An Honorary Fireman Lighthouse Point firefighters recently paid a surprise visit to 3-year-old Lighthouse Point resident Luke Weatherall to present him with some unique gifts. The six-member crew arrived at Luke’s home in a fire engine and two rescue trucks. Luke and his mother Angela joined the firefighters in the driveway to discover his gifts — his very own fireman's locker and gear. In addition, Luke was given a framed certificate making him an honorary junior firefighter by the Lighthouse Point Firefighters Benevolent Association. Luke was diagnosed with stage 4 high-risk neuroblastoma (a type of cancer that forms in certain types of nerve tissue) in October 2018 at 22 months old. He was first treated at St. Jude Children’s Research Hospital in Memphis, Tennessee for a year, at which time he received chemotherapy, immunotherapy, a stem cell transplant and radiation. He was clear and finished treatment in November 2019, and then relapsed this past March. Now he is receiving treatment at Memorial Sloan Kettering Cancer Center in New York, and travels back and forth monthly with his dad, Justin. Luke recently completed his second round of immunotherapy there. “We wanted to do something

special for him,” said Firefighter Paramedic Mike Brown, president of the Lighthouse Point Firefighters Benevolent Association. Brown arranged for a fire suit to be made in Luke’s size. It resembles the fire gear worn by the Lighthouse Point firefighters, and includes pants, overalls, boots, a helmet, and

a coat with his name printed on the back. Brown and a few other members of the Lighthouse Point Firefighters Benevolent Association built a locker for Luke to keep his gear in, just like the firefighters do, and even painted “Luke” across the top. They also gave Luke some items >>>

An Honorary Fireman <<< that simulate firefighters’ equipment, such as a little toy ax and a fire extinguisher. “We were making him one of our own,” said Brown, “and letting him know that he’s’ one of the ones we look out for as a benevolent.” The locker and gear are now in Luke’s bedroom. "He loves it," said Angela Weatherall. “He goes around ‘spraying’ everything with the fire extinguisher.” Angela said what made it even more personal was that her father was a New York City firefighter for many years and “really loved his job.” “It means a lot to us that our Lighthouse Point firefighters have come out to support Luke and his battle,” said Angela. In between treatments, Luke is “a happy toddler enjoying life,” she said. He loves playing with his two big sisters and swimming in the pool. Brown and the other Lighthouse Point firefighters first learned about Luke from Lighthouse Point City Commissioner Sandy Johnson, who lives a few doors down from Luke and his family. Last December, Johnson asked the firefighters if they could make an appearance

at a Christmas block party that Luke would be attending. He had just returned home from St. Jude's Children's Hospital. The firefighters came by the party in a fire truck, and afterward, Brown contacted Johnson and told her the benevolent wanted to do something special for Luke, so Johnson put Brown in touch with Luke's mother. “I thought it was great that the guys came out for the party,” said Johnson, “but they didn’t just want to make it a one-time thing. They were truly interested and wanted to keep following through.” Johnson said Brown checked back with her frequently to inquire about how Luke was doing. When Brown spoke to Angela Weatherall, they discussed ideas of what the benevolent could do for Luke, such as setting up a birthday party. Since Luke’s birthday wasn’t until November, Brown came up with idea of making him an honorary firefighter. Most fire departments are set up with some type of a charitable organization, such as a benevolent. The Lighthouse Point Firefighters Benevolent is set up through the firefighters’ union, and every
Lighthouse Point firefighter is a member of the benevolent. They contribute a certain amount to the benevolent from each paycheck. The benevolent is also funded through donations. Often, residents want to give money as a way of saying thank you, but since firefighters aren't allowed to accept money for any deeds that they do, the money goes to the benevolent. The benevolent also raises money through various activities. With that money, the benevolent can do things to give back to the community, said Brown, and also help other firefighters in the area who are experiencing hardships, such as injuries on the job or a family member who is sick. "We are involved with the community and giving back because our residents show a lot of love and appreciation for us," said Brown. Brown said the Lighthouse Point Firefighters Benevolent plans to do something for Luke on his birthday in November. “Luke’s pretty special to all of us here,” said Brown, “so if there’s anything we can do, we’re there to help make his days a little brighter.” Y

