGE 68]

Bertha’s sons, our cousins Larry and Norman, were about our age, juniors and seniors in high school. “C’mon,” Norman said, “we’ll show you our bedroom.” They took us to the garage. “Your bedroom’s in the garage?” my brother asked, staring at the two cots spread where a car should be. “Yeah,” Larry said, “ma thinks we’re too messy. She was always yelling at us. So we suggested moving out here. Now everyone’s happy.” Then they took us to see the rest of the house. When we came to the entrance to the living room, Larry and Norman stopped. I peered in: immaculate; pristine carpeting; furniture covered in plastic. I started to walk in when Larry grabbed my arm. “We don’t go in the living room,” he said. “I’ve only been in there twice,” Norman said. “Ma likes to keep it really clean in case somebody drops by.” A few weeks later, my brother had one of his migraines, so I went to visit Larry and Norman. They were out running errands, but Aunt Bertha assured me they’d be back shortly. I spied the lawn mower in the middle of the front yard. She said they’d been in the middle of cutting her lawn when she sent them out to the store. I volunteered to take over until they came back. Aunt Bertha thought that was just the most beautiful, Midwesternish gesture she’d ever heard and rewarded me with a very wet kiss. I was dutifully mowing when, ten minutes later, Aunt Bertha came running out of the house yelling, “Help! Help, quick! There’s a fire in the kitchen!” I dropped the lawn mower and tore up the front stairs when Aunt Bertha yelled, “No, not through the living room!” I braked and raced around to the back of the house. One of the window curtains had caught fire, and I beat it out with a dish towel. Since then, I have often wondered what would have happened if I had trampled through that living room. One never knows. Everyone has priorities. I wonder if Aunt Bertha would have called the police.

I have had to clean up this anecdote, and I’m sorry to say it loses some of its punch without foul words. However, this really happened to a young friend of mine, and I have decided the sanitized version will still garner some chuckles. I worked in advertising agencies for more than 50 years; many years ago, Michael, one of my best writers, walked into work looking like his young kids had kept him up all night. He said he’d been up for hours; he’d gotten an obscene phone call at four in the morning and hadn’t gone back to sleep. I said, “You mean your wife got an obscene phone call.” “No, I did! I pick up the phone and hear this heavy breathing. Then I hear this deep voice saying, ‘Uh-h, uh-h, can I come and up and see you?’ And I said, ‘No, it’s may I? May I come up and see you. Looking Back on Love For years Lighthouse Point magazine has honored children and pets in our community by publishing their photographs on their birthdays. This tradition has proved to be one of the most popular sections of the magazine—we continue to receive photos month after month, year after year. So that got us thinking... Why not celebrate couples on their anniversaries? So we are adding a new section to the magazine entitled “Looking Back on Love.” And what better time to do that than in February for Valentine’s Day? We loved the idea so much, we made it our cover story. Governments have controlled it, populations have been taxed over it, Roman soldiers were paid in quantities of it, and, to denote status, the social elite, in the 18th century, were seated ahead of it at the table. And thankfully, because of its widespread use and distribution today, we no longer need to boil dirt in areas where meats previously had been cured to get to it, as they did in the salt-deprived Civil War era. One company in Pompano Beach has made it a mission to not only provide us with a wide selection of gourmet sea salts, but accomplish the task with the knowledge, acumen and finesse that comes in taking command of a very simple premise: Anything worth its salt is, indeed, an exemplary pursuit. That company, The Spice Lab, a woman-owned and family run business, offers the widest selection of sea salts from a single source, in addition to an expanding line of products that include peppers, spices, seasonings, rubs, teas, gourmet gift collections, Himalayan salt shot glasses and salt plates, regional brands, private labeling, and a wide array of corporate gifts. This milestone would have come sooner, except that the demand for their products by big retailers such as Costco, TJ Maxx and Home Goods, in addition to others in the wings, has spurred growth to such an extent that the Cramers and their 40 employees, have had to meet a high number of orders that is far from diminishing. Such demand for salt was evident from the outset, starting with a simple desire to provide Christmas gifts to friends a little more than six years ago. “I like cooking and to me it’s all about flavors,” said Brett, who recalled he had run out of a particular salt from Australia and couldn’t find it online. What he did find were 12 unique, gourmet salts. He purchased 12, 10-pound bags of the product, and remembered the UPS person, upon delivery, looking at him in disbelief and saying something like, “You paid for all this salt?” “I started giving out pinches of the salt to my staff,” said Brett, who at the time was planning to retire from the dot-com business he ran. “They went nuts—they said it was really good.” But still, there were 12, 10-pound, bags of salt. “I said what are you going to do with the extra salt?” Jennifer recalled, to which Brett replied that he would give it away as Christmas gifts. And that little bit of holiday spirit launched the Cramers on a hunting and gathering mission. For one, pouring the salt into plastic baggies didn’t offer an aesthetically pleasing presentation. Which made Brett think of test tubes with corks. That solved, they next addressed what to put the test tubes in. How about wooden block trays? That would not be too hard for Brett, a woodworking enthusiast. Finding the right wood, however, took the

