Navigating the Sensitivities of our Modern World BY SUSAN ROSSER These days, more often than not, things aren't black or white but somewhat murky and nuanced. But our sensitivity to insults seems quite solid. In August, I read a column in the Washington Post by Padma Lakshmi, a cookbook author and the host of Bravo's "Top Chef." Lakshmi criticizes a column that ran a few days earlier in the Post entitled "You Can't Make Me Eat These Foods" by humorist Gene Weingarten. His list includes all Indian food. He writes: Indian food. The Indian subcontinent has vastly enriched the world, giving us chess, buttons, the mathematical concept of zero, shampoo, modern-day nonviolent political resistance, Chutes and Ladders, the Fibonacci sequence, rock candy, cataract surgery, cashmere, USB ports ... and curry. If you like Indian curries, yay, you like one of India's most popular class of dishes! If you think Indian curries taste like something that could knock a vulture off a meat wagon, you do not like a lot of Indian food. I don't get it, as a culinary principle. It is as though the French passed a law requiring a wide swath of their dishes to be slathered in smashed, pureed snails. (I'd personally have no problem with that, but you might, and I would sympathize.) Actually, this isn't the original text. In the first iteration, Weingarten wrote that all Indian food is based on one spice — curry. However, curry is a combination of many spices. Lakshmi points out that with a simple Google search, he could have learned about curry. As I read Lakshmi's article, I thought, "yup, she makes some excellent points." But then, the other side of my brain thought that Weingarten including Indian cuisine in a list of foods he doesn't like is possibly not a colossal crime. And while he at first defended his opinion, he later apologized for the column via Twitter and said he should have just picked one Indian dish he doesn't like, rather than using such a "broad brush" to paint an entire cuisine. I have to admit, when I first read Weingarten's column, I didn't find it offensive. It was only after I read Lakshmi's rebuttal that I realized how it could be offensive.

For me, this entire kerfuffle highlighted a critical problem in today's world — the feeling that we must always pick a side. But, all of us need to be able to hold two competing thoughts in our heads. It's okay to be confused, and it's important to ask questions. I re-read the both columns, and I understood why he didn't believe his writing was insulting. He thought he was portraying himself as the butt of the joke — depicting himself as a sort of man-child who discounts large food groups and stubbornly sticks by his opinion. On the other side, my mother always said, "humor at the expense of others is never funny." It doesn't take much smarts to make fun of something. So yeah, disparaging the food of an entire nation was bound to piss off someone. And yes, it was cheap and easy and neither clever nor funny. But isn't it also possible that he simply made a misjudgment, and he isn't the worst person on the planet? Have we devolved into a people where we can't find some modicum of merit in competing sides of a disagreement? I'm not saying there are never times when right and wrong aren't clear. But a good person can do a bad thing. An intelligent person can write a bad column. At the end of her column Lakshmi suggests that young comedians of color should apply to be humorists at the Post. I haven't read all of Weingarten's columns, but should he lose his post at the Post over one piece that was a miss? As someone who writes a column, I would hate to think that people would write me off if I "missed" one month. She was wise to point out his mistakes, but man, she really stuck it to him. Perhaps a lighter tone might have been equally effective. In the end, after considering all the angles, I do lean more towards Lakshmi's point of view. Making the cuisine of an entire nation of about a billion people the butt of a joke is never a good look, and honestly, not even funny. My mother, who had a fantastic sense of humor, would not have found Weingarten's column witty — and believe me — she was no fan of curry. Y

Lighthouse Point to Get Over $5 Million in Federal Funds for COVID-19 Recovery The City of Lighthouse Point will be receiving approximately $5.6 million in federal funds through the American Rescue Plan Act (ARPA), an economic stimulus bill enacted in March 2021 to help local governments in their ongoing recovery from the COVID-19 pandemic. At its Sept. 23 meeting, the City Commission approved an ARPA Coronavirus Local Fiscal Recovery Fund Agreement with the Florida Division of Emergency Management, the state entity responsible for disbursing the funds. Lighthouse Point and other cities with populations under 50,000 will receive payments through the state of Florida instead of directly from the U.S. Department of Treasury. The City will receive the funding in two portions, half of it this year and half of it next year. The ARPA funds may be used to replace revenue needed for the provision of government services when, due to the COVID-19 emergency, there has been a reduction in revenue collected compared to the most recent fiscal year of the City prior to the emergency; COVID-19 expenditures or negative economic impacts of COVID-19, including assistance to small businesses, households

and hard-hit industries; premium pay for essential workers; and investments in water, sewer and broadband infrastructure. ARPA requires local governments to spend the funding by the end of the calendar year 2024 and provide periodic reports to the U.S. Department of Treasury with a detailed accounting of the use of funds. If the City doesn’t use the funds by Dec. 31, 2024, the funds must be returned to the U.S. Department of the Treasury. The City Commission, at its Sept. 13 meeting, approved a contract with the firm Government Services Group (GSG) for consulting services related to the ARPA funding. In order to use the ARPA funds to the greatest extent possible, GSG will work with City Administration

to analyze projects, conduct risk assessments and ensure the projects will be eligible. GSG would also help with reporting compliance and audit assistance. Mayor Glenn Troast said guidance from the U.S. Department of Treasury was “less than

clear.” For example, there are infrastructure projects that are allowed to be funded under ARPA, but they are narrowly defined. GSG will help the City identify what projects the money can be spent on, said Troast. Y

