Big Decision Number Four
Until recently, I had made three big decisions in my life. Each has turned out even better than I could have envisioned. The first one was to marry my husband Richard. I can’t imagine a better partner than he is. He is loving, kind, thoughtful and of course hilarious—a major husband-requirement. My second big decision was to start a family. My kids light up each and every one of my days and my heart has grown a million sizes larger from all of the love in my family. The third big decision was to acquire Lighthouse Point magazine and produce our very own monthly publication. And now you are holding a sample from the newest and fourth big decision: to publish Pompano! Richard and I have years of experience in publishing, graphic design, writing and other areas that we will need for sure—but the commitment to publish an additional title, each month, over the long term is a choice not taken lightly. Like having children, it’s a responsibility that sticks around for a long time. Lighthouse Point magazine began over 13 years ago as an eight-page, black and white newsletter. Over the years, the publication grew and improved significantly. When Richard and I took the helm, we made changes and upgrades of our own. And in the process, I think we found our calling—we’re having a great time in the publishing business. Yet, each month, I joke that putting out a new issue is like giving birth—truly a labor of love. In the end though, our commitment to being the voice of our community is what really matters, in the past and going forward. Obviously, this magazine is a business enterprise; but the end product is almost all from community writers, photographers, advertisers and readers who submit all sorts of content that we hope will keep you informed and entertained. We look forward to many years of creating a magazine of which we can all be proud.

Follow the Leader The Pompano Beach Boat Parade is one of the oldest in the nation. Dedicated community volunteers bring this annual tradition to life each December— and it is no small feat. Committee members direct plans for parties, advertising and special events. The culmination of all their efforts are in full force when approximately 50-75 decorated boats illuminate the Pompano waterway. Captains and spectators alike can join the fun this year on December 13 on a waterway near you.

A new magazine for Pompano Beach would not be complete without some coverage of the world-class fishing, both inshore and offshore, and the fishing enthusiasts that travel the world in pursuit of their passion. It’s quite fitting that our first of these “Fish Tales” features local charter boat owner and captain, Skip Dana. His family’s operation includes drift-fishing boats the Fish City Pride and venerable Helen S. along with his center-console private charter boat, Pop-A-Top. Skip has been a full-time professional for over 25-years but I’ve heard his stories of growing up in Pompano Beach where he fished in all manner of effective, and occasionally unsafe ways. The passion of his boyhood days seems to have never diminished but his polished professionalism is evident at all times out on the water. “We’ve had a great start to the fall season,” according to Skip. “The dolphin are white hot,” as clearly seen in photographs from recent charters. “And we’ve been seeing a great sailfish bite inshore.”

Life changes SAFETY TIPS FOR BOATERS
in a minute or less
After fishing off our coast for the last 40 years, most people would think I feel at home and totally comfortable on the sea. Nothing could be farther from the truth. Some of the worst things that I have experienced have happened on flat, calm summer days. The ocean will humble you quickly. Troubles may be right around the corner that will change your life forever if you are not prepared to deal with them. When I sat and began thinking about this article I was forced to recollect stories and experiences that were life changing or haunting to me personally. Just recently, the loss of two boys out of the Jupiter inlet area has shown just how real and tragic things can become if you are not prepared. When you, your family members, or fellow boaters leave the inlet for a day or night on the ocean, preparation for the unimaginable must be in place. A checklist of safety equipment and safety measures must be premeditated for that event. I always think about certain bad things happening and test myself on how quick and prepared I would be if that event happened. Example: I am running towards the east to catch dolphin at 30mph and I am 15 miles offshore with nobody in sight. As I look for floating debris and birds, we unexpectedly hit a submerged steel barrel which was discarded or fell off a cargo freighter. A hole has been torn open in the bow of the boat and the boat begins to fill with water. You have a maximum of 2-4 minutes before your boat is going to sink