family on a dumpster-diving foray, with their two-year-old in tow, and Jennifer pregnant, to areas people often ignore, but at which the Cramers became experts—at last, securing the perfect pile of distressed pallets. “I only intended to make 40 kits to give to friends,” Brett recalled. He also set up a page on Amazon over the Thanksgiving weekend, so friends could log on and purchase the newly made kits as gifts. He checked his email inbox the following Monday and found 30 emails from Amazon. Two weeks before Christmas the family had sold 120 test tube kits on Amazon. Now, at last, the Cramers were out of salt. The resulting fluidity at which they filled the ever-increasing demand for orders is a testament to how a business flourishes— sometimes by accident, and never by saying no. The Spice Lab’s business grew quickly in the last six- and a-half years, with the Cramers becoming experts on the history, culture and science of salt, and its products are now sold in 600 retail stores across the country; in addition to 60 Costco’s, Home Goods and TJ Maxx, these outlets also include Fresh Market, Ross, and a growing number of Midwest grocery stores. The Spice Lab also privatelabels some of its products. Throughout 2010, the company’s online business increased as it added an array of smoked sea salts and salt collections and became a direct importer. What gives The Spice Lab’s products staying power in the marketplace, and sets these apart from the blur on supermarket shelves, is the quality and the aesthetics of packaging, with higher standards employed on graphics and design than on similar products sold by competitors. This is owed to Jennifer’s design background, which helped the products and packaging garner early market acceptance and ignited sales.

“If it doesn’t look good on the shelf, people keep walking,” Brett said. From gold logos to the use of metal tops as opposed to plastic, and grinders made of ceramic, the Cramers make sure that not only is taste a high standard, but the look of the product as well. The company also stands out online, with a website that is all about quality, appeal and easy navigation. “Once they buy on Amazon and come to our website they see the quality and choices,” Brett said. “We spend a lot of time on product development. We do our homework.” With specialty offerings such as chili lime margarita salt and mango chipotle seasoning—the company was also ahead of the pack in offering sriracha seasoning—the Cramers, in an increasingly diversified culture, are finding that people want flavors from their homeland, a need that also trickles into the mainstream population. So today, the business that started on the act of giving, now receives, purchasing millions of pounds of salt a year, selling on the average 30,000 salt test tube kits annually. Additionally, it sells 500, 2-pound bags of Himalayan sea salt per day, plus more than 200 different salts, and exports products to the United Kingdom, Poland and Canada. Now in a 15,000-square-foot manufacturing facility, The Spice Lab will soon move into a 60,000-square-foot plant in addition to opening its gourmet shop in 2016 that will

The Cramers also maintain a showroom in Fort Lauderdale lined with its products for prospective vendors/buyers. Even though the business is fairly new, awards have flooded in, including a Silver sofi Award from the Specialty Food Association, The Gourmet Retailer’s Editors’ Choice Award, numerous Scovie and Hot Pepper Awards, Best New Product finalist at the NY Now gift show and a Promotional Products Association International (PPAI) Suppliers Achievement Silver Award for Most Creative New Entry Designed for Business Gift Use. It seems like a breathless few years for the family and Jennifer agreed. “We were hugely surprised at how quickly the business took off—Brett is so good at learning and trying to make things better. New England has the Pilgrims and Lighthouse Point has The Balistreris, the Spiekers and the Wordens. These three families have been in town since practically the beginning—each contributing to the City’s unique appeal in a sprawling South Florida landscape. To celebrate their contributions, the City of Lighthouse Point will honor these three founding families as part of the annual Keeper Days weekend. The festivities kick-off with a celebratory dinner on Friday, February 5 at The Lighthouse Point Yacht & Racquet Club. You hear a lot of talk today about a lack of role models for kids. Celebrities behaving outrageously, politicians involved in scandals—the list goes on and on. I was lucky enough to have great role model and mentor in Tom Greene. Anybody who has ever cast a rod and reel in this town, knows who Tommy is. He is a living fishing legend and innovator and I was lucky enough to cross his path.

om Greene’s Custom Rod and Reel in Lighthouse Point has nurtured some of the best fisherman in this area and I would go as far as to say in the world. Young men enter Tommy’s shop as young punks just shopping around for a few hooks and sinkers to later become professional fishermen. Tommy just doesn’t sell tackle—he has created an atmosphere to learn the profession and foster a love of the craft—and in doing so, usher young men into adulthood. Both of my brothers and myself found ourselves under Tommy’s tutelage and it’s difficult to imagine where we would be without him. There were many before us, and will surely be many more in the future. I am thankful for Tommy and what he has taught me and helped me to accomplish.

