A LEAGUE OF HER OWN
Barbara moved with her husband to Ave Maria, but lost him to cancer a little over a year ago. “He was the golfer. I’d just ride along and caddy. But I started to play, and then I started a league.” She is the leader of the Ladies Wednesday Golf League at Panther Run. “It started with four of us who wanted to play together. It’s grown to about 140. We really have a great time. You don’t have to have a handicap, just a good attitude. Everyone is very supportive.”
Getting out there with friends and making new ones is part of life in Ave Maria—A Big Kind of Small Town.

A Creative Space for Healing
NICKLAUS CHILDREN’S HOSPITAL WILL HOUSE STATE-OF-THE-ART SEACREST STUDIOS FOR ITS PEDIATRIC PATIENTS
Nicklaus Children’s Hospital in Miami has been selected by the Ryan Seacrest Foundation (RSF) as the home of its newest Seacrest Studio, a state-of-the-art studio for pediatric patients and their families to explore the world of radio, television and news media.
Slated to open in late 2025, the broadcast media center will be located on the ground floor of the hospital’s Advanced Pediatric Care Pavilion, home to its critical care and specialized inpatient units. It is designed to contribute positively to the healing process for children and their families during their stay, as well as uplift the spirits of the clinical and administrative staff at the hospital.
“It is such an honor to expand our reach to South Florida and welcome Nicklaus Children’s Hospital to the Seacrest Studios Family,” Ryan Seacrest, Founder & Chairman of the Ryan Seacrest Foundation stated in a press release. “Miami has brought me such joy over the years, and I am proud to return the favor and spread the joy and creative power of broadcast media to Nicklaus Children’s Hospital.”
Whether physically in the studio, or in one of the hospital’s inpatient suites watching from in-room TV screens, Seacrest
Studios will provide a wide variety of programming to patients through a closed-circuit network. Patients will have the chance to be their own version of a media professional with the opportunity to host their own radio and television shows, watch live musical performances, play games and even interview celebrity guests who visit. The studio will be encased in glass, allowing patients and visitors to view the daily programming happening inside.
“Providing enriching experiences like Seacrest Studios to our pediatric patients combined with expert care and an elevated level of service is what makes us the hospital where your child matters most™,” Matthew A. Love, president and CEO of Nicklaus Children’s Health System stated in a press release. “We are incredibly grateful to the Ryan Seacrest Foundation for choosing Nicklaus Children’s and helping us create a space for children and families to play and creatively express themselves while being treated at the hospital.”
This will be South Florida’s first Seacrest Studio, and the 15th location for RSF. Seacrest Studios are charitable endeavors of the Ryan Seacrest Foundation, founded by radio and television host and producer Ryan Seacrest along with his family.

