Gray Matters BY SUSAN ROSSER
S
o, each month, as I put together this magazine, I see my photo on this Creatively Speaking page. And every time I look at it, I think, “Geez Louise, I really need to get a new portrait.” Since that photo was taken, I have stopped coloring my hair and dare I say, I look older — hopefully not that much. It was during lockdown when I first stopped dying my hair, so it wasn’t precisely deliberate. The pandemic kept many of us locked up in our homes, and my ever-growing roots served as a time stamp of my imprisonment. Finally, when I emerged from my cocoon and returned to my hairdresser for a cut and a blow dry, I told her I didn’t plan to color my hair —or at least for the foreseeable future. I wanted to see how I would look once the gray grew out. I suppose I found unexpected comfort by embracing my natural look during a time of such stress and uncertainty. Obviously, that was years ago. I still have the gray, but I’m not going to lie. I am not enamored with it. I had hoped that my hair would give me a silvery fox look. Instead, my locks are more of a steely, mousy gray. So, now and then, I consider coloring my hair or at least getting a few highlights. But then I remember what finally made my mom stop coloring her hair when she turned 50. My family had moved from Long Island to Manhattan, and my parents hired an interior designer, Caroline, to furnish our new apartment. Caroline had a small shop in Locust Valley, New York, which my parents had always admired. So, one day, they stopped in to inquire. Caroline was fun, friendly, extraordinarily talented and remarkably decisive. She never offered my parents more than two or three options when deciding about fabrics, colors or anything else. Once, my mother asked what would happen if my parents didn’t like any of the limited choices presented. She replied, “You should hire a different designer.” Still, my parents had tremendous respect and trust in Caroline, so they adhered to her “limited-choice-regiment.” As a 14-year-old, watching all of this unfold, I had come to one conclusion. Caroline was super cool.

Throughout my career as a graphic designer, Caroline’s influence has remained a constant presence. Over time, clients have made their fair share of misguided design requests. Caroline’s words of wisdom continue to resonate: “Perhaps it’s time to explore other designers.” Her unwavering confidence has equipped me to guide clients when they may unknowingly be jeopardizing the quality of their design projects. She was also the inspiration behind my mother’s choice to stop coloring her hair. I can hear my mom saying, “If Caroline has naturally gray hair, it must be in style.” The truth is, it takes a certain amount of conviction to walk around with gray hair. Sometimes, embracing my gray gives me a certain amount of assuredness. Other times, I question my choice. I was recently at an event with hundreds of women, and you could probably count the number of women with naturally gray hair on one hand. I felt a little awkward — like a middle school kid wandering through the cafeteria in search of a friendly face. I can’t say I blame anyone who colors their hair. It’s a personal choice, and we should all determine what makes us feel best. For anyone considering the transition to gray, trust me, there will be many times you won’t feel all that attractive. And occasionally, I consider returning to the world of monthly appointments with a colorist. And then I remember Caroline and her subtle confidence. And I want to be just like her. And my mom.

POMPANO PICKS Drone Show Extravaganza Returns with Double the Fun WHEN: Saturday, Nov. 11
5:30pm - DJ and Live Concert 7pm and 9pm - Drone Shows WHERE: Fisher Family Pier, 222 N Pompano Beach Blvd., Pompano Beach COST: Free WHAT: The City of Pompano Beach’s Drone Show Extravaganza is back, and this time, there will be not one but two breathtaking drone shows, 100 more drones per show, and live music — all in one unforgettable evening! Last year’s event was the talk of the town. The festivities kick off at 5:30pm with a DJ and an electrifying live concert by The Vam Band, setting the stage for an evening filled with music and
excitement. At 7pm, and again at 9pm, the skies will come alive with the magic of 300 brilliantly illuminated drones, choreographed by world-class artists and engineers. These drones will paint the night sky with awe-inspiring artistic formations that celebrate the holiday spirit and showcase a unique South Florida nautical flair. Both shows will feature the same mesmerizing choreography, each lasting approximately 12-15 minutes. While the Fisher Family Pier will be closed for this event, everyone can gather on the south side of the Pier on the beach (the north side will be used for drone staging) for the best vantage point. According to the drone company, Firefly Drone Shows, the drone
show can be seen for up to five miles with unobstructed views and agreeable weather conditions. This year, there will be shuttle services from two convenient locations: Pompano Citi Centre and Pompano Beach Community Park, both located off of Federal Highway. These shuttles will provide hassle-free transportation to the Fisher Family Pier in coordination with our free Ride Circuit vehicles. Bridge closures, revamped traffic patterns, and flat fees for the Pier Parking Garage will also help accommodate the event’s incredible popularity. An Island for the Rest of Us Thanksgiving Every Day and Embracing Catastrophe BY DAWNE RICHARDS
I
f you’re expecting a column about vacationing on a fabulous island — sorry. If you’re disappointed, well, join the club! So what is the subject of this column? (I’m getting there faster than usual since part of Digression Drive was closed today.) Anyway! One of my finely-honed life skills is the ability to catastrophize, even in my dreams. Last night, for example, I dreamt that my car needed a part (please, please no); the manufacturer delivered the parts to my
house. This being dreamland, there were 20 boxes piled up in front of my door (which swings out — thank you, hurricane code), trapping me inside. So why am I writing about this now? Well, I see a loose connection to the month (November, in case you’ve already forgotten) and Thanksgiving, when we’re supposed to give thanks for the good things we’ve experienced. Bah! What does any of this have to do with the article title? (If