Papamigos is Coming to Old Town this Month Papamigos, a new restaurant being planned for the Old Town district of Pompano Beach, is expected to open in the summer of 2021, but in the meantime, starting this month, Lauren Grosso and Brian Faeth, the chef owner-operators, will be setting up a food truck next to the location of their future restaurant. The food truck mobile kitchen will operate in Old Town until the Papamigos restaurant opens in the currently vacant space at 44 NE First St. The restaurant will also occupy an adjacent patio area overlooking the Civic Plaza fountain. The permitting process is underway for the buildout of the restaurant and patio space. Grosso and Faeth expect to have the food truck up and running no later than the second week of July, but it could start operating as early as the first week, they said. It will be set up in the parking lot fronting Atlantic Boulevard, just south of the restaurant space. The Papamigos mantra will be: ‘Your local joint to eat, drink and be loco,’ and the restaurant will be highlighting ‘tacos, sushi, tequila and good vibes.’ In keeping with the theme of the restaurant, the Papamigos food truck will specialize in “mexi-crasian” street food, including sushi and tacos. “We’re really excited to meet the locals and be part of the redevelopment of Old Town Pompano,” said Grosso and Faeth. “We can’t wait to share the exciting new flavors of Papamigos.” The Papamigos food truck menu won’t be as extensive as the restaurant menu, but “it’s a taste of what’s to come,” said Faeth.

in Lighthouse Point. Grosso and Faeth, who are engaged to be married, will be working side by side at their new venture in Old Town, an area that is being developed as an arts and entertainment district. “Brian and I are a great team,” said Grosso. “We work very seamlessly, and that’s definitely an important element.” "We're excited that they're coming," said Kimberly Vazquez, project manager for the Pompano
The food truck will be operating under COVID-19 safety protocols, including social distancing and sanitizing. In the beginning, the food truck will be open only for dinner, from 4pm until 9pm or 10pm. Lunch will likely be served once some outdoor seating is offered. Within the next few months, the patio area adjacent to the restaurant space will be built out with a concrete slab. The food truck will then be moved onto the
slab, alongside the south end of the building, and some tables and chairs will be added, including in the fountain area. Papamigos is already offering catering and is taking orders, including for July 4. Once the restaurant opens, the food truck will be removed from the site and used for catering and other events. Papamigos is a concept of Grosso’s cousin, Troy Ganter, whose family owns Papa’s Raw Bar and Papa’s Fresh Market (originally called Papa Hughie’s Seafood World)

Pompano Beach Gets New State-Of-The-Art Lifeguard Towers
Eight colorful, state-of-the-art lifeguard towers have been installed on the city’s beach. They replaced the eight standard white fiberglass towers that had stood there for years. The new lifeguard towers are higher than the old ones and have walk-around balconies, which gives the lifeguards better viewing capabilities of the ocean and the beach. The old lifeguard towers would get very hot inside, said Pompano Beach Fire Chief John Jurgle, but the new towers have tinted glass and windows that open to provide better ventilation. During the summer months, the lifeguards work 10-hour shifts and typically stay in the towers for three to fou hours at a time. “That’s their office,” said Jurgle. “That’s where they spend the majority of their day. If it’s

uncomfortable, it makes it difficult for them to do their job.” Jurgle said the new towers are much more comfortable and accommodating, so the lifeguards “can stay focused and protect people’s lives while they’re in the water.” The new towers are made of more durable materials and have safer access points for the lifeguards to get up into the tower, as well as get down from the tower to perform a rescue. The interior area where the lifeguard sits is larger, so on days when the beach is exceptionally crowded, such as holidays, there’s enough room to put two lifeguards in a tower, if necessary. “You could absolutely not do that in the old ones,” said Jurgle. In addition, each lifeguard tower has storage space, unlike the old

towers. The lifeguards can securely store their rescue boards and other lifesaving equipment directly under their towers, so when they arrive in the morning, everything they need is right there. Before, all the equipment had to be taken out to the towers every day from the ocean rescue building. “It’s a much more efficient way of opening up the beach in the morning,” said Jurgle. There are 17 full-time lifeguards, and about 20 to 25 part-time lifeguards employed at any one time. One of the most important features of the new towers is that, in addition to a number on the side of each one, there is also a sea life picture – such as a pelican, turtle or fish – which is not just a decoration, but serves a safety purpose, as does the color scheme of the towers. One of the situations lifeguards

Pompano Beach Fishing Pier Now Open for Fishing Fishing is now allowed on the Fisher Family Pier, which opened for sightseeing only on May 18. While there is currently no charge for pedestrians, there is a $6 fee for fishing. Anglers are also eligible for discounted parking at the Pier Parking Garage. Parking passes can be validated by the pier attendant, which will allow for all day parking at the garage for a flat $5 rate. Free admission for sightseers will end on July 19. Starting July 20, a $2 per person per day fee will be charged
for pedestrians. Annual $20 family sightseeing passes will also go on sale after July 19. The city is also working on creating an annual fishing pass. According to Pompano Beach spokesperson Sandra King, they “don’t know when it will be introduced, or how much it will cost. We anticipate developing a recommendation to the city manager in a few months after we’ve had a chance to analyze attendance and costs.”
The pier is open every day from 7am to 10 pm. Currently, only 200 people are allowed on the pier at one time, due to the coronavirus pandemic. Visitors are required to wear facial coverings and practice social distancing. Amenities on the new $11.5 million pier include shade structures, benches, marine-related artwork, Wi-Fi, and an underwater camera for watching fish. Y — Marie Puleo and Jeff Levine

