CAR WASH CORNER Now is the perfect time to stop by and clean that dirty car at Mr. Squeaky’s award winning car wash!

Maureen Canada can’t help but smile now that her car is all squeaky-clean.

Developed, owned and operated by the Sassos, a Lighthouse Point family.

MR. SQUEAKY CAR WASH is owned and operated for the past 10

years by a Lighthouse Point family. Owners Richard and Lynn Sasso, both attorneys, left the day to day practice of law to launch Mr. Squeaky, with the goal of making Mr. Squeaky one of the best car washes in the nation. Mr. Squeaky has been voted “1 of the Top 50 Car Washes in the USA” by Modern Car Care Magazine, the only South Florida car wash to receive this honor. From top to bottom, Mr. Squeaky is a family business. Their two children, Stella and Tyler, along with thousands of other kids visiting with their parents, love the multi-sensory experience of the 135’ long car wash tunnel that includes colorful soaps, a high pressure Arctic Blast rinse, soft cloth scrubs and Tornado Dryers. With washes starting at just $9, including unlimited FREE use of vacuums, there is no true competitor in all of South Florida. From Buicks to Bentleys, every car is treated with white glove service that has made Mr. Squeaky famous and the go-to place for hundreds of thousands of raving fans. Lynn Sasso explains the philosophy at Mr. Squeaky: “We wanted to create a family-friendly car wash. Our goal is to give each customer a squeaky clean car and a smile on their face!” Voted 1 of the Top 50 Car Washes in the USA by Modern Car Care Magazine Want a free car wash and your photograph in the next Car Wash Corner? CREATIVELY

Speaking BY SUSAN ROSSER

A Touch of Fall

ON THE COVER Kelsey Miller, Amanda Johnson, Suzy Benzenhafer and Marisa Paglino posed for an impromptu photograph that we found to be adorable.

24

LIGHTHOUSE POINT

Even though it was nearly 20 years ago, I remember the scene I am about to describe like it was yesterday. It was early September and my husband Richard and I were getting in the car to go out for lunch when he announced, “There’s a touch of fall in the air.” Quite frankly, my first reaction was that perhaps he was having some sort of psychotic break from reality and I should rush him to an emergency room. It was steaming hot, the sun was glaring down on us and you could have fried an egg on our driveway. “A touch of fall?” surely he must be mad. Like so many Floridians, I am a transplanted northerner and I love our tropical climate—except in September. Perhaps it’s my 30 years living in New York, but for some reason every September, I expect a different and cooler version of fall to arrive. After four months of oppressive Florida heat, of my hair looking like that stuff that grows on coconuts, of feeling like my makeup is literally melting off of my face—I am ready for a break. So there it is: I admit it. I miss autumn in New York. I miss that first day when you wake up and realize it’s a little too chilly for shorts and you might need a light sweater in the morning. I miss driving upstate to pick apples. I miss the beautiful ride back into the city on the New York State Thruway and arriving back home with enough apples for 37 pies and 12 quarts of apple sauce. I miss the bright colors of fall foliage and drinking coffee—not just for the caffeine buzz, but to actually warm up. My husband insists we have our own version of autumn and I should stop pining for the changing of the leaves. Up north, the transition from summer to fall is dramatic. The weather changes, the colors change, everyone seems to have a new sweater, and suddenly you find yourself with an urge to cook big pots of soup. In Florida the change is much more subtle, but if you look carefully, you can see it. As a native Floridian, Richard will point to the sky and tell me it’s more of a cerulean blue. And he detects even the slightest dip in the temperature and humidity. He even claims to notice changes in the barometric pressure. And while 20 years ago, I thought he was a little off his rocker, now I find myself a touch envious he is so in tune with his tropical surroundings. So perhaps I should give up my longing for warm apple cider, cardigans and boots. On some level, I may always miss the rich traditions that accompany fall in New York. But after so many years as a Floridian, it’s time to embrace autumn in the tropics and make my own Floridian traditions. So this September I will wait for the day when the sky turns a deeper shade of blue and I will bake a coconut cream pie. But I still might have to bake an apple pie too. After all, this is America.

Pompano Beach Make a Difference Day Sept. 24, 2016 will be the first ever Pompano Beach Make a Difference Day. At the next Pompano Beach commission meeting in September, Mayor Lamar Fisher will sign a proclamation declaring Make a Difference Day a holiday recognized by the city. The holiday is a grassroots community outreach project where every citizen can get involved in a service project on the fourth Saturday of September. “We all have talents and abilities we can share such as painting, collecting food, school supplies or clothing, planting a garden, cleaning a beach, reading to children or helping with homework. Just think of the gift that is to someone in need,” said Make a Difference Day creator, Susan Gingerich. Citizens can sign up to do a project or apply to have their own project become a part of the holiday. So put on your steel-toed boots, grab those work gloves and get in on the action. To Catch a Thief LOCAL BUSINESS OWNER HELPS LIGHTHOUSE POINT RESIDENT RETRIEVE STOLEN BOAT

BY MARIE PULEO When a 5 a.m. phone call abruptly awakened Carolyn Stash, owner of AtlasTrax USA, a Deerfield Beach-based business that provides GPS tracking services for boats, she sprung to action. Her customer, a Lighthouse Point resident who had taken his first trip to Bimini in the Bahamas in his brand new boat, informed her that his prized vessel—a custom-ordered 2017 Jupiter 38 valued at $450,000—had just been stolen. Stash immediately logged on to her computer and

began tracking the boat as three thieves took it a distance of 74 miles from Bimini to Freeport, at speeds of up to 52 mph. Through the concerted efforts of Stash, the boat owner, Bimini police and the Freeport Harbor Patrol, the boat was recovered at 6:40 a.m. as it entered a remote canal. “It was a wonderful success that we found it,” said Stash. “I think it’s pretty unheard of to catch a boat at the moment it’s entering a canal, before the thieves start taking the engines off and stripping the electronics and selling everything piecemeal. That’s normally what happens.” Unfortunately, when Freeport Harbor Patrol spotted

30

the boat as it approached the canal, the thieves throttled it up to high speed, jumped off and managed to escape. The boat ran into a concrete seawall, which caused damage to the hull. “It’s mostly cosmetic, just some bumps and scratches, and it’s all repairable,” said Phil Kniskern of KMC Marine in Lighthouse Point, where the boat was purchased. “Luckily, the engines and all the electronics are fine, and it’s seaworthy.” The boat was equipped with a Seatrax GPS tracker by AtlasTrax, a device which KMC Marine recommends to all its customers. Although KMC Marine can order other types of GPS tracking units if a customer requests them, the Seatrax is the only one they stock permanently because of its more simplified, batteryoperated system, small size, relatively low cost and personalized service. The portable device is hidden in a spot on the boat known only to the owner. If the boat moves, the owner receives a text message with a map every 10 minutes, which is what alerted the owner his Jupiter 38 had been stolen less than 24 hours after he arrived in Bimini. “There’s no doubt we would not have found my boat without the AtlasTrax GPS tracking system on board,” said the boat owner, who wants to remain anonymous. “The customer support was outstanding.” Stash, who sells and distributes the tracking systems in the U.S., Bahamas and Caribbean, usually does tracking for customers who want her to make sure they, or their family members, arrive safely to their destination. This was her first case of tracking a theft. “I think it was a success story,” said Stash. “I hope we can help more people.”