you’ve already rolled your eyes so hard that you can’t scroll/look back up at the title, it has to do with “Islands.”) It recently occurred to me that while some people dream of “Fantasy Island,” I visit Catastrophe Island on a regular basis. I think that Catastrophe Island is where many of us live most of the time. That refreshing impending sense of doom keeps us on our toes, right? Why reflect on all the good things in life when you can entertain yourself anticipating the bad? I’m really, really, really, really good at this. I can take the simplest thing (a walk around the block) and turn it into a “10 Worst Things That Happen on Neighborhood Walks” list. Can’t think of any? Oh, come on! You’re clearly not trying hard enough. I mean, this is South Florida! As I write this, recent “historical” events include: 1. A crocodile near the pier, a monkey running loose, and — well, you get the idea, right? My therapist (if you don’t have one yet, you’ll need one after this column) reminds me that anything can happen at anytime. I’m not sure this is particularly helpful to a world-class catastrophizer, but I get his point: since anything can happen at any time, why not adopt the viewpoint that something good can happen at any time? Here’s why: Because if you assume the worst, then what actually happens, at least most of the time, is better than that. And if you assume the best, well, just reverse those odds, or whatever it’s called. I’m kidding! Mostly. While I succumb to wallowing in doom and gloom, I’m a mostly positive person. And not just on Thanksgiving. I honestly believe that, despite its ups and downs, life is pretty good. So this year, on Thanksgiving, commit to making every day Thanksgiving (not the food, duh! You’ll spend the rest of your life in a food coma!). And remember to give thanks for — whatever. Even crocodiles. Y

N
o matter how many people my family has at our Thanksgiving table, we always indulge in a minimum of three pies. And most of the time, that number is four. Even one year, when it was only four of us, we had four pies. My family can never agree on what one pie to make and my daughter loves to bake — so why not four pies? A few years ago, we introduced a new pie into our repertoire, and it quickly became the favorite — Claire Saffitz’s cranberry-pomegranate mousse pie from her book Dessert Person. We all knew we had landed on a new family tradition as soon as we tasted it. After a heavy, rich Thanksgiving meal, this pie is cool, sweet and super tart — perfect for a Floridian Thanksgiving. And for those with limited oven space, it has a no-bake filling.

Cranberry-Pomegranate Mousse Pie Ingredients 2 wide strips orange zest, (use a vegetable peeler) 1 cinnamon stick or ¼ teaspoon ground cinnamon Kosher salt (just a pinch) 10 ounces (283g) fresh cranberries (about 2½ cups), plus about 20 for garnish
Preparation
Save the plastic wrap you use to cover the cranberries and use it later to cover the pie while it chills in the fridge.
The Crust
To make a Graham Cracker crust, mix 1 ½ cups Graham cracker crumbs, 6 tablespoons melted unsalted butter, 1/4 cup sugar, a pinch of salt and 1 egg yolk. Press into a pie plate and bake in a pre-heated oven at 350 degrees until it is lightly browned, 12-15 minutes. ABOVE The cranberry compote — it should be thick and jammy!

