THE KIDS HAVE RETURNED to school, the weekends are filled with soccer and football, and the crisp feeling of fall is in the air. Looking back it was a fun-filled summer with the Festival at Sandpoint, days at City Beach, and weather that was spectacular. Well, except for those few storms that blew through anyway. It is evident that the treasure we call home is truly no longer a secret. Particularly during the month of August it seemed that the streets were more crowded with tourists than ever before. It is refreshing to see the economy coming back to life! As we head into the holiday season (yes, it really is right around the corner), it is important to remember what makes this community great. It is the people, businesses and organizations that call Sandpoint home. IT’S AMERICA’S favorite pastime. And for kids in Sandpoint it is the perfect place to spend the summer – at the baseball field. Many local families recall the days watching our kids play t-ball, cheering them on as they race around the bases, and then treating them to a Dubs’ ice cream cone after the game. As those kids have grown, they have had the opportunity to continue to play summer baseball thanks to many individuals and businesses in the community, among them Peak Sand and Gravel. Mike Peak, the company’s Vice President and Equipment Manager, and his brother Matt, Vice President and Crushing Superintendent, both played baseball growing up and know how important summer baseball is to being successful at the high school level. The American Legion League has had its ups and
downs during recent years, including times when there was not a summer team. So when the Peak brothers became aware that the program was in need of corporate sponsors, the company decided to focus its efforts on doing what it could for Sandpoint baseball. “We had always given to the community, $100 here and there, but we wanted to step up and change how we did things,” said Mike of their decision to become major sponsors of Sandpoint’s Legion baseball team. And many young athletes are grateful they did. Sandpoint High School junior Bear Youngdahl began playing baseball at an early age. Over the years he has participated in summer baseball, but this was the first year in high school that he had played American Legion ball. “It was really fun, and I learned
a lot,” said Bear. “We got a lot of reps in and improved on our fundamentals and skills, and it brought us closer as a team.” Mike said many people forget that Sandpoint High School won the State Baseball Championship in 2007, something he attributes in part to the players’ involvement in summer leagues. “It’s important to keep the kids active in summer baseball so they can maintain the competitiveness with the other communities. It makes the high school season that much better,” said Mike. “We want to build the baseball program back to where it was.” If this past summer is any indication, it looks like it is on its way. The Sandpoint team placed third at districts, defeating both Coeur d’Alene and Lewiston. Sandpoint High

But it is not just the opportunity to improve skills that Sundquist said he appreciates about the American Legion team. “It also gave us the opportunity to build relationships,” adding that he is appreciative of the support that the sponsors provide making it very affordable for all the kids.

School junior Paul Sundquist said playing summer baseball is not only a great time, but agrees it is important for the high school team to succeed. “This year all the high school players also played summer baseball,” said Sundquist. “And that is crucial because the summer season provides us the experience to get better.” In fact, Paul said he has already seen vast improvement. “We are not going to go into the high school season making the same little mistakes we made at the end of last season. We’ve worked out the kinks, and the experiences we had this summer will transfer to the high school season.” Bear Youngdahl agrees. “I really improved my baseball IQ. Coach Fitchett has really taught us to play smarter baseball. He’s an awesome teacher and coach. He inspires us all.”
According to Mike Peak, there is a great deal of talent in the world of Sandpoint baseball and many who are eager to help with the program. George Eskridge is pleased that the program he has supported and been a part of for so many years will continue to survive and thrive, and is grateful to all those who have stepped forward to make it happen. “I am enthusiastic about the direction our American Legion Baseball team is going and looking forward to a great year next year,” said Eskridge.

WHEN I FIRST HEARD of straw bale homes several years ago, I will admit that I balked. Now, straw bale homes, which date back to the late 1800’s in Nebraska, are on the radar again. Though these homes were touted as the ultimate upcycled abode with a carbon neutral footprint, I was skeptical. Still, many enthusiastic and eco-conscious people are again discussing the possibilities of straw bale as a viable building material. Three Little Pigs Before investigating straw bale homes more thoroughly, I was unconvinced. After all, doesn’t straw get damp and generate mold? Wasn’t the straw house the first house that got blown down in a wolf-generated windstorm? That does not sound like a home that could be habitable. Then, when I found out a straw bale home could be built for as low as $70/square foot, I very cautiously wanted to learn more. Fireproof One of the most compelling facts about straw bale structures is that if they are built correctly, they are almost fireproof. This becomes possible because of the way the straw bales that form the inside of walls of the home are packed. If done correctly, the bales are packed so tightly that there is little room for oxygen and subsequent flames. Reducing Carbon Footprint In addition to being almost fireproof, these homes have the potential to greatly reduce the need for heating and cooling. This is possible because the walls of these homes are often three feet thick. Straw bale homes are easy to keep cool in the summer and warm in the winter since straw is a wonderful insulator.
Ultimate Upcycling According to Dwell magazine, “About 200 million tons of straw goes to waste in the U.S. every year. If all the wasted straw were burned, it would add up to nearly 6 percent of the total CO2 emitted annually by passenger cars” (1/1/09). Repurposing discarded straw for homes would be the ultimate way to upcycle while providing carbon-reducing structures for families. Pest-Free Because straw has no nutritional value for common household pests and insects, walls generally remain untouched by unwanted critters. This alone saves homeowners from being exposed to toxic chemicals and the bills that come with ongoing pest-control services. Architectural Masterpieces The final unique characteristic about straw bale homes is that they are generally very easy-on-the-eyes. Because the walls are so wide, a common feature found in straw bale homes are window seats and bayed windows. The walls are also generally covered with smooth stucco and the stucco is combined with natural wood and stone accents. Home Sweet Home After researching straw bale homes and finding many photos of them online, my husband and I have begun to consider the possibility of a straw bale home in our future. Because they are eco-friendly, affordable, and nearly fireproof, I believe they might just be the home sweet homes of the future.

