Shrove Tuesday Buns These these delicious little cream-filled buns were once associated with the Lenten season in Scandinavia. They were prepared on Shrove Tuesday – or “Fat Tuesday” to use up stores of butter, cream and sugar that could not be eaten during the days of fast and abstinence that led up to Easter Sunday. We’ve given them a twist with pink cream made with raspberries. Buns: 100 g butter 2 dl water 100 g flour 4 eggs Preheat oven to 220 C. In a medium saucepan, bring the butter and water to a boil. Add the flour and stir until mixed thoroughly. Remove from heat and let the dough cool slightly. Add the eggs one at a time and mix well after each addition. Cover a baking sheet with parchment paper and drop small balls of dough onto the sheet, evenly spread out. Bake for 20 minutes until golden brown. Allow the buns to cool completely on a wire rack. Once cooled, slice each bun in half. 20
Cream Filling: 2,5 dl whipping cream 5 tablespoons sugar 2 håndfulls of raspberries 1 tablespoon vanilla sugar Whip the cream until light and fluffy. Mash the raspberries with a fork and then stir in the berries, sugar and vanilla sugar into the whipped cream until thoroughly mixed. Scoop 2 heaping spoonfulls of the cream onto the bottom half of each bun and top with the other half. Topping: Powdered Sugar 1 pasteurized egg white food coloring sprinkles In a small bowl, whisk together the powdered sugar and egg white until it forms a smooth glaze. Stir in a few drops of food coloring until you have the desired color. Decorate the buns with the glaze and sprinkles. * For instructions to make the Shrove Tuesday Fans that are placed on the buns, see Fat Tuesday Frills & Fun

3 1. What would you suggest to go and see with kids in your local neighbourhood in Copenhagen? We live in Vesterbro in Copenhagen. We like to visit the old Carlsberg area with our families. Lots of new exciting things are happening here, eg. BMX biking, go cart and climbing. And then we like Skydebanen - a playground with fun and a little park. If its raining we suggest visiting the cosy little coffee bar `Kaffe´ where mum and dad can have a nice cup of coffee and hot chocolate for the kids. The interieur is 58
all made by wood so you have the feeling that you are in a cave. 2. On a summer´s day we like to be near the water (Christianshavn, canal crusing for the entire family. Amager beach and Islands brygge). And then you have to taste the ice cream from the Sicilian ice cream shop in Skydebanegade. Yummi!

3 5 1. What would you suggest to go and see with kids in your local neighbourhood in Oslo? In the summer my favorite thing to do is taking the ferry over to Bygdøy where we have our boat. It’s a peninsula just outside the heart of Oslo where you can find lot’s of interesting museums and in the summer time this is a great spot for sunbathing and lunch. 2. Where would you suggest to go and eat with kids in your local neighbourhood? We love the Eco-café Koloni-
hagen, which is set in a lovely backyard, they serve the best local food and the atmosphere is just so relaxed. If you just want a coffee or try the biggest cinnamon buns in the city, visit United Bakeries. 3. Where would you suggest to stay when traveling with kids in your local neighbourhood? I would choose the great townhouse Hotel ‘Gabelshus’. It’s really charming, situated in the middle of an elegant embassy district and within walking distance of the Vigeland Park, Aker Brygge and the
Royal Palace. It also has a lovely terrace and a small garden you can enjoy. When booking, ask for one of the new rooms! 4. What is your favourite hang out in Oslo? Except the Acne flagship store down town, I love strolling around our local area, Majorstua/Marienlyst. I love to pop in to all the small shops, having a late lunch and dreaming about the big houses with gardens you pass on the way.

Paper Fantasy Land Paper cutting is an old folk art tradition in Scandinavia, made famous by children’s author, Hans Christian Andersen. Your children can create their own paper fantasy display using a shoe box, a crate or a display box like the one we used here. You can follow the diagram included or encourage your kids to use their imagination by creating their own designs and adding extra flair with old magazine pages and little figurines.