1 cups granulated sugar (300g), plus more for garnish 4 tablespoons pomegranate molasses, divided (100g)* 2 cups heavy cream (453g), chilled and divided 1½ teaspoons unflavored gelatin powder 2 tablespoons powdered sugar 1 Graham Cracker crust (store bought or see note below.)
1. First, make the cranberry compote. Add the orange zest, cinnamon, salt, cranberries, 1 cup of granulated sugar (7 oz / 200g), 3 tablespoons of the pomegranate molasses (2.5 oz / 72g), and 1 cup water (8 oz / 227g) to a small saucepan. Bring to a boil and stir often with a heatproof spatula. Cook until the cranberries burst and the mixture gets very thick like jam. (See photo.) The original recipe says 10 to 15 minutes, but it took me closer to 30 minutes. When you scrape the bottom of the pan with the spatula, the mixture should hold the line for a second. Remove from the heat. Using a fine mesh strainer, strain the cranberry mixture into a medium bowl. You will have to use the spatula to push the mixture thought the strainer. Throw away the solids. Whisk 1/3 cup of the heavy cream into the cranberry mixture until it is totally combined. Cover with plastic wrap and refrigerate until it has cooled, about 30 minutes. 2. Add 3 tablespoons cold water to a saucepan (you can rinse and dry the same one used to make the cranberries) and sprinkle the gelatin over it. Do not stir the gelatin. Set aside for 10 minutes until the gelatin has softened. 3. While the gelatin is doing its thing, add 1 cup of the heavy cream to the bowl a stand mixer fitted with the whisk attachment or use a hand mixer and a large bowl. Start the mixer on low and increase the speed to medium-high as the cream thickens. Whip until you have firm peaks. Refrigerate the whipped cream. 4. Remove the cooled cranberry compote from refrigerator and whisk it to loosen it and make it smooth. Heat the saucepan with the gelatin over low heat. Swirl the pan as it heats. Cook until the gelatin is clear liquid and doesn’t have any more granules. The gelatin must be melted in order for the mousse

to set. Now whisk the gelatin into the cranberry mixture. 5. Take the whipped cream out of the refrigerator and add only half of it to the cranberry mixture. Fold the whipped cream into the cranberries until there are only a few streaks. Avoid over-mixing. The goal is to keep the mixture as light and fluffy as you can. Add the rest of the whipped cream and and fold it into the mousse, again, using a light touch to keep it fluffy. Fold until the color is uniform. 6. Add the mouse to the graham cracker crust and smooth out the top. After one hour, cover the pie with plastic wrap. Otherwise an icky skin will form on the top. Refrigerate the pie for at least 4 hours, until it is set. I recommend making the pie a day before you want to serve so you don’t have to worry about it being set. 7. This part is totally optional, but it is pretty. Combine 1/2 cup sugar, 1 tablespoon pomegranate molasses and 1/3 cup water in a small saucepan. Bring the mixture to a low simmer to dissolve the sugar. Add the reserved 20 cranberries and cook until they are softened. A few might break or collapse which is OK. This should take about 3 minutes. Remove the cranberry from the mixture and place them on a wire rack. Let them dry for about an hour until they are just a bit sticky but not totally wet. Toss the cranberries in granulated sugar and place them back on the rack to dry. 8. When you are ready to serve the pie, with the remaining 2/3 cup of heavy cream, whip the cream until you have soft peaks. Add in the powdered sugar and whip to combine. Dollop the whipped cream on top of the pie and arrange the sugared cranberries on top. Y * Pomegranate molasses is available in well-stocked grocery stores or online. Yup, I got it at amazon.com.

However, even the most successful leaders have been wronged and betrayed by others. Sometimes, their team members become competitors and steal clients or business strategies. Most people hold grudges, stay angry, and remain bitter towards the other person involved. This bitterness weighs on them and anchors them down like an anchor on a boat. They cannot move forward because they are stuck in the past.