J.R. Dunn Jewelers Will Be Getting a Major Makeover

J.R. Dunn Jewelers, located at 4210 N. Federal Highway in Lighthouse Point, has plans to completely remodel its existing store and construct a 5,799-square-foot showroom addition. The store, which sells high-end jewelry and watches from brands such as Gucci and Rolex, was founded by James “Jim” Dunn and his wife Ann Marie Dunn, residents of Lighthouse Point. Jim Dunn passed away in May 2021. “The plans to remodel and expand the store meant the world to my husband,” said Ann Marie Dunn. “It was his dream to build this beautiful state-of-the-art building.” An approximately 7,335-squarefoot one-story building that currently exists on the property would remain. The new addition would be built on the south side of the one-story building. The number of parking spaces would increase from 35 to 64. Other improvements to the site would include new parking pavers,

new sidewalk pavers and new landscaping. A sheer-wall water fountain would be installed in front of the new addition. J.R. Ann Marie said she and her son, Sean, are passionate about keeping her husband’s dream alive. “We are looking forward to putting a shovel in the ground and getting this going,” she said. Jim Dunn, who was also a local philanthropist, founded the 5K Dunn’s Run in 1996 to benefit the Boys and Girls Clubs of Broward County. Lighthouse Point City Commission Votes to Put Library First-Floor Expansion Project Out to Bid The Lighthouse Point City Commission, at its Oct. 12 meeting, resumed its discussion regarding a new first-floor children's wing proposed for the Lighthouse Point Library, which would be funded with the 2018 voter-approved bond issue. The project would replace the City's plan to build out the library's second-floor using bond proceeds. After considering both options in more detail, the Commission voted unanimously in favor of putting the proposed children’s wing project out to bid to see what pricing comes in. The children’s wing would extend into a portion of the parking lot to the north of the library. It would be an approximately 1,600-squarefoot, one-story stand-alone building that connects to the existing library building with a glass-enclosed corridor. The space between the two buildings could be used as a reading garden or programming area. The children’s wing would also have an outside entrance and its own bathroom, so it could be used at night completely independent of City Hall. The alternate first-floor project was developed after it was determined that converting the second-floor into a community room (roughly 1,200 square feet) would not be cost-effective due to unanticipated challenges. In the revised plan, the library’s current children’s room would become the community room. Kaufman Lynn Construction, the firm the City hired to serve as the construction manager for the city’s bond projects, was asked to price the second-floor buildout of the library. Pricing came in at $997,632 for construction costs, compared to the

original budgeted amount of $471,270 for construction. Kaufman Lynn provided a rough estimate of $675,000 for the children’s wing construction costs. William Gallo, of Gallo Herbert Architects, who was hired as the City’s representative to oversee the bond projects, was authorized by the City Commission to refine the firstfloor expansion concept and get firmer pricing, which yielded a construction cost proposal of $1.2 million from Kaufman Lynn. Gallo told the Commission on Oct. 12 that the cost of the children’s wing was driven up “dramatically” because it was determined that, in light of FEMA flood elevations, the building would have to be constructed two feet higher. Gallo explained that if the grade of the building is raised two feet, there wouldn’t be ADA accessibility. As a result, a large portion of the parking lot would have to be raised, the drainage would have to be redone, and ramps into the building would have to be built. Gallo said there was some merit for the cost being higher as a result of having to raise the building, but he wasn’t comfortable with the cost per square foot, which is about $850. He said it should be about $500 per

square foot, given the building is “just a box with a carpeted floor.” Kaufman Lynn was asked to do a proposal because their current contract with the City has a miscellaneous contract provision, but the City is not obligated to accept the proposal. The Commission discussed putting both the first-floor and second-floor projects out to bid to see what prices come in from other contractors, but Gallo advised against it because the marketplace might not take it seriously, knowing the City is only going to do one or the other. Mayor Glenn Troast said the first-floor expansion "is a much more desirable option, and I think it gives the library a lot more flexibility." Y

AS I MENTIONED LAST MONTH, MY definition of success is waking up every day and liking what I must do that day. I never want to wake up and dread what I need to do. So, everyone's definition of success is different. What is yours? What do you consider true success?