Happy Snaps Color The Lighthouse
Although the coronavirus lockdown has interrupted our daily routines, it has given us a chance to spend more time at home with our families. This month, we wanted to give our readers a fun, stress-free activity while social distancing at home. We asked our readers to color in the cover and post a photo of their artwork on social media with the hashtag #colorthelighthouse. When Britt Lanier, a member of the Lighthouse Point community, received his Lighthouse Point magazine, he thought this would be perfect for the fathers and daughters of the Princess Creek Tribe. Britt and his daughter, Emory, are members of the YMCA Indian Princess program, which is a father-daughter group specifically intended for fathers and their daughters to spend more quality time together. The Creek Tribe is mostly from Northeast Broward, Alexa and roughly 30 families live in Lighthouse Point. “The purpose of the program is to spend more time with our daughters and COVID-19 has made it difficult for us to get together and plan activities,” said Britt. “When I saw the Lighthouse Point May cover, I thought, wow! This would be fun to share with the tribe — what a great idea.” The tribe loved the idea and created a fun social distancing project with coloring the lighthouse. The princesses pre-colored their lighthouses and then shared their “Masterpiece Creations” with the group via a Zoom meeting. Emory was so excited to color the lighthouse with her father and share her artwork with the other princesses. “Overall it was a really fun project and the group enjoyed both coloring and getting together to share,” said Britt. “Thank you for creating something interactive and fun in these trying times.”

Personal Development
Do you have Fear or Faith? BY CRAIG HALEY WE ARE LIVING IN UNCERTAIN TIMES TO SAY THE LEAST. MANY PEOPLE ARE FEARFUL OF THEIR JOBS, INCOME, BUSINESSES AND MORE. WE TEND TO FEAR THE UNKNOWN. In times like these, fear is running rampant, when, in reality, we need faith. We need faith in our abilities, faith in our team, and faith in the fact that things will work out.
I want to share a story with you that illustrates the power of faith. FAITH in my book stands for Fully Anticipating It To Happen. A general was about to lead his troops into battle. Before they attacked, he had a meeting with his officers to go over the game plan for the fight. In the middle of the meeting, one of the officers spoke up and shared his disapproval. He said, "None of this really matters. The gods determine the outcome of the battle. No matter what we do or how much we prepare, it doesn’t matter. If we are supposed to win, we will. If we are not supposed to win, we will not. It’s that simple.” The general listened carefully and responded. "Let’s test your theory. Let’s flip this coin. If the coin lands on heads, we will win. If it lands on tails, we will lose. It's in the hands of the gods." The general flipped the coin, and it came up heads. The officers

were relieved and convinced they would succeed. They went into the battle with complete confidence. They fought courageously, took chances, and with total dominance, they won. After the battle, the general called a meeting to celebrate with the officers. They were laughing, cheering, and reminiscing about the success they had on the battlefield. Then the officer who spoke up earlier, spoke up again. He said, "I told you. The game plan you created and the strategy you laid out did not really matter. We were destined to win, and we did.” The general smiled and paused. Then he responded, "You all fought like incredible warriors. You fought with confidence, you took chances, and you crushed the enemy. However, it was not as you think. When you flipped the coin, you did not realize something." He handed the coin to the officer, revealing that it had two heads. Then the general concluded, "You didn't win because the gods deemed you to. You won the battle because you had FAITH you were going to win. You had FAITH in your abilities to lead and fight. You confidently took chances, and you were ready for whatever happened. You had 100% confidence you were going to win, and you did. Congratulations!” The officers were shocked, and they got the message. In life, we all deal with FUD's, which are Fears, Uncertainties, and Doubts. It is natural and normal. However, when we have FAITH that things will work out, we carry a confidence in us that makes a great difference. We act with an expectation things will work. We take chances knowing that it will be OK. There are no guarantees; however, we can stack the odds in our favor when we have faith. When we Fully Anticipate It To Happen. I wish you success, happiness and abundance. Y Master Shihan Craig Haley is the Seventh Degree Black Belt instructor at Elite Force Martial Arts, eliteforcemartialarts.com.