CITY TREE REMOVED TO PROTECT CRITICAL BRIDGE The strangler fig tree that, for over 60 years has stood at the northeast corner of the bridge leading into the Lake Placid neighborhood, will soon be gone. Removal of the tree began last month after a water

main near the tree broke and dirt from the tree’s root system flowed into the adjacent canal for nearly four hours, creating a large sinkhole. Arborists for Broward County and Florida Power & Light (FPL) who came to examine the tree determined the root system had been undermined and the tree needed to be removed. It had become a public safety hazard, according to the City Administrator’s office. In recent months, the tree has been a topic of discussion at City Commission meetings due to the potential danger it poses to the bridge if it, or its large limbs, were to blow down during a severe storm. The bridge, located on NE 36th Street, is the only access to over 1,000 residents in the 400 single-family homes in the Lake Placid area, which is essentially an island.

34

LIGHTHOUSE POINT

| lhpmag.com

Leo Bentz, a longtime resident and former mayor of Lighthouse Point, spearheaded the issue back in May. “If that bridge is damaged or blocked, all the Lake Placid residents have no access for emergency medical or police assistance, and their homes and the church have no fire protection whatsoever,” said Bentz in a letter to the city’s mayor and commissioners. Bentz also voiced his concerns at two City Commission meetings. Even before the water main broke, the city was moving in the direction of having the tree taken out, at an estimated cost of $40,000 to $65,000, which included the removal of the root system and, if needed, repairs to the seawall in which some of the roots are embedded. For now, only the tree will be removed, not the root system. The costs will fall to both FPL, which agreed to cut the limbs down to take weight off the tree, and Broward County, which will take out the rest of the tree. Dr. Susan Rodell, the homeowner whose property overlaps with the tree’s base, would have liked to save the tree. When she bought her home 12 years ago, she was immediately attracted to the tree’s beauty and the shade it gave her home. It has been hard for her to come to terms with the loss of what was once a city landmark. “I am devastated, and it breaks my heart to have this beautiful piece of history torn down,” said Dr. Rodell. “However, to appease and comfort the minds of the residents of Lighthouse Point, I am closing my eyes during the removal process.” “It was a beautiful tree,” said Bentz. “I’m not out to cut down beautiful trees for no reason. My only concern was for the residents who live back here and their safety.” The tree did, however, help protect the neighborhood the day the water main broke. If the tree hadn’t been standing, there may have been more erosion to the road, and the FPL power pole could have fallen over. The tree channeled the water away from the bridge and over the seawall. “In this case, it’s almost like the tree gave its last breath to save the bridge,” said a city official.

Big Problem, Simple Fix Bruxism, or “teeth grinding”, can affect anyone! Although there are many possible reasons why a person grinds their teeth, around 70% of grinding is caused by stress. Simply stated, you grind your teeth you wear them down or reduce them to nubs. One morning you wake up and your jaw is hurting or one or more teeth are sensitive even before you begin eating or perhaps your mouth is making a whole lot of new sounds without you even humming a song. The situation does not have to get to this point. Have your dentist make a customized hard night guard that is designed for your teeth and mouth and wear it every night or even during the day if you catch yourself grinding. It’s your choice but wearing a night guard is a lot less expensive then replacing a mouthful of worn down teeth. All the best!

TO THE POINT Legal Matters

Legally Blind Y

ou have probably heard the saying: “The lawyer who represents himself has a fool for a client.” If that is true, what about a non-lawyer who tries to represent himself? In this age of the internet, I see many people attempting to prepare their own legal documents. Typically, this involves accessing some do-it-yourself legal website which provides generic forms. These forms include the Durable Power of Attorney, Designation of Health Care Surrogate, Living Will, Quit Claim Deed, Revocable Living Trust and Last Will and Testament. In over forty years of experience as a Florida attorney, I have seen very few nonlawyers successfully create and properly execute any of the above legal documents. Documents are created and/or executed improperly, resulting in a legal can of worms. Deeds are a common example of where an attempt to save a few dollars in attorney’s fees results in what can often end up being major title defects. Properties are improperly transferred, thereby creating a defect in the title, which needs to be corrected either while someone is alive, or during a probate process after death. The defects can involve improper dates, names, lack of proper witnessing and/or notarizing, incorrect legal descriptions, etc. Lawyers make mistakes, too, particularly those who are not experienced in real estate. Each of our fifty states has its own unique set of laws. Therefore, attempting to use a generic form for Florida is asking for trouble. In October of 2011, the Florida legislature passed a new law regarding the Durable Power of Attorney. This law makes the document much more complicated and detailed than it used to be. I worked with other law firms for many months to create a proper document to conform to the complex new

THE DANGERS OF TRYING TO BE YOUR OWN LAWYER

law. It is highly unlikely that such a document (our current format is approximately 26 pages) is available on the internet. Likewise, there is specific language regarding the Federal HIPAA Act which must be included in all Florida Designation of Health Care Surrogates to make them “HIPAA compliant.” The correct language is not likely to exist on the generic Health Care Surrogate forms. Regarding Revocable Living Trusts, attempts to create this document and then transfer property frequently results in a total mess which requires a lawyer to revoke all of the previous documents and start from scratch. There are individuals and companies that advertise themselves as paralegals and claim they are not providing legal advice, only forms. In my opinion, it is virtually impossible to provide a legal form without providing legal advice. The bottom line is: there is no guarantee that hiring a lawyer will mean a good result. However, you certainly stand a much better chance than doing it on your own. Martin Zevin is available to discuss wills, trusts, estates, probate and is available for free consultation regarding personal injury claims or car insurance coverage. TO THE POINT Tidbits & Trivia

The Pros and Cons BY JAMES TERLIZZI

F

of Waiting

lorida is known, affectionately, as “God’s waiting room.” It earned that moniker because so many people move here to spend their retirement years. I won’t mind if God makes me wait a very long time before summoning me to heaven, or wherever it is that zany writers go when they pass on. So much for the “pros.” Other than that, I hate waiting. Doctors are the kings of making you wait, and we are the patients-in-waiting. They overbook and have unrealistic appointment schedules. This brings out the animals in us. We sit for hours in the office like sheep, then react like grateful puppies when we reach the first plateau: a call to enter an exam room and wait some more. The final insult is the assistant’s lie: “The doctor will be with you in a minute.” I have solved this problem. I make 15 appointments for the same day, 14 of them under fictitious names. When I arrive at the office I am the only one there. No matter which name they call, I go inside. The doctor has no choice but to see me. The down side is, the doctor now will triple his overbooking for the future. I have solved this problem, too. Show up early for your appointment wearing a dirty old raincoat with a dead mackerel in each pocket, mumbling something like “this flesh-eating virus will kill us all.” The waiting room will empty out in seconds. Remember to leave the raincoat in the waiting room when you go in to see the doctor, or he may leave as well.

Waiting in line at the supermarket is almost unavoidable, but sometimes this gambit works for me: When I get to the check-out, I ask the customers in line if I can go ahead of them because “my wife is waiting in the car for me to take her to the hospital for a liver transplant.” If you try this, be prepared for weird looks and nasty comments. When a supermarket has 10 check-out lanes but only one cashier, it is time to get even. I shop very late, load up my cart and roll up to the check-out two minutes before closing time. I then ask the clerk to price check every one of my 57 items. Some 20 minutes later, just before I pay, I tell the clerk: “I think I left my car running,” bolt out of the store and never return. Then, I watch gleefully through the window as the staff returns all 57 products to the shelves. While I would not wait in line for five minutes (well, maybe five minutes) to see a bevy of bathing beauties in bikinis cavorting on the beach, (wow, what alliteration) there are people who seem to enjoy waiting. I refer to those who stand in queue for hours to score concert tickets or, worse yet, the lemmings who park on the sidewalk for days waiting to fork over $800 for the latest smart phone, even though their current phone is only three months old. Am I missing something? Now here is something really interesting: (Oops! Out of space. Sorry, you’ll have to wait ‘till next month.)