Success Trait #6: They have an obsessive and constant pursuit of better There is an Japanese term, Kaizen, that stands for Constant and Never-ending Improvement. Adherers to Kaizen are constantly looking for better ways to achieve their goals, and make an impact. Author Darren Hardy teaches business owners to ask the bigger/easier question. How can we get bigger and do it easier? That thought process will get you to think, grow, and improve what you are doing to achieve better results, make more impact and do it with less effort. Success Trait #7: Steadfast consistency Successful people are incredibly consistent with their schedules, habits, and routines. Good habits are hard to develop and easy to live with, while bad habits are easy to create but hard to live with. Successful people are consistent with their work, study and exercise schedules. Their daily routines are set in stone because they work and generate excellent results. Success Trait #8: Power tribe Successful people are diligent about the company they keep. They make sure they surround themselves with people who are positive and supportive. If you hang around with successful people, you will become more successful. If you hang around with people who complain, you will become that too. Napoleon Hill introduced the concept of Mastermind groups in his book "Think and Grow Rich." What’s Better: Life Estate Deed or Revocable Trust BY MARTIN ZEVIN, ATTORNEY

THERE ARE SEVERAL WAYS TO AVOID PROBATE ON YOUR HOME WHEN YOU DIE. IF YOU ARE SINGLE, THERE WILL BE PROBATE WHEN YOU DIE UNLESS YOU CHOOSE ONE OF THE following options. If you are married and own your home together, your surviving spouse will not have probate; however, there will be probate when the second of you passes away, unless one of these options is done. Let us assume that you own your home jointly with your spouse and that you have two children. Both of you desire to have your two children inherit your home equally when you both pass away. The first option would be to add the names of your two children to the deed as joint tenants with right of survivorship. This is not a good idea. It would affect your ability to claim your full homestead exemption. In addition, you lose control of your property and can only sell it if your children both agree and sign all closing documents. If you wanted to take one of the children off the deed, you would be unable to do so. If one of your children files for bankruptcy, has an adverse judgment or files for divorce, your property could be subject to liens or other legal action. Therefore, I recommend against a deed with your children as joint tenants with right of survivorship. The second option is a life estate deed. There are two types of life estate deed: regular and enhanced (also referred to as Lady Bird). The regular life estate deed requires that your children join in any sale or other changes on the deed; therefore, you have lost control and cannot take your child's name off the deed if you choose to do so. The enhanced life estate deed gives you the sole right to sell the property during your lifetime or make any other changes to the deed without the permission of your child. The enhanced life estate deed has very specific legal language in order to be effective; therefore, do not attempt to do this on your own. Even with the enhanced life estate deed, there are risks, particularly if your child has a bankruptcy, outstanding judgment or undergoes divorce. However, the worst risk is if, God forbid, your child dies before you or with you in a common accident. Your

child's estate would then become the owner of the property once you died, which would result in probate being required. Thus, the main purpose of the life estate deed is not accomplished. The best way to avoid probate on your home is to do a revocable living trust. When you sign the revocable living trust agreement, you also sign a deed transferring the property to you as trustees of your trust. You are able to keep your homestead exemption, maintain complete control of the property during your lifetime and make amendments to your trust without changing the deed. There are no risks involved, since your children's names do not appear on the deed. The only disadvantage of the revocable living trust is that it will cost more money in attorney's fees. When you discuss the options with your attorney, you should discuss the difference in fees between the revocable living trust and the enhanced life estate deed. You can then determine whether it is worth saving the money and taking the risks involved in the enhanced life estate deed. IT ISN'T A NEW YEAR'S RESOLUTION, IT ISN'T FOR AN UPCOMING VACATION. THE BEST REASON TO TURN YOUR ATTENTION TO YOUR HEALTH IS THE current state of our world. There is no better motivator to get healthy in mind, body and spirit than a pandemic. I don't want to be political, but I have been completely flabbergasted by the blatant omission of discussion about one's health. The focus has been on sickness, who gets sick, fear of getting sick and the need for vaccination. The leaders in health care are conspicuously absent when advising people on how to take control of their health. Now more than ever, with Covid 19 dragging on, we need to focus on decreasing our stress levels, paying attention to our mental, physical and spiritual health.

Nature We live in a beautiful region of the country and getting outside is very easy for us. Enjoying the outdoors is something that has many benefits. Increase your vitamin D, because we know low vitamin D is a risk factor for Covid-19 complications. Nature also has a calming effect on most people. Many research studies have found that specific environments can induce stress responses or decrease stress responses in our bodies. Through our senses, things we are exposed to influence our nervous, endocrine and immune systems, which change our moods. Exercise Exercise relieves stress and will also improve cardiovascular health. Thirty minutes of exercise at least three times per week can significantly impact your physical and mental health. It behooves all of us to drop the extra weight we are carrying around as we know, this too, is a major risk factor for not fairing well with Covid-19. Exercise has short-term and long-term benefits to improving mood. James Blumenthal, a clinical psychologist at Duke University, found through his research that active people have less depression than inactive people. Blumenthal conducted a study that concluded that after four months of treatment, patients in the exercise and antidepressant groups had higher remission rates than the patients on the placebo. He concluded that exercise was generally comparable to antidepressants for patients with major depressive disorder (Psychosomatic Medicine, 2007). 56 pointpubs.com •