Tidbits & Trivia
Quarantinis and More BY JIM TERLIZZI
HAVING BEEN SELF-QUARANTINED FOR THE BETTER PART OF THREE MONTHS, I HAVE FOUND LITTLE TO DO OTHER THAN TO IMBIBE ADULT BEVERAGES. ERGO, IT SEEMS A BOOZE UPDATE IS APPROPRIATE. As I was not able to shop for myself and was reluctant to ask my surrogate shopper to risk additional exposure in liquor stores, I greeted with alacrity the news that alcohol vending machines are on the horizon in Florida. A Coral Gables company has cleared significant hurdles and may soon be installing beer and wine vending machines in Florida condominium buildings. Finally, a really good reason to own a condo. I bring this to your attention because help is needed. The Florida Beer Wholesalers Association opposes this idea. Please flood this association with emails that unless they back off, you will switch to wine. While alcohol vending machines may seem a bit bizarre, there are more arcane rules relating to booze elsewhere in the country. For example, in Utah, restaurants that serve alcohol must follow stringent rules, the weirdest of which is: when making drinks, servers must hide behind a partition so that customers cannot see the process. In its inimitable wisdom, the Utah legislature decided this would prevent underage diners from becoming inspired to drink. I don't think it works. My high school algebra teacher taught in the open and I never got the urge to become a mathematician. This law has forced some restaurants to change the route to their restrooms so that patrons could not see drinks being made as they passed by. Fortunately, it takes so long to get a drink, bathrooms may not be necessary. More recently, Utah politicians gave restaurants an option: instead of the partition, they could install a moat around the bar. For some reason, this has not caught on. Other states have some unusual rules regarding alcohol. • Oklahoma prohibits the sale of refrigerated beer with an alcohol content higher than 3.2%. It makes no mention of warm beer, so I guess that may contain any amount of alcohol. Apparently, they assume nobody in the U.S. drinks warm beer and so what if a few British visitors get stoned on the tepid brew. • Pennsylvania has a really odd rule. The state bans beer sales in stores that sell hard liquor. This makes as much sense as

banning the sale of skim milk in a store that sells whole milk. • In Alaska it is illegal to be drunk in a bar. Anywhere else is OK .It is also a crime to feed alcohol to a moose. Common sense should dictate it is not a good idea to have a 1,200-pound antler-topped animal as a drinking buddy. I would think this also should apply to bears, but it doesn't. Perhaps they are better able to hold their liquor. • Nevada takes it s step further. Public intoxication is legal. Casinos can ply you with free liquor making it easier to separate you from your money. • "Happy Hour" is illegal in Massachusetts. Remind me never to go there. Finally, I must credit my sister for making me aware of a popular new pandemic drink. You pour six ounces of gin and six drops of dry vermouth over ice in a shaker. Stir gently, pour into a large tumbler and add a green olive. It is called a quarantini. Y

Be Well
Are You a Morning Person? BY MARLENE R WOLF, MD, FAAFP
WHAT IS IT WITH THESE MORNING PEOPLE? BEFORE 2017, I DID NOT DO MORNINGS. ABSOLUTELY NO TALKING. IT IS UNNATURAL, UNHEALTHY, EARTH SHATTERING AND CLEARLY absurd. Mornings had mountains of unpleasant surprises and unexpected events. Daybreak was a mix of Volatile, Uncertain, Complex and Ambiguous issues. In the military, they call this a VUCA situation. My husband, who is retired military, has earned the nickname Captain Military. He thrives on VUCA situations — the options, the planning and executions. Then, it happened. I turned into a morning person. Yes, it is true. I have been a morning person since 2017. How did this happen? Divine intervention. It was 6am and a time for VUCAs galore. This specific morning was our wedding anniversary. My husband opened the blinds. Sunlight! The birds were singing! I hid my head under my pillow. Another VUCA morning was upon us. But, alas, my husband handed me a cup of coffee, smiling, wishing me a happy anniversary. A good sign. Then Captain Military barked orders. "We got the text. Get out of bed and move it! We have to get going!” A morning conversation, forbidden in our household, just started.