and is gone from sight. What are you going to do now? You must inform the Coast Guard and evacuate your boat and crew in one minute or less with all of the necessary items to stay alive. Can you do it? Listed below are points of safety that every boater should not only read, but cut out and laminate as a part of their pre-trip inspection. 1. YOU MUST HAVE A TOW BOAT MEMBERSHIP BEFORE EVEN THINKING ABOUT LEAVING THE INLET. Tow Boat US or
Sea Tow will provide you with a decal that you should place in view from your helm station. Your membership number will be printed on the sticker. If the number is not on it, write it on with a permanent marker before applying it to your vessel. The tow boat companies will ask for your membership number if you call. Keep your number visible. 2. WHEN RUNNING OFFSHORE, ALWAYS PUT YOUR RADIO ON CHANNEL 16. If troubles arise you are sitting on the channel
that puts you directly in contact with the only people who can help or save you. The Coast Guard and tow boat companies sit on this channel. 3. ALWAYS TAKE NOTICE OF YOUR FLOATING DEVICES OTHER THAN YOUR LIFE JACKETS AND RAFT. Coolers have
saved people’s lives along with the bottled water inside them. Anchor buoys are also quick saviors. 4. PLACE YOUR LIFE JACKETS, EPIRB (emergency position indicating radio beacon) AND LIFE RAFT IN A PLACE THAT IS QUICKLY ACCESSIBLE. You should be able to gather your
equipment in a minute or less. In my opinion, you must have a
marine raft onboard. The one we carry is a five- man and is the size of a school backpack. 5. WHEN PEOPLE BOARD YOUR BOAT, YOU MUST LET THEM KNOW WHERE YOUR SAFETY EQUIPMENT IS. If you are hurt
during an incident it won’t help if you are the only one who knows where the safety equipment is stored. 6. BE SURE TO HAVE ADEQUATE FIRE EXTINGUISHERS PLACED IN PLAIN VIEW. Keeping fire extinguishers hidden
inside the console under your tackle bags is not going to help you when your boat catches fire. 7. ALWAYS CARRY WATER ACTIVATED LIGHTS AND A WHISTLE ON YOUR PERSON. Attach them to yourself with a
snap swivel on a belt loop, or keep one in your pocket. If you fall over at night or drift into the night, you can be easily spotted and heard from above. Without a light on you nobody will ever find you in the dark. Without a whistle nobody will ever hear you. 8. MAKE SURE TO HAVE A FLARE KIT AND A GOOD FIRST AID KIT ON BOARD. 9. ALWAYS INFORM SOMEBODY OF A RETURN TO PORT TIME. We have fought large fish into the night. During the
fight always contact somebody on the radio during the battle in sunlight hours. Call a friend or fellow fishermen and let them know to contact your land contact by giving them your contact’s phone information so they can call them when they return to port. This will not only bring relief to your contact, but it can also save from an unnecessary Coast Guard search. If you have no boats in the area then contact your tow boat company and ask them to place a call for you. Tow Boat US and Sea Tow are two companies locally that are standing by for your calls. You can raise either of these companies on channel 16. 10. CHECK THE WEATHER MULTIPLE TIMES BEFORE YOU LEAVE THE DOCK. Weather in south Florida can be extremely
unstable and can change in minutes. Checking the weather the night before is not good enough. Upon your arrival to your boat the day of your departure, tune to channel 3 (NOAA) on your vhf radio for the latest sea and weather conditions. 11. TAKE A SAFE BOATING COURSE. The fire stations also have a basic emergency course which covers some of the medical emergencies that you may encounter. CPR and caring for severe cuts are two specific things that the master of each vessel should be trained in. 12. MAKE A LAMINATED, PRE-TRIP CHECKLIST. Without your checklist you may miss the one thing on this sheet that will save you or your crew’s life. The more time you spend on the ocean, the more you realize just how dangerous it can be. The problem with boating is that we are not required to have a license to drive on the water. You need to take it upon yourself to be prepared when bad situations arise. The cost to have all of the items outlined above can be $2,500. At first you may think this to be expensive until you add up all of your fishing tackle, gas, food, and things that we purchase for our boat to make it comfortable. For those of you who have the effrontery to question my qualifications as a prognosticator, I offer the following: I am a graduate of FSU (Florida Seer University) where I earned a B.S. in BS. In a previous life I was assistant to the Oracle at Delphi. Finally, I am the proud owner of a Swarovski-RomanianGypsy-certified crystal ball which, although used, has very low mileage. It was operated by a little old lady only on Sundays, and is the top-of-the-line model from Clairvoyants “R” Us. The following predictions are subject to a +/- 3% margin of error: Nutritionists will discover a vitamin that removes the black circles from around the eyes of pandas. There will be a massive invasion of ants in every country in the world. This will cause the most common household pet to become the aardvark. Aardvarks “R” Us’ stock price will soar. Evening gowns will be designed with cargo pockets, making purses obsolete, and hoop skirts will make a comeback. They will be worn by men. There will be a rabbit stampede in North Dakota. IS GENERATION Z READY FOR THE WORLD?
Dear Dr. Corn, I worry about today’s teenagers. I wonder about their future and how they will fit in and compete in the job market. I know my thinking has been overly influenced by my fifteen-year-old niece. She’s creative, verbal, and funny, but some of her ideas are unrealistic and self-inflated. She believes she can achieve popularity and recognition online simply through developing what she deems as her “brand.” She posts selfies on Facebook or Instagram. Then the wait begins for comments to arrive from friends, family members or loyal followers. She is unwilling to expand her knowledge through reading, learning and becoming more entrepreneurial about social media. I wonder if constant texting and a lack of face-to-face conversations are detrimental? I’d like to figure out what I can offer to motivate and inspire my niece so she can blossom into her best self? Dear Concerned Adult, Your concern is one that is on the minds of many parents, researchers in psychology, sociology, business and philosophy. Every generation is shaped, influenced and uniquely molded by a host of variables, ranging from one’s immediate family to the various economic, political, technological, health, social, cultural, global and environmental factors that impact each of us. Right now, Generation Z is the label attached to over 23 million young people who were born between 1995-2012. Presently, the youngest members of Generation Z are entering pre-school, with the majority attending high school and a smaller subset already in college. The designation of “Z” comes after naming the previous Generation “Y,” which is better known as the “Millennial’s” (spanning 1977-1994). These two groups are the beneficiaries of many sophisticated technological advancements. It wasn’t that long ago that Facebook (2004) and Twitter (2006) were innovative social media sites. Today they seem an essential part of our daily lives.