A Healthy Diet Our brains are always working and thus, require good fuel. Many of us pay more attention to the type of gas we put in our cars than the quality of the fuel we put in our bodies. The types of fuel we choose can enhance how well our mind and body function. One of the first things I talk about with people who come to me with anxiety is reducing or eradicating caffeine and sugar from their diets, as these substances can cause anxiety to increase. Keeping blood sugar levels from spiking and plummeting is important in controlling mood. Therefore, it is essential to eat a steady supply of good protein. Many people find it beneficial to do an elimination diet and then slowly add foods back in, paying attention to how these foods make them feel. For three weeks, my husband and I removed meat, dairy, grains, sugar, caffeine, and alcohol from our diets. We noticed a remarkable difference in, our sleep, mood, energy level, blood pressure and weight. Eating a well-balanced diet aids in getting the nutrients we need for our bodies to function at optimal levels. Taking the right supplements is also very important. So, my advice is to take control of what you can. Your health is something you do have an influence over and a choice to change. Start making small healthy changes today. The Human Rights Commission and Office of Economic and Workforce Development in San Francisco is redirecting funds for the program through its "Dream Keeper Initiative." In Richmond, the experiment is known as "Advance Peace." The premise is not entirely new. For years the federal government paid farmers not to grow corn. Convicted felons are awarded 18-month fellowships to “court” troubled youth who so far have avoided jail due to lack of evidence. I’m moving to San Francisco. I’ll make a fortune. In my interview, I will tell them that I intend to become a serial killer. However, if they pay me $10,000 per month per head, I will not kill 37 people. (They can deduct 10 percent in February. It's a short month.) If I loot a few stores, I will create another profit center. It seems they are giving out gift cards based on the amount stolen by looters. The higher the total, the bigger the gift card. I may even be able to return my stolen loot for a refund if I promise not to do it again. I also will get paid for not snorting heroin or smoking "crack." Since they will not pay for both, I will choose heroin. It's a classier drug, and it pays better.

The program also offers “fellows” free travel. They are sent on vacations to cities such as Seattle, New York and Washington, D.C. The theory is that they will get crime out of their systems by performing illegal acts in other communities and come back fresh to San Francisco. It is unclear if their pay will be docked for crimes committed elsewhere. This experiment does have some controls. For example, if one of the “fellows” kills somebody there is a three-month waiting period before he can start getting paid again. However, he will be eligible for unemployment benefits during that time. Petty criminals, such as car thieves and burglars, are forming a union to protest the disparity in payments they receive. They maintain that the gift cards they are given are practically worthless since they already can shoplift what they need. Is the program working? According to DeVonne Boggan, Richmond program director, most of the 82 men who have been in the program are still alive. This is hardly a rave, since their average age is 30. This grand experiment may backfire as criminals from all over the country get wind of it and flock to San Francisco to get a piece of the action. Despite that, San Francisco may be on to something. I am thinking of starting a program where we pay politicians not to run for office. If you like this idea, send me your nominations. It would be nice if you also sent an envelope full of cash. I’d rather not move to California. Y

WHEN YOU CAN HAVE A THANKSGIVING APPLE TART

When I was a teenager living in Manhattan, my mother would occasionally buy me a pastry at Bonte’s, a neighborhood French bakery. Bonte only had a handful of offerings — but anything they made was top-notch. They sold an apple tart that was the perfect combination of sweet and tart apples sitting on top of miraculously flaky puff pastry. So when I came across Claire Saffitz’s recipe for an apple tart which is inspired by one she had in Paris — well, I figured this was as close as I would come to Bonte’s. And if I do say so myself, I think this one might have been even better.

Creatively Cooking <<< PREPARATION Peel and core and chop 3 of the apples. In a medium saucepan, add the dark brown sugar, 4 tablespoons of butter and 1 tablespoon of water. Cook the mixture, constantly stirring, over medium-high heat until it is combined and starts to thicken. The mixture will develop thick bubbles. At this point, add the 3 chopped apples and cook until soft and start to caramelize — about 10-15 minutes or even a bit longer. Add the cider and cook for 10 minutes until the cider is reduced by half. Mash the apples with a potato masher. Continue cooking and stirring for 15 minutes until the mixture is very thick, and when you scrape the bottom of the pot, the line doesn't disappear too quickly. Transfer the apple mixture to a bowl and refrigerate it until it is cool. Preheat the oven to 425. You will turn down to 350 once the tart is in the oven. Roll out the pastry to remove any creases. Transfer the pastry to a sheet-pan lined with parchment paper. Brush the egg along the perimeter, creating a 1-inch border. Sprinkle the turbinado sugar on top of the egg wash. Then prick the inside area of the pastry with the tines of a fork. Return to the fridge to keep cool. Stand the remaining apples upright and cut down vertically around the core. You will end up with four lobes. Place the lobes cut-side down on your board and slice as thinly as possible. Slice with a dragging motion to keep the lobes intact. Take the pastry from the fridge and spread the apple mixture in the center of the tart, avoiding the sugared edge. Arrange the apple slices on top of the apple mixture, overlapping them. You might have some leftover apples — a snack for the chef.

