t was the end of a long, albeit super-fun, day – our Howl-O-Ween Family Fest. The rental crew had swooped in to dismantle the tents, transforming the once lively family hub into a serene courtyard. Assigned with the not-so-fun task of dispersing the kids still engrossed in the oversized blocks, my son Sam and I thought these last families would simply say goodbye and walk away. Nope. That’s not what happened. Rather than us packing up the blocks, a quick-thinking mother proposed a challenge for the kids: a race to stash all the blocks into our duffle bag – roughly the size of Texas. Admittedly, orchestrating the Howl-O-Ween event demanded more effort than I had anticipated. And even though I have never been so happy to hop in the shower and crawl into bed as I was after this event, I am also grateful that I was able to play a part in such a fantastic day for our community. The atmosphere was charged with Halloween excitement, and the families were ready for fun and sincerely grateful for an event that provided a delightful outing for their kids. None of this would have materialized without the generous support of our two key sponsors: Shops at Pembroke Gardens and Nicklaus Children’s Hospital, plus so many more. In these days when it’s easy to feel isolated – what a pleasure it was to host an event that brings our vibrant South Florida community of families together for a day of joy.

'ICE SKATE' BY THE OCEAN AT THE RINK
K
ick off your flip flops and slip on some skates to experience an outdoor, seaside “ice skating” adventure at Fort Lauderdale Beach. For those looking for a unique South Florida wintertime activity, The RINK at the LOOP is it. The attraction features a 4,000 square-foot self-moisturizing, tongue-and-groove panel skating surface just steps from the shore. The smooth surface allows skaters of all levels to glide and turn as they would on conventional ice, minus the cold toes. Open daily, the locale hosts weekly specialty themes including Giving Tuesday to benefit nonprofits every Tuesday, Skate in Cinema (coinciding with Seasons Screenings movie nights) on Thursdays and a Family Skate with Santa and friends on Sundays. The RINK touts a number of different weekly specials too, and skate rentals are included with the fee. But, that’s not all. In addition to ice skating, there’s a variety of fun-filled activities and performances for all ages during the third annual WONDERLAND event taking place through January 1, 2024 at the LOOP. Seasons Screenings delivers entertaining outdoor movies including Abominable on Dec. 7, Harry Potter and the Sorcerer’s Stone on Dec. 14 and Arthur Christmas on Dec. 21; while Music on the Main Lawn invites guests to enjoy live music in a range of genres including Country/Rock on Dec.1, Latin Pop on Dec. 8 and 80s Flashback on Dec. 15. The fun continues with free photos with Santa and other holiday characters on select dates, and a holiday market with artisan-made gifts for giving, homemade bites and fashion finds. Winterfest Boat Parade lights up the night In its 52nd year, the Winterfest Boat Parade is a South Florida spectacle that delivers the wow factor. The holiday extravaganza includes a parade of privately-owned boats of all sizes as well as showboats and corporate mega-yachts. All are decked out with dazzling lights and holiday décor. Adding to the festivities, some feature music and entertainment, while others have celebrities onboard. This year, the parade will be led by Grand Marshals, Boyz II Men. The boat parade takes place from 6:30 to 8:30 p.m. on Saturday, December 16 and begins at the Stranahan House. From there, the lively procession travels east to the New River in Fort Lauderdale, then to the Intracoastal Waterway where it continues north to Lake Santa Barbara in Pompano Beach. The boat parade typically attracts over a million viewers who line the waterways along the 12-mile parade route. You can bring your lawn chairs and find a comfy spot along the route, or, for a fee, you can enter the designated Parade Viewing Area at Las Olas Intracoastal Promenade Park at 300 Las Olas Circle in Fort Lauderdale. The area incudes live music performances, activities, and a great spot to see the show. The cost of the Parade Viewing Area is $30 per adult, and $25 for those 10 years and younger.