I was being commanded, on our anniversary, by my beloved, to move. Why on earth was he trying to rouse me and enter into the realm of my morning brain? I executed my own language of love, "Hey, Captain Military, may the &*%$ force be with you. Now leave me alone." Desperately, I needed another cup of coffee. Brain to my being — the husband is speaking to you. Involuntarily, my eyes widened and my hands shook. I must have looked like the cowardly lion, spooked by the wizard! My mouth dropped open. I felt a wetness on my chest. A roof leak or a torrential downpour in the house? No, just my cold coffee spurting out of my mouth. Breathe and keep on breathing, woman! The text was from our son. We needed to go to the hospital now! This was a real-life VUCA situation. Captain Military was in control. As I made sense of his message, my face lit up. Our daughter-in-law was just admitted to the hospital in labor! A grandson was about to be born on our anniversary morning! A tsunami of emotions drowned the VUCAs. We moved as an organized military unit, efficient, deliberate and with purpose. I now understood the military mind, turning every VUCA challenging situation into an opportunity for success. This event showed me the necessity of resetting my personal sleep-wake cycle, my circadian rhythm. I was determined to change to a morning person. I began a military-style regiment of mealtimes, morning exercise, going to bed at 10pm with lights and screens turned off. Sunlight also helped to reset my circadian rhythm to a morning person. With these changes, my mental and physical performance improved. VUCA morning stresses disappeared. Sing on, early birds. I am listening with an alert brain. I will never miss another birth of a day again. Our grandson came into this world on our wedding anniversary. And I became a morning person. The force is now with me, every morning, every day. Each morning I venture forth — obviously with a cup of coffee. Ahh, the aroma of freshly brewed coffee. The magic of coffee to be savored next month. Legal Matters
Avoid Probate on Your Home THERE ARE SEVERAL WAYS TO AVOID PROBATE ON YOUR HOME WHEN YOU DIE. IF YOU ARE SINGLE, THERE WILL BE PROBATE WHEN YOU DIE unless you choose one of the following options. If you are married and own your home together, your surviving spouse will not have probate; however, there will be probate when the second of you pass away unless one of these options is done. Let us assume that you own your home jointly with your spouse and that you have two children. Both of you desire to have your two children inherit your home equally when you both pass away. The first option would be to add the names of your two children to the deed as joint tenants with right of survivorship. This is not a good idea. It would affect your ability to claim your full homestead exemption. You lose control of your property and can only sell it if your children both agree and sign all closing documents. If you wanted to take one of the children off the deed, you would be unable to do so. If one of your children files for bankruptcy, has an adverse judgment or files for divorce, your property could be subject to liens or other legal action. Therefore, I recommend against a Deed with your children as joint tenants with right of survivorship. The second option is a life estate deed. There are two types of life estate deed: regular and enhanced (also referred to as Lady Bird). The regular life estate deed requires that your children join in any sale or other changes on the deed; therefore, you have lost control and cannot take your child’s name off the deed if you choose to do so. The enhanced life estate deed gives you the sole right to sell the property during your lifetime or make any other changes to the deed without your child’s permission. The enhanced life estate deed has precise legal language in order to be effective; therefore, do not attempt to do this on your own. Even with the enhanced life estate deed, there are risks, particularly if your child has a bankruptcy, outstanding judgment or undergoes divorce. The worst risk, however, is if God forbid, your child dies before you or with you in a common accident. Your child’s estate would then become the owner of the property once you died, which would result in probate being required. Thus, the

primary purpose of the life estate deed is not accomplished. The best way to avoid probate on your home is to do a revocable living trust. When you sign the revocable living trust agreement, you also sign a deed transferring the property to you as trustees of your trust. You are able to keep your homestead exemption, maintain complete control of the property during your lifetime and make amendments to your trust without changing the deed. There are no risks involved, since your children’s names do not appear on the deed. The only disadvantage of the Revocable Living Trust is that it will cost more money in attorney’s fees. When you discuss the options with your attorney, you should discuss the difference in fees between the revocable living trust and the enhanced life estate deed. You can then determine whether it is worth saving the money and taking the risks involved in the enhanced life estate deed. Get Psyched
Accentuate the Positive BY DR. JILL SELBACH MANY PEOPLE OUT IN THE WORLD WHO SEND POSITIVE MESSAGES HAVE PHILOSOPHIES ABOUT HOW TO BE OPTIMISTIC. THERE ARE ENTIRE SCHOOLS OF PSYCHOLOGY that research the benefits of positivity. Now is the time for us all to tap into these positive resources to escape our current realities for at least a time. With so much negativity and hate, it is essential to shift focus to positivity most of the day. Allowing our feelings about the state of the world only consume a small fraction of each day. Neil Pasricha’s website, 1000 Awesome Things and is the author of “The Book of Awesome.” He outlines the tiny little pleasures in life, like when a server gives you a free refill, warm underwear out of the dryer, or when your table gets called first to the buffet at a wedding. In this time, we sure have a new appreciation for the little things we may have taken for granted before and for many months have had no opportunity to experience.
He speaks about the three As: Attitude, Awareness and Authenticity. ATTITUDE: It is our choice to wallow or focus on the painful events, feelings or situations. We can choose to grieve and then, with new knowledge from our experience, face the future. This is choosing to move on. AWARENESS: Embrace your inner 3-year-old who views the world with awe. Seeing things for the first time and experiencing that joy. AUTHENTICITY: Being yourself and being secure in that. Following your heart leads to fulfillment.