A couple things to consider when preparing for holiday entertainment. First, give yourself plenty of time. If you want new cabinets, countertops, or backsplash, you are already too late to have it done in time for Thanksgiving. Most cabinet manufacturers are about four to five weeks out, two more weeks for countertops and then another week for backsplash. In all, you should plan on a minimum of eight to ten weeks to complete a project like this. You’ll be pushing it to get it done in time for Christmas. Planning ahead is one of the key factors to making a remodel project successful. Pushing to try to make things happen faster only leads to disappointment.

The second thing to consider is how many choices are out there. There’s a ton of options to consider when looking for cabinets, countertops, and backsplash. First, try to provide contrast in the room. Whether it’s a bathroom, kitchen, or laundry room, the cabinets should contrast the countertops and the flooring. If you have dark cabinetry and trim throughout your house, going with a lighter countertop will provide the contrast needed. If you have light wood flooring, you should go with a shade darker cabinets. This prevents the room from falling into the blah zone and still allows your tones to be neutral, yet looks purposeful. Also, keeping things neutral allows you to add pop of color through towels, vases,

artwork, dishes, and more. And these are things that if you decide you want to change out in a few years, you won’t feel bad putting them in a yard sale and starting over. I think your checking account will appreciate that approach as well. Speaking of checking accounts, starting out with a budget in mind is crucial. HUNTING IS LARGELY a male-dominated pastime, but that has been changing more each year as women increasingly take to the woods to hunt and kill large game. According to Doug Bohn, Lead Bow Technician at Black Sheep Sporting Goods in Coeur d’Alene, archery in particular has increased dramatically across the board especially with women and girls.

“The young girls have been influenced a bit by Hollywood with the popularity of movies like Brave and Hunger Games, but ladies are more inclined to hunt for other reasons,” he says. Female hunters like Shannon Guisti, 22 and Hannah Robb, 21 say a sense of empowerment, reverence for nature, and healthy eating are just a few of the reasons they enjoy the hunt. They both enjoy the intensity of getting close to their game and the fitness that is required for a good hunt. Guisti has had a few successes, killing deer and elk with both a rifle and a bow over the past few years. Her latest accomplishment this season is a large buck in velvet. Her next goal – a bull elk. Guisti’s passion for fitness and hunting has resulted in her sponsorships with Kryptec camouflage and Matthews Archery among others. Robb has yet to get her first kill with her bow, but she’s enjoying the experience and is working hard to get there. Robb also hopes to get sponsors as well as be a role model for young women looking to enter the sport. According to Bohn, a lot of women aren’t really into the loudness and force of a gun, so archery is a natural choice. However, women are still getting into hunting with a gun more so than ever, in large

She loves the leanness of the meat and spending time with her family. “My favorite part of hunting is not the early mornings or the cold, or dressing out an animal. It’s more about feeling capable and knowing I can do something so immensely useful and immediately gratifying,” says Herbig. “You can take a lot of walks in the woods before you actually get a chance at shooting an animal.”

HALLOWEEN MAY hold fun times for humankind, but let’s face it; this holiday can be a nightmare for pets. First, we dress them up in terribly cute but constricting costumes and elastic covering hats. Then we fill the air with loud children, doorbells, and party noise. We leave candy on the table so when we turn our backs they can eat not just one but the whole bowl. What do we have? Stress + candy = vomit and diarrhea – and a likely visit to the veterinary ER. Costumes: Cute costumes make great holiday photos, but try to avoid elastics that are too tight; they can cause body areas to feel painful and possibly swell. If you place a rubber band in your pet’s hair (for a cute ponytail), don’t pull it too tightit might cause a headache! In fact, make certain that any clothing you put on your pet is loose and nonrestrictive, but form fitting so it won’t drag and get caught under the table or someone’s shoe. Party time: While your guests are coming and going during trick or treating, it’s often best to crate a nervous
dog or keep dogs and cats in a closed room while the excitement is high. Even outside cats should come in- less chance of getting hit by a car. Ask your veterinarian for a sedative if your pet is extremely anxious during the holiday action. Poisoning: A problem mostly for dogs, cats aren’t that interested in candy. Sickness results mainly from chocolate and xylitol (especially found in chewing gum) and includes signs of gastrointestinal problems like diarrhea, vomiting and/or restlessness. Some dogs will eat plastic wrappers and sticks from lollypops that may need to be removed surgically. Typically, Halloween candy ingestion will involve a visit to the vet ER. Yes, Halloween isn’t as frightening as Fourth of July- but it’s probably second place as the scariest holiday. CHOCOLATE TOXICITY AND MORE By Dr. Dawn Mehra, North Idaho Animal Hospital, Sandpoint. CHOCOLATE, America’s most favorite food, is abundant in Halloween candy. Some interesting history: Cocoa trees produce a sweet pod that surrounds a bitter seed. The seed, not the pod, is what we ferment, roast, grind, and then press to make the chocolate products we crave. Seeds are loaded with theobromine and caffeine, the chemicals that make pets ill if too much is ingested. The more chocolate liquor there is in a product, the more toxins. This makes baking chocolate the worst for pets, followed by semisweet and dark chocolate, followed by milk chocolate, then chocolate flavored cakes and cookies. As a point of reference, a typical Hershey’s Chocolate bar weighs 1.5 ounces and can produce symptoms in a 6-pound dog. The fat and sugar that we add to the chocolate can cause pancreatitis, vomiting, diarrhea and gut pain. But caffeine and theobromine are the most toxic substances in chocolate. Too much of them cause hyperactivity, tremors, seizures, racing heart rhythms, blindness and death- in severe cases. Do your best to keep chocolate out of reach from your pets. Shari French leaps into the water as a spontaneous tribute to her husband Chet at his memorial.