Leading galleries from five continents will converge on the Miami Beach Convention Center this month to show works from emerging artists to renown masters at the acclaimed Art Basel show. Open to the public Friday-Sunday, December 8-10, Art Basel is popular with art novices and aficionados alike. Featuring a range of art, the show is divided into several sectors, each with a specific focus ranging from monumental art to solo presentations. In the main sector, Galleries, you will find works by young talents as well as 20th century masters, while in the Survey sector, you will encounter pieces highlighting artistic practices with historical relevance. The on-site Art Kids program, hosted by a team of professionals from the Miami Children’s Museum, allows children ages 4-11 to express their creativity through arts and craft activities, art history and storytelling, while parents tour the show. Sweet Memories ––––––– An Apple Tart Recipe to Transport You to the Streets of Paris
As a teenager living in the heart of Manhattan, I was fortunate to experience the occasional indulgence from Bonté’s, our neighborhood French bakery. Bonté may have had a limited selection, but every pastry was nothing short of culinary excellence. Their apple tart was a heavenly blend of apples resting atop ethereally flaky puff pastry. Years later, when I discovered cookbook author Claire Saffitz’s recipe, inspired by her own Parisian apple tart experience, I couldn’t resist trying it. It felt like a taste of my cherished Bonté’s was within reach. And, if I may be so bold, I dare say that Claire’s rendition may have surpassed the original. Apple Tart Ingredients: (serves 8)
FOR THE TART
6 medium baking apples (such as Honeycrisp) 1/4 cup dark brown sugar 1 tablespoon water
4 tablespoons of butter
Seeds from 1/2 vanilla bean
1/4 teaspoon Diamond Crystal Kosher salt (or 1/8 teaspoon for a different brand)
2 1/2 cups unfiltered and unsweetened apple cider 1 sheet thawed frozen puff pastry (see note) All-purpose flour for rolling out the dough 1 egg, beaten
Turbinado sugar, for sprinkling on top FOR THE GLAZE
1/4 apricot jam
2 tablespoons of apple cider
For coating the apples before baking 2 tablespoons of butter, melted 2 tablespoons of apple cider
Preparation: • Peel, core, and chop 3 apples. Add the dark brown sugar to a
medium saucepan with 4 tablespoons of butter and 1 tablespoon of water. Cook over medium-high heat until thickened. Add the chopped apples and cook until soft and caramelized — about
10-15 minutes. Add cider and cook for 10 minutes until the cider is
reduced by half. Mash the apples with a potato masher. Continue cooking and stirring for 15 minutes until the mixture is very thick.
Transfer the apple mixture to a bowl and refrigerate it until cool. • Preheat the oven to 425. You will turn it down to 350 once the tart is in the oven.
• Roll out the pastry to remove any creases. Transfer pastry to
a sheet pan lined with parchment paper. Brush egg along the
perimeter, creating a 1-inch border. Sprinkle the turbinado sugar on top of the egg. Prick the inside area of the pastry with a fork. Return to the fridge.
• Stand the remaining apples upright and cut down vertically
around the core. Place the pieces cut-side down on your board and slice as thinly as possible. Slice with a dragging motion to keep the lobes intact.
• Take the pastry from the fridge and spread the apple mixture in the center, avoiding the edge. Arrange the slices on top of the apple mixture, overlapping them. You might have some leftover apple.
• Place the tart in the oven and turn down to 350. Bake for
40-55 minutes, until the dough is deep brown and the apples have browned in spots.
• To make the glaze, combine the jam and the cider in a small
pot and cook over medium heat until the jam is liquidy — strain to remove solids. Dab the glaze on top of the cooled tart using a pastry brush.
Note: I made my own “rough” puff pastry, but store-bought
is fine. But honestly, I thought it was worth the effort. You can watch Claire Saffitz make rough puff pastry on YouTube.

Resolve HOW TO MAKE – AND KEEP – NEW YEAR RESOLUTIONS BY KIMBERLY BLAKER
T
he New Year is a great time to take inventory, set goals and take charge of your life. But if you’re like most, making resolutions is much easier than keeping them. Instead of focusing on the idea of a new beginning, which can lead to disappointment at the first slip, remember that self-improvement is an ongoing endeavor. Setbacks are not failures; they bring wisdom and insight for future success. Before making a split decision on this year’s resolutions, make a list of goals and changes you’d like to make. Then, review your list and cross off any you don’t feel genuinely devoted to. Maybe you want to resolve to spend more time with your family, quit smoking or lose weight. You’re more likely to succeed if you feel a strong personal commitment rather than simply thinking ‘I should.’ One reason people don’t keep resolutions they make is that the resolutions are often made to silence the pestering of a loved one. If you decide to quit smoking to get your husband off your back, you’re less likely to succeed. If you choose to quit smoking to feel healthier and be able to enjoy physical activity without being winded, you’re more likely to experience success. Choose one or two of the resolutions on your list that you feel most committed to. Then, choose one or two you feel confident you can do with ease. These last couple can be used as positive reinforcement for the more challenging first choices. Next, make a clear plan for adhering to your resolutions. Put each resolution in writing, and write down the steps to achieve them. Let’s say your resolution requires a routine or schedule such as an exercise routine, a new diet or steps toward completing your education. Create a goal chart, a detailed plan and a checklist to track your progress. Also, post notes in strategic places such as the refrigerator, bathroom mirror or steering wheel as reminders of your resolutions with tips on how to overcome temptation. Make sure your family understands the importance of your resolutions. Family support and their positive reinforcement can be most helpful. If your resolution is something your family has been nagging you about, ask