Kale Caesar

I

s anyone else wondering how it’s September already? Just a few short days until Labor Day weekend. Newsflash: Summer is not over yet. Figs are in their prime season so take advantage! This kale Caesar salad with fig “croutons” has become a fast favorite and is a great salad to bridge late summer and early fall. This recipe is a loose interpretation of the classic Caesar with its combination of kale, fresh Parmesan and pine nuts, mixed with a creamy, Greekstyle yogurt dressing. And for you anchovy haters, this dressing is fish-free.

BY AMANDA JANE

Kale Caesar Salad with Fig Croutons Makes 2 servings

INGREDIENTS 1 bunch of flat-leaf kale, stems removed and cut into strips ½ cup grated Parmesan cheese ¼ cup pine nuts 2-3 figs, sliced in half or quartered Dressing ½ cup olive oil DIRECTIONS or food processor. Pulse to blend until mixture is fully combined. Set aside. Place the kale into a mixing bowl. Spoon the dressing onto the kale mixture and gently toss the salad

2 garlic cloves ½ cup plain Greek yogurt 1 tablespoon lemon juice 2 teaspoons Dijon mustard 1 teaspoon ground pepper

until dressing coats the kale leaves. Arrange salad on a serving plate and top with Parmesan, pine nuts, and fig slices. Serve and enjoy!

arc J. Gold has always had a passion for helping others, and his work as a privatepractice attorney lets him do exactly that. “It has been my passion, particularly since high school, to become an attorney and help others, especially those individuals who feel they have been treated unfairly by others,” said Gold, whose law office focuses on wills, trusts, probate, guardianship litigation, family law, contract, business and real estate. Gold’s passion propelled him into the practice at a young age. He became an attorney and member of the Florida Bar at the unusually young age of 23. In his 28 years of practice, Gold has represented clients who were so pleased with his services they sent their children and grandchildren to him for representation. Gold has represented entire families for multiple generations. “As an attorney, my greatest reward is meeting such wonderful and interesting people over my years of practice,” said Gold. After 20 years in Coral Springs, Gold moved his office to Deerfield Beach, in the Admiral Building in the Cove Shopping Center, where he has now been for six years. Over the years, Gold has served as an administrative hearing officer for Broward County, mediator, arbitrator and adjunct instructor.

A Little Appreciation

C

harlie Plumb was a U.S. Navy jet pilot in Vietnam. He had flown 74 consecutive combat successful missions, but during his 75th mission, his F4 phantom fighter plane was shot down by surface-to-air missiles. The plane exploded with 12,000 pounds of jet fuel, flipping the plane end-over-end. The plane was heading for a rice field and Charlie knew he had to eject. The only thing that would save him from imminent death was his parachute, which he prayed would open. Charlie ejected and his parachute opened, however the enemy was still shooting at him as he drifted to the ground. He descended for 90 seconds. Once he hit the ground he was captured. Charlie spent 2,103 days in a communist, Vietnamese prison camp before he was set free. Years later, Charlie, his wife and another couple were having dinner in a restaurant in Kansas City when a man kept staring over at Charlie. Finally the man walked over to Charlie and said, “You are Captain Charlie Plumb! You were a Top Gun fighter pilot years ago!” The man continued and said, “Your plane was shot down, and you were held as a prisoner of war for six years.”

Charlie was speechless. He did not recognize the man and had no idea how he knew all the information he did. Charlie finally asked how the man knew him. The man looked at him and said, “Because I packed your parachute.” Charlie was in shock. Then the man said, “I guess it worked,” before walking off. That night Charlie laid awake thinking about all the times he walked through the lower levels of the ship where the sailors packed the parachutes. Charlie never acknowledged the man or said hello, good morning, good job, or I appreciate you. Yet the work that man did later saved his life. Think about this for yourself. How many people in your life contribute to your success? How many people make your life easier, better and more fulfilled? What people have made the most impact on your life that you should show gratitude and appreciation for? Now is the time! Focus now on saying thank you to those people. Never take them for granted, because if it wasn’t for them, you wouldn’t be where you are today. Then ask yourself, “How good am I at packing parachutes? How can I be more valuable and help the people in my life more?” When you start asking questions like these, you will come up with some great answers, which will help you impact the people around you and thus, the world.reat answers and you will make a great impact on the world! Charge Her Up

L

ately we have been getting an increased number of calls to install power for electrical car chargers. It has been predicted by the Florida Solar Energy Center that there will be between 1.8 to 7.3 million electric vehicles on the road nationwide by 2023 (depending on varying escalation rates). Most electric vehicles come with a standard 120-volt charger, which charges the battery at a very slow rate: for every hour charged, the car will only drive four miles. Many owners choose to upgrade to the faster 240-volt charger, which will completely charge the car overnight. These chargers can be installed indoors or outdoors, depending on the homeowners needs. They come with a 15- or 25-foot cord and usually cost between $600 and $900 dollars. These units require a minimum of 30 to 50 amps of power on a 240-volt circuit and charge at a rate of 11 to 22 miles per hour charge. They can be wired directly to the circuit, or be adapted as portable outlets. The portable units can travel with you and be connected to power at another location. Ford and other car companies have a hybrid with a gas engine and electric motor. This is good because you can run on the electric engine until the battery runs down, then the car switches over to the gas engine. We had one customer tell us he is getting around 100 miles per gallon with his new car. In South Florida, many of our residents are living in condominiums or apartment buildings with parking garages and outside parking lots. This will be a challenge as the electric vehicles become more popular. There will be a need for more charging stations to be installed in the parking areas. These chargers can be high capacity and charge a car in two to four hours, or provide a complete charge in four to six hours. In many cases this will require adding several chargers, which will, in most cases, need a separate electrical service to the building. This is because most condominium buildings are currently running at full electrical capacity and cannot handle the additional load. These chargers can come with a credit card reader to make it possible for the building to recover the cost of the electricity being used. Remember that all cars and chargers are not the same. Some cars will charge faster than others, and some may only need to be charged every few days depending on the owner’s driving habits.

Balancing Acts MANAGING EVERYDAY STRESS BY DR. JILL SELBACH

N

ow that the school year has begun and summer is over, the challenge to keep balance is on. We are back in the act of managing schedules and wearing too many hats. It is not an easy feat to achieve a good work/life balance. The stressors of work, managing a home, juggling children, caring for aging parents and finding time to spend doing enjoyable things can feel overwhelming.

What is stress?

Stress can come from change and having too many demands and desires. We also create stress when we have high expectations of ourselves and others. There are external and internal stressors:

External • • • • •

Work demands Community involvement Educational conflicts Family and household responsibilities Unforeseeable events

Internal

• Unrealistically high expectations for our personal performance • The need to do more and have more • Ineffective behaviors • Poor health habits • Negative thoughts, attitudes and feelings

What does stress look like? • • • • • • • •

It affects our thinking: Thoughts become unclear Poor concentration Poor attention span Issues with memory Compromised judgment Frequent worry Racing thoughts

It affects our emotions: • • • • •

Feeling overwhelmed Moodiness Emotional sensitivity Irritability or short temper Agitation, unable to relax or keep still [CONTINUED ON PAGE 56]

It is important to check with your physician to determine if they are stressrelated.

Don’t come home and kick the dog

We need to keep our homes as our place of tranquility and safety. It is important to leave stressors at the door. It is human nature to displace our stress and frustration onto the individuals closest to us. We become angry with our boss and come home and kick the dog (it’s a metaphor). Kids come home from school with piles of homework or upset about a bad day. Our kids, parents and other family members should not be the target of our displaced stress. We need to look at these people as a source of support.