IF YOU HAVE been anywhere near Lake Pend Oreille this fall, chances are you have witnessed people doing “cannon balls” off docks, boats, or rafts. The reason? It is a tribute to the much-loved Chet French, a 23-year resident of Sandpoint who passed away recently after a long battle with thyroid cancer.

“Chet always did cannon balls,” said his wife Shari of Chet’s fun loving, kid-like spirit. His memorial took place on the water near Rocky Point in August. Shari said before she knew it, her son Tanner and stepson Travis took off their shirts and did cannon balls into the water. “I had no idea it was coming! Then my daughter Kelsey and I jumped in. Me in my dry clean only dress!” Soon nearly 50 people were in the water. It was the perfect tribute and Chet would not have had it any other way, said Shari. And it has not stopped. Friends and family from all over the country are sending Shari videos of their cannon ball jumps in memory of her husband.

PASSIONATE Each year on April 11th, Chet celebrated his birthday by going snow skiing in the morning, hitting the lake to water ski in the afternoon, and finishing his day with a round of golf.
Many in this community knew Chet as the owner of Jalapenos Mexican Restaurant, which he and Shari owned for 22 years. And when he was not at the restaurant, he could likely be found at many of the Sandpoint sporting events or recreating at the mountain or on the water.
An avid basketball fan and participant, Chet played in Spokane’s Hoopfest for 18 years. When his illness made it difficult for him to participate, he chose to volunteer as a referee at Hoopfest, using his breaks between games to take in a Sandpoint game on a nearby court and cheer the young players to victory.
“Chet had a heart for the youth. Being around them made him happy,” said Shari of Chet’s involvement with youth athletics. “He thought it was important for kids to be involved.”
As she recalls her husband’s memorial on the water, Shari said the fleet of boats filled with people who, in spite of windy weather, came to pay tribute to her husband overwhelmed her. “My daughter looked at all the people and told me, ‘Mom, all these people mattered to dad,’” said Shari adding that the support her family has received is a great comfort to her and her children.
When Chet and Shari moved to Sandpoint from San Diego, they knew they had found the perfect place to call home. “We wanted to live where we could water and snow ski,” said Shari. They bought a small house in town and Shari had a job as a ski instructor at Schweitzer and Chet with a local company. They had operated two restaurants in San Diego, and after a year in Sandpoint decided to open Jalapenos. “This was his nirvana,” said Shari of Chet’s love of Sandpoint. Each year on April 11th, Chet celebrated his birthday by going snow skiing in the morning, hitting the lake to water ski in the afternoon, and finishing his day with a round of golf. He was thrilled to live in a place where he could pursue his passions. Chet was a wonderful father to his four children, but was also a father figure to many in Sandpoint. Shari recalls one teen that was applying for a job at Jalapenos. Chet asked her why she wanted to work there, and she replied that she wanted a job in public service. “He told her to be honest…she needed the money!” laughed Shari as she recalled one of many moments where Chet mentored their employees. “He felt it was his mission to employ young kids, and he felt privileged to be a stepping-stone in these young people’s lives,” said Shari.
As for those cannon balls, don’t expect to stop seeing them anytime soon. Chet and Shari’s former employees are planning a Polar Bear Cannon Ball Plunge this winter in frigid Lake Pend Oreille. Shari said she is grateful for the community support and the outpouring of love that people have shown her and her family through the years and since Chet passed away. “I think Chet would be surprised at how much he mattered to everyone,” said Shari. “He was my quiet giant. He was an awesome guy. I was a lucky girl.”

The Heartwood Center

FOR YEARS it was known as a place of worship. But when St. Joseph’s Church moved to its current location on Lincoln Street, many wondered what would become of the beautiful brick building blocks away from downtown Sandpoint. There were attempts by some to develop the site, but when those did not come to fruition, Dover residents Mark and Susie Kubiak gave serious thought to purchasing and preserving the building. “It has always caught my eye because of the beauty of the building, the residential surroundings and the huge trees,” said Susie. In December 2011 they closed on the property and began the renovation within a few months. After careful consideration, Mark and Susie decided to transform the entire building into a place where the community could enjoy a variety of events. “We always knew the main hall would be for events, but we also decided to make the rest of the space into something that would complement the function of the main hall,” said Susie of their decision to not turn the additional square footage into office space. With the assistance of many, including Pucci Construction who performed the demolition and discovery, general contractor Dustman Enterprises, interior designer Marti Kellogg, and architect Bruce Millard, the former church was transformed into a beautiful multi-functional event center. And while it took a little over two years, the end result was worth the wait. In April the Heartwood Center opened its doors to a community full of anticipation. Since then it has seen a steady stream of theatrical groups, businesses, musical performers, and more utilizing the facilities. The entire facility is ADA compliant including a lift for those who are unable to navigate the stairs and braille on each sign within the Heartwood Center. “It’s also a totally wet building,” said Heartwood Center’s Manager, Kathy Andruzak, referring to the newly installed sprinkler system. “There are very few older buildings in town that have that.”