Place the tart in the oven and turn down to 350. Bake for 40-55 minutes, until the dough is deep brown and the apples have browned in spots. While the tart makes, make the glaze. Combine the jam and the cider in a small pot and cook over medium heat until jam is liquidy. Strain to remove solids. Using a pastry brush, dab the glaze on top of the tart after you have removed it from the oven and it has cooled a bit. Y Note: I made my own “rough” puff pastry, but store-bought should be fine. Tasting Wine, and Talking About It, Too A BRIEF GUIDE FOR THE PERPLEXED

NOT LONG AGO, A GOOD FRIEND AND I WERE CHATTING ABOUT A RECENT TRIP HE MADE TO THE NEW YORK FINGER LAKES WITH HIS WIFE AND THEIR ADULT SON. IF YOU'RE not familiar, the Finger Lakes is a region in central upstate New York. The area is aptly named for its 11 long, deep, and roughly parallel lakes formed by glaciers over 2 million years ago. The slopes and flatlands surrounding each lake are dotted with vineyards, wineries and historic towns. Riesling wines are the specialty there, and my friend and his family enjoyed sampling some. He confessed, however, that as his wife and son chatted enthusiastically about the qualities of the wines they tried, he felt he couldn’t contribute much. Having had dinner and wine many times with this friend, I know he can very

ably discern quality from mediocre wines, yet like many people, he seldom explains his likes and dislikes. It’s okay to be unsure or reluctant about describing how a wine tastes. We can enjoy wine without having to wax poetic or sound worldly. It’s acceptable simply to acknowledge pleasure or displeasure with a wine without explanation, although heaps of praise may be in order if the wine is a gift or pick of a spouse, friend, boss, coworker, or someone else you care about.

Still, part of the fun and enjoyment of tasting wine, is talking about it. Discussing a wine we’re sharing helps engage us around a common subject and help us learn about wine and appreciate what others smell and taste in the same liquid. Invariably, observations and opinions differ because we often smell and taste many things differently due to physiological and other factors. Talking about wine can also challenge us. Although many wines are straightforward, some wines, particularly really good ones, can surprise and even astonish our olfactory and gustatory senses with their endless, often complex, enticing, and sometimes changing mixtures of aromas and flavors, textures, expressiveness, and other attributes.

It’s Easier Than You Might Think Describing how wine tastes is more straightforward and less mysterious than you might think. All good wine — by that, I mean wine that's palatable, tasty, and interesting — as well as not-so-good wine, have mostly familiar characteristics that can be described simply and creatively. The first, of course, is a wine’s color, which hopefully we all can usually agree upon. The second is what we observe when we swirl wine in a glass. By doing that, we can get a visual sense of a wine’s weight or body and its density or viscosity. We also can get a clue about its alcohol content. Seeing many streams, tears, or “legs” of clear liquid clinging for seconds to the inside of a wine glass after swirling generally indicates wine alcohol content of more than 13%. (The range is 11%-15.5% alcohol by volume, or ABV, for most dry table wines.) Third, there’s what we smell, especially right after swirling, which helps wine vapors release faster and collect in your glass. Fourth are the particular flavors or other things we taste from the moment wine reaches our lips until after we swallow. Fifth are a wine’s weight, texture, and energy that we “feel” in our mouths. This is more than light, medium, or full-bodied. And finally, there’s our overall opinion or assessment of how a wine’s tastes, smells, and other attributes have come together. >>>

Try the Wine Smells and Tastes A wine’s smells, scents or aromas can include almost anything, literally from fruit to nuts, flowers to herbs, wood to wet stone, barnyard to the forest floor, and so on. What you smell, as they say, is what you smell, so feel free to describe as you wish. If one of the scents in your glass of cabernet reminds you of the fresh leather smell in your father’s new car when you were a kid or the fragrant Chinese spices you used recently to make dinner, that’s valid. Flavors in wine typically cover the gamut of taste basics: sweetness, saltiness, sourness, bitterness, and savoriness — what some people describe as a sensation of piquancy or deliciousness. Most wines combine two or more of these attributes. And, yes, there are wines, usually white, that have subtle but noticeable traces of saline. Tasty examples are Greek assyrtiko and Spanish albariño. Wine flavors are described most often in terms of their fruit, floral, or herbaceous characteristics. We can also refer to flavors as bright, fresh, focused, intense, weak, diffuse, appetizing, etc. Certain tastes, like tartness or acidity, are often associated with specific fruit flavors, such as lemons, grapefruit, and green apples. Stale, flat, and tasteless typically describe wines that have oxidized — like a glass of red from a bottle that was opened a week ago and now has no smell or recognizable fruit taste. Among the most common and recognizable wine scents