As you noted, your niece is a natural and adept multi-tasker. Within minutes, she can take a photo, jot down a few sentences for a blog, post it on her Instagram account, while texting or talking on the phone. Completing various tasks in a short time frame means something is being sacrificed in the process. It appears that Generation Z’s ability to focus has shrunk. In fact, researchers have computed this group’s attention span as lasting eight seconds. Some researchers say this generation has such well-developed filters they are able to sift through and decisively discard what is unessential. At the same time, there are understandable concerns that depth of knowledge and sustained attention is being forfeited for skimming the surface.
WALK WITH ME. TALK WITH ME
Teens are so connected to their friends using digital devices, the art of authentic conversation is dying. When dialogue is reduced to texting, all the nuances of real conversation—from voice tones to facial expressions disappear. There are reasons to worry this generation will have less-developed interpersonal

Sadly, there is always a plethora of stress-inducing world problems to worry about: ongoing warfare, terrorism schools shootings, global warming— just to name a few. On the flip side, there’s plenty to be optimistic about: the first African-American president, same-sex marriage rights and unemployment is down. With all of this going on, Generation Z’s have considerable concerns. Attaining emotional and financial security is paramount. And, while many have an entrepreneurial spirit, they feel pressure to find dependable employment. Given the challenges faced by their parents, this is no surprise. Try to guide your niece to think about how she can turn a hobby into a career, creating something that is contemporary, sensible with the potential to serve a greater good.