They reinforced the foundation, removed the asbestos, and added insulation to the exterior walls. But it is not just the interior that was redone. The landscaping is not only beautiful, but also incorporates an onsite storm water management system. “There is a catch basin that filters the water onsite,” said Susie of the work performed by landscape architect Karen Oleson.
CENTER STAGE In April the Heartwood Center opened its doors to a community full of anticipation.
Careful to keep the integrity of the interior and exterior, the Kubiaks kept nearly every tree on the property and utilized the wood from the choir loft and incorporated it into the stage. With theatrical lighting, a sound system, dressing room and extended stage, the main area is the perfect venue for small theater productions. In addition, a cork floor absorbs the sound maximizing the acoustics. “For small theater productions we can seat about 100 people and with full seating we can seat up to 175,” said Kathy. There is a prep room for caterers and a lobby that is ideal for setting up a bar. But what many may not realize is that there is more to the Heartwood Center than the main hall. There is also a 1500 square foot space available. “ We can accommodate up to 96 people in that room,” said Kathy. In addition there is a 650 square foot meeting room ideal for business meetings and seminars. And with the calendar becoming full with a variety of people utilizing the spaces within the Heartwood Center, it is evident the word of its beauty is out as Kathy is busy taking reservations for weddings as well as holiday parties. “It’s very satisfying to have it finished and become active,” said Susie. THE LOST HORSE PRESS, an independent publisher housed in Sandpoint, recently announced the prize winner for its national poetry contest, Jeff Baker of Charlottesville, VA. The Lost Horse Press will publish Mr. Baker’s prize-winning poetry collection, Whoop and Shush. He said that the collection deals with “the sounds and rhythms of language.” “The book is about how the sounds of our language have the capacity to alter us, bind us, bring us together, and hopefully, entertain us,” he said. Pick a Pumpkin!
Celebrate the season in Sandpoint. By Patty Hutchens. IN THE PAST, October meant a day trip for many families who would hop in the car and travel to Spokane’s Green Bluff to search out the perfect pumpkin. But that is no longer the case as Hickey Farms just outside of Sandpoint begins its second year as one of Sandpoint’s choices to celebrate the fall harvest. With a U-Pick Pumpkin Patch, kids of all ages can search out that perfect pumpkin to take home and carve into their imaginative creation! “The complexity of human language, its capacity to surprise and move us, to unveil previously unseen connections via metaphor, to talk about concretions and abstractions, is probably the most important thing about us as a species. Language is likely the oldest thing that can be made new outside of genetics,” Mr. Baker said.
There is a lot for families to do at Hickey Farms during the month of October. Whether it is winding your way through the corn maze or taking part in the activities, there is something for everyone.
Mr. Baker is a lifelong poet. He wrote his first poem in the sixth grade to gain the attention of a girl.
And be sure not to miss the Hoodoo Valley Hoedowners Haunted Barn Dance taking place there on October 18th from 7pm to 10:30pm.
“She was dating a guy on the football team who drove a muscle car. Though I think she was flattered by my devotions, in the larger calculus of desire, they did little to tip the scales in my favor,” he said. Undeterred, he continued writing poetry and eventually graduated from the prestigious Iowa Writer’s Workshop. He works for a university in Charlottesville, VA, where he runs a program to increase diversity in the sciences. He is also at work on a second book of poems that occur in a distant and dystopian future.

Sandpoint’s Lost Horse Press will award Mr. Baker with $1,000 plus a reading at the Association of Writers and Writing Programs, a major literary conference, next spring to promote his winning poetry collection. “It is humbling and encouraging to have the book chosen from among so many strong submissions by a poet I admire, Dorianne Laux,” Mr. Baker said. The Idaho Prize for Poetry is held by the Lost Horse Press every spring and is led by publisher Christine Holbert’s university students under her guidance. So when she was nominated this year by her teammates to be captain of her team, she considered it a great honor and a role she takes very seriously. “That has to be one of my best athletic accomplishments,” said Trinity. She also takes pride in the fact she is able to balance her sports with her academics, maintaining her honor roll status. Like anything, there have been challenges along the way, but Trinity has persevered and is proud of herself and her team. Her biggest personal challenge? “I had some doubts in myself because other people told me I was not good enough,” said Trinity. “But I have overcome that by making sure I am the best that I can be.” And that faith
in herself has definitely paid off. Trinity was part of the Sandpoint volleyball’s junior Olympic team when she was only 14 years old, a memory she will hold close the rest of her life. Looking ahead to next year, Trinity hopes to continue playing volleyball at the college level. “I would like to be in Southern California, but I will go wherever I am able to get a scholarship,” she said. As far as studies go, she has always had an interest in pursuing a career in fashion, but recently has also considering becoming a teacher. When asked what she loves most about the game, she said it is both the physical and mental aspects of competing. “Volleyball is a sport that involves a lot
of mental work. Being able to overcome all the stress or pain is probably the best feeling,” said Trinity. “Also the bruises and floor burns give me a nice reminder of my love of the game.” Trinity credits two of her coaches, Jamie Poncho and current head varsity volleyball coach Erin Roos, with teaching her to play not for herself but for the good of the team. “Inspire your team to want to play hard!” Perhaps that inspiration she provides is just one of the many reasons Trinity was chosen by her teammates to be team captain. Favorite Food – Anything with pasta. Favorite Teacher – Mr. Fitchett. “He reminds me to never judge people and to see them for who they really are.”