for their encouragement. But, explain that pressure and pestering, particularly during setbacks, could undermine your resolve. Determine how each family member can help you to achieve your goal, maybe by taking on additional household chores or offering affirmations of your continued success. Adjust your environment to enable success. If eating healthier is your goal, don’t fill the cupboards with junk food for other family members. Find healthy snacks they’re willing to substitute. If you’re trying to quit smoking, avoid people, places and things that remind or tempt you, at least until you have it well under control. Don’t go it alone. If you have a friend with a similar resolution, make a pact. Work together to create a plan, and then make a point to check in with each other regularly for encouragement, praise and support. If you resolve to get more exercise, do it together. Having a commitment and someone to accompany you will go a long way in helping you succeed. Finally, reward yourself, not just once you’ve achieved your goal, but periodically for your success so far. Small, periodic rewards can be motivation enough to keep you strong when you’re ready to throw in the towel. Remember, whatever New Year resolutions you choose, success awaits you if you resolve never to give up trying.

Croquembouche Chronicles BAKING MISHAPS, LIFE LESSONS, AND CONQUERING FEAR: A RECIPE FOR RESILIENCE BY SUSAN ROSSER
I
learned one of the most valuable lessons of my lifetime in ninthgrade English class. One day, as we sauntered into the classroom, our teacher, Mrs. Robbins, directed us to pull out pen and paper and commanded us to write. Naturally, we asked, “Write what?” “Write anything,” she declared, “just write.” And so we did. I have no recollection of what I wrote about that day. Often, we entered class expecting literary discussions on “Macbeth” or “The Adventures of Huckleberry Finn,” only to be met with a peculiar directive: “Sit down and write something – anything.” Finally, we collectively asked Mrs. Robbins what the deal was with all of this aimless writing. To paraphrase her answer, she said, “People are afraid to write. A blank page is intimidating. But if you sit down and just write something – anything – you realize it’s not scary after all. You can go back and change it. You can rewrite it. You can write about something completely different. But just write. Do not be afraid.” She said that no matter what path we choose, we will surely have to write something. Ironically, I remember thinking to myself, “Not me.” The real value of Mrs. Robbins’s lesson transcended writing – it was a lesson in conquering the fear of failure. As a risk-averse person, I have replayed her words, “Don’t be afraid,” many times over the years. A few years ago, two of my daughter’s friends casually mentioned they wanted to make a croquembouche. For the uninitiated baker, a croquembouche is an inverted coneshaped tower constructed of cream puffs and held together by caramel. I love to cook, so I agreed to the challenge. I sent them out to procure the ingredients and pastry bags.

We started with the pastry cream as it would need time to set in the refrigerator. We all tasted it and agreed that nine egg yolks, sugar, milk and a vanilla bean are a miraculous combination. We made pate au choux (the dough), and the girls piped the puffs-to-be onto the cookie sheets. Into the oven they went. After a two-hour stint in the fridge, the pastry cream remained disappointingly thin. The girls valiantly attempted to pipe the runny cream into the puffs, only to see it leak from the bottoms. Failure was upon us. By this point, we were seven hours into “adventures in baking.” I suggested we build the tower using our unstuffed puffs and serve the heavenly, albeit soupy, cream on the side. The girls agreed. The final step in croquembouche construction is to create a caramel “cage” around the puff structure. This didn’t work either. Perhaps BuzzFeed was not the best source for a complicated recipe. I want to think that maybe the girls learned a lesson on that rainy Sunday. If you want to bake a croquembouche? Bake a croquembouche. Our cream was too soupy, we couldn’t engineer the tower to be the majestic confectionery structure we envisioned, and the caramel cage was a flop. But in the end, when we dipped the hollow puffs into our homemade pastry cream and drizzled them with warm caramel – the combination was extraordinary. So I decided to write about it. Mrs. Robbins would be proud. Susan Rosser is an avid dessert enthusiast. While she has conquered a variety of baking challenges, the croquembouche still eludes her.