Most of us probably prefer plenty of pleasant fruit flavors in our wine, because we’re used to mainly drinking younger, ready-todrink wines or wines made using grapes varieties and winemaking methods that emphasize intense fruit flavors. However, many of the world’s finest wines, particularly those that have been properly set aside for many years, can exhibit more subdued fruit along with herbal, earthy, and mineral flavors and scents. It’s important to remember that a wine’s flavors and other defining features are seldom static once it makes contact with the air. As wine reacts chemically with oxygen and warms to room temperature in the minutes and hours after opening, its taste and smell profile may change considerably. Many red wines, in particular, need time to "open up," another way of saying letting the wine react with the air to unlock its flavors. Keep in mind that wines also react with the foods we eat, and both food and wine can taste different as a result.

Weight, Body, and Texture Wine, of course, doesn’t just have aromas and flavors. It also has weight or body, and texture — some call it "mouthfeel" — and structure or spine. Once in our mouths, wine can be light and lean, like sauvignon blanc or beaujoulais or at the other end of the scale, full-bodiedand almost viscous like Port or French sauternes. Some

And don’t forget tastes and smells of stuff made with fruit, such as baked apples, lemon tart, and key lime pie. I haven’t mentioned grapes for a reason. Ironically, good wine seldom tastes like fresh grapes or grape juice. “Grapey” is rarely an apt descriptor for good wine. Besides fruit, there are numerous other flavors and aromas. White wines, for instance, often exhibit floral aromas, like orange blossoms or honeysuckle. Reds and whites can have many kinds of herbal, plant, or spice scents and flavors. Common are anise (or licorice), fennel, cinnamon, mint, nutmeg, ginger, and black pepper. Also important are earthy, loamy, and mushroom scents. Woody scents are also common, such as charred or smoked oak, fresh-cut cedar, or a cigar box. These typically come from aging wine in oak caskets or with oak chips or staves, standard practice for many wines made with cabernet sauvignon, chardonnay, syrah, tempranillo, and other grape varieties. Other scents associated with wood aging are almond, toasted hazelnut, and other nutty flavors, as well as vanilla and caramel, cocoa, chocolate, new leather, and tobacco. Some prepared foods you might taste or smell are green olives, tea, roasted meat, custard, crème boule, and croissants and other pastry. Some wines, particularly very dry whites like New Zealand sauvignon blanc, may have grassy, wet stone, or mineral characteristics.

wines can feel smooth or even velvety, or rough, gritty, and a bit astringent; most wines are somewhere in between. Some simply have the consistency of water. Wine, of course, can have bubbles, spritz, or effervescence, or just the slightest prickle. Sometimes the finish can linger for minutes, and sometimes not at all. Some wines can taste cool, crisp, and refreshing, while at the other extreme, they might taste hot, harsh, and overly alcoholic, and all sensations in-between.

Overall Impressions I think it's good to share our overall impressions when enjoying wine with others, including summing up things we most like or dislike. Is the wine balanced or not — that is, how well do all a wine's attributes that are important to you come together: the scents, flavors, the way it feels in your mouth and when you swallow? How enjoyable or delicious was it? After each sip, did you want another and then another? It’s helpful to remember that with really good wines, lots of sensations can happen in rapid succession with each sip, such as interactions among flavors and textures — sweet, tart, tannic, silky, smoky, nutty, spicy, and so on. Even if we can’t identify each flavor, we can share these sensations about a wine’s energy, liveliness, intensity, power, or personality. Overall, a wine can strike us as powerful or intense or perhaps light and easy-going, or — heaven forbid — weak and flabby. A wine might be tasty but simple and one-dimensional. On the other hand, it can strike us as complex, with many tastes and characteristics that may or may not come together well. Some disappoint, but some truly bowl us over. Y

A PLEASANTLY SURPRISING VACATION TO GUATEMALA

When close friends (who are extensive world travelers) recommended we take a family vacation to Guatemala, I must admit, a trip to Central America hadn’t been top on my list. In fact, I’m not sure it was on the list at all. But they were so enthusiastic; I decided to explore the possibility.

y husband Kyle and I had traveled quite a bit with our four children, but we had rarely explored South America, much less Guatemala. To start with, I have to say I didn't know what to expect. I was flying blind — just going on the recommendations of friends. My first impression was that it was different — a departure from our typical travel destinations. It turned out "the difference" was a good thing. We arrived in Guatemala City on a Sunday. Apparently, on Sundays, many people leave the city to visit with family and friends. Needless to say, the traffic was terrible, and we were thankful we hired a car service to take us to our rental home on Lake Atitlan. Even the three-hour ride to the house was an experience. We drove through the countryside,

taking in the new terrain and sites. While the kids noticed there were quite a few stray dogs on the way. Our driver took us to Chichoy, a fantastic lunch spot where we enjoyed a classic Guatemalan lunch of grilled chicken and steak with guacamole, plenty of salads and of course, a wide selection of Latin American beers. The place was gorgeous, a hub of activity and pretty lively thanks to a mariachi band. And there were plenty of locals — always a good sign — and certainly some tourists.