SANDPOINT HIGH SCHOOL. BY PATTY HUTCHENS. FOR BILLY WEBBER, football has been a big part of his life. He has played tackle football since he was in the second grade and is finishing up his high school career on the field this fall. While he has had many great coaches throughout the years, Billy said the man who coached him from second grade through seventh grade had the biggest impact on him. That coach? Billy’s dad. “He taught me that I can’t take plays off,” said Billy. “No matter what you do, do it as hard as you can and finish your plays, don’t watch.” Last year Billy was named First Team All Conference Left Guard and was awarded the Jerry Kramer Award, an honor given to the most outstanding offensive lineman. “That was a big accomplishment to me because last year was my first year playing left guard, and he (Jerry Kramer) was the greatest player in Sandpoint’s history.” Ideally, Billy would like to continue to play

He has been looking at smaller schools throughout the northwest, but said if that does not work out he will attend North Idaho College and explore his options from there. While many students do not know what career path they would like to take as they enter college, Billy has no doubt. “I would love to become a police officer. I grew up in a family filled with public safety officials, with my dad being involved in firefighting and EMS agencies since I can remember,” said Billy, adding that his brother works at Bonner EMS and his grandfather is a retired police officer/detective. “I just remember the bonds my dad had with his men in Southern California and how everyone was family. I really envy that, and it’s a reflection of football in the family aspect of it. Public Safety is very appealing to me.”

HEALTHCARE. In today’s society just uttering the word can elicit stress. We all want what is best for ourselves and our loved ones, but often it is hard to know where to turn. Fortunately there is one local healthcare provider who many praise for her compassion, care, and extensive knowledge when it comes to providing care to women. Cynthia Dalsing, MSN,NP, owner of Women’s Health Care in Sandpoint, has treated women in the Sandpoint community for 19 years. “I appreciate all the time she spends with me each time I go in,” said Sandpoint resident Denise Mayo. “It makes me feel like she’s really listening and cares about my health.” Because of her superior reputation and increasing number of patients, Cynthia recently expanded her office staff and space so she can continue to provide the personalized care that her clients have come to expect, and in her opinion, deserve. Tabitha Barron, NP began working at Women’s Health Care in September, and already women are finding comfort in the care she provides as a Nurse Practitioner. Originally from Medford, OR, Tabitha attended the University of Portland where she graduated with her nursing degree in 2006. She and her husband Alec then moved to Arizona where Tabitha received her Masters Degree in 2011 while working in an emergency room. For the past few years prior to moving to Sandpoint, Tabitha practiced full scope women’s health care while working in an ob/gyn office. But the environment was a fast paced one, and Tabitha desired a setting where she could spend time with her patients, getting to know them and being able to fully understand and treat their needs. She has found that place with Cynthia and Women’s Health Care.

“I knew instantly that this was the place for me,” said Tabitha. She and Alec, who have two daughters ages four and one, had taken a month long road trip about three years ago. They came across Sandpoint and, like many, immediately felt at home here. “We are both incredibly outdoorsy,” said Tabitha of she and her husband’s attraction to Sandpoint. “We love all the seasons and Sandpoint has fabulous activities and adventures all year round.” While searching for work, Tabitha sent resumes to several area care providers but is grateful that it was Cynthia who answered her inquiry. May the best chef win! By Melody Knaggs-Vanhorn. PEOPLE AROUND THE NATION are having thoughts of crisp piles of leaves and pumpkin carving. What does this mean? It’s October and here in Sandpoint we are bringing the month in with style during our annual Oktoberfest celebration! The Greater Sandpoint Chamber of Commerce sponsors this great event as it kicks off on October 11th from 12-5pm at the old Granary on Fifth and Oak Street in downtown Sandpoint. Local breweries, MickDuffs and Laughing Dog, will be there with a selection of their featured brews along with wines from Pend d’Oreille Winery and live entertainment by headliner Nu Jack City. A large assortment of fantastic food will be available as you take in the numerous arts and crafts vendors and participate in multiple activities provided by the community.
This year there will also be an international chef competition with our sister city Nelson, British Columbia at the Granary Arts District, 524 Church Street, from 2-3pm. Sandpoint is putting its best chef forward as it competes against Nelson’s chef in a battle of tastiest creations. Both cities are challenging their culinary experts in an event of skill and creativity to produce gourmet masterpieces that will wow the judges. Eichardt’s own Reese Warren was chosen to stand for Sandpoint while Nelson, B.C. has decided upon All Seasons Cafe’s Amanda Skidmore as their chef extraordinaire. This competition is sure to be a thriller and will take everything the chefs have to come out on top. Triumph Over Tragedy Overcoming grief by making a difference in the lives of others. By Patty Hutchens. “Happiness is not something ready made. It comes from your own actions.” —Dalai Lama IT CAN BE OVERWHELMING, debilitating, and exhausting. Grief. We experience a devastating loss, and our life’s path is suddenly derailed. We question. We get angry. We try to move forward. For three young North Idaho adults, the grief they experienced became transforming. Although the tragedies they endured differed from one another, the three were united in how they transformed their grief into something positive. They triumphed over their tragedies. That is not to say there are not heart wrenching, sad days. There are. But knowing they have made a difference in the world has helped these young people move on and carry on the memory of their loved ones. Their stories are inspiring. Brooke Williams first went on a ten day mission trip to Nicaragua with her father Gary in 2010; she had no idea how the adventure would change her life. While there, her father bonded and played baseball with the children in an orphanage. When he learned that the children couldn’t compete in baseball unless they have uniforms, Gary made it his goal to provide the young children with them. Before Gary could realize his dream of returning to Nicaragua, he passed away. In a tribute to her father, Brooke and her mother Karen returned to Nicaragua in 2012 with uniforms for the young orphaned children, honored

to fulfill Gary’s vision. But that was not the end of mission trips for Brooke. In May she traveled to Kenya on a student led mission trip. There, she worked in a clinic administering to the less fortunate. She learned to blood type, take pulses, respirations and blood pressure. She also worked in the pharmacy filling prescriptions as well as helping with physicals at the local schools. “This trip was definitely life confirming,” sad Brooke who plans to work in the medical field. “I say this because God definitely confirmed that I am on the right path and that His will for my life is to do medical missions.” While all these trips are special in some way, it is that first trip she made with her father that she holds close to her heart. “I would not have had it any other way,” reflects Brooke. “Having him with me and teaching me how to be independent and experiencing all those things with him was very special.”