The best option at this point is to think like Elsa from the Disney movie “Frozen” and let it go! I can hear some of you saying, yeah, but you don’t know what this person did to me and how they hurt me. They cost me hours of my time, hurt my feelings deeply, or cost me a lot of money. Let me ask you a question. Can you change the past? Can you travel back in time and fix the situation so it doesn’t happen? Of course not! So, the only other option is to learn from it and take precautions to prevent it from happening again. Letting go is easier said than done. People harbor that anger and resentment, and what they need to do is let it go. Forgiving the other person is the best response. Just know that you don’t forgive the person who wronged you for them. Forgive them for you — so you can release the negative energy and resentment. Then, you are free to use that emotional energy towards something positive and productive. In many parts of the world, leaves change color and fall off the trees in the fall, making this season a beautiful time of year. I have great memories of the leaves changing colors and falling off the trees in Upstate New York. It is beautiful! The reality is the trees push the leaves off when winter approaches. Leaves have a large surface area and require a lot of water to capture the sun and convert it to energy for the tree. During the winter, there isn’t any water. If the leaves remained on the tree, the tree would die. The tree gets rid of the leaves to conserve energy. How much negative energy are you putting into things and people? What if you redirected that energy to something positive and productive? If you hate your job, instead of complaining about it and being cynical, use that energy to look for a new one, instead of dwelling on how your spouse or significant other angered or mistreated you, forgive them and focus on their outstanding qualities. Remember, you forgive people for yourself, not them. Don’t let anger weigh you down and make you bitter. Instead, let it go! Forgive them, forget about it, and move on. Is this easy to do? Of course not; however, to have the dream life you want, you must grow and become the kind of person who attracts the right people, situations, and circumstances into your life. Ready, set, grow! Assembly of Wingfoot One began in March 2013 at Goodyear’s Wingfoot Lake hangar. An international team of engineers and technicians from Goodyear and Germany’s ZLT Zeppelin Luftschifftechnik worked side by side. Parts such as the tail fins and gondola were built in Germany and shipped to the U.S. for assembly. The balloon-like body of the airship – the “envelope” – is made of polyester with an innovative film from DuPont™ called Tedlar®, surrounding a semi-rigid internal structure, which differentiates this airship from previous Goodyear blimps.
How Does It Stay Up There?
MOVEMENT AND STEERING ENGINES
Three four-cylinder, 200-horsepower engines are located on either side of the envelope and at the tail and can propel the airship at speeds of up to 73 miles per hour.
TAIL WHEEL
The new airship’s lower profile brings the tail section closer to the ground and is designed to allow the rear section of the craft to rest on its absorber and tire.

The new blimp has an “inverted Y” configuration at the tail, and the fin control surfaces operate in tandem as “ruddervators” for directional navigation using fly-bywire electrical control.
SIDE STICK CONTROLS
Located next to both left and right seats, these electrical controls are used to steer the blimp left and right, up and down, using the main three tail fin control surfaces.
The Materials
MATERIAL The new Wingfoot NT envelope is made from a newer, much lighter compound that is comprised of polyurethane, polyester and a robust and protective film from DuPont™ called Tedlar®. PAINT A special blimp-specific paint formulation is applied using a unique laser-based application process. SEAL To ensure helium retention, and protect against ultraviolet light, pollution and rupture, the finished, shaped envelope is secured using space-age heat seal technology.

Individual circuit breakers allow pilots or mechanics to isolate and control any piece of equipment, including the engine, fuel system, air and helium, radio, exterior lighting and more.
Science
Without its lifting gas, an empty blimp weighs almost 20,000 pounds. Once inflated with helium and after accounting for fuel, payload and ballast, it usually weighs in at 100-200 pounds.

Cozy Coffee Connections STAY CAFFEINATED IN STYLE
Years ago, my friend Claudia and I frequently bemoaned the limited choices for enjoying a simple, exceptional cup of coffee. While you could certainly indulge in a delightful cappuccino at various restaurants, what if all you craved was a relaxed moment sipping a latte with a friend? Yes, our coffee-related laments preceded the emergence of Starbucks and the popular sitcom “Friends,” in which many memorable scenes unfolded within the fictional and quirky coffee haven known as Central Perk. Fast forward several decades, and the notion of an upscale coffee establishment offering a no-nonsense, robust cup of Joe alongside an array of fancy coffee concoctions ranging from a standard espresso to a salted-caramel-double-butterscotch-extra-dry-pourover-cold-foam-latte, has become an integral part of the urban landscape. Claudia and I occasionally jest about how we should have opened our dream coffee shop, as Starbucks essentially mirrored our vision. Ah, the regrets of life. Still, I prefer to focus on the positive and appreciate the multitude of coffee options available in our neighborhood. Here are a few favorites and new options around town. BY SUSAN ROSSER