GIVING BACK Through Tom Greene and Doc Mckay, I met Greg Edwards and now Greg and I are great friends and he is on the board of directors for Freedom Fighter Outdoors (FFO). When we started FFO Greg held a cocktail party with his client base from his firm Lawless, Edwards and Warren to raise money for FFO, Greg’s firm raised over $20k that night, it was the shot in the arm that got us going. FFO’s mission is to raise awareness and seek public aid for needs, services and activities for injured veterans. Their events facilitate injured veterans in assisting each other through teamwork based outdoor recreational activities by providing unique, once in a lifetime outdoor activities. FFO honors and empowers our nations injured service veterans.

If you have ever walked into Custom Rod and Reel, you have most likely witnessed Tom or his staff educating novice anglers. And on most days you are among some of the greatest fisherman and captains on this coast sharing stories or picking up repaired or new fishing tackle. One of the most remarkable things about Tom Greene’s tackle shop is how Tommy has the uncanny ability to take youth under his wing, youth within whom he sees the right amount of ambition and passion for fishing and mold them into great mates first, then captains of their own boats. When he was 14, my brother Rocky LaSorsa started working at Tom Greene’s Custom Rod and Reel. Every single day after school and on Saturdays, you could find my brother Rocky on a stool in the back fixing reels. And you could find him there until he was 22 years old. I am three years older than Rocky and Tommy

trained me to be the in-house mate for hire. Tommy would sell tackle to both new and experienced fisherman—and everything in between. Tommy would suggest to clients that they take me out with them so I could teach them how to properly rig and use their new tackle—or sometimes they just need a mate for hire. I met so many fantastic people during those years. I am still friends with most of those clients today. One of those people who Tom Greene introduced to me was Dr. William McKay. Tom Greene’s close friend Scott Hitch was the captain of Doc McKays boat. During a three-month trip to the Bahamas, I was a mate on the boat. Scott taught me more than I could have imagined. Naturally, I learned more about boats and and of course more about fishing. I

thought I was a good fisherman until I fished as Scott’s mate. But I learned a lot more from Scott. I saw what it took first hand to be a successful captain. He had the major requirements—a great leadership style, initiative, management skills and of course all the social graces required to be the captain of a significant boat. I’ll always be thankful to Tommy for introducing me to Scott. He practically runs a fishing staffing agency out of his shop—many professional fisherman are indebted to Tommy for introductions he made early in their professional fishing careers. While on a Bahamas trip to Rum Cay with Doc Mckay and his family, Jimmy Buffett came into Rum Cay on his boat. I was able to meet Jimmy Buffett’s fleet Captain, Spider Andresen. Spider knew Tom Greene and that got us talking. A month later, Jimmy Buffett and Spider Andresen hired me as one of Jimmy’s Captains and I have been there for ten years. While working for Jimmy Buffett, I have taken dozens of celebrities fishing, like Billy Joel and Roger Waters, just to name a couple, and I have fished the entire east coast up and down numerous times. Even when “Tommy’s Boys” decided to leave the fishing profession and pursue a different career, they seem to find success. His protege Jim Leto is a fire fighter and paramedic for Pompano Beach, my youngest brother Joe serves in United States Marine Corps and Ariel Berman works for the FAA. Tommy helped all these guys with referral letters or putting a good word in for them. It seems Tommy knows someone in every industry. Some of the greatest fisherman I know started out as Tom Greene’s in-house mate for hire: Doug Apfelburg, Ariel Burman, my brother Rocky LaSorsa (now works on the yacht owned by Hendricks MotorSports). And some of the best Captains I know frequent Tommy’s shop: Mark Ransford, Karl Anderson, Scott Hitch, Obie O’Brien, Dave Audet, Roy Merritt, Drew Tommers and Mike Moe. I have a lot of great stories and a lot to say about how I would not be where I am today without the learning experiences I was granted by just knowing Tommy. And there are so many men who can say the exact same thing. Most people know Tom Greene is a fishing legend—I’m not sure if people know what a truly generous spirit he is. For him to play a role in the success of so many men is a true testament to the the kind of man he is. I will always be grateful for being one of “Tommy’s Boys.”