the young children, was something she spoke of often. Unable to go with Kayle on her first mission trip due to work obligations, Jacob was determined to join her on this one. “For the first few months we were having meetings at the church after services with our mission team,” recalls Jacob. “We would talk about fundraisers and how we were going to raise the money to go.” When Kayle died, a memorial was set up in Kayle’s name that helped Jacob and Brandon and the group cover expenses. The ten day trip involved building a pastor training center and also teaching Bible School. “I worked on the training center and in the evening helped with vacation Bible school. It was tons of fun working with the little kids and teaching them about the Lord,” said Jacob who knows his sister would be very proud of the work he and Brandon accomplished in her memory.
As she moves forward and plans her next trip later this year, Brooke knows her father would be very proud of the work she is doing. “He and my mom always encouraged me, even if it meant going out of my comfort zone,” she said. “I’ve learned to be comfortable about being uncomfortable.”
“I plan to go on more mission trips,” said Jacob adding that he was humbled by the experience and encourages others to take the opportunity to serve. “You will see stuff that will break your heart, and you will want to do everything you can to help out. You will also realize when you see how people live in other countries that we do not need all the things we have.”
Jacob Porter also suffered a horrific loss. Last November his sister Kayle was struck and killed by a train. Just 19 years old, Kayle had a full wonderful life ahead of her. Kayle had gone to Honduras on a mission trip a couple of years before, and at the time of her death was saving money to return this past summer with her boyfriend, Brandon, and Jacob. Her love of the people of Honduras, especially
For Natasha Wilkerson, her belief in God is what has sustained her through this past year. Adopted from Russia at the age of 10, Natasha lived in Bonners Ferry. An avid soccer player, she met the love of her life while playing in an adult soccer league. “Josh’s family taught me to play soccer,” recalls Natasha of Josh Wilkerson, the man she fell in love with. It was a whirlwind romance and the two

She had just returned from soccer practice at North Idaho College to the couple’s Coeur d’Alene apartment when she received a message from her father-in-law. Josh had been killed in a car accident. “My mind was automatically covered in a cloud of disbelief that could not be lifted for several months. It was like walking in a haze with no clear path in sight,” recalls Natasha. When planning her husband’s memorial, it was decided as a tribute to one of Josh’s greatest passions, the family would request donations of soccer balls in lieu of flowers. “Word got out quickly and soon everyone who attended the service donated at least one soccer ball. Our idea was that we would donate these soccer balls to Parks and Recreation in memory of Josh,” said Natasha. “But the donated soccer balls ended up going

So she approached her in-laws who agreed it was a fantastic idea and one that would make Josh happy. “Before we knew it we were flying to Central America to distribute the balls.” It was another life changing trip for Natasha. “During the week that I was in Nicaragua with my team and in-laws, I figured out a lot about myself,” said Natasha who says she was angry with God. “But seeing the joy on the faces of the children and the adults, as we gave a giant pile of soccer ball to the village leaders, filled my soul with the memory of Josh, grace, and love.” As she vows to live her life the way Josh did, with a full heart and grateful for each day, Natasha is thankful for the chance she has to bring joy to others. “Happiness was taken away from me in a blink of an eye, but thanks to God’s grace and love, it was given back to me through the joy and happiness of others.” Brooke Williams is currently fundraising for her next trip. IT’S THE TIME OF YEAR when people start thinking about chili and cornbread, homemade apple pie, turkey and all the trimmings, caramel apples, popcorn balls and of course pumpkin spice flavored EVERYTHING. As you stock your cupboards this fall, consider getting extra food for those less fortunate. When everyday food acquisition and consumption is a challenge – both in quantity and quality – it’s hard to even consider preparing the seasonal treats that so many of us enjoy this time of year. For those seeking assistance stocking their cupboards, the reality is that they do not just need food, but they also need something nourishing, which can be more expensive. When considering what to donate, consider things that are filling, healthy and easy to prepare. While items such as macaroni, Ramen noodles and pasta are good, the local food banks also like to receive donations of food full of protein such as tuna, peanut butter or even protein bars. Bonner Community Food Bank welcomes all donations of professionally packaged foods and fresh, unprocessed produce. That which they need the most includes breakfast cereal, rice, canned meat, canned fruit, jam, spaghetti sauce, chili, and fresh garden produce. But their needs are not limited to food. Other items that are in high demand include soap, diapers, baby wipes, infant formula, toothpaste and more. According to The Idaho Foodbank (a state network), about 16 percent, or one in six of Idaho’s residents, are food insecure – a large number of these include children. About 30 percent of that population has too high of an income to qualify for food assistance (food stamps), and they rely on charities like local food banks. In addition to donating food that is nutritious, consider some of the challenges faced by low- income people when it comes to preparing the food. The revelations of stopping. By Teresa Pesce. This column is dedicated to the Middle-Aged among us, lost in society’s Bermuda Triangle between being young and being “older”, acknowledged only by ads selling them cosmetics to make them look young again and comfort bras to ease the inevitable triumph of gravity. I STOPPED EATING sugar awhile back and discovered some wonderful things and some horrible but true things. I stopped being hungry all the time. When I became hungry, it was sharp and specific, and eating was a greater pleasure than ever before. I also ate less, as well as less frequently, because I wasn’t counteracting steep sugar drops. Thirteen pounds slipped away. Energy rose. With all that wonderfulness going on, why in the WORLD would I start eating sugar again? Well, they say to find out why you’re doing something, stop doing it and you’ll find out. I found out that it was frustrating to live without sugar! It was my “blankie” of comfort at my desk job – my side along friend adding some interest and distraction to the long day. It was my weekend reward after errands. It was my
after-dinner indulgence. Sugar had woven its sweet way throughout the tapestry of my life, and I found that my life lost some joy without it. Did I embark on a career in painting, writing or mastering dead languages to discover my true bliss and replace sugar? Don’t be ridiculous. I forced myself back into eating enough sugar to constitute a decent work break! Awful, I know. But by evicting sugar, I found out where it lived in my life. Then I knew what I REALLY needed to do when I was ready. And I did. I totally kicked sugar, and I weighed the least and looked the best and was the healthiest I have even been in my life.