Moving Out A PLACE OF MY OWN BY WINI GLUNT

T

he bigger the moment, the better you feel after you accomplish it. Recently, I moved out of my parent’s house and into a condo with a close friend of mine. We were hesitant because it was a little pricier than we were looking for, but money aside, the place had our names written all over it. It had a pool on a widened canal, a gym and sauna, outdoor grills, a pool table and even recycling bins for all of its buildings. It was our own South Floridian dream-come-true. We were the youngest people accepted to live there. We met with the condo association board and went over all the rules. It had once been a 50-and-over community that recently lifted the age restriction. The rules were a clear indication of this. A couple of my favorite are “no guests allowed past 10 pm” and “you must shower before entering the pool.” I had a moment to think to myself, “do people actually follow these?” It was two days later that I had my answer: I saw a couple scrub down in the shower before they entered the pool. I was most excited about the gym and sauna when we found the place—mostly because I could cut the expense of having an L.A. Fitness membership—but also because of the convenience of having a gym in your backyard. I call it “lazy fitness.” The first day I went to the gym and after working out, I went to the sauna. The only problem was the sauna is older than I am. I had no idea how to turn it on. I fumbled over it even though the directions are plainly written out. I gave up pretty fast on using it the first day. The second day, however, I met an older woman who was rather helpful. She gave me some pointers on a few of the machines in the gym, finished her workout and walked out of the gym. Only ten seconds later did I realize I forgot to ask her about the sauna. I finished

58

my work out shortly after, accepting the fact that I probably wouldn’t experience its wonderful heat for the second time now. To my surprise, I walked into the hallway and felt the heat radiating from it before even getting to the sauna doors. The kind woman had turned the sauna on for her workout and left it on for me to follow. I was so grateful in that moment. Though it was a small gesture, it made me feel good about the people in this new community. I started to feel a part of it in spite of my age. After steaming for a little while, I made my way back home. On the way, I saw the woman from the gym walking her dog. She said hello to me and smiled again before I stopped her and asked her about the sauna. “Oh those old things act up a lot, I figured out the trick though, you just have to turn the knob the opposite direction and that seems to get them working. I have no idea why, but that’s how I get it to work and have for the past five years.” I have successfully used the sauna 11 times since moving in.

TO THE POINT Cantankerously Yours

To all the grandchildren in the world BY WENDELL ABERN

Dear Grandchildren Everywhere, Today, I am writing to apologize to all of you. Usually, I try to write humor. But fifteen years ago, terrorists killed thousands of Americans by flying airplanes into buildings. And this month, memorials and other reminders of that horrendous day make it impossible to write anything funny. Instead, today, I want to apologize to everyone in your generation from everyone in mine. My generation inherited one world war, and lived through another. Millions of people were killed. We should have learned something from those terrible wars. We should have made the world a better place for you. We didn’t. And we didn’t. More than 150 years ago, a man by the name of Georg Wilhelm Friedrich Hegel said, “What we learn from history ... is that we never learn from history.” My generation, like all of those that preceded it, confirms the truth of that statement. We never learned the one thing that every human being on earth has in common: none of us asked to be here. We had no say in the matter at all. But I believe that once given the gift of life, no one should have the right to take it away. Yet human beings kill other human beings every day. Every hour. Every place on earth. In wars, we kill each other by the millions, usually in the name of some –ism, -ology, or –ocracy. One reason we keep warring is because of another lesson no generation has ever learned about its leaders: how to tell The Good Guys from The Bad Guys. That is just as dumb as it sounds. But it keeps happening. Every century. And it happens because we never understand how badly we want to believe in our leaders: our presidents, prime ministers, priests, and rabbis. We want them to be smart, fair, honest, and always right. We forget that our leaders are simply human beings, capable of making mistakes and being wrong. And because we want so badly to believe in what they tell us, we seemingly do anything they ask. Too often, our leaders convince us our -ism is the only true and righteous one, rendering us easily manipulated ... and exploited. We become wary of others. Cautious. Suspicious. Too often, our judgment of “those others” leads to mistrust and outright hatred. Hatred: a much underrated emotion. It’s what our leaders use to galvanize us in a common cause. Ergo, wars.

60

LIGHTHOUSE POINT

| lhpmag.com

Millions of Americans protested our country’s involvement in Vietnam because we didn’t understand who hated us. Conversely, if President Carter had declared war after Iranian zealots kidnapped 52 Americans, we would have responded with fervent jingoism. One thing the human race has learned — but sadly, ignored — is that history is written by the winners. So how can we ever be sure the Good Guys won and the Bad Guys lost? Many centuries ago, a man named Alexander led an army that conquered other countries. Some history books still refer to him as Alexander The Great. It is unlikely he was called “great” by the thousands of widows and orphans his marauding armies left in their wake. If Germany had won World War II, the madman Adolph Hitler – arguably the most evil human being who ever lived – would be portrayed in today’s history books as a dynamic, charismatic leader. Some 10,000 years ago, the human race discovered agriculture, creating a gigantic sea change in our evolution. We no longer had to hunt for food. We could grow our own. We settled down. We grew into little communities. We created villages. And towns. And cities. And boundaries. We have been at war ever since. Personally, my strongest belief is that nothing is as sacred or as beautiful as a human life. Any [CONTINUED ON PAGE 62]

human life. I doubt many leaders would agree with that. At some point in the history of our civilization, our leaders determined that our beliefs were more important than our lives. That has never changed. About seven thousand years ago, there were almost 27 million of us listening to a few leaders, telling us to go kill each other in the name of some -isms. About five hundred years ago, there were now 450 million of us, still listening to a few leaders, still telling us to go kill each other in the name of some new -isms. Today, there are almost seven billion of us, still listening to a few leaders, still telling us to go kill each other, still in the name of some –isms. When does it stop? When do we stop using our beliefs as license to kill each other? Today, more than 60 years after the unspeakable atrocity known as The Holocaust ... after a weary world swore, “Never again” ... after a United Nations was created to bring peace to the whole planet ... genocides continue to flourish. Ethnic cleansing occurs every decade or so. As I write this, the slaughter of innocent people continues in Africa, Eastern Europe, the Middle East and Asia, all in the name of some –isms. Leaders of these slaughters, of course, invoke hatred as a motivator. And why not? It always works. Some have tried to unite people by other means. For a while, Mahatma Gandhi brought people together with love instead of hatred. So did Martin Luther King Jr. So have a precious few others. Unfortunately, too many leaders have discovered that hatred works better. And finally, here is a lesson we all should have learned in kindergarten: there is only one planet that supports life. This is where we all have to live. We should be taking care of this planet. And I must admit, your generation is doing a much better job of it than mine did. Or any generation, for that matter. I hope you can start to turn other things around also. Most of all, I hope you can start ... to stop ... the killing. It will take many, many future generations to overcome cycles of hatreds generating hatreds; of killings spawning revenge; of broken alliances, shattered truces and unconscionable genocides. The end of these mass murders has to start sometime. I hope it starts with you. I hope you can make the world a tiny bit better. And a little bit cleaner. And much safer. I hope when you are my age, you never have to write a letter of apology to all the grandchildren in the world. Sincerely, Wendell Abern Wendell Abern can be reached at dendyabern@gmail.com.

RAPA NUI After a devastating mistake sent Deerfield Beach’s first underwater art exhibit and artificial reef tumbling upside down and crashing onto the sea floor, Rapa Nui organizers mourned. Now, the “Mojectic Moai” may make a comeback. Project benefactor Margaret Blume and Rapa Nui artist Dennis MacDonald have been working with a team of community members, including Arilton Pavan of Dixie Divers and the Broward County Environmental Protection and Growth Management Department, to resurrect the oncecelebrated exhibit.