Each generation has a desire to be smarter and more successful than those before them. Just in the past decade alone, the apps on our smart phones have changed our lives. Surely, this generation will create more innovative and useful apps too. Many of this generation’s most successful entrepreneur’s are in the social media, entertainment and technology fields uniting engineering, math, computer science and business skills. Your niece may want to create a business even before she’s entered the work force. Encourage her to seek a part-time job as she continues her education so she can learn more about her strengths and interests.

he world is filled with advice from glamour gurus on how to makeover your hair, face and wardrobe, but where do cities turn when they need to be polished up? Meet the mavens of municipal reinvention, Kim Briesemeister and Chris Brown. The City of Pompano Beach hired their firm, Redevelopment Management Associates (RMA) to transform the city. Kim recently sat down to discuss how Pompano Beach is changing from the frumpy middle-child caught between Boca Raton and Fort Lauderdale to a star attraction. If you’ve lived in Pompano Beach or the surrounding communities for a long time, you know that a few years back the city seemed somewhat stuck in a rut. Other towns were attracting hip restaurants, businesses and new housing while Pompano remained the same, if not declining. Fortunately, the city leadership saw past the perception. They realized all the assets Pompano has—from the picturesque beach to historic landmarks—if only they could harness these strengths properly. Fortunately for Pompano, the city leadership understood one of the biggest challenges of redevelopment: hiring experts who understand the entire process. By tapping into Kim and Chris’s company, Pompano suddenly had access to a team skilled in a broad field of expertise including urban design, planning, economic development, real estate development, public space design and financing redevelopment on a wide scale basis. “Chris and I have worked with numerous cities throughout the state,” says Briesemeister. “And with Pompano we saw a community ready to invest in itself, and equally as important, they had dedicated leaders who were ready to commit to a process that is both exhilarating and arduous.” Pompano Beach’s reinvention process is such a wonderful lesson in economic redevelopment that it has been included in Kim and Chris’ new book, Reinventing Your City, 8 Steps to Turn Your City Around. Being a Pompano Beach resident, Kim was delighted to tackle her hometown’s problems and begin implementing the eight crucial step process. But there are always obstacles that hinder transformation. No Parking?
Prior to hiring RMA, the city had gone through a lengthy process to create a master plan for the beach, recognizing the beach was one of the city’s best assets. On the surface the plan looked great with a proposed restoration of a dune system, beach pavilions and renovated walkways and pathways for residents and tourists. The problem? The five block beachfront had no parking in the master plan. “No parking?” said Briesemeister. “Naturally, we wondered why the city accepted a master plan that excluded parking along the beach. But they had received so much resistance they felt there was no other option.” This is where having experts who have faced similar issues in other cities really helped. Kim and Chris knew that the entire vision for the beach redevelopment would fail if people arrived at the beach but could not park. “It’s seems like this would have been obvious,” explains Briesemeister. “But passions ran very high about this issue and we knew that we had to win on this point or failure was inevitable.” RMA began a grassroots campaign to educate the entire city about how spectacular their beachfront could be. They reached out to stakeholders and influencers from the city’s advisory committee, the Economic Development Council, the Chamber of Commerce, The Rotary Club, historical clubs, business organizations and developers in order to create a strong backbone of support. “These groups were very instrumental in changing the course of the city,” she explained. “This ground swell then spurred the commissioners and advisory boards to see that there were many other residents who had a voice in how the city should move forward.” The vision was then revised and one of the most beautiful beach redevelopment projects in Florida was completed. The parking revenue went from $300,000 a year to over $2 million, enabling the creation of a parking fund to pay for the new parking garage, which is now under construction and is set to open in the fall of 2016. “One of the coolest things about the entire process is that the very same residents who were opposed to the on-street parking started emailing the commission that they had been wrong. The beach was now beautiful and they felt fortunate to live there,” she said.
The excitement is now growing as two acclaimed restaurants are planning to break ground there shortly. For Briesemeister, Brown and their RMA team, the beach front win was terrific, but this was just one small part of the overall plan.
A Little Culture
“Nothing completes redevelopment like culture,” she said. “There are two Community Redevelopment Authority (CRA) districts in Pompano, and while the beach project was underway, we knew that the western area was just as critical, as the two areas feed off each other. So both visions needed to be implemented simultaneously.” For long-time Pompano Beach residents, downtown Pompano seemed invisible at best, decaying at worst. Two buildings with a storied history sat in such disrepair they were slated for demolition. The Bailey Hotel on the east side of the railroad tracks and the Ali Building to the west represented a tale of two cities, or at least a city that was often divided by racial lines and a railroad crossing. “We saw those buildings as opportunities to create a cultural arts district, one that would connect and unite the city, create a central downtown hub and begin an exciting east/west flow,” said Briesemeister. The 30 acres the city owned at the I-95 interchange would be the perfect anchor for an office park and by infusing culture; the city had a way of bringing the community together. People enjoy entertainment and socializing and with the development of that energy, restaurants and businesses are attracted to the source. Briesemeister and Brown knew they had to save and restore these two buildings in order for this core neighborhood to become an exciting hub. The Bailey Hotel, built in the 1930s was a two-story building with a grand staircase that led to a second floor with a massive