The Seed
2016 E Sample Road Lighthouse Point 954-532-4171 The Seed is the germination of the coffee dream of two women. They started with a spot in Boca and opened in Lighthouse Point a few years later. The light and airy atmosphere surrounds you as soon as you walk in. As per a coffee house worth its beans, The Seed offers drip, cold brew, pourover and all the espresso-themed drinks of your dreams. Try the nitro stout for an iced coffee that will knock your socks off (in a good way). They also have a selection of tea-themed offerings, plus smoothies. For something a little more substantial, they offer açaí bowls. Occasionally, they also serve seasonal drinks such as the summer of ‘23 strawberries and cream matcha latte with cold foam. Say that 10 times fast.

You’ll find homemade croissants — the classic plain plus chocolate, Nutella, almond and my favorite — pistachio. They also offer baguettes and other breads; you can watch the bakers preparing them on the premises. Naturally, there is coffee to go along with all the treats. Get yourself a latte, a homemade eclair and pretend you’re in Paris.
The Little Coffee Shoppe

The decor has a modern sensibility but manages not to be sterile by using warm tones with plenty of wood and brown tile tables. Of course, they have all the usual offerings, from cold brew to lattes. The cortadito was the perfect afternoon pick-me-up with notes of chocolate and just a touch of steamed milk. The Coffee Shoppes’ first location is in Coral Springs, but we’re delighted they came east.

HOMEMADE TREAT While heading out for a coffee treat is always a treat — it is just that. Indulging in a fancy espresso concoction on a daily basis gets pricey pretty fast. Here is a recipe ripoff of a Starbucks Brown Sugar Oat Milk Latte. If you’re thinking you won’t be able to make this at home because you don’t own a fancy espresso machine, fret not. A simple moka pot will do the trick and you can even pick one up at Publix for about $15.
Homemade Shaken Brown Sugar Oat Milk Latte Makes one drink Ingredients 2 shots espresso 2-4 teaspoons brown sugar syrup (recipe below) 3 ounces oat milk Preparation Add all the ingredients to a mason jar, fill the jar with ice, cover and shake. If you don’t have a mason jar, stirring with a spoon is certainly an option. You will simply have to call your drink a Homemade Stirred Brown Sugar Oat Milk Latte To make brown sugar syrup, measure equal parts dark or light brown sugar and water. Heat the water in a pot on the stove. Add the sugar and stir until dissolved. Let cool and store in a jar. NOVEMBER 2023 | pointpubs.com

As you step inside a Foxtail Coffee shop, you are greeted by a warm and inviting atmosphere. The decor features a mix of rustic and modern elements, with soft, dimmed lighting. Comfortable seating options are available, including cozy couches, communal tables, and barstools along the counter. Naturally, they have all the usual caffeinated suspects.

opened their doors in 1990, Calypso has been a local favorite. This gem of a restaurant is known for its fresh, wild caught fish, Bahamian conch dishes, Jamaican jerk and American favorites all served with an island flair. Try the house special cutter (sandwich) — sautéed shrimp with garlic butter, mushrooms and cheddar all stuffed into a hollowed-out kaiser roll. Flamingo Seafood. SEAFOOD Located in a remodeled gas sta-
tion, this popular new eatery is a welcome addition to Pompano Beach. The menu features a raw bar and many small plates that are optimal for sharing. We tried four different kinds of oysters, which were all fresh and perfectly briny, with a considerable difference in size. The staff was helpful and knowledgeable about the menu and raw bar offerings. We also shared a few small plates, including a raw salmon dish, stuffed pepper dews and pork rillettes. hood place serving classic Italian fare. The shrimp tempura appetizer, while not classically Italian, was light, crispy and a great starter to share. We were suitably impressed with the flavor bomb that is the veal chop valdostano. The veal is butterflied, pounded thin, stuffed with prosciutto, gorgonzola, and wild mushrooms and topped with a brandy Marsala sauce. If you want something a touch lighter, the grilled salmon was delicate and fresh and prepared with garlic, fresh herbs and a touch of lemon.