His bottom line, “There are so many things to be happy about.” Take advantage of these moments because we have a limited time to do this. Psychologist Dan Gilbert, “the human happiness expert” talks about synthesizing happiness. Natural happiness is what happens when we get the things for which we hoped. Then, when we don’t get what we want, our brain makes it become what we want; that’s synthetic happiness. In our country, we have a strong belief that synthetic happiness is fake or subordinate. Dr. Gilbert educates us about the psychological immune system, which we all have, but some utilize it better than others. It is the capacity to synthesize happiness. To paraphrase Dr. Gilbert: Some situations lend themselves to doing this more readily than others. Our brains are equipped to visualize future choices and outcomes. However, we don’t always perfectly imagine things. The ability to change our minds and make decisions makes us happy. We believe if we have many choices, we will be happy because we will choose wisely. Although the freedom to make choices and change our minds doesn’t work well for synthetic happiness. Dr. Gilbert gives the following example: “The psychological immune system works best when we are totally stuck, when we are trapped. This is the difference between dating and marriage. You go out on a date with a guy, and he picks his nose; you don’t go out on another date. You’re married to a guy, and he picks his nose? He has a heart of gold. Don’t touch the fruitcake!” So, when our choices are limited, we find ways to be happy. It is good to have preferences to guide us. Yet, sometimes we become too focused on preferences and our desires intensify due to the unrealistic differences we perceive in our options. When our choices are limited, we seem to be happier. When our options and ambitions are unlimited, we tend to be dishonest, use others, and lose sight of what is truly important. When our fears have limits, we are intentional, reasonable and sensitive. When we have unbridled fears, we become impulsive and lacking in courage. Dr. Gilbert’s research shows us that our wishes and worries are each overblown to some degree. Yet, each of us can create the positive feelings we seek when we make behavioral choices. The choice is ours. We can choose to feel and think more positively. If anytime is the right time, it would be now. Seek out books, Ted Talks, pod casts, YouTube videos and other positive messages to keep on a positive track. Creatively Cooking
The Chicken of my Dreams PHOTO AND RECIPE BY MRS KOSSENFLOFFER ADAPTED FROM MELISSA CLARK, COOKINGNYTIMES.COM
PERUVIAN CHICKEN
Almost every Thursday night in my twenties, I had dinner with friends at a tiny hole-in-the-wall restaurant specializing in Peruvian chicken on the Upper East Side of Manhattan. The restaurant didn’t have a liquor license, so we always brought a bottle (or two) of moderately priced red wine. It was the perfect spot for a young woman on a budget — reasonably priced dinner and BYOB. After I moved to Florida, I longed for that chicken — the crispy-salty-skin, the juicy-tender meat. It was all just a dream until I read Melissa Clark’s recipe for Peruvian chicken on the New York Times cooking website. The following is adapted from her method — which is spot on. Dreams do come true.

PREPARATION To make the marinade whisk all the ingredients except the olive oil together in a large bowl. Add enough olive oil so the chicken will be covered in the marinade. Then add in the chicken and make sure all the chicken is coated. Cover and refrigerate for at least 2 hours or up to 12. Preheat the over to 450 degrees. Take the chicken out of the marinade and shake off excess. Pat chicken dry with a paper towel. Arrange on a sheet pan and drizzle with olive oil. Bake for 35-40 minutes (the breasts might be done at about 25-30 minutes) until chicken is cooked through and the skin is golden brown and crispy. Remove from oven, tent with foil and let it rest for about 10 minutes. To make the sauce, throw everything except the oil into a blender and blend until smooth. Slowly drizzle in the olive oil. Taste and adjust seasoning. You might want more salt or lime or heat or honey. Serve with extra lime wedges. Note: You can also make this sauce using feta cheese. I didn’t have any in the house, so I used mayonnaise. Also, my sister made this and cooked it on the grill— she says it was a big hit. This goes super well with roasted plantains, but as I am trying to limit trips to the store, I roasted some sweet potatoes and Yukon golds that I had on hand. Y JULY 2020 • pointpubs.com

Try the Wine
Chill Out with Cold Red Wine IT'S A WARM — OKAY, HOT — MIDSUMMER EVENING, AND A CHILLED GLASS OF WINE WITH DINNER SOUNDS PERFECT. IF IT SEEMS AS THOUGH ALL YOU’VE BEEN DRINKING LATELY are white or rosé wines, what kind of wine might be a good change? How about a glass of chilled red wine? Yes…R-E-D…red! Cold red wine. Can that possibly be good? The answer is unequivocally, “Yes!” And if you read on, I have several good suggestions that may offer a surprising new wine experience for some while hopefully satisfying both your thirst and your pocketbook.
Beyond Sangria Before mentioning some wines that can be satisfying served chilled, I need to clarify a few things. First, I’m not referring to sangria, the Iberian version of red (or white) wine fruit punch that’s often served in a pitcher with ice. It’s not that good sangria isn’t a great way to drink red wine cold. It is. Traditional sangria, however, is a blend of many things: inexpensive red wine (like budget Spanish rioja or g ranache), brandy, Triple Sec, sugar, orange juice, soda water, sliced oranges and possibly other ingredients or substitutions of one’s choosing.