sky light and hotel rooms bathed in natural light. Next to it was a historic and equally old bank building. The plan was to tear them down, but a county commissioner begged a local businessman to save them by buying the property. But now what? “Again nothing is ever easy,” said Briesemeister. But finally the vision was accepted.” The Bailey Hotel was transformed into Bailey Contemporary Arts. The dramatic $1.5 million dollar reconstruction kept the incredible internal elements and enhanced them to create a cultural hub that is dedicated to the visual arts. The hotel rooms have become working studios and the main rooms have become galleries that showcase some of the area’s most acclaimed artists. Exciting programming draws art lovers of all levels and this focal point has spurred redevelopment throughout the block. “The road and streetscapes are almost complete,” explained Briesemeister. “A brewery is seeking a lease at an old laundry mat and across the street will sit a European-style plaza and a beautiful outdoor urban park. Old Town is now taking shape.”

With the beachfront and the cultural district now taking shape, the city is attracting outside investors who want to bring new businesses and beautiful residences to the community. “The first parts of the plan are in place so now we are moving to

While Bailey was under renovation, the plans for the Ali Building were also being implemented. But a different dynamic was making this process a delicate one. This was an African American community that had been the target of local development activity for the previous fifteen years. However, the prominent activity had been the acquisition and demolition of the properties along the main street, MLK Boulevard. “The community felt slighted, that urban removal—not urban renewal was underway,” she explained. “We wanted to show them that our plans were to create something amazing that would serve and honor their current residents in a dynamic and important way, while also preserving the past.” The Ali Building was one with a rich history. According to Frank J. Cavaioli’s book, Pompano Beach, a History, the facility was once a boarding house for famous African American jazz musicians, including Louis Armstrong and Cab Calloway, who could not find lodging at whites-only hotels. The once tattered building that seemed destined for demolition was preserved and received a $2.5 million dollar renovation. In November, it was triumphantly unveiled to the community as The Ali Cultural Arts Center. Inside, the building will feature exhibits showcasing local Black history and serve as an educational and community venue. The outside courtyard features a covered stage and will showcase concerts from nationally acclaimed musicians and local emerging talent.

the fun stage,” she said. “People are starting to see the changes and that is the neat part of redevelopment. Those who never believed this city could turn around now know otherwise and private development is racing to find the best spots to redevelop.” The most visible is the Koi project, a beautiful new residential development on Atlantic Blvd. Long overlooked as a prime development site, Chris Longsworth of Invesca Development Group saw the city’s vision and jumped in. “This project will still take a lot of work, but there will be tremendous advancements over the next few years that will really be impressive.” “Pride is soaring in Pompano Beach,” she concluded. “The residents and business owners feel confident and excited when they talk about their city. And they should be, they believed in themselves and their potential and now Pompano is turning heads!”