THE LAKE HOUSE

Then we arrived at Lake Atitlan, and I honestly didn't know what to expect. I had seen pictures and talked to our friends, but we were just going on their strong recommendation. Blind faith! We rented a house on the lake, and our Airbnb host had arranged for a boat to meet us at the marina and take us to the house. Reuben, our boat captain, was fantastic. He took us all around the lake to visit different villages. But back to the lake. The water is crystal blue and five stately volcanoes surround the lake. The setting was tough for me to conceptualize before we arrived. There are several small cities either nestled along the water or up in the mountains all around the lake. And the lake — well, it's a monster.

It was a magical setting. We paid Reuben for each trip across the lake or to whatever villages we wanted to visit. It was as if we had an Uber on the water! Simply put, the house we rented was out of control. The 6-acre property was beautifully landscaped with native trees. The house was built into the side of the mountain with several areas of exposed cliff rock architecture, and every room had a stunning view of the lake. The owner is from Guatemala, lives in Chicago half the year, and caters to an American clientele. She asked us what we were interested in and then set it up — including massages at the house. The house was outfitted with kayaks and paddleboards to use in the private cove or around on the lake and a wood-burning sauna that the house manager will fire up for you upon request — perfect for a bit of rest and relaxation after a day of sightseeing. To top it off, there was a large outdoor wood-burning pizza oven built into the side of the mountain. So we coordinated with the homeowner to do a pizza night. She hired cooks, and they provided all the pizza ingredients except the toppings. We had stopped at the grocery store on the way for water, snacks and alcohol, and we also picked up pizza toppings for our upcoming backyard pizza night. breakfast and dinner for us at the house. Typically, we were out and about for lunch but enjoyed authentic Guatemalan cuisine in the comfort of the house’s outdoor dining palapa, with the beautiful lake view, for the other meals. The price for this service was very reasonable, and we paid the host for this service through the Airbnb app.

We called Rueben to pick us up each day and take us to another part of the lake, where we visited several villages and activities. Each town nestled up in the mountains focuses on different goods

If You Go

During the trip, I never felt unsafe or uncomfortable. My 9-yearold daughter Parker is pretty fluent in Spanish, so she was our translator when needed. But even if she hadn’t been with us, we would have felt comfortable and would’ve definitely been able to get by. You can also use the Google Translate app. Just take a photo of a Spanish menu with your phone and the app translates it to English. It helped for sure to have a designated driver for the trip! And, of course, stick to bottled water. Our trip in mid-June coincided with the start of the rainy season, but the weather never hampered us, but we did feel like we were in a rainforest. — such as textiles, pottery, coffee and chocolate. In one town, we learned about dying fabrics. At another stop, the kids learned about crushing the cocoa nibs and all about making chocolate. We also visited Cerro Tzankujil Nature Preserve, where we went on a hike and finished the visit cliff jumping! But maybe one of my favorite towns we visited around the lake (it's hard to pick a favorite) was the little village of Santa Cruz. After Reuben dropped us off, we climbed into tuk-tuks (for all of about two dollars) that took us to Amigos de Santa Cruz — a restaurant overlooking the lake. But Amigos de Santa Cruz is more than just a place to eat — it is also a school. For more than 20 years, the organization has been working to improve the lives of the indigenous people of Santa Cruz. The restaurant and school provide training and experience, enabling people of Santa Cruz and some of the surrounding villages to find jobs to support their families. We enjoyed an entire afternoon of cooking classes. And then we got to eat our dinner afterward — the fruits of our labor. It was a phenomenal and inspiring experience. During our stay at the lake, everyone we met kept telling us about a mysterious man named Hans.

IF WE GO BACK

Here are three things I would like to do if we visit again. WOOD-BURING HOT TUB We didn’t get to do one thing, but we definitely would if we go back. La Casa Del Mundoa, a hotel on the lake, has a wood-burning hot tub, and you can enjoy sunset cocktails in the hot tub. You do have to book in advance. HELICOPTER RIDE You can take a helicopter from airport to the lake which our friends did, and they said it was terrific. You get to fly pretty close to the volcanos around the lake and see many different terrains of the country. HIKING Guides are available for hire to enjoy a sunrise hike through the rainforest to La Nariz for a beautiful view of the lake. Of course, you have to get up at 3 am, so there’s that, and the rental house had its own beautiful sunrise lake views. Or from Antigua there are many great hikes, that depending on the volcano activity, you can even roast marshmallows over the flowing lava. COFFEE TOUR I cannot mention Guatemala without talking about their famous coffee. Our friends also visited a coffee plantation and got to watch the coffee-making process and enjoy a breakfast with a cup of farm-fresh coffee.