BY DAVID EHRENFRIED
Second, chilling red wine is not a novel idea. Nearly all wines (red, white or rosé) taste best when they’re on the cold or cool side— that is in various temperature ranges between 45 and 70 degrees, depending on the wine type. That’s how we should expect restaurants and bars to serve them. Ideally, no wine should be served warm, although even cold wine obviously warms up quickly after it enters our mouths. Wine should be in the right range of cool or cold rather than warm when we smell and taste it. Among other things, wine is usually more appetizing then. When a wine’s temperature rises higher than 75 or 80 degrees, the alcohol in it can become more noticeable and may overwhelm or mask a wine’s fruit, herbal and other flavors. At these temperatures, bold, robust red wines, especially those with 14% and higher alcohol-by-volume (ABV) red wines like California cabernet sauvignon, can smell and taste unappetizingly alcoholic, flat or merely unappetizing. If we’re going to savor any wine at it’s best, keeping it from getting too warm can add to our enjoyment. My third clarification is regardless of what I or anyone else says, we each can set the rules for how we prefer to drink wine: chilled a little, a lot, or not at all. We should each be able to drink wine in ways that we’ll enjoy it most. I happen to enjoy buttery, oaky Chardonnay wines served in the 55-60 degree range, but you may prefer them best right out of the refrigerator at 40 degrees. What matters is if tastes good to you. Chill-Out Reds So let’s talk about chilled red wine. Not every red wine is a good candidate for chilling. By “chilling” I mean refrigerating or cooling in ice and water to a temperature of about 55 degrees or below — roughly the temperature for serving a typical white or rosé. Generally, red wines with greater than 13-13.5% ABV are not at their best at these temperatures. Many of these wines are bolder, medium to full-bodied reds that have been aged in oak barrels and have very noticeable tannins. Interestingly, these are among the very characteristics that can make these wines taste harsh and astringent when served too cold yet seriously interesting and flavorful when served at cool room >>>