Pompano’s parking garage is a cornerstone of the beach renaissance and Pompano Pier Project. So, this garage will certainly not be a plain, boring concrete structure. The garage will be an iconic building adorned with a series of five aluminum sails that will become the front door to the pier and a memorable visual welcome to the city. The $20 million dollar project will feature corrosive resistant concrete and stainless steel, along with a street level area for retail opportunities and tourism information. Planned opening is fall 2016.
The area around the Pompano Beach Pier and the parking garage will soon be home to two beach front restaurants. Oceanic Oceanfront Dining and The Pompano Beach House have signed leases for space in the new Pompano Beach Fishing Village. The two restaurants will be located directly north of the pier. Oceanic Oceanfront Dining is a seafood themed restaurant and bar. This will be the second Oceanic location; the first is located in Wrightsville Beach, North Carolina. The 9,570 square foot Pompano Beach location will be a two-story building with expansive decks overlooking the ocean. Special features include a banquet room with a private balcony for special events such as weddings and community functions. Pompano Beach Fishing Village is a mixed-use redevelopment project spanning six oceanfront acres at the foot of the Pompano Beach Pier. Plans include 48,500 square feet of restaurant and retail space, a new pedestrian promenade linking the pier with the Intracoastal Waterway, docks along the Intracoastal for proposed water taxis and other watercraft and a rebuilt pier. Immediately north of Oceanic will be the Pompano Beach House, a casual upscale restaurant featuring steaks, chops, hamburgers, and salads in a stylish setting, complete with a rooftop bar. The restaurant will be operated by Anderson Real Estate, a diversified Cincinnati, Ohio based firm that operates Grille 401 in Fort Lauderdale, Brimstone Wood fire Grill in Pembroke Pines, and Pinon Grill in Boca Raton, along with nine other restaurants in Virginia.

Bailey Contemporary Arts is a multi-faceted venue that offers dynamic exhibits, exciting artist receptions, visual arts classes and a burgeoning artistin-residence program. For Director Sarah Miller Benichou, each new exhibit opening she plans is a celebration of the artist’s work, while also drawing in the community to experience art at a new level. “We are creating fully-immersed events,” she said. “Whether you are a serious collector or an art exhibit novice, the receptions will be a fun way to meet creative visionaries, unwind with drinks and music and unleash your inner-artist with our workshops.” Bailey also offers Paint-n-Sip and ceramics classes for adults along with developing programs for children. “Taking classes in such a creative atmosphere is really inspiring,” said Benichou. “Budding artists are constantly surrounded by the work of highly acclaimed artists on display in the galleries.” “Bailey is all about engaging artists of all kinds,” she continued. “One of our most popular programs, Lyrics Lab, is actually a celebration of spoken word, rap and music combined.” If is about expression, it will be at Bailey. Who needs ham? Catch a grouper, roast it and give your holiday feast some South Florida flare.
The average temperature in South Florida in December is—well let’s just say, it’s usually still quite warm. We all like to think that if we drink enough pumpkin spice lattes, winter will magically appear in South Florida. Sorry, it just doesn’t work. It’s hot here. Sure, sometimes we get a cold snap when we can all don our leather boots and cute sweaters. But it always seems to be hot when you’re planning a big holiday dinner—and there’s nothing worse than and sweaty host. Let’s face it, when it’s 85 degrees outside, the last thing you want is your oven going all day long. So all things considered, since the holidays are about appreciating the bounty, why not highlight some of our local ingredients? The ocean is right here and a whole roasted grouper is quite a show stopper—well it’s at least as much of show stopper as a ham. Here are some fun ideas by our hometown seasonal food blogger to give your holiday some local entertaining gravitas. Enjoy!