• 10 multigrain rice cakes • 2 cups California raisins • 5/8 cup peanut butter or cream cheese (1 tablespoon per rice cake) • 5/8 cup shredded cheese (1 tablespoon per rice cake) • 1-1/2 cup various vegetables such as broccoli, radishes, zucchini, carrots and celery • 1/4 cup various nuts, such as almonds, cashews, pecans and walnuts and seeds • Different shaped pretzels, gold fish and sesame snacks for decoration Use rice cakes as the base for the doodle, and use peanut butter or cream cheese as the “glue.” Design the rice cake with a variety of toppings. Protecting your ankle. By Christina Rust-Hefley, DPT. A SPRAIN to the lateral aspect of the ankle is a common injury. It can happen during a rigorous sporting event or when walking on uneven terrain. This injury can be very painful and activity will be limited for a couple of weeks. However, if a sprain does not fully recover, it could lead to recurrent injuries well after the first incident. When lateral ankle inversion occurs, ligaments can stretch or tear as the bottom of the foot moves inward. These ligaments that provide mobility and support to the ankle become weakened and lack proper functionality. To reduce pain and swelling for a sprain, the typical treatment consists of ice, rest, and NSAIDs (Non-steroidal anti-inflammatory drugs). Although this will lessen swelling and discoloration, ligaments in the foot may still be damaged. Without proper rehabilitation, the ankle will remain unstable. The ankle is more susceptible to injury because the ligaments did not fully recover and cannot support normal balance and mobility. Recurring injuries or sprains can easily occur if the ankle is over-exerted without proper recovery and support. This may prolong recovery time and increase the potential for further injury. In order to avoid long-term ankle instability, stretched or torn ligaments must undergo exercising and re-strengthening. “Ankle instability from injuries requires proper therapy to strengthen the affected ligaments and muscles. Bracing should be used during activity to reduce the probability of a recurrence,” said Richard Call, Certified Pedorthist and Footmaxx Clinical Consultant.
Depending on the severity of the sprain and the activity level of the patient, recovery will vary for patients. During the recovery period, protection must be applied to the ankle to inhibit further injury. There are a number of ways to protect a fragile ankle without breaking the bank.

Custom foot orthotics can be used to prevent ankle sprains and control repeated injury caused by lateral ankle instability. Orthotics provide balance and enhance support during normal gait. To help instability, orthotics with a heel cup device and postings give added support to weak ligaments. A deep heel cup will embed the calcaneus and protect it from movement. Postings raise the side in which the ankle is subject to roll, providing it with added support. Properly fitted shoes are also critical for recovery because they provide protection and support for the ankles. Shoes that offer a properly fit depth with a snug fitting counter control the ankle from abnormal movement. Appropriate shoes can also be used to inhibit any preliminary sprains. Semi-rigid orthotics combined with a pair of properly fitted shoes will keep the ankles protected from inversion/eversion of the ankle. For more serious ankle sprains, Ankle Foot Orthoses (AFO) and braces are used to restrict movement and protect damaged ligaments in the ankle. These can also be used for highly active athletes. Keeping the ankle from moving abnormally during intense sports is important to reduce recurrent injury.

Freshly laid eggs, meats from animals allowed to roam, whole milk from family cows, homemade breads from whole wheat flour, fruits and vegetables grown on the farm and access to locally grown foods became a thing of the past for many inner-city residents.
Convenience became the by-word of the American eating experience, with instant potatoes, sugary sodas, frozen meals, white-flour breads and pastries laden with sugar, maltodextrin and corn syrup, easy drive-through fast-food restaurants and cheap high-calorie snacks in convenience stores and on grocery shelves. Along with all this convenience and fast food, however, came the national epidemic of ever-increasing cases of heart disease, diabetes, obesity and cancer. Research into the American diet and the effects of these changes on health has been ongoing for decades and, unfortunately, depending on who has funded the research projects, continues to present conflicting results about how we should eat. Perhaps the most controversial information is over the use of shortening, margarines and vegetable oils in our diets versus switching back to real butter or increasing the use of olive oil and coconut oil for cooking purposes. It seems that “vegetable oils” are not truly derived from vegetables. Corn is a grain, soybeans are legumes (beans), and canola oil is derived from the rapeseed, another grain. These highly processed and unnatural sources of fat may be doing more harm to our bodies than previously thought. And we don’t know for sure exactly which additives or preservatives in our foods might be doing long-term harm to our bodies. Decades ago, the Food and Drug Administration (FDA) approved many additives because they were determined to cause no short-term harmful effects. But what about 30 to 40 years down the road? Have we been eating substances for many years now that could