temperate serving conditions for tannins to taste less astringent and fruit, oak-related vanilla and other scents and flavors to shine. The qualities we’re looking for in red wines that will chill nicely are similar to many of the characteristics we look for in most chilled white wines: • Less oak (modest or no aging in oak barrels); • Less alcohol (under 13.5%); • Less body (lighter as opposed to heavier); and • Less tannic or astringent (wines not made mainly from grapes that produce wines with abundant tannins, like cabernet sauvignon, merlot, nebiello, mourverdre, tempranillo, touriga nacional, sangiovese, and syrah). Like good white wines, red wines for chilling should have bright or well-defined fruit flavors, nice acidity and, sometimes, a touch of sweetness. So what kinds of red wines will taste good chilled. Here’s a list in no particular order along with a few buying and serving suggestions. Of course, if you don’t like any of these cold or chilled, just let them warm up until you do. BEAUJOLAIS — Beaujolais is a friendly and affordable wine named for the southernmost wine-growing area in France’s Burgundy region. It’s made from the gamay grape, which in the right hands produces fresh, bright and fruity dry wines with low ABV, minimal tannins and good acidity. Most Beaujolais wines are meant to be drunk soon after bottling, and they’re perfect for drinking chilled to about 55 degrees. You can get wine to that temperature by putting it in the refrigerator for about an hour. If the bottle feels too cold, just let it warm up a bit in the bottle or in your glass. Basic Beaujolais still sells for under $15 a bottle, even with the current 25% tariff or tax the U.S. now levies on most French, Spanish and German wines. The best Beaujolais wines go under the names of specific geographic areas, or crus, such as Chiroubles, Fleurie, Julienas, Morgan, Moulin-A-Vent, and St-Amour. They tend to cost in the $18-30 range, and some may have higher ABV and be less suitable for chilling. There are many producers. The largest and one of the most consistent in quality is Georges DuBoeuf. Beaujolais pairs nicely with many dishes, including salmon, chicken, meat, roast vegetables, and creamy or buttery sauces served over noodles or rice. DOLCETTO — The Dolcetto grape is one of the major grapes grown in Italy’s Piedmont region, best known for barolo and barbaresco wines, which are made with nebbiolo grapes. Dolcetto grapes make wonderfully agreeable wines that at their best are light, silky, fragrant and tasty, exhibiting plum and dark berry flavors. They’re just right for serving chilled on a warm day. Dolcetto typically is not aged in oak and
WE SEE YOUR NEED for life insurance
has 12.5-13.5% ABV plus a pleasant balance of mild tannins and noticeable acidity. Dolcetto is a flexible companion for many different meat, poultry and vegetable dishes. When buying, look for the town names d’Alba, Dogliani, or Diano d’Alba on their labels. I prefer Dolcetto wines made by notable barolo or barbaresco producers, such as Giacoso, Abbona, Roagna, Scavino, Moccagatta, and Massolino. Most bottles sell in the $12-25 range. CHINON — Chinon is made from cabernet Franc grapes grown in France's cool Loire Valley. Chinon has all the characteristics of a wine that can be served chilled, unlike the typically robust and tannic wines made from cabernet Franc grapes grown in warmer areas like Tuscany. Chinon is light-tomedium bodied with good acidity, mild tannins, relatively low ABV, and red berry and herbal flavors. Unfortunately, you may not see many Chinon wines even in well-stocked wine stores, but it is worth trying with traditional barbeque sauce dishes and red sauce pizza. Some top producers are Baudry, Raffault, and Joquet. Most sell in the $10-30 range. PINOT NOIR — Pinot noir wines made in lighter styles can be delicious and refreshing when served chilled. These will have lower alcohol levels, lighter color and have little or no tannic astringency. They also won’t show the presence of significant contact with oak, such as noticeable wood, toast or vanilla flavors. So for chilling, I suggest staying away from labels that indicate higher ABV and significant aging in oak barrels. The lighter pinot noir styles are more likely to come from cooler growing areas like Burgundy in France, Oregon, and New Zealand. You’re likely to find an abundance of Pinot Noir producers and price levels at stores and wine internet sales sites with good wine selections. In-store, a salesperson knowledgeable about Burgundy or other pinot noir wines may be able to make some suggestions. Pinot Noir pairs wonderfully with many kinds of foods. LAMBRUSCO — Lambrusco is a lightly sparkling wine that is best served chilled and is made from grapes by the same name in the area surrounding the Italian town of Modena, also the home of balsamic vinegar. The ruby red version is known as lambrusco grasparossa di castelvetro, which pops with dark berry fruit and other flavors and has enough tannin to complement rich sauces. Other lambrusco versions are more pink than red. Look for wines labeled secco (dry) or semidecco(semi-dry). There are sweet dessert styles, as well. Other Possibilities: Some other wines that can be served chilled are: frappato and valpolicello from Italy: bierzo from Spain; cinsault from South Africa; blaufrankisch from Germany; and zweigelt from Austria. Lunch with an Astronaut
KENNEDY SPACE CENTER “I lay on my back, surprised at how calm and focused I felt, strapped to four and a half million pounds of explosives.” — Ron Garan Few will ever experience what astronaut Ron Garan described but travel to Merritt Island, Florida, and you can interact with one who has. Lunch with an Astronaut is a unique program at Kennedy Space Center. Enjoy a delicious lunch (no freeze-dried space travel ice cream) as part of a group hosted by a veteran astronaut. Following your meal, watch a film about everyday life on a space shuttle. Then, the highlight of the day, your astronaut will share inspiring and surprising details of their mission adventures. Be ready to ask your questions — the talk concludes with a Q & A session, meet and greet and autographs and photos. If you’re looking for a little retail therapy, stop by the Ron Jon surf shop in Cocoa Beach. Also, keep an eye out for any decorative bottles on the beach... maybe there’s a genie inside. shrimp and grits with scrambled eggs are a top-notch breakfast or a perfect "breakfast-for-dinner" option. The shrimp are sauteed with peppers and onions and served over buttery-cheesy grits and scrambled eggs. The fried pork chops were delicately coated and crispy. We tried them with a classic potato salad and collard greens. The greens were stellar — they were juicy and perfectly seasoned with bits of pork supplying a pleasing heft. And
who doesn't love a juicy fried chicken wing? You never go wrong with a plate of wings, and The Chicken Box serves several flavors for your wingconsuming pleasure. We will surely be back for more. The shrimp and grits were prepared traditionally and packed with flavor. For meat lovers, the baby back ribs were melting off the bone and there was enough for a doggy bag. You can enjoy a meal in either the dining room adjacent to the bar, on the veranda or the rooftop overlooking the Gulf of Mexico and Main Street. Y The Pearl Hotel is located at 63 Main St., Rosemary Beach, Florida. For more information, call 851-588-2881 or visit thepearlrb.com.