Oyster Dressing INGREDIENTS 10 cups French bread, cut into 1-2 inch cubes 10 slices thick-cut bacon 6 tablespoons unsalted butter 4 shallots, thinly sliced 6 ribs celery, thinly sliced 1 pound shucked oysters with 1 cup of the liquor reserved, about 40 oysters
1 cup chicken stock 1 ⁄3 cup flat-leaf parsley, chopped 2 tablespoons thyme leaves, chopped 2 tablespoons sage leaves, chopped 1 teaspoon Tabasco 1 teaspoon freshly grated nutmeg 1 ⁄2 teaspoon ground cloves Sea salt and freshly ground black pepper
DIRECTIONS Heat oven to 250˚. Arrange bread cubes on a baking sheet in a single layer and bake dried, but not browned, about 15 minutes. Let cool. In a large skillet over medium-high heat cook the bacon until crisp, about 10 minutes. Remove bacon from the pan and cut into strips. Return them to the skillet. Melt 4 tablespoons of butter in the skillet with the bacon. Add shallots and celery; reduce heat to medium, and cook until vegetables are soft, about 5 minutes. Add oyster liquid, chicken stock, parsley, thyme, sage, Tabasco, nutmeg, cloves, salt and pepper. Bring to a boil over high heat and cook for 5 minutes. Scrape the mixture into a large bowl and stir in the bread cubes and oysters. Set aside to allow the flavors to come together for 10 minutes. Raise the oven temperature to 400˚. Transfer mixture into a greased 2-qt. baking dish and cover with foil. Bake for 30 minutes, remove foil, drizzle with remaining butter, and continue baking until golden brown and crusty, about 15 minutes. Serve immediately.
Thanksgiving Grouper with Citrus Herb Compote (pictured on previous page) INGREDIENTS sea salt as needed pepper as needed dried parsley as needed 4 tablespoons unsalted butter, room temperature 2 lemons, sliced into half-inch rounds 2 tablespoons fresh thyme, minced 2 tablespoons fresh rosemary, minced 2 tablespoons fresh sage, minced DIRECTIONS Preheat oven to 375. Generously season both sides and the inside of the grouper with salt, pepper and parsley. Next, massage the softened butter onto the grouper. Stuff the fish with lemon rounds, thyme, rosemary and sage. Based on the weight of your fish, consult with your local fish monger as to how long to cook your fish. Serve with citrus herb compote. Recipe follows
Citrus Herb Compote (pictured on previous page) INGREDIENTS Juice of one orange Juice of 1⁄2 lemon 1 ⁄2 cup olive oil 1 tablespoon sugar
3 tablespoon fresh rosemary, diced 2 tablespoon fresh sage, diced 1 tablespoon fresh thyme leaves
DIRECTIONS In a medium saucepan over medium heat, combine orange juice, lemon juice, and olive oil and allow to warm. Once the juice mixture is warm, whisk in sugar and mix to dissolve. Reduce heat to low and mix in rosemary, sage and thyme. Serve on top of fish.

Brussels Sprouts with Pancetta and Apples
Sea Salt Mashed Potatoes
INGREDIENTS 2 pounds brussels sprouts 4 tablespoons extra-virgin olive oil 5 shallots, minced 3 ounces thickly sliced pancetta, cut into 1/4-inch pieces 3 apples, peeled and diced into cubes Kosher salt
INGREDIENTS 2 pounds russet or Yukon gold potatoes 2 tablespoons sea salt, plus more to taste 4 tablespoons unsalted butter 1 cup heavy whipping cream, at room temperature 1 teaspoon freshly ground black pepper 1 teaspoon freshly grated nutmeg
DIRECTIONS In a large pot of boiling salted water, cook the brussels sprouts until crisp-tender, about 5 minutes. Drain and pat dry. Cut the brussels sprouts in half lengthwise. In a large skillet over medium heat add 2 tablespoons of olive oil. Add the shallots and cook, stirring, until lightly browned, 10 minutes. Scrape into a bowl. Add the remaining 2 tablespoons olive oil to the skillet. Add the brussels sprouts, cut side down, and the pancetta. Season with salt and cook over high heat, stirring occasionally, until the sprouts are browned and tender, 10 minutes. Add the apples and shallots and cook, stirring, until warm, 5 minutes. Transfer to a bowl and serve.
DIRECTIONS Peel and cut potatoes into 1 1/2-inchthick slices. Bring a large pot of water to a boil and put 1 Tablespoons sea salt into the water. Place potatoes into the pot; continue to boil until a knife slips in and out easily, about 20 minutes. Drain potatoes and place them into the bowl of an electric mixer with paddle attachment. Mix potatoes on low until smooth, about 1 minute. Next add in butter and mix to combine. Next, drizzle in cream, pepper, nutmeg, and remaining salt to taste; whisk to combine. Serve immediately.