Probably one of the most interesting findings in a recent study appears to be the role of protein in the senior population. This study looked at the health and nutrition habits of 6,381 individuals over an 18 year period and discovered that very high protein diets in middle-aged Americans left them more than four times as likely to die of cancer or diabetes. However, it had the opposite effect on Americans 65 and older. These older individuals were 60 percent less likely to die of cancer and 28 percent less likely to die of any cause. The take away message here may be that diet has and always will have a significant effect on health, although in what direction it’s not always easy to know. However, our safest assumption may be that eating simply, with less processed foods, along with locally grown products is the truest recipe for a long and healthy life.

Five Healthy Foods You may not be eating them, but you should.
MANY OF US are looking for fresh ways to lead healthier lifestyles and eat nutritiously, without having to sacrifice flavor. You may already be eating fruits and veggies, like broccoli and bananas, but here are five nutritional superstars you should be piling on your plate if you aren’t already:

1. Lentils. Lentils may look like the runt of the legume family, but don’t be fooled. GatherIngredients: • 1 cup all purpose flour • 1 1/2 teaspoon baking powder • 1/2 teaspoon baking soda • 1/2 teaspoon cinnamon • 1/8 teaspoon nutmeg 1/8 teaspoon allspice • 1/2 teaspoon salt • 1/3 cup maple syrup • 1/4 cup apple cider • 1/4 cup apple sauce • 1 tablespoon canola oil • ½ cup petite diced apples • 1 teaspoon vanilla extract • Glaze: ½ cup Litehouse Old Fashioned Caramel • ¼ cup Powdered Sugar • 2-3 tablespoons heavy cream • Recommended toppings such as sprinkles pecans and/or caramel dip

Preheat the oven to 375 degrees F. Generously grease a 6 cup donut pan and set to the side.

In a large bowl mix together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice and salt.

In a separate bowl combine the maple syrup, apple cider, applesauce, oil, vanilla, and apples. Gently mix the wet ingredients in with the dry ingredients.

Divide the batter evenly amongst the 6 donut cups and bake for 8-10 minutes. Remove from the oven and allow to cool before decorating. Mix together the Litehouse Old Fashioned Caramel, powdered sugar and heavy cream until smooth. Gently ice the donuts and use additional sprinkles or nuts as toppings.

Priest Lake
Weekend getaway at Idaho’s Crown Jewel. By Jessica Herbig. PRIEST LAKE IS OFTEN referred to as “Idaho’s Crown Jewel.” National Geographic calls it both “stunning” and “remote.” Both descriptions are accurate, and for the fall camper, Priest Lake has a variety of activities to keep you busy, keep you going, and keep you outdoors as long as possible!

Priest Lake is a state park managed by Idaho Parks and Recreation. As such, there are amenities such as designated camping spots, water and some shower units available. There are also a limited number of cabins situated around Priest Lake that require a reservation. Most of the campsites are situated in such a way that you feel like you are the only people in the forest at any given time, until you venture down to one of the beaches where everyone gathers in late summer to catch the last of the hot summer rays. When the sun dips down, it starts to get chilly in the fall, so a campfire helps ward off the chill. Who doesn’t love a cast iron dinner and s’mores over the fire?
The Priest Lake Ranger District maintains a trail system on federal lands along Priest and Upper Priest Lake. They’re mostly well marked, but a trails booklet can be picked up for free at the Priest Lake Ranger District office.
Rock Climbing Chimney Rock at Priest Lake is a feat unto itself. You can see Chimney Rock from the lake, and it’s the most talked about climb in the Priest Lake area. You can access the climb via the Mount Roothaan trailhead. Plan on a full day to hike in, make the climb, and hike back out. It’s not a good idea to get stuck out there after dark unless you’re prepared. From the trailhead it’s about a two-hour hike to the base of Chimney Rock and approximately a three to four hour climb. Another good area to climb that is a little more accessible is Granite Pass. It’s about 20 minutes from Priest Lake on Hwy 57 north of Nordman. You can climb right out of the car and have your choice of 50-foot cliffs. This climb has some chain anchors in place, but plan on bringing set gear if you want to climb off route. This climbing location has the longest climbing route
The Beach Trail, which follows the west shoreline, is an easy hike that is great for families. It meanders for approximately six miles, starting at the Outlet Bay Campground and ending at the Kalispell Bay Boat Launch. This trail is open to foot traffic only. For a slightly more strenuous climb, check out the Mount Roothaan/Chimney Rock Trail on the east side of the lake. It caps out at 7,300 ft. with amazing panoramic views of Priest Lake. It takes a little under four hours and starts at the Horton Ridge trailhead at 5,100 ft. Bring your good hiking boots for this one. The last part is a one-half mile you’ll

Fishing Fall fishing ranges from trophy size Mackinaw out of Priest Lake, to brookies out of the streams surrounding the Priest basin. It’s catch-and-release fishing for westslope cutthroat out of Upper Priest Lake to protect the bull trout population, so check fishing guidelines before you settle your line in. Fishing during the fall months is great, as the fish rise closer to the surface as the air temperature cools the water. The Idaho state record Mackinaw was caught out of Priest Lake in 1971.