The cheers turned to anguish in a matter of minutes on that festive Sunday, June 7, 2015. The sinking of the Rapa Nui artificial reef, composed of 15 Moai on a 150-by-45-foot barge, flipped upside down, crushing $500,000 worth of concrete figures. This was to be the area’s first underwater, public art diving destination. One spectator gasped as the barge sunk. “The whole thing is going down … upside down,” they said in shock. The project’s primary benefactor, Margaret Blume, described it as “devastating.” Rapa Nui Artist Dennis MacDonald was left speechless, and organizer Arilton Pavan, owner of Dixie Divers, was left to explain how it all happened. The proposed sinking had captivated the community in the months preceding the sinking. The project was organized through the Deerfield Beach Woman’s Club, who became “ambassadors” for the project and raised money for the public art. There were festivities held at

Two Georges at the Cove Restaurant, giving the community the opportunity to see, up close, the “Majestic Moai” of the Rapa Nui Reef. Additional money was raised for public art by the Chamber of Commerce on the Saturday night before the sinking. This “ripple effect” of community involvement was exactly what Blume had been seeking when she invested in the Rapa Nui artificial reef project. Adding substance to the community is why philanthropists like Blume donate time and money, but they also hope to inspire additional investments to compound and sustain their initial venture. For Blume, Rapa Nui was a way to showcase her two passions: public art and helping the environment. She wanted to make a big splash, and the 15 Moai seemed a fantastic and interesting way to do it — a one-of-a kind public art initiative. But when the Rapa Nui reef devastatingly flipped upside down and sunk, it took Blume and the community’s sense of pride and accomplishment with it. Gradually, as with any death, things returned to normal. MacDonald recovered fine. He was commissioned to create another underwater art exhibit in Pompano Beach — an aquatic gambling scene built aboard Lady Luck, a retired New York drudge boat Pompano Beach purchased with Isle Casino to sink as an artificial reef. It was Dennis’ inspiring work on Rapa Nui Reef that paved the way for his involvement with Lady Luck, which now serves as the crowned jewel and centerpiece of Pompano Beach’s Shipwreck Park.

ARILTON PAVAN

When Lady Luck was sunk July 23 with MacDonald’s art aboard, MacDonald admits he was nervous. Even with a “slow sinking” method engineered to limit any mishaps, he watched anxiously as Lady Luck tilted just before it breached the ocean surface. “I thought, here we go again,” MacDonald said. But Lady Luck sunk successfully to a collective sigh of relief. The ship landed upright in 130-feet of water located off the Pompano Beach Fishing pier with MacDonald’s casino art scene fully intact. The fun, gambling-themed scene included “card sharks,” an octopus craps dealer and some giant dice. It took a few months for Arilton Pavan of Deerfield Beach-based Dixie Divers to reorganize and assess the devastation of Rapa Nui reef. Not one to take “no” for an answer, he was motivated to reclaim the site. Pavan came to America from Brazil with his wife Sonia 27 years ago with $300 in his pocket; he knows the meaning of hard work, success and more importantly, failure. The recovery work on Rapa Nui has been slow, but progress has been made. With Pavan leading a group of volunteer divers on Saturday afternoons, three of the Moai have been pulled from under the barge. Using a combination of debris removal by hand, an underwater come-a-long and lift bags, the Moai have been relocated, one-by-one, on top of the upside-down barge. Using

If you and your friends want a more private and intimate diving experience than a dive shop group dive, then head out with Captain Brett and Seefish Charters. He has been a commercial fisherman for decades and his girlfriend and Seefish co-operator Kirsten Gash has been in the dive business for 16 years. These hyper-locals know the insider secrets to the Broward County dive and snorkel scene. Their boat leaves from Pioneer Park, winding it’s way out Hillsboro Inlet. From there, guests can customize their trip however they want. Whether your group wants to stick to shipwrecks, reefs, shallow or deep dives, Captain Brett will cater to your needs and experience level. DENNIS MACDONALD brackets, the Moai have been up-righted. Having Pavan spend his time and energy to improve the site has given Blume hope and validated the importance of the Rapa Nui project. It’s “still very painful” to even think about what happened last year, but Blume is encouraged that the project can live again. In addition to Pavan, Dr. Ken Banks and his team at the Broward County Environmental Protection and Growth Management Department have been working to resurrect Rapa Nui. The team added 250 tons of limestone boulders to the site last year. Named “Mount Deerfield,” the cost of these boulders was covered by a grant from the Florida Wildlife Commission to create a great habitat for marine life. Blume said she has discussed adding more Moai to the barge with MacDonald. It’s now a matter of logistics to place them, one-at-a-time, on the site. MacDonald still has the molds from when he created the original project, so making additional Moai is just a matter of concrete and rebar. The challenging part is getting them safely to the ocean floor in 65-feet of water. Considering the site was nothing but sand just a

boulders added to the site. Still, it is presently merely an upside down, rusted work barge with a pile of cement debris and pieces of rebar underneath. While the placement of the three Moai erected on top of the barge has made it look a little better, it’s still not the “Majestic Moai.” So in addition to adding a few more Moai, MacDonald and Blume recognize the need to re-create the art component. This is the missing ingredient now. “We don’t want to leave it the way it is now,” said Blume. The project needs “composition and connectivity.” MacDonald and Blume plan to keep pushing until the vision is complete. “Even though our hearts were broken, we never gave up,” said Blume. “We’re not quitters, so we’re hopeful the project will have new life.”

little over a year ago, Deerfield Beach is proud to have Rapa Nui in the works. Located about 1,500 feet directly east of the Deerfield Beach International Fishing pier, it lies between the second and third reef. This reef track is the largest in the continental United States and third largest in the world. Extending from west of the Dry Tortugas in the Gulf of Mexico, the 400 linear miles of reef extends as far north as the St. Lucia Inlet in Martin County. Presently, the Rapa Nui Reef is filled with a large amount of sea life. A goliath grouper has taken up residence under the barge and a colony of tiny spiny lobster are calling “Mount Deerfield” home. There are even a few loggerhead turtles competing for space with a variety of snapper, grunts and tarpon. There is no doubt the sinking of Rapa Nui has at least created a new habitat. This will pay tremendous dividends in the future for the marine environment. And the site is in a prime location, easily accessible by boat, situated between the Boca Raton and Hillsboro Inlet. Because it’s lying in 65 feet of water, it’s a dive that any open water certified diver can visit. With the top of the barge and “Mount Deerfield” in 50 feet of water, skilled free divers can also enjoy the plunge. Yet Banks says it still needs something more. By the end of summer, Banks hopes there will be additional limestone

A Tour of Isle Casino’s Fantastical Culinary World BY DANIELLE CHARBONNEAU

T

aking the behind-the-scenes tour of Isle Casino’s culinary world with Executive Chef Aaron Andryka made me feel a lot like Dorothy dropping into Oz or Charlie into the chocolate factory. My stomach grew giddy, my eyes widened and my jaw dropped in awe of the complex inner-workings of a casino that operates two enormous kitchens, four full-service restaurants (including a steakhouse called Farradday’s, an Italian restaurant called Bragozzo, a farm-to-table buffet called Farmer’s Pick and a Jewish delicatessen called Myron’s), plus a shiny, custom food truck dubbed the