Tidy Sam to the Rescue
A Neat Twist on a Classic Favorite
Recently, I asked my son why he didn’t like Sloppy Joes.“They’re sloppy,” he replied. His answer, while amusingly straightforward, got me thinking. As someone who develops recipes, I genuinely enjoy cooking. But by February, after the whirlwind of holiday feasts, I’m ready for easy, crowd-pleasing weeknight meals. (For perspective, on Thanksgiving, I didn’t leave the house, barely left the kitchen, and still logged 5,902 steps – covering 2.43 miles –all within that one room.)
That’s where the Tidy Sam comes in — a delicious twist on the classic Sloppy Joe. This version features the same savory filling, served atop garlic bread, topped with cheese and baked to perfection. Pair it with a salad or crisp cucumber slices to round out the meal. Best of all, the Tidy Sam is versatile enough to eat by hand or with a fork and knife, offering a neat and satisfying solution.
Recipe and Photo by Susan Rosser
The Tidy Sam
Ingredients
FOR THE MEAT
1 pound ground turkey or beef
1 bell pepper, diced (any color)
2 tablespoons olive oil
1 medium yellow onion, diced
1 (8-ounce) can tomato sauce
2 teaspoons brown sugar (or more to taste)
A few dashes of Worcestershire sauce
1 teaspoon Dijon mustard (optional)
Salt and pepper, to taste
8 ounces grated cheddar, mozzarella, or a mix
1 loaf garlic bread (store-bought or homemade)
Sliced scallions, pickles, and pickled jalapeños for serving
FOR THE GARLIC BREAD
1 loaf French bread
4-6 tablespoons softened salted butter (adjust to taste)
3-4 garlic cloves, grated
Preparation
TO MAKE THE MEAT MIXTURE
• In a large pan, heat olive oil over medium heat. Sauté the onion and bell pepper until softened. Add the ground turkey or beef and cook, breaking it up with a wooden spoon, until no pink remains. Stir in the tomato sauce, brown sugar, Worcestershire sauce, mustard (if using), salt and pepper. Bring to a simmer, then reduce heat to low. Adjust seasoning as needed. If the mixture becomes dry, add a splash of water or ketchup.
TO PREPARE THE GARLIC BREAD
• Preheat the oven to 350°F.
• Slice the French bread lengthwise into two long halves. Mix the softened butter with the grated garlic and spread evenly over the bread. Place the bread on a baking sheet and bake for 5-10 minutes until lightly toasted. Remove from oven.
TO ASSEMBLE THE TIDY SAMS
• Spoon the meat mixture over the toasted garlic bread. Sprinkle generously with grated cheese. Return to the oven and bake for 10-15 minutes, until the cheese is melted and bubbly. (If desired, broil for 1-2 minutes for a toasted cheese topping.)
• Remove from the oven, slice into portions, and top with scallions, pickles and jalapeños.
• Serve alongside sliced cucumbers or a crisp green salad for a cool, refreshing side dish.
Mindful Fun
STRESS-BUSTING ACTIVITIES
TWEENS AND TEENS WILL LOVE
BY SANDI SCHWARTZ
Afew weeks ago, my son came home from school pretty stressed about his math and Spanish homework and the pressure to study for the upcoming spelling and geography bees. I could see it in his eyes that starting his homework immediately after walking in the front door was not the best idea.
“Let’s play some Jenga before you start your homework,” I suggested.
“What?! Play games when I have so much work to do? Isn’t that a waste of time?” he quickly responded.
“You’ll see. I promise that after you focus on some Jenga, you will be ready to tackle your homework with a much clearer head.”
What does Jenga have to do with stress reduction? Well, it is a mindfulness activity in disguise. Mindfulness, the act of focusing on the moment in a non-judgmental way, helps our kids become aware of the present moment rather than dwelling on the past or worrying about the future. Studies show that mindfulness improves both physical and mental health by relaxing us.
Being a tween or teen can be stressful when dealing with school pressures, puberty, bullying, social media and conflicts with parents. According to TeenHelp.com, most teens feel some sort of stress, and many are quite stressed out. It’s imperative that they learn how to manage their stress in a healthy way, and mindfulness is a simple and enjoyable tool to use.
However, we have to be careful not to make it too serious and complicated. Instead of forcing them to attend a meditation class or sit cross-legged on a pillow in the corner of their room, we can introduce playful ways for them to practice
mindfulness. It may even be so much fun that they may not even realize they are doing something positive for themselves – and I bet you will want to join them.
MINDFUL COLORING
When you first suggest to your teen that they do some coloring, they will probably look at you like you are crazy. Some teens might think coloring is for younger kids, but it can be an enjoyable therapeutic activity at any age. Adult coloring books are a huge hit these days, with some doctors even “prescribing” coloring to their patients to help calm their nerves.
Coloring can help our teens feel calmer, happier, and more focused. There are actual physiological changes that occur when we color. It slows down our breathing and calms the amygdala, the part of the brain that controls the fear and stress response. Coloring also gives us a sense of flow. When we do something artistic that requires intense focus, we can become so absorbed in our work to the point of being in a near meditative state. Finally, coloring provides a healthy distraction from our worries, allowing us to replace negative thoughts and images with pleasant ones.
“Studies show that coloring reduces stress and can have a positive impact on PTSD and depression,” explains Jaime Pfeffer, mindfulness expert, author and success coach. “By logging off technology and getting engaged with an art project like coloring, teens can benefit from slowing down, getting disconnected from the hustle and bustle of daily life, and letting all of their cares and worries float away.”