White Chocolate Key Lime Pie Makes one pie INGREDIENTS 1 cup whipping cream 1 (11-ounce) package white chocolate morsels 1 tablespoon sour cream 1 teaspoon grated key lime rind 1 â „3 cup fresh key lime juice 1 (9-inch) ready-made graham cracker crust 1 cup whipped cream garnish with a key lime twist
DIRECTIONS In a medium saucepan over medium-low heat, combine cream and white chocolate. Cook 5 minutes or until chocolate melts, stirring constantly. Remove from heat. Add sour cream, lime rind, and juice and mix to combine. Pour mixture into crust. Cover and chill at least 4 hours. Whip the heavy cream until stiff and top the pie with whipped cream and garnish with a key lime twist.

Dr. Brian Rask, “Guardian” for WWII veteran Herbert Chauser for the October 2015 Southeast Florida Honor Flight. There are 4,048 gold stars on the WWII Memorial: each one represents 100 American military deaths. That means that more than 400,000 soldiers, sailors, marines, airmen, and military personnel lost their lives or remain missing-in-action in World War II. Of the 16 million men and women in military service during the time, that number represents 1 death out of every 40. When an American went off to fight, the family often displayed in their window a flag bearing a blue star on a white field with a red border. If one of those dreaded telegrams arrived informing them of their family member’s death, they would replace the blue star with a gold one; revealing that family’s sacrifice. “Here We Mark The Price Of Freedom” is inscribed below the Freedom Wall. Senator Bob Dole was on-hand to greet the entourage of veterans.

n Saturday, October 17, five members of the Exchange Club of Pompano Beach volunteered as “guardians” for a South Florida Honor Flight from Fort Lauderdale to Washington DC. Guardians picked up their WWII Veterans around 4:30am and took them to the airport, where they were checked in and boarded a chartered Boeing 737 to Ronald Reagan International Airport. Upon arrival, veterans were greeted by a military and volunteer welcoming committee, then assisted onto four chartered buses for the day’s activities. The buses received a police escort to the WWII memorial which had only been erected in 2004. Many surviving WWII veterans have not seen the memorial, hence the goal of the National Honor Flight network. After arriving, veterans had the chance to meet Senator Bob Dole and tour the memorial in a wheelchair pushed by their guardian. The tour also included the Lincoln Memorial, Korean War Memorial and the Washington Monument. Lunch was served on the
buses as they headed to Arlington National Cemetery to see the Changing of the Guard. After that, they saw the Air Force Memorial and had a final stop at the Iwo Jima Memorial. Then, guardians and volunteers brought the WWII Vets back to the airport and they returned to Fort Lauderdale. While on the flight, each veteran received a large envelope of mail from family, friends and military supporters. There was a huge welcome home reception of thousands of people, ranging from police, firefighters, military, scouts, bikers, veterans, service organizations, friends and family. This was a very emotional day for everyone involved and it was an honor to be able to serve these members of the Greatest Generation on one last mission! There were approximately 80 WWII veterans on this honor flight that were able to do this trip free of charge. I was guardian for Herbert Chauser who served in the army during the war.