There was a trail through the rainforest that led us to Hans. Imagine a German mountain man who brews his own beer and has a restaurant in the middle of nowhere — that's Hans. After a long hike to find Hans, the experience lived up to the hype. He was hilarious, the beer was great and it was the perfect afternoon adventure.

ANTIGUA

Next, we traveled to the colonial town of Antigua, which felt like we had been dropped into a European village with cobblestone streets, brightly colored buildings and an incredible dining scene. Antigua is truly a hub of fantastic food. Every time we ate, we were sure we just had the best meal of our trip — that is, until our next feast. And the choices went way beyond just Guatemalan food. We had terrific ramen soup right there a million miles from Japan. And there was a French restaurant right around the corner from our Airbnb house that rivaled meals in France. We enjoyed Italian food for lunch and pastries from several outstanding bakeries. Simply put, the food scene in Antigua is impressive. We would go back just to Antigua for the weekend just for the dining scene alone. To make the trip even easier, we had the same Airbnb

homeowner in the city who also helped coordinate transfers, cooking, and other conveniences. This home was built into the side of 250-year-old walls. But we did more than dine our way around the city. We actually did take in some of the sites, including the Catalina Arch and Cerro de la Cruz — a look-out spot with a vast cross. These are two of the most iconic locations in the city. We also took a comprehensive chocolate class in Antigua, where we got to make our own chocolate bars.

It is worth mentioning that as we traveled around the country, we did see the discrepancy in incomes, but on the other hand, we also saw a lot of people working. I am still surprised at how much my whole family enjoyed this trip and still talks about it. We all didn’t know what to expect, but sometimes that can be the best kind of trip — one full of pleasant surprises. From our rooftop balcony in Antigua, we could see a volcano erupting in the distance. It was our last day, and it was as if it had been scheduled in honor of our departure. Fantastic Fishing MEET THE LIGHTHOUSE POINT SALTWATER SPORTSMAN ASSOCIATION

T

he Lighthouse Point Saltwater Sportsman Association (LHPSSA) is one of the oldest and most respected sport fishing and diving organizations in Southeast Florida. Over the last 35-plus years, the LHPSSA’S list of local fishermen and divers reads like a who's who list in the recreational and competitive world of offshore and back-country fishing and sport-divers. Holding monthly meetings at the Lighthouse Point Yacht Club, the group hosts both local speakers and lecturers from around the world offering advice and tips on all things fishing, diving and environmental. Such topics include kite fishing, deep-jigging, sailfishing, daytime swordfishing, trolling for mahi-mahi, king fishing, tuna, spearfishing and diving for lobsters and hogfish — not to mention rigging clinics, cast-netting, and catching and keeping live bait. The LHPSSA has a long history of working on a vast array of environmental and conservation initiatives. The LHPSSA is one of the only fishing clubs

In addition to holding inter-membership events and competitions, the club frequently organizes trips to the Bahamas, Central America, Louisiana, backcountry Florida, and the Keys. On an individual basis, many members have fished and dived anywhere from the Virgin Islands, the Caymans, Costa Rica, Panama, Venezuela, Ecuador, Hawaii, and even Australia. Several club members are gearing up to fish in the Dust Em Off Sailfish Tournament out of the Viking facility in Riviera Beach on Dec. 4. The Bite Eatery, which will occupy an approximately 9,000-square-foot space in The Harbor Village Shops, has experienced construction delays, but is expected to open in January 2022 as the first-ever food hall in Pompano Beach. Located at 2715 E. Atlantic Blvd., the food hall will feature nine restaurant vendors and one full-service bar, all under one roof. The vendor units will be along the east and west walls of the food hall, and the central area will be for the bar and seating. There will be 209 indoor seats, including 37 seats around the bar. There will also be outdoor seating. The current list of vendors that will have a space in The Bite Eatery includes the Deli Shack, which will be operated by the former owner of The Onion Roll, a successful beachside deli in Lauderdale-By-The-Sea that closed due to the COVID-19 pandemic. Other vendors include Riccardo’s Pizzeria (pizza, calzone, fresh bread); Ceviche Time (Peruvian); La Chancla (homemade traditional Mexican cuisine); I Heart Mac & Cheese; Senbazuru (sushi rolls, specialty Japanese burgers); Lobstar, currently a successful food truck specializing in lobster items, particularly lobster rolls; and a restaurant serving American-style burgers. The red cabbage is both classically sweet and sour and there are other side options too including potato dumplings, potato salad and even hot potato salad.