Lone Wolf, a quick-service Italian cafe and a coffee shop with a rainbow of homemade baked goods (guaranteed to bring out your inner fat kid). There were no Oompa Loompas or flying monkeys, but there was a flurry of sights, smells and sounds equally mesmerizing. There were the complimentary bowls of juicy, kosher pickles at Myron’s; an aquarium with live Maine lobsters in the open-concept kitchen at Farradday’s; homemade gnocchi, a crank-wheeled rotisserie and gargantuan abstract chandeliers made of red, blown glass at Bragozzo (which looked a lot like giant fusilli pasta noodles intertwined and suspended from the ceiling). There were trays of asteroid-sized apple-cinnamon muffins fresh from the oven in the bakery. Then there was Farmer’s Pick buffet—a world in and of itself. “There are little pockets of hidden jewels here,” said Jennifer Swope, Marketing Director of Operations at Isle Casino, “I think we have

something that’s distinct and original. I think there’s something for everybody here.” Farmer’s Pick is an à la minute style buffet with dishes inspired from around the world, each made from local ingredients (some as local as just behind the casino where Isle operates a two-and-a-half acre, seasonal farm). The buffet features a sushi station, made-to-order Asian wok, pizza window, mouth-watering dessert counter and Mexican bar replete with a lineup of about two dozen local Florida hot sauces, each with quirky names, a few with hand-drawn Iron Maiden art. (The hot sauce bar was Andyka’s idea, by the way). For the Pompano Fine Food & Wine Festival, Farmer’s Pick will be bringing single-serving Creme Brûlée with Drunken Berries: Blackberries, raspberries and blueberries are tossed in sugar, then cooked down with Grand Marnier. The sweet-n-tart drunken berries go perfectly with the creaminess of the brûlée and the crispness of caramelized sugar. Bragozzo is an Italian eatery that takes a fresh approach to old world, Italian classics. Bragozzo boasts a wood-fired grill and serves several homemade pasta options including fettuccine and gnocchi. On the edge of the kitchen there is a long bar where guests can admire the chefs in action. Andyka recommends sitting there at least once as the chef will often pass over samples of piping-hot, homemade ravioli. For the Pompano Fine Food & Wine Festival, Bragozzo will bring pasta e fagioli, a classic Italian soup made with ditalini pasta, mirepoix pancetta, chicken stock, white kidney beans, tomato and shaved Parmesan cheese. From the outside, Farradday’s (Isle’s upscale steakhouse) looks like a chic cocktail lounge. A round exterior wall made of floor-to-ceiling glass gives voyeuristic outsiders a look into the exclusive lounge, where a classy bar boasts high ceilings, a decorative stone wall, back-lit bottles and intimate, low cocktail rounds. Once one walks through the lounge to the dining room, however, the mood shifts. The dining room is lined with cavernous, private booths. Dim lighting and an impressive wine wall bring elegance to the space. Juicy steaks are Farradday’s specialty, but the menu also features a host of chicken and seafood options. For the Pompano Fine Food & Wine Festival, Farradday’s will be serving Mussels Ravigote—green lipped mussels on the half shell topped with a Ravigote sauce made of capers, gherkins, tarragon and parsley. I grew up eating all kinds of crazy stuff. It would be like, ‘oh what did you have for dinner?’ ‘Oh we had calves brains.’ —Chef Oliver Saucy

I

t has probably been said before, but celebrity Chef Oliver Saucy has the perfect name. His stunning culinary creations are absolutely “saucy” — they’re creative, colorful, multi-cultural and have an emphasis on local seafood and produce. Whether it’s Atlantic hogfish snapper, fruits and citruses from the tropics, Creole spices from New Orleans, zesty Cuban herbs or chilies from Mexico, Chef Saucy draws inspiration from South Florida’s surrounding cultures. By letting ingredients drive the plate, Chef Saucy keeps things fresh for both his guests as diners, and himself as a longtime chef. His creativity, however, can never be overshadowed by proper technique. “At the end of the day, if you can’t put it all together with the French and Mediterranean roots I grew up studying, it just doesn’t work,” said Saucy, “One culture, one plate. We don’t want to get too confusing or it takes your red wine drinker right off the table. That’s the bread and butter for us–the red wine drinker.” This blend of classic technique and innovative ideas is what Chef Saucy and Café Maxx is known for. It has made Café Maxx a Pompano Beach culinary destination for almost three decades. Saucy has been at the helm for almost as long. In 1988, Saucy co-purchased Café Maxx with the restaurant’s general manager Darrel Broek. The dynamic duo has run the restaurant ever since. Broek’s hospitable charm welcomes guests in the front of the house, while Saucy’s creations make them salivate at the table. To keep things balanced, Chef Saucy breaks down the menu into thirds: one third is classic, so regulars know what to expect; another third is standard proteins prepared with seasonal ingredients; and the last is where Chef Saucy gets to be creative. “The other third is whatever exciting thing we can get our hands on — whatever we feel like doing,” said Saucy. “We try to get the best available ingredients all the time.” Sometimes those ingredients can include fresh fish straight from the boat. Other times a vibrant produce item from a local farmer, or a fine cut of meat. Saucy is proud to carry local ingredients. He showcases his proteins in a display case on the edge of the dining room, which he dubs the “Raw Buffet.” After almost three decades of cooking, Saucy still exudes passion. Perhaps it runs thick in his blood; He learned his first fundamental cooking techniques watching his father in action

as the Executive Chef in a resort kitchen nestled in the back of a medieval German Castle in the Black Forest region of New York. “I grew up eating all kinds of crazy stuff. It would be like, ‘oh what did you have for dinner?’ ‘Oh, we had calves brains’,” said Saucy laughing. As a young adult, Saucy studied at the prestigious Culinary Institute of America (CIA) in Hyde Park where his father also taught for 28 years. Saucy’s son worked in the Café Maxx kitchen for two years and is now studying at CIA and working at a highend restaurant in Manhattan called Gotham Bar & Grill. Saucy has also passed on his skills to non-relatives. For the 20th Anniversary of Café Maxx, 26 of Saucy’s protégés, who now run kitchens all over the country, came to congratulate him and thank him for his mentorship. For over 20 years Saucy has also been teaching cooking courses at Café Maxx during the summer months when the restaurant slows. “The biggest class we had was 99 people. Holy moly,” said Saucy. At the end of Saucy’s classes — which include topics like grilling meats, cooking lobster, or Mediterranean technique — Saucy serves a four to five course dinner, plus dessert with the recipes he taught. “The classes bring a lot of energy in here. It’s a lot of fun,” said Saucy. “It’s relationship building.” So what’s next for Chef Saucy and Café Maxx? “You know I think it’s just to keep the focus on making quality food,” said Saucy. “That never goes out of style.” SEPTEMBER 2016 | LIGHTHOUSE POINT

P

apa Hughie and his family, the Ganters, have been in the seafood business for four decades. August marks both the 40-year anniversary of Papa Hughie’s beloved restaurant Seafood World, and Papa’s 75th Birthday. Seafood World has become a Lighthouse Point institution — a must-visit for tourists, a regular destination for locals and a hot-spot for celebrity appearances through the years (including chef Gordon Ramsay, Priscilla Presley, Steve Wynn and Muhammad Ali). In 1976 Hugh (“Papa”) and his wife Joy Ganter opened Seafood World at a time when seafood was rarely celebrated as a culinary ingredient. Papa Hughie jokes that at the time, the only people who consumed seafood were Catholics on Fridays. “People didn’t like or know enough about seafood. It was very tough for us at first,” said Papa, who had been a pilot before running Seafood World. Papa had been transporting wholesale products, including seafood, between the Bahamian islands and the mainland, and had supplied the original restaurant where Seafood World now stands. When the original owner racked up some debt with Papa, he offered Papa the restaurant as payment. Papa was reluctant at first. “I didn’t want to do it, but we decided to stick it out. We ran it as a family with four to five tables,” recalled Papa. When his plane crashed shortly after acquiring the restaurant (which was originally called Fishtails & Seafood World), the Ganter family was left with little choice but to make the restaurant their bread and butter. After having spent many years in the Bahamas, Papa and