Old School GAMES & TOYS
Remember all of those fun toys when you were a kid? You know, the ones that don’t require a battery or outlet? One way to help our teens be more mindful is to take them on a trip down memory lane. Check out how these old-school toys can bring some mindfulness to your teen.
Every summer my son loves flying a kite on the beach. Gazing up into the sky and tracking the dancing kite with the crystal blue sky in the backdrop is very relaxing and another wonderful mindfulness activity to try with your tween. They will be sure to get lost in the moment, which is the whole
BUILDING A HOUSE OF CARDS. This is no easy task, and one that takes intense concentration, patience and a steady hand. One expert site recommends that the builder take deep breaths and add the next card in that brief space between exhalation and inhalation. By incorporating deep breathing with focus, we can see how mindfulness is essential when building a house of cards.
HANDHELD BALL MAZE. Sure, your teen will probably mock this game because it has nothing on their video games, but with a little creativity they can be used as a wonderful mindfulness tool. These mazes require concentration to maneuver that tiny metal ball either around the maze or to secure it into one of the holes to win the game. I bet it’s not as easy as they think!
colorful, mesmerizing patterns can grab anyone’s attention for minutes
DOMINOES. This game also requires tremendous attention and steadiness. Playing dominoes is the perfect mindful activity, and your teen will surely enjoy the challenge of lining them up in a variety of patterns like circles, horseshoes, arches and even spelling out words.
MINDFUL EATING
Being playful with food can also help our teens practice mindfulness throughout the day. Mindful eating involves slowing down to savor and truly enjoy what we are putting in our mouths. You can encourage your tweens to try some mindful eating exercises, such as asking them to use their five senses to describe the food on their plates. Through each bite they take, they will explore the sensation and flavor of the food that allows them to be fully present. (This might be the most enjoyable type of mindfulness activity, especially if they are eating something sweet like chocolate!)
I recently took my son out to get a special ice cream treat after a busy school day. When he started shoveling it into his mouth as fast as he could, I told him to hold on a minute and try to enjoy it. We sat down on a bench and I told him to close his eyes. (He asked me if I was nuts, but I promised him that it would make the ice cream taste way better – and so much more.) I first asked him to take a big whiff of the ice cream. He smiled and then described its smell as chocolatey with a hint of peanut butter. Then I asked him to put a spoonful into his mouth and to describe how it felt on his tongue and the inside of his cheeks. He also talked about the flavors bursting in his mouth. I then asked him about the sounds he heard as he ate the ice cream. Finally, I asked him to open his eyes and to describe the color and other visual aspects of the ice cream.
After this fun mindful eating game, my son said he felt relaxed and more appreciative for the amazing ice cream. It was exactly what he needed after a stressful day.
Kids are living hectic lives, running around from one activity to the next trying to balance school, friends and family. We can help them stay calm throughout their day by showing them simple mindfulness tricks that they can tap into whenever and wherever they feel stressed. Whether it be mindfully eating a snack or coloring in their school planner, these strategies can help them manage stress for years to come.

468 DINOSAURS MAKE GUINNESS WORLD RECORDS HISTORY
BY SHANNON PEASE-SEVERANCE
When I heard that Cox Science Center and Aquarium was attempting to break the Guinness World Record for the largest gathering of people dressed as dinosaurs, the first thing I did was ask my teenage daughter if she would go with me. She was all in, so I quickly logged onto Amazon to see if there was still time for us to get costumes. Lucky for us, there was.
Fast-forward a few days later, and I’m eagerly slipping into my green-scaled onesie. I was excited — making Guinness World Records history sounded silly, fun and something unforgettable we could do together. It was all that and more. As we pulled up to the Great Lawn on Clematis Street in West Palm Beach, it was a sight to see, to say the least. Hundreds of dinosaurs – many of them the inflatable type –darted around in the grassy area. Unsuspecting pedestrians strolled by, stopped, stared, and seemed equally confused as they were amused.
As we navigated through the prehistoric grounds – careful not to step on anyone’s tail – I spotted the judge. He was easy to pinpoint – tall, official looking, holding a clipboard emblazoned with ‘Guinness World Records’. I asked him how he would make the count official. Turns out, it was the old-fashioned way, by counting each participant one by one. And so, as the official event began, each dinosaur… err human… was counted individually and then placed within a group of 50 and led into the “pen” (actually just a staked and taped-off area on the lawn). Participants were reminded that all dinosaurs had to remain covered head to toe in the pen –wearing an inflatable dinosaur costume or onesie – for a full two minutes to make the count official, otherwise, they risked disqualification. The entire group, consisting of all ages from babies to adults, enthusiastically counted down together, and later cheered as the new record was officially revealed – 468 dinosaurs made history that night, putting the old record of 252 into extinction.
The dinos then dispersed, heading down Clematis Street for a slice of pizza, a sit-down meal or an ice cream cone. Others stayed on the Great Lawn to watch the outdoor double-feature screening of Disney’s Dinosaur and Jurassic Park. At the end of the night, my daughter and I left not only with bragging rights but a cherished memory. And as we made our way to the car, recapping the highlights of the adventure, my daughter turned to me and said, “A once-in-a-lifetime.” I couldn’t have summed it up better myself.

There are still plenty of ways to have some dino-themed fun. Now through April 27, the Cox Science Center and Aquarium has Dino Safari: A Walk Thru Adventure on display. The walk-through expedition for the whole family features full-scale, moving, scientifically accurate animatronic dinosaurs allowing you to learn more about and get up close and personal with prehistoric creatures like the T. Rex and amphibious Spinosaurus. And, on the last Saturday of every month, the Science
Center presents a fun-filled Dino Safari Comedy Magic Show, where prehistoric punchlines meet Jurassic jokes. The show is free with paid admission. Ongoing activities include interactive exhibits, hands-on activities, planetarium shows, special events and more.
The Cox Science Center and Aquarium is at 4801 Dreher Trail North, West Palm Beach. General admission is $26 per adult and $22 per child (ages 3-12). For more information, call 561-832-1988 or visit www.coxsciencecenter.org.