Papa’s Raw Bar & Seafood World

Joy had a clear idea of the kind of restaurant they wanted — one where guests could enjoy the freshest of seafood in a relaxed, Caribbean-esque and friendly atmosphere where recipes were simple and tasteful. They wanted the sauces and spices to enhance, not overpower, the seafood. It was this original vision that has carried the business for four decades and spawned a second family restaurant next door, Papa’s Raw Bar, which was opened by Papa and Joy’s son Troy about a year-and-a-half ago. Troy’s half-brother Christopher, a local fisherman and ocean enthusiast, works to supply both restaurants with seafood, while Troy operates the front-of-the-house at the Raw Bar. “I’m a huge foodie and I cook,” said Troy, “but I’d rather be in the front of the house. I love entertaining.” Troy, now 36, started busing tables at Seafood World when he was just 13. He went to college and swore he wouldn’t follow in the family footsteps. Instead, he started a wholesale operation, Best Stone Crabs, supplying fish, shellfish and signature salads to restaurants locally and throughout the Caribbean. Fate, however, had another plan. When a spot opened up in the strip next to Seafood World, Troy couldn’t resist. He bought the space and turned it in to an entertainment venue, raw bar and extension of the family business. The decor is an ode to Lighthouse Point pride — T-shirts from local businesses are pinned to the ceiling, photographs of regular customers line the walls and nautical souvenirs give the bar a welcoming, festive vibe. Local bands play live music regularly, and the menu is fun, with dishes such as Papa’s Gone Hibachi, Stonies by Billy Paradise and Fast Eddie’s Fried Rice, Papa’s Raw Bar boasts sushi and hibachi “better than Benihana,” said Papa Hughie. The bar sells more than 110 beers and 65 wines, features the Bimini Room, which is quickly becoming the go-to place for parties, and maintains a family-style theater. Troy also has his eyes on the lookout for a property to open a Latin fusion location in Pompano Beach and hopes to start an “Eat, Drink & Be Local” website. For the Pompano Beach Fine Food & Wine Festival, Papa’s Raw Bar will be bringing their famous sushi boat, hibachi fried rice and some sweet chili shrimp.

Hugh’s Culinary will be bringing tuna poke on cucumber slices garnished with fresh scallions and sesame seeds.

JODI’S CUPCAKES AND MORE

KILWIN’S LAUDERDALE-BY-THE-SEA

Step back in time to Florida the way you remember it as a child: great beaches, cozy hotels, great restaurants and, of course, Kilwins. Kilwin’s is undeniably a boardwalk classic. Just west of the Anglin Fishing pier, it’s a hop, skip and a jump from the beach, which makes it the perfect place to enjoy a cold treat. Their Original Recipe ice cream is homemade and creamy. The display counter rivals Willy Wonka’s, filled with the dipped, decadent and chocolate-covered. A cheerful staff will welcome you with a smile and offer you free samples of fudge and ice cream. Kilwin’s will be bringing berries, pretzels and marshmallows all dipped in chocolate.

LA CUCINA CAFÉ, MARKET & RISTORANTE

La Cucina is an authentic Italian Restaurant and market with dish names that roll off the tongue in native Italian—dishes such as “Fiocchi di ricotta e pera con burro e salvia” (purse stuffed ricotta and pear pasta in a sage butter sauce), and “Pappardelle con funghi” (homemade pappardelle with mushrooms). The menu changes every few days and features a wide selection of items, including fresh pasta, seafood, meats, cheeses, salads, soups and pizza. Everything is made fresh daily.

McCOY’S OCEANFRONT

McCoy’s is an oceanfront secret gem, located in the Pompano Beach Marriott. The fine dining restaurant is known for its contemporary preparations of seasonal, local ingredients and Florida Seafood. The setting is casual, with both indoor, outdoor and poolside seating. McCoy’s will be bringing festival goers some seasonal seafood.

THE MELTING POT

If creamy cheeses and melted chocolate sound like your kind of meal, grab a few friends and meet for cocktails and fondue. Meats, breads and seafood dipped in creamy sauces and artisan cheeses are savory options; while fruits, angel food cake and marshmallows dipped in melted chocolate satisfy the sweet tooth. For the festival, the Melting Pot will be bringing chocolate fondue.

OCEANS 234

Recently renovated, Oceans 234 is even more stunning with its open-air patio steps from

the sand and location on the Deerfield Beach Pier boardwalk. While the views are tough to beat, so is the food. Contemporary American cuisine with an emphasis on creative seafood (dishes such as lobster Benedict, a blackenedsnapper Rueben and diver scallops with truffled wild mushroom risotto), give guests a unique South Floridian dining experience. Each dish is artistically presented with pops of color and interesting plating. Restaurateur and entrepreneur Danielle Rosse runs a tight and exquisite ship at Oceans 234, so the service is consistently above-par and hospitable. Oceans 234 is a local favorite and tourist’s dream. Oceans 234 will be bringing a chicken quinoa salad.

TITO’S HANDMADE VODKA

Serving breakfast, lunch, and dinner, guests can enjoy dining at the Terrace 555 Restaurant & Bar which is a casual, comfortable restaurant overlooking a sunlit atrium and waterfall.

Produced in Austin at Texas’ oldest legal distillery, each batch of vodka is made the old-fashioned way—in pot stills. When owner Tito Beveridge entered the business, he focused on flavored vodkas. When store owners shot the flavors down, Tito set out to make the smoothest, straight vodka he could. He researched distillery techniques using old photographs of moonshiners. “From looking at all those photos I kind of just built a still that looked kind of like those stills,” Beveridge writes. “And then just kind of started cooking in that and just trial and error’d. I just kept messing with it until I got to where people liked my vodka better than the other stuff you could buy at the time. I basically kept working at it and working at it.” Tito’s will be bringing their signature vodka both straight over ice, and as a mixed drink.

WOODHOUSE

AND A

A

BY DANIELLE CHARBONNEAU

The 2016 Pompano Fine Food & Wine Festival will benefit both the Pompano Beach Chamber of Commerce and Woodhouse, Inc., a nonprofit dedicated to helping adults with severe forms of Cerebral Palsy. The history of Woodhouse, Inc. is that of a dedicated, loving mother, desperate to help her adult son Irving who was struggling with Cerebral Palsy, a debilitating neurological disorder that affects movement, balance and posture. In 1975, Broward County was devoid of facilities able to properly help him. Violet Woodhouse knew there were other families and individuals in the same position, so with the help of the First Presbyterian Church in Pompano Beach (the Pink

80

LIGHTHOUSE POINT

Church), Violet took it upon herself to create a place where adults with Cerebral Palsy could live with dignity. She opened a comfortable home in Dania Beach for her son and others like him, providing a home with professional support and a sense of community. Forty-one years later, Woodhouse Inc. still houses three of the home’s original residents. Woodhouse’s first employee, Marsha Linville, still serves as the organization’s director with no intention

of retiring. Woodhouse, Inc. now has three facilities: Woodhouse I—the original home in Dania Beach, which houses 15 adults; Woodhouse II—a second residential facility in Pompano Beach, which houses 24 adults; and the Truman Worden Training Center, a day center where Woodhouse residents can go to learn skills outside their home environments. Collectively, Woodhouse is a desperately-needed home and family. “About two-thirds of our residents were abandoned as children,” said Woodhouse CEO, Randall Bishop. “Only a lucky third have any family involvement.” Some of Woodhouse’s residents suffered horrendous abuse before making it to Woodhouse. The Pompano Beach facility, Woodhouse II, was opened by Linville in 1983 in response to the Federal closure of a huge state institution when a series of atrocities came to light including abuse, sexual abuse, gross medical neglect and purposeful starvation of those living there. “Ms. Linville hand selected 24 beautiful people, most of whom had been abandoned at the institution when they were small children and who had been ‘nutritionally deprived’ there,” said Bishop. “She brought them to Pompano Beach to begin a new life and, due to the exceptionally good care they received, some are still with us today.” While much societal progress has been made, Woodhouse and the Cerebral Palsy community still face many struggles. “The challenges we face today are essentially the same as they have been from the beginning, which is the people we serve are vulnerable and undervalued by some in society who see them as having no worth,” said Bishop. “But our residents are people who love, worry, like good food and good music, and

want dignity and respect; just like the rest of us.” People have often been taught not to stare, “but that can make our residents feel invisible,” said Bishop. This is why Woodhouse makes a concerted effort to bring their residents into the community to go out to eat or participate in activities. Breaking the social barriers and encouraging interaction is important to re-humanizing people who have often been kept in the shadows. “Sometimes attention helps more to someone who has been invisible,” said Bishop. “They would love for someone to come and play a guitar, read a story, paint a mural, build a gazebo, grow some tomatoes, or simply hold their hand and smile.” Woodhouse welcomes volunteers to come visit Woodhouse. He also encourages people to educate themselves on the issues as the organization is often at the whim of public dollars. “There are current state officials who refer to our folks in writing as ‘non-productive citizens’ and have directed state agencies to only provide enough funding to ‘minimally sustain life.’ We at Woodhouse humbly disagree with those elected leaders,” said Bishop. As Gandhi said, “A nation’s greatness is measured by how it treats its weakest members.”

Federal Highway, 954-785-2227 $ Calypso Restaurant and Raw Bar. CARIBBEAN Calypso is one of those hidden places locals love—but try to keep it a secret for fear of not being able to get a table. With its Caribbean theme, the place isn’t fancy, but they serve inspired West Indian cuisine. Start with the Jamaican fish cakes (called stamp and go on the menu) —a combination of salt cod fish, onions, sweet red and green peppers with a hint of curry seasoning and deep fried. To remind yourself why stuffed mushrooms were once the star of the appetizer world, try the version at Calypso—fresh mushrooms baked with a seafood stuffing—with real seafood— not seafood inspired breadcrumbs. Since it is a Caribbean place, you will find plenty of conch on the menu, from chowder to fritters to a conch salad—an old Bahamian recipe with fresh vegetables and citrus juice. They serve a few great cutters‚ (island speak for sandwich) and our favorite is the namesake Calypso cutter which is sautéed shrimp and mushrooms with garlic butter, and cheddar cheese stuffed into a hollowed out kaiser roll. You can also bring your own fresh caught fish and they will prepare it to your liking. If you’re a seafood fan, you must put Calypso on your restaurant rotation‚ but not to worry, they serve a great burger and have plenty of chicken, pork and lamb options too. 1299 S. GERMAN Sprechen sie Deutsch? You don’t find too many authentic German restaurants around town. So when you’re looking for a change in your restaurant rotation, take a trip back to the old country at Checkers Old Munchen. The restaurant’s exposed wood framing is reminiscent of the German half-timbered architectural style and the walls are lined with classic German beer steins. For a traditional German meal, try the the wienerschnitzel—it’s devine—a lightly breaded veal cutlet (or pork) sautéed in lemon butter and topped with homemade brown gravy. The entrées are served with your choice of two side dishes. The spaetzle (German noodles) are a real homemade treat and not to be missed—throw a little of that brown gravy on them and they could be a meal unto themselves. The red cabbage is both classically sweet and sour and there are other options too including potato dumplings, potato salad and even hot potato salad. As we looked around, we got the feeling that most of the patrons are returning customers—which of course is a great sign. And the next time we get a hankering for some schnitzel, we

DiningOUT Little Havana 721 N. FEDERAL HIGHWAY, DEERFIELD BEACH 954-427-6000 $$

review

This busy spot in Deerfield Beach offers consistently great Cuban food for great prices. On any given night, expect to wait for a table, which is always a good sign. This is when the mojitos come in handy. They offer the classic lime and mint mojito, plus several other flavors. We usually stick to the classics when it comes to cocktails, but were pleasantly surprised by the pineapple. It was not too sweet, which is often the case when bartenders get creative. You’ll find all of your favorite Cuban classics from the ubiquitous Cuban sandwich, to more inventive dishes such as Shrimp Havana. We started with a few appetizers. The beef empanada had a tender, flaky dough wrapped around seasoned ground beef packed with flavor. The potato balls are perfectly-shaped, small spheres of soft and creamy potatoes with a little surprise of ground ham in the center. We also tried the ham croquettes, which were super crispy on the outside and soft on the inside. All of these fried treats arrived at our table piping hot, which is critical when indulging in fried food. All of the entrées we ordered were served with rice, beans and fried plantains. Let’s start with the plantains—seriously, we could make a meal out of these. Perhaps they have some sort of “ripe-o-meter” back in the kitchen, letting the cooks know when to serve the plantains. They were sweet and soft and the perfect accompaniment to every bite. The little Havana steak is tender and juicy, packed full of flavor. It is served with a chimichurri sauce that is spectacular and adds the perfect bit of zesty tang to each bite. When we packed up our leftovers, we made sure to get a small container of that divine condiment. We also ordered the pork churrasco—because we have been to Little Havana several times and we knew the pork was also served with the heavenly sauce. For a change of pace, we also tried the shrimp Havana, which is decadent but worth the splurge. The shrimp are bathed in s creamy lobster sauce perfect for slathering over the rice. If you’re looking for a great Cuban sandwich, theirs is as good as it gets and a great lunch option. Speaking of lunch, they offer great lunch specials starting at just $5.99—can’t beat that.

The dish is reminiscent of the classic Greek dish moussaka, but the cool yogurt sauce replaces the bechemel. Finish off with the Greek yogurt mousse, a lovely lightly sweetened cloud with a hint of cocoa and a strawberry sauce to compliment. Table 2201 has a menu full of your Greek favorites without all of the hooplah. So if you are looking for a genuine Greek dinner without having to dance on tables and yell “opa”—not that there’s anything wrong with that—Table 2201 is a good choice. 2201 E. review

There are two kinds of people in the world: people who worship at the alter of blue cheese, and those who don’t care for the cultured treat. To the first group: we would advise you to have dinner at Gianni’s. Each dinner is served with a plentiful basket of garlic rolls and a house salad, which is a romaine heart wedge served with a tangy balsamic vinaigrette, topped with a generous portion of blue cheese. For the latter group: Gianni’s will gladly hold the blue cheese or serve it on the side. Entering Gianni’s is like stepping into a Martin Scorsese film. The place is old school. You won’t find any hipster appetizers or trendy entreés. In fact, if you’re tired of a world filled with kale, then Gianni’s is the perfect antidote. The menu is full of everyone’s favorite mainstream Italian meals, from traditional eggplant rollatini, to their popular Osso Buco. The last time we were there we tried two of their specials for the evening (after devouring our salads and garlic rolls). The first was a piece of Florida grouper served in a fresh and chunky tomato sauce with clams and mussels, too. The other can best be described as a chicken asteroid—boneless chicken breast pounded thin, then rolled around spinach, zucchini and cheese. The chicken’s perfectly-round sphere was almost as impressive as the taste. Naturally the entreés are served with a side of spaghetti. The portions are generous and they are happy to wrap up your leftovers. The staff are notably professional, courteous and attentive, which makes the whole experience that much more fun. Mangiere!
